elcome to the 2019 Cheese & Chilli Festival! This is now the 6th year that the events have been operating around the UK and we are delighted to be here with you today. The Cheese & Chilli Festival is an event aimed at celebrating all things Cheese & Chilli. The ethos behind the Festival is to create an event which is both affordable and entertaining. The event is aimed at the family audience and we hope that we have provided something for everyone. We change the events year on year so that they remain interesting and fun! With last years’ scorching sun all summer, we are hoping for a little less heat in the air but much more on the trading floor! If Cheese is your thing, make sure that you sample plenty of the different cheeses on offer. Special mentions to the vouchers available from the entrance. These vouchers will help you negate the cost of entry when you make purchases. Don’t forget the Taste Tent. We ask you all to score the sauces which are available around the venue. You should be given a scoring card when coming into the event and our traders are desperate for some
feedback to help them out as some of the products will be new to the market. You’re the guinea pigs! If you want to get active, we have some crazy golf and a Human Sized Table Football which is great fun. If you’re up for a challenge, you can have a go at the Chilli Food Challenge which is happening in the Demonstration Tent at lunchtime or the Chilli Eating Competition which happens at the end of the day. If you want to get involved please speak to a member of the team at the Information Point. Activities for the children (old and young) include; Punch & Judy,
Magic Shows, Giant Bubble Parties, Treasure Hunt etc. If you’re interested in the cooking side of things, our special guest Chilli Olly will be able to wow you with his knowledge of all things Cheese and Chilli in the Demonstration Tent. Chilli Olly is a bit of a celebrity in the Chilli world as are many of our Chilli traders, so don’t be afraid to ask questions as all the answers are on site somewhere. The Demonstration Tent will showcase some of the products on site whether it be cooking, tasting, sampling, etc. Some great things will be happening in here today. The event is all about having some fun and trying some different tastes so enjoy and please receive the event with the goodwill it was offered.

Are you up for the challenge?
The chilli eating competition takes place at the end of each day and is not for the faint hearted. Contestants battle it to see who can take the heat of some of the world's spiciest chillies. Starting with chillies at the lower end of the scoville scale the rounds rapidly jump up in heat as they progress to find out the ultimate chilli eating champion. If you are interested in taking part in the challenge, entries are now being taken. Spaces are limited so make sure you get your name down early.

Traders will compete for the coveted Cheese & Chilli Festival Sauce Awards.
Entries for mild, medium and hot sauces will be available for you to try.
Everyone is able to select their preferred sauce and the winning sauces will be awarded the prizes at the closing ceremony on Sunday.

hroughout the day a number of cooking demonstrations and talks will be held by professionals from the cheese and chilli industry. The sessions will be hosted by the famous Chilli Olly with special guests joining him. See the schedule for further details. Chilli Olly profile: Cheeky, hot headed and confident are just some of the words used to describe Olly but as an experienced chef these are the qualities that have put him on the map. Known in the chilli industry as Chilly Olly, Olly can be found working with various companies across the UK designing new sauce concepts and brands, giving tours at the Chilli Ranch he is in partnership with, launching new products at a rate many of us could only dream of, providing chef consultancy for up

and coming venues or giving cooking demos on the UK fast growing Chilli Festivals scene! No matter where you meet Olly his knowledge, passion for flavour and cheeky character leave you feeling excited, whether you are a chilli head or are just starting on your chilli adventure you will be hard pushed to find a more inspiring chef!
The Demonstration Tent will also host the popular Chilli Food Challenge and a Ready Steady Cook interactive cooking session.

Recipe
Curry Coconut Tofu Flan
Serves 2 | Prep time 20 mins | Cook time 40 mins Tofu can be really boring and uninspiring so we set about making it interesting and tasty in this wholemeal flan. My journey with pastry making has taken me to really appreciating wholemeal flour and how satisfying it is and of course normally better for you than white flour. Although if not careful you can get into problems with dryness and cracking you should be fine with this recipe, I have learnt to never be afraid of adding more water but do it in very small amounts at a time!
To make the pastry
1.
First of all get the pastry made by mixing the dry ingredients together and then rubbing the fat in to create a crumble texture, add water and using a fork mix until you have a softball of dough.
2.
On a lightly floured surface push out or roll the pastry to fit 7 inch pie dish.
3.
Blind bake for 20 minutes at 180°C
4.
Whilst the pastry is cooking chop all the veg very small, lightly cook for two minutes in a little oil, turn off the heat add the coriander and tofu mix in well, then add the curry coconut sauce and stir
Ingredients:
• 100 g wholemeal flour • 50g coconut butter • ½ tsp sea salt • 75ml cold water Filling : • 170 g Tofu • ½ red pepper • 35g french beans • 3 baby corn • 1 spring onion • 30g Broccoli • ½ jar Chef Bernie‘s Curry coconut Sauce • 6 small tomatoes • Small bunch coriander (28 g) • 1 tsp olive oil
When the pastry is ready fill with the curry mixture, push down slightly and then place sliced tomatoes on top, return to the oven at 180°C and bake for a further 20 minutes
