Weeknight Dinner

This lemon garlic pasta is one of my go-to meals when I don’t have a lot of time. It’s packed with flavor and serves a lot of people, which makes it great for entertaining without much notice. If you want a bit of protein, top with strips of grilled chicken breast and enjoy!

Lemon Garlic Pasta

INGREDIENTS

1 package angel hair pasta

4 tablespoons olive oil

pinch of red pepper flakes

5 garlic cloves, thinly sliced

1 cup heirloom cherry tomatoes, halved

1 lemon, zested and juiced

salt and pepper to taste

handful of parsley, roughly chopped

PREPARE

Cook pasta according to package instructions.

Meanwhile, heat olive oil in a large skillet over medium heat.

Add red pepper flakes and garlic slices and cook for 2 minutes or until fragrant, stirring frequently.

Add tomato halves and stir until they just begin to break down (3-4 minutes).

Once pasta has finished cooking, strain and add to the skillet with tomatoes and garlic. Stir until well combined. Add zest and juice from lemon. Add salt and pepper to taste.

Serve topped with parsley.

White Sangria

INGREDIENTS

1 bottle dry white wine

4 shots vodka

3 tablespoons sugar

1/2 cup sparkling water

apple

orange

pear

fruit of your choice

PREPARE

Chop up fruit and combine with sugar and vodka in a pitcher. Let sit for at least one hour for fruity flavor to develop. Stir periodically.

Add bottle of wine to fruit mixture.

Serve with a splash of sparkling water and heaping helping of fruit.
