Rosforth & Rosforth is an amazing little wine place hiding under Knippel Bridge – it’s not an actual bar; you just buy a bottle of wine, borrow some glasses and find seat in the sun by the water. Return the glasses when you’re done, and that’s it – easy peasy. Are you more of a snacking-whilesipping kind of person, Vivant in Nørrebro has got you covered; delicious wine, great beer and small sharing plates. Bonus info: they also host a monthly quiz night.
Do yourself a favour and take the time to visit Grundtvigs Church and be prepared to be blown away. Stay clear of the weekends. A boat trip from Nyhavn around the Copenhagen Canals is without a doubt one of the best ways to experience the city’s architecture, both new and old, and the history behind it.

There’s always something exciting on the programme at either Odense Theatre or Odeon. It adds a special mood to the night, whether it’s a classic performance or something more experimental.
For a distinctive beer experience, Carlsens Kvarter is the ideal choice. It’s a bar that feels like a time capsule where an authentic pub atmosphere meets an impressive selection of specialty beers. My father used to come here in his youth, and to this day, the ambiance remains unchanged, making it truly special. For a more international vibe, I’d recommend Visit or Nu – the setting is refined and stylish, offering well crafted drinks in elegant surroundings. It feels like a cultural sanctuary— a place to immerse in conversation and enjoy an evening with a cosmopolitan touch.

A Wave of Sunshine
Meet Angela McKay, the Australian artist behind Ohkii Studio, known for her dreamy and colourful illustrations often inspired by traveling and summer holidays. She’s collaborated with the likes of Gucci, Goop and Madewell and for this very magazine, she has created the cover and the city guide maps. Here, she reminisces about beach memories, taking a leap of faith into artistry and the elastic feeling of summer.
When Angela McKay talks about summer, she keeps coming back to the ocean – whether it being her favourite childhood memory, daily rituals or how she wants to spend time with her daughters: It’s the beach and the ocean. Growing up in the Australian bush south of Perth, which is pretty much as far away as you can get – in Australia and in the world – being in nature and by water is her second nature.
“My earliest memories are being surrounded by trees. We lived quite remote; the closest town was 20 minutes away. I think that’s why I started painting nature so much, when living in New York – because I was missing it. For me, drawing nature is nostalgic and calming,” she tells over Zoom on a blustering day in March.
While Angela had been drawing and painting since childhood, she never really believed it could be her job. She went to university in New South Wales, majoring in graphics and textiles, and after graduating planned a trip through South and Central America with her brother; she took with her a sketchbook and some paint.
“During the trip, I realised how drawn I was to painting – it was
a way of capturing the whole essence of what I was experiencing. That’s when I thought: ”Whatever I end up doing, I have to make sure I have some of this in my work,” she remembers.
It took a couple of stints into graphic design – “my eye is not fine enough for that kind of work”, she laughs – and textile designer for a swimwear label, before an opportunity arose to move to New York with her partner. And with that, eventually, a leap of faith into fulltime artistry.
“The really great thing about that move was that nobody knew who I was. It was a completely clean slate. And I thought: “I’m just going to do it: I’m going to draw every day, and post it every day, and nobody is going to see it anyway,”” she tells of those early Instagram days, taking a deep breath while remembering it, almost like she’s back in time making the decision all over again.
But people did see. And they liked what they saw. After a couple of years as textile designer for Anthropologies’ soft furnishings department, and while also committing to putting her illustrations on the grid every day, Angela found herself a bit run down.
“My Instagram started to take off, and people were contacting me, asking about commissioned work and collaborations. I was just working, working, working until I was so burned out and realized I had to choose one direction. I decided to give fulltime illustrations a try. If it didn’t work out, that was okay and I would go back to working in textiles,” she says. That was seven years ago. Since then, Angela and her partner have relocated back to Perth, had two daughters and now just moved to Melbourne.
“We’ve just been settling in. This summer was not ordinary for me – we’ve been going to the pool,” she says, the eye roll audible in her laugh.
“For me, summer means early mornings on the beach. It’s been that way, since I was a kid. We would wake up almost before sunrise and go fishing. Then spend the morning on the beach while the sun came up, and go back home and cook the fish
for lunch. Or my dad would take us with him to catch crayfish. We would lie on his surfboard, hanging over the side with our heads in the water with goggles on, watching him and the vibrant underwater world of sea life. As an adult, I still really love the early mornings at the beach – when I lived in Sydney, I would go down to Bondi for a run before the hustle and bustle of the day began. It reminds me of not having to worry about being anywhere – of time being elastic. That’s the epitome of summer to me.”

Singing in the Sunshine
Few things go together as well as music and summer. We’ve asked the emerging Danish artist Mille about the sound of her summer – and it’s going to be quite something.
This summer is not going to be like any other for Mille Liendgaard, performing under the name Mille. First of all, the 18-year-old is graduating Gymnasium, the Danish equivalent to high school. Second, she’s touring a number of Danish festivals, beginning with SPOT Festival, known to be a massive talent incubator, and ending with SMUK Festival, reputed to be the most beautiful festival venue in the country. It’s her first time touring the domestic festival scene and she is rea-DY.
“I haven’t played that many festivals, so I’m very excited. My band and I are putting together the music and performance these days,” she says.
Graduating and touring all in one summer is no small feat, so Mille probably won’t have a whole lot of time to be a festival-goer herself. But she adamant about one thing:
“No matter what, I want to be there when Annika opens Orange Stage at Roskilde Festival,” she says, also recalling last years opening by Lamin and her own first time attending the legendary Danish festival.
“That was one of the best concerts of my life. It was just euphoria flying through the air,” she remembers. Because there is something magical about listening to music outside; almost like the open sky heightens the experience with its infinity.
“People come together in a different way when outside. At indoor venues, it feels like, it’s more about the people you’re going with. Outdoor concerts
and festivals are about the crowd – you share the excitement in a different way and it feels like everyone is there to celebrate something; finished exams, the beginning of summer holiday or just having taken the day off work to be there.”
But what is it that makes the ultimate concert? Last summer Mille was invited by Coldplay to see them on the Helsinki leg of their tour and the experience stuck with her.
“When they announced there was one song left, I was like: “Wait, what? You only just begun”. It felt like no time had passed. They had the ability to make the audience feel everything with them – the lyrics, the stage show, the sound – which in my opinion is what makes a good concert. It was incredible to be a part of a crowd that huge and at the same time just forgetting about time and place,” she recalls.
This year, it’s Mille’s turn to captivate the festival audience around the country. She sings in Danish, her vocal is crisp, but with a slight edge, making the lyrics sound honest and pure rather than naïve. She has been releasing new music from the beginning of the year, with tracks like “Kendt mig i en uge” and “Drikker med mig selv” making the Spotify Top 10 charts, and soon everything will culminate in one of her biggest dreams.
“I’ve always fantasized about playing SMUK Festival, where I used to go as a kid with my parents – it’s sort of my hometown festival. I never thought it would happen this early in my career and I’m so honoured to do it.”

A Bite of Summer
The sandwich joint Abrikos in Copenhagen is known for their ensembles of thick cut bread with mouth-watering fillings. We’ve persuaded them to share a real summer pleaser and their take on a classic:
It’s fresh, light and aromatic – it’s the cucumber sandwich like you’ve never had it before.
Classic Cucumber Sandwich
Makes 1 sandwich
Ingredients
50 g skyr
50 g mascarpone
Zest from 1 lemon
½ a cucumber, sliced or cut thinly
Green chilli sauce or pesto
A handful of fresh basil
Freshly grated black pepper
2 slices of good bread

Method
Day 1
• Drain the skyr over night in a coffee filter or cheesecloth.
Day 2
• Mix together the drained skyr with mascarpone and lemon zest – save a little bit of the zest for the assembly. Add salt to taste.
• Slice the cucumber thinly, either by hand or on a mandolin slicer.
Assemble the sandwich
• Spread the cheese mix on both pieces of bread.
• On one piece of bread, add the cucumber slices, first horizontally, the vertically, all the way to the bread’s edge. Continue this until you’ve used up all the cucumber slices.
• Spread chilli sauce or pesto on top of the cucumber.
• Add fresh basil on top of the sauce.
• Sprinkle on the last of the lemon zest, top off with some freshly grated pepper and add the last piece of bread on top of everything.
• Eat at once and enjoy every single fresh and creamy bite!
Fly Me to the Moon
The Lemon Moon Cake is a Danish classic –here, one of Copenhagen’s best bakeries, Københavns Bageri, shares their spin on it. It’s a zingy, summery sensation –sweet and tart all in one bite.

Lemon Moons
Makes 18 pieces
Ingredients
Batter 1
185 g marzipan
65 g sugar
45 g soft butter
½ egg (use the other half for Batter 2)
Zest and juice from 1 lemon
Batter 2
220 g soft butter
110 g powdered sugar
5 g vanilla powder
2 ½ eggs
2 egg yolks
200 g flour
20 g almond flour
5 g baking powder
1 g salt
Lemon syrup
110 g lemon juice
110 g sugar
65 g water
Lemon curd
220 g lemon juice
220 g sugar
9 egg yolks
5 gelatine sheets
1 g vanilla powder
240 g butter
Method
Batter 1
• Mix together all the ingredients to a uniform paste.
Batter 2
• Whip butter, sugar and powdered sugar on a stand mixer with the paddle until it becomes light and fluffy.
• Add egg and yolks little by little, while mixing.
• Mix together flour, almond flour, baking powder and salt in a separate bowl and add it to the batter.
• Add Batter 1 and mix until you have a uniform batter.
Bake
• Dress a baking sheet with baking paper and place nine cake rings on it (10 cm wide). Line the rings with baking paper and make sure they are greased.
• Add about 120-130 grams of the batter into each ring.
• Bake at 190ºC for 14-15 minutes until the cakes are golden. Let them cool off completely.
Lemon syrup
• Add everything to a pot and give it a quick boil, until the sugar has dissolved.
Lemon curd
• Soften the gelatine sheets in cold water.
• Heat egg yolks, sugar, vanilla and lemon juice on low
heat, constantly stirring the pot, until it reaches 80ºC.
• Take the gelatine sheets out of the water and squeeze them lightly for excess water, then stir them into the warm lemon curd until it dissolves.
• Run the curd through a sieve into a bowl and add the butter little by little while stirring until the curd is smooth and uniform.
• Put the curd into a silicon mould (8 cm wide, 1 cm deep), cover with cling film and let it cool in the fridge until it sets. When set completely, transfer to the freezer – this will make it easier to pop them out without breaking.
Assemble
• Dip the cooled cakes in the syrup.
• Sprinkle the sides and bottoms with sugar.
• Take the lemon curd out of the moulds and place it on top of each cake and let them thaw slightly.
• Drizzle a little bit of the syrup on top of the curd to give it a nice shine.
• Cut the cakes in halves to get the classic half moon shape – and serve!
