Welcome to Food Processing for the future Bridging the gap between food producers and suppliers for a more competitive food industry

The food industry will be facing a host of challenges in the comming years. With up to 40% population growth and an estimated 10 billion mouths to feed by 2050, new requirements will be made in respect of climate change, quality, traceability and shelf life. Accordingly, it is imperative that all corners of the food industry are geared to a fiercely competitive universe – not least the collaboration between suppliers of technology and food producers.

- The food industry is faced with global challenges such as greener and smarter solutions, but also with opportunities that the industry must seize. The collaboration between food producers and suppliers of food technology, ingredients, software and raw materials is key to ensure continued industry innovation and the development of competitive solutions globally, says Niels Osterland, CEO of MMS Nordic and President of the Danish Society of Dairy Technology, which is one of the organisers of the Food Processing for the Future conference together with Danish Food Cluster and the Danish Export Association (Food Tech/Fish Tech).

The three organisations have organised the conference to gather suppliers of technology and food producers for inspiration purposes and to find solutions to the challenges of the industry.

The aim of the conference is to create new networks as a good starting point for innovative thinking, according to Esben Laulund, Vice President at Chr. Hansen and Chairman of Danish Food Cluster: - The interface between two areas often provides the basis for innovation. And we see great potential in the space between suppliers and producers in the food industry that can be better exploited, he says.

This conference is particularly focused on sustainable packaging, smart cleaning, intelligent process equipment, from waste to value strategies and alternative proteins. These subjects are facilitated by 21 experts representing a number of internationally recognised technology enterprises.

The new FoodTray from GEA GEA presents a new system solution for sustainable MAP packaging with 80 pct. recycling content.

GEA has recently developed an ecological carton/film composite solution, known as FoodTray. This is a response to a global requirement for higher recycling rates for plastic packaging. Initially GEA focused on creating a tray from corrugated board that could also meet the requirements of modern food packaging. Thanks to the cooperation with diverse specialists from the corrugated cardboard, film and mechanical engineering sectors, including the Roba Group, Schur Flexibles Germany and Van de Velde Packaging, the requirements can now be met.

FoodTray combines the criteria of product claim, haptics, safety, sustainability and industrial production processes. It is made from the basic materials: corrugated cardboard and film.

Corrugated cardboard is the most widely

used packaging material worldwide and is made almost entirely of natural raw or recycled material. The film provides an outstanding barrier, helping extend food shelf life.

The FoodTray system consists of corrugated cardboard carton with film on the inside, combining the advantages of both cardboard and plastic. The film content is reduced by up to 70 percent, since FoodTray replaces fossil-based raw materials with fibers from renewable raw materials; the recycled content is more than 80 percent. At the same time there is no compromises in terms of stability and the cardboard and film can easily be separated and recycled by the consumer. The two components are assembled on a GEA PowerPak PLUS thermoforming packaging machine.

The film is thermoformed and sealed directly to the inside of the corrugated cardboard box. After this, the customerspecific packaging process can take place. The investment costs are low and the result is ecologically sustainable packaging.

Tetra Pak optimerer procesdesign med ny viden om fraktionering af mælkeproteiner Adskillelse af mælkens proteiner i rene fraktioner med kasein og valleproteiner er kommercielt interessant, men teknisk udfordrende. Tetra Pak har gennemført undersøgelser med både keramiske og polymere MF-membraner, som bidrager til at udnytte mælken optimalt.

Fælles for alle keramiske og polymere MF-membraner er, at de har en porestørrelsesfordeling af varierende bredde frem for en specifik cut-off værdi. Udover membranens egenskaber vil også foulinglaget påvirke adskillelsen af proteiner.

Foulinglagets tykkelse og sammensætning er afhængig af procesforhold som fx temperatur, baseline- og cross­ flow tryk samt mælkens sammensætning og procesmæssige forhistorie. Derfor er en optimal løsning for proteinfraktionering af mælk ikke alene et spørgsmål om membraner, men et samspil mellem membran og procesforhold for at opnå både god adskillelse af proteiner samt høj flux.

I Tetra Pak har vi gennemført omfattende undersøgelser af proteinfraktionering med både keramiske og polymere MF-membraner under forskellige procesforhold samt med forskellig forbehandling af mælken.

Vi ved, at der kan opnås meget forskellige resultater med samme råvare, men med forskellige forbehandlinger, membranvalg, anlægsdesign samt brug af diafiltreringsmedier.

For nogle mejerier vil fokus være på sammensætningen af MF-retentatet, mens permeatet skal bruges i produkter, hvor sammensætningen af dette betyder mindre. For andre vil det derimod være helt essentielt at have lavt indhold af kasein i permeatet. Valg af anlæg og

Smarter cleaning with automatic low-pressure technology The cleaning process is one of the most important stages in food processing, and those responsible for it have major responsibilities. Insufficient levels of hygiene may cause microbial growth and jeopardize food safety. Irregularities in the final product may eventually lead to foodborne disease outbreaks and damaged brand value.

Klimaindsats og kamp mod madspild øger fødevareindustriens fokus på udnyttelsen af sidestrømme fra produktionen. Det kan være udvinding af ingredienser eller udvikling af nye fødevarer.

Case: Fra slagterisidestrøm til funktionel proteiningrediens En væsentlig del af sidestrømme som fx lunger, hjerte, nyrer og milt går i dag til foder eller biogas. Disse sidestrømme har et højt proteinindhold. I samarbejde med kødindustrien undersøger Teknologisk Institut mulighederne for at ekstrahere proteiner fra sidestrømmene.

Sikre Prøver er klar til mejeribranchen Firmaet ’Sikre Prøver’ har specialiseret sig i udstyr til prøvetagning og analyse. Gennem en årrække har kornbranchen været rygraden i kundeporteføljen, men nu er firmaet klar til mejeribranchen med nyt udstyr.

Det er snart 12 år siden, at kemiingeniør Steen Sørensen startede firmaet ’Sikre Prøver’, der som navnet mere end antyder, beskæftiger sig med udstyr til udtagning og neddeling af prøver samt analysering af prøver.

Firmaet slogan er: ’En analyse er aldrig bedre end den prøve, den er lavet ud fra’. Det betyder, at udstyret skal sikre, at prøvetagningen er repræsentativ.

Mælkeritidende har besøgt Steen Sørensen i Odder, hvor han for nylig har

etableret sig både privat og arbejdsmæssigt.

De mange kataloger fra Steen Sørensens samarbejdspartnere er det første, synlige udtryk for firmaets produktpalette. Her er kataloger fra PerkinElmers, virksomhederne Perten Instrument og Delta Instrument, som firmaet Sikre Prøver er eneforhandler for på det danske marked. Og her er også en moppedreng af et produktkatalog fra det engelske firma Sampling Systems, som var Steen Sørensens første samarbejdspartner, da han startede egen virksomhed. ’Sikre Prøver’s produkter er centreret om prøvetagning og analyser i foder-, fødevare- eller biotekindustrien. Porteføljen tæller desuden digitale mikroskoper fra Tagarno og noget så lavteknologisk som genanvendelige lukkeclips fra WeLoc.

En dør til mejeribranchen

Indehaver af ’Sikre prøver’, Steen Sørensen, har flyttet bopæl og virksomhed til Odder. Samtidig udvider han sit forretningsområde til mejeribranchen.

Steen Sørensen slår op i et katalog med analyseudstyr, der er målrettet mejeribranchen. Det er et fælleskatalog fra svenske Perten Instruments og hollandske Delta Instruments, der begge ejes af den amerikanske koncern Perkin Elmer, hvis maskiner ’Sikre Prøver’ forhandler. Det er relativt nyt, at den hollandske virksomhed er blevet ind-

lemmet i koncernen, og for Steen Sørensen er det en dør til mejeribranchen, der er blevet åbnet. Virksomheden har nemlig maskiner, der direkte retter sig til analyse af prøver på mejerier, så nu kan ’Sikre Prøver’ levere udstyr til hele processen — fra afregning af råmælken, procesoptimering til produktanalyse, herunder textur- og NIRmåling med mere.

Den ”nye” afregnings­ maskine I begyndelsen af oktober 2019, da messen hi Tech & Industry Scandinavia blev afholdt i Herning i forbindelse med International Food Contest, havde ’Sikre Prøver’ en stand. Her kunne man blandt andet se et LactoScope fra Delta Instruments/PerkinElmer. Maskinen kan både bruges i indvejningen til at afregne kvaliteten og i skummesalen til proceskontrol. Steen Sørensen har forhåbninger om, at udstyret bliver en af indgangsnøglerne til mejerierne for ’Sikre Prøver’.

Maskinen har stor lighed – både i udseende, kvalitet og kapacitet – med Foss maskinen, der går under navnet MilcoScan. Det er altså ikke tale om en ny teknologi, men om et alternativ til et eksisterende produkt i Danmark.

Foss’ maskine. Den kan det samme, men prismæssigt ligger den lidt under.

Prøve- og analyseudstyr er imidlertid ikke et område, hvor man konkurrerer på pris. Kvalitet, stabilitet og service er langt vigtigere, siger Steen Sørensen, som fremhæver, at Delta Instruments/ PerkinElmer har et stærkt hjemmemarked i Holland samt salg i Tyskland og England, som alle er markeder, hvor der findes konkurrenter. I Danmark har der op til nu været en forhandler af Deltas Instruments’ udstyr, og LactoScopet findes derfor allerede på flere mejerier – både hos Arla og hos andre.

For Steen Sørensen er opgaven at rebrande udstyret over for mejeribranchen – for dels er Delta Instruments kommet under PerkinElmers vinger og på vej til at tage navneforandring, dels er ’Sikre Prøver’ blevet eneforhandler i Danmark.

Steen Sørensen har i øvrigt også store forhåbninger til, at mejeribranchen vil være interesseret i analyseudstyr, der kan måle produktkvaliteter online. Det kunne eksempelvis være et instrument monteret, så det måler ostens indhold og forædling direkte på båndet.

plads på et snævert marked. Således er det lykkedes firmaet, at få udstyr fra Perten Instruments ind i kornbranchens laboratorier og dermed bryde Foss’ monopol på analyseudstyr til kornbranchen. I dag kan Steen Sørensen konstatere: - Næsten 95 procent af al det korn, der høstes i Danmark, har været inde over de maskiner, jeg arbejder med. Nu vil jeg gerne følge mælkens vej ind igennem mejeriet, ligesom jeg har fulgt kornets vej, siger han og tilføjer, at det er en vej han betræder med stor ydmyghed.

- Mine kunder ved meget mere om mejeribranchen, end jeg gør. Men jeg kan komme med noget viden om prøveudtagning og flytte denne viden over i mejeribranchen, siger han og forklarer, at analyseteknologierne langt hen af vejen er de samme på tværs af sektorer, selvom der naturligvis er forskel på krav til udstyr og håndtering.

- Jeg kommer ikke med verdensnyheder, men med alternativer – måske til prøveudtagninger, der i dag gøres manuelt eller med tilbud til mejerier, der bruger konkurrerende mærker. Vi vil gerne gøre det bedre på service og kvalitet, siger Steen Sørensen Siden 2008 har han drevet ’Sikre Prøver’ som en enkeltmandsvirksomhed, men er nået en skillevej, hvor han

er begyndt at ekspandere og ansætte servicefolk på konsulentbasis.

De sidste par år har Steen Sørensen i det helt taget skærpet kursen i sit liv.

Privat er han blevet gift og flyttet til en tidligere lægebolig i Odder, som parret er ved at gennemrenovere. Og i det store hus er der både plads til hans firma og hendes psykologkonsultation.

Forretningsmæssigt er ’Sikre prøver’ vokset – og er nu klar til at indtage mejeribranchen. ■
