Ingredients

Wet Mixture 1 cup white sugar 2 sticks butter 2 eggs 2 Tbsp fresh lemon juice Dry Mixture 3 cups f lour 3 tsp baking powder 1 tsp salt 2 tsp ground nutmeg 1 cup or more, dried currants

Instructions

1. Cream together wet mixture, set aside. 2. Sift together dry mixture, adding currants last. 3. Add wet mixture to the dry, if it’s to dry, add 3 Tbsp milk or cream. 4. Flour a cutting board and roll out like a biscuit. 5. Cut with 2” round cutter or juice glass. 6. Transfer to a f lat griddle on low to medium heat, checking to see if light golden color before f lipping. 7. Basically cook them like a mini pancake.

Freezes well! These are tricky so don’t beat yourself up!
