It’s more than food — it’s art Chandara House voted best ethnic food in 2025 Best of Lynden awards

LYNDEN — Everyone knows them as Audi and Pear. Formally, they are Jirawat Philuek and Thunchanok Churngchow. Together, they moved to Lynden from Seattle in January. Recently, their restaurant, Chandara House, was recognized for Best Ethnic Food in the 2025 Best of Lynden awards. “This award makes us proud because it affirms our mission at Chandara House to bring the artistry of Thai flavors to the community with authenticity and heart,” Churngchow said. “Being recognized by the people we serve is the highest honor we could receive. Your support means everything to us. We’re grateful to be a part of your everyday lives, and we’ll keep doing everything and cooking with heart.” For Churngchow, Chandara House is more than just the food: “It’s the signature artist of Thai flavor created to be served by everyone.” Seattle residents before they came to Lynden, Audi and Pear wanted to move to a smaller community. Although they had never run their own business, they “looked for small Thai restaurant, then I found Chandara House from a Thai agent from Seattle’s Thai community,” Churngchow said. Anyone who runs a business knows it’s as much about the community as it is the product or service. Compared to where the couple had lived before, Churngchow found Lynden to be a “tiny and pretty town.” “I like people in this town, most everyone are friendly and kind,” she said. “The town is very safe, orderly and clean.” Churngchow also said Chandara House is the “perfect business size [for] what I want and everything is cute, peaceful and a lot of nature in here and around this area as well.” For their first business venture, Churngchow said there were some initial challenges, but taking over Chandara House “wasn’t as difficult as we thought.” See Best Ethnic Food on 8

508 Coffee and Youth Lounge: A new place for youth to hang out and be themselves By Cal Bratt For the Tribune

LYNDEN — By 3 p.m. on a weekday afternoon, even as the weather outside is dreary, students are finding their way to the cheery bright interior of the 508 Coffee and Youth Lounge in Lynden. At 508 Front St., it is the incarnation of a dream that Andy and Becky Jewell had for this building they own, which also contains their Farmers Insurance agency on the 510 half of the storefront. “Becky and I have always had the feeling for this sort of space, a spot where kids can come and hang out,” Andy said. It’s not just for kids. Grown-ups can certainly come in for the atmosphere and for the drinks or food on the menu. But the focus is clearly on the middle and high school age group. Amidst the stress and pressure on teenagers, and now in the darker days of winter, 508 Youth Lounge can be “a beacon of light” where the kids can “just be themselves,” Jewell said. They aren’t told to shush up here, he added. This place opened last May. The hours are 2:30 to 11 p.m. Monday through Thursday, all the way to midnight on Fridays and Saturdays. Andy Jewell said the intent is to offer a wholesome, safe place for youth to go in the after-school hours, with adults around but not in a supervisory role. Kids need to be old enough to be responsible on their own. The “Who We Are” statement at the door declares that the 508 Foundation is a faith-based nonprofit organization committed to serving the youth of north Whatcom County. It states: “With a vision for mentorship, counseling, tutoring and Bible study, we provide a safe and welcoming space where young people can thrive, have fun, and recharge while also being challenged to grow and meet the great potential that God has placed in each of them.” Messaging on the walls and shelves

BEST OF LYNDEN 2025 echo that Christian orientation. Contemporary worship music plays softly in the background. On a recent Tuesday, by 4 p.m. at least 20 kids or adults were at the 508 Coffee and Youth Lounge tables or group areas, or in the back game room, or ordering at the service counter. Some just talked. Two 16-year-olds did school work. A pair of local high school grads said they meet before each heads out on a YWAM mission soon. A local AAU basketball team of 10-year-olds was having their Christmas party with snacks provided by a mom. The Lynden, Lynden Christian and Nooksack Valley school systems were represented. “We had been struggling to find a place to hang out (that wasn’t a library or book store),” said Paikea as she met with friend Mia. Both are Lynden Middle School 14-year-olds. Not drivers yet, as were many of the youth present — and so often need to be dropped off and picked up — they said their parents had also checked out this place and were happy with it. Students get 20% off on the menu items, which include various hot and cold drinks, sandwiches, cinnamon rolls, and plates of chicken strips, mini-corndogs and fries. Usually two staffers are on duty to take care of the kitchen and service counter. This 100-year-old downtown building has some history behind it. For decades it was a destination for clothing as the Lynden JC Penney store. It later contained The Fabric Cottage, a bike shop, and a floral and gifts boutique. When the Jewells bought the 508-510 Front St. building about 10 years ago, they wanted first a fresh new storefront for their insurance business. Then the pandemic hit, making life hard for everyone. The 508 portion eventually went vacant. But that spurred on an idea that the Jewells, with five children, had held all along: create a youth gathering place. The planning began back in 2020. Becky collaborated with friend Nicole Bennett, an interior designer, to reimagine the space as an inviting hangout for middle and high school kids. It took five years to come to reality, through the steps of very tasteful redesign, some deconstruction and then construction, registration as a nonprofit, and more. The space now has all new electrical, plumbing, lighting, a bathroom and kitchen. Mostly, awareness of 508 Youth Lounge has spread by word of mouth over recent months. Sometimes a reminder of the weekend evening hours is given at Friday night games of Lynden and Lynden Christian high schools. Besides at least one staff person at all times, there may also be adult engagement volunteers on hand to mingle with the kids, Jewell said. Right now, the décor theme is geared thoroughly for the holidays – to be changed seasonally, of course.

LYNDEN — Think you know how many of the presidents on Mount Rushmore have mustaches? How about if sweet potatoes and yams are botanically synonymous? Do you know who won the wildcard category for Best of Lynden 2025? Answers: one, no, and the Trivia Knight. Will Butela, the man behind the Trivia Knight, is a seasoned trivia host whose laid-back and humorous style has earned himself a devoted following at Whatcom County brewpubs. “If people are going to take the time to come out, I try to make it something they have a lot of fun with and try to make it approachable,” he said. “The questions are always different. The playlists are always different.” Butela first hosted trivia nights during his college years at Western Washington University. He excelled in standup comedy, improv and public speaking, skills which served him well in his role as master-of-ceremonies for all things trivia. In 2018, Butela approached Lynden’s Overflow Taps about a weekly trivia slot, which quickly became a success. These days, Trivia Knight can be found weekly at Overflow Taps, District Brewing and Larrabee Lager Company. The structure is consistent each week with familiar trivia elements: four rounds of 10 questions each, with themed categories, a song round and a wildcard finale. Within this framework, Butela brings his own unique flair for an environment that is equal parts welcoming and entertaining. Butela aims for questions that make players think, rather than stump them outright. He also tends to focus more on pop culture than encyclopedia facts. “My goal isn’t that you don’t know the answer,” he said. “My goal is that you don’t know the answer right away, until you really think about it. I want you to know the answer.” Each night features a unique, personally curated playlist of wide-ranging tunes to keep spirits high at every table during the more difficult categories. Trivia night with the Trivia Knight is a party, not a test. Keeping with the casual spirit, phones are banned on a “see something, say something” basis. Grading is on the honor system.

(Elsa Ericksen for the Tribune) “We grade our own papers here,” Butela said to a crowd at District Brewing. “I trust you, we’re all adults here and you’re using a pen.” Butela’s trademark sense of humor entertains the crowd throughout the night. He cracks jokes with the bartenders and kitchen crew, regulars and newcomers alike. No one is safe when he’s on the microphone. “It’s just so fun, the community getting together and the laughter,” said Amy Shintaffer, co-owner of District Brewing. “Will has a following and a lot of them follow him from location to location. Some weeks, we have to bring picnic tables in from outside and we have to turn people away.” Ask any of the Trivia Knight regulars why they show up week after week and they

have an immediate answer: no scratch paper or group conferencing required. “I’m here for Will,” said Lexi Groen, who doesn’t identify as a trivia person but comes back for Butela’s crowd interaction and banter. “I love his wit and his humor,” said Shanna Manning, a longtime attendee. “I really appreciate that he tries to include everybody.” One of Manning’s first dates with her now-husband was at a Trivia Knight event six years ago — and the couple became close with Butela. When they decided to get married, they asked Butela to officiate. “I just think it was cool that one of our first dates ever was at Will’s trivia and he was the guy that ended up marrying us,” Manning said.

Tristan Delacroix, one of the regulars, summed up the general sentiment of the crowd. “Great guy,” he said. “Even better trivia.” Butela is just glad the Trivia Knight creates a space people love to come back to, where they find entertainment, laughter and connection. “I’m touched,” he said of his Best Wildcard win. “This sounds cliche, but it really is the people. That’s who we’re doing it for. One of the greatest compliments for me is that there are people that come all the time and never win. So we must be doing something right. “We did it with love and care,” she said. The first few months as Chandara House owners, Audi and Pear made few changes. Why? “Because we would like to learn and know more about people in this town, what they like and what they don’t like. And find pros and cons of the business,” Churngchow said. Later, they renovated the kitchen area, storage area and working area. “We made it more efficient to work,” she said. “We used some technology and adjusted product quality to match the level we wanted to improve.” Those changes, some slight, some more extensive, are all about the customer experience and “creating food that brings people together.” “Seeing our community support us is truly inspiring,” Churngchow said. “People knew or noticed that we have changed something and they said it’s nice, it’s different and they like it. People come back and recommend our restaurant to their friends and family. All of that kindness fulfills our hearts and makes us feel proud of our business and have more energy to keep going on to create something better for the customer.” For anyone who is not familiar with Thai food, Chandara House offers soups, salads, curries, noodle soups, noodle stirfry dishes, fried rice dishes and other entrées. Flavors range from sweet and sour to savory. Heat/spicy levels vary from 1-5, however zero-heat is also an option. And don’t forget the protein.
