If there is a dish that identifies Mexico, that is the mole, however, at the same time, it is controversial, autochthonous, and can have different meanings. It is a very elaborate dish and yet at first glance, it may seem simple, but not to the taste in which the various ingredients make it a unique dish.
The Mezcal restaurant at the Montage Los Cabos hotel has prepared a truly exquisite festival in homage to mole and spared no expense in bringing the necessary ingredients from some of the most emblematic markets in the country.

Chef Odin Rocha prepared seven dishes inspired by seven Mexican markets, which at first seems difficult given the diversity of ethnic groups and styles in Mexican food; however, he achieves it with astonishing simplicity and at the same time complexity, in a unique setting where this hotel is located. The attention of the Chef, sous chef, sommelier, and service staff was punctual, wise, and precise.
The Xochimilco market opened the menu with a delicate dish based on ash and avocado, we continue with the Ensenada Black Market with finely sliced Kampachi in a cucumber-based sauce and a touch of habanero, and although chili was very present throughout the menu at no time had a spicy sensation. I couldn't miss the La Viga market in Mexico City with a crab Chilpachole. The fourth dish, inspired by the Xico market in Veracruz, with a unique flavor, a typical brick-colored mole with jocoque and plantain, The Valladolid market in Mérida makes an appearance in the fifth dish, which was also with plantain, but in this one predominated in soft short rib cooked for several hours, in a black errand based on the most exotic species of Yucatan.
And before dessert a pineapple tepache, soft, delicious, and aromatic, which was the prelude to the perfect dessert based on flavors and textures of the San Miguel Allende market in Guanajuato, which is characterized precisely by its sweets, corn, caramel, and cocoa. Finally, the sweet touch based on chocolate eggs filled with liquor, definitely an unforgettable experience.
