2. Blending continuously using a hand blender, drizzle in the oil until the mixture emulsifies.

3. As soon as it starts to thicken, add the lemon juice and cider vinegar. Pulse to combine.

So what we have discovered is that almost everyone I know invites family over and has a big dinner, but due to COVID restrictions, cannot this year. This all leads to one conclusion: this Christmas is going to be a boring one.
