Winter Vegetable & Bean Soup 1.5 cups of dry beans (navy, canellini, or even chickpeas) or about 2 cans drained and rinsed beans 1 large carrot peeled and diced 2 celery stalks diced 1 medium onion diced 1 small butternut squash peeled, deseeded and cubed 3-4 yukon gold potatoes peeled and cubed 1-2 sprigs of thyme 1 bay leaf About 2 cups coarsely chopped (stem removed) of kale, spinach, or collard greens 4-5 cups vegetable or chicken broth Olive oil Directions: 1. Soak the beans overnight (or for at least 6 hours) in plenty of water. Drain the water, cover again with water, add 1 tbsp of salt and boil on medium until they’re semi-soft. About an hour for chickpeas and about 40 min for other beans. If you’re using canned beans, skip this step - just drain them and rinse them.

2. Drizzle olive oil and salt on butternut squash, spread out on a baking pan and roast in 400F oven for about 15 min.

3. Meanwhile, sweat diced onions, carrots, celery, bay leaf and sprig of thyme in a pot with about 3-4 tbsps of olive oil and 1 tsp of salt. Stir and sear vegetables for about 10 min on low heat or until onion is translucent.

4. Add beans, potato, butternut squash, and broth. Add about 1 tbsp of salt and some pepper. Bring to a boil and then turn heat down to medium-low and simmer soup for about 10 min. Taste and adjust for salt. If soup is not brothy enough, add another cup of broth.

5. Add chopped greens (kale, spinach, or collard greens). Simmer for another 15 min and taste and adjust for salt one last time. Simmer for another 5-10 min or untill all vegetables have softened. Finish off with a drizzle of olive oil and stir until it’s fully incorporated. Squeeze some lemon in bowl before serving.
