MY FAVORITE BILLBOARD READS IN BIG BOLD LETTERS: “YOUR WIFE IS HOT!” The joke is, it’s an advertisement for air conditioning repair. This issue of RIO Magazine is dedicated to celebrating what’s hot. Our River Walk feature story, Salsas of the River Walk, was written by Claudia Alarcon, an Austin-based food writer. Restaurants offer signature salsas as unique as the places that serves them. After reading her story on page 12, zero in on a few and begin to compare for yourself. And who doesn’t love bakery items hot from the oven? Uh, everybody! These aren’t just run-of-the-mill bakeries either; they reflect our local culture. From the deep-rooted Mexican, French and German influences to the more recent Cajun ones. Writer Carole Miller, a San Antonio mom and sweets lover, thoroughly enjoyed tasting her way through the research of the story that appears on page 40. Sadly, the photos are not scratch and sniff. Most folks think of margaritas as a great way to cool off. And now someone came up with the genius idea of making them caliente (hot) and picoso (spicy). I hope you’re brave enough to try this new twist. It was love at first sip for writer Eric Moreno, a San Antonio native and self-proclaimed margarita expert. Read his story on page 32. of the RIVER WALK Salsa is an iconic staple of Mexican cuisine, ubiquitous in every Mexican and Tex-Mex restaurant across the country. However, there are a myriad of variations on the theme, and recipes are jealously guarded by chefs who create their signature flavor profile. In San Antonio, salsa is almost a way of life, whether served with tortilla chips as an appetizer or as a table condiment for tacos. Take a crash course in “Salsa 101” by strolling through the River Walk and stopping in Mexican and Tex-Mex eateries as a fun way to spend an afternoon.

“Everybody has an opinion about salsa. Some like it roasted. Some like it spicy. Some like it extra chunky,” says Jeremy Davis, a menu consultant at Rita’s on the River. “The trick to a great salsa is to use fresh ingredients and to let those flavors take the lead. Our red salsa recipe is simple: tomatoes, jalapeños, cilantro, onions, salt, garlic, and a couple of habaneros just for a little more heat. This is the salsa that you get when we bring out that complimentary basket of chips. Our salsa verde follows the same principle- fresh, simple, and flavorful ingredients.
It makes for a unique combination that seems to complement the food so well. We use tomatillos, jalapeños, onions, cilantro, garlic, salt, and lime juice, and serve this with some of our more traditionally inspired dishes like our street tacos and street pork tacos. IRON CACTUS serves two salsas created by Corporate Executive Chef James Blanton. The Iron Salsa features fresh tomatoes, onions, garlic, cilantro, jalapeños, and chipotle peppers, and the award-winning Fire Roasted Salsa, which is served warm, is made from a blend of fire roasted ingredients with cilantro and a hint of cumin. “We began producing these salsas in 1996,” says Blanton. “The salsas are not indigenous to any region of Mexico, but they will entice even the biggest salsa critic. We also have a carrot-habanero sauce, which is not served tableside but is available upon request, if you like it hot and enjoy a run up the Scoville unit chart,” says the chef. Habanero chiles are native to the Caribbean and are amongst the hottest known to man, but they impart a unique tropical flavor that keeps you coming back for more. RIO RIO CANTINA has served their traditional salsa roja (a classic tomato-cilantro-lime salsa with jalapeños, garlic, and red onions) and a milder salsa verde (a rich tomatillo salsa made with avocado, garlic, cilantro, and poblano and jalapeño peppers) since they Rio Rio Cantina’s Trio of Salsas opened their doors in 1989. In 2014, when they updated the menu to reflect popular Tex-Mex dishes of today, three additional homemade salsas were added to the menu. The salsa negra combines charred tomatoes, jalapeños, and onions for a rich smokiness and a spicy bite. The pineapple salsa is a refreshing sweet and tart salsa with cilantro, red onion, jalapeños, and lime. And the street salsa, the spiciest of them all, is a dark red salsa made with roasted tomatillos and fiery chiles de árbol. All are prepared fresh daily and contain no preservatives. On the menu, the salsas are served as appetizers, with a choice of corn tortilla chips or house-made chicharrones (pork cracklings), with an option of picking a salsa trio for those that can’t decide which one to try. The salsas also compliment other menu items, for example, all burritos come topped with

tangy salsa verde, and the Street Tacos come with street salsa on the side. Most breakfast dishes include with salsa verde. At ÁCENAR MEXICAN RESTAURANT, Executive Chef Richard Sanchez takes his salsas seriously. Owner Lisa Wong has traveled throughout Mexico and has established roots there, so the inspiration for the restaurant’s five different salsas are traditional recipes made with distinct chiles: chipotle, jalapeño, árbol, and habanero. “Every salsa has a key ingredient, Iron Cactus and also a certain step that helps to create each flavor,” says Sanchez. “For instance, for the árbol and jalapeño salsas, the ingredients are boiled in water. This step helps intensify the heat.” They make their habanero salsa by baking the tomatoes and onions. “Habanero is usually a hotter pepper, but adding tomatoes and onions to the recipe lessens the heat.” The fire roasted house salsa consists of three main ingredients - tomatoes, jalapeños, Salsa Roja at and garlic, grilled until charred. Rita’s on the River “We serve this salsa with chips, and is always a big hit with local and out of town guests,” says the chef. “We always have guests that want more heat with their food, and this is when I recommend our other salsas. I usually recommend the jalapeño salsa, because it has the most kick to it.” Because Ácenar does not add any preservatives to their food, Sanchez doesn’t recommend that the salsas travel far. However, from time to time guest will ask for recipes, and the team is always willing to share what they can. At CASA RIO, they’ve been serving a traditional Mexican red salsa with chips as a complimentary welcome to customers since 1946, made from tomatoes, jalapeños, cilantro, and garlic. But as is the case with other River Walk eateries, they also prepare other salsas to serve with specific food items, like the delicious tomatillo and poblano pepper sauce that comes with their Commerce Street Tacos. “We like to think of our tomatillo salsa as a hidden gem not many people know about, says Marketing & Public Relations Director Elizabeth Lyons. “Its key ingredients are tomatillos, celery, green bell peppers, onions, garlic, and jalapeños. Come and try it!”

La Villita, south of the River Walk in downtown San Antonio, was originally settled nearly 300 years ago as one of the city’s first neighborhoods. In 1939, La Villita Historic Arts Village was established and the neighborhood was adapted into a center for teaching regional arts and crafts and to serve as an artists market. BRISCOE WESTERN ART MUSEUM The Briscoe Western Art Museum features nine galleries spread across three floors featuring art in the form of artifacts, paintings, and sculptures. Video interviews with artists, collectors, and others can be found throughout. Collection highlights include fine saddles and spurs; pieces from the Spanish colonial era; Pancho Villa’s last known saddle; diorama of the Alamo; and Santa Anna’s sword. Singer, songwriter, poet, and philosopher Jimmy Buffet once said, “When life gives you limes, make margaritas.” Tequila, triple sec, lime juice, salt, and ice combine as if ingredients in some ancient wizard’s potion to improve one’s outlook on life. Enjoyed both on the rocks or frozen, in San Antonio the margarita is less of a drink choice and more of a lifestyle with new flavors like strawberry, prickly pear, beer, wine, and even soda varieties popping up all the time.

In the mood for jalapeño pain? Just a quick Yellow Cab ride east of Downtown is the thriving neighborhood known as Southtown, where one of the city’s best examples of a hot margarita is crafted. At Rosario’s Mexican Cafe y Cantina, spice is the name of the game and the bartenders are bringing the heat with their Pica Pica (peek-uh peek-uh) margarita. Hornitos Reposado infused with jalapeño and cucumber and mixed with lime juice, agave, and Cointreau. At both Rio Rio and Rosario’s cucumber is the subtle star as its coolness cuts the bite of jalapeño, while still retaining the burn that heat-seekers crave.
But these flavor profiles have played upon the sweet aspects of the margarita. The new trend destined to become a classis is hot and spicy! A combination not traditionally associated with margaritas, are a match made in mixology heaven. The flavors in hot margaritas are those found in traditional Tex-Mex cuisine. Quintessential among them is the low, simmering burn of jalapeño. Whether using infused tequila or outright blending the versatile pepper into the fiery concoctions, many hot margaritas are all about the jalapeño. On the city’s famed Riverwalk is Rio Rio Cantina, a one of a kind restaurant that celebrates everything about the margarita, including those where the jalapeño is the star. At the top of this blazing list is Rio Rio’s Mexican Standoff margarita. Made with Milagro Reposado tequila (notable for its golden color, from aging in wooden barrels), lime, cucumber, and strawberry mixed with jalapeño. Another Riverwalk treasure is Bohanan’s Prime Steaks and Seafood. The restaurant is consistently one of the best in the city; Bohanan’s Bar, equally exquisite, offers an astounding array of mixed drinks. A rising star on their menu is the sublime Rosa Picante Margarita. This award-winning cocktail combines many of the staples of a classic margarita, Patrón Silver tequila and lime juice, with a unique twist. Jalapeño oil

is added to the mix and a jalapeño slice is added as a garnish and then tempered by a cooling “dash” of rose water. Rose water sea salt is added to the rim to complete the drink.
But, what if you want heat without the flavor of jalapeño? We’ve got you covered. Chilies and chili powder are also part of the complex flavor palette of the Tex-Mex-style cuisine that San Antonio is famous for worldwide. History has shown that the chili pepper was domesticated in Mexico nearly 6,000 years ago. Since then, chili peppers have found their way into all manner of dishes and now, even margaritas sport the flavor. For daring drinkers, Rio Rio has a chiliflavored margarita that will tantalize all of your senses. The Smoke on the River frozen margarita is a sweet and fiery blend of peach puree, orange, lime juice, honey, and mezcal. The rim is coated with smoked sea salt and then chili powder. Pearl Brewery, where San Antonio’s resident celebrity chef, Johnny Hernandez, has set up his flagship restaurant, La Gloria. Specializing in Mexican street fare, La Gloria has also built a reputation as an oasis for margarita enthusiasts and when it comes to hot and spicy, you want the Morenita. A blend of Herradura Reposado, Patrón Citrónge (an orange/citrus flavored tequila) and tamarindo and orange juice. The Morenita gets its heat from the rim coating of chili and tamarind. Sweet and heat blend together exquisitely at La Gloria. For a different take on the chili margarita, venture north from Downtown to the Alamo Quarry Market and the Quarry Hofbräu & Beer Garden. This popular watering hole specializes in a wide selection of cocktails and specialty drinks, including the Gringo Cowboy. Combining the best of sweet and spicy, this hot margarita is sure to tantalize your taste buds. A tantalizingly sweet watermelon margarita is topped off with a spicy chili-flavored beer and lime. Naeglin’s, the oldest bakery in Texas, is located in New Braunfels, about 30 miles northeast of downtown San Antonio. Edouard Naeglin, an immigrant from Alsace-Lorraine, started his bakery in 1868. He and his wife, Francisca, lived in an apartment above the bakery and delivered fresh bread straight out of the oven in a delivery wagon that went up and down the streets of New Braunfels ringing a loud metal bell. More than 100 years later, the loud metal bell has been replaced by a website and generations of “word of mouth” recommendations. But the historically-heavenly cookies, pastries, pies and cakes from the family-run bakery have remained timelessly tasty. Their signature dessert is STRUDEL and comes in apple, cherry, peach or caramel apple. With a century-old recipe perfected by Naegelin himslef, this glistening, glorious work of delicious art should be on everyone’s bakery bucket list. Mi Tierra is one of San Antonio’s best known restaurants and an iconic place for celebrations. Celebrities like Eva Longoria and Robert Rodriguez have celebrated birthdays in this festive atmosphere. A gleaming pastry case filled with bakery items greets you at the entry. Don’t miss trying pan dulce, a colorful Mexican style sugar cookie the size of your hand.

If you get a hankering for anything from enchiladas to empanadas in the middle of the night—Mi Tierra is open 24 hours a day, seven days a week. Don’t worry about getting hooked on their bakery items, because they are available online for delivery across the country. Campechanas (pronounced “com-puh-CHA-nas”) are flaky pastries filled with cream cheese or fruit such as pineapple, strawberry or guava, topped with sugar and baked with love in the ovens of the Mi Tierra Panaderia in downtown San Antonio’s Market Square. The pecan pralines are another specialty de la casa that simply must be tasted. Kugelhopfs and world famous piggies abound at Bear Moon Bakery in Boerne (pronounced “Bur-nee”), a charming Hill Country town with German roots, located about 30 miles northwest of San Antonio. 40

This one-of-akind treat is actually a Cajun recipe with a Bavarian twist that found its home at Bear Moon via a talented baker/Hurricane Katrina refugee. Another hot seller is the variety of world-famous piggies. (Think pigs in a blanket made by a master chef.) Hotcakes wish they could sell like Bear Moon’s piggies. In addition to the delightful display of baked bliss, the Bear Moon features a bountiful breakfast buffet, the lunch menu offers fresh soup du jour, sandwiches, wraps and salads and Sunday brunch has mimosas—does brunch really need anything else? The bakery is closed on Monday. Stollen and cream horns will steal your heart at Haby’s Alsatian Bakery. A stollen is a traditional German sweet, condensed bread filled with fruit and drizzled with icing. A cream horn is a magical delight consisting of a cone-shaped phyllo pastry dough rolled in sugar, baked and stuffed with a fluffy, cream cheese filling. Located in Castroville, just 15 miles west of San Antonio, Haby’s Alsatian Bakery has been feeding the sweet teeth of San Antonio and the surrounding area since 1974. It is known locally for its enormous selection of pastries and sweets. And the daily assortment of fragrant, fresh breads include sandwich, wheat, rye, heath, pumpernickel and pumpkin as well as dinner rolls and even tortillas. Spectacular wedding cakes are also a specialty of das haus.

This summer says “no rules,” according to precious metals and gemstone artist Alejandro Sifuentes. Today’s style is all about casting boundaries; allowing, not dictating. While not faddish, Penner’s styles do have pizazz. Brackenridge Municipal Golf Course
During winter when Snow-Belt golfers can’t begin to imagine being outdoors, their kindred spirits can tour more than 50 area courses, sometimes in shirt-sleeve weather in January and February. San Antonio’s long-time love affair with golf really blossomed in 1916 with the opening of a course in Brackenridge Park just north of downtown. Brackenridge Municipal Golf Course, a creation of famed designer A. W. Tillinghast, hosted the Texas Open pro golf tournament six years later and saw the likes of Sam Snead and Byron Nelson as champions. Today “Old Brack” holds the distinction of being the oldest public course in Texas and also serves as home for the Texas Golf Hall of Fame. Another oft-cited reason for great golf in San Antonio is what one pro calls “a variety of experiences.” For example, Brackenridge

presents a fairly flat layout with massive hardwood trees lining the fairways and San Antonio River crossings on several holes. In contrast, courses in the city’s northwestern quadrant at the edge of the rocky Hill Country present dramatic changein-elevation challenges. At The Resort Course, part of the La Cantera Hill Country Resort and Spa overlooking the city, golfers on the par-4, 7th hole get a panoramic view of the Six Flags Fiesta Texas theme park as their tee shots dive 85 feet to the fairway below following some serious “hang time” en route. Nearby an even tougher 18 – The Palmer Course at La Cantera designed by legendary champion Arnold Palmer – offers additional dramatic vistas and a signature 490-yard, par-4 finishing hole with rock outcrops, water and a big bunker behind the green to make it more interesting. Holes deftly sculpted out of rock highlight many San Antonio courses, while others tout features such as premier playing surfaces. In the case of The Golf Club of Texas off U. S. 90 west of the city, lush zoysia grass extends from tee to green, contributing to better lies and golf balls “sitting up” for cleaner ball-striking. Club officials say it’s the only course in the U. S. where zoysia covers the entire layout, all 7,100 yards of it. For many avid golfers, pursuing the little white ball rules supreme, but most want some variety during their golfing sojourns, notes a local club pro who contends that visitors cannot live on golf alone. Destination San Antonio definitely delivers in offering an array of non-golfing pursuits.
