Looking back at 2015, we have made great strides towards making Faringdon an exciting and vibrant town for its residents and visitors alike. If proof be needed, look no further than a recent survey carried out within Oxfordshire, indicating that Faringdon footfall increased by 25% this year. This is thanks in no small part to the efforts made by the Town Team in establishing a regular Saturday market and promoting small businesses. There are many unsung heroes and voluntary groups around the town working tirelessly to organise public events like “Live at the Park”, “FollyFest”, our very first bangers and beer festival and, most recently, “Festive Faringdon”. All of these have been supported by the Faringdon business community.

The Faringdon Neighbourhood Plan has been submitted and will be voted on this year. If approved, it will provide the context for planning decisions in the town over the next decade and beyond.

We also look forward to welcoming the Aldi, Waitrose and “drivethru” Costa development, just off the A420, which will have a positive impact on Faringdon in the coming years.

The Oxfordshire Local Enterprise Partnership recently presented at a Chamber of Commerce event and identified the availability of money, support for infrastructure and mentoring for our town. We need to take full advantage of the LEADER funding and other grants that are available for suitable projects which enhance our town and its surrounds.

The Chamber of Commerce has nominated a number of businesses for the local business awards to be held at the end of this month, so good luck to them all.

Faringdon Business Breakfast Club We had a fantastic turnout at the December meeting with nearly forty attendees. Thank you to our colleagues from Fairford and Lechlade Business Club for joining us and we hope you enjoyed the meeting; a warm welcome to everyone attending for the first time.

We slightly modified the meeting to cope with the numbers and sat in tables of approximately ten places each, to eat and do the 60-second pitches. The room was soon buzzing with chatter and then the moment came – The Christmas Quiz.

Our resident Christmas quizmaster – Jonathan Russell – led us to believe that he had made this year’s questions a little easier than last year. The theory was good but the practice not quite so good. All the questions had a Christmas theme and included literature, music, film and seasonal themes, including the little known fact that Eartha Kit, Charlie Chaplin and Dean Martin all died on Christmas Day. Congratulations to Frank Pavey who got the highest score and won a bottle of wine.

Our next meeting will be on 11 January 2016 and will be held at The Crown Hotel Faringdon starting at 07.30am. Our speaker will be Neil Osment (one of the original members of FBBC) and he will be talking about how his company, NOA, has developed over the past decade in a talk entitled ‘Ten Years On’.

0 0 0 1 Happy New Year everyone! We hope that you all had a wonderful festive season but as you were eating, drinking and making merry I wonder how many of you paired whisky with food? It may be more unusual than matching wine to food but we are increasingly being asked to suggest whiskies that will pair with food and it can be a real surprise which combinations work well together. Interestingly, we found very early on that well matched pairings don’t just complement each other but by some curious alchemy bring out a third dimension that completely transforms both and makes them into a whole, that is better than the sum of its parts (somewhat like a good blended whisky). As the renowned food matching expert Martine Nouet expresses it ‘One plus one equals three’.

When approaching whisky and food matching it’s often easier to select the whisky first and pick out what the main element of the aroma and flavour is that you want to use to form the connection and also decide if it will contrast with or complement the food, always remembering that neither element should overpower the other. There are some general rules that have evolved but we often find ourselves having to match whisky to a pre-determined menu and such experimentation can lead to flavour combinations that on paper should never work but in practice are wonderful!

One of our first revelations was the pairing of a chicory, walnut, celery and Stilton salad with the Talisker Distiller’s Edition. I’ve never been a fan of any of those ingredients (apart from Stilton) but when we paired the Talisker with the bite of the chicory, the tangy crunchiness of the walnuts, the tartness of the celery and the characteristically strong and creamy Stilton the result was a real ‘WOW’ as the peppery smokiness of the whisky lifted the dish to a whole new level and transformed its component parts.

Other combinations that have been well received include: Oban Distillers Edition and Chocolate orange mousse– where the rich yet dry whisky with a coastal tang enhances the mousse in the same way as a touch of salt does in caramel.

Aberlour A’bunadh and Salmon fishcakes with lemon mayonnaise – the salmon and tangy lemon stand up well to the powerful A’bunadh without either element fighting the other.

Benrinnes and Slow braised Scottish oxtail with roasted root vegetables – the whisky enhances the meatiness, depth of flavour and rich mouth feel of the food so that you can’t tell where one stops and the other starts.

Caol Ila Moch and Shortbread with lemon curd – a must try.

Amazing when they are all brought together in your mouth.

Some of these follow the generally accepted guidelines of whisky and food matching but others were just the serendipitous result of experimentation!

Jolly January Ramblings! | The Advertiser | page 7 | Hello again and a warm welcome to the New Year 2016.

This is the time of year for sales and purchases. A typical time of year when a new pet may be purchased, better still, adopted from a reputable animal charity, of which there are many. We strongly support the local cat charity Sunshine Cats and Labrador Rescue Trust. As a family, we’ve never had to look for a pet, it’s the nature of my profession that cats find us!

As I’m sure that I’ve already mentioned, we are into double figures for the Labrador Retrievers that we’ve adopted into the Family. All such different characters, very few without problems to do with health or mobility. That's my gift to give, enabling the LRT to save funds and have the chance to husband more resources to help other dogs in great need. The LRT also runs a “forever” scheme for their adopted as well as outsourced dogs needing care and a home when the owners can no longer care for them. One way or another.

A very Happy and Healthy New Year to you, your families and your companion pets.

Sometimes we die young and oh so quickly, sometimes so suddenly it wrenches your heart out of your throat. Sometimes, we age so slowly before your eyes that you may not even seem to know until the very end, when we look at you with grizzled muzzles and cataract clouded eyes. Still the love is always there, even when we must take that long sleep, to run free in a distant land.

I may not be here next week. Someday you will shed the water from your eyes, that humans have when deep grief fills their souls, and you will be angry at yourself that you did not have just “One more day” with me.

Because I love you so, your sorrow touches my spirit and grieves me. We have NOW, together.

So come, sit down here next to me on the floor, and look deep into my eyes. What do you see? If you look hard and deep enough we will talk, you and I, heart to heart. Come to me not as “alpha” or as “trainer” or even “Mom or Dad,” come to me as a living soul and stroke my fur and let us look deep into one another’s eyes, and talk.

I may tell you something about the fun of chasing a tennis ball, or I may tell you something profound about myself or even life in general. You decided to have me in your life because you wanted a soul to share such things with.

Someone very different from you, and here I am.

I am a dog, but I am alive. I feel emotion, I feel physical senses, and I can revel in the differences of our spirits and souls. I do not think of you as a “Dog on two feet”- I know what you are. You are human, in all of your quirkiness, and I love you still.

Now, come sit with me on the floor. Enter my world, and let time slow down if only for 15 minutes.

Look deep into my eyes, and whisper to my ears. Speak with your heart, with your joy, and I will know your true self.

Lentils Yummy!

January is often the start of a new you! I'm not sure how long this lasts for anyone really. I generally don't even think about it, as food in our house is as important as breathing!

Our day is often filled with conversations surrounding food, what we are having for supper or what is going into my sons lunchbox. And when we have visitors, most of our plans are dining room table based!

A balanced diet is just so important. Eating in moderation and cooking from scratch are both a good basis for feeding yourself well. But actually, more importantly, after the most indulgent time of the year eating frugally is playing on our minds, I think. And there are all sorts of ingredients that go hand in hand with budget cooking. One I favour most are the lovely lentil. There are a few different varieties that give you different results. Green ones that hold their shape, orange ones that make a fantastic daal, brown ones that are a bit of a funny colour but are lovely in a soup or stew. All have their place in my cupboard and come out regularly. Not only are they bulky and cheap, they are enormously good for you.

Packed full of vitamins, minerals and protein they are also thought to be high in cholesterol reducing fibre. And they absorb all the wonderful flavours paired with them.

But I'm not saying I always cook them with healthy ingredients and this recipe is perhaps a little calorific but on these cold winter nights, it is wonderfully hearty.

To serve 4 Peel and chop and onion and soften in a large oven proof pan.

Add a couple of sticks of celery and a large carrot, chopped too.

Next add around 3 cups of green or puy lentils and stir everything well.

Pour in around 200ml red wine and enough stock to cover.

Throw in a few sprigs of fresh woody herbs like rosemary and thyme, season well and add 2 tbsp tomato purĂŠe.

Cook for around 20 minutes.

Switch on the oven to 200°C. Make sure there is still some liquid in the lentils then lay on 8 sausages and a few chunks of belly pork.

Roast for 30 minutes until the meat is golden, turning once if you think about it.

Serve just as it is, straight from the pot.

Dragons & Butterflies Sentenced To die, Choosing To Live: Shani Krebs Published by Jonathan Ball Publishers While on my last trip to South Africa in July 2015, I was lucky enough to meet up with author and artist Shani Krebs, who was busy hanging an exhibition of his art in a local Johannesburg restaurant. My initial impressions were what a terribly interesting, kind man, with such talents he was.

His art is incredible, colourful and vibrant, his portraits of celebrities and friends looked like photographs, incredible detail! He talked me briefly through his experience in the Thai prisons and touched a bit on his hectic lifestyle before this!

I can honestly say, what a shock it was, to read his book! This man had been through so much and survived, and is living a decent life, teaching young people about the consequences of drugs and crime, how this will destroy their lives.

His book is a gripping, eye opening shocker, how anyone manages to live 18 years in a Thai prison is beyond me. His memoir is a very personal account of a very sad young life in an abusive household, ending up in a Johannesburg, Parktown orphanage, Arcadia. Following this, engulfed in the wild Joburg party scene, filled with marijuana, LSD, mandrax, cocaine, booze and women, the guns and close misses with death, show this man has most definitely someone looking after him. I believe his story had to be told, to make others aware of the consequences of his choices.

Sentenced to death for smuggling China White (pure heroin) out of Thailand, where he was arrested, leaving Bangkok airport, his story tells of the toughest of challenges imaginable. That a man can survive an appalling diet, living in filth and disease, eventually rising to command significant respect, within the prison system.

His sister Joan fought year after year, with whomever would listen, to have him transferred to a South African prison or at least have his sentence reduced. Eventually his initial death sentence was reduced to 100 years, then down to 40 years, finally on the 5th December 2011 he was granted amnesty! He returned to his homeland of South Africa and is now a talented artist, motivational speaker at a corporate level and rallying strongly, against drug abuse in schools.

Shani has now been invited to America and Israel to do a series of talks to corporate business, religious institutions, universities and rehab centres, there has also been interest from Hollywood in making a movie of his story.

Dry January – Myth or Science?

Let’s set the scene: It’s January, mid -winter and many are facing the dread of a month of alcohol abstinence in repentance of Christmas over-indulgences. Sound familiar?

My curious mind has led me to do some digging on this subject.

Some scientists state that giving up alcohol for January is a waste of time as it creates a ‘feast and famine mentality’ as February 1 will see the abstainers back on it with a vengeance. Celebrity Doctor, Dr Christian Jessen, presenter of Channel 4’s Supersize Vs Superskinny states ‘I don’t support a dry January because a moderate – and I mean moderate – intake of alcohol is actually beneficial. Alcohol can actually prevent against heart disease, for instance’.

Professor Karol Sikora, a UK-based consultant oncologist goes on to further support moderate drinking: ‘Too much booze, he warns, not only kills but ruins lives…’

Another angle to consider is that alcohol has been somewhat demonised. The finger is often pointed at booze as having an adverse impact on society.

According to the book ‘The Good News about Booze’, written by science journalist Tony Edwards, all alcohol in moderation benefits health. ‘Most of the evidence suggests that if red wine, in particular – and to a lesser degree white wine, beer, lager and spirits – were used as a preventative and therapeutic medicine, disease rates would fall substantially’.

On the flip side of the coin, are teetotallers, who do not drink at all, for all sorts of reasons; health, religion or a basic dislike of alcohol. Thankfully, we live in a country where each and every one of us has the choice of whether we drink or not. All fingers point to moderation.

One ‘moderating’ skill I have learnt over the years is reducing consumption by bottle size. Many wines are now available in mini bottles. This psychologically gears you up into having ‘just the one glass’ as each bottle = one glass.

WHAT IS HEALTH? 6 Easy Ways to Improve Your Health and Wellbeing for 2016 January is a good time to make positive changes - the start of a new year can mean the start of a new you. But new years’ resolutions can so easily fade after a few months! I would advise anyone serious about making change to get the help of a professional who will help educate, monitor, motivate and support you. If you are genuinely interested in being ‘the best you can be’ you will need to change your lifestyle. Take a long look at where you are now and where you might want to be in, say, 12 months’ time. It helps to focus on ‘what you have to gain’ and not ‘what you have to give up’.

Whether you need help with goal setting, motivation, choice of exercises or what food you should eat there is someone out there to help you. Joining a club or getting ‘one to one’ support is vital, as to make sustainable change it helps to be accountable to others and supported by people who have your interests at heart.

Try to avoid those who are likely to sabotage your efforts.

A few ways you can support making change 1. Monitor your change – maybe that Christmas gift of a fitness tracker, new app you have downloaded or fitness site you have liked on Facebook might keep you on track and show you just how much you are achieving. Check your weight, measure yourself.

Put on that item of clothes or belt and remember how it feels.

That is your start point!

2. Stop and look at your drinking habits – remember that Christmas is over now – throw out that left over alcohol that will tempt you when you’re trying to be good. If it isn’t in the house then you’re unlikely to want it or get more on a cold winter’s night.

Alcohol contains empty calories!

3. Eat more vegetables and fruits – vegetables particularly are high in nutrients and fibre and low in calories. They fill you up too, reducing cravings for less nutritious, higher calorie, processed foods. Eat fruits in their natural form, so they retain their goodness and more importantly their fibre. It’s too easy with fruit drinks to over consume the natural sugars they contain whilst losing the benefits of their fibre and consequent slow sugar release.

4. Avoid processed foods – now all the chocolates have been eaten avoid buying any more. If you have some left, give them away. Clear out your cupboards and fridge of processed, low nutrition foods and take the opportunity to stock up on healthy alternatives.

5. Move more – now is your chance to get into the fitness groove. Start with something you are likely to continue. Having run a gym for a number of years I know that the people who get results are the ones that you see regularly working out. Start with something you can do on a regular basis that will fit in with your work or home life. Join a class or walk outside or even get on that treadmill you’ve had in the garage for the last 2 years – make use of it.

6. Improve your sleep and reduce stress – go on, change your old habit of staying up late and go to bed earlier. If you’re not getting enough sleep, it can affect relationships, your performance at work, and delay recovery from illness. All this can increase stress on your body which will not help your health and make weight loss more difficult.

Simple lifestyle changes improve your health and general wellbeing. You will feel happier and more energised. Why not start today by making small changes that you can stick to. You can do it!

Christmas crash and the new green shoots It’s that time of year when your digestion is sluggish, you feel bloated and your liver has been working hard. There are some simple things you can do to increase your energy, speed up your metabolism and cleanse your liver.

Ferndale Community Choir Enjoy singing? - Come and join us Ferndale Community Choir starts the new term on Wednesday January 6th 7pm- 8.30pm.

We welcome anyone to come along; anyone who would like to enjoy singing in a group. No experience is needed and there is no need to read music.

You only need to do a quick search of the internet to see the benefits of singing - physical, emotional and social. This is an added bonus- the main reason for getting together is to have some fun and enjoy the singing. And it's only ÂŁ2.50 per week.

We've learned many different sorts of songs- some very easy to learn, some we have to work a bit harder to get right. It's a good balance.
