January 31 – February 6, 2011 DR. WEIWEN CHAI JOINS LOGAN AS DIRECTOR OF NUTRITIONAL STUDIES The Higher Learning Commission of the North Central Association recently approved Logan’s application to provide the Master of Science in Nutrition and Human Performance degree for on-campus presentation. As part of this new program, Weiwen Chai, PhD, began work last week in the newly created position of director of nutritional studies. Dr. Chai joined Logan from the Cancer Research Center of Hawaii (CRCH) at the University of Hawaii in Honolulu, where she served as a junior researcher as part of a National Institute of Health Postdoctoral Fellowship. Dr. Chai’s CRCH research focuses on nutritional epidemiology and chronic disease (particularly cancer and obesity) prevention. In addition, her doctoral research was primarily concentrated on dietary oxalate and kidney stone formation. More than ten manuscripts based on her research have been published or submitted for publication to various professional journals including Cancer Epidemiology, Biomarkers, and Prevention, the American Journal of Clinical Nutrition, European Journal of Clinical Nutrition, Clinical Nutrition, Nutrition Research. International Journal of Behavioral Nutrition and Physical Activity, Journal of Urology, American Journal of Kidney Diseases, the Journal of Food Composition and Analysis, and the Journal of Agricultural and Food Chemistry. From 2005-2008, Dr. Chai served as a research scientist/extension educator with the University of Wyoming Cooperative Extension Service/Department of Animal Science. Her professional experience includes classroom teaching and field education as well as nutrition and food safety programs in schools, day care settings, senior centers and work with diabetic support groups. Dr. Chai earned her PhD in Human Nutrition in 2004 and an M.S. in Food Science and Human Nutrition in 1996, both from the University of Wyoming. She holds a B.S. in Medicine from Shanghai University of Traditional Chinese Medicine as well as a B.S. in Medical Technology from the University of Wyoming. ANNUAL SCHOLARSHIPS PRESENTATION IS FEBRUARY 25 In order to begin a new tradition and honor the selected scholarship recipients, the formerly-scheduled June Scholarship Award Ceremony and Luncheon will be held on Friday, February 25, 2011, the day before the Bachelor of Science commencement. Classes will be dismissed between 10:30 a.m. and 1:00 p.m. The Scholarship Awards Ceremony will begin at 10:30 a.m. in the Purser Center lobby. ALL students, faculty and staff are invited. At 11:30 a.m., a buffet lunch will be served in the Purser Center lobby for the scholarship recipients and their guests, faculty and staff. All other students will have a free pizza and Ted Drewes® lunch in the Logan cafeteria. (Note: Scholarship recipients taking the NBS Review will be excused during the one late morning session.)
