January 31 – February 6, 2011 DR. WEIWEN CHAI JOINS LOGAN AS DIRECTOR OF NUTRITIONAL STUDIES The Higher Learning Commission of the North Central Association recently approved Logan’s application to provide the Master of Science in Nutrition and Human Performance degree for on-campus presentation. As part of this new program, Weiwen Chai, PhD, began work last week in the newly created position of director of nutritional studies. Dr. Chai joined Logan from the Cancer Research Center of Hawaii (CRCH) at the University of Hawaii in Honolulu, where she served as a junior researcher as part of a National Institute of Health Postdoctoral Fellowship.

Dr. Chai’s CRCH research focuses on nutritional epidemiology and chronic disease (particularly cancer and obesity) prevention. In addition, her doctoral research was primarily concentrated on dietary oxalate and kidney stone formation. More than ten manuscripts based on her research have been published or submitted for publication to various professional journals including Cancer Epidemiology, Biomarkers, and Prevention, the American Journal of Clinical Nutrition, European Journal of Clinical Nutrition, Clinical Nutrition, Nutrition Research. International Journal of Behavioral Nutrition and Physical Activity, Journal of Urology, American Journal of Kidney Diseases, the Journal of Food Composition and Analysis, and the Journal of Agricultural and Food Chemistry.

From 2005-2008, Dr. Chai served as a research scientist/extension educator with the University of Wyoming Cooperative Extension Service/Department of Animal Science. Her professional experience includes classroom teaching and field education as well as nutrition and food safety programs in schools, day care settings, senior centers and work with diabetic support groups.

Dr. Chai earned her PhD in Human Nutrition in 2004 and an M.S. in Food Science and Human Nutrition in 1996, both from the University of Wyoming. She holds a B.S. in Medicine from Shanghai University of Traditional Chinese Medicine as well as a B.S. in Medical Technology from the University of Wyoming.

ANNUAL SCHOLARSHIPS PRESENTATION IS FEBRUARY 25 In order to begin a new tradition and honor the selected scholarship recipients, the formerly-scheduled June Scholarship Award Ceremony and Luncheon will be held on Friday, February 25, 2011, the day before the Bachelor of Science commencement. Classes will be dismissed between 10:30 a.m. and 1:00 p.m. The Scholarship Awards Ceremony will begin at 10:30 a.m. in the Purser Center lobby. ALL students, faculty and staff are invited. At 11:30 a.m., a buffet lunch will be served in the Purser Center lobby for the scholarship recipients and their guests, faculty and staff. All other students will have a free pizza and Ted Drewes® lunch in the Logan cafeteria. (Note: Scholarship recipients taking the NBS Review will be excused during the one late morning session.)

APPLIED KINESIOLOGY MEETINGS BEGIN FEBRUARY 1 The Applied Kinesiology Club begins its trimester-long meetings on Tuesday, February 1 at 11:05 a.m. in room G 40. Dr. Katharine Conable, associate professor in the Logan Chiropractic Science division, will teach the Tuesday meetings of the A.K. club, beginning with the most basic basics of A.K. This week’s topic is “What is A.K.?” -- Principles of manual muscle testing; Muscles of the shoulder; How can AK help me be a better doctor? Origin and Insertion technique. These meetings will afford students an opportunity to practice these and more advanced AK skills with the help of club officers and experienced club members. Learn to evaluate muscle function with scientific precision and to use muscle responses as functional neurological feedback. Gain certainty on your ability to correct postural deviations and to identify subluxations. Learn simple manual methods of optimizing muscle function to prevent injury and help adjustments hold. Through the trimester, videos of Dr. Goodheart telling his stories of the early discoveries in AK and then practicing those techniques will be presented. All trimester students are welcome to these hands-on workshops. No previous experience is required.

LOGAN’S EVIDENCE-BASED JOURNAL CLUB TO MEET FEBRUARY 2 Logan’s Evidence-Based Journal Club has been established to: promote clinical applications of best evidence to improve patient outcomes; learn by doing and assessing the validity and clinical relevance of the research paper; learn to critically evaluate the scientific literature; and discuss the latest scientific literature relevant to your practice. OTHER NEWS FROM IN AND AROUND THE LOGAN CAMPUS The Clinic Health Center Lab is currently in need of two students to work as Montgomery Health Center lab techs for the Spring 2011 trimester and beyond. The job pays $9 per hour. Students must be Federal Work Study eligible to apply. (Please see the Financial Aid Office to determine your eligibility.) The duties involved include: blood draws, urine tests, and EKGs. Prior medical tech experience is also preferred for these positions. It’s yoga time again! Yoga instructor Ellen Fercho will lead the class through a 75-minute workout designed for ALL levels. Ellen will demonstrate yoga for beginners and intermediates and poses to challenge those who are ready to take it to the next level.

This includes handling stress, relating to other people, and making decisions.” That covers a lot! Be proactive and check yourself out.

LOGAN HEALTH CENTERS IN THE COMMUNITY February 1: Intern Kevin Ward will host a backpack basics lecture at the Boy Scouts of America Roundtable meeting.

AS PUBLISHED PREVIOUSLY… Learn enzyme nutrition in the spring trimester. The postgraduate department is now accepting students entering trimester 6 or above for the Internal Health Specialist (IHS) program, taught by Dr. Howard F. Loomis Jr., DC. This program will provide you with a clinical perspective on digestive health and give you a hands-on means of analyzing your patients’ nutritional status. The use of digestive and therapeutic enzymes in clinical practice will also be discussed. This is an extremely practical, foundational course for any student who is interested in nutrition. Students will purchase class notes, but the tuition is FREE. The IHS program is a six-session course.

Dr. Laney Nelson, director of the BIOFREEZE® Sports & Rehabilitation Center on the Logan campus, will present a lower extremity stress syndromes seminar at the 5th Annual Professional Football Chiropractic Educational Seminar on February 27 in Indianapolis, Ind. Dr. Nelson will explain how to manage these syndromes with taping and posting the sock liners and shoes as well as through manipulation and talar glide function. He will leave Logan on Feb. 26 and return the evening of Feb. 27 and will take four (4) students with him. Please stop by the BIOFREEZE Center to sign up for this event.
