At the risk of repeating myself (and I seem to do that quite often these days!), where has this year gone?! Personally, I am looking forward to 2014 as this one hasn’t always been the best, so onward and upward! However, despite that and the manic nature of December (I really hope there is a good film on at Cinemac next week for 10 little glitter painted girlies to go and see otherwise apparently it’s me and a karaoke machine! Noooo!!), I actually love Christmas! The lights have just been turned on in town as I write and there is a festive air about the place. And .. we have some great articles, advertisers and offers for you all. Why not use your ‘Golden Ticket’ on the front cover and go and have coffee and cake at Mother Goose on Park Lane. Well worth it! Great ideas for presents dotted through the magazine as well! As for going out ‌. if you want to go to any of the Winterfest shows, make sure you have your tickets booked as they are selling out fast apparently. All available from the Visitor Information Centre. Our community section has news of some of the lovely carol services and concerts going on in town. And well done to our very own RoughTwist whose album is now ready to go ‌ they have worked very hard for this so if you feel like supporting them by buying it, it would make an ideal present (and it’s very good!!). On the business side, we have now sent the first issue of Compass Wilmslow, Alderley Edge and Prestbury under our editorship off to print, so that’s an exciting prospect! All that remains is for me to thank my wonderful team of distributors for their sterling work throughout the year, as well as my very patient pre print wizard Dave, and to wish you all a happy and peaceful Christmas and best wishes for the New Year! Makes 65

This richly spiced traditional German festive biscuit provides a grown up alternative to gingerbread. Slathered in rich dark chocolate and studded with sweet cherries, these are chewy and sweet, with a spicy kick. Perfect with a cup of strong black coffee.

100g ground hazelnuts 70g almond flour 350g plain flour 3 tablespoons cocoa powder 2 teaspoons cinnamon 2 teaspoons nutmeg 1 teaspoon mixed spice 3 teaspoons ground ginger � teaspoon salt � teaspoon baking powder � teaspoon baking soda 150g dark brown sugar 225ml clear honey 50g butter 3 medium sized eggs 200g glacé cherries 300g dark cooking chocolate

Tip These can be kept uncoated for up to a month in an airtight container, so are ideal to make ahead of the festive rush, to be dipped in chocolate later on.

1. Preheat the oven to 170 degrees. Prepare all dry ingredients and sift together in a large bowl until combined. 2. In a separate bowl, combine honey, sugar and butter, and beat with an electric mixer until light and fluffy. Add one egg at a time to the mixture and beat until well mixed. 3. Gently fold in the sugar mixture into the dry ingredients. The mixture will be sticky and dense. 4. Add glacé cherries into the lebkuchen mixture until evenly distributed. 5. Prepare a large tray with greaseproof paper. Place heaped teaspoon sized portions across the tray, with plenty of space around them. 6. Bake for 10-12 minutes. The biscuits will rise and be firm to touch, with a little softness to pressure. Remove and allow to cool overnight. 7. Once cooled, you can now dip them in chocolate. Prepare the chocolate coating by crumbling 300g of dark chocolate in a large bowl, over hot water. Stir until the chocolate is evenly melted, and of a smooth, glossy consistency. 8. Dip each biscuit into the chocolate mixture. You can either dip the front surface only, coat half a biscuit, or submerge the entire thing! (You may need more chocolate to do this for the entire batch.) 9. Place dipped biscuits on a tray and allow to cool and harden. 10. Store in an airtight container.

A Christmas wreath

Christmas is undoubtedly a time of traditions: perhaps midnight mass, roast turkey and the Queen’s Speech, followed by a snooze in front of the TV and a few board games. But some traditions are older than others. The custom of making wreaths goes all the way back to ancient Greece. It was here that wearing a laurel wreath came to represent status, achievement and victory. For the Romans, it was the supreme ruler who wore a wreath embellished with gold and jewels. Meanwhile, in Celtic Germany and Scandinavia, wreaths were employed for a different purpose: sun worship. In the long, dark days of winter people prayed for the onset of spring, and to give extra power to their prayers they used a wreath, hung from the roof or placed on an altar or a table. The wreath was woven with evergreens, a symbol of everlasting life, and decorated with candles, which represented the light of the sun. As Christianity spread through Europe, the pagan evergreen wreath was reinterpreted. Its circular shape stood for God’s eternity, the immortality of the soul and the everlasting life found in Christ. It is possible that using a wreath to count down the four weeks of advent became a Christian custom in 16th century Germany, and it is likely that the modern advent wreath was invented by a German pastor called Johann Hinrich Wichern. Asked by the children at his mission school how long it was until Christmas, Wichern took an old cartwheel and stuck 19 small candles into it as well as four large candles, then lit one small candle each weekday and one large candle every Sunday until Christmas arrived. Christmas wreaths are still a powerful symbol of celebration. For some families, Christmas starts with the making of a natural wreath using leaves, flowers and seed heads from the garden; for others, tinsel, glitter or ribbon provide a chance to experiment. But Christmas wreaths don’t have to be home-made: there are endless varieties of readymade styles, from traditional to modern, large or tiny, simple or extravagant. Whatever their style and wherever you display them, wreaths are a decorative essential for the Christmas season.

How to make your own Christmas wreath 1. If you don’t want to buy a ready-made base, you can easily make your own. Either shape a wire coat hanger into a circle (keeping the hook for hanging) or use bundles of twiggy growth from your garden (willow or honeysuckle vine work well) bound firmly with garden string, raffia, florist wire or climber stems. 2. Attach evergreen sprigs such as conifer, holly, laurel or ivy. Bind them at the bottom, then overlap the next sprig or group of sprigs in the same direction. Keep going until the base is completely covered. 3. Finish as you like, choosing from a variety of interesting decorations, such as fresh, dried or artificial flowers, ribbons, berries, raffia, moss, fir cones, seed heads, nuts, dried fruit, poppy heads, tinsel, glitter, baubles, sweets, feathers, buttons and beads. 4, Attach a strong loop of wire or string and hang where you wish, or simply prop your wreath on a shelf or mantelpiece.

We all make mistakes ‌. think before you ink! Sailors were, of course, the first group of people in British society to ink their own skins after Captain Cook’s voyage through the Pacific Islands in 1768. The word ‘tattoo’ takes its origins from this time, the Hawaiian word for tattoo being ‘kakau’ or ‘tatau’. Tattooing in Britain really started to take off in the late 1800s. It gained a Royal Sanction in 1862 when the Prince of Wales, in a visit to the Holy Land, had the Jerusalem Cross tattooed on his arm. In 1870, a gentleman called D W Purdy opened a tattooing shop in North London, thought to be the first professional studio in Great Britain. These days, it’s not just sailors with tattoos. Due to the eye watering number of celebrities getting tattooed, Angelina Jolie, Cheryl Cole, the Beckhams to mention a few, visible ink is becoming far more popular. This, of course, means more mistakes and regrets, including the celebrities, many of whom have turned to laser treatments to correct their mistakes. Britney Spears had the word, ‘mysterious’ tattooed on her hip. Unfortunately, the tattoo translation actually read ‘strange’! Many people have the names of their lover tattooed, a famous example being Pamela Anderson, who had the name of her then husband Tommy-Lee which then had to be changed to ‘Mommy’ after the break up! This is one of the most popular types of ink to be removed. Following the break down of a relationship, clients are often desperate to get started on a course of treatment! Over the years ink can fade or a client may simply have become bored with their design. Technology these days allows us to completely remove some ink with fabulous cosmetic results or to fade ink in order that the client can choose a new design and return to their tattoo artist. So whether a client wants a tattoo faded for a cover up or a complete cosmetic removal, fantastic results can be achieved with the technology available. Prior to a tattoo removal session, a full medical history and consent must be obtained from the client. It is really important that the client understands what to expect during and after the treatment and how to care for the area treated in the days and weeks after the session. It is not unusual to see bruising, blistering or scabbing on the skin following a session due to the high frequency of heat and light being put into the skin in order to shatter the pigment. Tattoo removal can be an uncomfortable procedure. Some clients liken it to having the original tattoo, some clients describe it as a burning sensation. However treatment times are quick. As an example a match box sized tattoo can be treated in a matter of minutes in some cases. Typically a client will need to consider at least 8 - 12 sessions around 5 weeks apart for a good cosmetic result. However, all inks are different and fantastic results can be achieved in less sessions than this.

Our articles look at life from a sometimes refreshingly different perspective! This month, an interesting piece by Amanda Lord ….

Hoedown Macc Town! Macclesfield is a town where the country music genre isn’t a popular one, compared to pop or rock. Most of the people who enjoy country music are the older generation; it’s rare to find a young person who actually listens to the genre. I personally really enjoy country music; it’s a fun genre and it helps me to get away from the stresses that life can bring. Country music is a story-telling tradition, with a story in every song. There are slow songs for some moods, and faster paced songs for other moods. Country music is a kind of ballad, a poem, where thoughts and feelings get transferred from singer to listener. Country music has a fun beat, and usually the lyrics can connect with the listener in ways pop or rock doesn’t. Country music has a wide variety of performers, from the young like Taylor Swift or the siblings of The Band Perry, to the old like Tim McGraw or Dolly Parton. Each brings their own thoughts and feelings to the genre, and each is good in their own unique way. Johnny Cash, Dolly Parton and Billy Ray Cyrus are probably some of the most famous country singers, known throughout the world and in many different languages. However, the talent of these singers isn’t reaching Macclesfield or its surrounding area; most teenagers are only interested in rock, pop or rap bands and singers like Katy Perry, Beyoncé, Jay-Z and Fall Out Boy. Yet if teenagers experimented more with music they might find more genres they liked. Some teenagers don’t seem to realise that popular pop singer Taylor Swift has actually got some country roots, as her first album was made up of country songs. This shows that teenagers don’t always realise just how big the country music genre is, or how many pop/rock singers have been influenced by country music. Unfortunately, country is a much bigger genre in the USA than in the UK. It is associated with cowboy boots, Stetsons and barn dancing. But this stereotype needs to change. So, what is the way forward for country music in the UK? One way that it can be brought alive is if radio stations start playing more country music alongside other popular genres. This will get more people listening to country and experiencing the unfamiliar. There are many great singers whose talent is not being heard in the UK, and it is a shame. Many country musicians are good at portraying the hardships of love and life in their songs. Another way that country music could be assisted in its return is through print based publications such as music magazines. If magazines included more country singers, alongside mainstream artists people would be tempted to listen to the genre and perhaps intrigued to find out more. So, give country a chance and let it dazzle you!

Fruit Planting The garden may be quieter than usual at this time of year, and certainly not likely to be yielding vast quantities of crops, but this near dormant time is perfect for planting fruit. by Pippa Greenwood You can grow fruit trees in surprisingly small spaces, training them to espaliers (so that they have several sets of horizontal arms), cordons (as single main stems grown at an angle), fans (with their branches trained in to a fan shape) or as step-overs, (trained so that they make a neat edging for a bed or border about 45cm or so above ground level). You could also use a fruit tree to create a decorative and later a wonderfully productive arch. At this time of year fruit trees are great value because they are sold ‘bare root’, lifted from a field and not container grown. I find these establish particularly well and because you usually obtain them from a specialist supplier or nursery, the range of varieties available is second to none. You can either buy one year old ‘maidens’ and train these yourself, or if you want to save time, you can often buy trained or part trained forms. When you are choosing fruit trees it’s essential to get them on the right rootstock as this determines the ultimate size and vigour of the tree. Apples are particularly complicated, but as a rule, for step-overs,

cordons, dwarf bushes and trees in containers try the extremely dwarfing but somewhat tricky M27 - but beware weak varieties or any tree grown on this rootstock in a poor soil as it may well fail. For bush, cordon, espaliers and half-standard try the easier to look after dwarfing rootstock M26 and for a cordon or espalier on a poor soil, for arches and for bush trees try the semi-dwarfing MM106. You will need to choose the varieties you grow so that they can pollinate each other (if there is no suitable pollinator in the vicinity you will not get fruit) and on the basis of the taste and texture of the fruit and how well it stores and so forth. If you have space, it is good to grow apples for cooking as well as eating, or look out for those described as ‘dual purpose’, meaning they make very passable cookers as well as dessert apples. As well as tree fruits such as apples, pears and maybe even a medlar or a plum or gorgeous gage, you could also consider some delicious bush fruits. The great thing

about these is that they take up even less space and again can often be trained into wacky shapes such as fan-trained or standard bushes, making them all the more ornamental and easier to fit into the smaller garden. Then there are raspberries - on my rather heavy and very alkaline soil I tend to stick to the autumn fruiting varieties such as Autumn Bliss and Joan J, but on freer draining and acidic soils you can try some of the more numerous summer fruiters too. Bare root fruit trees, bushes and canes are generally available from about November through until early March, depending on the weather, so don’t delay, start ordering or better still, planting, today.
