t’s about this time of year, every year, when I’m ready for a vacation.

The magic and excitement of early winter has worn off, and the bleak mid-winter settles in. With no break in sight from sub-zero temperatures and gray skies, it’s nice to think of heading somewhere warmer and sunnier, isn’t it?

For those who can’t get away or simply have to wait until spring break to escape the tundra, let this issue of Edina Magazine—which has a focus on travel and fashion—tide you over. Throughout these pages, we’re sharing some ideas on where to travel and what to pack.

Simply looking at the resort-wear designs by Edina’s Jennifer Van Hofwegen of CeCe Cabana gave me the feeling of being on a sun-soaked beach (page 12). Though local travel blogger Lizanne Dooner reminded me that I don’t have to hop on a plane to discover beauty and adventure; Minnesota has it in spades (page 32). But if you are heading to the airport for your next getaway, plan some extra time between security and boarding to explore the airport’s vast art collection, which I was unaware of until working on this article about the Airport Foundation MSP’s arts and culture program (page 16).

I may not be able to make the sun come out from behind those clouds or get that thermometer to rise—but I hope by reading the stories in this issue, you’ll experience some of the warmth and sunny inspiration I found in working on them.

Plants as Fashion The 2021 film House of Gucci, starring Adam Driver and Lady Gaga, takes place in some of the most breathtaking locations in Italy.

Dripping with couture, there are plenty of stunning visuals as the scenes transport you to Milan, Lake Como and the snow-capped Alps.

While the tragic Gucci story of fairytale romance, family betrayal and fashion certainly captured my attention, after recently re-watching it, I had only one thing on my mind: The outstanding houseplants Rodolfo Gucci had flanking the front entry of Villa Necchi. The set director knew that a home of such grandeur called for accompanying plants—in this case, two majestic Ficus Burgundy, which stood over 12 feet tall with a perfect arch.

Houseplants are as impactful to a scene or a living space as furniture or a piece of art. Of course, committing to care for plants is not for everyone. But with a concerted effort, it can be quite rewarding to care for another living thing.

A green thumb is not necessary—just a basic understanding of water, light and photosynthesis (and a little help from the Internet or your friendly neighborhood garden center). When successful, the result can be something as fantastic as a 12-foot-tall ficus.

Making Waves Minnesotan designs luxury resort wear collections.

tion conjures up a feast for the senses.

There’s the taste of salty sea air, the feeling of warm sand beneath your feet and the sight of gorgeous blue waters lapping on the shore. Jennifer Van Hofwegen aims to bottle up all those sensations with her destination-themed collection of luxury resort wear.

The Twin Cities native relocated from Florida to Edina last year to be closer to family. Since that time both she and her fashion line, CeCe Cabana, have been warmly embraced by the local community. “I’ve been welcomed into this world,” she says. “I was pleasantly surprised … People up here really enjoy the idea of travel.”

Van Hofwegen introduced her line to a Minnesota audience in July 2022 as a featured designer at a fashion show at the W Hotel in Minneapolis. Her designs—including colorful tunics, maxi dresses and wrap skirts—proved so popular that she landed the closing show of Fashion Week Minnesota in the fall. “It really feels like I launched my company last year,” she says.

Though Van Hofwegen has long harbored a passion for interior design and fashion, it was a move to Florida that inspired her to dip her toe into the world

of fashion design and start CeCe Cabana (named after her beloved pooch, CeCe).

“I was in a location where you need light fabrics, and I couldn’t find anything I liked,” she says. So, Van Hofwegen took matters into her own hands, designing a collection of patterns and sourcing artisans to bring her visions to life. She fell in love with the idea of hand-blocked printing, a centuries-old practice in India where designs are carved onto blocks of wood and then natural dyes are used to stamp the design onto fabric.

Van Hofwegen’s fabrics and patterns are named after some of her favorite travel destinations—the result of a lifetime of global exploration, which informs her designs and gives it a global perspective. “I moved to Europe after college,” she says. “I spent seven years working in Budapest and traveled every single weekend.”

Van Hofwegen’s goal for CeCe Cabana was to create a line of multi-purpose resort wear pieces, ideal for whatever a vacation may entail—from casual days to elegant evenings. “I wanted something a little more elevated,” she says.

A wrap skirt can be worn over a swimsuit for lunch, but it can also be dressed up for dinner. A maxi dress paired with a sweater is perfect for the plane ride to paradise and easily transitions to a sunset walk on the beach. But her designs aren’t just for vacation; in fact, they’re perfect for Minnesota summers and days at the lake.

But Van Hofwegen isn’t stopping there.

“I feel like there’s a lot more I can do,” she says. “I’m planning a party-wear look down the line.” She’s also considering how to expand her designs for colder climates, so people who love her designs don’t have to wait for warm weather to wear them. “I think that’s how Minnesota will influence my fashion,” she says.

When homeowners Nicole and John Righini purchased their 1938 Colonial-style home in the Arden Park neighborhood of Edina in 2015, they knew they’d eventually renovate the kitchen. But they lived with it as-is for six years before pulling the trigger.

The previous homeowners had renovated the kitchen in the ’90s, and while it was still in good condition, the layout wasn’t functional for the Righinis. The kitchen, breakfast nook and dining room were all separate spaces, closed off and only connected through a series of cased openings. “The disconnect in the kitchen was huge because we were all separated,” Righini says. “We would have two people in the dining room, a couple of people in the working kitchen [and] a couple people at the kitchen table [in the breakfast nook]. That disconnect was hard. If I was cooking dinner, I couldn’t help the kids with their homework easily or talk to them about their days.”

As a family of six, which includes four teenagers plus a labradoodle, Righini wanted a more open layout, making the space more livable for their large and active family.

With a new floorplan, one thing Righini wanted to add was a center island. “We

wanted it large enough that we could do crafts and projects and holiday baking,” she says. She also wanted added storage space, a larger refrigerator to create more space for lunchboxes and entertaining, built-in organization solutions and something many modern families living in old homes desire: more outlets. “When the kids were doing online school [in 2020], there just [weren’t] enough outlets or space in the 1938 house for the technology … We were so desperate for outlets, it was crazy!” Righini says, laughing.

To help them accomplish all of this, Righini called on the design expertise of the Martha O’Hara Interiors team. “Seeing them in magazines, I just really, really liked the style and knew that they were just a very high-end, world class-company to work with,” she says.

With designer Gabe Lindberg’s help, Righini’s kitchen dreams became a reality in the second half of 2021. The two collaborated to create a kitchen with all the modern conveniences Righini desired while still honoring the history of this nearly centuryold home—and expanding the footprint from 138 to 246 square feet by knocking down some of those room-dividing walls. “My goal through the whole [redesign and renovation] was to be true to the house,” Righini says. “I didn’t want to put anything in the house that didn’t look like it could have already been here originally.”

Lindberg says she loves working on old houses—finding a way to maintain that “old house charm” while updating it for modern functionality. She came up with creative

Young Business Blooms Edina High School student pursues entrepreneurial endeavors.

School, is quite business-minded for a 17-year-old. Elodie was only a freshman in high school when she started making and selling bracelets—and with great success and creative talents, she has since focused her business endeavors on designing and selling apparel under the name Elodie Bird Co. “I’ve always had a yearning for starting a business, and I knew it was always something I wanted to do,” Elodie says. “I initially started making beaded bracelets, and when we had a month off during school because of COVID-19,

I would just watch TV and make these cute bracelets and send them to everyone I could … I realized this could be a great business opportunity.”

When she changed Elodie Bird Co.’s focus to apparel in 2021, her love of running the business deepened. Elodie is an athlete on the Twin Cities Youth Rowing Club; she began to make custom pieces for her team and found her passion in designing clothes. She now specializes in making and curating apparel for athletic teams, clubs and anyone who requests a custom piece.

These custom pieces are Elodie’s favorite orders to get. They allow for more creative expression, and she says the outcome is always better than what she originally envisioned. “Some of my customers have great ideas, and I love when they add to mine and we can create something amazing [together],” Elodie says.

A couple years in, Elodie Bird Co. is just getting started. “I plan to go to college and major in business, but I am also planning on continuing Elodie Bird Co. while I am studying,” Elodie says.

With these plans, she feels confident about her future—and herself. “Starting this [business] has really taught me how to market myself, talk about myself and overall just really believe in myself,” Elodie says. “I’m so much more confident because of it.”

With confidence comes success, and with success comes the need for money management. Since starting her business, Elodie has learned the importance of reinvesting profits back into her business; she likens it to nourishing a flower, watering it regularly to help it truly bloom.

To fellow young entrepreneurs waiting to start their own business or take a chance on a creative endeavor, Elodie has some simple advice: Take that leap.

“It’s been such a great learning curve, and you learn so much about yourself,” Elodie says. “Just do it.”

Creating Place Out of Space The Airport Foundation MSP’s art program invites travelers to pause.

Minneapolis-St. Paul (MSP) International Airport, you’re greeted by murals and installations in the parking ramps, like Interrupted Landscapes of the Incomer by photographer Steve Ozone in the Silver Ramp, which features immigrant portraits displayed through punched metal panels.

Walk into Terminal 1 and you’ll discover The Aurora by sculptor Jen Lewin, a 29-foot-high glass and metal sculpture with nearly 3,000 light bulbs that soars from baggage claim to ticketing, changing colors with the seasons and local weather conditions.

Throughout the airport, many bathrooms are enhanced with colorful mosaics, and hallways are dotted with exhibits by local artists. Pass through at the right time, and you may also witness live performances from local musicians. And at any time, you can enjoy what’s showing at the See18 film screening room.

All of these experiences are available thanks to Arts@MSP, a partnership between the Airport Foundation MSP (AFMSP) and the Metropolitan Airport Commission (MAC). Program director Ben Owen seeks to “create place out of space,” using art installations, music and film to create memorable and meaningful moments throughout the airport for travelers to enjoy.

This program supports the mission of AFMSP, a nonprofit which seeks to serve the MSP International Airport community, enhancing the experience, exceeding traveler expectations and supporting the aviation community.

AFMSP, the only foundation of its kind globally, was started in 1982 by a group of business leaders who wanted MSP to be a leading hub for airlines— and one way to do that was to enhance the customer experience.

“Customer experience is a big part of what makes an airport successful,” says Edina resident Tom Anderson, AFMSP board member and chair of the Arts and Culture Steering Committee. “The airport is your first impression coming into the state. It’s your last impression when you leave. signage and art in the airport and funded scholarships for aviation schools. “The foundation grew right along with the airport and so we expanded the … programs and services,” she says.

Today, the foundation utilizes a 25-person staff and over 450 volunteers to run it's operations—which include the Travellers Assistance program, an animal ambassador program, an arts and culture department and so much more.

Through the Arts@MSP program, Owen says,“We commission site-specific works of public art ... we’ll work on two to five of those per year.” Arts@MSP also rotates 15 to 20 exhibits annually, which translates into 400–600 pieces of fine art. Owen’s team coordinates approximately 1,000 live performances each year and plans programming for the film screening room, where “we show short films [and] documentaries, generally made by filmmakers from Minnesota or from the upper Midwest region,” he says.

“I think it’s one of the most comprehensive, robust arts programs of any airport in the world,” Webster says.

Working with local and regional artists is a big focus for the Arts@MSP team.

With it's commissions, the team seeks to develop the careers of regional artists who are newer to the public art scene, giving them an audience of millions of people each year.

Edina resident Scott Brener, president of the AFMSP board of directors, says he believes art is part of the fabric of the Twin Cities community. And by showcasing the work of local and regional artists throughout the airport, he says it not only reflects the interests of the community, but it also brings cultural heritage into the airport. “It’s an opportunity for foreigners and [other] Americans to gain, in a relatively short period of time, a better understanding of what Minnesota, its people and its communities really are all about … and the airport is an opportunity to reflect upon that.”

SOUTHERN FLAIR AND FRINGE Altar’d State stylists break down how to achieve the Nashville look.

Nashville, Tennessee, is currently the most popular bachelorette party destination in the U.S., and its popularity is only rising. This city’s culture is booming with country music, bars and amazing restaurants, and many people are opting to travel there for not only bachelorette parties, but also simply for weekend getaways with friends.

With that, the style of this Southern city is also gaining popularity. And the clothing brand Altar’d State specializes in bringing this look to life.

Justin Johnson, manager of the Edina location, has many tips on how to confidently achieve that Southerninspired Nashville look when traveling to the Music City—from fringed tops and flared jeans to cowgirl boots and wide-brimmed hats. And remember:

When going out for a nice dinner or celebration, don’t forget to add a bit of bling to your Southern-inspired look. “For bachelorette parties, we see a lot of glitz and glam added to Western outfits. A night on the town calls for a put-together-but-playful look. “She is dressed in one of our fringe skirts that goes great with [a] soft bodysuit,” Ana Cole, a style specialist at Altar’d State, says. A neck scarf complements the traditional Southern style of a fringed skirt. Paired with cowgirl boots, heels or even sneakers, this outfit is versatile enough for more occasions than just a night out.

If a global pandemic brought one good thing, it was encouraging us to explore the beauty close to home. Though the Midwest may not have the towering mountain ranges or endless oceans of the country’s top destinations, there’s so much to discover and enjoy within a day’s drive of the Twin Cities.

Exploring and sharing these nearby treasures is a challenge that Lizanne Dooner, an Edina-based travel blogger at Lizanne Lately, has embraced wholeheartedly. We connected with Dooner to hear her perspective on one of Minnesota’s favorite vacation destinations, Lutsen, just in time for waterfall season. Lutsen is a small mountain town nestled in the Sawtooth Mountains on Minnesota’s North Shore that boasts epic views, hikes, stays, shopping and

activities. And though Lutsen is traditionally known for its premier ski mountain, Dooner offers insight into how to make the most of Lutsen year round.

Enjoy our conversation with Dooner below, and don’t miss her North Shore drive itinerary and breakdown of some other Midwest travel destinations.

Answers have been edited for length and clarity.

What were your first impressions of Lutsen?

Anywhere on the North Shore is beautiful, and I think when you get up to Lutsen you start getting into the cream of the crop of the North Shore. It’s nice because it is a year-round destination.

There’s something for you to do in every season … It’s a huge ski town,

but I would say within the last couple of years [it’s] been opening up with more to do all year round, even for people who don’t ski. I love Lutsen, and I don’t ski at all. You can still go hang out at the mountain. [Lutsen has] live music, a winery, coffee shops. It’s starting to blossom into its own. Most times, people would drive all the way to Grand Marais … but I think Lutsen is becoming a little gem, too.

I love how you introduced Lutsen as a year-round destination.

Of course, everyone knows about Lutsen as a winter skiing destination, but why do you think people should visit Lutsen in the spring?

Lutsen is strategically [located near] several state parks within a short

driving distance that have great waterfalls. When the snow starts to melt, you want to be there. Cascade River State Park, Temperance River State Park … and there [are] a couple others just along the highway. Spring is a great waterfall season [with] the rivers rushing. And also … hiking is just great all year round. The trails are just really well taken care of, but also you have a sense of community up there, [where locals] will let you know what trails might not be safe as the snow is melting.

What are some of the primary activities on Lutsen Mountain?

They have the gondola ride … so you can go up the mountain. There’s great views, and they have a restaurant and shop up there … and it also connects to the Superior Hiking Trail. They also have the alpine slide. You can

take the alpine slide down—that’s fun, especially for kids … When you go up [the mountain], you can take as much time as you want. Whether it’s a quick trip—see the views, grab a bite to eat— or you know, go up there, have lunch and do some hiking, too. You can spend an hour to six hours up there … That’s what I love about the North Shore: It’s all about creating your own adventure.

What was your favorite part of a trip up Lutsen Mountain?

The gondola … just hopping in and riding up the mountain and seeing the sweeping views of [Lake] Superior. You have Superior on one side and the forest on the other, and it’s just breathtaking and so serene. You just stop and reflect on how beautiful Minnesota actually is.

We’re just so lucky to have this place.

Tell me about getting to Lutsen from the Twin Cities.

It’s pretty easy. Just straight up [Interstate] 35 … and right after Duluth you hit [Highway] 61 … It’s a straight shot, and there’s so many places to stop along the way. Some of my favorites are Palisade Head, Tettegouche State Park, Sugarloaf Cove … There [are] so many pull-offs and overlooks and beautiful spots that I always say [to] give yourself a lot more time. It takes maybe four hours to get there, but sometimes it takes us eight or nine hours to get there because we’re stopping so much.

Where have you stayed in Lutsen and what did you love about the experience?

I stayed at the Lutsen Sea Villas. It was magical … Each villa is along the North Shore, so you literally just walk out and

Lutsen Buc ket List Ski Lutsen Mountains, the largest ski resort in the Midwest (open by Thanksgiving weekend through mid-April, weather dependent).

Take the Summit Express Gondola up to Lutsen Mountains and have lunch at the Summit Chalet (open during the winter ski season and on weekends June– October) with a view of Lake Superior.

The gondola is open year round—daily in the summer and winter and with limited hours in off-season (March–May, October–December).

Play a round at Superior National Golf Course (open spring through fall, weather dependant).

Shop at The North Country, a cute shop featuring local Midwest makers located on the same property as North Country Cottages Enjoy live music and bites at Papa Charlie’s (open daily in the winter and summer and on weekends in the fall and spring).

Ride the alpine slide at Lutsen Mountains (open daily June–September and on weekends in the late spring and fall).

Enjoy a hike on the Superior Hiking Trail (try Oberg Mountain Loop, Poplar River Falls or White Sky Rock).

Stock up on maple syrup at Wild Country Maple Products, located on a beautiful maple-lined path in Lutsen.

Visit Cascade River State Park and view five waterfalls during a half-mile hike on the Cascade River Lower Loop.

Stop in at North Shore Winery for a wine or cider flight and live music (open year round; see seasonal hours on website).

Take a day trip in Grand Marais and enjoy harbor views, shop downtown and book a massage with LutZen Massage Studios in Grand Marais. Or grab a bite at Fisherman’s Daughter, enjoy a beer at Voyageur Brewing Company, then cap it off with ice cream at Superior Creamery.

you’re on the water. It’s beautiful. We had a wood-burning fire stove; it was so cozy.

We had a full kitchen, and we would make a fire and have this big window overlooking [Lake] Superior. We would wake up, and it would be a gorgeous pink sunrise right out our window. Where you check in, the community house … [has] a gorgeous pool and a large hot tub with beautiful huge windows.

I went and sat in the hot tub, and it started snowing, and I was like, ‘Am I in a Hallmark movie?’ It was crazy.

Another option is right after Lutsen …

North Country Cottages. There are three little, very cute cabins/cottages in the woods right in Lutsen. We stayed in a one-bedroom cabin—again gorgeous [with a] very cottagey feel. It had a big wood-burning fireplace. Very, very cozy [and] secluded.

What are some can’t-miss places in Lutsen?

Definitely go to Fika Coffee; that’s my favorite coffee shop. It’s right in town, on the end of a little strip mall. The coffee is amazing—some of the best coffee in Minnesota. My favorite thing is the Maple Latte.

Turkish Delights Coccinella at 50th & France produces its own award-winning olive oil in Turkey.

operations manager of Coccinella at 50th & France—was 15 years old, his family hosted an Italian exchange student at their home in Ankara, the capital city of Turkey.

During that year, the Kaplan family experienced the richness that comes from engaging with another culture.

This formative global experience ultimately resulted in Umut and his younger

brother, Cosku, moving to the U.S. in 2012, where they attended a boarding school in New Hampshire, followed by college in Minnesota.

During Umut and Cosku’s high school and college years, their parents, Suayip and Seher, would visit from Turkey.

“They would get to meet my friends, their families [and] our faculty. They always felt so appreciative for the fact that all those

people have really embraced their children and made us feel home away from home,” Umut says, adding, “They wanted to bring a part of our culture to the community that welcomed their children.”

And that’s where the idea for Oleavia extra virgin olive oil (EVOO)—and ultimately Coccinella, where it’s sold— was born. Umut’s parents are entrepreneurs, working in renewable energy and

insurance back in Turkey. So he says it was very natural for them to turn their desire to share their culture into a business. And they saw no better place for it than in Minnesota, where both of their sons had settled.

During their visits to the U.S., Umut’s parents made observations about American culture and shopping habits, which informed the direction of their business. “One of the things that was really vivid to us was whenever we shopped [for] groceries, [we] never saw a Turkish olive oil in the market,” Umut says, noting that olive oil is part of the heritage of Turkey and other Mediterranean countries. “That was surprising to us because the spread of olives happened in Mesopotamia, which is actually ancient Turkish land. We have olive trees that go back 5,000 years.”

In doing some research and consumer interviews, the Kaplans also discovered that people often correlated the quality of olive oil to a specific region or a country rather than looking at what truly makes an olive oil high-quality—the harvesting, pressing and production methods. These factors all impact an olive oil’s taste, smell and health benefits.

So, the Kaplans set out to create highquality Turkish olive oil to sell in the U.S. market, with a goal of educating consumers along the way. They partnered with an olive farm and boutique production facility in Aydin, in the southwest coastal region of Turkey, where they oversee the entire farming and production process— deciding when the olives are harvested, at what temperatures they’re pressed and how the oil is stored. Today, the Kaplans own the farmland and have plans to build their own pressing facility. Suayip and Seher oversee production in Turkey, while Umut and his team oversee business operations in the U.S. Oleavia EVOO, Coccinella’s proprietary olive oil brand, launched in 2018 and has since received multiple gold and silver medals from the NYIOOC World Olive Oil Competition, where judges look for specific tasting notes, as well as analyzing

the texture and smell, and looking for harmony in all of those areas. In 2021, both editions of Oleavia’s most popular olive oil, Asilik, won a gold medal for the second year in a row.

EVOO: WHAT’S IN A NAME? Many consumers know to look for olive oil with labels that tout “extra virgin” and “cold-pressed.” Umut says, “People read the label—extra virgin, cold pressed— and they automatically think, ‘OK, this is what I’m looking for … This must be the good stuff.’” While he notes that those are important designations, he says they don’t say enough about the quality or the amount of antioxidants in the olive oil.

Consumer education is a passion of Umut’s, and he shares some of the definitions of common designations, as well as other aspects that indicate a truly excellent and healthy olive oil.

Extra Virgin

This designation shows the purity of the olive oil. According to the U.S. Department of Agriculture, to be considered EVOO, it must have “a free fatty acid content, expressed as oleic acid, of not

more than 0.8 grams per 100 grams,” and high-quality EVOO is generally below 0.3 grams. Umut says Oleavia EVOO sits between 0.2 and 0.25 grams.

Cold-Pressed

When a bottle of olive oil says “coldpressed,” it’s referring to the temperature at which the oil is extracted from the olives. Umut says that if manufacturers go to higher temperatures during pressing, “you’re actually able to produce so much more in quantity—but you are sacrificing that polyphenol content.” Cold-pressing or cold extracting the oil preserves as much polyphenol content as possible.

Polyphenols

But what exactly are polyphenols?

“Those are the healthy antioxidants found in an extra virgin olive oil,” Umut says. “The higher that it is, the healthier the olive oil is for you.” EVOO is widely considered a prominent source of monounsaturated fats, which, according to the American Heart Association, can help reduce bad cholesterol levels in your blood, lowering the risk of heart disease and stroke. In some studies, polyphenols

are also linked to lowered risk of both diabetes and certain types of cancer and Alzheimer’s disease and can help restore gut bacteria. Umut says the average polyphenol content in EVOO sold in the U.S. is 55 milligrams/kilograms—whereas Oleavia contains anywhere from 450– 609 milligrams/kilograms, depending on the edition. And this higher polyphenol content actually gives it a higher smoke point—up to 480 degrees F. Early Harvest Date

Every region in the world that produces olive oil has an ideal harvest period, based on the climate and hemisphere. In Turkey, that’s late September to mid-October, when the olives are still green and aren’t yet ripe; this is when the olives have the highest polyphenol content. “If you harvest it early, you will be able to produce a higher antioxidant-content olive oil,” Umut says. He notes that waiting to harvest until olives are ripe—in December or January in Turkey—produces significantly more olive oil when the olives are pressed; a lot of producers do this, so they can produce higher volumes and make a better profit. UMUT’S FAVORITE WAYS TO ENJOY OLEAVIA According to Umut, the uses for EVOO are nearly endless.

Here are a few of the ways he incorporates it into his diet.

The way olives are harvested can have an impact on the taste of the olive oil. Olive trees can grow tall, so Umut says many manufacturers “shake the trees with these machines, and the olives hit the ground and they collect it faster.” The olives can get bruised due to the drop in height. “You can still cold press a bruised and damaged

Minimizing Oxidation

To maintain freshness and optimal taste, it’s important to minimize oxidation in the production process. The time between harvesting and pressing the olives plays an important role in this, as do storage methods before olive oil is bottled. Umut says Oleavia olive oil is

cold-pressed within four hours of harvesting. “Then we store [the olive oil] in a stainless steel tank at the factory with a nitrogen layer on top. We press nitrogen into the tank so there’s no oxidation, and then it’s bottled at the factory in a dark glass bottle,” he says. “We even apply [a] unique cap … and this minimizes oxidation even for your consumption purposes at home.”
