Food & Drink Apple & Apricot Strudel Layers of light and crispy filo pastry wrapped around a sweet fruit filling, makes a delicious pud that tastes just as good warm as cold. Serve with crème fraiche, thick Greek yoghurt or vanilla custard. Ready in 1 hour.
Ingredients • 2 Large cooking apples • Finely grated zest of lemon • 85g no need to soak dried apricots chopped • 50g fresh white breadcrumbs • 1tsp ground mixed spice • 7 tbsp demerara sugar • 6 large sheets filo pastry (approx. 200g) • 50g unsalted butter, melted • Icing sugar for dusting
Method 1. Preheat the oven to 190c/170c fan, gas mark 5. Peel, core and finely chop the apples and place in a bowl with the lemon zest, apricots, breadcrumbs, mixed spice and 3 tbsp of the demerara sugar, mix well. 2. Place 2 sheets of the filo pastry slightly overlapping on a large greased baking tray, brush them liberally with some of the melted butter then arrange 2 more sheets on top, brush with more butter and top with the last 2 sheets.
3. Spoon the apple mixture along the pastry edge, leaving a 3cm border, Sprinkle over another 3 tbsp of demerara sugar. Fold in 2 short ends of the pastry then roll up loosely from one long side to enclose the filling, making sure the seal is underneath. Brush the pastry all over with any remaining melted butter and sprinkle over the rest of the demerara sugar. 4. Bake in a preheated oven for 35-45 minutes or until the pastry is crisp and golden. Check after 25 minutes and cover loosely with foil if the pastry begins to brown. Serve warm or cold, dusted with icing sugar. 5. TIP Adding breadcrumbs to the fruit mixture helps to soak up any juices and stops the pastry from becoming soggy. Enjoy!

Local History
Middlesbrough’s Goliath is Defiant before toppling… The Goliath crane structure owned by Able UK was erected at the Middlesbrough dock area in the 1970s. Its function was simple - to help place various manufactured parts onto oil platforms ready for them to travel down the Tees. The Goliath crane has since been decommissioned and has stood derelict for a number of years, almost acting as an advertisement for Able UK. But it remained very much a local landmark of Teesside, as many people passed it on their way to a super Saturday at the Riverside. However, as the crane continued to deteriorate and its existence would hinder future redevelopment plans, Able UK decided that it was time to call it a day on Good Old Goliath and it was brought to the ground on Sunday 6th March 2022. As a small crowd – including Team Archiving Teesside – stood waiting in anticipation with cameras, mobile phones and other equipment at the ready, things didn’t initially quite go to plan. After Able UK contractors had spent most of the morning on the access platform, packing explosives up against big Goliath’s legs, they retreated behind the cordon. A warning claxon sounded, followed by a pause, another claxon and a countdown
began, the tension building as the loud boom echoed around Middlesbrough dock. As the black smoke cleared, Goliath was still standing proud, the explosives no match for good old British Steel. Although the massive steel structure had been weakened, it hadn’t fallen. This, then, posed contractors with a problem as they scratched their heads, asking, “Why didn’t it work?”. After cautiously assessing the situation, contractors made the call to get more explosives and have another go. Working into the night, and by torchlight as the light faded, contractors packed Goliath with even more explosives and at 9pm it was time to try again. By this time, more and more people had gathered at the dock, hoping to get a glimpse of the mighty Goliath’s fall. Again, the claxon, pause and second claxon before the Able UK contractor optimistically counted down from ten. This time, as the explosion echoed around Teesside, Goliath eventually succumbed and fell to the ground, a full nine hours later and at much greater expense than planned. The iconic structure involved in building so many oil rigs was no more, and the Middlesbrough skyline was changed forever. Article provided by Archiving Teesside. Bedroom Space Savers
Bedroom space savers R
id your bedrooms of clutter with these top tips on how to choose the right bedroom storage. As with kitchen planning, it’s worth listing what you need to store in your bedroom and working out how much hanging & drawer space is required. If you are starting from scratch, you can opt for fitted furniture or free standing designs or a combination of the two. If there are already cupboards in place, a new paint finish and updated interior fittings will help improve the look. Most bedrooms will benefit from fitted furniture. A good designer will be able to solve the problems of awkward angles, uneven alcoves and out of proportion walls to present a sleek uniform appearance. Even if restricted to one wall, the fitted section will still provide generous hanging and shelf space. L-shaped bedrooms lend themselves to being split into sleeping and wardrobe areas. Depending on the layout you can either have a door leading to a walk in wardrobe
with open shelves and rails beyond or just a separate space with a traditional wardrobe. Never underestimate the value of the space under the bed! Even if your room has ample cupboards, shoes and bags seem to gravitate to this forgotten area, so it makes sense to use it properly. Standard bedsteads can be teamed with sturdy under bed baskets or even large drawers on castors. Another idea is the lift up bed, where the entire slatted base is
raised - usually via a hydraulic system - to reveal a storage area the size of the bed. It’s more disruptive than drawers but an excellent place to store out of season quilts and blankets. Whichever option is right for you, you’ll have more space than you think!

The Dos and Dont’s of Buying A Puppy Advice on avoiding puppy farms and rogue breeders Here are some do and don’ts when it comes to what to look for and how to make sure you’re getting your puppy from a legitimate breeder. With the increase in demand for puppies due to lockdown there have been a lot of talk of the process of getting a puppy, there is now a shortage of puppies and prices have shot through the roof. Sadly, many puppies bought from breeders who are not legitimate or don’t conform to regulations can have health or behavioural problems.
Do... Check the Kennel Club website for KC registered breeders. All breeders registered with The Kennel Club must adhere to certain requirements in order to be approved. Make sure the breeder is licensed even if it is a one-off litter. Check the vaccination records are real. Puppy farms and rogue breeders are clever and will fake documents. Ask to see and take a photo of the vaccination card. Phone the vets that carried out the vaccination. Make sure the practice exists and even go in and show them the photo of the card to make sure they can verify it came from them. Do your on line research: google the breeders name to see if there are any negative reports about them, search their phone numbers, if they are listing lots of puppies on different sites this is a red flag in itself. Familiarise yourself with Lucy’s Law. This law was brough in to help prevent puppy farming. It means that all puppies must be sold directly from the breeder where they were born and where mum can be seen. This is preventing the use of third party sellers acting as a go between to place puppies with buyers.
16
I S S U E 0 1 | M AY/ J U N E 2 0 2 2
Don’t... Buy a puppy if you haven’t seen mum and seen mum interacting with the pups, if you can’t then this raises the question of where mum is and will also go against Lucy’s Law. Some breeders will use ‘fake mums’. These dogs will often show no real interest in the puppies so that is also something to look out for. Buy a puppy without seeing the house and set up, again Lucy’s Law states they must be bought from where they were born. Make sure you’re able to see this and that you’re happy with the set up and hoe the puppies, mum and other dogs are being kept. Any requests to meet in a park, car park, friends house etc is a huge red flag, its both illegal and suspicious. Use third party agents to get puppies from abroad, the journey itself can be long and traumatic and you have no way of knowing how the dog spent the first weeks of their life or if they have been properly vaccinated or had the correct health checks. Take a dog home before 8 weeks without them being vaccinated or microchipped dogs are not fully ready and developed to leave their mum before 8 weeks and any breeder trying to do this beforehand should be avoided. Be pressured into buying, a respected breeder will want their puppies to go to the best and right homes and allow you to make the choice in your own time.
The Benefits of Chair Based Yoga and Exercise for Older Adults The NHS (March 2022) recommends older adults should spend at least 2 exercise sessions a week focusing on strengthening the muscles. As we age, it becomes even more important to remain active if we want to stay healthy, social and maintain our independence. If we do not take steps to stay fit and healthy, all the things we enjoy doing and taken for granted may start to become that little bit harder. Keeping active means we can continue to enjoy life’s simple pleasures, such as: • • • • • •
