Three Top Summer Kitchen Tips from Dean Sheppard, OvenGleamers 1. Tear basil rather than cutting it?

Chefs often say that you must tear basil, rather than cut it with a knife, to get the best flavour. Nope. The flavours in basil are primarily contained within the cells of the leaf. If you tear it, it tends to come apart between the cells but if you cut the leaf, you will break open the cells releasing the flavour. This makes the most difference when you are using the basil raw eg in a tomato salad.

Best to wash the basil, pat dry with paper towels, and remove the leaves from the stem. Stack several leaves together and roll into a cylinder, then cut crossways into thin strips.

2. Should I use foil on the base of my Oven?

Many people line their grill pan or the bottom of the oven with aluminum foil to keep their cookers cleaner. This becomes heavily coated in grease and smells revolting! But it actually damages the enamel in the grill pan and on the base of the oven. The foil creates a superheating effect by reflecting the heat back onto the base of the oven or grill pan which then causes enamel damage.

I recommend using an oven liner made from PTFE with a non-stick coating. This will catch any food drips keeping the bottom of the oven/grill pan clean. Remember to take the oven liner out regularly and wash it in warm soapy water.

3 “Hot pan - cold oil - prevents sticking” Is this mantra really the best way to prevent food from sticking to the pan when sautéing or stir-frying.

The idea is that you heat up the pan first then add the cold oil and almost immediately add the food and that will stop it sticking. What you really want is a “hot pan, hot oil”. When you add cold oil, it heats up almost instantly when added to the hot pan – giving you “hot pan, hot oil”. You get the same results if you heat the oil along with the pan so take your pick – they both work!

Updating your bathroom?

The fuse board, which was previously situated in the study, was moved out into the hallway – a complex electrical job. Light switches were moved and a shaving socket was added, all to make the room easier for Mr Booth to use. The family are delighted with their new wetroom.

Sharing does us good With petrol and food prices going up, some people are going to be worrying if they can make ends meet. I wonder if our communities can pull together and help each other?

It was great seeing how people worked together to make the Jubilee events happen. At bring and share picnics, some people gave time and energy, others bought decorations and prizes, others ran games or did face-painting. The resulting parties were fun. It reminded me of a story called Stone Soup.

Once upon a time, people were afraid their families would go hungry, so they hid the food they did have, even from their friends and neighbours.

One day a wandering soldier came into the village.

He asked about a place to eat and sleep for the night.

“There’s not a bite to eat,” they told him. “You better keep moving on.”

“Oh, I have everything I need,” he said. “In fact, I would like to make some stone soup to share with all of you.” He pulled a big black cooking pot from his wagon. He filled it with water and built a fire under it. Then, he reached into his knapsack, pulled out a plain gray stone and dropped it into the water.

By now, hearing about the magic stone, most of the villagers were surrounding the soldier and his cooking pot. As the soldier sniffed the stone soup and licked his lips, the villagers began to overcome their lack of trust.

“Ahh,” the soldier said aloud to himself, “I do like a tasty stone soup. Of course, stone soup with cabbage is even better.”

Soon a villager ran from his house into the village square, holding a cabbage. “I have this cabbage from my garden.” he said as he held it out for the soldier.

“Fantastic!” cried the soldier. The soldier cut up the cabbage and added it to the pot. “You know, I once had stone soup with cabbage and a bit of beef, and it was delicious.”

The butcher said he thought he could find some beef scraps. Other villagers offered bits of vegetables from their own gardens--potatoes, onions, carrots, celery. Soon the big black pot was bubbling and

steaming. When the soup was ready, everyone in the village ate a bowl of soup, and it was delicious.

It’s just a fable but Jesus said that to live well we need to love our neighbours as ourselves. Sharing is good for all of us.

Making a Splash With the increasing cost of living and the consequent necessity to watch the pennies, many of you might be cancelling holidays away in favour of staying local.

What a shame, therefore, that we can’t turn back the clock to the inter-war period; the heyday for outdoor swimming pools.

Swimming had been a fashionable sport since the end of the 19th century and by the inter-war period was increasingly popular amongst women, being given a boost in 1926 when the American, Gertrude Ederle, became the first woman to swim the Channel, setting a time of 14 hours that beat the current record by two hours.

The popularity of swimming combined with the huge increase in the number of holiday makers flocking to seaside resorts led to many local councils building large new pools called lidos, in order to attract summer visitors and it was considered as essential for a resort to have one as it had been to have a pier at the turn of the century.

By the end of the thirties many towns had built a lido, including Weston-super-Mare in 1938. Most of them had areas for sunbathing, fountains, slides, changing rooms and cafes as well as an engine house to keep the water clean. One of the distinguishing features of the pool at Weston was the art-deco diving platform to which boards at varying heights were mounted. Apparently, a team of professional divers performed “acrobatic feats” there every afternoon during the summer attracting large audiences.

It might seem odd to have built pools right next to the sea but this had a lot to do with the fact that many seaside towns still had regulations governing sea-bathing. Outdated views on modesty meant that it was still common for some councils to insist that bathers had to pay to use bathing huts to change in. It was also quite common for council officials to forbid bathing when the weather was too “rough.” It was much easier, therefore, to use a nice clean swimming pool which was not dependent on weather or tides and was free from jellyfish!

Loan amount £40,000; Monthly repayment £416.48; Interest Rate 4.6% fixed for 2 years; Term 10 years.

This saved the customer £528.52 per month in monthly outgoings.

Representative Example: Borrowing of £40,000, plus £1,095 lender fee, totalling £41,095, over 200 months on a variable product with an initial borrowing rate of 4.8%. There would be 200 monthly instalments of £298.90. Total amount payable £59,875, made up of: Mortgage Amount £40,000, Interest £18,685, Lender fee £1,095, Exit Fee £95. Overall cost for comparison purposes 5.3% APRC. Please be advised that any interest rate fluctuations, during the life of the mortgage contract, will affect the total amount repayable.

Garden View 9th - 14th August is National Allotments Week During World War II and immediately afterwards, almost everyone with a garden grew fruit and vegetables. Food was rationed so people supplemented their diet with produce they’d grown in their own back garden, or down on their allotment.

During the 1960’s allotments began to go out of fashion and continued to decline in popularity. As a society we were more affluent; more likely to buy what produce we needed from the local supermarket, and vegetable gardening just wasn’t considered sexy!

But with food prices soaring and less produce available on the supermarket shelves, added to an increased interest in plant-based diets and locally sourced food, allotments are enjoying a popularity surge.

And the statistics in the news are scary. The number of food banks is growing exponentially as families struggle to put even the most basic provisions on the table. There are concerns about additives and pesticides on shop-bought fruit and veg, yet the cost of organic food puts it out of the reach of the most consumers.

Is it any wonder that so many of us are taking matters into our own hands, deciding to emulate our

Stand Up for Fun Try stand up paddleboarding this summer SUP is not difficult. We learned the basics in a day.

There are more challenging forms of SUP, like SUP surfing and long-distance SUP touring, but recreational paddleboarding is pretty easy.

Paddle boards come in a range of different shapes, lengths, widths, and sizes. The most common paddle board size is about 3.3m long and between 75cm90cm wide. They are much bigger than your average surfboard! Beginners are best to look for an All-Around board...which is built for all water types, balancing speed, stability, and tracking.

Inflatable paddle boards (or iSUPs) can be stored in a small space and easily transported then inflated when you’re ready to use them. Inflateable SUPs also float higher in the water, which is ideal for activities like SUP yoga (a real thing), and they are very durable

I fell in love with Stand Up Paddleboarding (or SUP) last summer when the local marina offered SUP lessons.

Before the end of the first lesson, I was hooked. SUP involves standing on a board while using a paddle to manoeuvre your way through the water. It’s a superfun way to explore local waterways and get some fresh air and exercise.

Hard SUPs are made of an EPS foam core wrapped in materials like epoxy, fibreglass, wood, carbon fibre, or plastic. They tend to be slightly faster than inflatable SUPs, so perform better for SUP surfing. But they are harder to store and transport because they’re so big.

Extra equipment: SUP Paddle - about 20-25cm taller than you are.

Paddle Leash - so your paddle can’t float away if you drop it or fall in.

SUP Leash - so your board can’t float away if you fall in!

PFD (Personal Flotation Device) - Safety first Flashlight and Safety Whistle - If you plan to paddle in the dark.

Shoes - neoprene shoes will keep your feet warm in cooler weather and won’t damage the board. I prefer bare feet.

Dry Bag - take a towel and a phone at the minimum.

Walk into the water to knee-deep, set the board on to the water’s surface. Place your paddle across your board, climb on and kneel on the board. Practice paddling on your knees until you feel comfortable.

Move one foot at a time and place your feet in the place where your knees have been resting. Slowly rise from a squat, with your heels flat, and slide your hands onto your paddle. Engage your core for stability. As soon as you stand up, make your first stroke with your paddle.

This will help you build momentum and in turn, remain steadier. Stand with your feet parallel, hip-width apart, toes facing forward, and knees slightly bent. Wider boards are easier for a beginner to balance on.

It’s possible to teach yourself the basics but it’s more fun to take a class with other beginners. There will almost certainly be one near you this summer. So, join the craze and get paddling. Don’t forget the sunscreen.

FRAUD AND HOW TO SPOT IT – A TEN STEP GUIDE With the current pressures we are facing from a slow economy, challenges associated with difficulties in renewing finance, achieving targets, or even simply paying suppliers bills, it becomes easy to see that the risk of fraud for all sizes of businesses has increased significantly.

• Always retain a degree of control over the key accounting functions of your business. Don’t pre-sign blank cheques and ensure that the corresponding invoices are presented with the cheques.

Given the wide range of fraud that could be committed, what steps can you take to minimise the risk of fraud being perpetrated within your organisation? Here are our top ten tips for detecting and preventing fraud.

• Watch out for employees who are overly protective of their role or disaffected and might be bearing a grudge.

• Begin by recruiting the right people, permanent and temporary, to work in your organisation. Make sure that you check out references properly, particularly if they are to work in key areas.

• Ensure that you have a clear policy that fraud will not be tolerated and ensure that this is communicated to all staff.

• Consider which areas of your organisation could be at risk, then plan and implement appropriate defences.

Effective controls include: Segregating duties; Supervision and review; Arithmetical checks; Accounting comparisons; Authorisation and approval; Physical controls and counts.

• Wherever possible don’t have only one person who is responsible for controlling an entire area of the business, including the accounting function but will also include other key areas such as ordering goods, stock control and despatch.

• Be on the lookout for unusual requests from staff involved in the accounting function.

• Watch out for notable changes in cashflow when an employee is away from the office, on holiday for example.

Similarly, be aware of employees who never take their holiday.

• Prepare budgets and monthly management accounts and compare these against your actual results so that you are aware of variances. Taking prompt investigative action where variances arise could make all the difference by closing the window of opportunity afforded to fraudsters.

• Where a fraudster is caught, make sure that appropriate action is taken and learn from the experience.

Royal Air Forces Association Midsomerset Branch – Future Programme Royal Air Forces Mid-Somerset Branch commemorated the 40th Anniversary of the end of the Falklands War at a Branch Meeting at the Street Inn when three members recounted their personal experiences of involvement in the war effort. Ever wondered about your wine?

At first grapes were grown only for eating so it is likely that the first wine was made accidentally. In the full sun of the Middle East, it would have taken just a few hours for ripe juicy grapes to begin to ferment. Fermentation is the process by which the natural sugars in the fruit, aided by the natural yeast present in the bloom on the grape skins are turned into alcohol. It must have been an incredibly happy accident because before long wine was being made throughout the Mediterranean.

Wine manufacture today bears a lot of similarities to those used in the ancient methods of viticulture (winemaking). In Egypt grapes were collected in wicker baskets, then trodden in huge wooden vats to kickstart the fermentation process. The crushed grapes, juice and skins were poured into loosely corked earthenware jars and left to finish the fermentation process. Finally, the mixture was filtered, flavoured, and poured into sealed amphorae.

Did you know that there are around 60 species of vine but only one that bears the fruit which when fermented produces wine? From that one species come all the different varieties used in wine production today.

Evidence of Palaeolithic grape pips uncovered at archaeological sites indicates humans were eating grapes as early as 7000BC. Some 3500 years later Egyptians and Phoenicians planted the first vineyards and tended the vines.

In spite of the similarities, we would be horrified now at what passed for wine back then. Wines were preserved using additions such as heavily sweetened date juice, honey, and spices, and even pepper.

By the Middle Ages, the preference was for full-bodied fortified wines (similar to modern sherries and ports).

These were stored in wooden casks.

Winemaking then evolved through the centuries.

Producers learned that vines grown on thinner mountain soils seemed to produce superior wines to those grown on the richer plains.

As stated earlier, all European vines originated from the same species, and unfortunately this made them vulnerable to pests and diseases (a similar problem affects banana producers nowadays). When a highly destructive aphid called the grape phylloxera reached Europe at the beginning of the 20th century it decimated almost all of the Old-World vines in a few short years.

That might have been the end of commercial wine production, but science came to the rescue. Scientists discovered that American vines were resistant to the aphid, and they managed to develop healthy plants by grafting European varieties on to American rootstock.

This helped preserve the European wine industry, but also helped the Americans improve their own industry, because prior to this their native vines had produced inferior wine. All of today’s Chardonnay and Cabernet Sauvignon wines are produced from ‘rescued’ vines!

Manufacturers can now choose from a wide variety of grapes, and modern wine-making techniques have made wines more standardised and reliable. In recent years though, there has been a move back to artisan winemaking by passionate manufacturers who want more individuality, uniqueness or ‘terroir’.

So, treat your glass of Chardonnay with extra respect as you raise it in a toast to and say ‘Cheers!’

When is the time to replace an ageing computer?

We often get asked the question “How long will a computer last?” – generally the life of a computer seems to range from about 3 years to 10 years depending on the quality of components and how it is used. External factors can also influence this, such as power surges and even drink spillages. One way to extend the life of a computer is to replace ageing or slow parts, but due to the pace of improving technology, sometimes replacement is the best long term solution.

It is wise and much safer to carry out planned computer replacements instead of waiting until they break down and stop functioning from old age, which makes replacing much harder, and risks data loss. When a less old computer needs repair, a replacement can still be the best option, such as when repair costs meet or exceed the cost of a new computer. A troublesome computer should be looked at by an experienced engineer who can help determine the best cost-effective way forward.

With the release of Windows 11 and its strict hardware requirements, most computers older than 3 years cannot upgrade, so this becomes another factor which can make a new computer the better option over investing in repairs. On this note, we recommend all computers run Windows 11 as soon as possible. A computer will also run healthier for longer when free from infections, so it is important to ensure a secure, paid antivirus solution is installed. Never run a free antivirus as they fail to provide adequate protection.

Almshouses raise money for Ukrainian refugees The City of Wells almshouses raised over £750 for Ukrainian refugees who are being hosted by families in the Wells area.

The money was raised through donations at their June open day and was passed directly to the Wells Community Network, for their Ukrainian initiative.

The final Almshouses open day of 2022 will be held on Saturday 10th September, during the Heritage Open Days fortnight, from 11 am – 4 pm and will feature the Simply Uke! Ukelele band, talks on the history of the almshouses as well as refreshments.

Rehearsals begins on Wednesday 7th September 2022; the programme and rehearsal conditions will be subject to the Government Covid Regulations prevailing at the time.

Wells amateur artist produces jigsaw puzzle Wells amateur artist Sue Williams has for a long time had an ambition to produce a jigsaw puzzle with a Wells view from one of her oil paintings.

In a Pickle A history of the humble art of pickling The word ‘pickle’ derives from the Dutch word ‘pekel’ or the German word ‘pókel,’ which both mean ‘salt’ or ‘brine.’ Refrigeration is a relatively recent introduction so for a long time throughout history pickling was a necessity to preserve food and stop it going bad, providing families with sustenance when fresh food was in short supply during the winter months. As they were so portable they were also useful for sailors and travellers.

They are a common pregnancy craving, appear in the bible and the works of Shakespeare, and Cleopatra thought that eating them made her more beautiful.

What am I talking about? Pickles! Yes really.

Pickles have actually been around for thousands of years. we can trace them back to pickled cucumbers in India 2030 BC.

Puzzle Solutions

The pickling process happens when fresh fruits or vegetables are immersed in an acidic liquid or saltwater brine until they are effectively both ‘cooked’ and no longer susceptible to spoilage. When we think of pickles, cucumbers (gherkins) commonly come to mind. These are often lacto-fermented in saltwater brine. Lacto-fermentation involves lacto microbial organisms, which turn the naturally occurring sugars in the cucumbers into lactic acid. As this happens the environment rapidly becomes acidic, making it impossible for ‘spoiling’ bacteria to multiply.

During the late 1800s and early 1900s, there was an influx of eastern European Jews to the U.S. particularly New York City. These immigrants introduced their kosher dill pickles to America. Cucumbers were scrubbed, and piled in large wooden barrels along with dill, garlic, spices, kosher salt, and clean water.

They were left to ferment for a few weeks, producing bright green ‘half sours’, or several months, producing ‘full sours’. They were sold on handcarts as some of the first fast food and became a lucrative source of income for the community.

In the 1850s, a Scottish chemist by the name of James Young created paraffin wax, which helped to create a seal for any food preserved in jars, and a few years later, John Mason developed and patented the first Mason jar. These jars were made from a heavyweight glass that was able to tolerate the high temperatures used in canning and processing pickles. These two inventions made home-pickling easier and allowed home cooks to be more creative with the foods they preserved.

Pickles today can be sweet, sour, salty, hot or any blend of these. Almost any vegetable or fruit can undergo the process and each area of the world has its own particular favourite. The British love a pickled onion, the Eastern Europeans and Germans prefer lacto-fermented cabbage (sauerkraut), the French love tiny dill-flavoured cornichons (miniature gherkins) and Koreans are famous for kimchi (cabbage, radish, and carrot, flavoured with a fish sauce) while the Japanese prefer pickled plums and daikon (a red radish).
