Healthy Eating EASY 4-INGREDIENT RECIPE BROCCOLI & BLUE CHEESE SOUP Sometimes we can’t be bothered to cook and can then reach for unhealthy snacks or microwaved meals. This soup is great for lunch or for a light dinner with thick wholemeal bread, drizzled with olive oil.

It contains broccoli, which is considered a superfood as it has fibre, antioxidants, vitamin C (which helps with iron absorption) and calcium for strong bones. Blue cheese also contains calcium, protein and is lower in fat than some other cheeses.

Ingredients: 1 tablespoon veg oil 1 large onion 1 large potato 1 litre veg stock (use Vegetable Bouillon or stock cubes) 1 head of broccoli (around 300g), 100g blue cheese or stilton cheese, crumbled.

Chop the onion and saute (slowly cook in the veg oil on medium heat) until soft. Add the chopped potato and simmer until tender. Add the chopped broccoli and simmer until soft. Crumble in the cheese and stir until melted.

Blend and serve with olive oil drizzled on top if you like.

Tip: If you like garlic, chop a clove in half lengthways and rub on the bread before you put your butter or olive oil on.
