We have finally entered the 2021’s fall season. It’s that time of the year where you rejoice and welcome the cool breezes whilst enjoying the hot coffee during the picturesque sunsets and scenic sunrises of Qatar.

Somewhere while we were busy determining what needs to change and reflect on how to move ahead to reshape in this everchanging scenario –we should take a moment to relax and thank the Almighty for having a life.

Yes, it’s due on us!

I agree, the turbulence of the past 20 months has changed the world incredibly. The 4th wave has again fueled chaos, anxiety, and fear. The process has forced us to adjust and reexamine how we run our businesses.

More than ever, today’s hospitality industry is being out to the trial. And the hospitality practices are being forced to morph to keep pace with the evolvement in an increasingly chaotic world.

Qatar, hospitality industry, specifically, is amongst the first ones that stood up and revamped itself really fast. Collectively, it has done remarkably in restoring, reshaping, and resetting the foodservice and hospitality landscape.

Whether the hotels in Qatar are more than homes we see in the magazines, have the power to define comfort and luxury?

My response is a resounding yes!

Daniel Oporto is a Bolivian fashion designer brought up in Beverly Hills, USA. He is the founder of “Daniel Oporto Couture” well-known for a unique and ingenious line of suites and tuxedos.

High quality fabric such as Kinu woven silk made in Japan are the signature of his designs. Daniel’s company was founded in Los Angeles CA in 2005 with the help of Mark Wahlberg, Placido Domingo, Carla Ortiz and Vittorio Grigolo.

1. Why did you choose a career as a fashion designer?

Well, I believe I didn’t choose the career but it chose me instead, my grandmother was a very well-known fashion designer in the 70’s and 80’s. I was very little but I remember seeing all her art constantly, perhaps this is one of the main reasons.

2. What motivates you to be a fashion designer?

Well, many things motivate me, such as my travels, my friends my family, other designers, and specifically, I really like the fact that it’s a way to express myself in different ways through my creations.

3. What was the inspiration for the collection?

Well, I think that Italy was a big inspiration for this specific collection, I spent 2017 and 2018 there and it’s the first time I was based there and so I had the opportunity to really get to know the Italians, and their lifestyle which is really inspiring. I wanted to create this piece to fit Bellagio - in Italy. All that luxury and beauty from the nature to the architecture.

4. What do you think makes this collection stand out?

I believe the diversity of the fabrics, prints and cuts are very unique.

5. Who do you think is the target market for this collection?

Well, I think anyone who feels young beautiful, successful and smart.

6. How would you describe your personal style?

Well, my personal style really depends on the day, the situation, the mood and time.

I would say I am very versatile and don’t have a specific personal style.

7. How do you stay up to date regarding fashion?

Well, I participate in all kinds of events, I have friends that are in the business, and we are constantly sharing ideas, styles and updating each other, other than that travelling is the best way to keep me updated, but to be honest I really try not to follow trends, I try to create them according to the necessity of my clients.

8. What role do you think social media plays in fashion today?

Social media plays a very important role, simply because of the current situation Covid -19 everything has moved online.

Media from the fashion shows to the fairs, today the world has become a small village.

Al Kaabi says’s “Art in its core is a passion that dominates the artist. My passion for the Arabic language here was translated as art.

This language was woven into my designs with colorful threads and different fabrics. The final result was an artwork blended with my passion.’

Taking inspiration from nature and earthy colors, the Shades of Dream collection looks like a spectrum. The cuts are precise and tend toward a flowing pattern. The fabrics used include French taffeta, the Linen fabric, and the Indian shawl combined with pure silk. The designs are ornamented with beaded embroidery highlights, multi-toned embroidery highlights, and zardozi (spring) embroidery highlights.

According to Mrs. Al Kaabi, art is a message that can never be underestimated, and heritage is the roots that express our authenticity and ancient history. Due to this, she showed her close association with this heritage in creating collections inspired by the various inscriptions used in clothes in the past, ancient architecture in the Qatari heritage, and the Arabic heritage in general.

Beyond the fashion world, Mrs. Muna Al - Kaabi has been immersed in Arabic literature and the Arabic language at a very young age, leaving a lasting impression on her character.

Mr. Ali Hassan is a prominent figure in Qatar’s art world and a great artist. He developed a more free-flowing form of calligraphy, as he finds ‘worldly beauty’ in each letter. This addition created a style that distinguishes it from many. Mrs. Mona Al - Kaabi was inspired by his artworks and created designs that incorporated elements of these pieces. Her designs are inspired by the artistic manifestations of those letters, which results in timeless and exclusive designs for Moonlight Gallery - Msheireb.

Ali Hassan believed in the talent and creativity of Mona Al Kaabi. He thought his art would exemplify a whole other type of art within the world of fashion, providing the necessary support to produce an unparalleled artistic experience.

The growth in the fashion industry has been phenomenal. From latest trends to old revival the world is constantly experiencing a shift in this niche however, for me, fashion is subjective.

I

t is beyond a piece of cloth that we wear to look good. It is an identity. A form of expression that describes our journey and brings a sense of relevancy to us.

Abaya is one of the important fashion statements for Muslim women around the world. It’s apparel that connects them on a spiritual level and gives them a sense of belonging.

I am a fashion enthusiast who enjoys wearing abayas. I did not know that my audience would like my style so much.

Upon sharing my abayas on social media, I had many queries, asking about my abayas and that’s when I understood, people have a keen interest in them.

Abaya has been a part of Muslim culture for ages. Lately, it was usually available in black color but now over time, you can find any sort of Abaya.

From different colors to custom designs, abayas can be designed in numerous ways. All you need is a vision of your design and the rest will be done by your designer.

I understand some of us are reluctant to experiment with our abaya color and design but trust me, if it’s done right, you won’t regret it a bit.

My Instagram is usually flooded with questions about my abaya. I see women all across the world asking about it which makes me happy and encourages me to showcase more modest fashion.

For those of you who are unaware of it. Abaya is a long flowing robe that is usually loosely fitted. It is mostly worn on clothes and over the years, it has seen some drastic progress.

Now you can find a good abaya everywhere in the world. They are colored, designed, and even printed according to the likeness of people.

Abaya is more than a style statement now. It’s an identity that speaks for people and brings them individualism and a form of self-expression.

I must mention Abaya Designers has brought a global emphasis to abayas through their promising quality and marketing. The stereotype associated with abayas is now diminishing to a much greater extent and I am glad to see how women own their abayas and walk like a queen on the face of the earth.

I enjoy wearing abayas because they are a part of my identity. Colorful, beautiful abayas are what make me happy and thus, I will always wear the most distinctive designs.

I see abaya as a masterpiece that could be styled better if the small details are taken care of.

I try to choose nice outfits under my Abaya to make myself more confident. I pair my abaya with some classy shoes, a bag, and accessories. Abaya looks ten times better with a good watch and delicate rings; hence, I always create a lookout of it.

4. Sprinkle 3g brown sugar over the milk and caramelize it using a blow torch.

Yes, you read that right! Since the hospitality industry in the Middle East has been hit hardest with the Pandemic, Alwadi Doha has been seeing almost full capacity, even in the apparent low season.

Located in the heart of Doha Msheireb downtown district facing Souq Waqif, Alwadi Doha is a 5-star boutique hotel equally rooted in tradition and progression Qatari and global cultures. Due to its accessible locations, the hotel caters to its business tourists and travel enthusiasts to the nearby attractions and has five restaurants and stunning interior art –thanks to the hotel’s outstanding management providing satisfaction on all corners.

Earlier in 2020, I visited the hotel before COVID-19 struck. Since then, I have found a huge shift, and many things have changed. The only thing that remained is the multitude of travelers and staycation enthusiasts.

Curious to know about the successful post-COVID operations and keeping the sales throughout, I sat down with the Alwadi Doha Hotel’s General Manager, Hani Akkari, and discussed his winning strategies, plans for the upcoming future, FIFA World CUP 2022, and what he has been doing to ensure the safety of his business and employees this year.

How Alwadi Doha battled COVID-19?

This unprecedented situation created many unknowns, especially regarding the re-opening and continuation of operations per usual. That being said, we needed to remain positive as we continued to learn and adjust to the current situation.

This experience has proved that our hotel and our Dream Makers can handle more than we ever thought possible. When our facilities began to re-open and return to their lively capacities, we ensure to bring along all of the insight, knowledge, and resilience you have gained throughout this experience as you move forward in your operations.

Being the General Manager, how has the rhythm or routine of your day changed post-Covid?

Like many under this crisis, I had to be alerted, concerned and at the same time, I felt motivated and optimistic about the opportunities and challenges we faced.

Covid-19 has upended all the usual routines in our lives and work.

However, one important thing this pandemic has taught us not to take anything for granted - both personally and professionally. I find myself most curious about the long-term effects that Covid-19 will have on our lives.

Have strategies changed because of the Coronavirus?

Have you noticed any change in consumer habits?

The COVID-19 pandemic has affected virtually all aspects of our lives. Some developments have been sudden and involuntary, such as social distancing, wearing masks, stopping public transport, and travel restrictions. We had taken serious steps to mitigate risks and maintain our hotel operation and business base.

What are some of the biggest challenges that you are facing to improve the guest experience today?

Guest experience is one of the most critical factors affecting positive customer behavior, such as loyalty and personal recommendation. In the hospitality industry, customer satisfaction can provide hotels with significant competitive advantages, directly leading to increase in profitability and growth.

You have always cultivated a kind of modesty –both personally and regarding the group – is this your strength and the strategy to build organic growth?

In these times, it is essential to motivate, step back, and trust others. It is less about the virtue of modesty but more about the ability to recognize that my team, “Heartists”, would follow through with their responsibilities. In my career so far, I can say with confidence we achieve and earn much more by getting others to work effectively rather than any level of individual ability.

Being an Eco-certified brand and an active member of Qatar Green Building Council, what initiatives have Alwadi Doha has taken to upgrade the environmentfriendly practice, especially for the year 2022?

At Alwadi Doha, we are committed to following environmentfriendly practices in everything. While being a chief supporter of Qatar’s sustainability goals and being a strong ally of the Qatar National Vision 2030 –we take it as our fundamental responsibility to bring and follow the latest environment-friendly hospitality practice.

That’s why we maintain the same values at Msheireb Downtown Doha and thus, have become the world’s first sustainable downtown regeneration project.

Additional protocols, health and safety precautions have been implemented following our international hygiene/safety program ALLSAFE and the local measures through Qatar Clean certifications.

With the FIFA World Cup 2022, Qatar Tourism continues its mission to turn the country into a worldclass destination. How Alwadi Doha is contributing to making Doha a mega Gulf metropolis and transit hub of the region?

Qatar has allocated a massive amount on infrastructure projects ahead of the 2022 FIFA World Cup, and expects to see a steady increase in tourist numbers in the run-up to the event.

At Alwadi Doha, we aligned our marketing plan with the country’s tourism strategy to make sure we maximize our fair market share and be a major and solid player in a booming market in 2022.

“Plan ahead! Make sure all the elements necessary are in place before beginning anything. In the kitchen, this is called mise en place.” James spilled the beans.

Reaching new highs starts with pure inspiration and getting influenced, so we asked James about his.

“I entered the industry almost by accident. I got a summer job at a restaurant that my school friends were working at and was immediately captivated by the fast pace and intense environment.”

James told us.

Besides the early Anthony Bourdain books and cooking programs, James is highly influenced by some finest chefs like Chef Satish Yeramili, Shannon Bennett, and Alex Chen to excel in the culinary field.

Since Arabic food is simply love, we asked James about the most underrated Arabic food right now.

“Haven’t been exposed to all the wide variety of Arabic cuisine, for now, I’d say Kabsa, it’s delicious!”

Working during Pandemic?

Pandemic, quarantines, and lockdowns have badly affected the culinary industry. We asked James how he copes up with the restrictions.

“The lockdown restrictions have been challenging for everyone.” James continued.

About the Menu?

Crafting the menu is the most important consideration of a professional chef. We asked how James do it right. Well, he’s more into considering the seasonal availability and the overall direction of the menu along with the personal preferences. However, product quality is his single most important consideration.

“The service industry as a whole has struggled as we have been unable to welcome guests into our restaurants and hotels at levels we were used to pre-Covid. We are very happy that we have recently been able to begin doing so again.”

The signature cooking style of James Warnica is very simple!

“I like to choose high quality products and showcase them,” James told us.

Favorite five ingredients? We asked.

“I don’t know that I could pick five!” He replied.

“At home, I love tougher meat cuts such as lamb shank or beef cheeks that if prepared properly are absolutely delicious. Some fresh “ike jime” style fish, heirloom tomatoes, peas, and carrots fresh from the ground are some of my favorites.” James told us his favorites.

“It’s absolutely important to have a good relationship with your team that’s based on mutual respect,” James revealed.

“I cannot accomplish anything without them. I am very fortunate to have an extremely talented and strong team here in Doha.”

Talking the Latest Trends What trends are you seeing in dining out today, and which are you most excited by?

James answered this amiably. He is really excited to experience the transformed emphasis on local products. The newly created dairy industry of Qatar and growing more local produce is the most agitated new trend in the Qatari culinary industry that is making a stir.

The last question made us excited, even before we asked it. Will any of the dishes you discovered be making their way onto your restaurant menus?

However, James didn’t open up about it. “Time will tell! You will have to visit us at the New York Steakhouse in the Marriott marquis Doha to find out.”

s i cast my eye over the picturesque landscape of doha, my eyes

sparkle with the glint of the ritz carlton hotel that stands tall holding several outstanding venues and the modern steakhouse and lounge stk-doha is amongst them.

But then again, I was glancing in the midday sun on the 23rd floor of The Ritz-Carlton, Doha one fine Saturday lunchtime as the golden rays shine over the sophisticated building and bouncing over everything including my sparkling water.

I was here with my friends to enjoy the Saturday Roast –the famous menu that is taking a hype around the Doha suburbs. This special

weekend menu is a collaboration of brisket and USDA Prime rib eye roast served in Yorkshire pudding, roasted veggies, STK sauces, completed with lip-smacking desserts.

The combination seems to be keeping the duo almost everything roasted, braised, and baked and been eminent as all the tables were taken, and booking in advance is thus essential.

For a quick recall, STK-Doha is a luxury steakhouse and modern lounge curated by executive chefs. The brand takes inspiration from western food and creates its own unique menu according to the local taste. The iconic Ritz-Carlton, Doha is renowned for its outstanding breakfast, brunch, drinks, and Afternoon Tea menu served in the most stylish of surroundings.

We were seated in a comfortable area before starting our late morning, the only way we know –with a fine cup of coffee.

The high ceilinged lounge is alive with the happy chirps of conversation from people enjoying the weekend after a hectic workweek.

After refueling ourselves with the muchneeded coffee, we ordered the complete Saturday Roast menu to get a true feel.

Well, that sure sounds like a better excuse anyway than just feeling excited at the affluence of available options.

As the menu has two options for the main course, we ordered both out of curiosity and our excitement, to say the least.

The order came on time, the wait was worth every minute as the staff served everything hot and properly plated. I had several roast menu before, served in fancy platters, but the way STK-Doha is serving their Saturday Roast is just outclass. I just can’t wait to admire the exclusivity shown in the serving style. Ten on ten from my side!

The Main Course –Roasted Brisket and Ribeye As the main course consists of the brisket and USDA prime Ribeye, so let’s talk about them first.

For me, a giant roasted brisket is basically the best way to show love to your friends and family through a dish.

It was a beautifully tender piece of roasted meat that was perfectly done and well-roasted. The seasoning was generous to perfection. This was literally that ‘comfort food’ we all craved for.

isn’t cracked, over, or undercooked.

The cheesecake here was baked with perfection, plated beautifully, and tasted awesome!

The second dessert was the warm chocolate chip cookie –a timeless classic and an unparalleled favorite! It was extra soft and thick.

On the other hand, the USDA prime ribeye was also bursting with flavors due to its tenderness and juicy texture. It was one high-quality standing rib roast. This beauty was served with savory Yorkshire pudding. Made from the same batter as popovers poured into cups. The chef here knew the key to a good Yorkshire pudding that is served immediately out of the oven and puffed it up really nice.

My verdict: The mains were definitely the showstoppers for the weekend.

Absolutely fantastic!

So, here’s my take on the Saturday Roast by the STK-Doha. The roasts were incredibly tender and perfectly cooked to nice well-done and without any overdrying. The meat was juicy and full of flavors. The savors of greens were rich and the serving was good enough to fill you up. The ambiance was absolutely weekend vibrant with the friendly staff to host us.

If you want to make the most of your weekend midday hours then you must try the STK Doha’s new wholesome Saturday Roast menu. I bet I could eat them for days!

The Hearty Siders The greens were just as good!

The STK-Doha got it absolutely right. The roasted baby potatoes practically melted in my mouth, and the seasonal greens were flavored to absolute perfection.

Mac and cheese truffle has all the essential flavors. Also, the serving was huge, it was a generous starter.

And I’d go back to STK-Doha just to have them again.

The Delightful Desserts After having all the roasted goodness, we were served with a creamy, gorgeous, crack-free slice of New York cheesecake. Truth be told here, the New York’s take on cheesecake isn’t that easy as it seems to be. Only the experienced chef can make it to this perfection where it

he Pandemic has forced the world to slow down, however, due to prolonged periods of time spent at home during the Covid 19 lockdown restrictions, many of us want to go on holidays in 2021 more than ever before. People from around the world want to travel to countries which are low risk, have easy travel restrictions, and flexible cancellation policies. Turkey was one of those first countries in 2021 which started easing its travel restrictions as early as in April. Moreover, Turkey also scrapped off it’s nighttime and Sunday curfew in July and reopened the country completely in July which made it accessible to the world.

Duden Waterfalls Duden Waterfall has two branches; Upper Duden and Lower Duden.

Upper Duden is approximately 8 km from the Antalya City Center and has a height of about 22 meters.

Whereas, Lower Duden is near Lara and flows from the cliffs at 50 meters and falls into the Mediterranean Sea. This scenic view is the most common tourist attraction.

This latest design and engineering masterpiece from the Prancing Horse is the perfect evolution of the Ferrari Portofino. Sportier in character than its predecessor, it also delivers superior handling whilst not only maintaining but enhancing on-board comfort, courtesy of specific new optional features, such as ADAS, and ventilated and heated seats. The Ferrari Portofino M thus retains its predecessor’s twin soul and is the only car on the market that can rightfully be described as an authentic coupé with its top closed and a genuine spider when it is open. This is thanks, of course, to the Retractable Hard Top (RHT), the signature feature of all the Prancing Horse’s convertibles.

The Ferrari Portofino M’s 3855cc engine belongs to the V8 turbo family voted “International Engine of the Year” on four consecutive occasions (2016-2019). The power unit can punch out 620 cv at 7,500 rpm, 20 cv more than the Ferrari Portofino.

To achieve these performance levels, the Ferrari engineers used new cam profiles to increase valve lift and optimise combustion chamber filling.

The 8-speed gearbox is a completely new unit compared to the previous 7-speed version and is based on a dual-clutch oil bath architecture. It differs from the SF90 Stradale’s 8-speed transmission in its longer gear ratios and the introduction of a mechanical reverse gear. The new layout and integration of its components have also optimised the gearbox’s size and its installation in the car.

By tradition, every single Ferrari engine has its own particular soundtrack that makes it unique. The Ferrari Portofino M is no exception. In addition to the flat-plane crankshaft, the geometry of the entire exhaust line is new. The two rear silencers have been eliminated (which in addition to boosting sound also significantly reduces backpressure in the tailpipes) and the by-pass valves are now oval in shape to enhance the exhaust sound. Both solutions significantly reduce exhaust backpressure and improve sound quality. The last notable modification is “proportional” bypass valve control, which is continuous and progressive depending on the driving situation.

The Portofino M’s compact dimensions also make it ideal for all occasions. In fact, its unparalleled versatility and on-board comfort turn every trip into a voyage of (re) discovery.

Like all the other turbo cars in the range and in line with the “zero turbo lag” concept, the Ferrari Portofino M delivers instantaneous throttle response throughout the rev range. The car boasts Variable Boost Management, a control software developed by Ferrari that adjusts torque delivery to suit the gear selected. The result is increasingly powerful pick-up as revs rise. As the car goes up through the gears (from 3rd to 8th), the amount of torque delivered by the engine increases all the way up to 760 Nm in 7th and 8th gear.
