По плану их количество скоро на одну увеличится, если будет сдана в эксплуатацию строящаяся на глубине 20 метров под водой гостиница Hydropolist. Под 20-и метровой толщей воды будут располагаться исследовательский центр, конференц-залы, бары и кинотеатр. По планам в гостинице будет построено 220 апартаментов, стоимость одного из них за 1 ночь 400 000 евро. С первых минут пребывания в ней удовольствие гарантировано, обещают дизайнеры. Гостиница будет открыта и для посетителей. В определенное время любопытствующие туристы смогут опуститься в подводный мир.

The most expensive Vacheron Constantin luxury watch of all time was prepared for the Swiss company’s 250. anniversary, its name is „Tour de l’Ile”, that went off on a Geneva auction in 2005 – on 1,2 Million Euro downbeat prices. . Vacheron Constantin luxury watches are also available in France. Lady Kalla, the type ornamented with diamonds, can be ordered for example, that costs converted 600 000 Euro. But may point out a piece in the showcase in the store, if the customer is not so patient, there are masterpieces for 400 000 Euro. Beside Patek Philip, Vacheron Constantin is the most elegant trademark in Europe with the largest prestige – and sure is the most expensive one.
UNBELEIVEABLE Underwater hoteL
The Middle East’s rapid development has already shocked the world, particularly the development of the United Arab Emirates, where a lot of special luxury hotel miracle was born till now already. According to the plans the number of it may increase soon with an additional one after the Hydropolis is conveyed, that is being built 20 metres under the water. Under the twenty metre water-layers, there will be a hotel research centre, conference rooms, bars and a cinema, too. 220 suites are being built in the hotel according to the plans, one single night costs 400 000 Euro. The experience is guaranteed in the first minutes, the designers promise it. The hotel will be open also for the interested ones, bystanders may make a travel in the world under the water in certain periods.

Стоимость ее 319 800 английских фонтов. Машины изготовляются по индивидуальному заказу для очень богатых людей и фирм. Последний большой заказ был сделан Гонконгским отелем The Penninsula из английского Goodwood на покупку 14 машин, окрашенных в зеленый цвет. Автомобиль оснащен 12 цилиндровым двигателем, изготовленным заводом BMW, обладает объемом 6749 см3, с непосредственным впрыскиванием топлива. Технические данные: 453 л.с., максимальная скорость 250 км/час, ускорение до 100 км/час за 5,9 сек. Особенность автомобиля в том, что задние двери открываются вперед, т.е. в другую сторону по сравнению с другими машинами. В 2009 году заводом было продано 1212 люксовых машин.

The engine is 12 V, 453 horse power, the maximum speed is 250 km/h, it speeds up to 100 km/h in 5,9 sec. The doors in the back are opening on a different way. The F1 field of Monaco, as floating yacht
Expensive toy for super rich people: the F1 field of Monaco inspired the designers of that luxury yacht, onto which Roman Abramovics’s purchase offer is waited now. No wonder, since 665 million English pounds, are asked for it! The luxury yacht outside and inside looks like the grand duke’s Grand Prix racecourse! Already its name – Streets of Monaco, – shows what kind of customers the English designing office, Yacht Island Design, counts on. On the four lidded floating miracle the miniature likeness of the Casino de Monte Carlo received place, likewise the Hotel de Paris, the Tabac Bar, the Loews Hotel, or the Rascasse curve. On the board, beside the sunbathing place there is also a barbecue section. The board tennis court, the heliport, the swimming pool and the jacuzzi are suit accessories on this level. The Streets of Monaco has also a separate docking part in order for the guests, coming to its board, to be able to chain their yachts to it. The largest speciality of the luxury cruiser is a gokart course, that is the precise copy of the Monte Carlo racecourse, even the tunnel was built into it! The Streets of Monaco is able to welcome 16 guests at a time, with 70 head attendants. Its length is just a little bit behind the Eclipse, the yacht of Roman Abramovics. Ещё королева Англии и английские аристократы полюбили замечательный – особенно по сравнению с туманным Альбионом – климат Ниццы и окрестностей. С тех пор в Ниццу круглый год приезжают богатые туристы. Сюда, в замок ценой 40 мил евро, переселились и Анджелина Джоли с Брэдом Питтом. Замечательное место они выбрали, как и Абрамович со своей молодой подругой, которые недавно за 280 мил евро купили великолепный замок с видом на море и огромным парком, за которым ухаживают пятьдесят садовников. Особенность Лазурного Берега в том, что здесь на таких курортах класса «люкс», как Канны, Монако, Сен-Тропе, Антиб предоставляется возможность наблюдать за роскошным и кичливым миром супербогачей, что довольно занятно. Здесь чистое голубое море и хорошо обустроенные пляжи. Возле берега сравнительно неглубоко, вода хорошо прогревается, но, конечно, никогда не бывает такой тёплой, как на южных средиземноморских курортах. Лазурный Берег – это 180-километровая береговая полоса от городка Кассис, что в 20 километрах от Марселя, до Ментона на итальянской границе. Выше Ментона находятся самые фешенебельные города: Монте-Карло, Ницца, Антиб, Жуан-ле- Пен, Сен-Тропе .

The French Riviera has never been out of fashion since the middle of the 19th century. It was the British led by Queen Victoria who discovered the mild and, compared to foggy England, splendid climate of Nice and its environs. Since then the Riviera has been flooded by rich tourists in almost every season. Brad Pitt and Angelina Jolie have also moved to their mansion here worth 40 million euro. And they are right, just like Abramovich, who together with his young girlfriend has also recently bought a magnificence palace overlooking the sea and worth 280 million euro. It is surrounded by an estate that requires the employment of 50 gardeners. A unique feature of the Côte d’Azur is that you can witness the exhibitionist elitism and splendour of members of the upper and upper middles classes in luxury places such as Cannes, Monaco, St. Tropez and Antibes, all of which is entertaining. The sea is clean and beautifully blue, with well developed beaches. The water is relatively shallow so it warms up quickly, but it doesn’t reach the temperature of the water in south Mediterranean resorts. The Côte d’Azur (azure coast) comprises a 180-kilometre-long coastline essentially between the small town of Cassis, 20 kms from Marseille, and Menton (the Italian border). If heading from Menton the top cities are Monte Carlo, Nice, Antibes Juan-les-Pins and St. Tropez.

Пляжи Лазурного Берега растянулись на сорок километров: вы можете отдохнуть и на песочном берегу в небольшой бухте, и на пляже с мелкой галькой в большом заливе. Выбирая место для отдыха, не следует забывать, что на восточном побережье Ривьеры от Ментона до Антиба пляжи преимущественно с галькой (за исключением пляжа в Каннах), от Жуан-ле-Пена до Теульсюр- Мера протянулись песочные пляжи. Большинство пляжей бесплатные, но есть и 150 частных владений с шикарными виллами. Любителям спокойного тихого отдыха следует обратить внимание на уединенные пляжи Ривьеры в Кап Мартене, находящиеся недалеко от летнего домика La Cabanon всемирно известного архитектора Корбюзье или от городка Эз. Жители Сен-Жан -Кап-Ферра, Болье-сюр-Мер, Кап-д’Ай и Вильфранш-сюр-Мер бережно относятся к своим небольшим пляжам. Там стоит сесть в каяк, немного отгрести от берега и познакомиться с морской флорой и фауной. Самые типичные пляжи Ниццы находятся рядом с набережной Роба Капё: Le Castel и Beau Rivage. Чуть дальше находится самый современный и модный пляж La Hi-Beach с архитектурным комплексом для семейных пар. В Кап д’Антибе вдоль пляжей выстроились красивые дома, а курорт Жуан-ле -Пен утопает в сосновых лесах. Здесь зимой и летом бурлит жизнь, и всегда есть возможность сделать покупки. Почти 50 лет подряд здесь устраивают всемирно известный большой Европейский джазовый фестиваль. В Каннах рядом с такими известными отелями, как Carlton, Majestic и Martinez находятся частные пляжи, где во время Каннского кинофестиваля проводятся пышные приёмы. По побережью у Леринских островов замечательно гулять как летом, так и зимой. На острове Сент-Маргерит находится интересный архитектурный памятник – тюрьма-укрепление Fort Royal, а на острове Сент-Онора – аббатство католического ордена цистерцианцев.
Давайте начнем наше воображаемое путешествие в Ментоне. Здесь нам обязательно нужно подняться вверх до крепостной стены, протянувшейся вдоль гавани, откуда открывается потрясающий вид на город и окружающие его горы. В Ментоне очень много достопримечательностей и магазинов с лучшим соотношением цена – качество. На пешеходной туристической улице очень широкий выбор товаров, особенно что касается одежды
It is worth booking accommodation at a reasonable price in a small village and setting off from there to tour the region. If possible it should be done by train rather than road since parking fees are horrific – parking in Nice for a day costs 30 euros. Good weather is almost guaranteed in the summer and the autumn is also pleasantly warm, yet it is usually wet in spring and surprisingly cold in winter. Even snow has not been rare in recent years.
The 40-kilometre-long beach of the Côte d’Azur is varied so you can choose from among sandy or pebbly beaches with round fine pebbles and small inlets or quite large bays. It is worth knowing that beaches are pebbly on the eastern side of the Riviera, from Menton to Antibes, except for at Cannes. Sandy beaches stretch from Juan-les-Pins to Théoule Sur Mer. The majority of the beaches are free although there are 150 private ones, some of which are part of truly luxurious establishments. There are off-the-beaten-track beaches at Roquebrune Cap Martin for those who want tranquillity and relaxation. They are situated near Cabanon du Corbusier or Éze – the residents take good care of the small beaches of Saint Jean Cap Ferrat, Beaulieu sur Mer, Cap d’Ail and Villefranche sur Mer. It’s a good idea to take a kayak out to sea and discover the marine fauna and flora. The most characteristic beaches of Nice can be found on Roba Capeu: Le Castel or Beau Rivage. A bit farther off is La Hi-Beach, the most modern, playful and fashionable, which has an up-to-date family section. The beaches of Cap d’Antibes are lined by beautiful houses. Along Juan-les-Pins the magnificent pine forests are fascinating. Here there is a real spa, too, where life never stops be it daytime or night, and there is always an opportunity for shopping. For nearly 50 years it has had a great European Jazz Festival which is internationally noted. The famous private beach areas of Cannes where the best evenings of the Cannes Film Festival are held can be found opposite the noted hotels such as the Carlton, the Martinez and the Majestic. The coast of Les Îles de Lérins attracts walkers, even in winter. Discover the Fort Royal where the Man in the Iron Mask was imprisoned on the Island of Sainte Marguerite, and the monastery Monastère des moines Cistertiens on the island of Saint Honorat. Let’s begin our imaginary excursion in Menton. Walking up to the castle wall along the harbour is a must because on reaching the end there is a captivating view of the town and the neighbouring mountains. town-centre shops, it’s worth trying and even buying a couple of bottles of this lemony liqueur because it is delicious. The Musée des Beaux Arts, the Museum of Fine Arts, is situated in a magnificent 17th-century palace. The Salle des Mariages, the registry office at 17 Rue de la République, is also highly recommended as its fescos were painted by Jean Cocteau. The Jean Cocteau Museum in a bastion of the old port is also a must. The La Côté Sud Restaurant can be found on the coastal road by the Italian border towards the Porte de France-Vieux Port (old port). It can be reached on foot from the pedestrian street, still you have to go as far as the seaside and it is the first restaurant from the corner. This is Menton’s best restaurant. Everything is excellent, though the octopus is most delicious and so is the mussel soup. The best wine to order is Bandol. Bandol is a wine growing area to the west of Antibes. ■

Saint-Paul-de-Vence is one of the oldest medieval towns, close to Nice ont he hillside. It is well known for its modern and contemporary art museums and galleries. Saint-Paul de Vence has long been a haven of the famous. During the 1960s, it was frequented by French actors Yves Montand, Simone Signoret and Lino Ventura, and poet Jacques Prévert. Saint-Paul is also well known for the artists who have lived there, such as Marc Chagall. Every block of stone in Saint-Paul has a story to tell: great families shaped the village, such as the Alziarys and the Bernardis. The walls, the ramparts, the houses and the towers have plenty to say about the village’s rich past. Visit the Folon chapel to discover the marvellous work of Belgian artist, Folon. His mosaics, stained glass windows, sculptures and paintings adorn the chapel’s walls and vaulted ceiling. Saint-Paul de Vence is an inspiration. The village and the bear traces of art produced here by Soutine, Léger, Chagall and Calder. Other creators, such as Jacques Prévert and James Baldwin, wrote their finest texts here. Frederik Widenfels, the owner of the restaurant is a wine expert. He and his wife, Nathalie Varga are running a fine dining restaurant which is famous around Provence for breakfast, lunch and dinner as well, because of it’s gourmet food. The Jet Set magazine staff had a dinner in this restaurant to taste the food and be able to give detailed information about the restaurant. Frederik used to work before in Saint Tropez and New York and because of this fact has great experiences in gastronomy and wines. Anybody can get advices from himself what to eat and what to drink, he knows well the matching food and wines. The Chef the couisen is Stéphanie Marie, who strated to work for the restaurant at 2006. Her creativity is famous, her plates are harmonic, she is making premium category food, all her product are gastronomic dreams. La Tilleulban opens at 8 am and serves breakfast untill 11 am. The lunch is from noon to 15 am and thwe dinner is from 7.30 pm untill 10.30 pm. The prices are solid, for 38 euro you can have a light menu. On the a la carte you can find big variety of courses, mediterranean, provencal, international, you can have fine sea food plates as well. ■

The Cannes International Film Festival is an annual film festival previewing the latest in cinema from all genres from around the world. Founded in 1946, it is the world’s most prestigious and publicized film festival with admission by ’invitation only’. Held usually around May at the Palais des Festivals et des Congrès it is known to showcase documentaries as well. The President of the Jury is the Italian film director Jane Campion. The 67th edition of the festival will be held from May 14-25, 2014. The film must have been produced during the twelve months preceding the festival and its distribution must be limited to the country of origin. The film should not have had an international premiere and must not have been showed on the internet. Subtitles will be required if the film is not in French or English languages. The festival recognizes a film as a short film if it is less than 15 minutes in duration (including credits) and a film as feature film if it is more than 60 minutes in duration. The first Cannes Film Festival was organised from the 1st to 20th September 1939. Louis Lumiere, inventor of film and first President of the Cannes Festival arrived at cannes railway station at the beginning of September, but Europe, day by day, was slipping into war. The event was cancelled and only takes place in 1946 once peace has returned. In 1951 the festival changes date to May. Running for over 65 years, it is the most important Film Market in the world and most glamorous showcase for international cinema. Cannes International Film Festival is arguably the film event with the greatest media coverage in the world. So great is its renown that Cannes itself has become synonymous with film. Simply stroll through the streets of the small city - awarded World Village status - even though it has just 75 000 inhabitants (compared with 450 000 in Nice!) and its film connections are in evidence everywhere. Thanks in part to its Festival, Cannes has shot to planetary fame. The grand hotels on La Croisette have delighted photographers since the early days of the Festival. golf course in an idyllic setting between the sea and the mountains! The golf course, located in La Turbie (in the heights of Nice), has a rolling terrain that requires extreme precision. Discover an elegant club in a warm and friendly ambience! Green fees. Weekdays 130 euro, week-ends 160 euro. The course itselfs is very hilly, with some radical changes in elevation, posing a few challenging blind shots. The rolling fairways tend to be narrow at times, asking for accuracy. The greens are fast and true. The long gradual climb to the clubhouse, begins as early as the 15th, but the entire way provides brilliant sea and mountain views, to offset the fatigue on this last stretch. Sanremo golf. From the 1930’s a new treasure was realized in Sanremo: an 18 hole golf course built on the hills overlooking the town among the val Gogna olive groves. Golfing at the 18 hole Circolo Golf degli Ulivi that is only 5 km away from Royal Hotel Sanremo. Golf Club is a 18 hole course, par 69, covering 5203 metres. Course rating: 68.7 (men) – 71.0 (ladies). This course is not too long yet challenging with narrow, pretty gentle holes. Here precision is definitely more important than power. Golf Club Sanremo has hosted important events, including the Master in the 1980s, the European Senior Tour in 2004 and the Italian PGA Championship in 2005, 2006 and 2007. When describing the Golf degli Ulivi course, we would start by saying that a round of golf on this course can be very enjoyable. A par 69 course not overly long, with most par 4’s easily reached with two shots. Hole 8, a 385 mt par 4 with dog leg to the left. Difficulty index no. 1 mostly because of its length. Monaco Grand Prix
The Monaco Grand Prix is a Formula 1 motor race held each year on the Circuit de Monaco. Run since 1929, it is widely considered to be one of the most important and prestigious automobile races in the world, alongside the Indianapolis 500, and the 24 Hours of Le Mans. The circuit has been called „an exceptional location of glamour and prestige.” The race is held on a narrow course laid out in the streets of Monaco, with many elevation changes and tight corners as well as a tunnel, making it one of the most demanding tracks in Formula 1. In spite of the relatively low average speeds, it is a dangerous place to race. It is the only Grand Prix that does not adhere to the FIA’s mandated 305 kilometres minimum race distance. The Circuit de Monaco consists of the city streets of Monte Carlo and La Condamine, which includes the famous harbour. It is unique in having been held on the same circuit every time it has been run over such a long period.

The race circuit has many elevation changes, tight corners and a narrow course that makes it one of the most demanding tracks in Formula 1 racing. As of 2010, two drivers have crashed and ended up in the harbour, the most famous being Alberto Ascari in1955. Despite the fact that the course has had minor changes several times during its history, it is still considered the ultimate test of driving skills in Formula 1, and if it were not already an existing Grand Prix, it would not be permitted to be added to the schedule for safety reasons. Triple Formula 1 champion, Nelson Piquet was fond of saying that racing at Monaco was „like trying to cycle round your living room”, but added that „a win here was worth two anywhere else”. Notably, the course includes a tunnel. The contrast of daylight and gloom when entering/exiting the tunnel presents „challenges not faced elsewhere”, as the drivers have to „adjust their vision as they emerge from the tunnel at the fastest point of the track and brake for the chicane in the daylight.”. The fastest-ever lap was set by Kimi Räikkönen in qualifying for the 2006 Grand Prix, at 1m 13.532 sec. During the Grand Prix weekend spectators crowd around the Monaco Circuit. There are a number of temporary grandstands built around the circuit, mostly around the harbour area. The rich and famous arrive on their boats and the yachts in the harbour fill with spectators. Balconies around Monaco become viewing areas for the race too. Many hotels and residents cashing in on the birds eye views of the race. Grand Prix organizers Automobile Club de Monaco officially voted the Ermanno Palace Penthouse the ‘Best view of the Monaco Grand Prix’. In 2013 Nico Rosberg (Mercedes), in 2012 Mark Webber (Red BullRenault), in 2011 Sebastien Vettel (Red Bull-Renault) won the Monaco GP. The best driver of the Monaco GP was untill this time Ayrton Senna, who won 6 times the Monaco GP between 1987 and 1993. Graham Hill and Michael Schumacher has 5-5 trophies. Among the constructors the McLaren is the best with 15 winnings. In July 2010 Bernie Ecclestone announced that a 10-year deal had been reached with the race organisers, keeping the race on the calendar until at least 2020. ■

Of course there is much more to Monaco at this time than the just the Grand Prix with fabolous parties, and busy restaurants gets very hectic on Saturday evening, so what ever you do don’t try to drive anywhere, it’s impossible! If you want to eat really well and avoid the crush, I suggest you drive up into the mountains to villages like Éze, where you will find peace, quiet and extraordinary food. From Monaco my son Nicholas and I always drive to Modena, Maranello and Bologna to drive latest supercars. Of course things don’t always work out quite as planned, last year encountered an unexpected May snowstorm during our test of the Ferrari F12 and Lamborghini Aventador. These trips have also included Ferrari’s legendary test track at Fiorano. What a fantastic experience seeing. Fernando Alonso testing the new LaFerrari, a truly stunning automobile.
I know Jet Set’s readers are successful, wealthy people but if you find that some of the prices just a little too silly I suggest a trip to the Carrefour supermarket where the locals go to pick up your smoked salmon, caviar and Dom Perignon for a fraction of what they would charge you elsewhere during the Grand Prix. Of course, if you prefer your South of France quiet I recommend Bandol - where the French go. Beautiful beaches and even better rosé. Yacht Club for its US debut in 2012. We had gorgeous Golden Girls pouring it for F1 drivers like Vitaly Petrov,Sergio Perez, Niko Hulkenberg and more. Purdey guns have been recognized as the best in England since soon after the firm started out. These guns are simply the best. They are elegant, well-balanced and light in weight. The barrels are made with special, extra-strong steel, and each gun is precisiontuned and finished by a single master. Only walnut is used for the stock, and the wood is dried and matured by the firm for up to 15 years. Around 75 percent of the guns are made to order, and customers may have to wait more than two years. The firm only sells 60 or 70 guns per year, and it gives a 100year-guarantee for its work. Every gun is a collector’s piece and an investment. By buying one, you join an exclusive club, but also obtain a wonderful artefact with its own personality. ►– A friend of mine acquainted me with shotguns, and I grew so fond of them that I began to deal in them. I searched for these, restoring them and selling them through Christie’s and Sotheby’s auctions. My first really serious shotgun was a Purdey 12 that I bought for pennies in a small village in the Tatra Mountains. By tracing its factory number, we were able to determine that is was a guest gun once used by the Rothschild family. After long research, I found its pair, which I also bought for a ridiculous price. Later, I sold both of them for a huge profit. When I saw how great the shotgun trade was, I expressly acquired guns with calibres of 12, 20, and 28. These shotguns, decorated and with unique ornate designs, became very popular and sold at high prices. ■

The black tie shirt is white or cream, with a small folded collar. If „black tie” is written on our invitation, then on that social occasion for the men the black tie is an obligatory wear. In Europe in the 20’s Duke of Windsor introduced the black tie, which is known in America as tuxedo. Cut / Cutaway The cut is a perfect wear on the wedding and on emphasized official receptions. The front short, back long cut is actually the tailcoat wear of the daytime – between 11 a.m. and 4 p.m. – events. Traditionally striped trousers, grey waistcoat, collared shirt, silvergrey tie or black tie shirt and grey shirtfront suit the cut. The crown of this wear is the grey top-hat! In America and in England the cut and the shirtfront is the official wedding clothing for the groom and for men. Otherwise the shirtfront is a specially wide tie, which can be decorated with a tiepin. Dinner-Jacket The dinner jacket is a classical wear for daytime social occasions, elegant summer feasts or for cocktail parties. Actually we may regard it as the open-air variant of the black tie. Generally it is single-breasted with scarf collar. The dinner jacket means a cream jacket and a black black tie trousers, and its accessories are the black tie shirt, the bow-tie, and the waistcoat or the traditional wide spanish belt. IMPORTANT information: to the cut only the head waiters wear black bow-tie, so it is worthy to choose white or coloured bow-tie for social occasions! ■

Villány wine region
For wine lovers it is a must to travel to Hungary to the Villány wine region for special wine tour and tasting. Villány is one of Hungary’s most characteristic wine regions, its prestige being earned through centuries of winemaking traditions and its truly wonderful wines. Its soil – loess and clay topsoil on sea-based crusty limestone – is very suitable for striking, full-bodied red wines. The quality and characteristics of the wines are mostly conditioned by the location of the vineyards. The vineyards are protected from the north wind by the east-western site of the hills. The southern slopes get plenty of sunshine and therefore warm up easily. Here we enjoy the highest number of sunny hours in the whole country. The history of the Gundel dynasty equals the history of Hungarian gastronomy and catering - Tádé Alföldy explains. -The contemporaries of the founder were personalities such as Sacher, Ritz and Escoffier, who even today define gastronomy. Károly Gundel refined Hungarian cuisine and fused it with influences from the broadening world. Károly Gundel applied modern gastronomic technology with a brilliant sense and his pioneering work placed Hungary on the world’s gastronomic map. ►– His dishes also wrote gastronomic history - says Kálmán Kozma. – Just as the great Hungarian composers Kodály and Bartók collected Hungarian folk music from within the broad borders of historic Hungary, in the same way Gundel gathered food specialities. The dishes his restaurant offered included cabbage Kolozsvár style, crescent-shaped pastries à la Pozsony, cabbage potato dumplings as made in Upper Hungary and sponge cake in Somló style. The Gundel House was attended by noted Hungarian politicians, artists, writers and sportsmen. The restaurant’s chefs and Károly Gundel himself were delighted to create special dishes for famous people, which were then named after the guests. That was how egg à la Munkácsy, meat soup Újházi style, bean soup à la Jókai, Feszty’s beef steak and others were created. The Gundel House survived the storms of history, the two world wars, economic crises and the years of nationalisation. Following the 100th anniversary of its foundation, it proudly continues Károly Gundel’s best gastronomic traditions. ►– The new dishes created by Károly Gundel and his father János, such as Palóc soup, Veal in Pittsburgh style, Gundel stew, pancake à la Gundel and Somló sponge cake have become essential specialities of Hungarian cuisine - says Kálmán Kozma. - A restaurant respecting tradition, Gundel still offers them and often in the manner they used to be made, in line with the original recipes. Károly Gundel regarded it important to select his suppliers giving preference to domestic producers. The Gundel restaurant is still committed to this tradition, using primarily Hungarian ingredients and working with Hungarian suppliers. ►– A century after its opening the Gundel Restaurant is still operating in the same place and under the same name, and welcomes its guests with high-standard services faithfully following Károly ►–

Caviar – the symbol of luxury The world’s rarest and most expensive caviar is Iranian Almas-Diamond. One hundred grammes in a gold box costs 2000 US dollars.
Самая редкая и дорогая в мире икра – „Алмас” (иранская). Стоит она 2000 USD за 100 граммов.. С давних времён икра является символом роскоши в гастрономии. Известное ныне слово исходит от турецких торговцев, распространилось оно ещё в XVI веке с посредничеством итальянских и французских купцов. Первое письменное упоминание икры было в дневнике внука Чингис хана, оставившего печальные следы в венгерской истории - Бату хана. Сегодня в Каспийском море добывается 60% общего объёма реализованной икры в мире. Самые Крупные страны-производители - Иран и Россия. Из пятнадцати видов осетровых, живущих в Каспийском море, восемь - в опасной ситуации, из-за беспредельного рыболовства, а шесть видов под угрозой исчезновения. Чёрную икру добывают из осетровых рыб, также существует один вид красной икры, её добывают из лосося. Замечательная, благородная золотая икра, которая принадлежит белугеальбиносу, на сегодня почти полностью исчезла с рынка. Самая дорогая икра в мире — это желтые яйца белуги, 100 грамм из которых, в зависимости от размера и цвета икры, стоят 400 - 800 USD (самую дорогую в мире икру, иранскую „Алмас”, расфасовывают в баночки из чистого золота). Икра Осетра, Севрюги, Стерляди и Калуги намного меньше по размеру, чем у Белуги. Икру из Каспийского моря разделяют на 3 группы, из которых группа под номером 000 - бледно-серебряно-серого цвета, 00 - средне-серого цвета, а 0 - чёрного цвета. Чем светлее икра, тем она ценнее. Очищенную икру осторожно перемешивают вручную с солью, чтоб не повредить целостность яйца, затем консервируют.

In gastronomy caviar is the centuries-old symbol of luxury. The word caviar as known today was spread in the 16th century by French and Italian intermediaries and is based on the word khavyar used by Turkish traders. The first written mention of caviar was in the diary of Genghis Kahn’s grandson, Batu Khan, who left his mournful mark in Hungarian history. Today 60 per cent of the world’s caviar comes from the Caspian Sea, the two largest producers being Russia and Iran. Of the 15 types of sturgeon found in the Caspian Sea eight are endangered due to over-fishing, while six are in the process of dying out. Black caviar comes from sturgeon, the other type, red caviar, comes from salmon. Albino sturgeon gold caviar, formerly regarded as the finest, has almost completely disappeared from the market. Currently the most expensive sturgeon caviar is the large-roe Beluga. Depending on the size and colour of the eggs, 100 grammes costs from 400 to 800 USD. The world’s rarest and most expensive caviar is Iranian Almas-Diamond. One hundred grammes in a gold box costs 2000 USD. The Osetra, Sevruga, Sterlet, and Kaluga sturgeon have much smaller eggs than the Beluga. Caviar from the Caspian is divided into three groups, 000 pale silver-grey, 00 medium grey and 0 black. Lighter-coloured caviars are more highly valued and more expensive. Salt is used to preserve caviar. It is mixed by hand with the cleaned roe to stop them disintegrating. The price is influenced by how much salting has taken place. Malossol caviar is the slightly salted version, meaning that the salt content is only 3.5-5%. It is the most expensive. Caviars with 10-11% salt are cheaper. Since caviar can go off quickly, the whole process from catching the sturgeon to preparation and packaging should not take more than one hour. Furthermore, during processing it cannot be more than two degrees. Naturally, up to the moment of consumption the caviar should be kept in a fridge, and when eaten it should be accompanied by lemon, butter and chopped onions. Caviar is the most tasty when eaten with toast along with some champagne, but the more simple sparkling wine is also suitable. According to the Russian custom, real connoisseurs enjoy caviar along with well-chilled vodka. Using spoons made of gold, ivory or mother of pearl sea shell is recommended for caviar consumption. Aluminium or silver should be avoided since these metals easily generate a reaction in the caviar.

Самая вкусная закуска - тост с икрой и стаканчик шампанского, но можем подавать ее и с шипучим вином. По русскому обычаю, настоящие гурманы, закусывают водку икрой. К потреблению икры предлагаются сервировочные приборы из слоновой кости, золота или раковины. Серебро и алюминий нужно избегать, так как икра легко вступает в реакцию с металлами. Икра составляет 10-25 процентов от общего веса осетра. Только икра осетровых считается настоящей и самой признанной. Гурманами менее оценивается икра пинагора, карпа, сиговых, лососевых и других рыб, таким образом эти продукты намного дешевле. Икра веслоноса продается под названием „Американский Кавиар”, сельди - „Авруга”, тунца - „Боттарга”, из ильной рыбы добывают икру „Кайун”, а из лососевых - „красную икру”. Тарама - это оранжевая, мелкая икра карпа, а масаго - это икра мойвы. Икра морского пинагора, любящего холодные северные воды, очень популярная и чрезвычайно дешевая. Обычно этот продукт продаётся в продовольственных магазинах. Цвет икре придают посторонние красители, обычно чёрного и оранжевого цвета. Почти 1% добываемой икры в мире производится в Венгрии, в Петефи-Майоре (Petőfi-major). Это утверждение казалось бы невероятным. Дьёрдю Самфире (Dr. Számfira György), а в реализации этой мечты помог ему инженер-рыбовод Ласло Бешенеи (Besenyei László). Господин Бешенеи закончил Астраханский Университет Рыбного Хозяйства, а этот город считается родиной рыбоводства, в том числе и осетрины. Под его руководством на сегодня уже производят икру размером 2,5-3 мм, что является фантастическим успехом. Развод осетровых начался в 2004 году в четырнадцати бассейнах. В каждом бассейне водятся рыбы различного поколения, в последнем бассейне водятся осетры весом 10-15 кг. Таких рыбоводных заводов насчитывается максимум 30 в мире. Большинство их находится в Японии. На венгерском заводе в первую очередь разводят сибирский осётр, но встречаются и такие рыбы, как русский осётр, севрюга или белуга, которые обитают в Каспийском море и в дельте Волги. Самой дорогой в мире признана икра белуги, потом идёт севрюга, русский осётр и сибирский осётр. Весной 2010 года сибирский осетр уже дал икру в Петефи-Майоре, и к концу прошлого года её удалось получить опять. В кратчайшие сроки на заводе планируют производство 3,5-4 тонн икры, что составляет 1% добываемой икры в мире. В старые времена при русских царских дворах подача к столу золотой икры стерляди общепризнанно считалось торжеством кулинарии. И на самом деле икра стерляди-альбиноса золотисто-белого цвета. В Петефи-Майоре приступили к разведению и этих рыб, уже имеются два сибирских осетра и две стерляди-альбиноса. Икра этих рыб продаётся по цене золота, и попадает в меню только 6- и 7-звездочных отелей и в 3-х Мишленевских звёзд. ■

Caviar from lumpfish, spoonbill, whitefish species, salmon, carp, rainbow trout and other types of fish is not valued so highly by gourmets, hence the prices are lower. Spoonbill roe is known as American caviar, that of herring is Avruga. Bottarga is tuna roe, Cajun is bowfin roe, while Keta caviar is from the keta salmon. Red caviar is the roe of other salmon. Marena caviar comes from freshwater whitefish, Masago is the roe of capelin. Trout caviar is from the rainbow trout, and Tarama is the small orange-coloured roe of carp. The roe of lumpfish, which likes the cold, northern sea waters, is very popular and outstandingly cheap. It is generally sold in supermarkets. Its colour comes from dyeing and is either black or orange. Petőfi Farm in Hungary produces almost one per cent of the world’s caviar. That might seem unbelievable, but it’s true! Sturgeon are bred there on the outskirts of Vésztő in Békés County. Black caviar is made from the roe of the female fish with a value of between 2000 and 6000 USD per kilo. Dr. György Számfira, a lawyer in Békéscsaba had the idea and brought it to life with the help of fish specialist László Besenyei, who completed his studies in Astrakhan, Russia, at the Institute of Fisheries, the home of sturgeon breeding. Today under his direction caviar 2.5-3 mm in size is produced in Hungary and has enjoyed fantastic market success. The sturgeon breeding began in 2004 with 11 fish-rearing tanks. Each pool contains fish of different ages, the final one accommodating sturgeon weighing 10-15 kilos. At most there are 30 such sturgeon farms in the world, mainly in Japan. The Hungarian farm involves the breeding of Siberian sturgeon, but there are also Russian sturgeon, Sevruga sturgeon and Great sturgeon from the Caspian Sea and the Volga delta. The roe of Great sturgeon is the most expensive, followed by that of the Sevruga, Russian and Siberian sturgeon. Roe was obtained from Siberian sturgeon at the Petőfi Farm in spring 2010 and the second half of last year also saw some production. Production of 3.5-4 tonnes of caviar is planned within a strict deadline, which amounts to one per cent of the world’s output. In the past at the court of the Russian Tsars gold caviar from white sterlet, thus called due to its golden-white colour, was regarded as the height of gastronomic delight. This is also appearing at Petőfi Farm where already two albino Siberian sturgeon and white sterlets are being reared. The price of their caviar is unbelievably high. It can be found on the menus of only 6- and 7-star hotels, and restaurants with three Michelin-stars. ■
