Bethpage High School has been ranked on the U.S. News and World Report’s Best High Schools list. High schools are ranked on six factors: college readiness, reading and math proficiency, reading and math performance, underserved student performance, college curriculum breadth and graduation rates. Bethpage High School is one of 19 public Long Island schools that were among the nation’s 1,000 best, according to the report. In addition, while the six indicators that determined each school’s rank were the same as those used in the three prior years, U.S. News adjusted its calculation to account for the COVID-19 pandemic.
Social studies teacher Mr. Joseph Hartig, Connor Chaplin, Grant Goetzger, Saanvi Sharma, social studies teacher Kevin Kerley. LETTERS TO THE EDITOR Email: Editor@GCNews.com
Running for School Board
To the Editor: My name is Joe Lin, and I am seeking the community's support for Jericho Board of Education trustee. My wife, Nancy, and I have been Jericho residents since 2008. My son is a 6th grader at Jericho Middle School. I have served our community as a coach in soccer and basketball. My love and belief in the unrealized potential of our schools and our children is the reason I want to serve on our school board. If I am elected board member, I will work actively to achieve the following goals: • Ensure Jericho remains a top ranked school for years to come by creating a shared vision for the future of Jericho education. • Align our school budget towards the most effective programs and limit increases to the tax burden on our community. • Hold the school district accountable for all students fulfilling their highest potential whether your child is a differing needs child, accelerated, or anywhere in between. • Foster a healthy growth mindset culture in our school district by balancing achievement with wellbeing. • Challenge our school board and school district to focus on solutions for our children first and foremost. As a coach for my son’s VEX robotics team, I noticed other school districts had school-sponsored elementary and middle school teams at competitions. Jericho did not. With a 24-year career
in technology, I know the importance of science, technology, engineering, arts, and mathematics to all our children’s future. My background allows me to assist our schools in closing this gap and ensuring our schools stay at the top for years to come. Educating and mentoring children are not just campaign issues for me; it is fundamentally who I am. My mother was a teacher. My wife, Nancy, is an educational leader. I have taught art and served as a teacher for multiple Sunday schools. As a board member I will be laser focused on issues that ensure our children are balanced between wellbeing and performance. Voting for me is not only electing a highly qualified and ethical candidate, but also diversifying the school board in terms of experience, education, and background. For our children to keep their competitive advantage in the next decade and beyond, we need fresh ideas from new perspectives. With a bachelor's degree in Computer Engineering from the University of Michigan and an MBA from NYU, I combine business and technology with a wealth of experience in multiple industries. Join me at meet-and-greet opportunities or contact me at Joe4JerichoBOE@ gmail.com in the coming weeks to learn more about my vision for a solution focused school board. I’m here to listen to your concerns to make sure all voices are heard. I humbly ask for your vote.

Nassau County Legislator Arnold W. Drucker with Ari Yakuel.
Nassau County Legislator Arnold W. Drucker (D - Plainview) congratulated the winners of the Third Annual Judy Jacobs Essay Contest during a special ceremony at the Jericho Public Library on Thursday, April 14. Legislator Drucker awarded Nassau County Legislature Citations to contest winners Chrystal Zhou and Emilee Youn from the Robert Seaman Jeffrey Ratner Elementary School in Jericho (Toni-Marie Ukar’s fifth-grade class); Dhruv Maniam from George A. Jackson Elementary
School in Jericho (Andrea Aldorasi’s fifthgrade class) and Plainview-Old Bethpage Middle School student Ada Balkas. Ratner Elementary student Ari Yakuel earned a Certificate of Recognition from Legislator Drucker for his submission, which was chosen as an honorable mention. Open to fifth through eighth-grade students the 16th Legislative District, the contest was held in honor of Women’s History Month and in recognition of the late Nassau County Legislator and former Presiding Officer Judy Jacobs. In accor-
dance with this year’s theme of “Kindness is Leadership,” students described what it means to harness kindness as a principle of leadership and selected a person in their lives who they felt was the representation of a kind leader. Winners were selected from dozens of entries by Judy’s daughters, Jackie Jacobs Herschander and Linda JacobsGeller. “As we considered topics for our essay contest, the events of the last several years weighed pretty heavily on our minds and
our hearts,” Legislator Drucker said. “We reflected upon the amazing contributions women made each day to get us through the pandemic; to strengthen our communities, and to lead our nation at every level of government and the judiciary. We also witnessed the importance of kindness in leadership - something that Judy Jacobs embodied throughout her lifetime. That is why it was such a pleasure to congratulate the winners of this year’s contest for their heartfelt entries on such an important, thought-provoking topic.”

Held at the Farmingdale Athletic Complex on Saturday, May 21, the games will include a full-day of competitive track and field events for over 500 athletes supported by more than 300 coaches. These athletes — children and adults with intellectual disabilities — have dedicated months to training for an Olympic-style competition that will culminate with the contest during these Spring Games. “Special Olympics are an opportunity to showcase the hard work, dedication, talents, and tremendous athletic achievements of athletes, while also paving the way to eliminate social barriers and stereotypes differently-abled individuals face,” said Town Supervisor Joseph Saladino. “The Town of Oyster Bay is very proud to be a partner with Special Olympics New York and the Farmingdale School District in making this important event a reality. I hope you’ll join us in witnessing the joy, courage, and determination of these inspirational athletes.” “Special Olympics New York provides year-round sports training and athletic competition in a variety of
Olympic-style sports for children and adults with intellectual disabilities, providing them a continuing opportunity to develop physical fitness, demonstrate courage, make friends, and participate in a sharing of gifts, skills, and friendship with their families,” Diane Colonna, vice president, Downstate Operations Special Olympics, New York said. “We are honored that the Farmingdale School District will host our Spring Games and make a difference in the lives of these athletes.” The event will be held on Saturday, May 21, at the Farmingdale Athletic Complex at Howitt Middle School. For more information on how to get involved, visit the school’s website at www.farmingdaleschools.org. Smok Haus owner Manny Voumvourakis. BY GARY SIMEONE Garden City has become somewhat of a foodie’s destination over the last couple of years. Smok Haus, a casual restaurant and bar with authentic American BBQ, is one of the many great additions in the Village. The restaurant has garnered several awards over the years including “Best BBQ Restaurant” and “Best Foods” for 2022 in the chicken, wings and ribs categories. The awards were part of the 2022 “Bethpage Best on Long Island” awards. The restaurant is owned by Manny Voumvourakis, an MIT graduate and former Wall Street trader who decided to pursue his passion of authentic
American BBQ food. “I had this concept in my mind of opening a restaurant with a fast casual streamlined delivery and takeout menu with a dining in experience,” said the 52-year-old Voumvourakis. “I wanted my customers to experience traditional American barbecue with an assortment of regional street foods.” He said that he came up with the name Smok Haus because it was one of the first URLs available and that it was a simple name that incorporated what his business was all about. “We have some unique menu items like our pork belly porchetta and our brined smoked brisket as well our pastrami sandwich, which is our showcase item,” said Voumvourakis. He said that there weren’t too many places on Long Island known for their pastrami sandwiches, and was proud that it won best food category for 2022. “I think what I’m most proud of though is that we can be included in some of the wonderful restaurants here in the Village, and that we’re helping to put Garden City on the map as a food destination.” The restaurant, which opened in 2018, did not endure the extreme hardships that many restaurants faced during COVID-19 pandemic, and wasn’t forced to shut down its business as a result. “We were able to operate our fully streamlined takeout service and weren’t hit as hard as many of the the restaurant businesses were,” said Voumvourakis. Smok Haus is located at 7 12th Street, Garden City. www.smok-haus. com

Expeditionary Cruising Satisfies Desire for Discovery, Adventure BY KAREN RUBIN TRAVEL FEATURES SYNDICATE GOINGPLACESFARANDNEAR.COM Expeditionary cruising is as different from the mega-ship cruise experience as hiking is to a spa vacation in a five-star resort. Expeditionary cruising is about education, exploration rather than entertainment, it’s about active, engaged, immersive experiences, close-up encounters in otherwise hard-to-reach, definitely off-the-beaten track places with an emphasis on discovering and interacting with the natural world and cultures. And for all these reasons, there has been an explosion in this segment of the cruise market that has such appeal for more active, more adventurous travelers with a yen to experience even a fraction of the sense of discovery the early explorers experienced, albeit with a level of luxury and comfort the explorers could never have imagined, befitting the high per diem (averaging $1000/ per person/per day). There are expeditionary cruises to the far reaches of the planet – the Arctic, the Antarctic, the Galapagos, and completely new destinations that are surprisingly close to home, like the East Coast. Some of the expeditionary cruise companies to the Arctic, for example, have modified or replaced itineraries because of Russia’s invasion of Ukraine – either because they utilized Russian icebreakers, or because they penetrated into Russia’s waters. Lindblad Expeditions has announced five new voyages to replace their itineraries impacted by the Ukrainian invasion. The new itineraries were designed to go farther and deeper into remote wild places only reachable by small expedition ships. The new voyages include: Epic Coastal Alaska (Nation al Geographic Orion); Extraordinary Alaska: Misty Fjords to the Hubbard

With the cost of food rising, it’s more important than ever to waste less of the food we purchase. According to the U.S. Department of Agriculture, as much as 40% of our food supply ends up in the trash or compost bin. More than a third of that stems from wasteful kitchen habits, says the USDA. We all are guilty of buying food that just hangs out in our refrigerator and we end up throwing it away: overripe bananas, broccoli stems, moldy cheese, even milk sometimes. Or maybe it ends up there because we purchased too much or didn’t end up eating the leftovers like we planned. It takes up space in landfills, not to mention the money we threw away. The average American (myself included) ends up spending $1,300 a year on food that ends up in the trash. The good news is we can make a change by adopting a few simple habits in the kitchen.
Waste Not
No. 1: Freeze overripe bananas or use them in banana bread or a smoothie along with leftover berries. No. 2: Toss leftover spaghetti or macaroni noodles into a soup. Repurpose meatballs into a sandwich. No. 3: Organize your refrigerator and freezer by “first in, first out” dates. Put the oldest foods in front where you’re more likely to grab them and the newer ones toward the back. No. 4: Keep a running list of what’s in your freezer either on your computer or on a dry-erase board. Date and label each package so you know what’s in each package. No. 5: You can freeze hard cheeses such as Parmesan, and you can freeze yogurt, milk and even whipped cream into ice cube trays to pop into a smoothie or hot cocoa. Bread can be frozen as well; just thaw it in the same package you froze it in. No. 6: Store your herbs, celery and as-
paragus cut-end down in a glass of water in the refrigerator to keep them crisp and last longer. No. 7: Before your citrus goes bad, juice it, then add it to a marinade or salad dressing or freeze it. No. 8: Homemade vegetable soup is a great way to use up those extra bits and pieces of vegetables in the crisper: broccoli (stems too), cauliflower (leaves too) and corn, wilted kale and spinach, leftover winter squash, wrinkly carrots, potatoes -- all can be added. No. 9: If you prefer roasting your veggies, cut them in equal parts, drizzle with olive oil and balsamic vinegar and your favorite spices, and place on a parchment-covered cookie sheet in a 450 F oven for 20 minutes. Roasting brings out the flavors. No. 10: Plan your menus before you go to the grocery store. That way you’ll buy what you need rather than making impulse purchases.

Questions from Young Widows BY TOM MARGENAU Last week, I answered questions about Social Security widow’s benefits. But I ran out of column space before I ran out of questions to answer. So, this week, more questions and answers about widows. Last week’s questions were mostly from older women in their 70s and 80s. Today’s questions come from younger widows. Q: My husband recently died at age 45. I am also 45. We have three children, ages 11, 14 and 16. I called the Social Security office to file for benefits for the kids. But I got all confused when the agent started talking about what he called “mother’s benefits” and maximum family benefits and benefits stopping at age 16. I thought the kids get checks until they are 18. Can you help me understand what is going on? A: I’d be happy to help. And you’ll see it’s actually not going to be all that complicated. Each child is technically due an amount equal to 75% of your husband’s basic Social Security benefit. But there is a rule that sets a maximum amount that can be paid to a family getting survivor benefits. The formula for determining the exact maximum amount can get a little messy. But it usually comes out to around 180% of your husband’s basic benefit. To explain further, let’s use an example. Let’s say your husband’s basic benefit rate is $2,800. Again, each child is technically due 75% of that, or $2,100. That would come out to a total of $6,300. But the maximum amount that can be paid to your family is 180% of $2,800, or $5,040. So, each child will get one-third of that, or $1,680. ($1,680 times 3 equals $5,040.) If you were not working, you would also technically be due a widow’s benefit. (The term the Social Security Administration uses to refer to benefits for a young widow with children is “mother’s benefits.”) So, you could apply for mother’s benefits and get added to the beneficiary rolls. But right now, it wouldn’t make any sense because your family is already getting the maximum amount possible, or $5,040. Or to put that another way, if you were also getting benefits, your Social Security pie would just be split four ways instead of three. In other words, you’d get four checks at $1,260 each per month instead of three checks at $1,680 each per month. When your oldest child is no longer eligible for benefits, then it would make sense for you to apply for mother’s benefits. That’s because then you’d be down to two kids each due the 75% rate, or $2,100 per child, for a total of $4,200. And with a family maximum of $5,040, that leaves $840 per month that could be paid to you.
Each child is due benefits until he or she reaches age 18, although benefits can continue until age 19 if they are still in high school. The age 16 rule you heard about is the cutoff age for mother’s benefits. Or to put that more precisely, you are due mother’s benefits until your youngest child turns 16 (although the child continues to get benefits until age 18). Q: I am turning 62 soon. My husband died many years ago. At that time, I got benefits for myself and for our two kids, who are now grown and married themselves. Will the benefits I got way back then reduce what I am now due in widow’s benefits? A: No. The “mother’s benefits” you received years ago have no effect on what you now might possibly be due in widow’s benefits. To understand what you might be due, read the answer to the next question. Q: I will be 60 next month and I plan to retire then. My husband died about 10 years ago. What choices do I have with respect to my own Social Security benefits and my widow’s benefits? A: You have several choices, and which way you go depends entirely on the benefit amounts involved. Basically, you’ll be able to employ the “widow’s option.” This is an option no other Social Security beneficiary has. Normally, a Social Security recipient can NOT take reduced benefits on one account and then later switch to full benefits on another account. But a widow can do that. The best way to explain this is with examples. Let’s assume your husband’s basic Social Security benefit is $2,500 per month and that your basic full retirement age benefit is $3,000 per month. So, you could start out with reduced widow’s benefits at age 60. At 60, a widow gets about a 70% rate, so you’d get 70% of $2,500 or $1,875 per month. You could collect those benefits until your full retirement age, at which point you could switch to 100% of your FRA benefit, or $3,000 per month. Or you could wait until age 70 and get roughly a 30% “delayed retirement credit” added to your monthly benefits. That means you’d get $3,900 per month starting at age 70. To clarify things a little more, let me turn things around and assume your husband’s benefit is higher than your own benefit. So, let’s say your own full retirement age benefit is $1,800 per month and that your husband’s full retirement age benefit is $3,000 per month. In this case, you would want to take your benefits first and then later switch to widow’s benefits. Or to be more precise, you would file for reduced retirement benefits at age 62. (That is the earliest that a retirement benefit can be paid.) You’d get about 75% of $1,800, or $1,350
per month. Then, once you reach your full retirement age you could switch to 100% widow’s benefits, or $3,000 per month. (There are no “delayed retirement credits” paid on a widow’s benefit, so there would be no advantage to waiting past your full retirement age to collect widow’s benefits.) And by the way, if these were your numbers ($1,800 for you and $3,000 in widow’s benefits) another choice would be to forgo this “widow’s option” stuff and simply file for widow’s benefits
now. In other words, at age 60, you’d be due about 70% of $3,000, or $2,100 per month. And that would be your benefit for good, except for future cost-of-living increases. If you have a Social Security question, Tom Margenau has a book with all the answers. It’s called “Social Security -- Simple and Smart.” You can find the book at www.creators.com/books. Or look for it on Amazon or other book outlets. COPYRIGHT 2022 CREATORS.COM

Waiting to sell or purchase could be hazardous to your wealth BY PHILIP A. RAICES It appears by the response of our stock market this morning April 25, 2022, that the mortgage rate from what I have read and hear that a 1/4 to a 1/2 point is automatically being built into stocks as the market is now down 300+ points. Will this be the bottom or will there be additional pain in prices? Buying on the dips and/or cost averaging has been a very successful method for many approaching stocks in what I would call one of the safest paths to pursue. However, get well educated about investing before (or hire and seek the assistance of a qualified, transparent and candid and up front stock broker, if you can find one, lol) before putting any of your hard earned dollars into any stock! Now, where is our real estate market currently heading, you ask? Well, there will be those, who have previously dropped out and more will continue to leave and jump back on the fence and either stay in their current rental or just consider renting for the time being. As the new rate is initiated all forms of credit beside mortgage rates will continue to increase. So, right now whoever has sufficient or excess cash will do well in real estate as many sellers will be most comfortable going that way as no bank will be involved and the worry of appraisals being short of the agreed selling price will then be eliminated. If you are still very well qualified I would be doing your own research at a feverish pace (or seek out the most knowledgeable, straight forward, transparent and candid Broker, (me) to assist you in finding your “next place to call home.” Still seek out your primary residence even if rates increase, because the benefit will out way the additional costs. You have to analyze that if you are going to be in your home for at least 10-20+ years or more will you benefit long term? The answer is a
resounding yes, as real estate has generally been a long term play, even though I do not consider your home to be an investment, based on what an investment is. I have always said, unless you are earning a penny more than it costs you then it is not an investment. Your home is a place to bring up your family, grow roots in your community, build relationships and friends and have an enjoyable life. When you are ready to sell then you will realize and determine if any, the gain or even break even point when you analyze after all costs over the years, e.g. mortgage, interest paid, monthly maintenance, upgrades and repairs etc. then subtract that total from your net proceeds and then one will ascertain whether you walked away with a profit or just broke even and lived for free over all those years. Either scenario would be a plus in the scheme of your wealth, unless you are such an amazing investors that you could outperform real estate market (which historically has increased by the inflation rate. According to the Robert Shiller who with his partner Karl Case created the Shiller-Case index. Robert Shiller had created a chart (not necessarily a perfect price analysis, as per Robert Shiller) that showed if you bought a home in 1950 that same home in 2000 was selling for $100,000 and a tad over $200,000 in 2018. As you can see prices have done very well for the majority of homeowners who had bought back then and eventually sold and even those who have bought in 2000 and beyond, especially with the huge effect the Covid-19 Pandemic has had on real estate values. No one can accurately predict the
future, but luck is always about timing and nothing else. But being educated and smart will always go a long way in determining one’s future wealth. Seeking advice from a very qualified financial planner, CPA or Elder Care attorney will keep you in a much safer and stable position minimizing avoidable mistakes. Bottom line, I would still advise purchasing a single or multi-family home, HOA, townhome, condo or co-op as they are not growing any more land to put them on; so it is a unique commodity that throughout history has held its value over time. Owning a home has been the number one commodity that families have built their wealth on over time. Don’t let interest rates create this fear (fanaticized expectations appearing real) that will hold you back from becoming a homeowner as long as you are qualified and don’t go overboard. Going a little above your budget is ok, as long as you crunch your numbers and if it makes sense in the brain then it should make sense in your pocketbook. Lastly, get sound and quality advice from a professional e.g. CPA or financial planner etc. Selling now would also be beneficial to cash out as rates go up the demand will be reduced, and prices could soften (but for buyers, the interest rate will be a better savings than a reduced price over the length of the mortgage) but there will always be buyers buying and sellers selling, it just a point of how much you will be derived and end up with when selling? A Planetary String of Pearls BY DENNIS MAMMANA Week of April 24-30, 2022 A beautiful string of planetary pearls shines at dawn right now, but one of the coolest sights of the early morning sky is completely invisible. Well, sort of. Stargazers who know something about astronomy can find it every night and morning but, unfortunately, most will not realize its true significance. I’m referring, of course, to the geometric plane of our solar system. We know that our solar system includes the planets, the sun, moon, comets, asteroids and tons of other stuff like dust and chunks of ice and rock. Nearly everything orbits the sun in a geometric plane, the result of our planetary system’s birth from a rapidly spinning disk billions of years ago. From within, we see this plane as an arc across our sky; it represents the general paths that the sun, moon and planets take on their journeys through the starry heavens. We call it the “ecliptic” because it is along this arc that the sun and moon also appear to travel and it’s the only place where eclipses can occur. The ancients recognized this arc also but, of course, did not understand its significance. So, they devised 12 stellar groupings to mark its position, and
knew it as the zodiac among which their gods (the planets) appeared to wander. This week, the zodiac constellations that appear at dawn are (from west to east): Virgo, Libra, Scorpius, Sagittarius, Capricornus, Aquarius and Pisces. And this week sky watchers can find on the ecliptic four of the five visible planets... and the moon! At dawn, gaze toward the southeastern sky and you’ll see the brilliant planet Venus, with bright Jupiter to its lower left. To their upper right lie two equally bright planets: the Red Planet Mars and the Ringed Planet Saturn. Trace a line through these planets and you will outline the ecliptic. Since this arc also represents the general path that the moon takes as it orbits the Earth each month, you can watch during the week as the waning crescent moon glides along it from morning to morning. At dawn on April 24, the moon will appear just to the lower right of Saturn, and on the 25th it will have drifted eastward to appear just midway and below Mars and Saturn. By April 26, the thinning crescent moon will lie below and between Mars and Venus. And on the 27th the moon’s crescent will lie just below Jupiter. Keep watch on all of these objects for a while and you’ll notice that they all move through the heavens. In fact, on the morning of April 30 Venus and
Jupiter will have converged in the sky to appear less than half a degree apart; don’t miss seeing both these planets together with a low-power telescope! Stargazers who are unaware of the workings of our solar system and its changing appearance in the sky will be stunned by this apparent “alignment” of the planets and will often interpret it as something of supernatural signif-
icance. I’m not too worried, though. The planets and the moon have behaved this way for billions of years. If ever they don’t appear this way, then I’ll be worried! Visit Dennis Mammana at dennismammana.com. COPYRIGHT 2022 CREATORS.COM

A Thorny Situation BY TRACY BECKERMAN “Ow!” I exclaimed, clutching my leg. “I’ve been stabbed!” I looked down and saw my attacker, an innocent-looking barrel cactus hanging out nonchalantly on the side of the path in the garden center. I would have taken a moment to appreciate the organic symmetry of the perfectly round plant, but I had two dozen small cactus needles impaled in the side of my leg and wasn’t feeling big love for nature at that moment. The cactus looked none the worse for the wear. My leg, however, resembled a hedgehog in a very uncute way, and small spots of blood had begun to appear on my jeans. “Stay still,” said my son, who was accustomed to living in the Wild West (and by wild, I mean a large, cosmopolitan city in the middle of the country) and was used to encountering these kinds of moody, unpredictable plants in his environment.
He bent down and started plucking cactus spines out of my leg. “Ow, ow, ow,” I yelled each time he removed one. I decided this must be what it feels like when you have a fight with a very, very small porcupine, or get shot at by pigeons with blow darts. Certainly, this was not the kind of activity I had planned for when we decided to go visit our adult kids for a few days. Food-truck hopping? Yes. E-bike tour of the city? Certainly. Arbitrarily getting assaulted by an Attacktus Cactus? Definitely not. As he yanked out the needles with surgical precision, I began to wonder whether this violated any cactus assault laws and if I needed to file a report with the cactus police. Maybe there was a whole cactus gang out there terrorizing unsuspecting Northeasterners. That’s when it struck me that this might be more than a painful inconvenience. What if the spines were poisonous? What if the hospital was out of anti-cac-
tus-spine serum? What if my insurance didn’t cover random cactus attacks? Most importantly, what if I had to walk around in stained jeans for the rest of the trip? “Excuse me,” I said, waving down a garden center employee. “Can you come here? I’ve been attacked by one of your cacti.” He came over and looked at my hedgehog leg. “Oh no!” he said. “How did that happen?” “I was walking down this path and the cactus shot its spines at me.” “They don’t actually do that,” he said. “You must have bumped into it.” “No, it attacked me,” I insisted. “Your cactus went rogue.” “Did you provoke it?” he wondered. “Call it names? Make some ‘yo momma’ jokes?” “No!” “Then you must have bumped it.” OK, fine,” I said. “But I need to
know if these things are poisonous. Should I go to the hospital? Update my will? Delete certain mean posts from my Facebook account? “No, you’ll be fine,” he said. “I’ll get antiseptic and some Band-Aids.” “Is that it?” I wondered. “You don’t think I need a tourniquet, or a rabies shot? “No.” “What, then?” He thought for a moment. “I can give you 10% off your purchase.” I nodded. “That’ll do.” Tracy Beckerman is the author of the Amazon Bestseller, “Barking at the Moon: A Story of Life, Love, and Kibble,” available on Amazon and Barnes and Noble online! Blueberry pie wins raves every time Everyone amateur baker needs a go-to pie recipe in his or her repertoire. While apple may get much of the fanfare, blueberries pack that perfect punch of sweet but tart flavor that just bursts in the mouth with every bite. “Ginger n’ Spice Bubbling Blueberry Pie” is not only the official pie of the U.S. Highbush Blueberry Council, but also a winner of America’s Best Blueberry Pie Contest. This recipe, courtesy of Barbara Estabrook and the U.S. Highbush Blueberry Council, is a sweet way to celebrate National Blueberry Pie Day or enjoy dessert any time of the year.
Ginger n’ Spice Bubbling Blueberry Pie Serves 8 Crust 2 1⁄2 cups all-purpose flour 1⁄2 teaspoon salt 10 tablespoons cold unsalted butter, cubed (1⁄4-inch-thick cubes) 1⁄2 cup chilled all-vegetable shortening 3 1⁄2 tablespoons ice water 1⁄2 tablespoon fresh lemon juice 1 egg white, whisked to foamy (divided use) Filling 41⁄2 cups fresh blueberries (room temperature) 1 tablespoon fresh lemon juice 3⁄4 cup granulated sugar 1⁄4 cup instant or quick-cooking tapioca, ground 2 tablespoons finely minced crystallized ginger 3⁄4 teaspoon ground cinnamon 1⁄8 scant teaspoon ground allspice 2 tablespoons melted butter 3 tablespoons orange marmalade 1⁄2 tablespoon raw turbinado cane sugar Crust 1. Combine lemon juice and ice water and set aside. 2. In a medium bowl, whisk flour and salt. Cut in butter and shortening with a pastry blender until coarse meal forms. Sprinkle half the water/lemon mix over flour mixture; toss with a fork. Add remaining half, tossing until dough begins to form a ball. 3. Divide dough in half, flatten it into 1⁄2-inch-thick discs. Wrap each disc in plastic wrap. Chill 30 minutes. Filling 1. In a large bowl, toss blueberries with lemon juice. 2. In a separate medium-sized bowl, stir sugar, tapioca, ginger, cinnamon, and allspice together until combined. Gently fold into blueberries until well coated. 3. Melt butter, stir in marmalade, then fold into blueberry mixture. Let set. Pie Assembly 1. Heat oven to 425 F. Line a baking sheet with parchment paper. 2. On a lightly floured surface, roll one chilled dough disc into a 13-inch circle. Fit
dough in a 9-inch pie plate. Trim overhang to 3⁄4-inch of edge. Brush egg white over bottom and sides of dough. Reserve remaining egg white. Set the lined plate in the freezer. 3. Roll second chilled disc on a lightly floured surface into a 13-inch circle, then cut into 1-inch-wide strips with a pastry wheel. 4. Retrieve pie plate and pour in filling, mounding slightly toward center. Weave strips of dough over filling to form a lattice top. Seal, trim and crimp edge. Brush reserved egg white over dough. Sprinkle evenly with sugar. 5. Set pie on lined sheet. Bake 18 minutes at 425 F. Reduce heat to 375 F. Bake 50 minutes or until pie is bubbling. Cool on a wire rack. Top with vanilla ice cream.

Bethpage HS ranked Town seeks nominations among nation’s best schools to honor local veterans
Bethpage High School has been ranked as one of the nation’s top 1000 high schools by U.S. News and World Reports Bethpage High School has been ranked on the U.S.

The six-week program provides a rewarding employment experience for counselors as they work with children and make a difference. “This great summer job is ideal for residents age 16 or older who are looking to build their resume. Our summer recreation counselors get real-world experience while having fun, making memories, and making a difference in the lives of others,” said Town Supervisor Joseph Saladino. Applicants must be available for the duration of the program, which runs from 9:00 a.m. to 3:30 p.m. Monday through Friday, beginning July 5 through August 12. Summer Recreation
Program participants take part in trips, tournaments, shows and athletic events, including the TOBAY Games, making being a counselor a great first job for many residents. The Town of Oyster Bay is now accepting hometown hero nominations in order to honor veterans at the Town’s “Salute to Veterans” Celebration scheduled for Tuesday, July 12, 2022 at 7:30 p.m. at TOBAY Beach. Residents are invited to nominate extraordinary individuals who have made a difference in our veteran communities. “The Town of Oyster Bay’s ‘Salute to America’ Celebration provides the ideal backdrop to recognize veterans and individuals who continue to actively serve in the community and advocate for issues and concerns relative to veterans. The Town is proud to recognize and honor amazing individuals who have helped to shape our communities for the better through their continuing advocacy and exemplary community service each year,” Town of Oyster Bay Supervisor Joseph Saladino said. “I hope residents will consider submitting a nomination of an individual who deserves special recognition for their continued efforts on behalf of the veteran’s community. I look forward to recognizing the efforts of outstanding individuals who have impacted the lives
of our veterans in an extraordinary way yet again this year.” Nominations are being accepted in three different categories of recognition: Veterans Volunteer of the Year (awarded to a veteran), Friend of Veterans Volunteer of the Year (awarded to a non-veteran), and Lifetime Achievement Award (awarded to a veteran or a non-veteran). All entries must include a supporting narrative describing the nominee’s on-going veterans related activities, and all nominees must be Town residents. All nominations must be postmarked no later than June 13, 2022. Winners will be recognized as part of a special program during the ‘Salute to America’ Celebration, a patriotic evening of top flight musical talent and fireworks, which serves as a thank you to all veterans and active military for protecting the freedoms we enjoy each and every day as Americans. To submit a nomination for the Veterans Awards, please visit www. oysterbaytown.com, email kfileccia@ oysterbay-ny.gov or call (516) 797-7925 for an application.
Armed Forces Appreciation Day The Town of Oyster Bay has announced that veterans and active United States military personnel are invited to the Town of Oyster Bay’s Armed Forces Appreciation Day Celebration slated for Friday, May 20, from 11:00 a.m. to 2:00 p.m. at SyossetWoodbury Community Park, located at 7800 Jericho Turnpike in Woodbury. This free event, open to all Town of Oyster Bay residents currently or formerly active, will include a BBQ and entertainment by the singing group American Bombshells. “The Town of Oyster Bay is committed to serving veterans and ensuring they have access to important benefits in which they are entitled to,” said Town Supervisor Joseph Saladino. “This is an important way of thanking our brave hometown heroes for protecting the freedoms we enjoy each and
every day as Americans.” President Harry S. Truman established Armed Forces Appreciation Day in 1950 as a day to pay special tribute to the men and women of the United States Armed Forces. This single holiday provides an opportunity for citizens to come together and thank our military members for their patriotic service in support of our country. The Town’s celebration includes a patriotic musical salute to our hometown heroes, including a special performance by the American Bombshells, and a free barbecue. To accommodate as many hometown heroes as possible, veterans and active military personnel are invited to bring one guest. There is no charge to attend and a rain date is scheduled for Friday, May 27. To RSVP, please call the Town of Oyster Bay at (516) 797-4121.
