Mobberley, Cheshire – I love it here.

What did you want to be when you were younger?

A salesman. I love buying and selling classic cars, but I enjoy buying or selling anything I love. Although perhaps I am slightly better at buying than selling.

What do you love most about the industry?

The creativity that comes along with coming up with new dishes and helping my customers make memories.

In my first week of catering, when I was 18, I served coffee to Lord Patrick Lichfield and was told off by Lauren Bacall for not having a large enough range of vodkas behind the bar.

Traffic jams and roadworks, faux flowers and goats’ cheese.

What’s been your biggest life lesson?

SOPHIE HELM, FAIR DIRECTOR, MANCHESTER ART FAIR In a nutshell, what can visitors expect from this year’s Manchester Art Fair?

We’re really excited to be bringing live art events back to the city with Manchester Art Fair this November. Our audience of art lovers will be able to buy art from over 130 galleries and artists who will be exhibiting at the fair over the weekend, as well as being able to enjoy a host of art classes, talks and activities.

What new and returning exhibitors can guests expect to see?

Galleries and artists returning to Manchester Art Fair include Ian Rayer Smith with his bold abstract pieces, The Drang Gallery selling affordable work from famous artists such as Damian Hirst, Tracy Emin and David Shrigley, and Laura Jordan with her iconic Manchester scenes. We’re welcoming to the fair for the first time Ancel Gallery from London, Heriot Gallery from Edinburgh and The Art Agency from Escher.

Do you have any favourite pieces from this year’s collections?

I love them all! But my ones to watch are: Iain H Williams, who works across a range of mediums in his painting, exploring the abstract image and mark-making within expressionistic and gestural imagery. Natalie Williamson whose paintings show ordinary everyday people and objects in an uplifting and positive light, bringing their beauty to the forefront. Hidden Gallery from Brighton who will be bringing affordable as well as blow the budget pieces from celebrated artists such as David Hockney, Banksy, Jean-Michel Basquiat and Grayson Perry.

What piece do you feel will be the major talking point?

We work closely with the Manchester School of Art to provide a platform for their students and taking centre stage this year is a

piece from a recent collaboration with Manchester Fashion Institute (MFI). ‘Wake Up’ is a visual representation of the conflict between people in power and the environment. Tracy Emin’s rebel aesthetic and loud statements were the main inspiration of this installation combined with the voice of the students’ generation. It is made from recycled t-shirts supplied by Eileen Fisher and in turn the installation will be reworked into homeware, fashion accessories and art to follow the fashion brand’s sustainable outlook.

The hot trend for this year’s fair is the booming market of NFTs (Non-Fungible Tokens). Can you tell us more about this?

NFT’s are a hot topic in the art world at the moment as they are an exciting new way to acquire and collect art. The Whitworth will be at the fair to share news about their new NFT opportunities, and we’ll have talks onsite from NFT experts Vastari explaining exactly what NFT’s are and how you buy them as well as galleries and artist with NFT’s available for sale at the fair.

Can you tell us about the relationship with White Circle and their support?

White Circle is an interior design company built on the foundation of art; creating and shaping spaces that are defined by its influence. Just like us they are passionate about supporting artists and providing them with a platform to show their work and tell its story, which is why they are the perfect partner for Manchester Art Fair.

The Sky Sky ’s the Lim imiit The celebrity chef and business owner talks exclusively to Craig Hough about his love for the north, his new panoramic sky bar in Liverpool and his future plans with INNSiDE Meliá Hotels

G

ino D’Acampo chopped and sautéed his way onto British screens in the early noughties, and has fast become a star of UK television through his appearances on countless TV shows including ‘This Morning‘, five series’ of the awardwinning ‘Gino’s Italian Escape‘ and the ever popular ‘Celebrity Juice’. A career highlight saw him take home the crown on the 2009 series of ‘I’m a Celebrity Get Me Out Of Here!’ and you can now catch him on Saturday night, on prime time ITV hosting ‘Family Fortunes.

Away from the screen, Gino is a shrewd businessman, having opened his first restaurant in London at the tender age of 21. He went on to open the first ‘Gino D’Acampo My Restaurant’

in Manchester in late 2015, expanding into Leeds and Harrogate over the next two years. In 2020 Gino D’Acampo Hotels & Leisure was formed, as part of the leading Italian chef’s plans for international expansion. This year the business announced the creation of a new hospitality empire in association with INNSiDE Meliá Hotels and it’s this news that starts the conversation with Gino, as he explains his excitement for the collaboration, 26

“To create a menu for the hotel, it

needs to be varied and you need to think more about international guests who will be visiting.”

“This is something that we’ve been working on the last four or five years, the relationship is getting stronger and stronger. The people that own the Meliá group are all really cool guys and I believe it’s the perfect fit. The hotel and the restaurant have everything that people want – the elegance, the creativity, it’s a great fit and we work well together.”

The conversation then moved on to Manchester, a city in which he opened the first ‘Gino D’Acampo My Restaurant’ and where Gino more recently launched First Street Bar & Kitchen. Gino gushes,

“Manchester – how can you not love it, my friend? I am a huge Oasis fan, so I mean, The Mancunians are rock ‘n’ roll, I can tell you that. Super cool people, that love to party.

They love everything that I like – good food, they like to party, like to drink. I mean, I should have been born a Mancunian.”

As more of Gino’s restaurants are set to open with INNSiDE Meliá Hotels, he explains the difference in creating a menu for a hotel than one for his stand-alone restaurants. He adds, “To create a menu for the hotel, it needs to be varied and you need to think more about international guests who will be visiting. You can have visitors from America or China, all with different expectations. When you have a stand-alone restaurant, you can have a smaller menu as you know your locals, you know what the people want. The hotel offers more chance to experiment with the menu.”

Having recently opened in the West End of London, Luciano restaurant is named after 27

Gino’s first born. Has Gino set a precedent for the family and can other family members expect a restaurant named after them?

Gino laughs, “Yes, I am afraid they do expect that. Even my mother-in-law (Elizabeth) is expecting a restaurant. She said to me “Don’t you think we should open a fish and chips shop and call it ‘Elizabeth’”? I was like, “No, I don’t think so”.

Now, everybody in the family wants a restaurant with their name on it. I think I’ve opened a can of worms there.”

Gino’s newest venture opened last month on the 17th floor of INNSiDE BY MELIA in Liverpool city centre. So, what can customers expect from the new venue, Gino explains, “Well first of all; the view from the Skybar is insane. Then we have the beautiful Cicchetti light bites – we have amazing arancini rice balls and beautiful bruschetta, lots of little nibbles. We also have great music with a live DJ. So, if you want something different, with a great view, a cool vibe, that’s the place to be.”

With hotels in 28 locations, and another 13 properties in the pipeline, INNSiDE by Meliá is rapidly growing – Gino explains what’s next for their powerful partnership, “At the moment we are working on going worldwide and opening a restaurant in Milan, Dubai and Malta - the list is endless.

Meliá are asking us to open one left, right and centre (laughs). What they don’t understand is that it’s not an easy thing to do. It takes a lot of effort. Slowly, but surely, we will do them all.”

INNSiDE by Meliá’s philosophy is ‘Stay Curious’, but what British dish stirred Gino’s curiosity when he arrived in London back in 1995? Gino answers, “I was very curious of fish and chips.

Remember, I come from the south of Italy, right? So, we go fishing, we pick it, we lightly grill it, pan fry or we bake – nice and simple.

When I heard there was a dish where you pick up a fish, you put it into batter and you deep fry it, I was thinking, “oh my God this is either going to be disgusting or it’s going to be wonderful”. It’s wonderful – I like to have fish and chips once a week.”

live link from his home in Sardinia. So how was Gino’s lockdown experience?

“To be honest with you, I feel bad in saying, in lockdown I had the best time ever. I was on the island of Sardinia with my family, in the sunshine, away from everybody. What more could you ask for? I feel bad as many people suffered, but I enjoyed the time with my family.”

On the topic of family, talk then turned to Gino’s grandfather who was a huge inspiration to him as a child. Gino credits his grandfather for his love of food and talks warmly about working in his restaurants from the age of 9.

But can Gino see any of his family members stepping into his chef’s apron and taking over his kitchens?

“No. They are much cleverer than I am.

They understand my job has long hours, and you come home smelling of garlic and onions

all the time. They are much wiser. They can do the outside-of-the-kitchen part, but I don’t think any of them will ever step into a kitchen.

Also, let’s be honest, it would be dangerous to try to replicate what your father did, there’s too much pressure. It’s like David Beckham and his children – they are never going to play football are they? Because everybody is going to compare them to their father. The wiser thing to do in a situation like that is to do something similar but now exactly what the father does.”

As the interview comes to a close, Gino took time to reflect on his arrival in London, aged 18 and explains his future ambitions and what legacy he will leave. He adds, “I opened my first restaurant when I was 21 in Kentish Town. I’ve always thought I would be successful; I always had that drive to do it. I hope to retire when I’m 50 years old. I’m 45 now. I want to be able to enjoy more holidays, than work. My aim is for 8 months of holiday and 4 months of work. As I am saying this to you now, there are a team of people in this room that are looking at me thinking “don’t you even think about it – you are going to work until you die!”. My ambition is more holidays – less work. My legacy is my children and the name of Luciano in my restaurant in London.

That’s where my legacy lies.”

aunched during the brand’s 50th anniversary year, Mulberry Editions celebrates the best in contemporary design and continues Mulberry’s tradition of bold and unexpected collaborations. For his limited- edition capsule, Malone reinterprets two bags which both feature the iconic Postman’s Lock: the Bayswater, one of Mulberry’s most loved and recognisable designs, and the Darley. The collection was unveiled as part of the Richard Malone show at the Victoria and Albert Museum, during London Fashion Week.

Malone is the award-winning Irish-born, London-based designer known for blurring the boundaries between fashion, art and design and for his uncompromising commitment to ethical and sustainable practices. In this capsule, he melds Mulberry’s

When did you know this is the industry you wanted to work in?

What were the first steps to setting up DD Clinical and what advice do you have for other entrepreneurs?

A good business needs to a strong brand identity that tells your story, a detailed business plan and a unique selling point. I would say do your research, aim to be the best in your business and think about the little touches. Build a strong team around you and plan for financial challenges.

Enjoy Mother Nature - absorbing natural surroundings is great for your physical and mental health. A brisk walk works by increasing happiness and lowering anxiety.

Nourish - not only does your body rely on the food you consume, so does your soul. Leading a healthy lifestyle is sure to keep your mind clear and your body happy. By eating a balanced diet and limiting your alcohol intake not only will your body benefit physically, it puts you on the path to you looking and feeling your best.

Clear your mind - write it all down. There are plenty of journals out there to choose from, but a favourite of mine is the Wellness Journal from Papier as it allows you to log your daily fitness journey too.

Balance - Find time for what is important to you. Whether that is spending time with friends and family, reading a good book or having time to yourself, finding a work/life balance helps you avoid any potential burnout.

Create and Play - I like to play in the gym by monkeying around on the monkey bars.

Switch off - technology, TV, social media - switch it all off. Have some down time.

Happiness - “Happiness is a state of activity” Aristotle. To stay active is essential for happiness. By exercising the body and the mind, we ensure we are giving ourselves the best start to the day. Positive affirmations are a great way of weaving happiness into your life. One of my favourite ways to start the day is by saying this “I am well. I am strong. I am healthy.”

It is still very early in my career, but I am privileged to work in the golf industry as there are many people who are happy to share best practices and pass on their experiences within the golf network. The first Director of Golf I worked for was a great mentor for me, he would always encourage me to undertake tasks that would develop the skills I would need to progress in my career. In my current role I am learning every day and I’m surrounded by a number of people that help me develop my knowledge across all aspects of the hospitality business.

What has been the best piece of advice you have received?

Never stop learning, growing and investing in yourself.

What’s your first memory of golf?

I was around 9 when I started playing golf, so I remember well my first lesson very well and I was immediately hooked. Every day after school my dad would take me to the range to practice and as I got better I joined a junior academy where I would play with friends every weekend. I really enjoyed the competing from an early age.

What’s your favourite course?

Playing from a young age and working in the industry I have been fortunate to play many great courses. The one that stands out most to me is Royal Birkdale. I managed to play there shortly after The Open and the condition of the course was incredible. Growing up I played lots of links golf so always have a soft spot for this style of course.

Are there any dream courses you’ve yet to play on?

The Masters signifies the unofficial start of the golf season and is the only Major to be played at the same venue each year so Augusta National is right at the top of my list. It would be a dream to experience the course and play the famous Amen Corner following in the footsteps of so many legends.

For those who have yet to visit, how would you describe the experience of playing on your course.

#1 - Dogs like variety of different foods and ingredients just like humans.

In reality research has shown that dogs have fewer taste buds than humans and therefore don’t have the cravings for a large variety of different foods. In fact, if owners add too many different ingredients or change the food too often it can cause digestive upsets.

Having said this, it is possible to change protein sources on occasion if you know the new protein source doesn’t cause any gastric upsets and you don’t make too many changes at once. #2 - Feeding dry food means you don’t need to worry about your pet’s teeth.

Dogs and some cats tend to gulp or crush their food rather than chewing. It is this chewing action that keeps teeth clean. This can mean that their teeth are not getting “cleaned” as you would expect. Always provide suitable dental chews for your pets to keep their teeth and gums healthy, as dry food alone may not be enough. And remember, it is time spent chewing that keeps teeth clean, if your dog or cat eats its dental chew within minutes its unlikely to be beneficial to your pet’s teeth.

#3 - All dogs need to be fed bones.

Never feed you pets cooked bones or large dense bones, they can be prone to splintering and can causes bowel impactions, and intestinal or stomach tears. This can be life threatening. I come across this problem so often at work. If you want to feed your pet bones, choose lighter, less dense, easily digestible bones, such as chicken wings or necks.

For this month food and drink issue, I thought I would debunk some common pet food myths #4 - All grains are bad for your dog.

It is true that some dogs can’t tolerate certain grains which can cause skin and bowel issues, and in these patients grain free may be a better alternative. But in fact, it is usually the protein source that causes dietary intolerances, with grains lower down the scale of potential allergens. Some grains are quite nutritious and can serve as a healthy addition to a dog’s diet, and whilst it is true that a dog’s digestive tract is not optimised to process grains, studies have shown that dogs can in fact process some grain starches. Cooking grains first improves their digestibility. #5 - Raw food will give your dog salmonella.

Whilst I have seen some patients contracting salmonella and campylobacter from eating a raw food diet, the majority of dogs with a healthy gut immune system can eat raw food without become ill. Dogs have shorter and more acidic digestive system that means that the food is rapidly digested, and these bugs are killed. If in doubt, you can cook the food before feeding it to your pets, this can improve digestibility and kill any bugs on the raw meat. #6 - Dogs are strict carnivores.

As stated above, studies have shown that dogs can digest some starches and vegetation. Dogs are more closely related to bears in their digestion. This makes them omnivores; they are not as omnivorous as some other animals, but they are omnivores none the less. Dogs still require vitamins and minerals that are provided by other feed stuffs like fruits and vegetable and are not available in meats alone. Cats are obligate carnivores. #7 - It is a myth that all organic dog food is 100% organic.

For a dog food to be labelled organic it needs only to contain 85% organic content by weight. Dry dog foods only need 70% content to be organic.

#8 - Hypoallergenic is the same as hydrolysed.

Some cats and dogs have very sensitive stomachs which can cause skin and digestive issues. These patients often require hydrolysed diets, this means there are limited ingredients that have been treated under pressure with steam to break down these ingredients into the smallest sized molecules, meaning they no longer cause gut reactions.

This is not the same as hypoallergenic, which usually means it has limited ingredients or is grain free. Hypoallergenic foods are not suitable for patients who require hydrolysed foods. #9 - Dogs cannot tolerate dairy.

It is true, that just like some humans, some dogs cannot tolerate dairy. But some dogs are capable of consuming dairy products with no ill effects. And not all dairy products contain the same amount of lactulose (the in milk), therefore some dairy products are more digestible than others. #10 - All feeds are made by different companies.

In fact ,many commercial dog food companies are owned by the same parent company, with some companies making a variety of different foods to fill certain gaps in the market.

Ultimately dogs and cats should be fed an appropriate and balanced food that keeps them healthy. Always try to afford the best quality ingredients and monitor your pet’s stools, firm healthy stools indicate good gut health. Smaller firmer stools indicate good diet digestibility.

I’m sure it’s a bit of a cliché, but it’s got to be cooking with my grandparents.

When did you know you wanted to be a Chef?

I’ve always been tinkering in the kitchen at some point but it wasn’t until my auntie pointed me in the right direction as a career path that I really knew what I wanted to do.

Where were you trained, and how difficult was your training?

I attended Paul Heathcoat’s School of Excellence in Manchester, where I had some of the best tutors I could have asked for. There were small numbers in our classes so it was a brilliant training environment, I was also working full time alongside my training.

Where do you draw your creative inspiration from?

The changing seasons, surrounding myself with creative chefs and using brilliant local suppliers.

What do you love most about your job?

I love having the freedom to be creative and working with like-minded people in our industry.

If you could prepare a meal for anyone, who would it be and what would you make?

It would be for my late grandparents, then I’d love to make a Christmas dinner for them as I have very fond memories of all the family together.

Describe your style in three words.

British, seasonal, simplicity.

What’s your favourite dish to create?

It’s got to be a good Beef Wellington at home. the anticipation of cutting it open and it being perfect is a simple but great pleasure.

What four ingredients are necessary in your kitchen?

Butter, salt, chicken stock and cream.

What are you most proud of in your career?

Gaining my first Head Chef role.

Who is your biggest supporter?

My wife Megan, she’s always there for me.

SUCCESS Richard Horwell, Owner of Brand Relations looks at the six steps to take your Cheshire recipe nationwide

R

ecipes that have been handed down for generations exist in all corners of Cheshire. Some of those recipes may have the potential to become household brands, perhaps internationally. If you have such a dish or drink, be warned, the journey between kitchen stove and supermarket shelf is long.

And the journey starts with research. Start by looking online and visiting target stores. What’s the competition? How is it selling? How do they approach their messaging? Knowledge is strength and the more knowledge you have the stronger your chances of breaking into the market and making your idea fly. After that there are a number of important steps to take:

#1 - It is so important to understand before you take on any business venture that the production of your product cannot be just a few cakes or drinks here and there; it’s either all or nothing. You need an experienced manufacturer (co-packer) that will make and fill the product for you. A co-packer will be looking at volume and

unless you can give them confidence this project will grow and fast, then very few will consider taking it on. They also need to believe in your product as much as you do, so before you speak to them make sure your company and brand look professional, many co-packers won’t even respond to Hotmail or Gmail addresses, so get brand ready. #2 -Your product could be the most delicious product in the world, sell amazingly with your friends, family and local farmer’s market, but the hardest pill many of my clients have to swallow is that the recipe will simply not taste the same when produced on a massive scale.

Your recipe at home has the option to be filled with the most expensive good quality fresh ingredients which provide the best end result, but if you want to mass produce then you may have to change ingredients to ensure the product isn’t ridiculously expensive and can be mass produced cost effectively. The most important thing to consider is that your ingredients need to have a longer shelf life to cope with the route to market, whether this is via wholesalers and physical retailers or mail order. New products can spend far longer sitting on the shelf than established brands so ensure you have that shelf life.

You also need to look out for allergens such as milk or peanuts as many co-packers will refuse to fill your product due to the process of informing every client of the potential exposure. But more

“Getting your product’s packaging right is of primary importance” importantly you also need to make all allergens VERY clear to consumers. Check out the top 14 allergens (www.food.gov.uk), and wherever possible remove them. If not, ensure you find a co-packer that can cope with the allergens, and that your packaging makes them clear.

Novel Foods is another one to look out for; beware of ingredients that may be legal in other countries but not necessarily in the UK. For this, check the Novel Foods website. #3 - Consider the shelf life of your product.

Remember new brands move slowly, no matter how good they are. So, you need to factor this in.

While really long shelf-life products are not viewed as healthy, so are less popular at the moment, it is important to remember that, generally, the longer the shelf life the better. Often, the only other way to retain the shelf life is to put preservatives in your product, however, many wholesalers and retailers refuse to accept this as part of their range. So, avoid this, if at all possible.

So, when developing your recipe, you must take into consideration whether your product can be stored for a long period of time, preferably at ambient temperatures, or if necessary, chilled. You then need to adapt your recipe to ensure it will taste just as good at the end of its shelf life as it did at the beginning. Food wastage is a big issue, environmentally and financially. #4 - Getting your product’s packaging right is of primary importance and it’s a process many new start-ups overlook. Your packaging needs to be adaptable: what worked at a farmers’ market won’t necessarily work in a major retail outlet. The packaging needs to be sturdy and protect the product, whether it is stacked on pallets, manhandled by the wholesalers, shelf-stackers, or mail order fulfilment companies, and delivered by couriers or postal workers. It must remain in pristine condition - preferably with a minimal amount of plastic included in the packaging.

It is important to understand the best materials to pack your product in. Plastic is lightweight and durable, but currently very unpopular due to environmental

reasons. Glass is more sustainable, however, many wholesale buyers will not consider it due to its weight and chance of breaking in transit. So, you need packaging appropriate to the product, sturdy and protective, minimal environmental impact, easily recycled and preferably not too heavy. It’s a lot to ask. #5 - Communicating with your target consumer is essential if you are to sell your product. However, different platforms need different approaches. What worked at the farmers’ market will not work in-store.

And often what works in-store won’t also work online. So, you need to create messaging that suits the audience and the platform.

You need to make your target consumer understand what you are about and why you are preferable to the competition. Today, consumers don’t just switch for price; they want to understand the benefits of your brand and they want that information and understanding FAST. Think about why your consumers would pick up your brand and then try to communicate that on the packaging. #6 - Remember that even once all the steps above have been completed, you’ll still need to get safety certification, such as HACCP or SALSA before anyone will even entertain stocking your product.

So, this must be factored into each step as well. As this will lie with the manufacturer, make certain they have these relevant certifications or are BRC certified.

Summary - Going from a hobby to a genuine business is a huge step for any new start up. Selling weekends at farmers’ markets or to friends and family unfortunately doesn’t guarantee you are the next Levi Roots. I went out into the working world determined to make my family proud and to do the best I could do. I’m very thankful for what we have achieved with the business and I relish (sorry!) every day. In the early days we aspired to fill an articulated lorry with Tracklements and I remember feeling very proud a few years later when we stood outside and waved it off on its first run to our customers.

STARTER: A STORY FROM YOUR EARLY YEARS THAT HELPED SHAPE YOU I was running a bar called Hurricane in Manchester in 2004 and was lucky enough to meet the world famous bartender, Dale De Groff, when he visited from New York City. He was often referred to as ‘The King Of Cocktails’ so as you can imagine, I was very excited about this. I spent a few days with Dale and his advice was invaluable in helping me decide that I wanted a long term career in the spirits and cocktails industry. After Dale’s visit, he named our bar one of his ‘top five in the world’ in an article in the Sunday Telegraph which was just incredible. My passion for experimenting with flavour pairings is thanks in no small part to that very meeting and the encouragement I was given. Ultimately, it’s what led me to be the distiller I am today.

Before I founded Three Wrens, I felt as though I was trapped in a job as a Brand Manager that involved a lot of travel and too much time away from home. From day one, I’ve been incredibly happy being my own boss, doing what I love, and putting all the passion I have into my work.

This is a story about community and how local people have really supported me and had my back from the beginning.

So, we launched Three Wrens with our flagship rhubarb gin after growing it in our own garden. We then took our first large order and realised we were going to run out, so I issued a plea on social media for any local friends who may have a patch in their garden. That same afternoon, five different families turned up with bags full of rhubarb, without asking for anything in return. They did this just to support our small business, and make sure we could fulfil the order. I’ll always remember it. Ubuntu speaks of our humanity and connectedness and recognises that our own wellbeing is deeply tied to the wellbeing of others. Ubuntu originated in Southern Africa where it has long been a guiding principle in the way others should be treated. The last 18 months have shown us that spirit and I am very lucky that Hoole and Chester showed that spirit with my venue, The Suburbs. When lockdown arrived, panic and stress were at high levels for everyone and as business owner, I had to quickly understand how to survive in such difficult times. Our guests showed their support by ordering Sunday roasts and take-aways through the venue, and they are the only reason the business survived. I am utterly grateful. Yes, and sometimes is my answer. Of course, chocolate is incredible, but it is incredibly technical and requires a lot of science. When I was a kid all I wanted to be was to code computers and you would find me in front of a computer tapping away and when I was on my way to and from school I’d be programming on my Palmtop (giving away my age here!). I learnt that if you want to create something brand new, you really need patience. When you’re tinkering with the code or recipe, change one thing at a time and see what works, refine, refine, refine until it’s the best that it can be.

Starting Lucocoa Chocolate, a bean to bar chocolate company that makes chocolate from scratch is what I’m most proud of. It’s a bold move to try and disrupt the chocolate industry and say that everything the chocolate industry has told us about chocolate is wrong. Dark chocolate isn’t supposed to be bitter, milk chocolate isn’t supposed to be that sweet and white chocolate is actually chocolate. We want people to see chocolate like wine and coffee, different regions create different flavours and to make sure there is no child or slave labour in our supply chain. To do all this I had to teach myself how to make chocolate from roasting cocoa beans to tempering chocolate and everything in between. So, I would say I am proud of that

DESSERT: WHAT IS THE SWEETEST STORY YOU CAN TELL? Probably quite cliché, but my wedding day. I was getting married in a pretty special Place - Temple Church and I had totally forgotten to tell our guests that we would have the choir singing who are stunning. My entrance music was Zadok the Priest (aka the Champions League theme tune) and there’s a long piece of music before the singing and then BOOM! Volcanic Cooking on Ischia

The Samling Windermere Kathryn Otto enjoyed a late summer break at The Samling in the Lake District they find in the woods. The ornamental gardens and water feature are particularly intriguing.

They have a listed Georgian stone Summer House that looks along the length of lake Windermere, but we don’t know the age of the intricately devised water systems – as they run under the buildings common sense dictates they were built as part of the plan. The old fashioned hay meadows provided happy grazing for the hotel bees, housed in hives on the edge of the old orchards, where the deer left their young to shelter in the long grass last Summer.

Restaurant Housed in an impressive new glass fronted space, The Samling’s restaurant is led by Chef Robby Jenks. Here guests can enjoy a modern menu inspired by the breathtaking lakeside panorama with seasonal, locally produced ingredients, with the kitchen garden producing many of the menu’s key ingredients. Robby’s aim is to produce a captivating dining that will delights guests, complimented by an extensive wine list of over 600 bottles. The Chef’s Table is an exhilarating dining experience, positioned directly opposite the kitchen to allow guests to become part of the kitchen experience whilst

The Samling has 12 bedrooms, suites and cottages, each named after a Lake District location and individually designed.

Our Visit After a lovely leisurely drive up to the Lake District taking us around an hour and a half my partner and I arrived at the beautiful Samling Hotel. Once checked in, the first thing we noticed was the mix of a Georgian style building with a glass floor to ceiling extension that is home to their restaurant and gives the most breath-taking views over Lake Windermere.

This is what makes the Samling so special - the views they are simply stunning from every area of the hotel.

We were shown to our room which was a duplex, luxurious double bedroom upstairs and a bathroom with a roll top bathtub and enormous walk in shower along with a living room that led onto a private patio with again those incredible views across the lake.

We wandered into Ambleside, the closest village to the hotel and enjoyed a bite to eat in the sunshine before returning back. We quickly changed and enjoyed a glass of Champagne in the outdoor hot tub that the hotel had arranged for us, which I must say is probably up there with one of the most romantic experiences we have enjoyed.

For our evening meal, we were treated to their modern fine dining tasting menu in the restaurant, which was remarkable, you can see why people visit for the menu alone let alone the views that also come with the experience.

The Lamborghini Countach has been reinvented as an 802bhp hybrid hypercar, and it’s more outrageous than ever before

R

eaders of a certain age might remember the arrival of the Lamborghini Countach. A striking product of the 1970s, it replaced the gorgeous Miura with angular drama, even more power and a whole heap of wedge.

Roughly translated, the word Countach means ‘phwoar’, and few cars have ever been so aptly named.

Now, the Countach name is back, and so is the image. The Countach LPI 800-4 is a modern interpretation of the staggering styling, but with more power, more technology and, hopefully more reliability.

It’d be nice if it was better to drive, too, but we’ll have to wait and see. Still, the early signs are good.

Hiding more or less in the centre of that outrageous body is a 6.5-litre V12 petrol engine producing 769bhp. You wouldn’t have thought that would need any help propelling the LPI 800-4, but Lamborghini has fitted a 48-volt mild-hybrid system. It never takes over from the engine, as it might in a conventional hybrid, but it just helps out when needed, making the throttle more responsive and taking the total power output to 802bhp.

The result is 0-62mph in 2.8 seconds and a top speed of more than 220mph.

If you want one (and let’s face it, you do) you’ll have to move fast. Lamborghini is only going to make 112 of them.

The RS 3 might be the among the smallest of Audi’s performance cars, but it’s also one of the most popular. With bags of power, all-wheel drive and some outlandish styling additions, it’s a firm favourite among those who love a fast hatchback. And with the arrival of a new A3 comes the new RS 3, now with even more pace. A 2.5-litre, five-cylinder petrol engine provides 395bhp, while 0-62mph can take as little as 3.8 seconds.

There are Porsches that can’t keep up with that.

LIFE’S A BEECH Although travel is thankfully restarting, the pandemic is very much still raging. Which is why the idea of having your own aircraft has never seemed so appealing. No mixing with the stag parties in the airport, no boring queues or cramped airline seats. Just clear customs and go. So the arrival of the new Beechcraft Denali is arguably very well timed. With 1,600 nautical miles of range with a pilot and four passengers on board, the single turboprop aircraft is perfect for quick getaways in Europe. Soaking up the rays in the south of France is well within range, as is a winter break in Austria.

Cruising at up to 285 knots (328mph) and at altitudes up to 30,000 feet, the aircraft can seat up to nine people.

As standard, however, you get six reclining seats, huge windows and LED interior lighting, plus a refreshment cabinet and a luggage bay that’s accessible in flight. You can even have a toilet fitted as an optional extra.

Jaguar’s back catalogue is awash with great cars, and the company has been prolific in reincarnating them through its ‘Classic’ programme. So it was only a matter of time before the C-Type got the Classic treatment. And now, as it turns 70 years old, its time has finally come. The car that won the 24-hour race at Le Mans in 1953 has been painstakingly recreated using the latest 3D modelling technology, and a limited number of C-Type Continuation models are going on sale. Each will be approved for racing use and will be eligible for a number of classic racing championships.

Intriguingly named and little-known, South Korean car maker Genesis may have a long way to go, writes James Fossdyke, but the G80 saloon is the car to get there

W

hen you think of Genesis, you’ll probably have one of two things in mind: either the prog rock band or the first book of the Old Testament. But Genesis is now the greatest car company you’ve never heard of. The intriguingly named brand is part of the South Korean conglomerate that gave us Hyundai and Kia, but don’t mistake it for another dull-but-worthy mid-range brand that gives you an impressive warranty, solid reliability and not a lot else.

No, Genesis is here to rival the likes of Mercedes-Benz, Jaguar and Lexus with highend models that ooze luxury and quality. It has form in this regard, having broken the US market years ago – a fact that prompted one of greatest and riskiest PR stunts ever. Shortly after announcing the brand would attempt to overthrow the established premium marques on this side of the Atlantic, extra-curricular activity enthusiast Tiger Woods decided to smash his GV80 SUV into a hillside.

Fortunately, the world’s most famous golfer walked away more or less unscathed, and the Genesis name immediately made the papers.

With safety credentials in no doubt, Genesis’ British holiday home should be built on pretty firm foundations. Not only can you rely on the cars to keep you safe in an accident, but you can rely on them not to break down, either.

Sister brands Hyundai and Kia have a great reputation these days – mainly because their cars are really quite good – but also because they don’t usually grind to a halt.

It’s all very promising, and our early impressions of the Audi Q7-rivalling, Tiger Woods-tested GV80 also gave us reasons to be optimistic. Sure, the ride’s a bit lumpy, no matter what the Genesis marketing people might say, but the GV80 looks great inside and out, and the on-board tech is brilliant. As is the 3.0-litre diesel engine. And when it comes to interior quality, even Lexus struggles to run the newcomer close.

But as strong as the GV80 might be, the G80 saloon is even better. Designed to rival the Mercedes-Benz E-Class and the BMW 5 Series,

it has the capability, charm and charisma to steal customers away from the clutches of the German brands. Okay, it might not be to everyone’s taste, but it doesn’t have to be.

The styling is a case in point. At a glance, it looks a bit too American – like a Grand Theft Auto knock-off of a proper executive saloon – but if you step back, you’ll see it’s quite a good-looking beast. Of all the cars I’ve reviewed for this magazine, be they hypercars or hot hatchbacks, this is the one that got the most attention. Everywhere I went, people were keen to offer their opinion (good or bad), or simply to ask what the hell a Genesis might be. At least half a dozen wondered what kind of Aston Martin it was.

Whatever you think of the exterior, with its blingy grille and overly shiny wheels, you can’t argue with the glorious interior. So what if it’s clearly inspired by Bentley’s current designs? It looks fantastic, with smooth shapes, a real sense of airiness and lovely, lovely wood trim.

It’s classic and modern all at once. And that massive touchscreen is fabulous, albeit not as good as the brilliant digital instrument display.

I must admit, I don’t like the steering wheel design much, and nor do I like the strange rotary controller used to corral the infotainment screen. I think the 2.5-litre engine is a bit thirsty, too. But to chastise the G80 for those minor faults would be a bit like saying you can’t stand Chris Hemsworth because his six-pack isn’t quite symmetrical.

Those petty concerns aside, I like the G80 immensely. It doesn’t try to play the German brands at their own game, preferring to forge its own, very comfortable path to customers’ hearts. Where an Audi A6 or a BMW 5 Series

tries to be sportier and firm and chiselled, the G80 is much softer and more rounded; more genteel. In a world of Cristiano Ronaldos and Owen Farrells, it’s Roger Federer.

Smooth and elegant, but still absolutely brilliant.

That plush, Bentley-esque interior hints at the gentle attitude, which is matched by the marshmallow-soft suspension and the quiet 2.5-litre petrol engine. The overall impression of comfort isn’t quite up to the standards Aladdin might be used to, but it’s close. Certainly, it’s just as supple as the Mercedes-Benz E-Class and far more cushioned than the edgier BMW and Audi models.

Normally, I’d hold the four-cylinder petrol engine against a car like this – they tend to drone far too much when they’re under strain – but this 2.5-litre motor is very, very good. You can barely hear it most of the time, and when it does make its presence felt it does so with a passable impression of a more soulful V6. It has the performance, too, with a

0-62mph time of six seconds flat, but it will drink fuel at the same time.

This isn’t a sporty car, though. Although it has 300bhp to play with, it feels brisk rather than rapid, and the soft suspension means it never really rewards you for driving quickly.

But on an open, flowing road, it’s assured and smooth in a way that only encourages you to use about 70% of the engine’s power.

Relaxation, therefore, is the name of the game.

And that’s fine by me. This chilled-out vibe is all too rare in the world of luxury cars, and Genesis is to be applauded for taking a different path. Of course, if you get forensic and judge cars solely on facts and figures, no five-year warranty will convince you the G80 is measurably better than a Mercedes-Benz E-Class, but it is close. And it’s much more exclusive.

Despite Tiger Woods’ best efforts, Genesis still has a relatively low profile in the UK, and the G80 is almost certain to remain a rare animal over the next few years. But it deserves to succeed, and I hope enough customers are tired of Audis and Mercedes-Benzes to ensure its survival.

How to Start Collecting Art Owner of Collect Art, Martin Heaps shares his top tips on how to start your art collection journey

hether you are looking to acquire art for decorative purposes, as an investment, or for a love and passion for the arts, building a strong art collection requires time and knowledge.

The world of art is a wonderful place to explore and discover as it is full of artists with diverse practices and styles. Whether you want to buy your first major work, or simply want to enhance your experience at a fair or gallery opening, all it takes is an open mind and some curiosity.

We spoke to Martin Heaps, Founder and Owner of Collect Art, as he is passionate about helping people to get started in collecting art. Martin says, “Collecting art is a very subjective experience, but it is also a great way to showcase aspects of your personality and make a statement about who exactly

He continues, “Many people think of buying art as an investment. While many people consider buying art solely for investment purposes, it’s really important for new buyers to understand that there are no guarantees when it comes to investing in art.

If a return on art investment is your primary driver for collecting art, you will have to look at established artists which means their art will be more expensive to purchase.”

Martin suggests spending time to learn about the various types of artworks, mediums, and styles. Read up on artists and visit museums and your local art galleries. The more art you see, the more you will start understanding the difference between various techniques, mediums, and styles used by different artists. Most importantly, you will train your mind

and eye to identify the types of art you love and enjoy more than others.

If you have never acquired a work of art before, there are a number of important things you should consider before making that decisive purchase. The first thing is to ensure the painting has provenance, which is the documentation that authenticates a particular piece of art. These documents outline details like the work’s creator, history, and appraisal value. It is also important to focus on quality not quantity. Take your time between buying works, you might find that what you bought six months ago is no longer to your tastes. Also, remember that even if you really love a work, it is always better to buy a work that is in good condition – having to restore a work in poor condition can drive up the cost of it significantly.

Martin also suggests weighing up your risks. With any form of investment, higher returns are often tagged to higher risks.

“You may see or hear of other collectors buying young emerging artists and making a good profit reselling them later, and it’s tempting to follow suit. However, we strongly recommend that art should not be purchased for pure investment.”

You need to like the artwork, be willing to

live with the piece, and believe in the artist’s career.

If you’re completely new to the field, it’s better buy something a bit more conservative and collect the tried and tested favourites.

There is no short cut to connoisseurship, and it does take time, energy and money. Talking to artists, other collectors, curators and art advisors and using the plethora of information available on the internet will increase the pace of learning.

Iberian Modern House A rural makeover project in one of Spain’s most beautiful villages

ubielos de Mora, the gateway to one of Europe’s oldest areas, is home to a rural mansion that is both an architectural and design gem. The site could not be more ideal, since the area has received numerous awards, including the Europa Nostra Award and recognition as one of Spain’s “most beautiful villages.”

The house is a great example of Rubielos’ typical Vernacular architecture. All of these techniques, from iron fittings to wood and stonework, are merged in one work, making this project ageless and elevating tradition. With various styles and a panoply of furniture, lighting and accessories, Covet House’s brands where the perfect piece to provide this totally new makeover.

D

amage from a water leak is one of the most common reasons for home insurance claims, and it can be expensive and time consuming to put right, often requiring homeowners to move into alternative accommodation for weeks, or even months.

Beth Owen from NFU Mutual talks about how to protect your home from water damage and what to do in an emergency:

1. Make sure you and your family know where the stopcock is to cut off the water supply.

2. Check for leaks and signs of corrosion around the home on radiators and plumbing.

3. Consider using a pipe detector before drilling into your walls to avoid hitting a pipe.

4. Protect your pipes from freezing by insulating exposed pipes, and ensuring your thermostat maintains a minimum of 10°C to keep warm water circulating.

5. Check what your home insurance offers

for alternative accommodation, home emergency, and trace and access services (to find the source of the leak), and that these meet you and your family’s needs.

And, if you do discover a water leak, follow these steps to act quickly: 1. Turn off the water supply to prevent more water from flowing into the pipes and causing further damage.

2. Once the water is off, turn on all the cold taps to drain excess water from the system.

3. Turn off any immersion heater and central heating system to prevent heating the system whilst it’s empty, as this could cause damage.

4. If in doubt if water has leaked onto any electrics, turn off the electricity supply immediately at the fuse box. Be cautious, wet electrical wiring or sockets can be dangerous so do not touch them.

5. Check for water damage – in particular ceilings bulging caused by water pooling

above. Stay clear of any ceilings which are bulging significantly, in case they collapse.

6. Consult a professional – whether that’s through your insurance provider or privately, and ensure you consult a plumber and electrician before the water and electricity are turned back on.
