Where is home? And work?

I live in Mollington, Chester. I grew up in a small village on the outskirts of Wrexham, where my parents still are, but have also lived in South Wales, Barcelona, Sydney, Liverpool and Manchester.

Work is in Chester city centre.

What did you want to be when you were younger?

Older! No, originally a doctor but I’m really glad I didn’t eventually choose that particular route.

Name a few of your favourite places to be...

Spending time with my family and friends, looking after my little black lab puppies (Bella and Drake), up a mountain somewhere, on holiday (I love skiing…), listening to live music or exercising/playing sport.

“Trust your gut every time.

And don’t look back or dwell on the past” Who inspires you?

My dad. The nicest and most humble, honest man on the planet. He retired as a doctor in 2008 and is now building a jet engine (and has two worldwide patents!).

What was the last gift you gave someone?

Flowers for my girlfriend, Bryony.

I once recorded a studio album.

Who or what would you place in Room 101?

Mushrooms, bad drivers and hangovers.

Christmas Matt Terry talks to Craig Hough about his X Factor experience and upcoming part in The Grinch That Stole Christmas at The Lowry Theatre

Your career really took off after being crowned the winner of The X Factor. How was the experience as a whole, from learning new songs and choreography each week to gaining such support from fans up and down the country?

It was definitely an experience that changed my life massively. I found it a huge learning curve.

I really got on board with it and took it for what it was and learned a lot on the show. I’ll be forever grateful. It feels like the country has got me to where I am, which means a lot.

“ Growing up all I wanted to do was sing” Even now I walk down the street and people just say “hello” like they know me and I just say hello back, it’s the least I can do I suppose. On the show, at the beginning of each week, we workshopped some songs and then once we picked our favourite we would have a couple of days to rehearse and get the choreography down. By the final, we had three songs to learn. You are put in that position and you just have to make it work. It’s a lot of work but it was worth it and paid off.

The Pussycat Doll’s have recently reunited to huge fanfare and their lead singer was your mentor. How was it working with Nicole and what was going through your mind as she came out to duet with you at the final?

Yeah, it's nuts. I think there’s no way to explain that feeling or how you get through it. I always look back at it and think “Woah, I did that.

That’s crazy”. It’s great. It’s a memory that you will never forget.

Living in a house with all the other contestants must have been intense, do you all stay in touch?

Is there an X Factor WhatsApp group?

Because we were all so busy we didn’t really have time to actually be in the house. We were all on different schedules – someone would be in choreography, someone would be in make-up, someone would be in singing or choosing their song, someone might be filming.

They were always such busy days, so we didn’t spend that much time in the house.

We literally just went there to sleep and that was it really. We haven’t really stayed in touch at all as we all went our separate ways, but we always have that memory and experience to share.

On your debut album you released a single with Enrique Iglesias and Sean Paul, how did that come about?

I was in Miami at the time and I got a call from my label and they were looking for someone to get on the track and I spoke Spanish, so that helped. I recorded it and Enrique was really happy, so we released it.

You joined Madagascar the Musical in 2018, how was the change from pop star to musical star?

I just had a call from my agent saying this opportunity has come up for you, it’s not a regular role but one that's been created for you and because I’ve got a background in musical theatre I decided to take it on. It was great, we toured up and down the country and I met some friends for life on there. I had a blast, it was so much fun to do. Growing up all I wanted to do was sing and ended up going to a musical theatre colleague, on a scholarship for three years, so musical theatre was the first option really.

Then I fell into the pop world which of course I love.

It’s great to have the option to do both.

You are all set to join the cast for Dr. Seuss’ How The Grinch Stole Christmas. What are the basics of the story and what role do you play?

The musical is based on a mixture of the movie (with Jim Carrey) and the book. The story is about The Grinch who hates Christmas so decides to steal it, by taking away all the presents. His heart is warmed by one of the children and he ends up restoring Christmas. The moral of the story is that Christmas is not about the gifts, it’s all about the people that you’re with, the love and being together.

“ All of the songs are original, catchy songs with some you may recognise from the movie and we have a sing-a-long” That’s the message of the show. We’ve just come back from Wales, finishing in Cardiff and we sold out the Motorpoint Arena all week so it’s great, it's really going really well. It’s hard, a very physical show and a real challenge, but one that I love and enjoy. I play Max who is the Grinch’s sidekick and together we take on the show. All of the songs are original, catchy songs with some you may recognise from the movie and we have a sing-a-long within the show as well.

This tour has a Manchester date at The Lowry.

Have you any fond memories of the city?

Probably The X Factor tour when we went up there.

I just remember the nightlife there was always so fun and the people are so nice. I find northerners to be so friendly and greet you with open arms, which is kinda cool.

Finally, what can we expect from you in 2020?

We have a musical in the pipeline, which I cannot reveal at the minute. I’m also going to my own tour as well throughout the summer so I have a full exciting year ahead.

WATCH This Space Craig Hough talks to Luxury Watch Repairs Founder Oliver Pollock about his business and setting up a new home at Harvey Nichols in Manchester Luxury Watch Repair is a family run business, what is the story behind the start and success of the company, and what is your involvement?

My family has worked in watches for generations on the manufacturing side. They originally started in watch straps and then I saw a gap in the market, a number of years ago, for repairs and servicing and Luxury Watch Repairs was born. I wanted to offer a watch repair service which is focused on exceptional customer service, competitive pricing and fast turnaround times. We also invested heavily into our service centre to ensure it is ‘Swiss’ standard and sought affiliation with a number of the leading brands, in order to become an official service centre. This ensures that we have unrestricted access to parts and materials and that our watchmakers can receive the most up to date training required for new calibres. For example, we are a Level 3 Omega service centre. This is the highest accreditation awarded by the brand and ensures that when your watch is being serviced, it receives the same

treatment as if it was sent directly to the manufacture’s factory; all required parts are replaced, the seals and crowns are replaced, the case and bracelet are polished and re-finished and of course, a two year warranty.

We currently have nine watchmakers, a customer service team of eight, a dedicated refurbishment and polish department, a vintage department and our team is still growing. Our main service centre is based at 88-90 Hatton Garden in London where many clients choose to drop off their watches directly and we also have a unique postage pack system which is free to use and insures your watch to £25,000.

It works well for us as we get customers from Harvey Nichols coming over and Harvey Nichols also get to offer a new service to their customers. The very first day we opened we had customers coming over to us, offering a vast number of new clients, with zero advertising or marketing.

What services do you offer?

The company is well established in Hatton Garden in London, what was the catalyst to move up north, and why Manchester?

The reason we opened in Manchester was that we saw so many of our customers were from the city and the north-west. Harvey Nichols is an amazing partner for us and on-site we are able to replace and fit batteries, refills carry out re-seals, bracelet repairs and adjustments and many other types of repairs. More significant repairs or restorations are securely transported down to our main service centre in London and we have also recently opened up a workshop in Manchester so anything that can’t be done in-store can be sent to the workshop straight away. We were actually looking to open a stand-alone shop in the city.

I went up to view some stores with our Operational Manager and decided to go for lunch in Harvey Nichols and thought ‘wow, what a beautiful store’. We loved it and found a really nice synergy so decided to speak to them and to see if they were interested. We had a deal confirmed within a matter of weeks.

We do everything from the smallest job (for example battery replacement, taking a link out or a basic repair) all through to the most extensive overhauls and services and complicated watches. We do restoration watches, meaning restoring watches that have been in fires. I actually did an article in the New York Times a year ago called “My watches were in a fire, Now What?”. Every day we have customers coming to us with rusted watches or ones filled with water! In Hatton Garden we have a vintage department where we have three watchmakers dedicated purely to restoring vintage watches. This is really rare as there’s only a handful of other places in the whole of the UK that offer this service and we are proud to offer services such as dial restorations and bracelet restorations also.

Where do you source your parts for these vintage watches?

We manufacture a lot of them, so we make them from scratch. We have a huge stock of brand-new old parts and if we don’t have them we say to the clients ‘these parts are obsolete they stopped making them 80 years ago (for example) but we can manufacture the part for you’. We then let the client know the cost and timescale as it can often take a number of months.

What should customers expect from a standard watch service?

You can expect the entire watch to be dismantled, so the case and bracelet get separated and then go to the cleaning department where they are steam cleaned, ultrasonically cleaned and polished and refinished where appropriate. The movement then goes to the watchmakers where it is ultrasonically cleaned. Then each individual part is checked (and we are most often talking a minimum of 100 parts), including the

screws, each wheel and they’ll see what’s worn, what’s damaged and what needs to be replaced. Next, they separate what’s worn or damaged and they’ll replace them all with brand new parts. Then they will rebuild the movement, lubricate the movement, change all the seals and gaskets (which deteriorate naturally over time). They will then rebuild the watch, test it for a minimum of five days, test the tolerances and then place it on a watch winder which is a very cool piece of machinery which simulates the movement of the wrist. It typically stays on test for a number of days, making sure that the watch is powering up and keeping time. When that’s all done it’ll go through water resistance and pressure checks to make sure its waterproof again (if it was a waterproof watch originally of course). The watch then heads to our Quality Control team which check every aspect again and then can sign the watch out as completed and the customer is provided with a two year warranty.

As we come to the end of the year, what are the company plans for 2020?

Julie Austin-Kaye Craig Hough grabs a coffee with the Chester-based owner of Kaftan Heaven What inspired you to start Kaftan Heaven?

My initial inspiration dates back a long time ago to when I worked for Club Méditéranée, then the go-to international holiday company for Europe’s beau monde. Selling coloured beads (the resort currency) to aristocrats, playboys and the like in destinations from Mexico to Brazil, Greece and Italy. That lifestyle planted in me a seed, a love for colour and warmth, exotic destinations, unique patterns and free flowing and easy to wear clothing. This then all lay dormant for over twenty years as I pursued my teaching career culminating in a position as Head of Modern Languages at a top Liverpool school. During these years, creativity was restricted to the more prosaic tasks of kitchen design and home refurbishment, but this butterfly in me still kept flexing its wings.

The turning point was during a trip to Australia, visiting my antipodean daughter who gifted me the most beautiful luxury kaftan.

There and then, was my lightbulb moment. I

decided that I wanted to design and make items like this but for real women of all sizes, in a range of styles at a more affordable price point.

Returning to the UK on a miserable January morning, cold but undaunted, I made my very first sketches and Kaftan Heaven was born.

“Kaftan “refers to any piece of clothing that is relaxed, loose fitting and easy to wear and “Heaven” because of the vibrant colours, fabric and prints.

What does a day in the life of you as a designer look like?

I’d love to say that I wake up at 7.00 am, drink my fruit juice, do my daily yoga and meditation,

but instead it is a very unglamorous, busy morning! After my muchneeded caffeine fix I check my Instagram messages and emails before I wrap up and go out to feed my hens and take my two very shabby chic rescue mutts out for a walk.

After 9:00 it’s down to business in my studio, where my day is spent multitasking: everything from drawing, print design, marketing, photography and reviewing my collections before they go into limited production in between seeing private clients.

The evening is my downtime to relax and collect my thoughts with a glass of chilled white wine and my dogs on the sofa.

How do you gather inspirations for your designs?

I find that you can’t decide when you’re going to have a creative day, it just happens when you least expect it. I could be at a gallery, flicking through magazines or travelling abroad when something catches my eye: a painting, cushion, tile, colour scheme or wallpaper. I gather inspiration from things around me which I then incorporate and develop into the final product. The whole process can take up to three months.

My collection constantly evolves in response to feedback from my clients.

The idea is that my fashion should be versatile, easy to wear, bringing a splash of colour to everyone’s wardrobe and not be just restricted to holidays.

What is your favourite part of the job?

Seeing my initial ideas materialise into a finished product is very fulfilling. However, my favourite part is helping clients find something that they love to wear, whether it’s for an up-coming holiday, special event or as a unique piece to add to their spring/summer wardrobe.

It is also very rewarding when I hear how many compliments women receive when they wear one of my pieces. I am happy to say that I have women of all ages come to me for something different to what they find on the high street. I aim to make women feel special using colour, bespoke prints and flattering designs that lift our mood and cheer us up.

What do you have planned for 2020?

I aim to expand my brand and sell in more shops in the UK and abroad. My designs are already available in an exclusive boutique in Barbados, thanks to my friend and good client, Sue (who is part of the ChloBo brand. Another 2020 project is launching my new interactive shopping website, allowing me to sell to a wider client base.

Tell us what brought you to your current position?

I initially worked at the White House in Cheshire before progressing my career to Restaurant Bar and Grill Group. I was then offered the Food Operations position with Bills in 2014 and have happily worked there ever since.

What is your favourite style of food?

I like anything fresh and unfussed. Something that lets the ingredients shine. My wife is a vegetarian, so I eat quite a lot of non-meat based dishes at home.

What's your favourite ingredient and why?

It would have to be fresh chillies, there are very few dishes that don’t benefit from a bit of added heat.

What is your favourite drink?

I like a decent bottle of red wine, ideally a Spanish Tempranillo. It reminds me of my holidays.

What piece of kitchen kit, could you not live without?

A good old pair of kitchen tongs, absolutely indispensable.

Who inspires you and why?

I had the pleasure of working with Alan Earle for around 5 years, He was Head Chef at GRH and his passion and knowledge for food was incredible. He had a huge talent for bringing the best out in people.

ALDERLEY EDGE HOTEL GAME NIGHT Best for...

Classic British dishes with a modern twist

W

e headed over to the beautifully renovated Alderley Edge Hotel Bar & Restaurant, for what promised to be an exciting 'Game' night with not one board or die in sight! Colin Starkey has been Executive Head Chef since November 2018 and brings with him 20 years of professional culinary experience. My husband and I enjoyed four courses, delivered as little works of art, focused around game meat, each served with a glass of complementary paired wine and some surprising twists along the way.

We began our game extravaganza with carpaccio of venison, crispy venison croquette, hazelnut & shallot dressing accompanied by a glass of Rock Angel by Whispering Angel. The carpaccio was beautifully tender, and the savoury parmesan shaving added an umami saltiness that with the nutty dressing danced across your tongue beautifully. The ever so slightly oaked wine was a perfect accompaniment to the rich venison.

Our not so eagerly awaited second course was a rabbit ragu ravioli, roasted loin & spinach, heritage tomato, lemon & parsley which was served with a glass of Monte De Ravasquiera Red. Now, rabbit and I don't usually go well together. However, I was more than surprised! The ragu was beautiful, seasoned well and the ravioli was soft and

delicate in texture. The rabbit loin was perfectly roasted and wrapped in spinach and bacon, sprinkled with cubed, gem-like heritage tomatoes which added a slight acidity, again lifting the dish and adding a palate-cleansing touch.

The Portuguese red was leggy with a deep red cherry and rich tomato quality from the Tempranillo element of the blend.

Our penultimate course was salt chambered duck breast, roasted fig & brioche, stem ginger jus accompanied by a Cranswick 'Sarus' Barossa Shiraz. The duck was cooked to perfection, and the zesty warmth of the ginger shone through the rich and full-bodied sauce which was bejewelled with tiny fractured cocoa nibs adding just the right amount of bitterness to what could have been an overly figgy sweet sauce. The wine served was my favourite of the evening soft on the palate yet deep and smokey on the nose from Cranswick Estate, Australia.

The night was rounded off with a single origin dark chocolate pavé, single malt whiskey & pecan brittle hand in hand with

an uber sweet Domaine Bousquet Malbec Dulce.

If you like desserts, this is one for you; the portion was immense for such a rich, velvety dessert. The pavé flavour was a chocolate lovers dream, topped with every 90's kid sweet staple, popping candy. The sweet portstyle, fortified Malbec with its roundness and voluptuousness from the south of France, was lively with hints of spice and coffee with a fruity note. Not forgetting the homemade Baileys chocolate truffles... naughty but oh so nice.

I would encourage anyone to go and try out some of Colins outstanding dishes and tasting menus at the Alderley Edge Hotel Bar & Restaurant. You will be glad you did!

INGREDIENTS DONALD RUSSELL TURKEY AND STUFFING CIABATTA INGREDIENTS Donald Russell Turkey, Ciabatta, Gravy, Butter, Mayonnaise, Stuffing, Cranberry Sauce

METHOD Slice the ciabatta into three even pieces Soak the middle layer in gravy Warm the turkey slices under the grill gently so it doesn’t dry out Bake the left-over stuffing in the oven to crisp up. If you have any left-over roast potatoes, add them onto your tray too Toast the other two slices of ciabatta. Add butter and mayonnaise, along with your roast potatoes and stuffing on one piece of ciabatta Place the soaked layer of ciabatta on top of the potatoes and stuffing, with the turkey placed on top of that Add a few teaspoons of cranberry sauce and finally the top layer of ciabatta

METHOD Pick down the legs and breast meat that is left - dice the ham Make (or purchase) a simple béchamel sauce and run the turkey, ham and pasta through Make a simple herb crumb by blending any left-over breads you have from your Christmas starter with soft herbs (chervil, parsley) Sprinkle over the top and bake Top Tip: Adding cheese to your béchamel sauce will make it extra indulgent and gooey! This dish is lovely for a cold day- a true winter warmer. www.20stories.co.uk

Dan Speak, Head Chef of 1539 at Chester Racecourse shares his Christmas leftovers recipe

TURKEY PICCATA, TURKEY AND MUSHROOM PIE, CREAMED LEEKS, ROOT VEGETABLE MASH, MUSHROOM KETCHUP

INGREDIENTS Large slices of Donald Russell turkey breast approx 2cm thick Flaked down leftover turkey leg, 150g Sliced mushrooms, 2 shallots, 1 leek, 200ml double cream, 1 carrot, 1 small swede, 1 parsnip, 2 eggs, Flour for panne, Tablespoon Sherry vinegar, 300g butter, Thyme Pastry mix (will make 4-6 small pies) : 100g butter room temp, 200g plain flour, 1 egg, splash of water, extra egg yolk for egg wash

METHOD Start with the mushroom ketchup, sweat down 1 shallot, finely diced, add chopped thyme and then 100g of sliced mushrooms.

Once the mushrooms have softened add the sherry vinegar and cover mushrooms with water. Cook out until all liquid has reduced and gone, cover with water again and repeat the process until all the liquid is gone and blend to a smooth puree.

Keep warm for service.

For the pie, sweat down the other shallot, add a little thyme, 50g sliced mushrooms. Once the mushrooms are fully cooked add the flaked turkey leg, and 50ml cream, then bring to boil, check seasoning then leave to cool before making the pies (NB when making the pies only roll out the pastry once or it will get tough. Place a hole in the top of the pies or they could split open, don’t forget to grease your pie dishes). Make up 72

individual pies, egg wash with just yolk for an extra glossy finish, bake at 180°C for 20 minutes.

For the root vegetable mash, evenly cut up peeled carrot, swede and parsnip cover with water, add a good pinch of salt, 100g butter cover with lid and bring to boil then simmer until very soft. Drain well then mash with either a hand blender or normal hand masher, add 100g butter, salt if needed and freshly milled pepper.

For the leeks, put raw leeks and remaining cream in a small pan, season well, bring to the boil then reduce to medium heat cook out for a further 5 minutes until the leeks have softened and the cream has reduced by two thirds.

For the turkey piccata take a couple of nice slices of turkey, dust with flour then coat in beaten whole egg, In a none stick pan add 100g butter heat until foaming, place in egg coated turkey seal on both sides with good colour, then place turkey on to a baking tray and put in oven 180°C for approx 10 minutes.

Plate up as desired add a little gravy to finish the dish.

Top Tips: When using pre-cooked foods ensure that they have been stored properly below 8 degrees and are reheated properly to over 75 degrees celsius.

For the gravy I used the roasted bones then deglazed the roasting tray with vegetables, a little plain flour and white wine then cooked out in the water for 3 hours, passed and reduced to form a gravy. Please be careful as the gravy contains flour so needs watching so that it doesn’t catch on the bottom of the pan. www.restaurant1539.co.uk

Sam Platt from The Vegetarian Society shares her Paprika Jackfruit with crushed winter vegetables, brussels sprout leaves and vegetable crisps

JACKFRUIT WITH CRUSHED WINTER VEGETABLES, BRUSSELS SPROUT LEAVES AND VEGETABLE CRISPS

INGREDIENTS THE SAUCE: 1 tbsp olive oil; 3 shallots, finely chopped; 1 clove garlic, crushed; 2 tbsp tomato purée; 175ml vegan red wine; 400g chopped tomatoes; Pinch dried oregano; Salt and pepper, to taste THE JACKFRUIT: 1 tbsp olive oil; ½ red onion, sliced; 400g can jackfruit, drained and rinsed; Pinch dried oregano; Pinch chilli flakes; ¼ tsp smoked paprika; 2 tbsp cider vinegar; 50g agave syrup; Salt and pepper, to taste THE CRUSHED WINTER VEGETABLES AND VEGETABLE CRISPS: 1 carrot, chopped into rough dice; 1 parsnip, chopped into rough dice; ¼ swede, chopped into rough dice; Pepper, to taste; 1 tbsp olive oil THE VEGETABLE CRISPS: 500ml vegetable oil for deep frying; 1 carrot; 1 parsnip TO GARNISH: 3 Brussels sprouts, outer leaves only

METHOD To make the sauce: In a large pan, cook the shallots in the oil over a medium heat until soft. Add the crushed garlic and cook for a minute, then add the tomato purée and cook for another 2 minutes.

Add the red wine to the pan and simmer (uncovered) until it reduces by half.

Add the chopped tomatoes and oregano. Bring back to a low

simmer and cook the sauce for 15 minutes. Remove the pan from the heat and allow to cool slightly before blending into a purée.

Season to taste.

To make the jackfruit: Preheat the oven to 180°C/gas mark 4. In a large pan, fry the onion in the oil over a medium heat until softened.

Add the jackfruit, oregano and spices and cook for a further 5 minutes. Remove from the heat and mix in the vinegar and agave syrup.

Transfer the jackfruit mixture onto a baking tray. Cover with foil and cook in the oven for 20 minutes. After 20 minutes, remove the foil and cook for a further 5 minutes. Season to taste.

For the winter vegetables: Boil the vegetables in salted water for 5-10 minutes until they start to soften. Drain, then fry in the olive oil for 5 minutes, while crushing. Season to taste.

To make the vegetable crisps: Heat the oil to 160°C in a large, wide, sturdy pan (so it is no more than half full). Use a potato peeler to create strips from the carrot and parsnip and fry until golden. Drain on kitchen towel and leave to crisp up.

For the garnish: Bring a small saucepan of salted water to the boil.

Remove the leaves from the Brussels sprouts and blanch them in the water for 2 minutes. Pat them dry on kitchen towel and set aside.

To assemble the final dish: Place the crushed winter vegetables in the centre of the plate, place the jackfruit on top and finish with Brussels sprout leaves and vegetable crisps. Pour the sauce around the outside. www.vegsoc.org 73

I think warm canapés this time of year work well. Festive favourites such as roasted chestnut and mushroom rolls are simple yet impressive. You can easily prepare them in the morning, store in the fridge and then pop them in the oven when your guests arrive.

Drinks also can be pre-prepared. Making a batch of your favourite cocktail is a good idea or if you are getting into the spirt. Mulled Wine is a festive party starter or after dinner drink served with mince pies.

With a short two-hour train journey from Chester, I was ready to see what a Luxury Doyle Collection had to offer.

Lobby

On arrival I entered the brand-new lobby and welcome space, complete with a sleek and stylish bar, offering the perfect social stop and alternative hub to the hotel’s existing 108 Brasserie. The new Lobby Bar was designed in collaboration with Fettle and the in-house design team, led by Chairman of The Doyle Collection, Bernie Gallagher. Together, they have transformed the space into a stylish, botanical-inspired haven. The cocktail bar is divided into several distinct areas including Spring, Autumn and Winter lounges, alongside a stunning Summer terrace. Interiors are sumptuous with plush armchairs, panelled walls and an impressive selection of art on display.

The lobby bar is the centre point of the hotel and perfectly represents the hotel’s new look, drawing together all elements of design, light and atmosphere. The friendly team quickly checked me in and guided me to my stunning suite.

Accommodation

The Marylebone recently went through a refurbishment which includes the hotel’s three wow-factor Terrace Suites. The collection of stylish and modern suites offers unrivalled views over the rooftops and chimney pots of Marylebone and Mayfair, all the way to The Shard and beyond. The

The Marylebone London Craig Hough took a trip to the capital for a weekend break at a Luxury Doyle Collection hotel spacious suites are an unusual treat in such a central location and the main attraction are the huge terraces with retractable roofs, fireplaces, televisions and comfortable seating areas. Special suite amenities include VIP airport pick-ups, a dedicated ‘Cocktail Butler’ for pre-dinner drinks and unpacking/packing service. A knock at the door before dinner saw me presented with a bottle of Perrier-Jouët Champagne which was more than welcomed. After enjoying a glass with a friend, we made our way downstairs for dinner.

Dining is an event in itself at The Marylebone, thanks to 108 Brasserie and 108 Pantry.

Considered a stand-alone restaurant, 108 is woven into the fabric of Marylebone, specialising in British cuisine using fresh produce from local suppliers, all served in a contemporary and stylish setting. During the evening, the atmospheric bar and restaurant is the place to be seen. To start, we opted for the spinach and quail’s egg tart, which came with a baby leaf salad and the tasty cauliflower soup, with Welsh rarebit toast. For my main, I had the heritage rib-eye steak (8oz) which 80

guests have access to the gym and are welcome to join fitness classes which range from cardio to combat, conditioning, cycling, dance, Pilates and Yoga.

came with a gorgeous Béarnaise sauce with sides of hand-cut chips and buttered steam spinach. My dining partner chose the Massaman tiger prawn curry with steamed Jasmine rice which was quickly devoured. To finish we shared a vanilla crème brûlée with raspberries and washed it down with a glass of Pillitteri Estate, a Canadian Riesling Icewine on the suggestion of our attentive waiter.

After an incredible night’s sleep, I made my way to the hotel’s indoor swimming pool situated in the hotel’s basement. The spa offers treatments by Elemis and is a tranquil escape in the bustling city.

Francesca Lee-Rogers falls head over heels with Sani, a family-friendly resort in Halkidiki, Greece, so much so that she never wants to leave

Y

ou know you’ve had a good break when as soon as you land, you’re already scanning the TUI and BA sites to look at returning. And, as a travel journalist, I’m not usually one to go back to the same hotel. Sani is definitely an exception though – I can see why many of its holidaymakers go back year on year. Its reputation follows it too; and as a relatively recent new mum, as soon as I mentioned going to Sani to my friends, the oohs and ahhs followed.

Sani Resort is, in fact, a group of separate luxury beach hotels and properties, owned by

the same company. A privately developed ecological reserve offering 1,000 acres of forests, wetlands and stunning beaches, it sits on the rocky Kassandra peninsula at the southern peak of Halkidiki on the Greek mainland and overlooks Mount Olympus.

Situated just a one-hour drive from Thessaloniki airport, it’s easily accessible too. A bonus when you have a little one.

My husband and I and our 16-month son stay at Sani Beach, which has 392 rooms and suites altogether and where I would recommend staying if you have young children and want to be close to the heart of the action. Our

home-from-home is a luxurious family suite, which comprises two spacious bedrooms, a separate living area and two marble bathrooms complete with Anne Semonin products. The contemporary and opulent design features floor-to-ceiling windows, Dream Beds – that live up to their name – and a balcony with views over the Aegean Sea. It makes for some pinch-me moments, and it only gets better.

Opting for Sani’s VIP Service means that instead of phoning guest services, we can ask any query directly with the guest services manager on a private WhatsApp group, which makes our stay hassle-free; we use it for everything from booking restaurants to checking details about the laundry facilities; asking what’s on to finding out more information about the Resort’s new adventure park and splash park (both must-dos, but more on these later).

When it comes to dining, the Resort has an astonishing 24 restaurants – including the only caviar restaurant in Greece – while Sani Beach alone has four. For our first breakfast we head to the main eatery of Sani Beach, Poseidon.

The buffet means there are plentiful options and we enjoy everything from mouth-watering watermelon to delicious pancakes, a cooked breakfast to an impressive cheeseboard, and conclude with an abundance of sweet options such as doughnuts, muffins, and cakes. That evening, we dine at Ammos restaurant on the Dine Around menu; this means you can enjoy a set menu in many of the restaurants without any extra charges, or

you can use an allowance towards à la carte.

Situated on the beach overlooking the ocean, it makes for a romantic meal as we watch the sunset while enjoying a three-course meal as we listen to DJ Miro who plays chilled out dance music. Other restaurants we dine at include the Japanese restaurant Katsu in the marina where we sample a delicious range of sushi and sashimi (but be warned: it’s a little on the pricey side) and Vosporos Grill House, which is a Greek taverna with a brilliant atmosphere and excellent food: we eat the four-course Dine Around menu which includes the potato soup and Greek salad for starters, followed by the “Souvlaki” pork skewers with pita bread and freshly cut fried potatoes for main and chocolate pie for dessert. The meal was simply faultless.

Due to its size, it’s easy to not leave the Resort; with so much on offer, from shopping in the high-end stores in the marina to taking the bi-weekly complimentary sunset cruise, there’s plenty to keep you entertained when you’re not relaxing by one of the pools or on one of the many beaches. And couples who have a baby and wish to swim in the sea together can do so with the Babe Watch service on the beach where a dedicated childcarer will

look after little ones for up to 30 minutes a day free of charge.

Those who enjoy an active holiday can visit the brand new Rafa Nadal Tennis Centre.

Developed by the Grand Slam-winning tennis legend, it’s a rare opportunity for all of the family to hone their tennis skills and have a lot of fun doing so. There’s also the Chelsea FC Football Academy for four to 16-year-olds; a PADI dive centre; biking academy, watersports such as water-skiing, sailing and paddleboard yoga; bird watching; forest walks and guided jogging. Not forgetting the many excursions on offer such as the local wine-tasting tours and guided coastal hikes. If you do wish to venture further afield, the Resort makes for a lavish base for exploring Halkidiki’s coastline – Afytos village with its hypnotising clifftop views is just 15km away, while the unspoilt beaches of the Sithonia peninsula are also close by.

During our stay, my husband and I drop our son off at Sani Crèche for the afternoon session (3-6 pm) so that we can try out the new Sani

Adventure Park (from ages six plus), a thrill-seeking treetop adventure experience, similar to Go Ape. There are two training courses, two family courses, and two youth courses – all of which are colour-coded and offer differing levels of challenges. We thoroughly enjoy unleashing our inner Tarzans as we zip-line through the trees, cross challenging bridges and step on tree platforms as we take in Sani’s natural surroundings.

Last but not least, another highlight was to go to the Sani splash park, another new addition for this year. Featuring water jets, surprise buckets of water that tip and a mini water slide, it was a huge hit with our son. So much so, he wasn’t very happy about leaving. And it’s fair to say, neither were we. through the years surrounded by the river. The property has been home to a small band of monks, a fishing retreat for the 3rd Duke of Marlborough, visits from King Edward VII and Queen Alexandra and a variety of celebrities of the day from actors and singers to high society.

Known most recently as a gourmet hotspot through the 1980s it was, until 2015, a forgotten location until it was admired and given a new lease of life by the Chairman of the YTL corporation. After much love and attention, the white bricked Pavilion and Temple buildings located on Monkey Island have been restored to offer 41 carefully considered boutique hotel rooms and private residences.

It’s not simply the Pavilion and Temple buildings which have received loving renovations, the property is set on seven acres, comprising curated gardens and quintessentially British countryside. The grounds have been

carefully restored with the help of resident YTL Hotel’s horticulturalist Bradley Burgess, who also offers a personalised tour of the grounds to re-create elements of Monkey Island’s gardens at home. The focus on the gardens is reflected through many areas of the property including potions in the spa, teas and infusions in the bar and carefully curated gourmet in the kitchens. A key aspect of the gardens is the medicinal plants and herbs which can be found growing throughout the property. They line the wildflower garden path which winds its way along the riverbank to the Floating Spa, a restored barge which offers a unique selection of treatments completely based on the water.

The barge itself is moored to the banks and the treatment rooms and Remedy Bar, which is based on the Worshipful Society of Apothecaries’ barge which traded on the Thames in the 1700s, offers a bright and airy sanctuary in which to retreat and relax. The treatments themselves take either from the healing energies of the water surrounding the spa or play on the history of the island. For example, one treatment is inspired by the monks who once inhabited the island and its riverine surrounds, The Monks Elixir – Booze, Botany and Beauty includes an ‘Elixir Tasting’ of one of the monk-brewed ancient herbal tonics: Chartreuse, D.O.M Benedictine or Frangelico. Most

of the treatments make use of house-cured herbal oils which come from the estate’s gardens or The Experimental Teahouse located on the property, tapping into nature’s healing powers.

Further treatments have been created in partnership with spa brand Moss of the Isles and include The Floating Massage, an usual treatment which combines the relief of deepseated tension with the sensation of floating on water through specially designed aqua cushions.

The room itself is awash with blue light, mimicking the gentle surrounding waters and complementing the scents of a variety of powerful essential oils such as arnica, ginger and rosemary.

The healing powers of nature extend not only to the spa but can also be found within the gourmet offering available at Monkey Island Brasserie. Although Bray itself is known as a foodie haven as the only village in the world to lay claim to three Michelin-starred restaurants, Monkey Island adds a homegrown twist to the flavours in its Modern British menu. By utilising tinctures from herbs, spices and teas grown

on-site, these are then woven into the extraordinary cocktail menu and the main restaurant menu. The Bray Blossom cocktail uses homemade ginger cordial and fresh Sakura flowers.

Teas and herbs are not the only homemade delicacies to be found as an exploration of the grounds reveal fresh eggs from hens named after iconic female figures from the past, beehives creating on-site honey, and a smokehouse for the creation of Monkey Island Estate Smoked Salmon. The care and attention which has been invested in this property is evident throughout and it’s incredible to think that until recently this exclusive island had been

uninhabited. It was only when the founder of YTL group Yeoh Tiong Lay gazed upon it that a passion project was initiated, one that unfortunately he would not live to see completed. A statue in his memory has been erected overlooking the property and is a reminder of the hard work and dedication which has been invested to restore the property and the island itself to its former glory. www.monkeyislandestate.co.uk

When you think of Ferrari, you think of fast, beautiful sports cars, and few are faster or more beautiful than this. It’s called the Roma, and it’s a new four-seat grand tourer, although even Ferrari says it’s more of a ‘two-plus’ seater. The beating heart is a 612bhp V8 engine that promises a top speed of around 200mph, and there’s an army of performance-enhancing electronics on board. s the roads get busier and commercial aviation becomes less pleasant, the appeal of running your own business aircraft gets ever greater. You could climb above the clouds and the traffic jams without having to spend two hours in a windowless airport branch of WH Smith. If you have the right licence and ratings, you could even fly yourself.

And when you’ve breezed onto the general aviation apron, clutching your headset and hand luggage, this is exactly the sort of aircraft you want to be faced

with. It’s the latest Pilatus PC-12 - the NGX - and it’s Pilatus’ answer to the new Daher TBM 940 that featured on these pages a few months ago. Like that aircraft, it’s a singleengine turboprop with the sort of range that allows you to cross continents with ease. More than that, though, Pilatus says it’s the most advanced and versatile aircraft of its ilk.

That means there’s a Pratt and Whitney engine with lowspeed propeller mode for a quieter cabin and autothrottle to reduce the pilot’s workload. Further back, the windows have grown slightly, and the cabin has been redesigned by BMW Designworks. That means you get new seats, as well as increased headroom and a quieter air conditioning system.

More to the point, though, you get to touch down in possibly the prettiest turboprop on the market.

TOTAL RECHARGE The electric revolution is upon us, and although most premium electric cars seem to be big saloons and 4x4s, it’s the smaller, more urban cars that make the most sense in battery-powered format.

Step forward, Volvo XC40. It’s the baby of the Volvo SUV range and you’ll soon be able to have one in eco-friendly electric guise. With all the Scandi cool of the petrol-powered car, it’ll do 249 miles between charges, and it’ll have a faintly ridiculous 402bhp, so it shouldn’t be a slouch. £TBC, www.volvocars.com/uk

FIRST R8 If there’s anything to criticise about the Audi R8, it certainly isn’t the way it drives. It’s probably the most usable, non-threatening supercar out there, despite squeezing oodles of power from that awesome V10 engine. In short, it’s the perfect basis for a racing car, and that’s exactly what Audi has done. This is the R8 LMS GT4, and it’s a strippedout, track-ready car that you can buy (and race) tomorrow. According to Audi, there are 27 “fielding opportunities” for amateur events in 2020, with full-season series and standalone events, including 24-hour races in Germany and Dubai. To meet the regulations, the 5.2-litre engine has been strangled to a ‘mere’ 488 bhp and the four-wheel-drive system has been ditched. £POA, www.audi.co.uk

Rolls-Royce may be top of the tree when it comes to luxury, but it isn’t the brand most people think of when they talk about performance. Nevertheless, the company has a ‘Black Badge’ line for its more powerful versions, and the latest car to receive the treatment is the new Cullinan SUV. Marked out by the black grille and dark chrome touches everywhere, it gets even more power - a whole 592bhp from the 6.75-litre V12 - and a re-engineered chassis intended to make the car handle with slightly more verve. £TBC, www.rolls-roycemotorcars.com

OPERATOR This season’s countryside must-have? That’ll be the Land Rover Discovery Sport, writes James Fossdyke

S

pace might well be infinite, but somehow we never seem to have enough of it.

First-time buyers are cramming themselves into poky flats, our roads are as clogged as a fat man’s arteries and airline seats crush your knees. And where exactly are we supposed to store all our spare buttons, old keys and instruction pamphlets for white goods we threw away six years ago?

Whichever way you look at it, space is at a premium in our lives, and that’s because unless you’re Dr. Who, creating more space on the inside involves enlarging the outside. Want an extra bedroom? You’ll be needing an extension or just a bigger house.

The car industry is no different. A Citroen C1 is a very small car, but you often have to choose between passengers and luggage. An Audi Q7, meanwhile, is enormous, but you can carry all the family and some shopping bags, whether you

want to or not.

Land Rover, though, has built a car that doesn’t really conform to those laws of physics. It’s called the Discovery Sport, and despite the name, it isn’t really very sporty. Instead, it’s a seven-seat family SUV that fits into parking spaces. It’s a recipe that’s proven relatively successful, but after four years on the market - and four years of being outshone by its sexier sister, the Range Rover Evoque - Land Rover has rung the changes, replacing what’s arguably its most sensible model with something a bit smarter.

It’s still called the Discovery Sport, and it still looks much the same, but the new headlights and cleaner lines have made a world of difference. It’s like an old friend who’s had a TV makeover. But the Evoque has had a bit of work done, too, and the Discovery Sport still isn’t quite as desirable as that 4x4 fashionista. Nevertheless, it’s a great improvement, dramatically reducing the style shortfall that came with the previous car’s practicality.

But if the exterior is an improvement, it’s nothing compared with the interior, where sleek new touchscreens replacing the slightly grotty plastic that used to cover the centre of the dashboard.

There’s nice soft leather everywhere, and the whole atmosphere feels a bit less fussy and a bit more tactile.

It’s packed with toys, too, including touch-sensitive

buttons and automatic everything, and it feels more spacious than before. That said, Disco Sports equipped with the third row of seats do sacrifice quite a lot of boot space when they’re up, and they are only really suitable for kids, but they’re a handy addition if your children are especially sociable.

The thing that strikes you most about this car, however, is the refinement. My test car was a diesel, which may not be flavour of the month right now, but the engine was an absolute peach.

Like all but the basic motor in the Discovery Sport range, it’s a mild hybrid, which basically means an electric motor gives the engine a helping hand but never replaces it altogether. That’s good for fuel economy and CO2 emissions, but the real trump card is the uncanny lack of noise. Get this car on the motorway and the only reminder that the engine exists is the readout on the rev counter.

Just as welcome is the matching ride quality, which manages to be squidgy and pliant without ever feeling like you’re riding a blancmange.

There’s no whooshy magic carpet feel - the odd bump will jar a little - but it’s reassuringly cosseting and unflappable, as though the suspension can always outwit the road surface. And where most comfy 4x4s will career around corners on their door handles, the Discovery Sport just about keeps the sway in check.

On the road, then, it’s like a four-wheeled library: comfy, quiet and pleasantly solid. But Land Rovers aren’t really known for their on-road prowess, and the Disco Sport comes into its own

when you take it off the asphalt. Slippery boulder fields, halfmetre-deep pools and claggy mudbaths were no problem whatsoever. Combine that with a maximum towing weight of 2.5 tonnes, and the Discovery Sport shouldn’t have any problem dragging a horsebox out of a muddy field.

And that’s what makes this car, and all other modern Land Rovers, so impressive. Once upon a time, cars this capable where agricultural, rough-and-ready machines that rattled and smoked and clattered around like the old bloke in the village pub - by which I mean slowly, but still slightly out of control.

The Discovery Sport, though, is not just an incredible off-road tool, but a brilliant family car and a desirable luxury SUV. If you live in the countryside, this is all the car you could ever need.

Potential As a nation we are obsessed with our homes but, as our circumstances change, our homes may begin to not work quite so well for us. Architect Carl Huntley discusses how, with a little thought, you can transform your home to serve you well for years to come

eorge Clarke’s Old House, New Home series is back on the television and we are all watching our screens and thinking of how we can add a room or knock a wall down and create our perfect home. For the past 15 years, we have been working with clients in similar situations, who come to us because their house isn’t working for them.

More often than not, they like where they live, their neighbours and social network but just can’t get their house to work for them, due to changing circumstances or, they have seen something on the television that has inspired them as to how

The regular request we get is that the client would like an extension to resolve this. And this is where we stop the conversation. An extension is something that we can look at but the first thing that we need to do is understand how the client lives and what they think you need from the property. We need to pull ourselves away from what they live in at the moment and think about how they want to operate within a house.

When we have looked at this, we can then create a connectivity diagram to see how the house should

be working, then apply it to the current property.

It’s not just an extension, it’s a remodelling of how the house operates and making sure that the house is optimised in the way it works.

A lot of the time, the remodelling follows an open-plan living scheme and this, I feel, has come about as people appreciate that the living, kitchen, dining space is just so good for the way we live today. It is ideal with children, friends and

the rest of property works around that.

When we look at the house, we also look at how it sits on its site. Another big opportunity when remodelling is to take into account the topography, light and salient views, for example.

We secured permission for a scheme in Curzon Park in Chester for two new luxury homes that had the most incredible position overlooking the River Dee and racecourse.

We capitalised on the dramatic changing levels – the front elevation had a more traditional two-storey aspect to blend into the street whilst, from the rear, all four storeys made the most of the views.

Today, what is becoming more important in clients’ requirements is the environmental impact – zero-carbon heating, high thermal efficiency, air tightness and controlled ventilation. This not only helps the environment but, with more efficient systems, the heating requirement and costs drop.

Architecturally, the key to any successful remodel is to understand the heritage of the building.

We work with a lot of 14th-century architecture in Shrewsbury, and the trick is to integrate a subtle change between the plains of the building, for

For example, when we worked on a Henry VII hunting lodge, we introduced a glass fin which went into a wall that was unframed, so it looked like extension was sitting away from main house and not connected. The relationship between the main property and extension is clearly expressed.

Another opportunity when properties are remodelled is to look to future-proof for life.

By widening a front door by 100mm or by making sure corridors are 900mm or wider you can make a property wheelchair friendly. And, while looking at the plans you can plan where a lift could be added for accessibility if mobility becomes an issue in later life. This way, we can keep people in their properties for an extra five or six years or even for life.

This forward-thinking is something I am really passionate about. BASE Architecture stands for Building Adaptable Sustainable Environments and I came from an environmental background in contemporary design. For me, it’s all about building that adaptability and flexibility into a home so that the carbon footprint of the initial build can be re-used and re-used in the years to come.

I was asked recently to give a lecture for the Royal Town Planning Institute, looking at the critical issues in housing. And this is one of them. If modern housing developments offered just that little bit more space or an extra three metres on the garden, the two-bedroom can easily become a three-bedroom and families wouldn’t have to move from the place they have established themselves. They could even be there for life. With virtually no more cost in construction and space, future-proofing at the initial design stage could make all the difference.

The greatest thing about this job is that you help clients realise their dreams. We love working on projects which are exciting, innovative and different and where we can actually help a client realise a vision that they can’t quite see but want to drive towards. There’s nothing better than a client telling you what they want to do, creating a quick sketch scheme and seeing their faces light up as you have just drawn exactly what they were after.

JULIET THORNBACK AND DELIA PEEL, FOUNDERS OF THORNBACK & PEEL How would you describe yourselves?

We are the founders of Thornback & Peel which we established in 2007 to create and sell beautiful, intricately screen-printed pieces for the home. We still design everything ourselves in our London based studio.

We were introduced by a very clever friend who sensed that we shared a fascination for the slightly eccentric. Delia was working as a set designer at the Royal Court and Juliet as a florist, but at the time we met we were both looking to create a business by making something ourselves.

Delia lived around the corner from Covent Garden flower market where Juliet had to go to source her flowers every other day. We would meet there (at the crack of dawn) for a sausage sandwich and a cup of very strong tea to plan our collections. The business began in that café and on our kitchen tables. Eventually we graduated to a tiny studio space in Deptford with a desk as our print table and a few years later into the studio we’re in now in Bloomsbury.

What have been some of your best jobs/experiences at work and why?

We love working collaboratively with other designers and brands. We are particularly proud of an exclusive design we did for with Fortnum & Mason inspired by their wonderful beehives.

Traditional vs contemporary style?

An eclectic mix of the both.

What would you consider your greatest achievement?

To produce the designs and product range we do with the lovely team we have is a privilege.

What would your super power be?

Who are your greatest influences?

We like to draw on British humour in our designs, updating classic ideas from old tales we loved as children. By playing with colour, form and scale we produce prints with a little charm from the past. Sources for inspiration include anything from Mrs Beeton’s Household Management and Alice in Wonderland to 17th century microscope imagery of the natural world, and of course the British countryside.
