NOTE

Publisher’s

Holidays and Sacrifice NOVEMBER. It marks the beginning of the holiday season. Many of us are already looking ahead to December, planning our Christmas get togethers and gift giving. It’s easy to do. After all, stores are already playing Christmas carols, stocking their shelves with items for the holidays, and getting everyone in the festive holiday mood. But it’s important too that we take the time to enjoy this very special month of November. It’s an important time to sit back, reflect and give thanks for the blessings in our lives. In addition to the Thanksgiving holiday, there’s also another day during the month that we set aside to give thanks - Veterans’ Day. While we carry on with our lives, blessed to live in not only a beautiful place, but also a safe place, there are those both overseas and at home who are sacrificing every day so that we may have the privileges and freedom that we in America experience. So as you find yourself getting caught up in the busy, festive holiday preparations, I encourage you to take time to not only reflect on your blessings but also the blessings granted to you by our armed forces. And if you see a veteran or a current member of our military, please extend a thank you. They’ve earned that and a lot more. Happy Thanksgiving to all of our readers, and from those of us at Living Local Magazines – a heartfelt Thank You to our military, both past and present. We create community! We connect people! We build trust!

The Greatest Generation

Honoring World War II veterans. By Patty Hutchens. Photos courtesy SHS Honor Flight Club.

“It is, I believe, the greatest generation any society has ever produced.” – Tom Brokaw IT’S BEEN CALLED The Greatest Generation; those who lived during the great depression and fought in World War II. Tom Brokaw, in his book by the same name, stated that the men and women of that era fought not for fame and recognition, but because it was the right thing to do. But it was not until 2004 that those who fought in the last war that truly threatened our nation’s existence were honored with a memorial of their own. Located in Washington, D.C., the Memorial pays tribute to the16 million Americans who served in the World War II armed forces, the more than 400,000 who died, and all who supported the war effort from home. Unfortunately, those to whom the memorial is dedicated are elderly, often making travel both financially and

physically prohibitive. In fact, according to the Veterans’ Administration, approximately 640 World War II veterans die each day. Thankfully for WWII veterans here in the Inland Northwest, students at Sandpoint High School have worked diligently for the last two years to ensure that those who desire to visit the Memorial have the opportunity to do so. Through a national organization called Honor Flight, veterans are flown to Washington D.C. on a guided tour of the Memorial and given an opportunity to reflect, honor, and remember. Sandpoint High School teacher John Nitcy formed the Honor Flight Club at SHS after visiting Washington, D.C. “I walked away from there thinking ‘what can I do to help?’”

said Nitcy. The approximately 20 members of the high school’s Honor Flight Club raise funds to help send veterans on the trip. It costs approximately $1000 to send one person and to date the club has raised approximately $7220, with a goal of $10,000 by June 2015. “It’s a whirlwind trip,” said junior Logan Finney, who has been in the club since his freshman year. “It is great when you go to the airport to welcome them back and you see how emotional it was and how much the trip meant to them.” One motivating factor for Logan to join was that when he first learned of the club, his great grandfather, a World War II veteran,

had just passed away. “I never got to hear many of his stories,” said Logan, who has since enjoyed interacting with the veterans he has met. Madie Slaton-Sanford is a senior at SHS and has been very involved with the club. In addition to raising money and meeting the veterans when they arrive home from their trip, Madie said she also enjoys learning from them. “We try to interact with them as much as we can. We know they are getting up there in age,” she said. “We need to give them more attention. They did amazing things.” Both Logan and Madie agree that the World War II veterans they have met are very humble and do not talk much about their experience. “They did their job, threw their duffle bag down and went on with their lives,” said Logan of the veterans when they returned home from the war. Honor Flight Club has made such an impression on Madie that she plans to launch a similar group when she attends Carroll College next year. The support of the community has been amazing. John Nitcy said both former SHS Principal Becky Meyer and current Principal Tom Albertson have done much to support his efforts. He also gives credit to Steve Furin, manager of Super 1 Foods in Sandpoint, for his willingness to allow the students to promote the organization at his store where they frequently sell wristbands displaying the words Honor Flight. In addition to the wristbands, the students sell Christmas trees and show a movie each year about Honor Flight, requesting a mere $5 donation. “I’ve had kids walk out of that movie and thank me,” said Nitcy amazed at the impact it has on the students. To further their fundraising efforts, the group is auctioning off a poster from the documentary The War. The poster is signed by the film’s directors, Academy Award nominee and Emmy winner Ken Burns John Nitcy assists a World War II Veteran on an Honor Flight trip to Washington, D.C.

“These kids get to shake hands with history. It is their last chance to be part of this and to say thank you.” SHS Honor Flight Club members welcome veterans home from an Honor Flight trip.

and Lynn Novick. “It is a one of a kind poster,” said Nitcy who said bids can be emailed to john.nitcy@lposd.org. “All the proceeds from the sale will be donated to the Inland Northwest Honor Flight.” Nitcy praises the work of the students and said there are interesting stories he learns from many of them. One he shares is the story of Emma Weisz. “She is always there willing to lend a hand,” said Nitcy who explained that Emma’s grandfather was born in Germany but fought for the U.S. during the war and served as an interpreter.

It is not clear on whom the Honor Flight Club has made the most impact – the students, teacher John Nitcy, or the veterans. But one thing is for certain; they all are grateful for the opportunity to give and to learn from one another. “These guys saved the world,” said Nitcy of the World War II veterans. “These kids get to shake hands with history. It is their last chance to be part of this and to say thank you.” To make a donation, mail it to Sandpoint High School Honor Flight Club : Attn: John Nitcy, 410 South Division, Sandpoint, Idaho 83864. Home&Essentials NASA-APPROVED AEROGARDEN

Year-round fresh, organically grown, and pest-free produce cultivated inside your home. By Sarah Polyakov.

MOST OF US are aware that in order to maintain optimal health, our bodies require multiple daily servings of fresh produce. Many people cultivate outdoor gardens during the summer and enjoy flavorful fresh lettuce, tomatoes, vegetables, and herbs. Outdoor gardens provide an opportunity for exercise as well as a feast for the senses. It is also great to have one’s own garden because it affords each person a sense of pride when they literally see the ‘fruits of their labor.’ However, during the winter, outdoor growing is not an option and those of us who love to garden miss being able to participate in this activity year-round. But, the good news is, today’s technology usually has an answer to everything, even gardening. With an indoor growing system called AeroGarden, cultivating freshly grown produce all year long becomes an option for everyone. This high tech gadget, which is so small it can find a home on your kitchen counter, uses a scientific approach to indoor gardening. It is able to grow up to six different plants at once while maintaining a clean, insectfree garden. This system allows hobby gardeners and master gardeners alike to participate in their favorite activity even when the temperature outside drops below freezing. One of the major benefits of the AeroGarden is the seed pods that are sold with it. These seeds, which are easy to use, are not genetically modified. AeroGarden seed pods include: various types of lettuce and tomatoes, hundreds of flavorful herbs, strawberries, cabbages, hot and mild

peppers, and finally many different types of flowers. In addition to that, they are able to produce around five months of healthful, flavorful, fresh food that grows at a vigorous rate. Aeorgarden can be likened to having your very own farmer’s market in your kitchen. The garden is also clean and easy to maintain since the roots of the plants are suspended in air while a water reservoir provides optimal conditions for growth. The hardy plants that are produced in the AeroGarden grow up to five times faster than plants grown with a more traditional approach. Another great feature of the produce grown in the AeroGarden is that it naturally contains high levels of nutrients. Since nutrients leaching out of soil has been getting worse over decades, this is a boon for health. According to AeroGarden testing, lettuce grown in the AeroGarden has almost three hundred times more Vitamin C than lettuce grown outside of the AeroGarden. Still this type of indoor garden is not meant to entirely replace the produce found in your local grocery stores. Because of its compact size, the AeroGarden uses very little energy and that is good news for your electric bills. This technology has also been NASA-tested and approved. But, the best part is, using the AeroGarden is easy and it can produce fresh food for even those who do not have a green thumb. I invite you to look into home growing systems so that you too can improve your health by having your own miniature year-round farmer’s market in your kitchen.

CONSIDERING A REMODEL? How to get the best return for your investment. By Annie Nye, Interior Designer, Selkirk Glass & Cabinets.

LET’S START WITH your wish list… everybody has one. If you’re like me, it’s about a mile long. I get to work with people every day that are remodeling or building new homes. I draw new layouts for their kitchens or baths, pick out paint colors, select countertops, look at flooring, choose cabinet color and styles, shop for furniture, select window coverings and so on. You get the picture. Literally, every day I get to look at something new in someone’s home. Then I come home to my same house dayin and day-out and want to make changes there too. There’s a wish list of necessities and a wish list of wants. Figuring out what to spend where is the key to allowing musthaves to mix in with the wants. There’s not a set formula for what we should allow for an upcoming remodel, but there’s an estimated percentage of what each portion usually costs, and based on the value of our home, there’s a formula for how much to plan on spending. According to Houzz.com, Sandpoint’s average kitchen remodel is $18,654. This average takes into account those spending as little as $3,000 and those spending as much as $40,000. The average value of the homes remodeled fell in the neighborhood of $250K. Of those remodels, 62% of those remodeling hired a professional to help them.

How does that break down? If these averages ring true, then kitchen remodels average 7-9% of your home’s value, and bathroom remodels average 3-5%. Given these examples, we can figure the cost of our remodel based on our home’s value. Here’s an example: If my home is worth $240,000, I figure a

18   Sandpoint Living Local | www.SandpointLiving.com

7.5% remodel budget of $18,000 for my kitchen. That breaks down as follows: • • • • • • •

40% cabinets ($7,200) 7% flooring ($1,260) 12% countertops ($2,160) 11% appliances ($1,980) 4% Electrical/Lighting ($720) 25% labor ($4,500) 1% misc. ($180)

The rate of return on my investment according to real estate estimates would be $256,140, increasing my home’s value $16,140. If I spent $18,000 getting it there, I actually lost $1,860, but updating my kitchen most likely would be the difference of me selling my home over another home that hasn’t been updated. Same rings true for bathroom remodels. Given the same value of my home at $240K, my bathroom remodel at 3% of my home value would be $7,200. Again, the averages are as follows: • • • • • • •

40% cabinets ($2,880) 7% flooring ($504) 17% countertops ($1,224) 6% fixtures ($432) 4% Electrical/Lighting ($280) 25% labor ($1,800) 1% misc. ($72)

Now, I can either turn around and sell my updated home and pocket the money I just invested, or if I plan on staying in my home for years to come, I get to reap the benefits of the updated kitchen or bath (or both) and have the peace of mind knowing I invested in something I am going to get my money back on down the road. Whether remodeling, updating, or simply revamping, investing a little now may pay off big later.

GOT INSURANCE?

Open enrollment for 2015 begins November 15th. By Patty Hutchens. IT HAS BEEN a year since the Affordable Health Care Act came into effect, and many Americans who have long gone without medical insurance are reaping the benefits. The Act, otherwise referred to as Obamacare, was intended to increase the affordability, quality, and availability of health insurance. If you missed out on the opportunity to enroll last year, open enrollment is upon us again as of November 15th.

Depending upon size of household and income, you may qualify for premium tax credits and savings on out-of-pocket medical costs. An insurance professional can help guide you through the maze of health insurance and assist you in completing a Marketplace application. The Marketplace will help you determine if you and your family qualify for private health insurance with savings based upon your income, Medicaid or the Children’s Health Insurance Program (CHIPs). The Marketplace will look to various factors when determining what plans for which you and your family qualify. Depending upon size of household and income, you may qualify for premium tax credits and savings on out-of-pocket medical costs. With the Affordable Care Act came coverage for services that were either not previously covered or were only partially covered. This includes coverage of preexisting conditions, preventative care, and essential health benefits.

Although insurance will now cover preexisting conditions, people still need to pay for their deductibles, copayments and coinsurance if their plan requires it. Note there is one exception to coverage for preexisting conditions and that applies to grandfathered individual health insurance plans. If you have purchased a plan on your own and not through your employer, it is not required that it cover pre-existing conditions. However, if you find that you have a plan that does not cover a certain condition, you may switch to a Marketplace plan that will cover your situation.

OPEN ENROLLMENT BEGINS NOVEMBER 15TH! Call us today and let us help you apply and find a plan to meet your needs and budget!

Under the Affordable Care Act preventative services are now fully covered under certain circumstances - such as age and risk factors - regardless of whether or not one has met their deductible. Some of these preventative services include blood pressure screening, cholesterol screening, colorectal screening, breast cancer mammography screenings, well-woman visits, and breast-feeding support. Regarding essential health benefits, some of the services covered include, but are not limited to pregnancy, maternity and newborn care; mental health and substance use disorder services, prescription drugs, emergency services, and pediatric services. It is important to note that while all Marketplace plans may follow the same set of guidelines pursuant to the Affordable Care Act, different states may vary on the specific benefits. To add to the confusion, there can be differences among plans in the same state. You do not have to travel this confusing maze alone. Call an agent today. They will help you apply and compare the various options available to you. Read each plan carefully and be sure you understand it thoroughly before enrolling.

Customer service is our number one priority. Let us customize an insurance policy to fit your specific needs.

VOICES OF THE HOMELESS

Homeless awareness month and Family Promise of North Idaho. By Cindy Wood, Family Promise of North Idaho. Photos courtesy of North Idaho Family Promise.

We have a working vehicle, jobs, and I am at a place where I can further my education. Our family can now look to the future instead of living day by day.

I AM SCARED, MOMMY, it is so dark and there is no night light. I don’t like the thought of security telling us to move. You can only get so clean with a paper towel bath. Are my children going to be taken away? I don’t get homework because my teacher knows I’m homeless. We had to keep moving all the time; we could never settle. Potty trained? Where would this “training” take place? My kids just broke down and cried when I told them we were picking huckleberries AGAIN to buy gas. I left my work equipment with a friend; he had a party and now he doesn’t know where my tools are. We never recovered from having a premature baby. I fell behind in my rent. My wife liked partying better than parenting and she left. I was never legally adopted, and I don’t even know what state to get my birth certificate. I was cut back to seven hours a pay period. We have no diapers. I did some work on the house in exchange for rent, and then the landlord evicted us. I have to leave my kids where we camp on Fourth of July Pass to look for work. I was an independent contractor and I got injured. Stories of heartbreak and hopelessness. These and more are the stories we hear when families come to Family Promise of North Idaho for help. They humble themselves for their children and ask what FPNI can do to help them. We listen, we assess, and if they qualify we take them into Family Promise of North Idaho. FPNI offers hospitality by way of individual family rooms, meals, and trained and caring hosts. Safety is offered for families in crisis. FPNI mobilizes congregations to provide overnight shelter for families with children on a weekly rotation through the year. The Day Center is located in the lower level of St. Luke’s Episcopal Church in Coeur d’Alene. Our offices are located there as well the family day center. This is where our

families have a family friendly, safe working atmosphere to meet with our case manager and move forward seven days a week. One of many voices of hope includes a hardworking family who came to us after being released from the hospital after having their second child. They had nowhere to go. Mom was let go at her job during her maternity leave, and Dad’s hours were reduced at his job. “Family Promise took us in, and we learned that to be stable we needed to keep our jobs and stay in one place for more than six months. We have been in our apartment for two years now. The kids have childcare, and we learned some parenting skills. Just yelling at the kids doesn’t help. They need our attention. We have a working vehicle, jobs, and I am at a place where I can further my education. Our family can now look to the future instead of living day by day.”

STEM CELL THERAPY Cutting edge arthritis relief. By Dr. Robert Pierce, North Idaho Animal Hospital.

FOR MANY HUMANS, autumn is the favorite season. The fiery red and yellow trees, the crackle of a campfire, and the dusting of snow in the high country all heighten the senses as a prelude to the coming winter. For many pets, however, autumn can present quite a different perspective.

It is tremendously important to formulate a plan to increase a pet’s quality of life before the joint is completely decompensated.

As the weather turns cold and damp, arthritic joints become creaky, sore and quality of life issues surface. Pets don’t want to move much without the supplements and medications that help ease the stiffness and pain. Medications, including supplements such as glucosamine and chondroitin products, protect the joints. Carprofen (Rimadyl), meloxicam (Metacam), prednisolone and dexamethasone help decrease inflammation and pain. Tramadol, gabapentin and others are used as additional analgesics. Many pets develop arthritic changes in their joints when they get old; their joint changes may occur before they actually show much sign of a problem. It is tremendously important to formulate a plan to increase a pet’s quality of life

before the joint is completely decompensated. Interestingly, there is a new procedure that can provide incredible relief, especially used on otherwise healthy dogs whose lives are limited by the pain of arthritis. This procedure utilizes advancements in the field of stem cell technology that has continued to develop in both human and veterinary medicine. The stem cell procedure involves surgically removing fat from the patient, preserving and mailing it to a specialized laboratory in California. Immature units called stem cells are then extracted from the fat. These cells are found in many tissues within the body including the bone marrow, but surprisingly they exist in high numbers within the fat. This is fortunate as fat is super easy to obtain from an American canine! Stem cells are not differentiated into final tissue cells yet, so they can still actually develop into liver, muscle, heart or other organ cells. Perhaps they become joint cells. Think of them as unbaked dough that is ready to pop in the

oven but is not really finished yet. In the case of the stem cells, they are returned to the veterinarian after processing, then injected into the problem joint. At this point the stem provides excellent relief by transforming (baking) into whatever is most needed in the joint environment and thereby decreasing inflammation. Although the exact mechanism is not completely understood, the good news is that every animal thus far which has had this procedure done at North Idaho Animal Hospital, has shown tremendous improvement. The stem cell technique remains an innovative field of study and the future promises great relief for both humans and other animals. Dr. Robert Pierce, North Idaho Animal Hospital 320 S. BULLDOG

BENCH Athletic booster club bestows many blessings. By Patty Hutchens.

THE SANDPOINT COMMUNITY has a lot to be thankful for this holiday season. We live in a beautiful town where friends and neighbors are friendly and helpful, and great organizations are plentiful with committed volunteers doing their part to make a difference in the lives of others. One such organization is the Bulldog Bench, the booster club for Sandpoint High School whose efforts do much to support youth athletics. While the myth has long been that “the Bench” is a booster club strictly for the football team, nothing could be further from the truth. “We try to support every sport and fill in where Lake Pend Oreille School District cannot,” said longtime Bulldog Bench member and former Bench President, Bob Witte. Witte credits Gene Littlefield, who passed away in 2012, for making the Bulldog Bench what it is today. Gene grew up in Bonners Ferry and, after fighting in World War II, eventually settled in Sandpoint. He was interested

in meeting new people and attended a Bulldog Bench meeting. “He walked out an hour later and was president,” said Witte of the 1951 meeting. Littlefield continued to be involved with the Bench at some level for over 50 years. “Gene WAS the Bulldog Bench,” said Witte gratefully. Matt Mire, a former Sandpoint High School athlete, serves on the Bulldog Bench and says it is his way of giving back to his community. “SHS Athletics helped shape my life, which is why I feel very fortunate to have the opportunity to contribute time and energy back into the various programs through Bulldog Bench,” said Mire. “I truly believe in the positive impact sports play in the lives of young people.” Mire said that while the amount of the Bench’s contributions made to SHS athletics can vary from year to year depending upon the needs, they have averaged between $10,000 and $15,000 annually. But even that has increased over the last year. As budgets decrease, the needs have continued to increase, and fortunately the Bench has been able to fulfill those needs and continues to support student athletic programs. Their donations over the last year include $700 for swimming caps, $2900 for a volleyball hitting machine, $4800 for an end zone camera for the football team, $2500 for a wrestling dummy, and a recent donation of $4400 for new wrestling mats. In addition, the Bench also contributed $1800 to various teams and individuals for meals when they travel to State.

But their support does not stop there. The Bulldog Bench also awards annual scholarships to graduating seniors. Each year $500 is awarded to both the male and female athlete who have the highest grade point average. Another scholarship, given to both a male and female athlete, is the David Jenkins Scholarship, named after the Sandpoint resident and Bulldog supporter who died in 2010. In spite of physical challenges, Jenkins displayed the true spirit of a Bulldog, attending as many games as possible and cheering on the young athletes. Many in the community, especially the young athletes, loved him. According to Witte, this scholarship is awarded to both the male and female athlete who best exemplify Jenkins’ spirit. “It’s not necessarily (awarded to) the greatest athlete, but instead the one who was an active participant and a good role model,” explained Witte. New last year was the David Lyons Memorial Scholarship. David Lyons was a former Sandpoint High School athlete who died in 2013 while serving his country. The $2000 scholarship award is presented to the student who best exemplifies Lyon’s high moral character and leadership qualities. So just how does the Bulldog Bench raise its money? Their primary fundraisers are golf tournaments held in both the spring and fall, which have proven to be not only a lot of fun but very successful as well. According to Mire, from those proceeds the Bench pays for the scholarships and the meals first and foremost. “These two areas are automatic for us,” said Mire. “Other requests come randomly as the individual programs have needs that are outside of the normal athletic department budget.”

SHS Activities Director, Kris Knowles, said he is grateful for all the help the Bench provides so that young athletes and their coaches can continue to participate in the activities they love.

We Set the Standard!

“From the school’s perspective we are incredibly appreciative for what the Bench stands for and does for the student athletes at SHS,” said Knowles. “As a support organization, they are top notch. I have seen many booster organizations over the years, and how the Bench does business, their focus on all student athletes and their positive approach is the best around.” And according to Witte, the organization will continue to thrive for years to come. “The Bench is as strong as it’s ever been. It’s all about raising money and supporting the kids.” The Bulldog Bench meets the last Tuesday of each month. For more information, contact Jay Vandenberg at 208.290.5796. Also, Bulldog Bench is a 501(c)(3) organization and any donations made are tax deductible. Donations can be mailed to Bulldog Bench, P.O. Box 2524, Sandpoint, ID 83864.

BusinessSpotlight

Unique, creative and custom designs. By Patty Hutchens.

IT’S A FAMILY owned business with deep roots in North Idaho. And while their business has evolved and grown over the course of its 45 years, the same great customer service has always been one thing that has never changed. Idaho Granite Works is owned by Oscar and Shirley Anderson, and it was Oscar’s father, Lowell, who first incorporated the business in 1969. But it was not until 2001 when the company transitioned to its current operation of granite fabrication. “When it started we were a road building and logging company,” said Julie Krezman, granddaughter of the company’s founder. Granite fabrication and installation is a specialized trade and one in which the craftsmen at Idaho Granite Works are highly trained in; specializing in a wide array of natural stone projects. Their qualified staff assists customers through the steps of design, cost estimation, material selection, fabrication, and installation. Idaho Granite Works can provide everything from counter tops, sinks, landscape steps, memorials, signs and custom projects of the client’s choice. “Many of our designs use locally quarried granite, serpentine and basalt, as well as granite, marble, and quartz from around the world,” said Krezman of the business that serves not just North Idaho, but Eastern Washington, Western Montana, and Southern British Columbia as well. While most granite fabricators import their granite and do not have the necessary equipment or tools to bring in big blocks, Idaho Granite Works is unique in that it quarries much of their granite from Bonner and Boundary counties. One factor in Idaho Granite Works’ success is the fact that they do multiple types of fabrication and are able to do so with the assistance of the first CNC Jolly Pellegrini wire saw in the United States. “This wire saw is programmable and can cut curves,” said Krezman. “Our skilled craftsmen use our two wire saws, two bridges saws and a forty foot long bed polishing

natural stones and quartz. The staff enjoys helping customers design something to fit both their desires and budget and can help with that custom piece you’ve always wanted to add to your home or office. In addition to Julie and her husband Adam, Oscar and Shirley also have their other two daughters, Lucinda McLeish and Laree Liermann as well as Lucinda’s husband, Daniel, working at Idaho Granite Works. “We also have a number of great employees,” adds Julie. The family all resides in Naples, which is also where Idaho Granite Works’ fabrication shop is located. They are all active in supporting the community that has helped make them successful. Through donations they have lent support to FFA, 4-H, The Boundary Community Society & Museum, the Senior Center, Distinguished Young Women of the Year, and many more. “We also help with the BoCo backpack food program by taking delivery of the food, dividing it up and loading it for those picking it up for the schools,” said Krezman. “And for the last three years we have had a team participating in the Bonners Ferry CROP hunger walk.” If you are interested in learning more about the fabrication process, Idaho Granite Works also provides tours of their fabrication facility; please call to make an appointment!

BUSINESS IMPROVEMENT DISTRICT. Cultivating economic growth in downtown Sandpoint. By Patty Hutchens. Photos courtesy of the Business Improvement District. IT HAS BEEN just over a year since the formation of Sandpoint’s Business Improvement District (BID), and by all accounts it has been a smooth transition that has benefitted many! So just what prompted the formation of the BID? Well, you may recall a couple years back when the Downtown Sandpoint Business Association, which existed for several years to serve the downtown business core, began to encounter challenges, putting its existence into jeopardy. It was then that officials from the City of Sandpoint approached the Chamber of Commerce and inquired if they would be interested in taking over the DSBA in the form of the Business Improvement District (BID). After researching various models and learning that Idaho Code recommended that in fact a BID should operate under a city’s chamber,

EVENT

Holly Eve

A Sandpoint tradition. By Patty Hutchens. FOR OVER 30 YEARS it has been a Sandpoint tradition – Holly Eve. For many in the community it is the official kick off to the holiday season, a chance to enjoy great food, silent and live auction items and to get in the holiday spirit. But for others it means much more than a holiday celebration; it symbolizes hope. the Chamber decided to investigate the possibility a bit more. “The Chamber’s Board of Directors appointed a due diligence team to look into what it would entail,” said Kate McAlister President and CEO of Sandpoint’s Chamber. At a meeting of the Sandpoint City Council in July 2013, the Chamber was awarded the contract and took over management of the BID in October of last year. While the BID’s role is diverse, its vision is to create a vibrant downtown that will be a benefit to all. It serves as a place where members of the Business Improvement District can go to have their concerns addressed, it assists in cultivating year round economic growth to the BID area, and besides that the BID puts on fantastic events for all to enjoy! What many do not know is that when you are enjoying any of the following activities, you are enjoying something that the BID has worked diligently on making sure it is the best it can be – Oktoberfest, Winter Carnival, the Wooden Boat Show, Summer Sounds and Clean up the Streets in the Spring event. And the beautiful Christmas tree that brings families together in Jeff Jones Square to kick off the holiday season? That event too is brought to us by the BID. Soon too you will see our picturesque downtown lit up with holiday lights, that is the end result of the BID’s Executive Director, Kim Queen, and her crew working hard decorating a total of 97 trees.

The proceeds from Holly Eve are donated back into our community to assist various non-profit organizations. Whether it is a few extra gas vouchers that Community Cancer Services is able to provide clients who are traveling to and from chemotherapy or extra funds to help stock the shelves at Bonner Community Food Bank, it all has made a huge difference in the Sandpoint community. Four years ago Holly Eve hit the $1,000,000 mark, a remarkable feat. This year Holly Eve will take place on Saturday, November 22nd. Tickets are available at Eve’s Leaves, Columbia Bank (formerly Panhandle State Bank) & The Festival at Sandpoint office. For more information regarding tickets, becoming a Holly Eve Angel, or donating auction items, please call 208.263.9191.

According to Queen, the biggest challenge in her role over the past year is helping to clear up the misconceptions of what the BID does. For instance, many believe the BID is responsible for collecting the tax that goes with being inside the BID area. Not true – that is the job of the City of Sandpoint as is the task of setting the amount of tax the business owners must pay. Parking Tickets? Diamond Parking. Trees? Sandpoint Urban Forester. “But we are more than flower baskets” said Queen referring to the flowers that grace the downtown area through the summer months which is another project of the BID. In order to clear up misconceptions and generate more input, the BID held forums at Sandpoint Community Hall in late October. “With input from the BID businesses we are hoping to put together a three to five year strategic plan,” said Queen, who adds that she enjoys working with the Chamber of Commerce’s team to do what they can to create economic vitality for the community of Sandpoint. Queen vows to keep doing what she can to educate the community on the benefits of the BID and help them understand its role. “We continually tell the story and hope one day every business we represent will know the value of the BID and will be more involved,” said Queen.

SANDPOINT HIGH SCHOOL. BY PATTY HUTCHENS. PHOTO BY JASON DUCHOW PHOTOGRAPHY. IT’S NOT ALWAYS easy to transfer schools during your high school years. But when Sandpoint High School senior Mikhaela Woodward moved to Sandpoint her sophomore year, she said it was then that her passion for track and crosscountry really took off. The reason? “I owe that to the coaching of Matt and Angie Brass,” said Mikhaela. But it’s not just the competition she enjoys; it is the friendships she has made along the way. “I love the camaraderie of our teammates in cross-country. We’re like a big family, and when you have that amount of support you’re able to perform better on all levels.” In addition to maintaining an un-weighted GPA of 3.95, Mikhaela has excelled in

her chosen sports. “I’ve medaled at both the Idaho State cross-country and track championships every year since moving to Sandpoint and have three state runner-up titles in track,” said Mikhaela, who is also part of the defending state championship cross-country team. As successful as she has been, Mikhaela said one issue she has struggled with throughout high school sports is selfdoubt. But she credits her coaches and teammates with giving her the confidence she needs to be successful when it comes to competing. “My coaches and teammates helped me gain confidence in my abilities as an athlete, and you can see the difference it has made in my racing,” said Mikhaela. She said her most memorable moment in

With graduation just around the corner, Mikhaela said she plans to attend Western Washington University and compete on their cross-country and track teams. As far as academics go, she is interested in communication sciences and disorders, environmental science, film, and psychology. “I like learning all the different ways that people communicate and why,” she said. As Mikhaela reflects on her life as an athlete thus far, she is grateful to the coaches who have taught her some very important life lessons. “I’ve learned from my coaches that to be great at something, it requires an intense amount of dedication and passion. You won’t reach your goals if you only go half way - you have to put everything you have into achieving them.” Favorite Food: “I love all food.” Favorite Teacher: Right now, it would probably be Mr. Smith, my government teacher. He’s really good at getting us to see both sides of an argument from a logical standpoint, and every time I come out of his class, I think a lot about what he’s just taught us.”

JARED COOPER is passionate about soccer, and it is to the benefit of the SHS Bulldogs that Jared’s passion has translated into success. “Jared’s been on varsity for three years,” said boys’ head varsity soccer coach Adam Tajan of the senior player. “He helped us to win state as a sophomore in 2012, and he has provided excellent leadership both on the field and in the classroom.” It was that win at State his sophomore year and being named captain this year that Jared sees as some of his best athletic accomplishments. But it’s not just soccer that Jared enjoys; he is also an avid skier. “I love being outdoors,” he said. It is that love of the outdoors that is helping guide Jared in his search of colleges. As one who enjoys math, Jared said he is interested in a career in environmental engineering. “I think that solving environmental problems will become very important for our generation,” he said. Pursuing his passion of soccer has not always been easy for Jared. “Several years ago, lots of my friends and the kids in my age group quit to play other sports, leaving me without a team,” said Jared. “I had to travel out of Sandpoint and play with another team for a year to be able to continue.” But he is glad he did as he was able to ring the victory bell recently at Memorial Field following a district game win for his final home game as a Bulldog.

great friendships as well. “Every year I become so close to all my teammates, and I know I can always count on having them there,” said Jared who added that one of the biggest lessons he has learned is to never underestimate an opponent and never come into anything feeling overly confident. Favorite Food: Tortellini Ivano. Favorite Teacher: “Mrs. Search because she relates well with her students with her good sense of humor and makes math easy to learn. She has also always been supportive and encouraged me to help tutor other math students.”

Weekends & Company Everything you need for entertaining and more! By Patty Hutchens. Photos by Annie Kuster.

WHEN YOU PASS BY Weekends & Company in downtown Sandpoint, you can’t help but be drawn in by the inviting scents and colorful and vibrant displays of both unique and practical kitchen items as well as a variety of things for your entertainment needs. Located on First and Cedar in the heart of downtown, Markus and Tina Ward opened Weekends & Company in June and are enjoying being part of the downtown community. Tina, a long time resident of the area, had worked as the Senior Merchant for non-apparel for Coldwater Creek for the past 20 years. Markus had moved here 25 years ago and works for Schweitzer Mountain Resort. When Coldwater Creek closed its doors earlier this year, the couple knew one thing for sure – they wanted to stay in Sandpoint. “We love Sandpoint, we love the people here, and we love the community,” said Tina. She and Markus had long talked about owning their own retail store. So when Coldwater Creek closed, Tina and Markus explored their options. “That was the push we needed to do it,” said Tina of Coldwater Creek’s closure. The couple, along with help from their two daughters, has worked hard over the summer and the entire family is thoroughly enjoying it. “The hardest part was coming up with a name for the store,” said Tina. In the end they chose Weekends & Company, something that reflects their lifestyle. They love to entertain, and with Tina’s extensive background in gift and home accessories, it has proven to be a perfect fit. “Everything happens in the kitchen,” said Tina of at home entertainment. “We offer things (in the store) that make people feel welcome.”

The approximately 2,000 square foot space is filled with everything from kitchen gadgets to bakeware, cookware, barware and a multitude of entertainment pieces including napkins, tablecloths, and more. “We offer a nice balance of brands,” said Tina who adds that many people who vacation in Sandpoint often stop by for that one item they need in a pinch. Tina has also established relationships with area restaurants and offers them a professional discount for items they need in their kitchens. Weekends & Company also offers great gift ideas, from martini shakers to cookbooks and more. With the holidays right around the corner, the store also invites people to come in and fill out a “wish list” that they will keep on hand, making shopping much easier for their loved ones who only need to stop by and inquire.

BEFORE

A true believer in supporting the local economy, Tina said she wants to make that easy for others to do as well. She is working with many vendors so in the event Weekends & Company does not carry a particular item, she can special order it for her customers. “I want to make it worth our customers’ while to shop local,” said Tina. Their plan for the next year includes many exciting opportunities for people to come and enjoy Weekends & Company. By next year she hopes to offer cooking classes put on by different chefs in town as well as product demonstrations. Both Tina and Markus are excited about their new venture. They are supporters of local education as well as high school athletics and look forward to being able to continue to give back to the community they have called home for so many years. Come and explore all that Weekends & Company has to offer!

The Festival of Trees Helping Kinderhaven provide for children in need. By Melody Knaggs-Vanhorn. BEING A CHILD shouldn’t have to hurt, and at Kinderhaven this statement couldn’t be more true as they take in numerous abused and neglected children that are suffering throughout Northern Idaho. Known as the only emergency foster shelter in our area, Kinderhaven strives to give every child a place of love while offering a home that provides the security to help them grow. A non-profit organization, Kinderhaven relies largely on donations from the community to help provide for everyone in their care. One of their biggest donations comes from “The Festival of Trees,” an annual fundraiser where numerous businesses and organizations throughout the community donate an elaborately decorated tree to be auctioned off during the last night of the event. Kinderhaven will be hosting “The Festival of Trees” at the Sandpoint Events Center December 4th through the 6th. This three day event will start with a free Family Night taking place from 4-6pm on the evening of the 4th. During this time, families will have the opportunity to visit with Santa while they view the stunning array of trees before

Year Round Thanksgiving The North Idaho community always helping others. By Colin Anderson. Photos by Jamie Sedlmayer.

NOVEMBER MARKS THE SEASON of Thanksgiving; a time when we all reflect on the many blessings we have that many around the world do not. It’s a time we give thanks for family, food, friends, and faith and prepare ourselves for the Christmas season and all we have planned for 2015. This is a time of year when people donate the most to food and coat drives, put money in a red kettle bell and buy an extra gift for Toys for Tots. It’s a wonderfully generous time of year, but for many in the North Idaho community, generosity and helping others is a year round affair. Over the years we at Living Local have met dozens of these selfless individuals who are dedicated to improving our communities, and it is a privilege to share their stories. You, our readers, have pointed us to many great organizations and community members, and it is a joy to learn about these stories and share with our community what makes North Idaho such a great place to be. Here are just a few examples of the people, businesses, and organizations that are giving of their time and resources to make a difference in our communities. “I sat down and thought ‘how can we make a difference and teach our son good values,’ and then it was decided that this was the right thing

to do,” said John Malee, owner of The Fedora Pub & Grille in Coeur d’Alene. Instead of a day off from the daily grind of running a restaurant, for the fourth year in a row Malee will be providing a free Thanksgiving dinner to anyone who walks through the door. The wait staff and kitchen staff all donate their time, and by partnering with the local United Way and ElderHelp of North Idaho, roughly 100 volunteers will also spend their holiday helping others. There are no questions asked, anyone who stops in will be greeted and seated. Guests receive a beverage and a Thanksgiving meal with all the trimmings plus a dessert. Last year 1,300 meals were served and Malee is anticipating around 1,500 this time around. “It’s a humbling experience for me. Both guests and volunteers come by, shake my hand and say ‘thank you.’ It’s really made me look at our community in a different way,” said Malee. Dinner is served from 11am to 4pm. There will be live music and football on the TVs as well. Donations are accepted on site and go to benefit local non-profits. The KROC Center, Rotary Club, Kiwanis, Centennial Distributing, Digital Lizard, Pepsi, and Craven’s Coffee have all pledged their support to this wonderful event. Another group making a difference in North Idaho is Soroptimist International, which has 1,300 clubs in 20 different countries, including a North Idaho Chapter. Founded in 1948, the Coeur d’Alene Chapter was the first civic service club for women in the area. The purpose of the club is to enable women and girls to take control of their lives and live their dreams. The club raises worldwide awareness on domestic violence and trafficking and offers funding for women and girls suffering though natural and man-made disasters.

For 32 years, Soroptimist has publicly awarded their “Women of Distinction” awards to women whose achievements and dedication to community service set them apart. Award nomination categories include: arts and culture, business and professional, community service, education, health, public service, seniors, and community activist. Soroptimist will be holding its 32nd Annual Women of Distinction Awards Ceremony on November 21, 2014, at 11:30am at the Cedars Floating Restaurant in Coeur d’Alene. Proceeds from the event help support local women and girls through monetary awards and scholarships, as well as contributions to local services such as the North Idaho Violence Prevention Center (formerly the Women’s Center). To date, Soroptimist has provided over $300,000 to the Women’s Center and the Soroptimist’s Children’s Counseling Center to fund space, supplies and a counselor for intervention to children who witness to or are the victims of domestic violence. Lynn Rinker has always been a busy person. The mother of five worked as a nurse at Kootenai Medical Center for 18 years and also owns two Memory Lane antique store locations. Being someone who appreciates taking one person’s trash and turning it into another’s treasure, Lynn stepped in when she started noticing perfectly good medical supplies piling up in dumpsters. “I realized there was such an abundance of usable goods, I just couldn’t let that all make its way to the trash.” By law, medical items that are outdated or have torn packaging cannot be used at the hospital, but Lynn soon realized there were plenty of other places to use the clean, new, and uncompromised equipment. When Lynn first started recycling 15 years

“It’s a humbling experience for me. Both guests and volunteers come by, shake my hand and say ‘thank you.’ It’s really made me look at our community in a different way.” ago, she and her helpers would load up a truck and drive the supplies to clinics in Mexico. Because of ongoing border violence this is no longer done, but on her own dime, Lynn has traveled to Mexico, Guatemala, and Africa. “We took 800-pounds of supplies to Africa which supported four clinics helping with childbirth,” explained Lynn. “By the end there were a lot of babies named Lynn so that made me smile.” Clean syringes, gowns, stitches, sterile gloves, braces, crutches, and casting molds are just a few of the items Lynn is able to repurpose. A lot of the equipment stays local as well going to the Humane Society and Washington State University’s Veterinary School for training purposes. Lynn and her husband Steve have storage units filled with supplies and are always planning their next big run. In Sandpoint, for many the Thanksgiving holiday starts out with the annual Turkey Trot sponsored by the City of Sandpoint Parks and Recreation Department as well as

Sandpoint West Athletic Department. The event takes place at Travers Park and is free to those who bring a donation for the Bonner Community Food Bank. Check in begins at 8:45. It is always a popular event and the benefit to the community reaches far and wide. November also marks the kick off to Pend d’Oreille Winery’s Sip ‘n Shop fundraisers that will go through the holiday season. They are a great opportunity for Sandpoint residents and visitors to enjoy a wonderful evening and give back to the community as well. On certain nights the Winery donates a percentage of proceeds to a chosen local non-profit organization. The first Sip ‘n Shop this holiday season will be November 11th and will benefit Panhandle Animal Shelter. While enjoying your Thanksgiving holiday, take a moment to remember those doing thankless work in our community each and every day. It is their dedication that makes our city a community and they are not thanked enough for it. Happy Thanksgiving.

ShopinStyle Small Business Saturday SUPPORT YOUR LOCALLY OWNED STORES THIS HOLIDAY SEASON! BY JOCELYN STOTT. PSST! CHRISTMAS, my fellow Americans, is right around the corner! The frenzy starts before the turkey’s cold - we’re thinking about which big box store we’re going to stake out for the best deals on Black Friday. Or will we wait for the online specials on Cyber Monday? Here’s a thought – how about neither? In the event you’re ready to jump off the hamster-wheel that the Christmas holidays have become, here are few suggestions that keep you in the spirit of giving without turning you into a total Scrooge: Why not give Small Business Saturday a go? November 29th is officially the day around the country where local shoppers are encouraged to support local small businesses for their holiday shopping. When you buy jewelry or a bike from the local store, you help support your neighbors and the local economy instead of sending the buck on to a massive company somewhere else. While you’re shopping local, consider also looking for fair trade products. By choosing fair trade products you’ll be getting things that have been made from natural products and/or sold in a sustainable way by a farmer or craftsperson who will get a good price for his/her work instead of a big corporation. Examples of fair trade goods can be cotton, wood, wool, coffee, chocolate or certain types of jewelry. Ideas: FairTradeUSA.org or GlobalExchange.org. Toys for Tots – There are plenty of holiday gift giving programs like Toys for Tots where you can purchase a toy or a coat for a child in need right in your own community. You might find you come away feeling richer. Ideas: ToysforTots.org For the one on your list who already has everything, give them water or a goat. Water is so basic and so many in the world don’t have access to it. Make a donation in someone’s name to help give the gift of water – or food. You can give a goat! This one is great because it’s fun to tell your brother you got him a goat for Christmas. And the look on your sister-in-law’s face when you tell her she’s getting a chicken? Priceless. But seriously, for a family that relies on the basics like the milk of a goat or the wool of a sheep, that’s a pretty great gift. And you get the joy of providing a new opportunity for someone who really does need it. Ideas: CharityWater.org or Heifer.org. Peace on Earth, goodwill toward all – that’s what the Holidays are truly about.

Holiday Treats

The power rush of self control. By Teresa Pesce. This column is dedicated to the Middle-Aged among us, lost in society’s Bermuda Triangle between being young and being “older”, acknowledged only by ads selling them cosmetics to make them look young again and comfort bras to ease the inevitable triumph of gravity. IF YOU ATE everything you wanted on Thanksgiving and Christmas, that would be two big blow-out meals a year. Unless your life is a perpetual whirlwind of elaborately catered affairs, you don’t have that many occasions where everyone contributes their irresistible, calorieladen special recipes. So my outrageous idea is to eat moderately 363 days a year and enjoy the holidays! Some of us become obsessed with healthy eating on the exact days when the dining table will be packed with the best food you’ll be offered all year. On THAT day, we decide to exercise self-control. There is a strange blend of martyrdom and guilt that becomes the brew we sip before state occasions, and we decide we must ‘Suffer for the Cause.’

Must we? I say – your regular eating habits being sensible and your health being good - enjoy the rare special occasions where eating is the main family event. In other words, instead of caving into piecravings all year, only cave in on those days when Aunt Marion makes her killer double-chocolate pecan pie! Happy holidays! Pause for a large HOWEVER: For some of us, one day of indulgence can trigger a set-back that lasts for months or years. It’s just like they say in AA, substituting “cookie” for “drink”: One cookie is too much and a thousand aren’t enough. So what do we do when confronted with irresistible sweets at holiday events? Well, not to put too fine a point on it, we resist. “How?!?” you ask, as you resist the urge to smack me over the head with this magazine.

Fortunately, I have two suggestions. Have you ever experienced the dizzying high of not eating dessert, and then watching everyone else loosening their belts afterward, fading from drowsiness and voicing their regrets in advance for the after-effects of weight gain and follow-up sugar cravings? If not, you haven’t lived! It’s great! Not that I’m judgmental, you understand, it is just so cool to be the one who isn’t suffering and dreading stepping on the scale next time! If you want to try it, prepare to feel the wonderful power-rush of self-control. It feels fabulous to be strong! You will like it. Helpful hint: Have a flavored coffee with half-andhalf while dessert is being served, and sip it while everyone else is shoveling future regrets into their mouths. It’s sweet without sugar and gives you something indulgent to do. It worked for me many times.

Have a flavored coffee with halfand-half while dessert is being served, and sip it while everyone else is shoveling future regrets into their mouths.

54   Sandpoint Living Local | www.SandpointLiving.com

But if sensual coffee followed by shameless (and thoroughly deserved) ego-preening still leave the dessert-skipping bar too high, then bake and bring some croissant rolls filled with fruit, butter, cinnamon and nutmeg. I baked my own apple pies and made yam pies to enjoy while others had pumpkin pie (yams are sweeter!). Where there’s a “will” there’s a way, and where there’s a “won’t” (eat sweets), there’s also a way. Find yours and be happy! It’s only two days a year. Find your way to enjoy them! Founder of Sandpoint Onstage, Teresa Pesce is dedicated to supporting and promoting everyone in our community with theatrical gifts, whose age is irrelevant and whose only “weight” is the impact of their art.

Low impact exercise for a safe pregnancy. By Jennifer Jones, PT, Cornerstone Physical Therapy. WOMEN TODAY are active during pregnancy and encouraged to participate in exercise. Water provides natural resistance for strengthening muscles of the core and extremities, while the buoyancy prevents jarring forces and strain on the spine and joints. The hydrostatic force of water against the body while exercising also helps decrease leg swelling and prevent spider veins. Back and hip pain are extremely common in the later stages of pregnancy as the baby and abdomen grow larger, exerting a forward pull onto the lower back. Posture becomes sway backed, hip and lower back muscles shorten and are strained, and the stress of maintaining good posture in the upper back and head can also become painful. Muscle groups beyond the stretched abdominals also weaken due to postural changes and altered movement patterns. Hormones released to relax the pelvic joints for the birth process also affect the sacroiliac and other major joints, causing pain. The natural low impact and almost weightless environment of water allows for easy stretching which would otherwise be extremely awkward on land with a growing “baby belly”. Exercises performed against the resistance of water allows

Exercises performed against the resistance of water allows for strengthening in both directions of movement, while at the same time toning and strengthening the abdominal and core muscle groups. Regular exercise, which improves cardiovascular fitness, can reduce the risk of gestational diabetes and constipation. Exercise in water becomes a stress buster in addition to soothing away muscle and joint aches and pains. Mood levels and sleep patterns improve; energy levels increase. The pains of pregnancy need not be endured. Physicians can refer patients to physical therapy, which, in most cases is covered by insurance.

Holiday Food

Tips to eat right this holiday season. By Bruce Weaver, MPA, PA-C, Owner, AAging Better In-Home Care.

WITH THE HOLIDAY SEASON approaching, food will be a focus in most holiday planning. It presents the perfect time to address a topic that has received much publicity over the decades—fats.

vegetable oil versions were touted as a huge improvement in our diets, one that would decrease cardiovascular disease and cholesterol levels. But this proved to be vastly overrated.

As far back as the 1960s, public health officials and nutritional “experts” recommended switching from saturated fats like butter and lard, to polyunsaturated fats like vegetable oils (canola, safflower, corn, sunflower, peanut, soybean), which stay liquid at room temperature.

Not only have we seen cardiovascular disease spike over the ensuing decades, we’ve also seen associated epidemics of diabetes and obesity. Part of the problem is that our bodies were never designed through evolution to handle large amounts of omega-6 fats, something we find in abundance in nearly every American diet today. Before chemical solvent extraction and refining methods were developed, we didn’t have the ability to extract oils from foods such as corn and soybeans. People got their omega-6 fats in small amounts from natural, whole foods—seeds, greens, grains and nuts—which contain antioxidants and other nutrients that nourish our bodies. This isn’t the case with modern, conventionally produced vegetable oils.

Getting back to eating fresh local fruits and vegetables in season, switching from grain-fed to grass-fed beef and wild game, and eating free-range chickens, all seem to be the healthier idea.

These vegetable oils happen to be very high in omega-6 fats. When artificially hydrogenated, these liquid oils turn into solid or semi-solid fats, products like shortening and margarine. When contrasted with naturally occurring solid fats like butter, lard and coconut oil, these

After the “saturated fats are bad” message went out to the American public, particularly around 1980, vegetable oils began to be used in virtually every processed food found on our grocery shelves. Restaurants, too, switched to vegetable oils—from fast-food joints to fine-dining establishments. Decades later, the result is increasingly overweight senior and pediatric populations—along with many middle-age adults—and unprecedented levels of diabetes, autoimmune disorders and allergies that is unparalleled in our history. It would appear that big agribusiness “science” may have gotten it all wrong. Everyone needs the essential fats—both omega-6s and omega-3s—in a balanced intake, a balance between 1:1 to a 4:1 ratio. Today’s American

Serving the Greater Priest River & Sandpoint Area

diets lie between a 10:1 to 25:1 ratio. Omega-3 fats (just as critical to humans as omega-6 fats) are found in cold-water fish, flaxseed and raw nuts and help the body produce antiinflammatory compounds. When omega-6 becomes the predominant fat in our diets, as it has over the past 20-30 years, it can encourage the production of inflammation, which can play a major role in the development of cardiovascular disease and other major health problems. There is an important message in this. Getting back to eating fresh local fruits and vegetables in season, switching from grain-fed to grass-fed beef and wild game, and eating free-range chickens, all seem to be the healthier idea. And bringing back butter, along with whole or 2% milk into our diets would be far more preferable than skim milk. When our grandmothers made their pie crusts and cookies with butter rather than shortening and margarine, they probably knew all along what was really best for their families and loved ones.

Dairy Delivers The nutrient-rich holiday flavor.

THE HOLIDAYS DON’T intuitively seem like a good time to worry about healthy eating, but there are tasty ways to get your necessary intake of vitamins and nutrients. Dairy is an ideal example of a delicious but often overlooked source of essential nutrients -- making it a great ingredient for holiday cooking. “Even when we’re not celebrating the holidays, most Americans consume too many foods that are high in calories but low in nutrients,” says Alyssa Greenstein, a registered dietitian with the Dairy Council of Florida. “One way to lighten holiday fare is to focus on serving nutrient-rich choices from the food groups people need most. Those food groups are low-fat and fat-free dairy foods, fruits, vegetables and whole grains.” Research shows that the average holiday meal with all the trimmings contains as many as 3,000 calories with 225 grams of fat. This can quickly add unwanted pounds -- studies show that the average American typically gains one to two pounds during the holidays. Science shows that consuming at least three servings of milk, cheese or yogurt every day helps people meet their daily calcium, potassium and other nutrient recommendations and may help reduce the risk of chronic diseases such as osteoporosis, hypertension and obesity.

During holiday cooking, substitute low-fat dairy options to get the same vitamins with fewer calories. Consider options like low-fat or fat-free cheese, low-fat or skim milk and fat-free plain Greek yogurt. “Even people with lactose intolerance do not have to miss out on the enjoyment of dairy foods during the holidays or the essential nutrients that dairy provides all year long,” says Greenstein. “Lactose-free milk is real milk with the lactose (or sugar) removed. It contains the same nine essential nutrients as regular milk, including calcium, protein and vitamin D.” Don’t sacrifice good taste to be healthy this season. Try this holiday recipe with your friends and family for a nutrient-rich beverage: Vanilla Egg Nog 3 eggs (or 3/4 cup pasteurized egg product) 1/3 cup sugar 4 cups low-fat milk 1 cup low-fat vanilla yogurt 1 teaspoon pure vanilla extract 1/8 teaspoon salt Whole nutmeg, grated In a blender, mix eggs and sugar. Add milk, yogurt, vanilla and salt; blend until frothy. Pour into serving glasses, and garnish with freshly grated nutmeg. Get more recipes at www.floridamilk.com.

Wallace, Idaho

Weekend getaway. Pick a direction and you’ll run into something fun! By Colin Anderson. Photos by Jamie Sedlmayer. IT MAY BE JUST a 90 minute drive from Sandpoint, but when you exit the freeway and stroll through downtown Wallace it’s like traveling back in time. Many don’t realize that the entire downtown is listed on the National Register of Historic Places (the reason why I-90 travels over town instead of through it.) You might also be interested to learn: More silver was mined in and around Wallace over a 100-year period than anywhere in the world. • ‘Dante’s Peak’ starring Pierce Brosnan and Linda Hamilton was filmed here in 1997. • The Pulaski tool used by wildland firefighters around the world was invented here. • Outside of Nevada, Wallace had the last legally open brothel in the United States, not closing its doors until 1988. Quite a lot for a town where less than a thousand people call home, and that’s just the beginning. Settled in the late 1800’s, Wallace grew quickly as thousands of prospectors came searching for riches in the surrounding mountains. Immigrants from all over gathered here at the time making it one of the more diverse communities in the west. An estimated 1.2 billion pounds of Silver has been pulled from the region. There are several museums downtown that will share the incredible history of this region. Stop by the Northern Pacific Railroad Depot museum to see how the railroad brought prospectors and prosperity to the region. The Wallace District Mining museum takes you inside the lives of those who worked one of the most dangerous jobs at the turn of the century. And the Oasis Brothel Museum will guide you through how many of these workers spent their hard earned money, complete with some very interesting ‘artifacts.’ For those looking to take an up close look for themselves, both the Sierra Silver and Crystal Gold mines offer guided tours. As we approach winter, Wallace is a perfect spot for outdoor enthusiasts. It’s conveniently nestled between Lookout Pass and Silver Mountain ski hills, and the surrounding area is

littered with places to explore on snowshoes or snow machines. Lookout Pass boasts an annual snowfall of 400” ensuring great conditions whether you’re on the mountain or exploring the vast backcountry behind it. Silver Mountain hosts live music and also has an indoor water park, allowing you to ride and surf in the same day. When spring and summer return, get ready for hiking, 4-wheeling, fishing, and miles of biking trails. Wallace backs up to both the Route of the Hiawatha and the Trail of the Coeur d’Alenes. Both are incredibly scenic ways to explore the area and both trails are extremely well maintained. There are festivals seemingly every summer weekend from huckleberry and accordion festivals to the ATV Jamboree and ever popular Wallace Blues fest, which brings in thousands of music fans each July. While it’s only a short drive back to Sandpoint, plan on spending the night. There are name brand hotels, local motels, bed and breakfasts, and RV lots. This ensures your ability to take on Wallace’s ever expanding nightlife. In such a small town, one would not expect

Sleep like a baby. Dr. Lewis & Dr. Hawn Stop Snoring... Sleep Soundly.

Settled in the late 1800’s, Wallace grew quickly as thousands of prospectors came searching for riches in the surrounding mountains. a wide variety of dining options, but you’ll find just about everything here. There is pit style bbq, pizza, pubs and burgers, game, and several fine dining locations. Fainting Goat Wine Bar is continuing to grow in popularity as is the Wallace Brewing Company where you can get a pint, sample several styles, or fill a 64-ounce growler jug to go. You’ll find all kinds of history in the local antique shops, and just admiring the long lines of brick buildings that have stood for 100 years or more is a treat in itself. Many towns in the west have come and gone as the natural resources become tapped out, but not Wallace. While the mines are not producing at near the levels they once were, the town has not shriveled up, but rather reinvented itself as a gateway to the outdoors and place of rich history and culture. Whether you find fresh powder, a cold beer, fun festival, or a new appreciation for mining, you’ll be surprise how much fun you can have so close to home.
