AS THE DAYS GET LONGER, the weather starts to warm up and the flowers begin to bloom, we feel an increased energy and a feeling of hope. It is also the time of year when we celebrate Easter—the ultimate sign of hope in the Christian world.

Sadly, there are many in this world who struggle each day with little hope in their lives. Whether it is living in poverty, broken relationships or struggling with abuse, mental health issues or addiction, it is easy to lose hope when you don’t feel the love of others.

One of the best ways we can show the love of God to others is through our actions. For those of us who are blessed with an enriched life surrounded by people who love us, one of the greatest gifts we can give to others is the gift of hope. Here are some easy and quick ways you can spread the message of hope to those who need it most all year long.

Begin by CONNECTING with people.

Listen to others and do what you can to make them know they are being listened to. For many, being heard and having their feelings validated is equivalent to feeling loved. It can be a relative or friend you know is struggling, or it can be through volunteering at a local food bank and interacting with others. It’s

simple and it can enrich your life as well.

ENCOURAGE others. Someone you know may be stuck in a rut and not willing to go out and try new things … whether it’s applying for a new job or interacting with others. It can leave them feeling alone and isolated. Do what you can to encourage them!

OFFER HELP. Life can become overwhelming at the drop of a hat. If you see a friend who is sick, offer to bring them dinner. Maybe someone you know is having a bad day. Offer to take their kids for the day or run errands for them.

These are just a few ways that we can spread the Easter message throughout the year and let others see God’s love through our actions as well.

Building a new house?

HERE’S WHAT YOU NEED TO KNOW

I

f you’re thinking about building a new house, there are some major things you need to consider.

First there’s the process. The bare essentials: You need land, a house plan and a builder. Sometimes these can come as a package deal—there are builders who have prepurchased lots, have house plans for you to choose from and, they too, are your builder. It’s a set price for the whole package. The other option is to purchase the land, hire someone to customize a house plan for you (architect) and then hire a builder to construct the house.

I’ve gone over the steps of designing your new house before, but here’s a condensed review: Schematic Design - Conceptualizing spaces within the home and developing what the exterior will look like.

Design Development - This gets down to the dimensions of each space and furthers the concept with windows, doors

Construction Documents - Actual dimensions that a builder uses. These include structural drawings, foundation, framing, electrical and plumbing plans, etc.

Construction Administration - Overseeing the construction and coordination of finishes.

Second, what you should expect along the way. Your lot needs to be cleared. This may mean cutting trees, leveling the ground and excavation for foundation. Once the foundation is in, the framing begins; exterior, followed by interior walls. The sheeting goes on the exterior. Windows and exterior doors are installed, followed by waterproofing.

Now, the house is “dried in.” Contractors like to have this done so they can work inside during the cold, wet months to finish the interior of the house.

Things never go as fast as you want them to; be prepared for that. It’ll all be worth it in the end.

ax Freedom Day generally falls around this time each year. This is the day when the nation as a whole has earned enough money to pay off its total tax bill for the year, according to the calculations made by the Tax Foundation. So you may want to use Tax Freedom Day to think about ways you can liberate yourself from some of the investment-related taxes you may incur.

Of course, Tax Freedom Day is something of a fiction, in practical terms, because most people pay their taxes throughout the year via payroll deductions. Also, you may not mind paying your share of taxes, because your tax dollars are used in many ways—law enforcement, food safety, road maintenance, public education and so on—that benefit society. Still, you may be able to reduce those taxes associated with your investments, leaving you more money available to help you work toward your important goals, such as a comfortable retirement.

Here are some suggestions for making investing less “taxing”: • Contribute regularly to tax-advantaged retirement plans. Contribute as much as you can afford to your IRA and your 401(k) or other employer-sponsored retirement plan.

Traditional IRA earnings grow tax deferred, and your contributions may be tax-deductible, depending on your income. (Taxes will be due upon withdrawal, however, and withdrawals made before you turn 59 ½ may be subject to a 10-percent IRS penalty.) Your 401(k) or similar plan also provides the opportunity for tax-deferred earnings growth. Roth IRA contributions are not deductible, but your earnings are distributed tax-free, provided you don’t take withdrawals until you’re 59 ½ and you’ve had your account at least five years.

• Follow a “buy-and-hold” strategy. If you sell investments you’ve owned for less than a year, and their value has increased, you will have to pay capital gains taxes at your personal income tax rate, which, in early 2017, could be as high as 39.6 percent. But if you hold investments for at least a year before selling them, you’d be assessed the long-term capital gains rate, which tops out at 20 percent. Be aware, though, that the Trump administration and congress seem

likely to change the tax rates. Early plans call for a maximum personal income tax rate of 33 percent, with the top rate for capital gains and dividends either staying at 20 percent, or possibly being reduced to 16.5 percent. In any case, you’ll still come out ahead, tax-wise, by holding your investments long enough to receive the long-term capital gains rate.

• Consider municipal bonds. If you are in one of the higher income brackets, you might benefit from investing in municipal bonds, which are typically used to finance public projects, such as roads, schools, airports and infrastructurerelated repairs. Interest payments from “munis” are typically exempt from federal income taxes and may also be exempt from state and local taxes, depending on the state in which the bond issuer is located. Interest payments from some types of municipal bonds may be subject to the alternative minimum tax (AMT).

Again, though, watch for developments from Washington, as both the Trump administration and some congressional leaders favor eliminating the AMT. When charting your investment strategy, consider your risk tolerance, time horizon, family situation and estate plans. But investment-related taxes should also be in your strategic mix, so look for opportunities to keep these taxes under control.

n her first year of teaching at Hope Elementary School, Cody Spencer has already made an impact on her class of 24 students that range from fourth through the sixth grade. Not only that, but she teaches all elementary school subjects to all three grades.

“Teaching multi-age classes is not easy,” said Hope Elementary School Principal Sherri Hatley. “Cody genuinely cares about all her students and is all about improvement and growth and opportunities to learn.”

In her fourth year as a teacher, Cody said what she enjoys most is helping students to grow and learn. One of the highlights of her career so far was “finding the amazing

educational culture of Hope Elementary.”

Hatley said that one thing that she is impressed with is the way Cody jumps in and takes initiative. “She is enthusiastic about student learning and is taking the lead on Interim Block Assessments at Hope School,” said Hatley. “She owns her students—their learning and their behavior.”

In her role as a teacher and a role model, Cody said if there is one thing she hopes her students take away from her is to never stop learning and looking for knowledge.

“Knowledge is power. Be powerful,” said Cody.

KNOW THE FACTS BEFORE YOU REQUEST THIS CONTROVERSIAL SURGICAL PROCEDURE

A

fter more than 30 years of working in the veterinary field, cat declawing continues to rank as a controversial topic in the world of companion-animal welfare. Many a pet owner has expressed dismay at how much damage their cats can do with their claws. Shredded shoes, clothes, torn drapes, scratched upholstery, snagged carpets. You get the picture? To some owners it seems like their pet has it in for them. Yet, to your furry friend, scratching is a perfectly normal feline function! Cats scratch/rake for physical and emotional reasons, and we need to provide our cats with places to dig in—with joy!

The surgical declaw procedure results specifically in an amputated “finger” tip (X5) on each paw; pretty radical. And many countries have outlawed it, claiming that even with adequate pain control post operatively, it is barbaric, unnecessary and leads to even more behavioral issues. They claim that many of these same declawed cats eventually wind up euthanized or in the shelter—the very thing that good intentioned owners were trying to avoid. You see the dilemma.

At North Idaho Animal Hospital, we recommend that cat owners use avoidance and training. Here are some suggestions and tips: • Nail trimming. If you are at all unsure of how to correctly trim nails, it would be good to observe an “expert.” Ask your vet, a pet groomer or

someone with experience to demonstrate, as you want to be certain that you know how to do it correctly. Specifically, extend the claw without causing discomfort to your cat by unintentionally pressing too hard. It’s also useful to be able to locate the vein inside the claw. (You want to stay well away from it to avoid great discomfort to your cat and a shower of blood!) When in doubt, trim only a tiny bit from the very tip. File the tips with an emery board.

• Provide alternatives for scratching. Give your cat his own place to scratch, one you can reasonably hope he will find more appealing than your carpet or couch. Vertical scratchers usually prefer posts and poles, horizontal scratchers use scratching pads. Posts are pieces of wood vertically anchored to a flat base (to imitate a tree) and are covered with carpet, rope, cork or woven fabric. Scratching pads are rectangles made of corrugated cardboard, usually around 18-inches long and either 6- or 10-feet wide. Place these in prominent areas of the house where your pet likes to frequent! Teach your cat to use the post! Once he/she knows what it is for, you can slowly move it to the part of the room where you’d like it.

• Invest in a trial of Soft Paws. These are easy-to-apply acrylic nails that stay on for one to two weeks (small learning curve taught in veterinary clinics).

• Keep anxiety and boredom to a minimum.

Pheromones like Feliway act as a mood stabilizer and calm cats in multiple-cat households.

• Make home furnishings less desirable. Place strips of aluminum foil across your couch or chair (most cats dislike the crinkly feeling underfoot). Use Sticky Paws, strips of stickiness that you may place on problem furniture.

Cover the side of a chair with a plastic sheet. Of course, these are all temporary until you can train them to scratch the “cool” stuff you just made or bought. Be patient during the training period; don’t remove the props too early! Spray off-limit areas with bitter orange or apple repellant (which are available in pet stores).

In 1999, Sandpoint resident and former Sandpoint mayor, Marsha Ogilvie, decided it was time to recognize the women who have been significant role models in the community, giving of their time and talent and serving as an inspiration to others. It was then she founded the group, Women Honoring Women, who over the last 19 years have honored more than 105 Women of Wisdom.

The candidate criteria for this life-achievement award includes being 65 years of age or older; possess vision and achieve goals through collaboration; exhibit a love of life-long learning through study or experience; show a long-term commitment and positive impact to Bonner

hese are words that came across loud and clear from husband-and-wifeteam Brissa and Daniel Peterson, owners of Tork Electric. When asked if this was the differentiator between Tork and other similar companies, their reply was quite humble: “It’s about community, not competition.

If we can continue to do high-quality work, the jobs will come, and we can create incomes for many families in our community!”

I recently met up with the Tork Electric owners and the additional seven crew members at their corporate headquarters in Sagle. The newly constructed planning loft was warm and roomy, with efficient lighting around the very large “planning table” for the entire crew to view project sketches. There were literally dozens of project plans stored under the table revealing the current demand of this team.

The crew was very open to reveal the family atmosphere of Tork. “I’m just not another man or number on a crew,” said one team member. “We have each other’s backs with the best interest of the client.” It’s evident there is an unwritten rule to rally around each other and go to extremes if necessary to get projects completed on time and on budget. The crew stressed a sense of pride to be considered “the best” in Sandpoint. And just after this interview, it was revealed that Tork Electric was awarded “Sandpoint Living Local’s Finest Tradesman” for 2017!

The recent recognition may have come from successes on high-profile jobs like the Kochava Building, Diedrich Manufacturing upgrades and The Hive Downtown. The crew favorably

mentioned the work at the local watering holes of the 219 Lounge and A&P. Tork also has the sophistication to win state and local government contracts that included the hydro-plant and the newly renovated Memorial Field.

Being awarded such projects does not come by luck of the draw. Daniel began in the industry as a teen, logging thousands of hours as a journeyman and apprentice before being certified as a master electrician for Tork. He currently has oversight of two apprentices, Rick Peterson and Quinn McIntire. Rounding out his crew are journeymen Derrick Peterson, Rory Barnes, Eric Noble, Ryan Noble and Julio Curiel.

Let’s not forget the orchestration of such a team takes a proficient leader. Brissa uses her business degree from Eastern Washington University to take care of the internal tasks of scheduling, bookkeeping, tax preparation and, most importantly, payroll.

Fortunately, I was able to spend some time with the husband-and-wife duo away from the daily hustle and bustle, and it was evident that their daughter JoJo is the focal point of their family.

Brissa and Daniel are fourth-generation and third-generation Sandpoint natives, respectively.

They are fond of their past family traditions and are excited to establish additional family legacies. They love the outdoors where they spend their time camping, snowmobiling and riding ATVs. A long-awaited trip to Yellowstone is in the works.

I

t always seems there is something to celebrate at Jalapenos Mexican Restaurant in Downtown Sandpoint. Whether it’s singing “Happy Birthday” to someone wearing the notorious sombrero, a private gathering in their party room or a night out with friends in the lounge, Jalapenos has been the place to go for many over the past 25 years. Now that is something to celebrate!

“It’s really amazing to stop and think about how few businesses in town have been open as long as that,” said Dave Vermeer, who along with Justin Dick owns Jalapenos.

Ownership of the iconic restaurant is one thing Dave never envisioned when he used to deliver beer to the original Jalapenos’ location, in what was once known as the Bootery on Cedar Street. “I’ve loved Jalapenos from the beginning,” he said.

After the original Cedar Street location, the owners, Chet and Shari French, moved the restaurant to the building on First Avenue, which houses Starbucks and Pita Pit, before moving to its current location on Second Avenue. Now in their fifth year as owners, Dave and Justin have done an incredible job as they have expanded on the mission of

providing quality food and quality service at great prices.

The pair agrees that they would not be where they are today without the support of the community and their incredible staff, many of whom have been with Jalapenos for more than a decade. General Manager Chelsea Page has been a part of the team since day one when she started 25 years ago. Bar Manager Kari Gors has been with them for 16 years, and both Assistant Manager Amy Oxford and Kitchen Manager Nick Utt have been a part of the staff for 11 years.

So what about this 25-year celebration? On April 16, which also happens to be Margarita Monday at Jalapenos, they will offer $1 crispy tacos with either beef or chicken. If you happen to miss that, just know that there is always a celebration going on at Jalapenos. In addition to Margarita Monday, there is Taco Tuesday and a new family favorite, Magic Wednesday, which features magician Star Alexander.

“We also have a father-and-son team, Ruben and Mundo Rodriguez from Atotonilco, Jalisco, Mexico, who have been with us for 16 and 15 years respectively,” said Dave. “In fact, much of our menu is generated from that part of Mexico.”

And for those who love to visit the fish tank while at Jalapenos, you should note that Mango the fish has been there for 17 years!

Two years ago, Justin and Dave hired Executive Chef Walter Hayes who has been instrumental in expanding the menu offered at Jalapenos. It has even more choices of authentic Mexican food as well as American cuisine

While Justin and Dave are extremely grateful for all the support Jalapenos has been given by both customers and staff throughout the years, the community, too, is blessed to have them. Last year alone they donated to more than 100 organizations and causes and began the Dine Out for a Cause tradition, donating proceeds from a specific evening to a chosen cause. “Those of us who live here realize what an unbelievable community it is,” said Dave. “Giving back is part of what it means to live in a small community.”

parts of the country—some might even say the world. So why not make the most of being outdoors and enjoy access to natural areas while also improving our health, happiness and overall quality of life?

That is the vision of Kaniksu Land Trust, which is working hard to bring an area known as Pine Street Woods to life for the benefit of the entire community. Once acquired, the Pine Street Woods property will be owned by Kaniksu Land Trust and managed as a working and recreational landscape.

To date, fundraising efforts to purchase the property and get it ready for all the community to enjoy has brought in $1.685 million. With $415,000 still needed, the vision should soon be a reality.

“We feel great about the positive response to Pine Street Woods,” said Jim Zuberbuhler, who co-chairs the Pine Street Woods committee. “But we still need our entire community to rally with contributions of time, talent and money to make this community forest a reality.”

Among the initial improvements needed will be an access road, parking area at the trailhead and signage. The property, just minutes from Sandpoint off West Pine Street, is easily accessible and would be a gift for generations to come.

Kaniksu Land Trust is a locally based not-forprofit organization that works to promote healthy lands and healthy communities by engaging the community with the outdoors to better overcome challenges related to both health and education.

Recognized as an accredited land trust just over two years ago, the organization has worked hard on several projects spanning from Bull River Valley in Montana to right here in Sandpoint.

Pine Street Woods will be an ideal place to enjoy biking, family gatherings, hiking, Nordic skiing, walking, snowshoeing, exploring and more. It will also be home for all of the outreach, education and healthy-living programs that Kaniksu Land Trust facilitates.

One community member, who was diagnosed with type 2 diabetes, took part in the initial study for ParkRx and found her blood sugar dropped significantly after a minimum of 30 minutes of walking each day; she was able to control her diabetes with only diet and exercise.

Other programs supported by Kaniksu Land Trust include Camp Kaniksu, which helps connect young people to nature, and K-12 Outdoor Education—a program that provides interdisciplinary science curriculum to hundreds of school children.

Their Storywalk™ program promotes opportunities for kids and their parents to enjoy the outdoors together, not only exercising but reading as well.

One of the great things about this acquisition is that Pine Street Woods will be a community forest in perpetuity so that any gift given will last forever. Also, it will be open to other agencies and schools to utilize for programs and experiential education. Kaniksu Land Trust will seek input from the community to help shape how the property will be developed

and will also expand its programs so that more and more people can benefit from the property.

Many community organizations and entities have already offered their support for Kaniksu Land Trust’s initiative. Some of these include the Idaho Trails Association, Lake Pend Oreille School District, Pend Oreille Pedalers and the Sandpoint Nordic Club.

The Kaniksu Land Trust team aims to finalize ownership of the Pine Street Woods property and open it to the public by late summer 2018. “An ambitious goal for sure,” said Eric Grace, executive director of Kaniksu Land Trust. “But the people of Sandpoint, Dover and Ponderay are known for their generosity and their ability to make big things happen.”

According to Grace, you can help establish this much-needed community forest just minutes from Sandpoint, but time is of the essence. “Kaniksu Land Trust has a limited time to purchase Pine Street Woods,” he said.

each main event,” said Karen Stebbins of Vision Marketing, the team that’s behind putting on such an event. “We have Josh Henderson out of Seattle, Matthias Merges from Chicago, as well as others from Missoula, Lewiston and Walla Walla.”

The chef likely traveling the farthest for CRAVE! is Hugh Acheson, whose restaurants are wellknown around Atlanta and Athens, Georgia. “I was raised with three older sisters by a professor of economics, and I tired of fish sticks,” he said, “and so I got a job in a kitchen at 15.” Like many aspiring chefs, Acheson started out cleaning kitchens and prepping food, moving his way up and never looking back, happy that he could realize his dream. “I am glad I did because I

found the occupation for me, where I can always be a learner and relish in the beauty of discovery each and every day.”

Acheson will be one of many guest chefs putting on cooking demonstrations during the event.

Each will bring something different to the table, and guests will have a firsthand look at how they can prepare gourmet meals in their own kitchens. “I am doing a demo in which I will show people how to cook beef striploin with worldly ingredients. It will be a fun trip to Washington mixed with Thailand, mixed with the homeland of Canada and my current home of the American South," said Acheson. “If I can do a demo where people laugh and learn and take away one thing about making food easier, I have done my job.”

either Utah or Boise State. “I would love to play either football or lacrosse [at the collegiate level],” he said.

A junior at Sandpoint High School, Kiehl Hutchings is thoroughly enjoying his first year in public school. He plays defensive tackle in football, his first year in the sport, and also plays attack in lacrosse, where he has already made his mark.

“Last year I was tied for most goals in lacrosse,” said Kiehl.

With the same determination he shows in sports, Kiehl knows the career path he wants to follow.

“My ultimate career goal is to own a salvage operation that retrieves wrecks from the ocean.

That has fascinated me since I was a kid. The idea of finding hidden treasure is really interesting to me.”

One of his biggest challenges has been getting used to organized sports. “My whole life I have done individual sports: skiing, dirt biking, snowmobiling and jet skiing,” said Kiehl. “I spent a lot of time researching techniques for my position and watching videos on YouTube by pros and college athletes explaining their various approaches.”

Kiehl appreciates the wisdom of both his football coach and his lacrosse coach—who also happens to be his dad.

Heather Wallace Heather Wallace is a sophomore at Sandpoint High School and is a devoted athlete who participates in several sports.

“I have been running cross country and track for six-and-a-half years,” said Heather, who is in her second year on varsity. This year she added a new sport, wrestling, which she has been competing in for a few months.

The best part of being part of a team for Heather is the friendships and memories she has made.

“I’m lucky to be on teams, both wrestling and cross country, where, despite how hard they are, having fun is just a part of what we do.”

She said one of the biggest challenges she has had to overcome in sports is the mental aspect.

The determination she has gained by being an athlete has already paid off with lifelong lessons.

“Depending on the mental block, they can be hard to overcome,” Heather said. “But getting to the point where you are able to break through is the best feeling in the world.”

“I’ve learned that hard work pays off. I know that everyone knows that, but seeing progress and actually seeing improvement seems to teach higher lessons,” said Heather. “It’s reassurance that all the hours you put in was worth it and paid off.”

Heather plans to attend college after high school and said that she is unsure if she will compete in athletics at that level, but she still has time to decide. “It would be really fun, although I’m not entirely sure if I will.”

She currently has her sights set on becoming a teacher or an athletic coach. “I think that would be something I would enjoy,” Heather said. “I am also interested in studying psychology and sociology because those are subjects that I find really fascinating.”

100 YEARS AND COUNTING MEET FRANCIS MCNALL

orn January 1, 1918, Francis McNall has lived the last 96 years of his life on a ranch outside of Sandpoint, Idaho.

I was lucky enough to meet him in person, and the time I spent with him that wintry afternoon was delightful. On the kitchen table, old photographs were scattered about. Francis moved from one to the next as he told me stories of traveling in horse-drawn wagons, living in a one-room cabin, raising cattle, teaching school, dancing, love and family. He moved easily through his memories of the last 100 years, tearing up several times as he reminisced. It was endearing. His sincerity and expressions of gratitude, so evident in his stories, brought me close to tears more than once.

Francis moved with his family to the 80-acre ranch north of Sandpoint in 1922, when he was just 4 years old. “Dad drove the four-horse team pulling two wagons. The first wagon was loaded with chickens, pigs and a goose—because Grandma had said you can’t be pioneers without a goose for your down pillows. The second wagon had all the household goods.” Francis’ uncle followed behind on horseback and brought along five cows. The family traveled like this for 120 miles to settle in their new home.

Their new home was a one-room cabin. It was 14-by-16 feet and had just enough room for a kitchen stove, a table and beds. “It was tight for

us,” Francis admits with a chuckle. “And we had company! My uncle and cousins stayed with us, too.”

Developing the ranch made work for everyone. Francis remembers helping with the cows at just 5 years old. His younger sister, Lois, also had chores but was a little less helpful he admits with a laugh and a tear.

Giving the cows hay during the winter months was one of his chores. As a small boy, he struggled with the full-size pitchfork but felt responsible for the task. Everything then was done by hand, even the milking.

Francis started early each morning to bring the cows in from pasture and do the milking by 6am. Francis didn’t have a favorite job caring for the cattle. “I just liked to be with them.”

When they weren’t working, a favorite pastime for Francis, his sister and cousins was playing “horse.” They used a small children’s wagon and would take turns pulling, pretending to be the horse. Francis’ favorite role in this game was to be the skinner (the driver).

Francis has good memories of life on the ranch. He speaks fondly of the horse-drawn mower his father used to cut hay with and working with

him to clear portions of the land. They used dynamite to blow up tree stumps and horses to pull out the large chunks. Francis remembers the Long Bridge across Lake Pend Oreille when it was simply a wooden bridge. Highway 95 was a dirt road. And he rode the train for one penny per mile. These were different times, for sure! While reminiscing, Francis tears up frequently. He apologizes and says with a laugh, “I can’t talk about this without crying. It doesn’t matter if it’s sad or good!”

The couple raised seven children together. They lived on the ranch and Francis started teaching school at Northside Elementary in 1957. He taught there for 23 years. Often Francis had 30 or more children in his classroom. Thirty-nine students was the highest number he ever had, and “that was a little too many,” he admits.

After graduating from high school, Francis attended the University of Idaho, where he earned a degree in agriculture. He then returned home to the ranch. “They put me through school,” he says of his parents. “I wanted to come back and help Dad.” Francis also began organizing community dances. “During the war, dances became [the thing] to do.

We held them at Grouse Creek School.” Dance-goers paid a dime for admission, and this included a dinner of a tuna sandwich, cookies and Kool-Aid.

Francis was determined to change the stigma of attending a country school. He worked to ensure his students had the same level of education children in the city had access to. It became his personal ambition. Tom Albertson, current principal of Sandpoint High School, was one of Mr. McNall’s former students. “I remember he got me through learning my states and capitals. I don’t think I could have done that without him. He was a very kind man and had good discipline in the classroom. He pushed us to do and try things we wouldn’t have probably done. I have very fond memories of being in his classroom.”

Francis was a teacher in more ways than just the classroom. Janice, Francis’ daughter, explains that her father was always out at recess playing baseball and other games with the students. And during inclement weather in the wintertime, children were invited to spend their inside recess in Mr. McNall’s room learning to dance. He taught the children the waltz, square dance and ballroom dance.

Janice admits that, when she was young, working on the ranch wasn’t something she always enjoyed. “But now,” she reflects, “those

are some of my best memories—being with Dad on the ranch. He would tell stories of bringing the cows up the ridge and squirt milk into our mouths while we sat on stools across the milking stall.” Janice and her family recognize what a gem they have in their father.

A granddaughter is working to organize pictures and record Francis’ stories, and the entire family gathered to celebrate his 100th birthday on New Year’s Day. Family life is everything to Francis. He remembers coming home from school to be

received by his three little girls. “They made a fuss over me!” He admits tearfully, “That was quite a good feeling.”

Francis is grateful to have lived his life here.

“Look at it. It’s beautiful! This is my home.”

And, with 100 years of experience, Francis has earned the right to give a little advice. “Go to church,” he says, “and don’t forget to pray.”

Then he adds, “Forgive. Don’t hold grudges and brood over what happened in the past. It tears you to pieces.”

The truth about carbohydrates

By Kenny Markwardt, CSCS, Owner, CrossFit Sandpoint WHEN I MAKE A RECOMMENDATION TO clients about eating more carbohydrates, I usually get a response of, “Wait, won’t carbs make me fat?!

Aren’t carbs the devil? Don’t you read the covers of magazines in the grocery stores? Just what do you think I’m here for!?”

Sigh … No, no, definitely no, and I think you’re here to look better, move better and feel better.

In our current day and age, an era of social media misinformation and the loudest person in the room getting the most attention, carbohydrates have gotten a bad rap, and that’s unfortunate.

First off, carbs are delicious. Who doesn’t love pasta, rice, fruit and occasionally a little sugar?

Second, carbs are fuel. If you plan on doing any sort of exercise or physical activity where you need fast energy, you need carbohydrates. If you feel drained, tired and like you just don’t have that “go” that you need for your favorite activities, you’re likely low on carbohydrates. This is especially true if you’re chronically exhausted from your exercise. Even the authors of the most popular books are admitting now that one of their biggest regrets is recommending people do intense exercise on a low-carbohydrate diet. That’s how people crash and burn.

Third, body fat is added on due to an overconsumption of calories. It doesn’t matter if these are calories from fat or carbohydrates; eating too many will add fat to your body. (I left out calories from protein because I almost never see people overeat protein, and if you’re exercising, protein will generally convert to muscle and connective tissue, not fat).

In fact, study after study has proven this again and again. As long as protein consumption is adequate, it doesn’t matter what your fat versus carbohydrate intake looks like. Your body fat changes will reflect your over or under consumption.

"But wait! I know someone who lost 100 pounds on a low-carbohydrate diet!"

I completely believe that, and have seen it myself.

I’ve also seen people lose that much weight on a low-fat diet. I’ve also seen that happen on a Paleo diet. I’ve seen people lose weight in an infinite number of ways—some healthier and more constructive than others.

Remember the overconsumption of calories is how weight is gained. Moderating that calorie intake will lead to weight stabilization and under consuming those calories will lead to weight loss.

So, by restricting your carbohydrates, you’re probably lowering your calories incidentally.

No matter what you choose, whether it be to restrict your fat intake, go “Paleo,” practice intermittent fasting or go vegetarian route, your net calorie intake is lower.

So what’s a person to do? It’s probably the least sexy word in the dictionary, but moderation.

Make lean meat and vegetables your primary goal for every meal. A fist size of each for women and two fist sizes of each for men is a great place to start. Then go moderate with all of the other things. Have bread. Have pasta. Have rice. Have dessert once in a while.

If you’re gaining weight or you’d like to lose weight, it’s time to refine and pare down those “extras.” Choose what makes the most sense to you. Most people already know what they should be cutting out. If not, log your food for a week on MyFitnessPal. If you need help, or need the accountability (which is usually the hardest part), hire a professional. Just know that if it sounds wacky, it probably is.

Don’t choose a quick fix, a pill or anything that involves only drinking shakes or not eating entire groups of macronutrients. The ultimate goal is to seek long-term health and vitality.

THE TRUTH TO THE HEALTHY-EATING AND FITNESS-ROUTINE RATIO

W

hether one likes it or not, it’s a fact that nutrition makes up 80 percent and fitness 20 percent (depending on the source) of what it takes to be healthy and physically fit. In other words, if one wants to be healthy and physically fit, “less bar and more barre.”

There are two pools of people when it comes to fitness and health. The first pool abhors doing anything physically fit, choosing extreme diets or nutritional plans as long as they don’t have to step one foot into a fitness facility. Kale salads, quinoa, berries, no sugar, etc. are what this pool is eating to avoid any fitness routine. The other pool, however, could “crush it” working out three to four hours a day as long as they can eat whatever they’re craving. Running, barre, core training, weight training—you name it; this pool is doing anything that is burning calories.

Unfortunately or not, it takes a little bit of both to create and maintain a healthy and physically fit body.

Let’s chat about that 80 percent. Now that we know that this side of health is extremely important, finding out what works is a rather personal choice. Nutrition comes in many forms. Does one prefer Paleo, keto, glutenfree, dairy-free, sugar-free or a little bit of it all? Regardless of preference, the plan that is chosen needs to be a lifestyle choice. It’s easy to jump on the next new bandwagon of diet regimens. However, if it isn’t something that works with one’s regular day-to-day lifestyle, it’s just another diet. Once something works, make it a part of life and get ready to own that 80 percent. to becoming healthy and physically fit. It’s easier said than done to balance these two. However, discovering your area of weakness can allow you to push harder and understand what it means to commit to change.

The 20 percent can be different for anyone but, at some level, needs to raise your heart rate and build muscle. Barre is a great option for this because it recruits every muscle in the body, challenging one to lengthen and strengthen while also benefiting from a cardio workout. Weight training, Pilates, yoga, circuit training and swimming are also options of workouts that challenge the entire body. Whatever fitness preference is chosen, finding a balance between cardio-infused and strength-training workouts is key.

It’s still surprising when someone states, “I wish I could just work out all day and stay fit” or “I would eat kale all day if I never had to step foot in the gym.”

As we know now, that’s just not the way biology works. We must balance our eating habits with exercise. Finding both a healthy eating plan and a fitness routine that makes sense to one’s day-to-day life is the only way it will work over time. Committing to the 80 percent and 20 percent that makes sense is the beginning of a lifelong journey of having a healthy and physically fit body.

BRAIN FOG, POOR MEMORY AND LACK OF CONCENTRATION Discovering the cause will help lead to the solution

H

ow many times have you said in the last few weeks how bad your memory has become? Can’t remember? If you are like most people, it is becoming more and more of an issue. Why? It’s not just about getting older. If that were the case, why are kids complaining of that too?

sugar-related issues (diabetes or hypoglycemia).

The causes of brain fog, poor memory and lack of concentration are exhaustive. First of all, we have to assess whether there is truly need for concern or just a casual loss of memory. We all experience “brain freeze” when we just can’t remember a word or we walk into a room and can’t remember what we wanted in there. But if it starts occurring at an alarming rate, we need to rule out a potentially serious cause.

Nutritional Deficiencies - I find nutritional deficiencies to be of primary concern. Irondeficiency anemia and a B-vitamin deficiency top the list, but only from a gross-deficiency standpoint.

Since vitamins, minerals, amino acids and fats are all necessary for proper brain chemistry, a deficiency in any of the essential brain nutrients can affect brain function, which includes foggy thinking, memory and the inability to concentrate.

Let’s get the worst ones out of the way: tumor, Creutzfeldt Jacob Disease, encephalitis, ALD, HIV, neurosyphilis. Also of great concern would include lead poisoning, alcoholism, recreational drug use, blood disorders, Lyme disease, Epstein Barr virus, epilepsy, stroke, result of brain surgery, diabetes, liver cirrhosis and of course Alzheimer’s disease and senile dementia.

No nutrition conversation is complete without touching on the adverse side of foods. Foods containing artificial sweeteners, hydrogenated fats, aluminum and other such concoctions can also impair clear thinking. Other toxins such as amalgam fillings and other sources of mercury, lead, silicone implants, fluoride toxicity and other environmental toxins can contribute. Sugar, preservatives and certain additives can contribute to difficulty concentrating and foggy thinking, plus they rob other nutrients which could have helped.

Now let’s look at other, more likely, causes. I like to start with the most obvious, because, believe it or not, they are the most likely to get missed.

Sleep Deprivation - Either because of lack of number of hours of sleep, poor quality of sleep or sleep apnea.

Emotional Upheaval - Anxiety, depression, feelings of being overwhelmed, stress and any negative emotion that is in excess.

Hormonal Imbalance - This can manifest as PMS, menopause, andropause (male menopause), hypothyroidism, reduced adrenal function and

Medications - Especially antidepressants, painkillers, sleeping aids, anti-nausea medications, muscle relaxants, antispasmodics, diabetic meds, stomach meds, antihistamines, heart medications and cholesterol meds.

There are many things you can do to improve memory and help with clear thinking. Ruling out the causative factor, or factors, is the first step you can take.

TAKING ACTION! One man’s story of #metoo

A

s he walked into the restaurant, the last 25 years instantly melted away. He was my high school boyfriend, European travel partner and a man who I had not seen in nearly three decades. Most importantly, he was—and always will be— someone whose lifelong friendship I treasure deeply.

We sat across the table from one another catching up on each other’s lives. The challenges and joys of raising children, dreams—some fulfilled and some unfulfilled—and more. The nervousness that I initially felt had long dissipated. I felt like it was just yesterday that we were young and innocent without a care in the world. The hours passed quickly.

It was well into our time together, reminiscing about vibrant antics in Switzerland, France and Italy, when the conversation suddenly turned serious.

Tom came to see me that day with absolutely no intention of sharing a secret he had held within his soul for decades, sharing his pain with only a few select people. But he found himself opening up about the most painful part of his life. He avoided eye contact with me as he softly said, “I was sexually molested as a child.”

Suddenly, certain things I had observed about him over the years made

perfect sense. The times he felt guilty for things that a typical 17-year-old young man would experience in a relationship with his girlfriend. His struggle to hold a job. His issues with authority.

My heart filled with sadness and my own eyes filled with tears as I witnessed the pain in his eyes. I wondered silently, “Why is he choosing to share this with me now?” We had traveled through Europe together, witnessed one another at our best and our worst, and yet it had taken him 36 years to tell me about this horrific event that occurred when he was a vulnerable 7-year-old child. And then he continued to share his story.

Minnesota, the state in which he lives and where we both grew up, had enacted the Child Victim Act in May of 2013. The law changed the statute of limitation applied to civil legal claims for survivors of childhood sexual abuse with certain restrictions.

Under the previous law, any opportunity that Tom had to file a lawsuit against his perpetrator had long ago expired. He had filed a police report after a dozen years in counseling, but the statute of limitations was only three years from the abuse then. Yet with the enactment of the 2013 Child Victim Act, there was now a window of three years that allowed Tom to finally confront the man, in a legal setting, who abused him. “I could finally hold him accountable,” said Tom of the torture that endured well

FEATURE STORY beyond the incidents of his youth. “I wanted him to finally see, in black and white, that he didn’t get away with it.” But the deadline was looming. With the new window allowing certain qualifying victims to file a lawsuit

by May 24, 2016, Tom had just a little over a month to file a civil case and serve the man with the summons and complaint.

I had practiced law but had left the field several years earlier to raise my children. Besides, I was a bankruptcy attorney and I had never been licensed to practice in Minnesota. But I was determined to find justice for this dear friend who desperately needed an advocate.

After contacting several of my friends and getting referrals to local attorneys, it became clear that the Minnesota lawyers who were well versed in this field were busy with lawsuits against the Catholic Church—going for the deep pockets. I utilized the investigative skills I had acquired in previous positions and located the man who had assaulted Tom. I found the name of a nonprofit agency that advocates for sexual-abuse victims. The attorney agreed to take his case, and the lawsuit was filed and the defendant served the final day before the new statute of limitations expired. The first hurdle was met.

Sadly, the perpetrator did not have a lot of money and, in the end, the case was settled for nowhere near what Tom’s true monetary damages had been calculated to be—like a penny on the dollar for the lost wages amount alone. And that does not include physical or emotional damages yet. Imagine losing a couple million dollars. But he was able to hold his perpetrator accountable and might have let his perpetrator know that sexual abuse

In the last several xmonths, we find our country in a whole new era of women coming forward each and every day to say they were victims of abuse. caused Tom harm—and still continues to affect him. Yet, true justice had not been served, as there was also a confidentiality clause in the settlement agreement. Tom could not disclose the nature of the settlement or disparage the defendant in any way. “The pain of being gagged by the settlement has framed a different bondage,” said Tom. It was heartbreaking, as one of Tom’s many reasons to pursue the lawsuit was to encourage other possible victims of this man to step forward. He doubted he was the only one and almost everyone he told had posed the question, “Who else?”

It has not yet been a year since the end of the lawsuit. His pain continues.

The question remains, “What would true justice even look like?” But having shared his story with certain people has provided Tom with some emotional encouragement he’s craved for all these decades.

“Opening up [to others] has provided me with more support than I have ever gotten. Yet, it is still not enough to sustain me past the hurt,” said Tom. “This rapist severely damaged the core of my being.”

In the last several months, we find our country in a whole new era of women coming forward each and every day to say they were victims of abuse. The #metoo movement is strong. It is supportive. No longer will women be silenced by the threat of powerful men. They are sharing their stories and they are, for the most part, being believed. But we must not forget that there are men who are also victims. And there are children whose voices have not been heard; children unable to figure out what happened much less to be able to come forward and articulate it.

In media reports, many perpetrators counter the accusers by saying, “Why did they [the victims] wait so long to come forward? It cannot be true, especially since they waited so long.”

While it is encouraging to see so many coming forward, there are still many who are not. The reasons are many. Shame. Fear of people not believing them. Inability to take any legal action due to too much time having passed.

And as far as the confidentiality clauses, let’s do away with those as well. Stop protecting those who are the perpetrators. It perpetuates the abuse. By allowing victims to come forward and share their stories, we can encourage others to do the same.

As for Tom and so many like him, the reality of life continues with obstacles. It took him 36 years to share that part of his past with me, and many others from his youth still do not know. He recently told me that it is a source of embarrassment for him, and he has felt very alone during this journey.

“While the #metoo [movement] is a breaking out point for many, I’m still left in the shadows.

I stay in the shadows. I’m embarrassed I only live in the shadows after those glory days of [a] younger me who wasn’t all wrapped up in the aftermath of the perpetrator’s twisted whim,” said Tom. “That’s the difficulty of living each day. It still taunts me.”

hen considering your life, it’s important to ask yourself for whom you’re living. Is it for you or for other people? If you’re not prioritizing things like self-care and creating time for yourself, you’re just sabotaging your potential. Your ideal life isn’t necessarily the realization of all your dreams, such as unending happiness and immense wealth. Instead, it’s you making the most of what you’re capable of. By redesigning your life, you can realize the importance of putting yourself first.

Be the best version of yourself. It is essential that you understand that putting yourself first does not mean you neglect others.

This is not a matter of selfishness or irresponsibility. If you want to be a good person to other people, you need to be a good person to yourself first.

Think of it like money. Most financial advisors will tell you to pay yourself first. Set some money aside in a savings account before paying all your bills. Similarly, if you take time for selfcare, you will have more energy when it comes time to care for others—and you will be happier when doing so.

There’s no one way to care for yourself. You need to be aware of all your needs, from work and home obligations to physical and mental needs. In any given situation, you need to think about what you can do to make things easier for yourself. Here are some examples to help you get started.

Make Lists - You might feel like there’s so much to take care of that you can’t possibly take time for you. If there are all kinds of thoughts jumbled up inside your mind, it’s time to let them out. Make lists as much as possible. These can be both long and short term. For the long term, you can make a list of goals like making sure you and your spouse have one date night a month, saving up for a down payment on a house or saving up for a nice family vacation. Short-term lists can be for chores and errands that need to get done before the end of the week and taking an hour each night to read that book that has been gathering dust on your nightstand. You can use task management and productivity apps that help you easily write and consolidate these lists.

Take Breaks - If the only place for “break” in your vocabulary is working at a breakneck pace, you need to unwind. You might think that you are working smarter by working harder.

However, you’re just going to exhaust yourself. Make sure that you are taking breaks on a regular basis. You can try the Pomodoro method of productivity, where you work for 25 minutes at a time, with short breaks in between each session. You don’t want to let yourself work nonstop until you inevitably hit a wall.

Get Help - The reason you’re feeling so constantly exhausted might be due to taking on too much at once. If you’re able to get help, you should speak up.

For instance, you might be doing nearly all the chores in your house. Ask your spouse and kids to pitch in, reminding them that the more they help the more time you will have to spend with one another.

Don’t Procrastinate - Self care isn’t about avoiding obligations; it’s about handling them properly for the benefit of your future self. Procrastination is often done out of fear. We believe that a project is so daunting that we try to comfort ourselves by avoiding it. However, we just end up hurting ourselves when we’re nearing the due date. Save yourself from stress by starting projects early. Even if it seems insignificant, it will be worth it.

Wake Up Early - You can start your day off on a much better note by getting up earlier. While your bed might be hard to resist getting out of, waking up early can be conducive to a brighter and more energetic you. You can also accomplish so much more. Give yourself a routine that makes your mornings something to look forward to. You can try yoga, meditation, going for a short walk, reading a chapter from a captivating novel and more. Best of all, you can know that you’re starting your day by focusing on yourself.

Speak Up - Part of redesigning your life means having more confidence. If there’s something you don’t like that someone keeps doing to you, let him or her know. If your boss is giving you too much work and preventing you from spending time with your family, try to negotiate with him or her. If your best friend is being insensitive about your personal struggles, tell them. You should also be willing to cut relationships with people who are toxic toward you. Setting boundaries can be very liberating!

Learn To Say No - Being agreeable is fine, but you shouldn’t be a pushover. If you say yes to every request, you’re going to find yourself overwhelmed. It might

make you feel guilty to tell people you can’t do something for them. However, you simply can’t do everything for everyone. If you know that you won’t be able to accomplish something, tell them you can’t in as polite but firm of a manner as possible.

Cut Back On Technology - How much do you find yourself sucked in by the hypnotic spell of your smartphone, scrolling endlessly through social media? You’re not going to feel proud of yourself when you look back on your life and see how much of it was wasted. Restrict your usage of your phone and computer whenever possible. Use this time to appreciate things like nature, the company of others or just your own thoughts.

Creating time might seem impossible to you, as there are only 24 hours in a day. However, you need to make the most of those 24 hours. Evaluate your current life and whether you’re making enough time for yourself. By prioritizing yourself, you can ultimately make the most out of your life.

Use your vacation time for an actual vacation.

While reducing screen time during the day is a loftier challenge, eliminating it from the start and end to our day is very achievable.

Instead of the alarm on your phone, use an old-fashioned bedside alarm clock to wake up.

Have your phone charging in another room so you aren’t tempted to grab it and start scrolling news, email and social media threads. (Don’t worry. The information will still be there in a few minutes!) This allows you to properly wake up. The same goes at nighttime. You can’t be ‘on the clock’ 24/7, so set time aside at least an hour before bed where the phone or tablet goes

away. Read a book, talk with your spouse or unwind with some music. The blue light from screens keeps our minds active, making it more difficult to fall asleep. And a good night sleep is the best way to eliminate stress.

Prepping for the Ultimate Summer Road Trip NOT TOO LATE TO PLAN AN EPIC ADVENTURE

S

ummer road trips are the source of lifelong memories. My first travel adventure at age 9 was a marathon crosscountry trip from San Diego, California, to Newport, Rhode Island, in a Pontiac Station Wagon with Mom and Dad, four sisters and a spunky Dachshund aptly named Minnie. Back in the day, with no air conditioning, you had to drive across the desert at night carefully planning out where the gas stations were so you didn’t run out of gas. It was an epic adventure and it spawned my lifelong love of travel. I will never forget my first sight of the Grand Canyon or the vast expanses of Monument Valley. It is rare for a child to want to be an archaeologist, but after my first look at the ancient ruins of Mesa Verde National Park I was hooked.

Over the years I have taken that cross-country trip many times as well as planned numerous road trips with my family.

Here are some tips to make your summer trip a smooth adventure: The Vehicle. Make sure it is serviced and cleaned prior to your trip. Double check everything is running correctly especially the air conditioning and the radiator. These two things are not usually a worry in the Pacific Northwest, but as you get away from the coast in the summer you need to be prepared.

The Snack Box and Cooler. These are critical items for a road trip, especially with teenage boys. Many summer adventures involve outdoor locations that are far from services, and sometimes you can drive for hours without a place to stop.

Popular National Park services are overwhelmed in the summer. Can you picture angling for a parking place and then once inside confronting a line full of cranky, hungry tourists? I always travel with a snack box filled with individually wrapped snacks. I also pack picnic lunch items such as sandwich fixings and a cooler filled with bottled water. I’ll add one soda per person but feel water is a better fit in the summer. Also pack napkins or paper towels, a plastic tablecloth (this can cover a picnic table or used to sit on the ground), wet wipes and some trash bags.

It is extremely inane, but even older children find it fun. I still have my trip journal from when I was a child. Make each child a kit with a notebook, colored pencils (crayons will melt in summer heat), safety scissors and a glue stick so they can make a journal of their trip.

Plan. Really take the time to map out your vacation. Plan your route.

For a weeklong trip, spend no more than eight or nine hours driving to your destination. You don’t want to spend your whole trip in the car.

Know where you are staying. I like to find a base and stay the whole trip while venturing out for day trips. Plan an itinerary and make necessary reservations. Our family still talks about not seeing Alcatraz because they were booked. Follow the plan but don’t be afraid to deviate for a spontaneous activity or stay longer if everyone is having fun. Just about every location has a website now with many offering suggested itineraries.

Here are a couple suggestions for locations that are only hours away that are great for families traveling from North Idaho.

Missoula, Montana Located right off Interstate 90, Missoula makes a great substitute for Yellowstone National Park. The city is surrounded by Big Sky Montana vistas while having all the amenities a city offers. Instead of the tired lodging surrounding Yellowstone National Park, enjoy modern accommodations—many with great views! I love the Comfort Inn University with its mountain and river views. The area is packed with things to do just a short drive from town. We spent a week in Missoula and found something different to do every day of our trip. Visit the National Bison Range and get your fill of wildlife in their natural settings.

We saw more animals on the driving loop around the range than we did at Yellowstone. For history lovers, check out the Fort Missoula Historical Museum and the Garnet Ghost Town. Port Townsend, Washington Olympic National Park makes a great alternative to more crowded national parks due to its massive footprint. Highway 101 makes a loop about 350 miles around the park and has many fun quirky little towns to stay at. One of my favorites is Port Townsend with its beautiful Victorian architecture. Make your base at the Chevy Chase Beach Cabins. This historic resort has welcomed families since 1897, and the owners can trace many visitors back several generations. Located just out of town with majestic views of Discovery Bay, you won’t want to leave. Port Townsend offers all the amenities of a waterfront town. A foodie lover’s paradise, many restaurants are known for their farm-to-table bounty utilizing the local produce, meat and seafood. Enjoy the local beaches

with kayaks or stand-up paddleboards. Check out Orcas in their natural habitat on a whale-watching tour. Make sure to take some time to visit Fort Worden. In addition to its historic nature as a fort, the property has been transformed into a cultural center of lifelong learning. Multiple museums are on the site, and movie buffs will recognize the location for many of the scenes in the movie “An Officer and a Gentleman.” Once you’ve had your fill of Port Townsend, head out for day trips in Olympic National Park. A bit more than an hour drive will have you at the top of Hurricane Ridge. Picture the beginning scenes of the movie “The Sound of Music” with Maria running across alpine meadows. The winding drive up is not for the faint of heart but is truly breathtaking.

Northwest Spring Crepe

MAKES 8 CREPES SERVES 4 ENTREES OR 8 APPETIZERS Crepe Batter

Ingredients:

Spring is here and with it brings fresh, new, long-awaited ingredients for our kitchens. This is the time to get out to your local garden (otherwise known as “the woods”) and grab some truly local produce. For this recipe we will be using fiddlehead ferns and morel mushrooms.

Fiddleheads are the new sprouts of the Ostrich fern and are easy to find. Morels are a tasty spring mushroom that is a little trickier to find. There are good books on the identification of both or if you are not the foraging type, you can substitute asparagus and any mushroom of your choice. These crepes are a light spring appetizer but still savory enough to complement any cold, rainy day.

• 2 large eggs • 1 1/4 cups whole milk • 1 cup flour • 1 tbsp. butter, melted

method: • Place all ingredients in a blender and blend for 10 seconds.

• Heat a 10-inch non-stick pan to medium.

• Spray pan with non-stick cooking spray or rub with butter using a paper towel to absorb excess.

• Pour a 1/4 cup of batter into the pan and swirl the pan to get a thin even coat. Cook for about 20 to 30 seconds until top starts to look dry, or until crepe releases and is slightly browned on bottom.

• Lift crepe with a rubber spatula to flip or flip with the pan if you are feeling “chefy.” Cook on other side about 10 seconds.

Crepe FILLING

Ingredients: • 1/4 stick butter • 1 lb. fiddleheads (rinse, boil in salted water for 5 minutes, chill) • 1/2 lb. morels sliced into rings • 8 garlic cloves, minced • 1/4 cup dry white wine • 1 cup heavy cream • 1 package any flavor Boursin cheese (5.2 oz. or make your own: 1 part room-temp. cream cheese to 1/2 part room-temp butter, minced garlic, dried herbs, food processor, boom!)

• 1 egg yolk • 1 tbsp. tarragon, chopped • Salt and pepper to taste

method: • Preheat oven to 350°F. • In a large skillet over medium-high heat, cook butter until it starts to become brown in color. This will create a deep caramel flavor.

• Add fiddleheads and morels and sauté about 3 minutes or until fiddleheads start to turn a light brown.

• Turn down heat to medium, add garlic, sauté for 1 minute then deglaze by adding the wine. Let wine reduce until almost gone.

(around 3 minutes).

• Crumble in cheese and stir. Add egg yolk and tarragon and simmer until thick.

• Season to taste and let cool for 5 minutes or until cool enough to touch.

• Spoon mixture (about 1/2 cup) onto one crepe, roll crepe or fold like a diaper.

Repeat with all crepes.

• Place on a lightly buttered sheet pan and bake in oven for 8-10 minutes.

A Taste of the Theatre TRAVELING SHOW STOPS IN SANDPOINT

T

he Missoula Children’s Theatre is the largest youth touring company in the U.S., having made it to all 50 states and as far away as Japan. The group will visit 1,100 communities this year and will make a stop right here in Sandpoint, and your kids can become part of the act!

Saturday, April 28, at the Panida. During rehearsal week there are three enrichment workshops presented by the tour actors/directors. Creativity, social skills, goal achievement, communication skills and self-esteem are all characteristics that are attained through the participation in this unique, educational project, according to MCT.

The theatre company’s little red truck will be pulling into town the week of April 24. It will be carrying two professional instructors ready to help coach your child to act, sing and dance all in preparation for the big performance on the main stage. Auditions will be held with the company selecting 50 to 60 youth to perform in an adapted production of the Disney classic Aladdin.
