Creating an outdoor oasis around the fire pit

Warm summer weather provides the perfect opportunity to transform your backyard into an oasis that brings your daily life outdoors. Your backyard should be an extension of your home, adding usable square footage that welcomes family and friends. If you’ve ever been transfixed while watching a fire’s dancing flames, you know that a fire pit creates an unrivaled ambiance. It enlivens an outdoor space while providing warmth, the ability to cook, and radiating a feeling of summer nostalgia.

Fire pits have a calming effect; the heat and warm glow helps us relax and brings people together to share stories, late-night conversations, and of course, roast s’mores. Creating the perfect oasis around your fire pit will depend on your space, style, and the type of fire pit you choose.

How you design the area around your fire pit will depend on which type of fire pit is right for your lifestyle and yard. Whether you’re building a traditional wood-burning fire pit yourself or looking for a portable option with a propane tank that you can take camping, each has pros and cons that you need to weigh.

Wood-burning fire pits replicate traditional campfires. Made from various materials and available as both permanent and portable options, they provide warmth, the crackling sound of wood, and the ability to cook over

Built-in fire pits are customizable and can be constructed with stone or brick over a weekend, whereas store-bought fire pits may carry a high price tag but come in various sizes—some of which allow for portability. Wood-burning fire pits also produce varying amounts of smoke that can irritate your eyes, nose and throat, the smell of which can also attach to fabrics.

Non-wood-burning fire pits have become more popular for their convenience in the backyard and more contemporary designs. Propane options are easily turned on and off without the messy ashes but don’t produce the warmth of a wood-burning fire and require an attached propane tank that needs regular refills. Gel fuel fire pits don’t emit smoke and cost less initially but require refueling every couple of hours. Natural gas fire pits connect to your home’s gas line. Its convenient supply and easy maintenance make it popular among homeowners, but it’s not ideal for cooking, isn’t portable, and is often costly to install.

seats, people won’t linger. If there’s not enough heat, people might head inside. Luckily, when it comes to sitting around a fire pit, there’s no shortage of creative options.

Safety is the top priority when planning your fire pit area—the seats must be a safe distance from the fire. Most experts recommend three to four feet between seating and the outermost edge of the fire pit. This ensures you are close enough to feel the heat yet not so close as to cause a safety hazard.

Next, you’ll want to consider style and space. Once you’ve decided on the type of fire pit that will work the best for your needs, look at the aesthetics of your home and backyard. Do you want a rustic vibe or a sleek, modern ambiance? How comfortable do you want the seats to be? Sitting on a wooden log bench is great for camping but can get uncomfortable quickly.

Adirondack chairs are the most traditional choice for fire-pit seating. They are comfortable, sit low to the ground, and have wide armrests providing a spot to set drinks and plates. Adirondack chairs come in a myriad of colors and weather-resistant materials. Depending on which kind you select, they can carry a steep price tag at several hundred dollars per chair, but the ease of simply hosing them off makes them a popular choice.

If you have an abundance of space, built-in hardscape circular benches of stone or brick pair beautifully around a fire pit. The curved shape fits perfectly around a circular fire-pit design, and the stone or concrete is fire-resistant. Depending on the material and installation method, this option can vary in price but will last for decades. Include outdoor throw pillows or a bench seat cushion for added comfort.

RAND ROSECRANS, CULINARY ARTS

Rand Rosecrans’ career in culinary arts was notably impacted by a 5-foot SwissGerman chef whom Rand describes as “the biggest man I ever knew in the kitchen.”

Chef Kretz was Rand’s instructor during his studies at Western Culinary Institute (WCI), and he had a simple mantra—“Feed your crowd.”

“Feed your crowd,” Rand repeated. “It means find out what people need and give it to them.” Today, nearly three decades into his own culinary instructing career, Rand remains fixed on the mission of continually learning what it means to “feed [his] crowd.”

Rand was born in McCall, Idaho, and later moved to Emmett, where he went to high school. After marrying his wife, Suzette, the couple moved to Portland, Oregon, for Rand to attend WCI.

In the mid-‘90s, Rand and Suzette headed north to Alaska, where they would spend the next two decades. For 16 years, the couple lived in the small Alaskan Bush town of Galena, and Rand taught culinary classes at Galena Interior Learning Academy, a Native boarding school.

“We decided to go live our dream,” Rand said of the move to Alaska. “And that’s what we did.”

In 2016, as the couple searched for a new home in the contiguous United States, they eventually decided on Sandpoint, and at the behest of Suzette, Rand took a teaching job at Lake Pend Oreille Alternative High School.

Chef Rand, as his students call him, has become a beloved fixture at the school, and over the past seven years, he has come to love

working with the wide variety of students who enter his classroom.

“You have 100 students and 100 different stories,” Rand noted.

Rand’s courses range from foods and nutrition and international cuisine to teen living, but his goal is simply to prepare students with the skills and confidence needed to become satisfied and successful community members. One way Rand does this is by teaching practical life skills like budgeting and instilling the importance of frugality and conservation.

“Good resource management and frugal use of materials is something that is at the very heart of my teaching,” Rand emphasized.

Ultimately, Rand’s prime directive is to help his students understand that challenges are just potential successes waiting to happen.

“They call my students ‘at risk,’” Rand explained. “And one of my favorite sayings is: ‘My [students] are at risk because they have had challenges that have prepared them for their risk to become their success.”

Whether he is teaching his students to cook a soufflé or demonstrating how the school’s subterranean irrigation planters work, Rand has found his “crowd,” and he is working hard each day to faithfully “feed” them.

MUSIC CONSERVATORY OF SANDPOINT HONORS STUDENTS CLASS OF 2023

Each year, the Music Conservatory of Sandpoint (MCS) staff and instructors experience the bittersweet moment of watching a group of high school seniors graduate and move forward to new opportunities. This year’s group of distinguished graduates include Alanna Dixon, Levi Hill-Wright, Cody Moore, Kathleen Polocz, Lark Waldrup and Aaron Wilcox.

Alanna Dixon. For the past four years, Alanna has balanced work, school and musical studies, taking vocal lessons from Brenda Rutledge, piano with Melody Puller and honors performance with Dr. Matt Goodrich.

Playing instruments and singing have become passions for Alanna, and she loves the challenges that some pieces present, allowing her to grow in her technique and musical understanding.

“What I enjoy most about being able to play and use different instruments is the joy and beauty that it can bring to my life as well as others,” Alanna explained.

The MCS community has made a big impact in Alanna’s life, and she appreciates the support and encouragement she has received from instructors and other students. She hopes to pursue a college degree in vocal performance, and her aspiration is to perform with an opera company in Europe one day.

Levi Hill-Wright. Two of Levi’s biggest passions are people and piano. Having played piano for nine years and studied under Melody Puller and Dr. Matt Goodrich at MCS, Levi became a sought-after accompanist, playing with choirs at MCS, Farmin Stidwell Elementary and Kootenai Elementary. Levi has also played piano and harpsichord for North Idaho Philharmonia and recently received a silver medal for his impressionist piano performance at the 2023 MusicFest Northwest.

“For me, music is a unique form of selfexpression that is very personal and direct in how I can express who I am, what I do, and what I love,” Levi said.

When he is not tickling the ivories, Levi enjoys being outdoors, playing basketball or chess and building relationships with his teachers, mentors and fellow performers.

This summer, Levi is currently attending Interlochen Center for the Arts, and he will begin his college studies at Portland State in the fall.

Cody Moore. Cody has played piano for 11 years

and spent many hours working with Melody Puller and Dr. Matt Goodrich, but his talents and interests have also extended to vocal studies, theatre arts, handbells and cello.

“Music is a unique way to communicate emotion; it’s almost a whole different language that crosses cultural barriers,” Cody explained. “Sharing my musical experience with the audience is my favorite part of performance; the hard work, the emotion, the beauty of the music itself.”

During this past spring, Cody performed Pergolesi’s Stabat Mater as a countertenor, played the lead role of Tevye in the musical Fiddler on the Roof, and earned a silver medal for his romantic piano performances at MusicFest Northwest.

Aside from performing, Cody is an avid basketball player, and he plans to attend Warner Pacific University to study exercise science and kinesiology.

Kathleen Polocz. From the time she could talk, Kathleen has been singing, and for the last nine years she had been playing the violin.

At MCS, Kathleen has studied under Brenda Rutledge for voice lessons and Keegan Bernardin for violin, and she performs for numerous ensembles ranging from the North Idaho Philharmonia and Pend Oreille Chorale to MCS’s handbell choir, ensemble choir, musical theatre and orchestra.

“I enjoy the beauty that can be shared, the story that can be told, and the synergy of making music with other people,” she said.

Kathleen feels she has grown in her confidence and stage presence over the years, and she hopes to continue making music wherever she goes.

Lark Waldrup. Lark has played piano for seven years and studied under Caren Reiner, and she

also enjoys violin, ukulele, bass guitar and taking care of her cat, Pico de Gato.

Playing piano has taught Lark the importance of dedication and shown her how rewarding her hard work can be. “The emotions that can be put into music allow for a release and a stress free space unlike any other,” Lark added.

At MCS, Lark has been trained musically, but she has also been inspired and pushed to improve as a person.

“I love the community, dedication and dreams that live in the conservatory,” Lark emphasized. “You will always find support, someone to push you to achieve your goals.”

Lark plans to attend the University of Puget Sound in the fall and continue her music journey.

Aaron Wilcox. In addition to playing piano and working with Dr. Matt Goodrich at MCS for the last four years, Aaron also developed a strong passion for the classical Spanish guitar during his high school years.

Whether on the piano or guitar, playing music has become Aaron’s go-to form of expression.

“Playing my instruments and listening to my favorite music gives me an escape into my mind where I can experience a world of my imagination,” Aaron said.

Throughout his time at MCS, Aaron has appreciated the relationships he has built and the support he has received from the community.

Aaron earned a silver medal for his impressionist piano performance at MusicFest Northwest, and in the future he hopes to become fluent in Spanish, continue studying music and explore Spain when he has the chance.

Taking the Next S.T.E.P.

Mother-daughter gymnast instructor tandem stepping out of the business and into new opportunities

About 19 years ago, Bo Whitley’s middle daughter, Chantel, came to her with an ambitious idea.

“[Chantel] graduated [from high school] and she told us one day, ‘I think I am going to start my own gym,’” Bo remembered. “And I thought, ‘Oh no, please no.’ Because I had been running gyms, and I didn’t want her to have that responsibility and that life.”

But despite Bo’s admonition, Chantel had made up her mind, and there was no holding her back. “She was adamant that that was what she thought was God’s will for her life,” Bo explained. “And that’s how S.T.E.P. got started.”

Now, after nearly two decades running the most successful gymnastics and circus arts gym Sandpoint has ever had together, Chantel and Bo recently sold the business they started together—S.T.E.P. Training Centre—and are stepping out into new opportunities.

Chantel grew up learning to dance from her mom, but when she began gymnastics at 6 years old, she knew she had found her passion. “Dance was great, but gymnastics was way better,” Chantel laughed.

The origins of S.T.E.P. Training Centre trace back to a summer camp that Bo, Chantel and the Whitleys’ youngest daughter, Autumn, ran together at Oden Hall in June 2005.

“Our camp was definitely the spark that lit the forest fire of S.T.E.P.,” Chantel recalled.

The mother-daughter duo called it the “Stepping Out” camp, and participants came for a week of practicing gymnastics, making crafts, cooking together, learning a foreign language, and competing in the Whitley’s famous obstacle course.

Shortly after that inaugural camp, Chantel began to feel a calling that she could not ignore.

“God laid it on my heart that I was going to start a centre where mentorship and life skills were really fostered,” she recalled. “I wanted to make [S.T.E.P.] a place where kids could not only learn a sport that I loved but also learn some life skills that went along with it.”

To her surprise, Chantel was able to secure a lease for a small building that was owned by a lumber company, and on September 11, 2005, S.T.E.P. Training Centre opened for business.

Chantel and Bo set themselves apart with their disciplined training style, “The Whitley Way,” which focused on training the mind as well as the body, and they used encouragement and meditation to instill confidence in each athlete.

“[Our training style focuses on] taking pride in what you do,” Chantel noted. “Whether that’s a kid who has a forward roll, and that might be their best skill that they ever get, or a kid who is at a highly competitive level and is going to be a state champion”.

In addition to the rigorous gymnastics training, S.T.E.P. athletes were required to participate in community service. Each year, Bo and Chantel ran a fundraiser called Cartwheels For Cancer, allowing their gymnasts to raise money for their competition season and donate to cancer research.

Over the years, the Whitleys found a lot of success, coaching numerous successful gymnasts and winning many team state championships, most recently in 2022 and 2023.

While working hard to grow S.T.E.P. and giving it everything she had, Chantel also bought several horses and developed a passion for horse jumping. Over the last several years, she began praying and considering her future aspirations, and she ultimately decided to sell her business so that she could move to Seattle and pursue her goal of taking her horse to the Grand Prix level of competition.

Bo supported her daughter’s decision, and she is now preparing to open the Northwest’s first vibration and bungee studio in Sandpoint, allowing her to continue teaching people to stay athletic.

Working together to grow S.T.E.P. Training Centre was a life-changing experience for Chantel and Bo, and they are both extremely thankful for the many memories they made and lives they impacted together.

“It was super sweet,” Bo described, referring to a recent conversation with Chantel. “[Chantel] was like, ‘Mom, do you remember when … you said when [my siblings and I] were 18 that it’s time for you to let us go?’ And I was like, ‘Yeah, because I did my job and now it’s time for you to find your own way.’

“And [Chantel] said, ‘Guess what, Mom, I raised this training centre [and] I have had S.T.E.P. kids for the last 18 years of my life … and it’s time for me to let it go.’”

Posie Picnics, the brainchild of Hannah Allshouse, is a luxury picnic business, perfect for any event—whether it’s a proposal, anniversary, birthday party, bachelorette party, elopement or date night. Big or small. Outside or indoors. Hannah uses her talents to create an alluring oasis for her clients. She has it all! Teepee, rugs, floor tables, pillows and cushions, tableware, lanterns, candles, flowers … and of course, the food! Hannah takes care of all the details.

“All you have to do is show up and surprise your party with an experience they’ll never forget,” she smiles. “You enjoy your time and then I come and clean it all up!”

Hannah shares that she has always been creative and sought to do something with that creativity. She was

ambitious … but without an idea she was passionate about—which led to the start of various business ventures or projects that would then die out. “But then I saw this idea of a luxury picnic setup, and it seemed to fit what I love perfectly,” she remembers. “I love that I can still be a full-time mom but have this creative outlet that allows me to be a part of amazing, special moments in people’s lives and make their dreams come true. I really want to capture your heart’s desire for your special moment.”

To achieve this for each client she serves, Hannah strives to go above and beyond, providing the highest quality service and experience.

When booking one of these specialty picnics with Hannah, you’ll share a bit about your event, and depending on how elaborate it is, Hannah will give you a call to go over the specifics in more detail. “Some events fit the packages I have already created perfectly,

while I can also customize a package just for you!” she smiles. Picnics can be customized to serve anywhere from two to 30 people! Hannah has partnered with the Peppered Mercantile, located in downtown Sandpoint, to do the catering. They have specially created a few different menus from which the client can choose.

When it comes to location, the sky’s the limit! As Hannah notes, “I can set up really anywhere! I once had a proposal that was on the side of a cliff! I hiked out the stuff and set up, and it was one of the most beautiful things I have ever seen. A birthday party at City Beach, a bachelorette party at an Airbnb, a girls’ night in your dining room, a surprise date in your backyard! It’s amazing what a Posie Picnic setup can do to transform a space.”

Add-ons include twinkle lights, cornhole, a mini photo shoot with a local photographer, a Polaroid camera with film. “Here’s the thing with me,” Hannah adds, “you oftentimes won’t only get the things listed here, as I’m a dreamer and have lots of ideas, so things will probably escalate in the best way!”

What truly brings Hannah joy is seeing the look on the faces of her clients and those special people in their lives who have been blessed with a Posie Picnic. “There’s nothing like seeing a girl’s face walking up to a proposal like she hit the jackpot with her man. And really, that’s what I love so much. These events bring so much intentionality to a marriage or dating/engaged relationship. It’s so special to see someone feel so loved.”

Hannah has been part of the Sandpoint community for the past eight years; her family relocating here to start a church— Regeneration Calvary Chapel. Soon after, she met “the most amazing man”—her best friend and now husband, Jason, whom she married three years ago. Together, they have their beautiful daughter, Rosie. When not leading worship at their church or creating the next dream picnic for a client, you will most likely find Hannah, Jason and Rosie taking in the beauty of Sandpoint at the beach, playing volleyball, hiking, and spending time with family and friends. Tips for a Safe Summer

Adventure safely this season with help from the Bonner General Health Emergency Department

“In 2022, the leading cause of traumatic injuries to adults and children that came through our Emergency Department was from motorized vehicles, including cars, ATVs, UTVs and motorcycles,” reported Marian Martin, director of Emergency Services at Bonner General Health. “Injuries could have been significantly reduced with seatbelts and helmets.”

As you adventure around our beloved town this summer, consider this advice from BGH Emergency Department Team member Denis Simko, RN:

What are the most common injuries seen in the Emergency Department during the summer months? The most common injuries occur from ATVs, motorcycles and bikes.

What are the best ways to prevent these injuries? My best advice is to know your limits and skill levels. Wear a helmet and obey the rules of the road. Do not drink and drive.

What type of injury warrants a trip to the Emergency Department? Large lacerations, deformity of limbs, loss of consciousness, chest and abdominal injuries, and stroke or heart attack symptoms. Stroke symptoms include face drooping, slurred speech, arm weakness, sudden vision trouble, or sudden trouble understanding simple statements.

What can one expect when they arrive? You will be greeted by a friendly nurse who will assess the severity of the injury. Depending on the assessment, there may be a wait. Keep in mind that patients are not served based on the order of arrival. Patients are brought back in order of acuity, meaning the most life-threatening case will be seen first.

Additional Summer Safety Tips:

• The American Red Cross recommends the following safety measures around water: Never swim alone, utilize U.S. Coast Guard-approved life vests for young and inexperienced swimmers,

always supervise children around water and limit distractions (yes, that means your phone).

• Protect your skin with sunscreen daily, often reapplying when outdoors. Protective clothing, hats and sunglasses will also help prevent sunburn.

• Take extra precautions when biking, walking, skating and scooting around town. Use sidewalks and crosswalks where available, plan and take the safest route, wait for pedestrian signals at traffic lights, and use hand signals and bike lights when necessary. Sandpoint is a pedestrian-friendly town. While driving, stay aware of those on wheels or on foot.

• You can do a few things to lessen the stress of a sudden need for medical attention. If visiting from out of town, identify where the closest Immediate Care Clinic and Emergency Department are located at the beginning of your stay. Also, understand your health insurance coverage or how to access it. Finally, know what level of care you need when you need it. If an injury is not life-threatening, an Immediate Care Clinic visit may be appropriate. Immediate Care Clinics can treat:

• Cuts, bruises and minor lacerations

• Earache, sore throat and fever

• Minor burns and skin infections

• Sprains, strains and simple fractures

• Upper respiratory infections, bronchitis and sinusitis

“We live in an area where we all like to enjoy fun and adventures, but please consider safety a top priority when visiting and playing in Bonner County,” Martin reiterates.

Simko advises “making smart decisions. Drink more water than alcohol. Consider taking a safety class, such as safe boating, first aid or CPR. Carry a small first aid kit on your adventures.”

SHINING A LIGHT ON RED LIGHT THERAPY

The surprising health benefits you need to know about

Light therapy is gaining traction in many areas of health care, as research is proving it to be a very powerful and effective tool. But how does it work? And why should we care?

Red light therapy uses LED (Light Emitting Diode) technology to emit certain wavelengths of light to achieve therapeutic benefits. Research shows that the light actually gets absorbed by the cell’s mitochondria, causing increased ATP production. Simply put, the light gives our cells added energy to perform their very important jobs. For example, a fibroblast cell may be able to better produce collagen and elastin with light therapy exposure, leading to improved fine lines and wrinkles.

With consistent use, red light therapy provides improved healing time, increased circulation, improved texture and clarity, improved skin tone, decreased wrinkles, decreased inflammation and even pain relief. In addition to in-office treatment, many of these companies offer at-home devices for purchase. At-home devices can range in price from around $500 upward of $3,000, while in office-treatment is approximately $30 to $100 per session.

Sandpoint wellness center focuses on healing the body naturally

elinda Adams made the conscious choice to turn heartbreak into healing. She and her husband Barrett welcomed their beautiful baby girl, Trinity Melinda Adams, to the world on February 13, 2002. Born with a rare heart condition, the hospital would be Trinity’s home for nearly two-and-a-half years and where she endured various procedures, including four open heart surgeries—she passed away after her final heart surgery in 2007. Trinity was laid to rest at just 5 ½ years old.

“This life and death experience with our daughter is what truly gave me the drive to become a nurse,” Melinda reflects. “I am a nurse in honor of my daughter.”

After completing nursing school, Melinda worked in a variety of nursing fields over the years, including medical surgery, telemetry, PACU recovery, emergency department, labor and delivery, postpartum, and operating room/surgery.

She and Barrett made the move to Sandpoint two-and-a-half years ago and immediately fell in love with the area, the people and the beauty

of Sandpoint. Melinda joined the team at Bonner General Hospital, and it was during this time that she recognized a need in the community for a mobile nursing care service that could come to a patient’s home. “This is when I knew that the Lord had other plans in store for my family and me,” she recalls.

In March of 2022, 7-B IV, a mobile IV business, was launched. “It immediately became my passion [being a nurse in the art of functional medicine], and I realized that this is why my family was led to Sandpoint,” Melinda smiles. “The body is a beautiful, natural, organic creation from God, and it has a very strong natural ability to heal itself. This is why I do what I do now, helping one patient at a time to pull out of their illness, back over to wellness.”

7-B IV immediately saw success within those first few months, with Melinda’s clientele continuing to grow and the business getting busier and busier. “It became apparent that I needed a clinic space to help funnel some of these patients into, creating a cheaper option as well as keep the mobile service open for those patients who were unable to get to the clinic,” she says. On September 1, 2022, she and Barrett opened their full-time clinic in downtown Sandpoint.

The clinic consisted of a cozy 500 square-foot communal room and began to develop into a very functional medicine clinic as different services were added on. This rapid growth created the need for a much larger space. “We were blessed with the opportunity to purchase a clinic in downtown Sandpoint from the DeLand family,” Melinda says. “We started renovations and officially moved into our new wellness center in June. We continued the communal room feel into our new clinic space, although we do offer private rooms as well.”

As their space expanded, Melinda’s passion for natural healing did as well. She realized that Sandpoint needed a full healing wellness center with medical-grade equipment to truly help patients with the science of functional medicine. Today, 9B-IV Trinity Wellness Center, the name in honor of daughter Trinity, offers not only IVs but full-spectrum healing redlight saunas, a Halotherapy salt chamber for respiratory

care, medical-grade redlight therapy bed, bioidentical hormone therapy, as well as a full blood draw/lab service.

“Our clinic is also giving access to medical doctors of naturopathic/functional medicine, breast cancer surgeon/specialist, mental health therapy specializing in trauma, medical massage therapy, as well as a legal nursing specialist,” Melinda says proudly. “We have lots of desires and dreams that we would like to add, all of which provide the Sandpoint area with the treatments that will truly help patients return back to optimum health using the functional medicine approach.

Melinda firmly believes that it was ultimately the Lord who allowed 7B-IV to thrive and grow to what it is today, as well as the support of her husband. “Although it may not make sense to some, I have felt very guided by something bigger than myself to do this. If it wasn’t right, it wouldn’t be happening,” she shares. “The other huge part of this is my husband, Barrett. He encouraged me to jump, to have faith, when I was very doubtful about doing this.”

Melinda and Barrett invite the community to join them for their Grand Opening on Saturday, July 15. 7B-IV Trinity Wellness Center will be transitioning into a membership program, offering discounts on all 7B-IV therapies for members; non-members will continue to be welcomed.

The Compass by Margaritaville is a new hotel in Medford that is a partnership with the Coquille Tribe and Margaritaville. The Coquille people’s “Spirit of the Potlatch” is a tradition of hospitality long practiced by the tribe. Traveling with pets during the summer necessitates alfresco dining, and Medford has a variety of options. The Southern Oregon Artisan Corridor, located in Central Point, will delight foodies with the Rogue Creamery’s award-winning blue cheeses, Lillie Belle Farms gourmet chocolates and Ledger David Cellars. Pick up supplies for a picnic or relax at Ledger David’s outdoor tasting room to enjoy your bounty. No trip to Crater Lake National Park is complete without a trip to Beckie’s Café for the celebrated pies. Listed on the National Register of Historic Places, Beckie’s has been dishing up delectable comfort food since 1926. Get your pie to go and enjoy at the picnic tables nestled in a garden shaded by old-growth trees.

A local favorite is Jasper’s, with a variety of burgers, hotdogs and shakes. It’s a dive, but the outdoor garden area is pleasant with tables under shade trees and awnings. Order a burger patty for your dog to enjoy. Jasper’s also has puppy ice cream. Many of the wineries on the wine trails surrounding Medford have pet-friendly areas where visitors can enjoy outdoor tastings.

Jaws drop upon the first views of this water-filled collapsed volcano at Crater Lake National Park. It is absolutely stunning, as the rocky terrain contrasts with crystal blue water. The massive snowfall this year deluged the park with 52 feet of snow, so visitors will likely see snow into July before Rim Drive around the lake is completely clear. The park is surprisingly pet friendly with five trails that allow pets. These range from short hikes to the challenging Pacific Crest Trail, which passes through the park. Other areas include the overlooks, roads, campgrounds, picnic areas and paved parking lots.

Insider Tip: Plan to arrive at the park early to avoid the crowds.

You will want to take Highway 62, also known as Crater Lake Highway, from Medford to Crater Lake National Park. On the way back, stop at the Rogue River Gorge Viewpoint for a short .3-mile loop trail, which has four viewpoints of the Rogue River Gorge and interpretive signs. It is pet friendly, but some animals may be frightened by the loud rushing water. Right next door is Beckie’s for a pie stop. A little further down Highway 62 is the Natural Bridge Trail. The shorter trail leads to an ancient lava tube where the Rogue River sinks away, running underground before popping back up further downstream. Later in the summer, when water levels are lower, it forms a natural land bridge. The trail is very scenic with plenty of benches for a rest or to enjoy the sounds of the birds chirping and the rushing water. This stop is also pet friendly.

Indulge in the flavors of summer with this unique and flavorful salad!

2 medium zucchini, thinly sliced

2 ripe peaches, sliced

4 oz. feta cheese, crumbled

1/4 cup toasted pine nuts

1/4 cup fresh mint leaves, chopped

2 tbsp. extra-virgin olive oil

1 tbsp. lemon juice, fresh squeezed

Salt and pepper to taste

• Combine zucchini, peaches, feta cheese, pine nuts and mint leaves in a large salad bowl.

• Whisk together olive oil, lemon juice, salt and pepper in a small bowl.

Local food truck now serving up their incredible barbecue at new brick-and-mortar restaurant location

Sean and Katie Smith have had the pleasure of calling Sandpoint home for the past seven years. Prior to relocating to the area, Sean—who has loved the world of barbecue for as long as he can remember—moved from a small town in Upstate New York to the Rockies in 2006, drawn by his love for the mountains and adventure. He worked in Human Resources in Colorado, Montana and Idaho, though he always longed to work for himself. Katie, who is from a Northern California farming family, moved to Missoula to attend college in late 2009. Not only did she fall in love with the mountains and rivers but the people and the culture. She worked in Emergency Animal Care during her tenure in Montana.

In 2015, Sean and Katie would cross paths while both living in Western Montana. Shortly after meeting, Sean moved to Sandpoint for a job with Litehouse Foods, and Katie followed suit the following summer. You may know Katie from her work at Pend d’Oreille Winery and more recently as the beer/wine buyer at Winter Ridge Natural Foods. Beer and wine have been a passion of hers, and she is always excited to talk wine with others.

So, what inspired them to open a food truck specializing in barbecue? “We both have always enjoyed the art of craft food. And honestly, we couldn’t find what we craved in the area, so we created it!” Katie reflects. “Sean frequented any barbecue joint, or festival, he could find growing up, and anywhere he lived or traveled to. I grew up with less of a barbecue influence and more of a seasonal, fresh food influence, with a heavy dose of tri-tip. After we met, we attended multiple barbecue competitions, festivals, and Blue, Brews and Barbecue events together. This sparked years of backyard barbecue trials before we made the jump to opening the food truck and owning our own business.”

In 2020, after eight months of building it themselves, Smokesmith Bar-B-Que made its debut. Their first pop-up event was at their soon-to-be restaurant (formerly The Longshot). “Now, three years later, we just finished up the final touches of our brick-and-mortar restaurant right in time for summer,” smiles Katie. The restaurant will be open to the public sometime in July.

Smokesmith prides itself in only using live fire with real hardwood to smoke their food—never propane or pellets. Additionally, they always use their own proprietary blend of spices (without sugar) to rub their meats. Lastly, no sauce is added to their meat unless it’s requested—if at all. “We prioritize the true flavor of hardwood smoke and slow cooking,” affirms Sean.

The menu features craft barbecue including brisket, pulled pork, pork ribs, tri-tip, chicken, as well as additional proteins. Pair your meats with rotating traditional and crafted sides such as beans, coleslaw, mac and cheese or potato salad.

Fun fact: Since opening the business in 2020, Katie and Sean got married and took off on a 9,000-mile road trip for their honeymoon to explore barbecue across the country. Since then, they have taken multiple trips to Texas to further learn the craft from those who do it best!

MeMOOries in the Making Promises a Memorable Experience

97th annual Bonner County Fair runs August 16 through 19

2023 marks the 97th annual Bonner County Fair, with this year’s theme MeMOOries in the Making! Historically a gathering place for families and friends and a celebration of agriculture, the fair has evolved and grown over the years to include so much more!

According to Amy Robbins, Bonner County Fair manager, there are currently 409 active 4-H members as well as many community members who will be showcasing their talents during the fair’s livestock and static exhibits. Then there’s the entertainment and grandstand evening events that include a concert, bull riding and demolition derby. Activities, contests, bounce house area, petting zoo, a magician and fun photo both can all be found at the fair. Amy notes that the antique tractors and wildlife display are wonderful additions to the fair. And no fair would be complete with the fair food!

“The fairgrounds continues to build our social media audience and look for new ideas to promote to all ages,” says Amy. “There really is something for everyone at the fair.”

The Bonner County Fair greets approximately 15,000 to 20,000 guests each year, drawing in such large numbers thanks to the fair’s focus on providing entertainment and activities for all ages and highlighting agriculture, animals and exhibits, food booths

and grandstand entertainment. “You can spend the whole day at the fair looking at exhibits, checking out booths, eating your favorite fair food, and watching the grounds’ entertainment,” shares Amy.

Sandpoint Beerfest 2023

The Greater Sandpoint Chamber of Commerce is bringing its beer bash back to the beach noon to 5pm on July 8. The Music Conservatory of Sandpoint’s beloved annual Summer Serenade fundraising concert returns Sunday, July 23, showcasing the incredible talents of conservatory faculty in an intimate classical music setting. Long Bridge Swim

The tradition continues for its 28th year, with this year’s Long Bridge Swim set for Saturday, August 5. Registration is currently open to all swimmers of all ages and abilities.
