BLACK FOREST PAVLOVA with espresso cream Ingredients Prep time 1 hour, cooking time approximately 2 hours.

For the meringue: • 8 egg whites • 2 cups granulated raw sugar • 2 tablespoons dutch cocoa powder • 1 teaspoon vanilla essence For the topping: • 2 cups thickened (whipping) cream • 2 tablespoons strong espresso coffee • a 680 gram (24 ounce) jar of morello cherries • ½ cup chopped walnuts • ½ cup dark chocolate curls * • ½ cup dark chocolate shavings ** * To make chocolate curls, run a potato peeler down the edge of a block of chocolate. ** To make chocolate shavings, use an ordinary fine grater or a Micro-Plane.

Preheat oven to 420° F. Place a sheet of baking paper on two large baking trays and draw 8” rounds.

2.

Separate your eggs. Beat your egg whites until they are stiff, and slowly add your sugar along with the vanilla essence, one tablespoon at a time. Beat until stiff peaks form. Turn your bowl upside down to make sure the whites are stiff enough. If not, beat another minute or so, then check again.

3.

Sift the cocoa powder into the raw meringue and fold through, carefully ensuring you leave streaks of cocoa.

4.

Shape the meringue into the two rounds on the baking paper/trays.

Place meringues into oven and immediately turn temperature down to 250° F. Bake for 90 minutes, turn off oven, and leave meringues until oven is cool.

Topping: 1.

Drain the cherries with a bowl underneath it to catch the syrup.

Give the cherries a shake to make sure the syrup drains out of them.

You will want the cherries quite dry.

2.

Pour the syrup into a saucepan and reduce over medium heat to a honey-like consistency (about 5 to 10 minutes).

3.

Beat the cream with the coffee until stiff peaks form. Spread half of the cream over the bottom meringue, place cherries on the cream along with half of the chopped walnuts. Sprinkle half of the chocolate shavings over the meringue.

4.

Place the top meringue layer over the bottom. Spread the remaining cream, along with the cherries, nuts and chocolate shavings. Top with the chocolate curls. Drizzle the cherry syrup over the entire pavlova.

However, I freely admit that most families like mine would have a very difficult time packing their entire lives into 163 square feet. Fortunately, most tiny-homes companies have much larger options. I have seen some tiny homes that are closer to 1,000 square feet. The key is these homes are built to maximize every inch of space within them.

But more importantly, these homes are affordable, and they cater to those who do not want to be saddled with a 30-year mortgage. For most of us with young families, the largest expense in our budget is usually the mortgage. Tiny homes provide a viable alternative to overextending one’s monthly budget. These homes provide an opportunity to own a home free and clear, which has the potential to create more financial security for families.

Wrenco Arms had been a Sandpoint community staple for more than 15 years, and in April 2015, ownership changed hands, and husband-and-wife team Brandon and Abby Terry purchased the store.

The couple moved to the area that same month, though they had spent a lot of time in Sandpoint camping and skiing over the past 14 years. Brandon was in law enforcement for 18 years, and Abby is an RN. With a goal to make a change in their lives to afford them the opportunity to spend more time together as a family—they have two daughters, 13-year-old Denali and 15-year-old Arianna— relocating to Sandpoint was the answer.

“We fell in love with Sandpoint the first time we visited!” says Abby.

ELIANA CRAVENS: ELIANA CRAVENS has been on the varsity cheerleading squad since she was a freshman. It is something she thoroughly enjoys and plans to continue at the collegiate level.

“I enjoy stunting and tumbling because I love the fact that I can lift others and myself up to do things that defy gravity,” said the Sandpoint High School junior.

In addition to cheer, Eliana also participates in track and field, something she began her sophomore year.

When asked about her future plans, Eliana shares that she plans to attend Boise State University to study anthropology. “I really want to be an archaeologist because I find it to be an interesting career. Also, I’ve always wanted to be like Indiana Jones,” shared Eliana, who added she also plans to cheer for Boise State University as well.

Eliana said that when it comes to life challenges, she has found that the biggest hurdle for her to overcome has been leadership. “On the sidelines, in the classrooms and in the community, leadership is a vital component. I overcome this challenge by staying positive and representing my school to the best of my ability,” said Eliana.

PATRICK ROCKWELL: A THREE-SPORT ATHLETE, Patrick Rockwell knows what it takes to excel.

“I have been playing basketball, tennis and soccer since I was very young. This includes two years of varsity soccer, two years of varsity basketball and four years of varsity tennis,” said Patrick.

That alone takes a great deal of commitment, but add on top of that the fact that Patrick is able to maintain a 4.27 GPA, and it is nothing short of impressive.

One thing he has learned through athletics is endurance. “Nothing else in life has pushed me to my physical extremes like sports,” shared Patrick, who adds that what

he loves most about athletics is being with a good group of people with whom he is able to spend a majority of his free time. “I have formed my best friendships through sports and being part of a team.”

Patrick plans to attend the University of Utah in Salt Lake City where he will pursue a mechanical engineering degree.

“Someday I want to invent something sweet that helps a lot of people,” said Patrick. “I’ve always been good at math and like to problem solve.”

He credits Kent Anderson, his tennis coach, with being the most inspirational coach in his life.

“He has shown me that being a good person is much more important than winning every single match that you play. He has always been very relaxed and fun to be around and gives feedback to people in a positive way,” said Patrick. “I have never seen this guy have a frown on his face, and one day I want to be as happy and fun to be around as Kent Anderson.”
