hope this finds you sipping sweet tea in the shade somewhere that makes you feel like a kid again. Isn’t that what summer is all about? Feeling unencumbered and inspired? I thought I’d keep it simple this month and share this recipe from a cookbook I helped edit in the 1990’s when we lived in Hong Kong. It’s a winner for BBQs and potlucks. Have fun and enjoy this issue with ideas for nearby summer outings and maybe even a little inspiration!

Now the week has started over and we are still thinking about the special day we were able to experience on Friday. The stay at the Mandarin was a pleasure, the room was very comfortable and a nice view of Peachtree Rd. The spa was just beautiful we definitely relaxed and enjoyed the massages! We also got to try out some new summer cocktails at the bar, try the Caipirinha it was delicious! And the lychee martini was refreshing. Great place to stay!! At Van Michael salon everyone was super friendl y and accommodating us every step of the way. They definitely have some very talented stylists who made sure we were ready for a night on the town. We both looked like movie stars! We even received neck and hand massages now that is V IP treatment! We made our way over to Davio's for a fantast ic dinner. BASIL INFUSED STRAWBERRY PINEAPPLE LEMONADE As the weather gets warmer, this recipe for Basil Infused Strawberry Pineapple Lemonade from the cookbook provides a refreshing beverage for entertaining. Emily G’s Strawberry Pineapple Jam is the perfect addition to give the drink a powerful punch.

INGREDIENTS: 3 c sugar ½ jar Emily G’s Strawberry Pineapple Jam 1 lb strawberries, hulled and diced small, plus extra for garnish ½ c fresh basil leaves-tightly packed, plus extra for garnish 2 c fresh lemon juice 3 ½ quarts cold water, plus 1 cup for cooking strawberries

Bring 1 cup water to a boil in a medium saucepan. Add the sugar and stir until dissolved. Add jam, strawberries and basil, cook at a simmer for 5 minutes stirring frequently. Remove from heat and let stand until completely cool. Strain strawberry-basil syrup by pushing it through a strainer and discard any remaining large pieces. In a one-gallon container, add lemon juice, water and strawberry-basil syrup. Stir until well mixed. Stir in garnishes, if desired. OPTION: Add 2 oz of vodka for every 8 oz of lemonade.
