FRIED CHICKEN SANDWICH WITH JALAPEÑO SLAW

INGREDIENTS (SANDWICH) 1 cup all-purpose flour 1/2 teaspoon ground paprika 1/2 teaspoon garlic powder Cayenne pepper, to taste Boneless, skinless chicken breasts Vegetable oil (as needed) Sesame seed bun Pickles

DIRECTIONS 1. Mix the flour, paprika, garlic powder and cayenne pepper together in a shallow bowl. 2. Fill your skillet with oil to about 1-inch deep and heat to 350 degrees. 3. Coat your chicken breasts in the flour and seasoning mixture, then carefully place them into the heated oil. 4. Cook until golden brown with an internal temperature of 165 degrees. 5. Lightly toast your sesame seed bun, then top with pickles, fried chicken breast and slaw to taste.

MARINATE THE STEAK IN THE REFRIGERATOR FOR UP TO 24 HOURS FOR EXTRA FLAVOR.

2 tablespoons olive oil 2 teaspoons cumin 2 teaspoons dried oregano Salt and pepper, to taste Choice of steak Fresh flour or corn tortillas Lime, optional

DIRECTIONS 1. Blend the red onion, garlic, adobo sauce, olive oil and seasoning in a food processor or blender, adding water as needed until smooth. 2. Marinate the steak in the mixture for at least 30 minutes prior to grilling. 3. Heat 2 tablespoons of oil in a large grill pan and add the steak, cooking to desired doneness. Let rest in a foil tent for 10 minutes then chop into small pieces and assemble tacos as desired.

T h e E d u c at o r Tonya McCall Upon first meeting, it’s clear why Tonya McCall was hired to become Mason City School District’s Chief Talent Officer, a role she’ll officially begin this August. She exudes personality: quick, confident, relatable and funny. McCall has been a long-time school administrator, serving as principal at Mason Middle School for 18 years. Though she’ll miss day-to-day interaction with students, she’s excited to take on a different role. “I’m really looking forward to this new challenge, and to be able to impact the district at a whole new level,” says McCall, who will be the first African-American to serve in the district’s central office. One of McCall’s initiatives is to foster strong relationships with new and incoming educators and staff in an effort to continue hiring “the best of the best” for the district. When she’s not working, McCall enjoys spending time with her husband, Ed, and daughters Ashley and Lyndsey.

T h e A d v o c at e Rachel Rice When you meet Rachel Rice, you wouldn’t know she used to be shy. The disabilities advocate recently took a trip to Washington D.C. to speak with Senator Rob Portman and others on Capitol Hill about two issues that drive her passion: access to Medicaid and transportation for people with disabilities. Rice’s trip stemmed from her participation in the Cincinnati Children’s LEND program, for which Rice earned master’s-level credit hours. She was the first person with a cognitive disability to ever go through the program. “I felt very accomplished after the trip,” Rice says. “I learned so much and met a lot of great people.” Accompanying Rice on the trip was her mentor, Angie Smith, who works with Rice at the Warren County Board of Developmental Disabilities. Together, the pair make weekly visits to members of the Mason Deerfield Chamber of Commerce to promote the region and benefits of Chamber membership.

T h e I n n o vat o r Vineet Erasala Most people don’t know what they want to do after high school. Then again, Vineet Erasala isn’t most people. The 2014 Mason High School graduate left for Case Western Reserve University, knowing he wanted to make an impact in the field of medical technology along with fellow Mason graduates, Peeyush Shrivastava and Manny Stetegn. The three went to college and stayed in touch weekly to update each other with research findings and use-cases for their non-invasive diagnostic technology. What resulted was Genetesis, co-founded by the three grads, which offers biomagnetic solutions to improve patients’ health, outcomes and quality of life. “None of what the co-founders have been able to do would be possible without our team of 21 employees,” Erasala says. The company is submitting a device to the FDA and hopes to commercialize the product early next year, with a launch at the American Heart Association Conference this November.

The Dean DeAnn Hurtado

One of DeAnn Hurtado’s favorite parts of her job as associate dean of Sinclair Community College’s Mason campus is helping students understand that they can accomplish anything they want in life. “My purpose is to make people understand that they have so many opportunities,” Hurtado says. “They just need to set a direction and goals. I love helping people get to where they want to be.” Her inspiration for helping others achieve their dreams stems from those who helped Hurtado achieve her own. A former marketing professional, Hurtado’s role with Sinclair began in 2001 after she was called upon to create a customer service curriculum. Soon after, the mother of two served as adjunct professor, department chairperson and now associate dean, where she’s worked alongside students and faculty since 2013. “I’ve been able to do everything I’ve wanted to do, so it’s now time to help others,” Hurtado says.

The Leader Stacie Belfrom

Although he’s new to the Kings Local School District Board of Education, Stacie Belfrom is not new to serving in leadership roles. The husband and father of two is a cyber security professional for DXC Technology, formerly Hewlett Packard, and has coached many sports teams for the Kings district. As the first African-American on the school board, Belfrom filled a vacant seat after the board’s former vice president resigned following a nationally spotlighted racial incident. Despite the timing, Belfrom says his goals for serving the district extend beyond race relations, and include making sure the district responds to population growth, getting the public more engaged, and furthering the “Kings Strong” plan initiated by Superintendent Tim Ackerman. “I actually do like that there is increasing diversity here,” Belfrom says. “When we first moved here it wasn’t, but it’s growing. There are a lot of hard-working folks shaping this great community.”

ANTWERP, BELGIUM IS THE CITY THAT MAKES DIAMONDS SPARKLE. It is known as the diamond capital of the world, and it’s where 60-80 percent of the world’s diamonds are cut and traded. But not just anyone can go to one of the diamond houses there and buy these rare gems. You must be invited. One of the lucky few with a standing invitation is Jim Wolf, owner of James Wolf Jewelers in Deerfield Township. Wolf just returned from his seventh trip to Antwerp, where he travels twice a year to hunt for the perfect stones. “It’s exciting—it’s like you’ve finally reached that level in your industry and then you’re invited over [to Antwerp],” Wolf says. “I’ve been at the top of the American Gem Society for 30 years as a Certified Gemologist Appraiser, so I’ve done it all.” Wolf has been in the jewelry business for more than 42 years. What started as a teenage parttime job evolved into a life-long career. Jim even met his wife, Laura Wolf, while working in a Mt. Healthy jewelry store together, one he eventually purchased in 2001. “The fact that he has been doing this all his life speaks volumes,” Laura explains. And according to her, Jim’s expertise is the reason he became part of the select group of jewelers invited to Belgium. James Wolf Jewelers is a Master IJO (Independent Jewelers Organization) Jeweler, which gives them direct access to the Antwerp diamond market. They’re able to select the best quality diamonds at the lowest prices—a “very well thought out process that takes time and a thorough evaluation of each stone,” Jim explains. In Belgium, he meets with five world-renowned diamond cutters and hand-selects diamonds out of the vast inventory, narrowing his selection down from hundreds to just a handful. He typically shops for about five to ten specific customers’ orders, as well as inventory for his store. “If you can’t find it in Belgium, it probably doesn’t exist,” Laura remarks. “Really, there is no limit. We can get whatever anyone wants.” For example, a customer recently requested a 3.5 carat diamond. Jim checked with U.S. dealers and no one had the quality that they were looking for. So, Jim searched in Antwerp until he found it. “The whole trip is a hunt for the perfect one,” Jim says. “And once you find it, you just feel so excited for that customer.” According to Laura, Jim has turned down many more stones than he selected throughout the three-day trip. And for a customer, purchasing a diamond that was hand-picked by a gemologist is crucial. “You’ve got to see the stone really up close and personal to really know the stone,” Laura says. Jim explains why, as a jeweler, they would never purchase a diamond online. "Even when we go to buy a diamond in Antwerp and we know it’s a graded, certified stone, we still examine the stone itself before we check to see what the certification grade is," Jim says. "You have to love the stone for its beauty and all the characteristics that come with it." It’s Jim’s passion and knowledge of gems that keeps his customers returning for business. “They like the personal touch,” Jim believes. “Some stores just go after the first initial sale, but we get grandparents, the kids, the grandkids, and that’s what is important to us—the trust and the relationships we develop.” James Wolf Jewelers’ diamonds from Antwerp are currently available for purchase in the Mason store.

None of our songs are in English, and although we’re all used to singing in other languages, communicating is going to be a whole new experience for me. It’s going to be so much fun. To know that it’s so hard to make it in an art career, and to have pushed forward anyway and made it this far already, it’s something I know we’ll all connect on.

EVERYTHING IN 16 LOTS BREWING COMPANY EXUDES A COMFORTABLE AND CASUAL ATMOSPHERE. From the charming mismatched tables, chairs and stools, to the funky décor and lights, to the darts area and shuffleboard court, it’s obvious you’re meant to take a seat and stay a while. Walk up to the bar and fill your frosty glass with beers created freshly onsite at 16 Lots or order a pizza and salad from Mad Monks Pizza. Before 16 Lots, Mike Burton was a businessman who loved living in Mason and saw an opportunity for a craft brewery; Jeff Cosgrove was a homebrewer looking to take his passion for brewing to a bigger stage. Together, they teamed up to create Mason and Deerfield Township’s first craft brewery, providing a welcoming hangout for local residents.

THE BEER “Many beer lovers go straight for the pilsner,” explains owner Mike Burton. “The Major,” 16 Lots’ house pilsner, delivers a clean German beer flavor with the pure ingredients that pilsners are known for. For those with an adventurous palate, choose from house favorites like “Muddy Creek Oatmeal Stout” and “Pike Street IPA,” which is popular for its hoppy and floral flavor. Seasonal beers like the powerful “Old Betsy Imperial IPA” draw a crowd for their limited runs.

THE HISTORY Wondering about the name? It’s inspired by Major William Mason’s original land purchase of the area, which was “16 lots” of land. What grew from this land purchase was the town that bears the Major’s name. And the beer list reveals other connections: the local “Muddy Creek,” the first fire engine in town named “Old Betsy,” and the beloved Hanz and Fritz Diner that gives the porter on tap its name.
