Whoever said or came up with it, I'm more interested in its message—that the world doesn't belong to us but to our children, and we need to think about how our current actions will affect the planet and future generations. I'll be the first to admit that I could kick my environmental stewardship up a notch. Yes, we recycle and use reusable grocery bags (when I remember to bring them). We don't use plastic water bottles and I'm not a fan of waste so I have minimalistic tendencies. But there's so much more that I can—and should—do. During the everyday busyness of life it can be challenging to keep in the constant mindset of "every little bit helps," but I've got to keep my eyes on the prize. Nurturing and protecting this

VISION KIDZ PROMOTES YOUTH ART The Vision Gallery offers its VISION KIDZ programs in a variety of mediums. The program promotes diversity in arts application, featuring workshops in drawing, watercolor, batik, ceramics and more. Explorer Camp. The camp, offered at Dolphinaris AZ in Scottsdale, provides 5th through 12th graders the opportunity to spend the day with a dolphin trainer, where they will interact with dolphins in the water and from land while learning about dolphin intelligence and behavior, dolphin care and feeding, physiology, ocean conservation and more. RECYCLED CITY BRINGS COMPOSTING TO YOUR DOOR. LITERALLY. WHEN LYNDSEY BENNETT AND HER HUSBAND OPENED RAW JUICE BAR IN CHANDLER IN OCTOBER 2014, THEY QUICKLY REALIZED THAT THEY WANTED TO DO SOMETHING ENVIRONMENTALLY FRIENDLY WITH THE VAST AMOUNTS OF RAW PULP THEIR BUSINESS GENERATES ON A DAILY BASIS. “We try hard to produce as little trash as possible and recycle or compost as much as we can, and we use a lot of compostable products,” Bennett says. “When we use our juicer we create a lot of pulp so it’s a shame to just throw it into the trash.” Bennett contacted Recycled City, a Chandler-based company that collects compostables from residential and commercial customers and transforms it into usable compost.

Does she Cielo ...or no? “We usually fill our bins up every few weeks and they come and grab them. Honestly, I don’t even think about it, it’s that easy,” Bennett says. J.D. Hill, manager and founder of Recycled City, works with a number of commercial customers like the Bennetts, as well as people who live in single-family homes, apartments and condos. Recycled City opened in January 2014. “We collect compostables and turn it into finished compost,” Hill says. “Once it is finished, the customer can request it or donate it; otherwise it is used on one of our farms. For commercial businesses like restaurants, all the compost made is used to build farmland on our farms.” Recycled City’s approach to creating compost is definitely working. It starts the decomposition process immediately, which greatly reduces the smell of the food scraps in the compost bin. Motivated by the fact that she wouldn't have to deal with the stench of raw chicken in the garbage can anymore, Chandler resident Christina Trecina started using Recycled City’s services three years ago. “At the time, we had our large city trash cans in the garage until trash day, and in the summer the smell of raw chicken in the heat was outrageous,” Trecina says. “I haven't had to smell that in three years, and it’s been wonderful.” “Their service makes it so easy to compost. I leave the bucket on my front porch behind a pillar and I bring out any food or paper scraps I have leftover from cooking that day," she continues. "They come by and take it away every Wednesday and leave me a fresh bucket." By composting her food waste, Trecina is also happy to be doing something positive for the planet. “But it feels like I'm doing hardly anything at all since Recycled City does all the heavy lifting,” she says. FROM GROUND-BREAKING GREENHOUSES TO GRASS-ROOTS EDUCATION, THESE COMPANIES HAVE THEIR GREEN THUMBS ON THE PULSE OF PRODUCE. TASTE OF PARADISE Keeping fit was always important to Tony Walker. But when he decided to help others do the same while also supporting local growers, that personal passion quickly became professional. His research into community supported agriculture (CSA) sparked Taste of Paradise, his Gilbertbased curator of farm-fresh local produce boxes that are available to consumers at several pickup spots across the Valley, including Chandler, Queen Creek and Gilbert, each week. Walker partners with Arizona farms to increase the variety of produce and include harder-to-find items like persimmons, green cauliflower and purple carrots. “What they can’t find in grocery stores are specialty items that only local farmers will grow,” says Walker, who started the company in 2014. Each box is packed with selected organic in-season produce. Customers place their orders and have the option to substitute items—a detail that Walker says is key to his success. The demand for more organic produce has also fueled business, as is the desire to support local. “It’s important to reach out to the community and educate them on why it’s important to support their local famers that organically grow for them,” he says. TasteofParadiseAZ.com MOLOVIN FARM When Oren Molovinsky moved to Chandler from the Washington, D.C., area seven years ago with his wife Diana and their children, they yearned to do what they did back east: Connect people with local farmers and their produce. Diana, who hails from an agricultural family, also dreamed of having her own farm. On the east coast, Diana and her siblings set up produce stands in shopping center parking lots and sold heirloom produce from local farmers. Oren served as the point person between local farmers and fine dining restaurants. So when the housing development plans for the land across the street from their home became a casualty of the recession, the Molovinskys saw destiny before their eyes. “In our minds, we were saving farm land,” Oren says of their decision to purchase the property in 2012, which would become Molovin Farm. The three-and-a-half-acre farm specializes in fruit trees but also grows vegetables, all without pesticides, herbicides or chemical fertilizers. Weed control is done by hard-working and ravenous goats on the property. The family’s new fast-casual restaurant, Farmboy, will serve locally grown meats, grains, dairy and produce. Farmboy is slated to open in April 2018 in the southwest corner of Alma School and Queen Creek roads. MolovinFarm.com

GREENIE’S GARDEN What began as a YouTube channel to document their personal agricultural journey became a much welcomed career change for Brandon and Alyssa Owens. “Just having it in my backyard showed them that it is possible,” Brandon says of his sprawling and productive home garden in San Tan Valley. “More people started reaching out to us.” The success of Greenie’s Garden, their business that offers planting, feeding and other services, enabled the Owenses to quit their wearisome corporate finance gigs a year ago in favor of what they felt was more stimulating work. Today, the couple assists clients Valleywide in achieving what they have done. Raised garden beds primed for fresh herbs and vegetables is the most popular request. “It’s a big reason why clients want to grow their own Greenie's Garden
food, to lower their carbon footprint,” Alyssa says. “They also want to be responsible for the food they eat.” GreenieDigs.com TRUE GARDEN A compound pharmacist by trade, Troy Albright’s first career sprouted his second as an urban farmer that grows produce with an innovative twist. The idea to start True Garden, a Mesa solar-powered greenhouse that houses commercial tower gardens, with his wife Lisa in 2015, arose when he realized pharmacy patients were not getting adequate nutrition through their food, even if it was organic. Growing produce in a specialized mineral- and nutrient-rich soil is Albright’s way of reversing that pattern. The multiple towers allow Albright to grow exponentially more plants than traditional gardens in 90 percent less space. It also results in his more nutritious produce growing 30 percent faster than organic versions. True Garden is the first of its kind facility in the nation operated by solar power. Instead, give your plants a drink in the morning before the sun is out. 2. Coconut coir or peat hold in moisture and are great in raised beds and pots. 3. Know what areas get full or partial sun and plant accordingly. Or, create your own microclimate with shade trees that cool down certain spots. 4. Plant in-season produce. For example, eggplant and peppers thrive in the summer and lettuce and kale prosper in the winter. 5. Feed every three months. Keep in mind that whatever you put on them goes into your body, whether it’s worm castings or seaweed extract. 6. Don’t be scared to fail. “Gardening is about getting your hands dirty.”

ROASTED CARROTS WITH CARROT TOP GREMOLATA + 3 bunches small carrots, greens washed + 2 large shallots, thinly sliced + 3 tablespoons extra virgin olive oil + 2 teaspoons paprika + Kosher salt + Freshly ground pepper + 2 tablespoons fresh lemon juice + 1/4 cup chopped cilantro + 1 teaspoon finely grated lemon zest + 1/2 jalapeño pepper, minced

Preheat the oven to 425 degrees. On a baking sheet, toss the carrots and shallots with the olive oil and paprika and season with salt and pepper. Roast for 20 to 25 minutes, until the carrots are tender and golden. Drizzle with the lemon juice and toss to coat. Transfer the carrots and shallots to a platter. Meanwhile, in a small bowl, combine the cilantro, lemon zest and jalapeño. Finely chop the carrot tops and add to the bowl. “This time of year is my favorite for wandering aimlessly through farmers markets and, I’ll admit, my local Whole Foods.” — Chef Tang
GRILLED SPRING ASPARAGUS AND SPINACH SALAD + 1 bunch of large asparagus + 1 bunch of radish, with leaves + 2 tablespoons extra virgin olive oil + Kosher salt + 1 lemon + Crow’s Dairy Goat Cheese (from Buckeye) or favorite chèvre + Pine nuts
Trim the ends of the asparagus and toss with oil and salt before placing on the grill. Cook on each side for 2 minutes. Pull them off the grill and sprinkle with lemon zest. Cut the radish in quarters and then slice them thinly. Chop and toss the radish leaves with oil, salt, a squeeze of lemon, pine nuts and radish slivers. Assemble the plate by adding a spoon of goat cheese, asparagus right on top and finish with the radish salad. “There is little that excites me more than a home-cooked meal, enjoyed al fresco, loaded with early summer veggies.” — Chef Tang CONTINUED >

CITRUS TARTAR + 3 grapefruits + 3 oranges + 1/4 teaspoon cardamom powder or cardamom seeds + 1/4 teaspoon cinnamon + 1/4 teaspoon grated nutmeg + 1/4 teaspoon ginger powder Peel the fruit. Cut into segments, taking away all the skin. Place in a bowl with all the spices. Mix well. Place in the refrigerator.
SPICY RUM CARAMEL: + 1 cup of brown sugar + 1/2 cup of half & half + 4 tablespoons of butter + 1 pinch of sea salt + 1 tablespoon of vanilla extract + 1 teaspoon of Spicy Rum Mix the sugar, half & half, butter and salt in a saucepan over a low heat. Cook while whisking 6 minutes until thicker. Add the vanilla and the Spicy Rum and cook for another minute. Leave to the side. SHORTBREAD: + 1 cup of butter + 1/2 cup of sugar + 1 1/2 cups of flour + 1 pinch of sea salt Heat the oven to 300 degrees. Melt the butter in the microwave. In a bowl, place all of the dry ingredients and mix in the melted butter. Roll out the dough, cut 3-inch wide circles with a pastry cutter. Cook 30 minutes on a tray with greaseproof paper. Let cool. Place a shortbread round on a plate. Put the segments of seasoned fruit on top. Drizzle with Spicy Rum. Garnish with mint leaves.

PUFF PASTRY PARCEL WITH ASPARAGUS & SALMON + 1 puff pastry sheet
Preheat the oven to 425 degrees. Cut 5x3 inch rectangles of thawed out puff pastry. Place on greaseproof paper or directly on a nonstick cooking tray. Brush with egg yolk. Cook for 10 minutes. When golden brown, take out and let cool. BEURRE BLANC: + 1/4 cup of dry white wine + 1/4 cup of white wine vinegar + 2 tablespoons of finely chopped shallots + 1/3 cup of heavy cream + 1/4 teaspoon of salt + 1/8 teaspoon of white pepper + 1 cup of unsalted butter Boil wine, vinegar and shallot in a saucepan over moderate heat, until it is reduced to 2 to 3 tablespoons. Add cream, salt and white pepper and boil for 1 minute. Reduce heat, whisk in a few tablespoons of butter at a time, whisk constantly until all butter has been incorporated and has the consistency of a hollandaise sauce. Remove from heat and season to taste with salt and pepper. + 1/2 lb of blanched green asparagus + 1/2 lb of fresh salmon, cut into cubes + Olive oil, sea salt, ground black pepper + Fresh dill Place the asparagus and salmon on an oven sheet. Season with olive oil, sea salt and ground black pepper. Place in the oven for 6 minutes at 425 degrees. During this time, open the pastry cases in two. Place the bottom of the pastry case on a plate. Place the cooked asparagus and cubes of salmon on the pastry. Cover completely with beurre blanc. Position on top the pastry case cover. Decorate with sprigs of fresh dill.

If I had a penny for every time someone asked me “why is one room in my home hotter than the others?” I would be a really rich guy. Hot spots are very common and felt even more during the extreme summer heat. There are several things that could make these happen and best of all, there is a solution for each. It is just a matter of diagnosing the problem. If you want to fix something wrong in your body you go see your doctor and get a diagnosis along with the resolution. Your air conditioning is no different. Find a good HVAC contractor, get a diagnosis and then fix the problem. The two common causes of hot spots are usually related to ductwork. You may have a leak in your existing ductwork and wherever that leak is, more cold air is going into your ceiling than the room it is supposed to cool. Another happens when you have incorrect air flow so you are not producing enough air to cool all the rooms evenly. There are solutions for any of these issues. Ductwork more than 10 years old is guaranteed to have some leaks. The major ones are what you really need to worry about because you can no longer cool an area effectively and you spend countless dollars on air conditioning your attic instead of your home. The average air loss can be 25-40%! At Precision Air & Heating we use Aeoroseal®. Visit our website tab on Duct Sealing to see how it works. The team comes in and puts the product into the entire ductwork and then little particles find the leaks and bond into them to seal them. No mess or chemicals, and no more ductwork leaks. The other possible problem occurs from not having zero static air pressure which is related to an incorrect size of the air return or insufficient air flow by vent. Many of today’s newer AC units provide greater air flow and need additional return air . If the size of the return is inadequate to capture the correct amount of air in, it will not allow the right amount of air out. So you literally don’t have enough air from your AC unit’s pressure to cool the entire square footage of your home. That leaves a weak spot or what we call a hotspot. Sometimes another fix is to install an Air Balancer to redirect the air flow more evenly to the rooms it serves. That way you can correct the air flow from one room getting more while another is getting less. Other causes can be inadequate insulation or a unit not running correctly. If you have a hotspot you want fixed, the first step is getting that diagnosis on the cause.
