LAST FEBRUARY, WHILE ATTENDING THE WINTER WONDERGRASS FESTIVAL IN STEAMBOAT, ONE BAND IN PARTICULAR STOPPED ME DEAD IN MY SORELS. To my surprise, it wasn’t a headliner, nor one of the many acts who appeared on the main stage that weekend. Tucked in the corner of the beer-tasting tent, was a small stage, producing a BIG sound. The band was Bowregard. Their stage energy and musicianship during that set left an impression on everyone there. I recently had a chance to visit with Bowregard guitarist, vocalist, and Boulder resident, Max Kabat to discuss the band’s perseverance through a pandemic, influences, and his love of skiing.

The female-led brand is the creation of Sierra Voss and Molly O’Connell who in 2019 began their joint venture to create Incrementum. With backgrounds in set design, photography, and wardrobe styling, the women have worked together on hundreds of creative projects during their illustrious careers in commercial video production. Their choice to opt-out of the fast-paced commercial world meant leaning into their calling to create healthier spaces for people. “We have seen each other at our lowest in terms of our health and what our work environment brought out in us. We realized how unhappy and unhealthy we really were, and so it’s really fun to build a company together that is so much healthier for us,” says Voss and O’Connell. Incrementum is the Latin word for "growth" which references their brand slogan, “Plants that Grow with You.” They are all about investing in plants with intention while providing education around nurturing indoor greenery. The Colorado natives have also led lives closely linked to nature, with Voss’s background in conservation and environmental studies and O’Connell’s experience in horticulture and herbalism. Their relationships to plants are now being beautifully expressed through a fusion of design and education to create a hands-on experience as they style interiors evoking a direct connection to the natural world. “Maybe your furniture is very structured, so you want a more minimalist plant like a Ficus Audrey, or maybe you want to go the opposite direction, opting for a jungle plant like a Dracaena to juxtapose your furniture,” Voss says. Voss notes that plants are receptive to be spoken to or sung to and also pick up on your stress levels, so building a relationship with your plants truly helps them thrive. “Once you understand basic care, the rest really becomes intuitive,” O’Connell says. “We feel it's important to consult with people before they invest a lot of money in plants. Plants shouldn't be disposable, and we're seeing an increase in plant hoarding during the pandemic,” they say. “Consultations upfront protect your investment and contribute to sustainable consumerism while decreasing plant stress.” Incrementum is currently offering in-person and virtual design consultations with specialized care packages to address all of your plant-care needs. BIRDHOUSE Ariana Tiegland, along with her husband Chris, and co-owner Scott Skiba, wanted to create an exciting, top-quality restaurant, the kind they saw mostly in Boulder and Denver. They wanted to bring that sort of dining experience and fun menu to Erie, and so they did, in the form of Birdhouse. The less-than-a-year-old restaurant takes two of the couple’s favorite foods—tacos and ramen—and spins awesome versions of both, creating a menu chock-full of things guaranteed to make you happy. “Dreaming up the concept, we imagined some of our favorite modern comfort foods, tacos and ramen, and being able to enjoy them in the same space. My husband always wants to get ramen when we eat out, and I always want tacos,” Ariana says. The problem is deciding between the chili sauce-laced tonkotsu ramen and spicy lemongrass pork taco on house-made tortillas, or the unique French onion ramen with sake caramelized onions and short rib marmalade and the Nashville hot chicken taco. Or give in and grab both tacos and ramen and congratulate yourself on making good life decisions.

CASIAN SEAFOOD It’s a family affair at Lafayette’s Casian Seafood. Dau Vit Xiong (nickname Dovi), his wife Maria, and their two children work the unique restaurant, which combines the Hmong food of southeast Asia that Dovi and his family have always eaten with Cajun ingredients. “I am Hmong myself, and this is the type of food I grew up eating,” Dovi says. “We alter the ingredients a little and infuse a lot of it with Cajun ingredients. For example, the pork belly sandwich is a Vietnamese sandwich, but the way we cook the pork belly is how we cook it in a Hmong kitchen.” Besides that pork belly banh mi, the crawfish boil is a must-try. Not your typical southern boil, Casian Seafood sautées theirs in a large wok and adds lemongrass, ginger, soy and oyster sauces to the garlic butter coating. Or eat like you would at the family’s house and order the Cornish game hen, a deep-fried half bird, lightly salted and peppered and served with rice and vegetables. “This is a very simple dish, but growing up it was a staple in our household. It will always be eaten with a cilantro, onion, and pepper dipping sauce. It’s simple, yet completely satisfying.”

BLACK KNIFE BAKERY Like many great stories, this one starts in Las Vegas. Deviny Herrera was on a trip to Sin City when she first tried the macarons at Thomas Keller’s Bouchon Bakery. Deviny spent the majority of her waking hours for months perfecting her macaron recipe, and once she did, she realized she had something very special. A FAMILY MOUNTAIN Monarch Mountain is three hours from the Front Range and 20 minutes from beautiful Salida, Colorado. Randy Stroud, the mountain manager, took us on a tour of this locally owned, family-friendly ski area that's been official since 1939. Even with a low snowfall this year, we got two days of fresh powder to enjoy in a safe and socially distanced environment. The additions of a base and mid-mountain food truck keep the hot food, hot cocoa and cold beer coming. From hiking Mirkwood to lapping Garfield (nicknamed “Gnarfield’), there was plenty of steep, powdery, untouched terrain. The Monday-Friday escape are the days to take full advantage of this resort. “The snow is more like soft-serve than a snow cone,” Stroud says. The friendly, approachable and cozy atmosphere is thanks to all the people who make this mountain run.
