Stir Fry Here’s a recipe that uses some ingredients you more than likely have at home already. Food costs are on the rise, but that doesn’t mean you need to stop creating at home. Eating healthy doesn’t need to take that much time or money. Here is a quick, simple and inexpensive dish that I’m sure your family will enjoy.
Time: 30 minutes Serves: 2 adults, 3 kids
INGREDIENTS:
1 tbsp butter (or canola oil) 1 small yellow onion (diced) 2 stalks of celery (chopped) 1/2 red pepper (chopped) 5 small sweet peppers (sliced into rounds) Optional. Use full red pepper instead if you want. 1 garlic clove (minced) 2 chicken breast (cubed) 398 ml can of green beans (1/2 can. Save the other half for another recipe). 398 ml can of peas (1/2 can. Save the other half for another recipe). 350 teriyaki 4 tbsp soy sauce (divided) 1/2 tsp ginger powder Salt and pepper 1 green onion As many noodles as you desire. Use Mr. Noodle. Kids love it.
METHOD:
1. Melt butter over medium-high heat 2. Add onions and celery and cook until translucent 3. Add the peppers and cook until tender. 4. Add the garlic. Add here so you don’t burn it. Cooks faster than onions etc. 5. Turn down the heat to medium and add salt/pepper and ginger. 6. Add chicken and cook through. 7. Add the peas and green beans. 8. Add the teriyaki and 1/2 soy. Mix well. 9. Turn heat to low and leave it until noodles are done. The beans and peas will be cooked by then. 10. Bring a large pot of water to a slow boil. 11. Add your noodles and cook as per instructions. 12. Strain and return to the pot. Mix in the remaining 2 tbsp of soy and mix well. 13. Plate and enjoy! I like to top with green onions. We can’t get enough onions in our home.
