Fine art eggs a meditation for Cain

W

alking into Marilyn Cain’s home, it’s impossible to miss a glass display case that houses numerous intricately-designed, porcelainlooking eggs. These aren’t your usual Easter eggs by any means.

Marilyn was introduced to the fine art of pysanka back in the late 80s and has been hooked ever since. A pysanka is a Ukrainian Easter egg, decorated with traditional Ukrainian folk designs using a wax-resist method. The word pysanka comes from the verb pysaty, “to write” or “to inscribe,” as the designs are not painted on, but written (inscribed) with beeswax.

“It’s an art form that goes back before Christ,” Marilyn said. “I call it the early Hallmark cards, because every color and every symbol has a meaning.”

In the Ukraine, some people call them Easter eggs, according to Marilyn. The eggs are made in secret throughout the year, then placed in special baskets and revealed later.

“No one wants anyone to know what their eggs look like,” she said. “It’s kind of funny.”

In the late 80s, Marilyn was at a gun show with her husband Joe when she noticed a woman setting up a booth with a bunch of jars that had colors in them.

“I was fascinated by what she was putting out there, so, finally, I went over and asked what she was doing.”

The woman went on to tell Marilyn about pysanka and gave her information on where to buy supplies to make her own.

“I basically taught myself, and I have been absolutely hooked on it,” she said.

The process behind pysanka involves using a fine funnel-shaped tool called a kistka, which is loaded with beeswax and used to draw lines on an egg. The egg is then dyed, and the process repeated through successively darker colors.

“It’s not a craft. It’s a fine art,” Marilyn said. “I just enjoy them.”

Marilyn became obsessed with her newfound hobby. And her husband Joe was super supportive, repurposing a gun case to display the eggs he was really fond of and didn’t want Marilyn to sell. That’s the very case in her home now. He also designed displays for her, and the couple ventured to art shows in Denver, Colorado Springs, Vail and Beaver Creek.

“It’s very interesting to watch the public when they see (the eggs) for the first time,” Marilyn said.

“They don’t believe they’re real eggs.”

Marilyn recalls one experience at an art show, where a woman doubted that her creations were real eggs. She dyes chicken eggs, goose eggs and even much larger ostrich eggs.

“I handed her an egg. She started squeezing it. I didn’t like her attitude. They act like I’m lying to them,” she recalled. “She said, ‘Is it breakable?’ I said, ‘Yeah it is, and you’ll pay for it if you break it or damage it.’ She was squeezing a pretty expensive egg.”

“Another woman came up and asked if I had any with a Lutheran cross on it,” she said. “I said, ‘I’m not really sure what that looks like, but I’m pretty sure there’s not going to be any denominations in heaven.’ She went storming off.”

In 2010, Marilyn was in a serious car wreck. The accident knocked her out of commission for quite a while.

Then in 2017, Joe succumbed to cancer. The couple was living in their home state of Kansas at the time, but Marilyn wanted to move back to Colorado Springs. The couple lived here in the 70s before returning to Kansas.

“I was born and raised in Kansas.

I didn’t like Kansas,” Marilyn said.

“Everyone kept saying, ‘You’d better start doing those eggs again.’ I thought, ‘Well, I’ll try.’”

Just two months ago, Marilyn restocked a ton of blank eggs in her house and took to the fine art once again.

“The first couple were terrible,” she said. “I just threw them away.”

But she quickly found her touch again, along with the calm and meditative peace the hobby brings to her. Three weeks ago, Marilyn was sick with the flu. It left her with shaky hands as she recovered. However, when she’d sit down to work on her eggs, the shakes would go away.

“It’s just soothing to me. I’d rather do this than anything else,” Marilyn

said. “I never know ahead of time what I’m going to do with an egg. The Lord just kind of takes over and does it … don’t ask me how.”

While she was sick, Marilyn’s children came to her aid, bringing groceries over and tending to her.

Marilyn knew they wouldn’t accept money in return for the kindness, so she gave them one of her eggs. She did the same with the neighbor down the street.

“She had a look on her face like I just gave her gold,” Marilyn said. “It’s just so nice to see people’s faces when they get them, because they are special. It’s not something you can go to Walmart and buy.”

Well-known textile designer Schnee makes Springs her part-time home

I

n the world of contemporary textile design, Ruth Adler Schnee is considered a rock star, a role model and a pioneer.

These aren’t appellations she necessarily embraces because she’s comfortable simply being a designer.

Yet, there’s no denying the impact she’s had on the field.

Schnee is the recipient of the 2015 Kresge Eminent Artist Award, is the subject of a 2013 documentary about her life as a textile artist and has shown her work in the 2011 Venice Biennale, among other exhibitions.

Her designs have garnered awards from the Museum of Modern Art and the American Institute of Decorators.

She continues to design for KnollTextiles and Anzea.

The diminutive, humble and quick-to-smile 95-year-old exudes enthusiasm when discussing her passion for design. She is in Colorado Springs for her third extended visit.

She said family, weather and the arts scene are reasons enough to consider possibly staying here permanently; although, she has ongoing projects in her adoptive home state of Michigan.

“Colorado Springs is wonderful,” she said. “I love it here.” She also loves keeping busy, whether it be crocheting, designing textiles, working on a book or preparing for exhibits of her internationally-acclaimed work. “I’ve always enjoyed whatever I am doing,” she explained.

SCHNEE/from page 8 before World War II. “I designed my own clothes,” she said. “My mother would take my sketches to Paris and have my dresses made.”

She conceded this may have been extraordinary, but quickly added it was an apt description of her parents, particularly her mother, a member of the Bauhaus movement.

The Adler family left Germany in 1938 following Kristallnacht, when Nazi soldiers attacked Jews and destroyed their property.

“We went directly to Detroit,” Schnee said.

There she studied art before receiving scholarships to study at the Rhode Island School of Design and later the Cranbrook Academy of Art. Several of Schnee’s pieces will be included in an exhibit at the Denver Art Museum opening in May entitled “Serious Play: Design in Midcentury America.” Farther afoot is the retrospective of her work at Detroit’s Cranbrook Museum.

“The whole museum will feature my work,” she said. “It’s a wonderful honor for me.”

Her ties to Cranbrook are strong; it’s not only where she earned her MFA, but several of her textiles are part of the museum’s permanent collection.

In addition to the too-long-tocompile catalog of awards, is an equally impressive list of architects, artists and designers with whom she worked through the years: Paul Klee, Frank Lloyd Wright, Minorou Yamasaki, Warren Platner and Charles Eames, among others.

“Frank Lloyd Wright hated working with women,” she said, “but when you explained why you envisioned a certain design, he accepted it.”

The transition from architect to textile designer came about in 1946 after winning a Chicago Tribune residential design competition.

“I designed the fabrics for that house, which was a modern house. In those days you couldn’t find any contemporary fabrics. They weren’t on the market. Not many people were doing fabric design.”

Despite that award, as she transitioned to textiles, success was slow. She designed while Edward, her late husband of 52 years, ran the business side of Adler-Schnee and Associates.

“Nobody wanted what we were doing. I wish Eddie was still alive now that there is such an interest in contemporary design,” she said.

Although the accolades and the

financial security have come with time, Schnee creates out of sheer joy inspired by the world around her. She said, “Everything around us is a design: the leaves, the branches, the grasses.” This appreciation and her love of color are the trademarks of her design.

“I love colors that are bright and happy,” she said. “I think a lot of people are afraid of color.”

For anyone who thinks they’re too old or not talented, Schnee offered encouragement, “Just look around. I think there is a design in everything, no question. It’s wrong to stop something or not start because of an excuse. People should just think of something they really love to do and go ahead and do it. That’s how I operate.”

Honoring elders - What matters as we age

The population of older adults in the Pikes Peak region has grown 50 percent since Innovations in Aging released its 2015 aging study, and by the year 2040, it stands to grow nearly 75 percent more.

Unfortunately, it doesn’t mean we understand how to talk about aging any better today than we did years ago. Conversations about aging and about end-of-life issues are not easy, and most Americans haven’t given much thought to their preferences.

Today, there is even an international organization devoted to having these tough conversations called Death Over Dinner, and its premise is that age- and death-related topics don’t have to be morbid. In fact, it’s often an excellent idea to talk about one’s preferences before it’s necessary.

Atul Gawande, author of “Being Mortal,” says, “… our most crucial failure in how we treat the sick and aged is the failure to recognize that they have priorities beyond merely being safe and living longer; that the chance to shape one’s story is essential to sustaining meaning in life; that we have opportunities to refashion our

institutions, our culture, our conversations in ways that transform the possibilities for the last chapter of everyone’s life.”

Indeed, how an aging person wants to live is his or her choice, and the family’s role is to make it possible.

It’s all about quality of life, independence, dignity, security, autonomy, identity, choice, purpose, and more.

Judaism and Christianity sum it up in the fifth commandment, “Honor Thy Father and Mother,” which in today’s vernacular we might state simply as, “Honor Your Elders.” It is allowing our parents and loved ones to express themselves, set goals, and share their care needs and desires.

While the graying of America is nothing new, Americans have not paid attention to a growing number of risk factors older adults face, which accentuate the need for such conversations.

One such risk factor is loneliness.

According to the AARP Foundation’s “Framework for Isolation in Adults Over 50,” those who are lonely have a 59 percent greater risk of functional decline and a 45 percent greater risk of death than those who remain socially engaged. And yet 29 percent of people over age 65 live alone, and

twice as many women live alone as men. An estimated one in five adults over age 50 are affected by isolation.

Other risk factors that make conversations about aging necessary might involve mobility or sensory impairments, major life transitions or losses, limited or low financial resources, cognitive challenges, and more.

Regardless of the risk factors, the No. 1 reason to have a conversation is that 87 percent of adults over 65 want to stay in their current home (AARP PPI, “What Is Livable, Community

Preferences of Older Adults,” April 2014). All other factors are important, but they are secondary to one’s desire to age in place. If we are going to honor our elders’ wishes, then we must do what we can to help them remain where they want to be.

According to the American Senior Housing Association, a 78-year-old living independently without a major health crisis could live 15 more years in his or her own home. In contrast, average life expectancy in assisted

This is a reply from a professional: In one of your replies, attempting to be helpful, you mentioned how a “peach stick” was at your rear, when as a child, you were sent to return a tricycle that you stole.

There are many ways to correct a child and instill ethics and morals — and a peach stick at the rear is not a good one. Please don’t suggest that any form of physical punishment is a good way to teach a child the difference between right and wrong.

Physical punishment can instead instill fear and insincerity among other unproductive traits. You offer much appreciated help, but this reply was not one of your better ones.

If, at age 50, you are sitting around, not involved in life, no exercise, eating unhealthy diets, have no interests, etc. you might be considered old - and you are inviting disease into your life. he so-called “golden years” inevitably bring a few unwelcome companions in the form of aches, pains, and chronic disease.

According to the National Council on Aging, 80 percent of older adults report at least one chronic health condition such as diabetes, heart disease, cancer, or stroke. For decades, older adults treated those ailments with over-the-counter and prescription medications. As we have learned more about the negative long-term effects

associated with opioids, however, many have sought alternatives.

In February 2019, 37 percent of medical marijuana users in Colorado were age 50 and older. The top reported condition was severe pain.

Increasingly we hear many claims about the healing properties of cannabidiol or CBD, a derivative of the cannabis plant. Are they true?

What’s the difference between CBD and marijuana?

There are two types of cannabis plants: marijuana and hemp.

Marijuana plants also have CBD, and the amount varies by strain. Hemp plants are non-psychoactive (but may contain a negligible amount of THC) and are typically used for industrial purposes like creating fabric or paper.

As such, hemp alone cannot get a person high.

CBD created from industrial hemp is legal under federal law. However, CBD derived from the marijuana plant remains illegal under federal law. In the state of Colorado, CBD from hemp or marijuana is legal.

drug-resistant seizures. Another CBD medication that has undergone several clinical trials is called Sativex. Sativex has a 1:1 CBD to THC ratio and has been approved for use in 24 countries (not including the United States).

Sativex is used for pain associated with multiple sclerosis. Studies also have suggested Sativex could be used for chronic pain, arthritis, and cancer pain. However, the current federal laws on marijuana-based CBD serve as a barrier to approval in the United States. Thus, CBD appears effective in treating some conditions, but more research is needed to understand the impact of CBD on other conditions, to create dosage standards, and to understand long-term effects.

Consumer Beware

CBD comes in many forms, including vaporizers, edibles, and oils/ extracts. You do not have to smoke or vaporize CBD to experience its effects. Users typically employ a trial-and-error approach to understand the dose and ratio that works for them, as guidelines for dosages do not yet exist. CBD products are not FDA approved; therefore, regulation and quality vary significantly (especially products purchased online).

Online products may not provide accurate labels and could be illegal, depending on the content of the product (ratio of THC to CBD) and state laws. CBD companies with proper licensing in Colorado are regulated by the state. Colorado-based CBD companies such as Evo Hemp and Charlotte’s Web have quality control standards that involve third-party lab tests. For example, Evo Hemp’s website states that products are routinely analyzed for “potency, pesticides, fungicides, insecticides, heavy metal, microbials, and mold.”

Third-party tests can help clarify the quality, dosage, and ingredients of the product you are purchasing. In the state of Colorado, adults over the age of 21 may consider buying CBD products from a dispensary. Dispensaries cannot sell THC-free products for consumption.

Therefore, if you choose to buy CBD at a dispensary, it will contain THC and may produce psychoactive effects. Lastly, as with any new medications, vitamins, or supplements, it is important to let your medical provider know if you are taking CBD so that he/she can monitor for potential interactions and adverse effects.

H

elping people to see and making sure they have the proper lenses to do so has been high priority for Mike Kelly’s family.

His father Verle opened Kelly’s Park Hill Optical in 1971, and Mike and his two older brothers Verle Jr. and Bill followed closely in their father’s footsteps in the optical business.

“I started learning how to grind lenses in my dad’s shop when I was 8 years old,” Mike said.

He owns Kelly’s Golf Acres Optical Center, located at 1444 N. Hancock Ave. The store is just one of four independent optical retail stores left in the Colorado Springs area, according to Mike.

The Kelly brothers all cut their teeth getting into the industry working for eye doctors, grinding lenses and figuring out how to curve the back of an eyeglass lens. Mike started working for an ophthalmologist at age 19.

“I was the youngest dispenser in Colorado Springs at that point,” he mentioned.

The experience proved more than valuable.

“Working with ophthalmology, you get vast experience with what you do in the business. You understand how glaucoma, cataracts, heart problems, diabetes can affect someone’s eyes,” Mike said. “It’s not necessarily just breaking down the numbers, filling out prescriptions and making the lenses. There’s more to it than that. You have to have the insight for these things.”

properly diagnose their patient’s vision problems. The information from the doctors is crucial when it comes time to fitting someone with the proper lenses, according to Kelly.

“Making a faulty pair of glasses doesn’t serve a purpose. Glasses aren’t cheap. They’re expensive items for anybody,” he said. “You have to wear them 365 days a year. It’s not like a pair of shoes you can throw in the corner. You use your eyes every day, every night, all the time.”

Mike’s brother Bill got out of the business years ago to pursue a career with the sheriff’s department. Verle Jr., however, still operates his own retail store. They’re the last two members of the Kelly family to continue in their dad’s footsteps.

“There are no nephews or nieces or anybody wanting to follow through,” Mike said. “It’s one of those businesses that’s hands-on, and you have to think all the time.”

That challenge, and the desire to help people, is why Mike continues to

It all begins with a plan and a conversation, and a plan can be empowering. When others know your desires, you retain more control over the choices.

Finances will be a necessary part

of the conversation, but one’s needs and desires are paramount and must be shared first. And what most of us seek or wish to retain are comfort, everyday pleasures, companionship, help achieving modest aims, choice independence, dignity, autonomy, freedom, sunlight, and ongoing learning. As Gawande says, “All I ask is to remain the writer of my own story. In stories, the end matters.”

It’s always a challenge. If it wasn’t a challenge, I wouldn’t do it,” Mike said. “At this location, we serve a lot of seniors. You get to meet some really incredible people. That wealth of knowledge you get from them is phenomenal. They have great stories. They know a lot of different things.”

Mike’s business not only supplies customers with lenses, but also offers tools for low vision needs.

“As people get older, they start losing a lot vision to macular degeneration, diabetes and cataracts.

At some point, eye glasses don’t do the job, so you have to go beyond that and go into different appliances, like closed-circuit televisions and electronic magnifiers,” Mike said.

“It’s always a learning experience.

There are new things on the market always coming out.”

Mike also spends his Saturday’s traveling around to retirement homes and assisted living facilities in the area to provide services for seniors who can’t make it to his shop. He brings his rolling, mobile optical shop to them and fixes eyeglasses and fills prescriptions.

He’s been at the North Hancock location for just about four and a half years. On average, Mike assists around 150-200 people a week at the store.

“Everything in this shopping center is senior oriented,” Mike said.

“That’s why I wanted to come here.”

Then there’s the effects of aging to consider when deciding what to overlook or whether to say goodbye: health problems, disabilities, mental challenges, money fears and fears of death. Are we willing to start over or live by ourselves?

In 1919, Gloria Swanson made a silent movie for Cecil B. De Mille called “For Better or Worse” in which two men love the same woman. Both enlist in the military; but one, a doctor,

So what’s the right answer for Gloria’s character?

My conclusion is that there isn’t one. I wish there were a formula. Dan Fogelberg’s song says, “When the binding cracks and the pages start to yellow, I’ll be in love with you.” So maybe we need to expand our definition of love to accommodate the fuller picture of who our mate is: the “good enough” lover. And then decide what we want and what we can live with.

help people do what they need to do in order to do their jobs well. Sometimes it’s as basic as getting them funding or removing obstacles in the workplace.

But this could also mean helping them be appreciated by their customers by teaching them how to add value to their customers’ daily life. And helping people feel appreciated actually results in motivating people to do their best and to be their best.

VICKI: So I’m thinking this can be applied to fitness. How long have you been exercising?

JANE: I’ve been exercising all of my life, but I actually started exercising on purpose in college following surgery and skin grafts from a malignant melanoma. I was restricted from activity for months while the skin grafts were healing. At the end of that time, I found myself breathing really hard after climbing a short flight of stairs. And that was not an acceptable condition to me. Later in life I’d been doing hiking, biking, backpacking, snow sports and that kind of thing.

VICKI: But then just recently you had an injury that left you unable to exercise. Talk about what that was like. What did that do to your motivation?

JANE: About a year and a half ago, I was hiking Pikes Peak and broke my lower leg bones and dislocated my ankle on my right leg.

And I was about a mile and a half from the summit. So a helicopter ride and two surgeries later, I found myself weak, and even though I tried to keep active, it was very discouraging. I couldn’t hike mountains and ride bikes like I used to.

I did a little here and there, but the strength and the balance just wasn’t there. And when my high-school age niece wanted to go backpacking with me last summer, I had to tell her no. I wasn’t strong enough. So I wanted to do something to change that. The things I was doing weren’t getting me there.

VICKI: How were you feeling overall — health-wise?

JANE: I was finding that slowly over time, as I was getting older, I was getting weaker in other places. My muscles were getting kind of flabby and overall — it snuck up on me. And I think it was this broken leg that made me realize that it was an overall health problem.

VICKI: And hiring a personal

FITNESS/from page 18 trainer was one of the things you had to do to get moving again. But more than that, you had to play some mind games with yourself to help you stay motivated. Do you want to share some of those with us?

JANE: Well, I’ve got quite a few strategies in both exercise and in business. Hiring a personal trainer was twofold for me. I was walking and jogging, sometimes up to six miles on the weekends, but still feeling weak. I needed some new ideas on how to get stronger and where I wanted to be. I also needed weekly accountability. I knew it was really important that I do something consistently in order to get to where I wanted to be. And the weekly training helped that happen. As I got stronger, I became more motivated. You can do this with a personal trainer, a coworker, a spouse or a friend. And when you translate that to business, the more value you add to yourself, the more you’re appreciated. The more you’re appreciated, the more you want to do the work to get you to appreciate it again!

VICKI: You talk about strategies, but then you also mentioned some tricks that people can do; just little things to help them, to remind them, or to propel them to get in shape.

JANE: One is just give it a try. I mean, you can have so many excuses, but did you really even try it? I mean, in your head, you’re thinking about the reasons why you wouldn’t want to do something. If you just give it a try, you may find that it isn’t so bad, and you might actually have fun. So that’s one.

Another is, visualize what success looks like. What do you look like? What are you eating/wearing?

Who are you with? What does your typical day look like when you are at your “ultimate you?”

Don’t wait until you’re there. You can get

started now. Doing exercise and watching my diet is part of getting to where I want to be. Another is, listen to the excuses you give yourself and address them. I didn’t want to do planks because my carpet was itchy. So I put a yoga mat on the carpet right by my bed. When I got off my bed, I had to step on the mat. So not only is it not itchy, but it’s right by the bed, so I can do it before my day gets busy. You make up excuses, so listen carefully to what those excuses are and then remove the excuse. Another one is — bribe yourself. I love bagels. They’re not good for me. But I can allow myself a half-toasted bagel after I do a three mile run. And sometimes that’s what gets me into my running shoes because I want that bagel! In business, I make myself finish the task at hand before I can get up and get another cup of coffee. So for me, bribing really works.

Before I broke my leg, I used to make excuses about bad weather. I didn’t want to go out and do my runs.

So I got a membership to a nearby gym and at lunch I would go and run on the treadmill looking at the snow outside the window. No more bad weather excuses!

I’ve learned through leadership in business, be brave enough to make the change you need for a better future. In business it might be that I need to change how my team is performing, whether it’s through training or reorganization or communication. And you can do the same. You can train people how to treat you, if you don’t like how you’re being treated. So the key is to focus on what gives you joy in your life. What brings you joy? Everyone wants joy.

VICKI: Everyone wants joy, but it’s difficult for people who feel like they’re trapped. I know a lot of seniors feel trapped in either their bodies or

their houses or their living situations, or whatever it happens to be. So what about the seniors who feel like they can’t make a move, or they can’t get motivated, or they don’t even see the point?

JANE: You don’t have to look at the big long-range goal and say, “I’m doing that.” You can look at the short little ones that are right in front of you. For me, it was getting out once a week and getting some exercise and doing something. There is always something you can change. It may take time, but eventually you will see a progress towards that goal. The goal doesn’t have to be a big grand one.

The goal can be, “I can get up off the floor a little easier.” Or, “I can pick up my plant to put it in the sink a little easier.”

So goes the line from “Loose Lucy,” one of the many Grateful Dead songs covered by Colorado Springs’ own Dead cover band Big Sky. And when sung to- and along with- an enthusiastic crowd, it becomes an almost irresistible invitation to join in the fun.

Many musicians find success playing in tribute bands, faithfully recreating the live performances of iconic bands from the past.

However, paying tribute to the original rock ‘n’ roll jam band is a different endeavor. Preserving what’s essential while venturing into uncharted territory requires a delicate balance.

The members of Big Sky - Jim Cowell (bass), Teddy Galloway (guitar), Todd Yuill (keyboards) and Dave Deason (drums) - enjoy the challenge.

you’re not playing any one genre all night, and you aren’t expected to.”

So, with the musical possibilities wide open, how can a Grateful Dead cover band successfully set itself apart from any other band in the jam category?

“You have to know what the rules are.” Jim says. The idea elicits laughter from the others (and himself), suggesting that if there are profound understandings among them, it would be useless to try to explain them.

More than anything, they have the musicianship and experience to do the songs justice. They come from varied backgrounds, and all four bring a broad range of skills and interests.

Members of the band take part in other projects and write original songs.

The emphasis in this setting, though, is mostly on interpreting well known songs. They play Dead songs, as well as occasional covers of classics by other bands. They see what they do as being very much in the spirit of jazz.

The band also understands the visual aspect of the Dead experience.

Tie-dyed drapes serve as a backdrop for the stage. But if there is one thing that takes it up a notch, it would have to be Ted’s resemblance to Jerry Garcia. From his full white beard to his guitar, which looks unmistakably like one of Jerry’s custom instruments, he fits the part. Sly one-liners

delivered in between songs give him a certain edge that is all his own.

Asked whether their bandmate would adopt his distinctive image if he weren’t in a Grateful Dead cover band, the others say that with Ted, what you see is what you get.

“He’s crafted his own persona,” Dave says. “And it’s a good one!”

Before Ted played with Big Sky, he was a member of Shakedown Street, another Dead cover band.

Originally established in Colorado Springs, the band is now based in Denver.

Big Sky’s current lineup has been in place for the last seven years. The onstage communication they’ve developed over the years is immediately apparent. However, the full effect of the band’s performances is probably best experienced over the course of a full show. Songs flow from one into another, the crowd loosens up, and the band hits its stride. The cumulative effect is impressive.

“It’s like having a long involved conversation,” Dave says. “You stray away from the main point, and many times you come back to it. It becomes an organic thing.”

“How you get there, that’s the adventure,” Jim adds.

Recipes: How to make ricotta puff pastries with strawberry compote Family Features

P

erfect for a party or simply indulging yourself, these addictive pastry puffs make it hard to stop at one.

Easy to assemble with these step-by-step instructions, the ricotta mixture and fresh strawberry compote are dynamic together, and provide a generous touch of sweetness.

Ricotta Puff Pastries with Strawberry Compote

2 sheets puff pastry 1/2 c, plus 1 T heavy cream 1/2 c granulated sugar, divided 1 T ground cinnamon 1 T water 1 package of fresh strawberries, hulled and sliced 1/2 c homemade, part-skim or whole milk Ricotta cheese 1/4 c powdered sugar 1/2 t vanilla extract Heat oven to 400 F. Cut both puff pastry sheets into nine squares.

Make slit in corner of each square toward middle of the pastry.

Fold corners to other corners to create pinwheel shape. Brush pastry with 1 tablespoon heavy cream.

Combine granulated ¼ cup granulated sugar and

ground cinnamon then sprinkle on each puff pastry.

Bake 12-15 minutes, until pastry is golden brown and raised.

In medium saucepan on medium to high heat, pour in remaining granulated sugar and water. Once sugar is dissolved, pour in fresh strawberries.

Bring mixture to boil then simmer 10-15 minutes, stirring occasionally, until strawberries are broken apart and semi-thick sauce is created. Let chill in refrigerator 2 hours. To chill faster, put in

freezer 45 minutes.

In medium bowl, using mixer, whip heavy cream until stiff peaks form. Set aside.

In separate medium bowl, combine ricotta, powdered sugar, and vanilla extract. Mix until fluffy.

Return whipped cream to ricotta mixture and whip for 1-2 minutes until mixture is light and fluffy.

Spoon ricotta cream into the center of each puff pastry pinwheel. Spoon strawberry compote in middle of ricotta mixture.

LAUGHING MATTERS Ears

Steve was in a terrible accident at work. Oddly, however, the only permanent damage done to him was that both of his ears were amputated.

But, because he was permanently disfigured, he settled with the company for a rather large sum of money and went on his way. One day Steve decided to invest his money in a small, but growing computer business.

And, after weeks of negotiations, he bought the company outright. After signing on the dotted line, he realized that he knew nothing about running such a business and quickly set out to hire someone who could do that for him.

The next day he had set up three interviews. The first guy was great. He knew everything he needed to and was very interesting. But at the end of the interview, Steve asked him “Do you notice anything different about me?” and the gentleman answered, “Why yes, I couldn’t help but notice you have no ears.” Steve got very angry at his direct bold response and threw him out. The second interview was with a woman, and she was even better than the first guy. But he asked her the same question, “Do you notice anything different about me?” She replied “Well of course, you have no ears.” Steve again was upset and tossed her out.

The third and last interview was the best of all three. It was with a very young man who was fresh out of college. He was smart. He was handsome. And he seemed to be a better businessman than the first two put together.

Steve was anxious, but went ahead and asked the young man the same question; “Do you notice anything different about me?” And to his surprise, the young man answered

“Yes. You wear contact lenses.” Steve was shocked, and said “What an incredibly observant young man. How in the world did you know that?” The young man fell off his chair laughing hysterically and replied, “Well, it’s pretty hard to wear glasses with no ears!”

I Love My Pet

T

his is George (the orange one) and Sox. These two male siblings entered our lives one year ago when our hearts were truly broken. You see, our beloved 11-year-old orange tabby died suddenly and unexpectedly on my husband’s birthday.

As we were trying to adjust to life without our best buddy, my husband found himself at the Bijou Animal Hospital looking for kittens to adopt. “We are an animal hospital sir,” they stated. “We don’t adopt-out kittens.” Wanna bet? Just as my husband turned to leave, a Vet Tech poked her head out and said that she was fostering two kittens which were born under her shed at her home.

Her neighbors had moved and left their pregnant cat.

Yeah, I don’t get that either. But to my husband’s surprise, this tech had brought the kittens into the clinic just that day for a little GI trouble. She asked him if he would like to see them. Of course we did have criteria to meet. One must absolutely be orange and they had to be males. As soon as he saw them, he was smitten. They came home with us a couple of days later. We fell in love with them immediately and the feeling was “mewtual.”

They are the real-life “pillow pets” as you can see in this picture. I have never had two cats that were siblings before, and I would do that again in a heartbeat! This picture reveals the absolute love they have for each other. The hole in our hearts has been filled! George and Sox were truly heaven sent.

Without human care, her kittens grow up unsocialized to humans. The cycle continues, adding thousands to the community cat population each year.

Happy Cats Haven receives dozens of calls each month from people outside the aid of HSPPR. If you find kittens in your neighborhood, we will try to help. We first bring kittens into safety, but we always make sure the mother cats are taken care of too.

Even if the mother is outside, she is still the kittens’ best chance for survival. Of course, our goal is to spay her so that this doesn’t happen again.

Bumblebee was found outside with two mom cats and all their kittens. They needed a little medical help, along with patience and love to build their bond with humans. In just a few weeks with a caring foster family, Bumblebee was ready for her forever home. The mothers are happy outside with food, shelter and care by their Colony Manager.

We can support you with resources if you join our Foster Program to help these families. We are always looking for people who can bottle feed kittens, if they are orphaned. If you can’t help the kittens you find, we will try to locate a foster parent for them as soon as we can.

We assist HSPPR by showing the benefits of TNR and helping people sign up to be Colony Managers within their agreements. We have a number of humane traps for loan, and our TNR Coordinator Barb Jones can instruct you on how to use them to trap, transport and release each cat.

Our goal is 100 percent sterilization in every colony we support.

Our TNRCare Fund helps us pay for spays and neuters for cats outside the targeted focus of HSPPR. We are grateful to community members who help our community cat friends with their TNRCare donations.

Refugee Cats

Abandoned cats don’t survive outside unless they adapt to acting feral. It is common for abandoned cats to end up at an outside colony, searching for food. Sometimes these scared pets get put through the TNR program.

Colony caregivers often spot these refugee cats who desperately want to find a home again, but are scared to trust humans. Each year, we help dozens of these cats recover from the trauma of being abandoned.

Big Daddy showed up one day at a managed colony with an eye condition that would have eventually blinded him. We gave him medical care and found he was very happy to be inside again. In a few weeks, he found his forever home.

If you find cats on the street who appear to be friendly, please consider getting them inside to safety. Please contact us so we can get them on our waiting list and help you foster them, if you are able.

Working together with volunteers, veterinarians, other rescues and people just like you, we can make life better for abandoned cats like Big Daddy.

When we rescue cats like your mother cat, we can prevent feral kittens from being born on the street. By Kay Owen-Larson “And the angel answered and said unto the women, do not be afraid; for I know that you seek Jesus who was crucified. He is not here; for He is risen.” Matthew 28:5-6

W

hat does Easter mean to us and what difference does it make in our lives that Jesus has risen?

Even though I enjoy all of the “fun” things about Easter, even as a child I knew the true meaning of this special day. This is the day when we are reminded that Jesus truly lived; that He was born, died for our sins, and rose again – and this day should have a significant impact on our lives.

Jesus was born, lived and ministered to the multitudes, was compelled to bear His own cross to a hill outside Jerusalem, was nailed to that cross, died and was buried in a stone tomb. (I have personally been to the empty tomb on two different occasions, it is life-changing) But, three days later, when the stone

covering the entry to the tomb was rolled away, in an instant, history was changed forever. For while religious leaders have come and gone, the fact remains – only One stepped forth from the tomb. Only One has risen from the dead. Only One has conquered death.

Only One offers the promise of eternal life to those who follow Him. Jesus said, “I am the resurrection and the life, he who believes in Me will live, even though he dies, and whoever lives and believes in Me will never die.” John 11:25-26 So what difference does Easter make? We can celebrate victory of life over death; we can give our children and grandchildren the promise that Jesus lives, and we can declare that Jesus is Lord over all of our lives.

The greatest joy we can have is to know the Risen Savior. I can’t image the joy they felt when they gathered at the tomb that day and saw that the stone was rolled away.

Camp Shady Brook. April 9-11, 2-5 $145. An overnight trip?

Absolutely! Join us at Camp Shady Brook, a fully equipped camp in beautiful and tranquil mountain setting that will be our home for three days. Stay in heated cabins with showers and restrooms. All meals will be provided. Attend an informational meeting on Thursday, April 4 at 10 a.m. to learn more about this camping adventure.

Palmer Lake Hike & Dine. April 18, 3-7:30 $25. The quaint town of Palmer Lake is nestled against the foothills a short drive north of Colorado Springs- just the spot for a group hike around Palmer Lake on a spring day. Then adjourn to Bella Panini, a soulful rustic Italian restaurant where the “from scratch” kitchen prepares delicious recipes for dinner on your own.

Coors Field Tour & Lunch. April 23, 9-5 $40. Calling all Rockies fans!

Let’s head to Denver to tour Coors Field, home of the Colorado Rockies. Wear your walking shoes for this 80-minute tour. Then stroll across the street to ViewHouse Ballpark Bar & Grill for lunch on your own.

GrowHaus Denver. April 26, 8:30-4 $40. The GrowHaus is a nonprofit indoor farm, marketplace and educational center in north Denver’s Elyria-Swansea neighborhood. Elyria-Swansea has one of the lowest household incomes in the city, and residents have historically lacked access to health, affordable food and suffer from high rates of diet-related illness. After a tour of this remarkable facility, we’ll head to a Denver eatery for lunch on your own.

Rural Area Meal Program, or RAMP, is for individuals age 60 and over who live in El Paso County. This program is for older adults who are not able to get to the nearest congregate meal site. Please leave a message at 719-520-6471 with your name and phone number.
