When do you decorate for Christmas? Hanukkah? Festivus? If anyone wonders what goes on within the confines of our Lexington Life office, spirited debates happen frequently. The subject came up about when it is “time” to put up decorations for the holidays and it was interesting to listen to the different strategies/time frames for when it is “appropriate” to begin with decorating. I am going to list the responses from my team and use pseudonyms to provide their anonymity. Suzie Christmas gets her decorations up as soon as Halloween is over. She has double-digit trees that she displays around her house, and she does basically everything by herself. She enjoys being in the holiday spirit as long as possible and being surrounded by Christmas brings her much joy, love, and peace. Patty Pinecone does some interior decorating but doesn’t go overboard. Decorating begins the week before Thanksgiving and due to holiday travel, she likes to have it done early. She describes it as “bare basics” because she doesn’t want a lot of clean-up after the holidays. She focuses on her family’s tree, nativity scene, and stockings and doesn’t do exterior lights on her home. Greg Griswold enjoys his responsibility of putting up the exterior lights and the tackier the better. Purchasing the family’s real Christmas tree and setting it up is one of his favorite days of the year. He usually puts the lights up and lays around and watches his wife, Sparkle, do everything else. Holiday decorating for him usually begins around Thanksgiving and coincides with watching cheesy Hallmark Christmas movies as much as possible. When I was a young man about 20 years old, I came across a book that changed my life. I would not be where I am today without this book being given to me as a gift. It made a special day even more special over the years. I was not a ‘wild’ teenager. Of course, a few of my friends at Airport High School back in the day might disagree. But I did have some issues, was certainly not happy on the inside, and could not find direction in my life. On Christmas morning in 1973, my mom presented me with a book, a Bible. It was so timely. I had started hanging around with some Christians at church and was trying to make some changes in my life. This book was the key to changing my life. After Christmas, at a New Year’s Eve revival meeting held at the Carolina Coliseum in downtown Columbia, I went forward when the preacher made an altar call and accepted Jesus as my Savior and gave my life to Him. In the ensuing weeks, I found this book, the Bible, speaking volumes into my life about how to live, how to find life, and how to truly find peace and happiness. Yes, it changed my life! This book has been my constant and close friend for nearly fifty years now. I have often sat and read from its pages and found encouragement and hope. There have been many times I’ve heard this book give my answers to questions and point me in the right direction. I still love my moments together with this old friend. Regina Willoughby Proclaimed “Lexington’s Ballerina,” Regina Willoughby is indeed the essence of ballet in Lexington. Many know her as the owner of The Academy of Lexington Youth Ballet and the non-profit Lexington Youth Ballet. Originally from Texas, Regina has been involved in dance since the age of eight, when she danced at Ballet Midland in West Texas. At 15, she was awarded a scholarship to attend the Virginia School of the Arts. Upon graduation, she received multiple scholarship opportunities and apprenticeship contracts. “Getting paid to do something I loved?! It was a tough decision [on where to choose], but at the same time, a no-brainer for me,” said Regina. She ultimately chose a corps de ballet contract at Ballet Austin to be closer to her family and her longtime love, Jason. After Regina and Jason married, the couple welcomed their first daughter, Sierra, in 1996. Regina says, “Being a mom was an aspiration equal to a professional ballet career for me.” Following the birth of their daughter, Regina decided she wanted to continue dancing, which at the time was unusual. She auditioned, and Columbia City Ballet (now South Carolina Ballet) was one of her offers. The family felt South Carolina would be a wonderful place to raise a family, so they moved here in 1997 and have been here since. Her husband has served in the military and was a Deputy and Investigator for Richland County. He now works alongside Regina as her business partner. When they are not busy with their business, they attend Corpus Christi Catholic Church and enjoy
their time as members of the Columbia Sailing Club. Regina is also on the board of directors for the South Carolina Arts Foundation. Regina has been promoted throughout her career in ballet to the company’s Soloist, Principal, and Ballerina. In her 20 years of performing, she has danced lead roles in iconic ballets such as Giselle and Romeo and Juliet. Not only has she been recognized as Lexington’s Ballerina, but she was also awarded a key to the city by the City of Columbia. During these significant career events, the family welcomed their second daughter, Melina, who followed in her mother’s dancing footsteps. In 2018, Regina retired from the stage, but not before performing her final dance alongside Melina. They danced at Columbia City Ballet, where they were featured in Parade Magazine and on SCETV to showcase this unique experience they had as mother and daughter. Since retiring from the stage, she has continued to work in the dance studio and recently welcomed her first grandchild. Regina feels that it is one of the best blessings in life to see the love her daughter has for her new baby and how it brings the family full circle. Enjoying the sweet baby snuggles without being the one up all night has been a nice perk of grandparent life. The Escape Plan offers a puzzling good time Josh Brickey loves a good puzzle. It’s what led Brickey and his wife, Patty, to open The Escape Plan Columbia off Sunset Boulevard in Lexington eight years ago. “I come up with a business idea every week,” he joked as he unboxed a nutcracker to be used in a special Christmas game opening for the holidays. Brickey discovered the budding business of escape rooms through an online article, researching and picking the brains of other entrepreneurs. “I literally designed the logo that day.” He had never played in any escape room, which were still rare in 2015. In three months, Brickey found a 2,500-square-foot space in a former warehouse, created the games, and built the sets. 16 | Vote now for the Best of Lexington Life 2024 at lexingtonlife.com
“We want to create magical moments that are unexpected, that help bring people closer together,” Brickey said. That space has tripled as more than 100,000 people have gone through the business: corporate groups, families, friends, and businesses. The Escape Plan has been named one of the top 10 escape rooms in the U.S. for a mid-sized market for several years. In each of the games, players have about 15 to 18 clues that they have to find their way through two to three rooms. Brickey opened one of the doors to reveal a décor you would have seen in a suburban basement in the 1980s: A patterned coach, an avocado stove, and a small television displaying an eerie static screen. An ‘80s call-

The entrance to the pirate-themed game has an animatronic parrot greeting players and maybe can offer a clue. The goal of the game is to capture Captain Robert’s flag and replace it with your own. The third game takes place in an elevator. The upcoming Christmas game takes place in a cozy cabin. Groups that have visited The Escape Plan include the Gamecocks’ women’s basketball team, nearby companies Michelin, Aflac, the state of South Carolina, teachers’ groups, and even students, some of whom got lessons in entrepreneurship from Brickey and unfurled games that involved math. There have been marriage proposals, gender reveals, birthday parties, and other big moments celebrated amid an escape room game. Back when different people could join in a game (now groups only can book the rooms), two groups hit it off and became friends.
The joy of doing an escape room is unique in a world where technology rules our lives, Brickey said. “it’s one of the few times in our culture nowadays that we’re not, even though we do use technology. You’re not immersed in your own technology and you’re interacting with others.” The former pastor now has set his sights on his new game concept, The Game Show Challenge. The next puzzle Brickey is solving is his newest business venture. The first version of The Game Show Challenge is a separate business set up next to The Escape Plan that mimics the atmosphere of a modern game show. It has a host, a producer, professional lighting, and three to five different games to play with a group. Brickey has opened another Game Show Challenge in Houston, which is version 2.0. “Our goal is to open 30-plus locations in the next five years,” he said. Conifers’ Fragrant Pull On Memory by Tom Poland
I
read that fragrances stimulate recall more so than any other sense. I knew from experience that it had to be true. You and I, we’re scentimental creatures … See what I did there? Think about your favorite aromas a bit. Don’t certain fragrances bring back memories? I’ll wager they do. Two days ago, I cycled through a forest where trees were being cut along a right-of-way. The sharp smell of pine resin transported me back to the 1960s when my father owned a saw shop. On workdays and Saturdays, the wail of chainsaws carried some two hundred yards into my bedroom. I knew my father was testing a repair as he made a fresh cut on the pines behind his shop. I turned the thick slices into wheels, rolling them downhill in races with one another. I worked in that shop as a boy and the fragrance of conifers—pines and cedars—mingled with raw gas created an aromatic blend I summon whenever I want. And in reverse action, the fragrance of raw pine resin summons up my saw-shop childhood, one that pushed me toward a quieter world, one of words and images. And then that bike ride through pine-scented air resurrected a memory from 1989, September 22. The night before, Hurricane Hugo had barreled through and the next morning I walked outside to the overpowering smell of pine resin. Limbs and branches covered the land as if some ground crew had worked through the night to create a fragrant green world. I had no power, but an electric memory would rise henceforth from my subconscious whenever the fragrance of freshly cut pines came my way. Last month something I have dreaded for over thirty years came true. I live in what was once a state forest. A large tract of woods some 300 yards from my home was sold to become a community of townhouses. As men in yellow, noisy machines toppled
trees, as saws sliced them into logs, two things filled the air—the fragrance of pine resin and birds. Never had I seen so many birds in my backyard. Refugees had fled what had been their home. They flocked to my feeder. Drank from my birdbaths. Bathed too. Then a few weeks ago I visited two Christmas tree farms for a holiday story and though not one tree had yet to be cut, the fragrance of resin came to me. Leyland cypresses, red cedars, Virginia pines, and other conifers would get the saw, leaving stumps oozing gold, honey-like sap. Other fragrances take me back in time. The warm sugary aroma of cinnamon toast takes me back to my mother’s kitchen. Now and then I come across a powder that brings back memories of my grandmother’s bath closet. Fragrant, fresh-cut grass finds me wearing a helmet and pads as my teammates and I warm up beneath Friday night lights. Oh, and somehow fresh-cut grass makes me think of slices of watermelon. Woodsmoke brings back memories of my grandfather’s smokehouse as well as remembrance of wood stoves and fireplaces. Just a hint of Vicks VapoRub conjures up my grandfather bumping through pastures in an old jalopy. The fragrance of paper and ink revives memories of books and bookstores no longer open. Gardenias and tea olives take me home to Georgia. More than anything, though, the broken branches of conifers and resinous stumps of pines fire up my memory. They transport a fellow riding a bicycle through woodlands to places where loved ones live again. They stir up cyclones that spin and Christmases past. But something sad seems at work here. It seems no new fragrances come to me, aromas that will work their magic on my mind and memory, but that’s okay with me. The ones I have bring back good times aplenty, and that’s good enough for me, hurricanes notwithstanding. n

Fitness Trackers There are lots of options with fitness trackers. Many can be paired with smartphones, computers, and iPads. Prices vary based on brands and features. Some only track steps, like a pedometer. Others monitor sleep patterns, heart rate, number of steps, oxygen levels, and so much more. Sporting goods stores, department stores, and online shops are places to look for these items. Exercise-related Combos Wrap two or more related gifts together for a package deal. Five ideas for bundled gifts include: 1. An exercise or yoga mat for stretching and a cushion for floor exercises. Throw in a gift certificate to a yoga and/or stretching class. Go the extra mile and get a mat carrier with a shoulder strap for taking the mat to classes or the gym. 2. Consider a new swim cap, pool towel, and floating weights for swimmers. 3. Those who shower at the gym would appreciate a carrying case or shower bucket filled with things like pool shoes or flipflops, a bath towel, shower wrap, and assorted toiletries. 4. Hikers, trail runners, and mountain bikers could use bug repellant, first aid bandages, and GPS trackers. 5. Cyclists might enjoy receiving new bike gear: reflectors, mirrors, helmets, and water bottles. Accessories Perhaps one of the very best exercise accessories is a reusable water bottle. For those who have a hard time tracking their water intake, bottles with times marked on the side serve as reminders to help them keep up with intake throughout the day. Some water bottles fit snugly in car/bike cup holders and need to be refilled once during the day. Larger ones have the convenience of holding a full day’s recommended amount but are much larger and cumbersome to tote around. Wireless earbuds and headphones allow those exercising to listen to podcasts and music. Socks are a great accessory gift idea for those beginning exercise and those who do it every day. A good exercise sock can help prevent blisters and calluses, provide foot support, and keep sweat away from the skin with a wicking fabric. There are lots of fun colors and styles too. Many of the socks are designed for specific sports: hiking, running, training, etc. While it would be difficult to buy someone exercise shoes or apparel since they need to be tried on for proper fit, you can always purchase a gift card/certificate for a specific brand or to a sporting goods store. After holiday sales are a great time to make the most of the gift card. Workout gloves protect hands from blisters and calluses and can help with gripping equipment. Gloves come in a variety of styles, like those that only cover knuckles, those that cover the hands with fingertips exposed, and those that go higher up on the wrist for added support.
Tote bags and backpacks hold all the necessary stuff that gym goers want to carry along. Rucking is a current exercise trend where someone wears a weighted backpack to take a walk or hike to increase intensity. In that case, a backpack could serve two purposes. Exercise Dice or Workout Cards An exercise dice has exercises written on the sides. When it’s rolled, it lands with an exercise on top: ten jumping jacks, five burpees, ten squats, a 20-second plank, a one-minute wall sit, etc. Workout cards do the same thing when a card is selected from the deck indicating a suggested exercise idea. It’s a fun way to shake up a routine. Fitness Journals, Logs, and Books Fitness journals and logs allow space to write down routines and accomplishments. Some offer suggestions, while others are blank with spaces to fill in sets, reps, or weightlifting amounts. Many of these journals also include areas to keep track of macros, calories, and food intake. Although there is a plethora of options online, having something in hand as a reference can be a great motivator. Cookbooks with healthy meal ideas and/or exercise books are other gift options. Stocking Stuffers and Small Gift Ideas Sometimes you just need a small gift idea or a Christmas stocking stuffer. • protein bars • energy gel packs (especially helpful for distance runners) • locks for gym lockers • sweat headbands and wristbands • hair ties Finishing Touches Put the finishing touches on your healthy gift with unique wrapping paper and a sweet, handwritten sentiment. Discount stores and some online retailers sell exercise-related wrapping paper. Enclose an encouraging note for the recipient. Marathon runner Jeff Koll was on a mission trip in Liberia when he contracted malaria. Doctors say his training made his heart strong enough to save his life, and now he’s using this second chance to help others.
Jeff Koll considers himself an accidental runner. He didn’t mean to qualify for the Boston Marathon, but he did. He also didn’t mean to get malaria, but he did. Koll’s running career – though he probably wouldn’t call it that – has revolved around fellowship. The Iowa native moved to South Carolina 25 years ago to work for Colonial Life, and that’s where he was invited to start running with the organization’s corporate track team. “I made a lot of good friends and started doing some local races,” says Koll, who had no aspirations to train for something as big as a marathon. “We ran some 5K and 10K races, and then they talked me into running a half marathon.” Over the next several years, Koll con-
tinued running but he also began playing golf and tennis. Then he hurt his knee. Koll was told he could go all-out using forward motion, but that it was best to avoid side-to-side movements. “I thought about it for three seconds and decided to quit tennis,” he says. “I got back into running but almost quit in 2018 because of the pain when I tried to run longer distances. I realized I had been training wrong and began training the right way.” Koll decided he would compete in one fast and flat marathon, and then never do another. He ran in the Myrtle Beach Marathon in 2022 – “accidentally” qualifying for the Boston Marathon, which he had no intention of running.

His friends from his small group at his church, Mount Horeb in Lexington, had other ideas though. They invited him to join their Ville to Ville Relay team to run 75 miles from the peaks to the foothills of the Appalachian Mountains (Asheville, NC to Greenville, SC). Along the way, they kept up a steady stream of encouragement to run in the Boston Marathon. Koll began training, even competing in The RunDisney Dopey Challenge, where he participated in a grueling four days of back-to-back races (each starting at 5:30 am), including a 5K, 10K, half marathon, and then a full marathon. This was in early 2023. A few weeks later, he would leave for Liberia on a mission trip with his church. A veteran of mission trips – he’s previously traveled to Alaska, Guatemala, and the Dominican Republic – Koll was no stranger to the preparations required for these types of adventures. At the recommendation of Passport Health, he began taking malaria and typhoid fever medications to prevent contracting these infectious diseases. However, due to some negative side effects, the strict timelines for taking the medicines, and the fact that they were going to a low-risk area, Koll and his physician agreed he would not complete the full course of malaria medications. The trip went as planned. The group provided a medical clinic, offered teaching/education, and helped build houses. Koll continued training for the Boston Marathon. “Twice, I separated myself from the group by getting up early to run on my own, and I think that may have been when it happened,” Koll says. After returning to the United States, Koll had some congestion. He felt better for several days and then he began having stomach pains and body aches/shivers. After some trial and error at urgent care and being sent between hospitals, Koll was finally diagnosed with malaria. That was when he lost consciousness. For ten days. “I have a vague memory of my daughter and dad visiting, but I thought it was a dream,” Koll says of the foggy state he endured while they waited for the right medications to arrive from the Centers for Disease Control and Prevention and then waited some more for the treatment to work. “When I fully woke up, it was dark and late. My arms were strapped to the bed, and I had tubes in my mouth and nose.”
Koll tried to move around but felt intense pain in his abdomen. What he didn’t realize was that over the past week-and-ahalf, his organs had failed one by one. His lungs, kidneys – nearly everything but his heart. “The doctors told my wife that they didn’t know why I was alive,” Koll says. “She told them I had been training for a marathon, and they said that must be the reason.” Koll would soon find another reason for his survival. Meanwhile, the pain was so severe that he thought it was time to die. He remembers the sun shining in through the window and a palpable energy in the air. “I thought, ‘This is God here to take me

away. I’ve had a great life, this pain is killing me, and I’m ready to go,’” Koll says. “But then I heard God’s answer, and it was ‘no’.” Koll says his pain left him at that point, and it didn’t return. But he had other challenges. Among its effects, the malaria had taken Koll’s ability to walk and 30 pounds off his already trim frame. He had a long road ahead of him to recovery. His path began when his wife shared the outpouring of prayers and well wishes from his church and local community. A humbling experience, he says. Walking those first 10 feet to the door of his room was incredibly difficult, but each day he walked to it and back. “The look back at the bed reminded
“The doctors told my wife that they didn’t know why I was alive.” me of my moment with God,” he says. “I knew I needed to do something with this second chance, so I pushed myself to go farther each day. I wasn’t in a position to help anyone in my condition, so that was my motivation.” Koll couldn’t believe that merely a month earlier he had run nearly 50 miles in the Disney race, and now he struggled to walk around the intensive care unit. So, he walked 10 times around it. He made progress every day, and after a month of hospitalization and rehab, he went home – continuing kidney dialysis on an outpatient basis for a few more weeks. Seven months later, Koll is back to running 40 miles per week and has competed in a half marathon. He’s also begun speaking with groups about his story. It began with breakfast with a friend, Paul Curlee, who asked Koll to speak to his work group about his experience. He plans to provide a similar talk for his own workplace and church. Koll hopes to get back to mission work soon, providing broader opportunities to share his story. Whether on mission trips or when counseling others, Koll uses his second chance to help others. He asks what they are passionate about and the biggest challenges they’ve overcome. “Every time I ask these questions, I learn something valuable about them and about life,” says Koll, who now has his own story of triumph to share. “I also encourage them to consider helping others who are at the beginning of that journey as well. After World War II, Americans were told that a high school education by itself would not be sufficient to make a good living in modern society. The brass ring was only for those with at least a bachelor’s degree from a four-year liberal arts college or university. The phrase “To get a good job, get a good education--go to college” was heard countless times in TV commercials back in the 1970s. One particular ad for CLEP, the “College Level Examination Program, “ depicted Abe Lincoln trying to get an executive position through an employment agency. Lincoln didn’t have a college degree and was told, “You ain’t goin’ nowhere without that sheepskin, fella!” Times have changed. Each year thou-
sands of young people become college graduates, burdened with tremendous student loan debt, and many cannot find a job in their field of study. According to a 2017 Strada-Gallup survey of college students, forty percent of liberal arts grads said that, if they had to do it again, they would have picked a different major. There is an air of uncertainty hanging over America’s economic future in the minds of many young people. Consequently, many high school graduates are choosing to learn a skilled trade in a two-year program at a technical school. This allows job security at a much faster pace. Midlands Technical College (MTC) will celebrate its 50th anniversary in 2024. In
1974, three separate career-oriented institutions merged to form MTC. Today MTC has seven campuses across the Midlands: Airport Campus, Batesburg-Leesville Campus, Beltline Campus, Fairfield Campus, Fort Jackson Center, Harbison Campus, and Northeast Campus MTC is one of our state’s largest two-year colleges, serving approximately 22,500 people each year. There is open enrollment for two avenues of study. First are the Academic Programs, where students can earn degrees, diplomas, and certificates. Second, are the Corporate and Continuing Education courses which lead to certifications and licensures. Midlands Technical College currently offers more than 150 programs in a wide variety of studies and trades. A majority of the degrees, diplomas, and certificates can be earned in less than two years. Examples of skilled labor degrees that will always be in high demand are specialized training in specific aspects of automotive repair, emergency medical training to become an EMT or a paramedic, HVAC repair and installation, electrical engineering to be an electrician, plumbing, and welding. Schools like MTC used to be thought of primarily as “trade schools” where a person learned how to work with their hands in a physical labor trade. However, the demand for more high-tech workers created the need for two-year training backed up with a degree in areas such as accounting, business, biology, medical technician, physical therapy, chemistry, computers, dental assistance, graphics, phlebotomy, web design, and paralegal. MTC degrees open doors for graduates to become employees of local businesses or large companies. Many have utilized MTC as a “junior college” and then transferred their hours to graduate from a four-year school such as USC. Many other MTC graduates gain skills that allow them to become self-employed and own their businesses with degrees in floral design, art studio, cake decorating, carpentry, interior decorating, personal training, and small engine repair. Sierra Artemus is a 2015 MTC graduate with an associate in art (writing) degree who continued her education at USC, majoring in journalism. In 2022, Sierra joined WISTV News 10 in Columbia, SC where she was key in pioneering and developing the lifestyle show “Soda City Live”, which she executively produces and hosts. She explained how MTC was what she needed coming out of high school. She thought it
would be simpler being a “community college,” but found out that the work was hard and demanded her dedication, which she appreciated. Sierra continued, “Your future is in your hands. If you want something out of life, you have to work hard for it.” Martinique Scott’s story is one of determination. She was attending MTC in 1996 but had to drop out to take care of her family. Twenty-five years later in 2021, she returned to MTC to finish her associate degree in interdisciplinary studies, graduating in 2022. Martinique said, “Midlands Tech embraced me so carefully. I spoke with the staff, from registration to financial aid to advisement. Everyone treated me so kindly; they were patient with me, and they helped me think through the process.” Dr. Ronald L. Rhames, a 1978 MTC graduate, has been the president of MTC since 2015. Help for Better Indoor Air and Fewer Allergies This Christmas by Max Christie For all the fun and joy that the holiday season comes with, one thing you can’t take for granted is healthy indoor air quality. Indoor air quality often takes a real hit during winter, a time when people keep their homes tightly sealed to keep the cold out; indoor carbon dioxide levels can rise over 1,000 ppm, for example, and cause headaches. Christ mas can be a time of particularly poor indoor air quality. It is important to do what you can to make sure that you breathe healthy air by keeping a few points in mind about where the problems lie. Christmas Trees A new artificial Christmas tree can be a source of chemical pollution from off-gassing. Older Christmas trees can shed plastic dust that contains lead and arsenic. Christmas tree baubles and other decorations can present the same problem. Getting a real Christmas tree can help you avoid these challenges, but it’s important to make sure that you don’t invite other problems into your home in the process. It’s called the Christmas tree syndrome: trees are tight ly bound for transportation, trapping moisture within the foliage and providing a breeding ground for mold. Once you bring the tree home, you unbind it, spread the branches, and fluff up foliage, releasing all those mold spores into your home. It can help to unbind the tree out doors in a sheltered space and leave it there for a couple of days to make sure that spores from any mold are re leased outdoors. Using natural Christmas decorations can be a great idea, as well. From pine cones and flowers to berries and leaves, you could have fun with all kinds of natural items.

In the closed environment of a winterized home, these substances can get into your indoor air even when the candle isn’t lit. If the idea of many scented candles (or air fresheners) seems fes tive to you, you should rethink what these candles do to the air quality. Getting soy-based candles with natural fragranc es could be an alternative. Festive Holiday
Breakfast Blueberry Croissant Bake 4 large croissants, cut up 1 cup fresh blueberries ½ cup fresh raspberries 12-oz cream cheese, softened 1 cup sugar 3 eggs 1 tsp vanilla 1 cup milk powdered sugar Preheat the oven to 350ºF. Place croissant pieces in a 9x13 pan and scatter the blueberries and raspberries over the top. Beat cream cheese, sugar, eggs, and vanilla in a bowl with an electric mixer on medium speed until well blended. Gradually add milk, mixing until well blended. Pour evenly over croissant pieces and let stand for 20 minutes. Bake for 35 minutes or until set in centers and golden brown. Serve warm with powdered sugar sprinkled on top.
Slow Cooker Gingerbread Oatmeal 2 cups uncooked steel-cut oats ½ tsp salt 1 tbsp cinnamon 1 tsp ginger 1 tsp nutmeg ½ tsp cloves ½ tsp allspice 8 cups water ¼ cup molasses Optional toppings: whipped cream, chopped toasted pecans, dried cranberries, raisins, Greek yogurt Spray the inside of a 6-quart slow cooker with cooking spray. Combine all ingredients in slow cooker and stir well. Cover and cook on high for 3-4 hours or on low for 8 hours, stirring occasionally. Baked Ham and Egg Cups 6 slices deli ham ½ cup cheddar cheese blend, shredded 6 large eggs 12 thin asparagus spears, brushed with oil salt/pepper, to taste
Preheat the oven to 400ºF and spray muffin tins with nonstick spray. Place one slice of ham into each muffin tin creating a cup. Sprinkle shredded cheese inside ham cups. Top with one cracked egg in each and lay oiled asparagus tips flat on top. Season with salt and pepper. Bake for 13-15 minutes or until eggs are cooked to preference. Sprinkle with chopped fresh parsley. Remove egg cups from the muffin tin with a large spoon and serve. Peppermint Chocolate Chip Pancakes 3 cups all-purpose flour 2 tbsp baking powder 2 tsp salt 2 tbsp granulated sugar 2 ½ cups milk 2 eggs 6 tbsp butter, melted 2 tsp peppermint extract peppermint baking chips and/or crushed candy canes chocolate chips In a large bowl, mix dry ingredients. In a small bowl, whisk eggs and milk together. Add the egg mixture to the dry ingredients mix and add peppermint extract. Do not overmix, there should be a few lumps. Pour a small circle of batter (according to the size you want) and cook pancakes over medium heat on a griddle or the stove. Sprinkle the peppermint pieces and chocolate chips onto the pancakes while they are cooking. Flip the pancakes when you see bubbles forming on top of the pancakes. Serve warm with maple syrup and whipped cream. Pomegranate Mimosa 16-oz orange juice 16-oz pomegranate juice 16-oz champagne Mix orange juice, pomegranate juice, and champagne to make eight 6-oz mimosas. Pour the cocktail into champagne flutes and serve.

½ cup freshly squeezed orange juice 2-4 tbsp honey 1 tbsp light olive oil Add the kiwi, pears, strawberries, pomegranate arils, and mandarin oranges to a large serving bowl. In a small mixing bowl, whisk together the orange juice, honey, and oil. Pour over fruit and toss to evenly coat with dressing. Allow it to sit for several minutes before serving. Crescent Bacon Breakfast Ring 5 eggs ½ red bell pepper, chopped ½ green bell pepper, chopped ¼ tsp salt ¼ tsp pepper 8 slices bacon, fried 8-oz crescent rolls 1 cup cheddar cheese, shredded 1 egg (for egg wash) Preheat the oven to 375℉. In a bowl beat the eggs with the chopped peppers, salt, and pepper. Cook the eggs in a skillet so that they’re scrambled. Lay out the crescent rolls on a parchment pepper, like a star. On each crescent roll lay a piece of bacon. Add half of the cheese around the ring. Add the scrambled eggs around the ring and top with the remainder of the cheese. Fold the crescents over and brush with the egg wash. Carefully transfer the parchment paper onto a baking sheet. Bake for 20 minutes or until the crescents are cooked and golden brown and serve warm. Christmas Fruit Salad For the fruit salad: 5 green kiwis peeled, quartered, and sliced 4 pears, diced 1 ½ cups strawberries, sliced 1 ½ cups pomegranate arils 5 mandarin oranges, peeled and divided For the orange juice dressing:
Banana Cinnamon French Toast 2 slightly overripe bananas 4 eggs 2 tsp vanilla extract 1 tbsp cinnamon ½ cup milk 12 slices oatnut or oatmeal bread Place the bananas, eggs, vanilla, cinnamon, and milk in a blender. Puree until everything is combined and the mixture is slightly frothy. Pour into a bowl large enough to fit a piece of the bread. Spray a skillet with non-stick spray and heat on medium-high. Dip a slice of bread in the banana-egg mixture, coating it entirely. Place on the skillet and repeat for as many slices will fit. Cook each side until golden brown, about 2-3 minutes. Repeat the process with the remaining bread and banana egg mixture. n

The Night-Shift Men The four night-shift men backed up to the fire, looking at the silent stars. Ol’ Bill said: “Man, I’m so sleepy I can hardly breathe. But I feel like I will never sleep again.” Little Bobby chimed in: “Yep, boss says we should have slept at daylight. I tried to explain. Told him he wouldn’t have slept if he’d been there.” Big Jim said: “Yeah, I like ol’ Boss pret ty good, but he’s all business, y’all know that. I considered asking tonight off, but I knew he’d say we were out of our minds.” Little Jim said: “Aw, the first thing he said this morning was to holler ‘Look, here come the boys out of their minds.’ Maybe we should have asked him then. He was al ready in a foul mood, and it couldn’t have gotten any worse.” Ol’ Bill said: “Nah, we needed to come to work. That’s our obligation, and now we know there’s a reason to be here, to be who we are. Now we have a purpose in life besides standing around on this hillside ev ery night for the rest of our lives.”
Big Jim spat on the ground. “What pur pose do you think that is, exactly? I’m not saying you’re wrong, and to tell you the truth, I feel the same way. But I have no idea what that purpose may be. We’ve al ready seen firsthand how nobody believes us. Nobody will ever believe us again about anything! Think of all the times people have said we were crazy to prefer the night shift, and now they think we’ve all lost our minds from being out here every night for all these years. It’s just like ol’ Boss says -maybe we are out of our minds from all this silence and solitude and nothing ever happening except the occasional jackal. All these nights we’ve stood here and not heard one word. All these nights where the only thing we see are the shooting stars and that comet that time, and those nights when the moon disappears. Nobody believes those things when we tell them. Seems like by now we’d know to keep our mouths shut. The only thing we got going for us is we don’t have to go into town to pay taxes because we don’t own nothing.”
Little Bobby said: “Yeah. Just think about it. Years from now people will be telling their children about the crazy guys talking about seeing a sky full of angels singing and commanding us to go to a sta ble to see a newborn baby. You think any of those people will believe us then if they don’t believe us now?” Big Jim spat again. “Nah. People don’t change. They’ll say they ain’t got time to hear about a sky full of angels and some newborn boy in a stable. So, no. They ain’t gonna believe it. Like seeing shooting stars, they’ll all be too busy and miss it. No body’ll ever know except us crazy nightshift men.” n
