Gently press on the mint leaves. Add ice, along with Mahia and 1/2 ounce of lime juice. Shake all that up until well-chilled, and strain into a tall glass with fresh ice. Cranberry Orange Tea The secret recipe for Cointreau has remained unchanged for 150 years.

Ingredients: 7 oz. cranberry tea, freshly brewed 1 oz. Cointreau Orange slices, halved Dried cranberries Preparation: Pour the tea and Cointreau into a martini glass or footed coffee mug. Garnish with the orange slices and dried cranberries.

The Horni Toddy A typical añejo “aged” tequila has an amber color with complex and rich flavors.

Ingredients: 1 part Hornitos Añejo Tequila 1 tbsp honey 1/2 lemon 1 cup hot water 1 black tea bag Preparation: Coat the bottom of a mug with honey and add the tequila and lemon juice. Heat the cup of water and add the tea bag to make hot tea, then pour the hot tea into the mug and stir.

The Milk & Honey Courvoisier V.S.O.P is a blend of cognacs up to 10 years old.

Ingredients: 1 1/2 parts Courvoisier V.S.O.P 4 parts hot milk (or half and half) Teaspoon of clover honey Preparation: Combine ingredients. Serve hot in a mug with grated nutmeg.

Hennessy Coco Spiced POM Cider Nutmeg and cinnamon are great substitutes for cardamom.

Ingredients: 32 fl. oz. Pom Wonderful 100% Pomegranate Juice 8 fl. oz. Water 4 cinnamon sticks (broken in half) 6 whole cloves 1 star anise 6 Green cardamom pods 6 juniper berries 1 1/2 tsp. vanilla extract Zest and juice from 1/2 an orange Apple brandy Triple sec liqueur Preparation: Combine all the ingredients in a medium pot; bring to a low simmer over low heat.

Keep the heat low for an additional 45 minutes; turn off heat.

Allow mixture to steep for at least two hours off the heat.

Strain and refrigerate.

Add 1 ounce apple brandy and 1/2 ounce Cointreau per serving.

Garnish with an orange slice.

Did you know chocolate contains more antioxidants than wine and tea?

Ingredients: 1 1/2 oz. Hennessy V.S. 6 oz. hot chocolate 1/2 oz. spiced syrup* 3 drops pure vanilla extract Heavy cream to top Shaved nutmeg Dark chocolate Preparation: Add all liquids except heavy cream to heatproof glass.

Layer heavy cream over the top to desired amount. Garnish with grated nutmeg and dark chocolate.

Spiced Syrup*

Ingredients: 1 cup sugar 1 cup water 12 cloves 6 allspice pods 4 cinnamon sticks 1 nutmeg 1 star anise pod Preparation: Add all ingredients to a pot over high heat and bring to a boil.

Once boiled, remove from heat.

Allow to cool before straining off any particulates.

Artful Lodging The James Hotel is one of the chicest stays in Chicago and with diverse works from a Southside prodigy to a New York Pop graffitist gracing its public spaces, it also doubles as one of the city’s smartest art galleries.

Chicago is the cultural hub of the Midwest, so it only makes sense to stay in a hotel that truly represents the arts. The James Chicago—designated as one of the best hotels in the country by both US News and Conde Nast Traveler—has custom-selected pieces of art for display that work in tandem with the hotel’s warmly luxurious décor and accessibly modern design. “Art enhances the experience for customers,” says Aaron Shirley, Public Relations Manager for The James Chicago.

“The art here is very relevant to the time and what it is going on.”

While traveling, it is an absolute must—no matter how busy my schedule—to visit at least one museum or gallery. So, staying at The James was a perfect choice for my weekend visit. The hotel has partnered with the notable MoniqueMeloche Gallery and The Art 1 6

Institute of Chicago to curate permanent and rotating collections. Art abounds.

Walking to the elevators, you immediately notice “Room 28”, an installation by Illinoisbased artist Joel Ross. Consisting of a colorful pile of vintage suitcases containing the remains of a now dismantled Texas motel room: the piece was one of the hotel’s first purchases. Throughout my stay, I stop to look at it each time I pass by.

Art permeates all areas of the hotel, including The Jimmy, the hotel’s standalone lounge, designed by James Beard Award-winner Thomas Schlesser. Also a local hotspot, with a rotating set of popular DJs, the space is peppered with modern pieces by the likes of Steve Icorn and Heather Gable.

When dining at David Burke’s Primehouse, the celebrity chef’s modern take on the classic American steakhouse at The James, patrons are also surrounded by art. Pieces by Todd White depict scenes of cool nights and good times fueled by Martini’s, lively conversation, wine, food and laughter. Its art imitating life.

All of the studios, one-bed apartments, lofts and penthouses at The James are designed as residential spaces. In my loft, I notice that the dining area artwork by globally acclaimed, New York City-based photographer Paul Solberg (his work is in every room with a dining niche). Despite my nearsighted nature, I notice cool imagery on the cover of the guest directory booklet on the nightstand in bedroom. With closer inspection, I see that the gorgeous, yet aggressive canvas is clearly influenced by the 80s downtown New York art

scene. After a few taps on my iPhone, I learn that the artist responsible for this beautiful jacket is Bobby Hill. A New York City native, Hill’s style is a blend of pop art and graffiti.

Once an illustrationist, his discovery of Andy Warhol converted him to the screen printing process. All guest rooms feature art and photography by celebrated artists such as Wolfgang Ludes and Michael Kenna and a large scale rendering of the Chicago skyline

The magnum opus piece, of The James’ impressive collection, is a mural by Southside native Demarcus Purham that graces the entire back wall of the hotel’s special event space. Purham, 17 at the time the piece was commissioned, went on to attend the world-renown Parsons School of Design in New York. His work for The James is a breathtaking baroque drawing of Chicago, fully drawn in white pencil on a charcoal black background. The recent racial issues plaguing the city, and the remnants of the social problems of Chicago’s notorious past, make Purham’s intricate composition just as subversive as it is harmonious.

After walking miles upon miles on catwalks around the world and being the voiceless face for countless brands and cosmetics lines, Selita Ebanks is now focused on turning the cameras onto a world not so beautiful. I guess it isn’t so uncommon any more for women who have been asked to just shut up and perform, or look pretty and smile for the camera, to want more out of their careers and to want to make more of an impact on society.

During our 45-minute phone call, it was obvious that Ebanks will be quiet no longer. She has found her voice and has something profound to say. I also got an immediate sense that Ebanks wasn’t shy about talking about her experiences, the unattainable beauty standards she was asked to promote, and the dark side of a beauty industry that is not only adversely impacting the health of women’s skin, but the environment as well.

UPTOWN: What’s new in your life?

SELITA: Wow, where should I start? Well, for starters a whole lot is going on in my life right now. I have been reflecting a lot on my past accomplishments, the current state of the world and the role I am currently playing in making it better. I decided that it’s time to add another dimension to my career, one that leverages my past experiences combined with my current passions to make an impact in women’s lives. I am embarking on a new entrepreneurial chapter in my career, focused on building something truly disruptive in the beauty industry.

UPTOWN: Are you launching a new brand?

SELITA: Yes. But I wouldn’t just call it a brand, it’s a platform, a movement for women.

It’s called “The Good Look.”

UPTOWN: So what is it?

SELITA: It’s a lifestyle brand dedicated to educating women about sustainable beauty.

It’s about creating a brand that they can trust.

UPTOWN: What beauty brands do you think are doing it right?

SELITA: Don’t get me wrong, not everyone is doing it wrong. There are a lot of great brands that are creating a new standard in beauty. I love trying new products and switching up my skin care and makeup routine. Right now I’m a fan of Sunday Riley, Fenty Beauty, Drunk Elephant, and Glow recipe.

UPTOWN: What’s the most important lesson you learned during and after being a Victoria’s Secret Angel and a supermodel?

SELITA: Although I wasn’t aware of this, in hindsight I’ve learned the most important lesson during my VS days was to always believe in myself and my individual beauty. Women are like stripes on a zebra, all unique and beautiful. We have to learn to nurture those stripes.

UPTOWN: What’s your opinion of what’s happening in the fashion and beauty industry right now?

SELITA: The fashion and beauty industry is very exciting right now.

Beauty is becoming more diversified and realistic. Designers and beauty brands are stepping out from the conventional “what is beautiful,” and realizing that when you are selling beauty to a woman, inclusiveness is a must.

UPTOWN: What led you to do this?

SELITA: As a fashion model I was able to have access to amazing beauty products and experts in the field, but couldn’t help but notice that there was a void in the industry. The beauty industry severely lacks diversity and a sense of transparency when it came to its products. Beauty brands haven’t always been inclusive, often perpetuating stereotypes around their idea of what beauty should be. The world has changed, consumers want to see themselves in the products they choose and want to align with brands with values. They want brands that are safe for them, the environment and treat all women as priorities. It’s my mission to help women find products and an approach to beauty that builds confidence from the inside out.

UPTOWN: What are the plans for it?

SELITA: I can’t tell you everything just yet, but I can tell you that we are launching a media platform, that will focus on distributing content that informs women on everything they need to know about sustainable beauty. We will be working with brands that share our same passion for change, to help educate and tell stories of women [who are] and products [that] are at the forefront of changing the industry.

We may even have our own products in the works! Uh oh, I think I may have said too much, lol!

UPTOWN: Do you think the beauty industry is creating an unhealthy standard for young girls?

SELITA: I think the beauty industry is an evolving industry. Because of social media the false image of beauty is being exposed and a new world of beauty is being presented, although it has always been present. I think young girls should understand to appreciate their individuality while embracing the luxury of enhancing ourselves with beauty products, but not forgetting their natural beauty.

UPTOWN: What direction do you think the beauty and fashion industries need to turn?

SELITA: I think the beauty industry is turning in the right direction with clean beauty. Organic brands like Juice Beauty and OSEA are a few brands on the forefront of new beauty, starting with skin first.

UPTOWN: What was the turning point for you that made you decide you want to make a change in the beauty industry?

SELITA: I was blessed with a career that has given me a platform and it wouldn’t be right for me not to use that platform for something positive. That was the true turning point for me during my recent period of self-reflection. How am I giving back, how am I making it easier for girls of various shades, ages, and skin types to feel good about themselves. Over the years, I’ve been a part of the beauty industry where I didn’t always feel like I was prioritized by the brands I supported or used. I want to be a part of changing [the] face of an industry and sharing my knowledge with women everywhere. I also come from a large family of women and they lean heavily on me for advice on what’s what in beauty. I want to be able to provide a variety of beneficial options for all women.

With so many African-American celebs embracing the game of golf, it’s officially no longer a moment.

It’s a movement.

Hip-hop artist Quincy Matthew Hanley, also known as Schoolboy Q, was exposed to the sport of baseball when growing up in his South Central Los Angeles neighborhood and, after practicing, became really good at it. He was also an academic standout (thus the rap moniker), finding school easy to navigate.

So when his friend bet him that he couldn’t teach himself to make a golf birdie—one of the toughest shots in the sport—within two years, of course Hanley accepted the challenge. “He bet me, and in less than ten rounds I made a birdie, sank a 70-foot putt, and it was over.”

That challenge ignited a love affair for the game for Q, and he hasn’t looked back since. He will admit that he was never familiar with the game, recalling only the names Tiger Woods, Phil Mickelson, and Arnold Palmer (“and that’s just because of the drink.”) Now he plays regularly, and even though the game is humbling, he won’t stop until he excels at it.

And until he’s able to help youth from inner cities like South Central become exposed to the game as well. “Growing up, I never even seen a golf course in my life until I made some money,” he recalls. “So that’s one of my goals now, as an artist. It costs so much money to play and I’m looking for help to try and get kids some golf clubs, whether they use them or not, so they know that they can play.”

His story is similar to that of so many other African American celebrities who took up the game of golf in recent years. What started for most as an homage to Tiger Woods, who burst upon the PGA Tour in 1997 and, as a rookie won his first Masters Tournament, has now become a platform for them to hone their skills on the greens and promote the game to the next generation.

“Ask any celebrity here,” stated comedian/writer Chris Spencer earlier this year at the Anthony Anderson Celebrity Classic, “and they’ll tell you that as soon as they saw Tiger win that green jacket, they realized that we could play this game.

A lot of us went and bought clubs and headed to the driving range that same year.”

“Golf was a white man’s sport,” according to legendary Motown singer Smokey Robinson. “Black and Hispanic kids didn’t know anything about golf. Now that they’re being exposed, it gives them the chance to play and to be more informed.”

Hollywood stalwarts Anderson, Steve Harvey, and Cedric “The Entertainer” saw early on just how important it was to have diversity in the game. The trio began their own love affair with the game before taking that love to greater levels, each hosting annual tournaments where their celebrity friends can both participate on the course and raise funds that will benefit various organizations, with the bigger goal being exposing youth to the game.

Their support of organizations like the APGA and My Brother’s Birdies provides even more ways for golfers of color to work on their game on some of the country’s most famous courses. “All people are capable of great things when they are given access to it, specifically information and resources,” according to actor/author/activator Dondré T. Whitfield, who also serves as a Lexus ambassador for the APGA. “The game of golf, for people of color is no different. Lexus supporting golfers of color is important for the game to be grown organically, and to have the game begin to look more like the country: diverse.”

Being exposed to the game when he was young was also important to Los Angeles Clippers’ head coach Glenn “Doc” Rivers, as he recalls spending time on the course with his dad in Chicago growing up. “My dad golfed. He would go to the public courses, and introduced me to the game. But I never played. I was his caddy, and I learned so much about him and about myself while we were out there.”

Mentorship programs set up by African-American golf organizations like the APGA Foundation, which is also supported by Lexus, are priceless. Like Schoolboy Q and Rivers’ dad, they strive to place golf clubs in the hands of those who wouldn’t have access any other way. However, the APGA goes further, hoping to establish lifelong bonds with those they mentor, setting up careers in the game instead of just moments.

According to Whitfield, playing the game makes a difference in other ways as well. “I often explain to people how instrumental the game had been in teaching me about myself,” he stated. “[Golf ] is truly a gentleman’s game of integrity. It teaches me a great deal about the people I play with as well.”

Seeing golf as a way to learn about life, as a way to challenge themselves, and as a way to give back through raising funds and mentorship shows that African American celebrities are seeing beyond the greens, creating a culture that will inspire even more diversity in the future.

Inviting, cheery, low-key. In many ways, Anguilla is still the same place it was when I visited for the first time in 2004.

Certainly, it’s a more popular destination than before, in part thanks to The Bachelor fame; resorts like the Viceroy and Cap Juluca, where A listers converge, also helped to put the island on the map. There are the requisite new developments, 18hole golf, and lazing on the beach, but shoppers and party hounds would probably do better elsewhere.

However, if you are the type who “will travel for food”—get thee to Anguilla.

When there, expect to have an epiphany of some sort. For me, it was rejoining the ranks of fish and poultry eaters after a 12-year stint as a vegetarian. There was no way I could leave without “been there, ate that” bragging rights; as a city girl, I couldn’t pass up the chance to sample fare that went from ocean to table in 60 seconds.

Back in ’04, I made the rounds to E’s Oven, Straw Hat, and Santorini. But this time around I wanted to take a deeper dive and really get familiar with Anguilla. After all, the best way to get to know a country is through its food. Not unlike the history of African American food, Anguillan cuisine tells a story of perseverance and new beginnings.

To quote historian Colville Petty, “Life in Anguilla was very harsh for a long time.” The British government considered evacuating the island in the 1840s because of drought and famine, and an unsteady economy persisted throughout the 20th century. Survival meant making do with whatever was on hand—especially in the kitchen. Rice was paired with grow-anywhere pigeon peas to become the national dish of rice and peas. Another national staple, fish and fungi, was created by matching abundant local seafood with humble cornmeal mush.

No electricity, running water, or paved roads existed in Anguilla until the 1970s. The first trickle of monied tourists started in the mid-’80s, and since then, the country has become a playground for the well traveled.

Tasty’s draws a mix of local regulars (like the owners of nearby Blanchards Restaurant), in-the-know tourists, and hard-to-please critics. He is one of the nation’s culinary stars who started at the country’s first resort before going on to train in France, and then came back home to open his own venue. The server responded to the praise with a “what did you expect” shrug of the shoulders. “Arroz con gandules is one of the national dishes.” He begrudgingly shared that coconut milk is involved, but I am convinced you just have to have Anguillan DNA to make it just right.

GETTING AROUND The hotel concierge can arrange for cab service anywhere you’d like to go, but keep in mind even short trips will quickly put a dent in your cash supply.

I was born in Harlem and raised in New Jersey by a single mom who taught at a very young age the importance of a strong work ethic. My only dream was to be an artist, but I soon realized that just putting in hard work wasn’t enough, I had to knock down barriers to have my work shown at galleries.

A gallery owner once said to me, “Alonzo we know you can paint masterfully, but if your work was put in a time capsule and opened up in 50 years, would there be anything in it that provided insight about the era you were a part of?” This statement stuck with me for many years and it wasn’t until my mother lay in a coma for two months, that the statement began to resonate with me on a deep level. For several weeks, I sat at the bedside of my mother as she rested in her hospital room. I could feel so many emotions, and at the same time feel numb. The repetition of prayer, finding hope and expressing love to my mother became all that I could give to make it through the day. The experience of walking down the hallway, the smell of a hospital, and the sterile look of each room was all sad. One day, however, the same sadness came over me and this time fear, anger, and rage came too as I heard the call “CODE BLUE” over the intercom. CODE BLUE means a life is being lost and needs resuscitation and I heard “CODE BLUE” every single day I visited the hospital, but on this day, it was different.

In the reveal of the piece Daughters of the Movement, I had the opportunity to watch the faces of my collectors, supporters and individuals who have been by my side since day one take a breath, a pause, and then smile. I was witness to the feeling of joy, liberation, and celebration of Black girlhood that some of the attendees experienced.

As seen and experienced in Code Blue, my work overall tells the audience about my love and gratitude for Black women, and the strength embodied by Black women and Black girls. I was raised by a strong Black woman and have the privilege of being in the lives of multiple Black girls. Each day I learn how I, as a Black man, know many of the things that I know because of Black women. I too believe that a Black girl will save the world, and my work seeks to show the dynamic, unwavering, and unapologetic features of Black women and girls.

Art is not about painting pretty pictures to match your home decor. It’s about creating work to touch the soul of our people.

This is where the Code Blue series began. “CODE BLUE” indicates an emergency, that someone is dying, that someone has stopped breathing, and that life could be over. “CODE BLUE” is Black—Black women, Black men, Black trans folks, Black youth, Black aunties, Black cousins, Black teachers, Black friends, Black business owners, Black, Black, Black in America. We are constantly living in a state of “CODE BLUE.” As a Black man, raising two Black sons, with a Black wife, and Black nieces in the current political climate that exists in the United States has made me concentrate on issues that are relevant today.

I want people to engage with my work in educational settings, inside their homes, and in galleries and museums. I hope that my work provides people with the ability to see themselves, discuss systemic issues, and feel in new ways. When I am no longer here, I want my work to tell the stories of the right now.

Imagine that…

Everything that happens is for your good. Is it hard to wrap your mind around that? I must admit, some days this concept is completely foreign to me. I am lost in the world of mundane to-do lists, stressing over the kids’ activities, cleaning house and paying bills.

Before long though, my spirit calls. I am drawn to certain books, places, people… and they give me the message to return to love. To return to my passion. To remind me that life is absolutely on my side.

I spent several days in the deserts of Egypt with my most profound spiritual teacher, Michael Bernard Beckwith.

Every single day I was gently pushed to remember who I really am. As I gazed upon the magnificent structures, the pyramids, temples, birthing chambers

and goddess sanctuaries, I was encouraged to look upon them as if I were a part of the energy that created them.

The excellence, the precise execution of artistic genius, the devotion, the mastery.

I was to look upon these wonders as if they were my mirrors.

That little voice inside of me that usually barks, “You’re not good enough!” was silenced. My stories of lack, of unfairness, of being molested and mistreated, all burned away in the heat of this arid land as I was constantly reminded by everyone around me that I am a queen. The desert fire initiated me into my greatness. It reminded me that regardless of how hot the fire, life is not against me. Life is absolutely on my side.

At dawn we travel to Cheop’s Pyramid, one of the Seven Ancient Wonders of the World, the Sphinx and Valley Temple. Built over 35 centuries ago, the towering pyramid stands majestically on a desert plateau with two slightly smaller pyramids erected to preserve their bodies and treasures for the afterlife. East of the Great Pyramid is the Solar Boat Museum housing the spectacular funerary boats placed at the disposal of the king for his journey of Day and Night in the afterlife with the Sun God Ra. Then we proceed to the Necropolis of Sakkara, city of the Dead, to see the famous Step Pyramid of King Zoser and the Wall of Cobras. Lodging: Nile Fairmont Hotel. * We woke up at 3am in order to arrive at the pyramids before they opened. As the bus slowly made its way up the dirt road, the majestic structures revealed themselves on the horizon. I could hardly contain my excitement as we drew near. Reverend Michael led us into the main pyramid like an exodus to the Promised Land. The stonewalls arched around us as we walked through the entrance. Up ahead I saw a few people shaking their heads refusing to continue.

The walls led to an underground tunnel with a steep incline to journey deep into the belly of the pyramid. We explored the ins and outs of this ancient structure, ending up in the King’s Chamber. There, Reverend Michael and Akili led us in meditation. An epic

beginning to the trip that would eventually transform my life.

DAY 2

Morning transfer to Cairo for our flight to Abu Simbel, site of the magnificent Temples of Ramses II and Queen Nefertari. This is a breathtaking experience. An engineering marvel, the great temple was moved up the hillside to save it from flooding when Aswan’s High Dam was built. Fly to Aswan and transfer to the hotel. Lodging: Aswan Moevenpick Hotel.

The Temple of Rameses and Queen Nefertari were indeed breathtaking. The massive statues towered over us in all their glory.

The Nubian guides ushered me to secret nooks and crannies that had sacred symbols.

They would demonstrate simple rituals to do with certain hieroglyphic characters.

For example, when I came across a winged sun disk I should touch the disk then place my fingers on my third eye in the middle of my forehead, then touch the disk again and touch my heart. This ritual keeps you connected to your intuition and feelings.

DAY 3

Aswan Nile Cruise. Transfer to your cruise ship that will be your floating hotel for the next three nights. After lunch we sail around Elephantine Island and visit men, women and children in the Nubian village. Lodging: Moevenpick Royal Lilly Ship.

Before we departed for our trip to Egypt, Josephine had asked us to bring an extra suitcase full of items that the Nubian children could use. I stocked up on backpacks, shoes, clothes, notebooks, diapers…the www.uptownmagazine.com 4 1

list went on. As our boat neared the harbor, beautiful Nubian women in traditional garb walked back and forth on the deck. Some were holding handmade dolls, shawls, dresses and small statues that they were eager to sell. When they saw our suitcases full of gifts, the women did a traditional call of excitement. We brought our gifts to a small school in the middle of the village. They served us tea, water and hibiscus juice (yum!). We did not anticipate the mayhem that would follow. The women ran into the school frantically grabbing and claiming the gifts. Amidst the chaos, a musician began to play his drums. I walked up to him and started dancing. Three Nubian women surrounded me and started to show me their moves. I was better able to process my “Black Friday” experience with the beautiful sounds of the Nubian drum.

God. Standing serenely on a hilltop, the site offers an incredible view over the Nile. Tonight we will have a Nubian, Galabeya and Pharonic Costume Party.

DAY 4

Morning visit to Edfu, an exhilarating carriage ride takes you through town to the Temple of Horus, the Falcon God. Return to your ship and sail to Luxor and Karnak Temples, a holy city of pylons, hypostyle halls, colossal statues and obelisks built over many centuries and dedicated to the God Amon-Ra, his consort Mut, and their son, Khonsu. The Temple of Philae is dedicated to the goddess Isis, the wife of Osiris and mother of Horus. As I stepped foot into the temple, I instantly felt at home. Although we were not “allowed” to pray, an armed guard took me to a side room to meditate. He told me that it was a birthing room for Isis.

I gathered a small group and we spoke into existence the dreams that we wanted to birth.

Luxor was particularly special for me. The sphinx-lined path, goddess chamber, massive obelisks and magnificent statues kept me in awe.

There was a hieroglyph on the wall of the goddess chamber that depicted a young woman and man being held up by four women. I was reminded of how my sisters and girlfriends have supported me throughout rough times. I sat at the foot of the picture in gratitude of my journey.

the roof. Many of the sites that we visited had statues and carvings that were defaced. The Temple of Hathor was decorated with so many faces of the goddess that the invaders must have tired from defacing each depiction of her and left several for us to admire.

DAY 6

After breakfast we transfer to Hurghada by bus. Upon arrival check-in at the resort. Remainder of the day at leisure. Lodging: Moevenpick Resort Hurghada.

Early morning we visit the complex of Karnak Temple, a vast open-air museum, and the second largest ancient religious site in the world, after the Angkor Wat Temple of Cambodia. We then cross the Nile to “Thebes” Luxor’s West Bank. Sightseeing includes the Valley of the Kings and Queens where some 64 of Egypt’s Pharaohs had their palatial resting places hewed into the sheer rock.

DAY 8

The Red Sea…magnificent. White sand beaches and turquoise water framed the Hurghada beach resort off the coast of the Red Sea. The next few days were packed with water sports, sailing, snorkeling, parasailing, jet skiing and lounging at the beach.

The sun beat down on us as we took a tram down a dusty road to the Valley of the Kings and Queens. I covered my head with a white scarf to shield me from the sun as we walked up to the tombs. The management only opens four tombs at a time because the humidity from people walking in and out of the rooms significantly deteriorates the structures.

I stopped in my tracks when I walked into the first building. All of the original paint remained on the numerous hieroglyphics decorating the walls, tombs and statues. With this reference, I was better able to imagine how the other temples might have looked 2,000 years ago.

Before our departure back to the US, we paid another visit to the Pyramid of Cheops. Reverend Michael, Akili and Reverend Cheryl led us in prayer and meditation throughout the trip. Our final meditation took place in the King’s Chamber. Reverend Michael urged us once more to remember who we really are. As we sat on the stone floor, many of us felt the power of remembering our true potential. Images of the many temples, pyramids, tombs, goddess chambers and obelisks ran through my mind.

At that moment I felt that life was absolutely on my side. I felt that this journey helped me remember that my ancestors built miracles…and I am here to do the same.

DAY 7

Africa was always a part of my wildest dreams.

So, I was elated to find myself on a seven-hour Royal Air Maroc flight across the Atlantic to the fabled Casablanca and then embarking on a culinary journey with Access Trips, which provides extraordinary adventures for thrill seekers of all kinds.

ssaouira, a charming fishing community, was our first stop after the nearly fourhour drive from Mohammed V International Airport near Casablanca. At first glance, the town looks frozen in time and unchanged for centuries— until someone zooms by on a motorized scooter since automobiles aren’t allowed in the Essaouira medina.

The carefree attitude of the whole town immediately rubbed off as I eased into holiday mode. Spending an entire day at one of the many cafes enjoying French pastries and Moroccan mint tea wasn’t at all uncommon. I still have pleasant memories of the fresh sardines, grilled to perfection at one of the many stalls lining the shore, and French fries I had there. On the other side of the Atlantic, sardines, by the way, grow larger than an average adult’s hand.

But it was only the beginning. The next day I rode a 7-year-old camel named Samsa along the beach, visited an Argan oil cooperative where I met the women who make the oil for consumption and beauty products, as well as sampled sfinge, a delectable Moroccan treat that looks like a doughnut but tastes more like Caribbean Johnny cakes or fried dumplings.

PREPARE FISH TAGINE WITH CHERMOULA FOR YOUR OWN TASTE OF MOROCCO.

Prep time: 40 minutes | Cook time: 90 minutes Serves: 2 Ingredients: CHERMOULA 1 tbsp parsley, finely chopped 1 tbsp tomato paste 1 tsp garlic, finely chopped 2 tbsp sweet paprika 1 tsp hot paprika 1 to 2 tbsp cumin, to taste 1 tsp turmeric 1 tsp ground ginger 3 tbsp olive oil 3 tbsp lemon juice 6 tbsp water salt and pepper to taste

In the rooftop kitchen of the Riad Mimouna (riad-mimouna.com), which is more like a quaint bed and breakfast than a hotel, I prepared my own fish tagine with chermoula, a marinade that is the foundation of many Moroccan fish dishes.

That night, I kept smiling inside as I listened to a Berber band while enjoying the dinner I’d cooked myself. The fish and vegetables had steamed in the chermoula for 90 minutes, so it was tender and took on the flavors of cumin, paprika and turmeric. As the infectious music of the band continued, I couldn’t resist tapping my feet and swaying my shoulders. I somehow wound up dancing with the lead singer.

Back in my room on the second floor, by myself, I opened the windows and was greeted by the sounds of the raging sea as I soaked in the breathtaking view. There was nothing but a 50foot drop separating my room from the water.

As I settled in for much-needed rest, I welcomed the ocean’s lullaby and reminisced on my time in the town and eventually drifted into a deep slumber.

FISH TAGINE 2 fish steaks (mild white fish, such as sea bass) 1 to 2 medium carrots, thinly sliced 1 to 2 celery stalks, thinly sliced 1 to 2 large potatoes, thinly sliced 1 tomato, seeded and thinly sliced 1 bell pepper, thinly sliced 1 handful red olives Preparation: CHERMOULA Mix all ingredients in bowl. Marinate fish steaks 10 minutes.

FISH TAGINE Arrange carrots across bottom of tagine. Crisscross celery on top of carrots. Place potatoes on top of celery, forming a bed for the fish. Remove fish from marinade and place on top of vegetables.

Reserve marinade.

Place bell pepper and tomato over fish. Top with reserved marinade and garnish with olives. Cover tagine. Cook over low to medium-low heat for about 90 minutes or until potatoes are tender and fish flakes with a fork. If cooking liquid hasn’t thickened, ladle into a saucepan and reduce using high heat, then pour over fish just before serving.

Later that evening, at the Kasbah Omar (kasbah-omar.com), in the Berber village of Anrar in the High Atlas Mountains, steady hands greeted our group and helped us navigate the rocks leading to the front door. Berbers often build their homes on the sides of the mountains, so what looks like a collection of boulders could very well be the path to someone’s abode. The staffers at the Kasbah Omar were some of the most gracious and welcoming people I’ve ever met in my travels, and my room, with its huge, comfortable bed and a bathroom of natural Moroccan rock studded with fossils from floor to ceiling, was the definition of contemporary luxury.

Visiting the Monday Market in Tnine Ourika Valley was a special treat. Villagers buy vegetables, meat—including animal heads, which I couldn’t bring myself to look at— prepared food, even shoes for their donkey and can have a tooth pulled at this outdoor bazaar.

The dentist even has a side hustle of tying up tourists and pretending to extract a tooth, while a fellow tourist snaps a photo—all for a fee, of course. With my teeth intact, I lunched on delicious Berber barbeque beef and lamb that reminded me of the shish kebabs street vendors sell in New York City.

For my next cooking lesson, I made pastilla, a Moroccan meat pie of sorts comprised of a flaky pastry, chicken, egg and sweet spices like cinnamon, in the terrace kitchen of the Kasbah Omar. It was heavenly cooking under a canopy, as the gentle breeze spread the flavorful scent.

Marrakech was the final leg of the trip.

Highlights included fashion designer Yves Saint Laurent’s hidden gardens and the harem quarters of the Bahia Palace, where the always modest mogul Diddy celebrated one of his birthdays in grand fashion. The souk, or openair market, in Marrakech was another festival of aromas, people, wares and scooters. After picking up an emerald green leather purse, silver earrings, a bracelet and a tunic, I stopped through the herboriste, a shop that sells holistic remedies for everything from snoring to erectile dysfunction, as well as makeup--a brilliant red lipstick, made from poppies and packaged in a mini tagine pot, was a great find.

We completed our Moroccan journey at the upscale Le Comptoir Darna (comptoirmarrakech. com), which features a fusion of traditional Moroccan, French and American cuisine.

Blanketed beneath millions of stars, I topped off the night on the patio with a mint-flavored hookah.

Luck may have brought me to Morocco for my first visit, but the fresh seafood, gracious people, calming environment and amazing culture will definitely bring me back.

Marcus Samuelsson, acclaimed chef, author, and TV host, is bringing clean drinking water to women around the world, and he wants you to do the same.

BY NICHOLE FRATANGELOA “The water crisis affects more than 60 million people globally”, explains Samuelsson, “and hits women and children especially hard. My siblings had to walk an hour and a half to get clean water,” he recalls. After experiencing their struggle firsthand, Samuelsson committed himself to helping relieve the global water crisis. It’s the reason he’s involved with the Buy a Lady a Drink Campaign, a partnership between Stella Artois and water.org that aims to provide clean water to those in need. To date, the Buy a Lady a Drink campaign has helped more than five million people throughout the world. In Honduras alone, water. org has positively impacted more than 40 communities, and the campaign plans to extend efforts to El Salvador and Guatemala.

“What I love is that you can just purchase a drink…and you can change someone’s life for the next five years,” says Samuelsson. For every $13 limited-edition Stella Artois chalice sold, $6.25 is donated to water.org. Samuelsson points out, however, that the global water crisis won’t be solved overnight. Rather, it will require thoughtful efforts and sacrifices by all.

“My dollars matter and my choices matter,” he says, noting that when shopping for his restaurant, he only buys ingredients that reflect fair practices and support environmental issues. Similarly, he urges consumers to educate themselves, get involved, and donate to the cause. For millions of women and children, it could be the difference between life and death.

Every 90 seconds, a child dies from a water-related disease. For Chef Marcus Samuelsson, author, TV host, and owner of Harlem’s acclaimed Red Rooster restaurant, that number isn’t just heartbreaking—it’s close to home.

Samuelsson was born in Ethiopia, an East African country that has struggled to provide clean drinking water to its residents for decades. Other countries include Peru, Chile, Spain, and much of North Africa and Eurasia.
