New World Grand Bali Resort to Open in 2017

PT Mugie Bali Indah and New World Hotels & Resorts’ New World Grand Bali Resort will have a total of 413 units, which consist of 220 Suites and 108 Grand Suites, plus 85 Luxurious Villas.

On 30th March 2015, an agreement was struck between PT Mugie Bali Indah and New World Hotels & Resorts, a Rosewood Hotel Group brand, for the development of the five-star luxury New World Grand Bali Resort, which is destined to join the ranks of Bali’s most sought-after properties. The signing took place in Jakarta, Indonesia. New World Grand Bali Resort is the first New World Hotels & Resorts property in Indonesia and is scheduled to open in 2017.

New World Grand Bali Resort will occupy a whopping 10.8 hectares of land in the exclusive Pecatu Dreamland development, already slated to become one of the most happening spots on the island. Furthermore, the survey also finds that, 77% of working age people prefer to phase into “semi-retired” period — a period when an individual starts to

The last 11% wants to work the same hours, but in a different job. The survey involved 1,000 participants aged 25 and up, both still working and retired.

Faith No More

American rock band Faith No More confirmed its seventh studio album, Sol Invictus, is to be released in May 2015. Named after the Roman sun god and a patron of soldiers, Sol Invictus will be the band’s first album since 1992’s Angel Dust not to feature a change of lineup. The album marks the group’s fifth collaboration with longtime producer Matt Wallace, although it also happens to be the third album he did not produce, his involvement being reduced to helping with the final mix.

Muse Drones is the upcoming seventh studio album by English alternative rock band, Muse.

The album was co-produced by the band and AC/DC producer Robert John “Mutt” Lange and will be released in early June 2015. With 12 tracks, Drones is the follow up to 2012’s The Second Law album. The new track, entitled “Dead Inside”, is a strippedback pop-rock affair, arriving more than a week after the three-piece band shared their first Drones song, “Psycho”. Matthew Bellamy, Christopher Wolstenholme and Dominic Howard have confirmed a number of festival dates, including a tour and several promotions for Drones.

s you would expect, the Anantara Seminyak Resort & Spa, Bali, launched its brand new rooftop restaurant, the MoonLite Kitchen and Bar, in the grandest – and most fun – manner, with a fabulous opening party hosted on 13th March, 2015.

The MoonLite Kitchen and Bar replaces Anantara’s former SOS Supper Club, for years a huge part of trendy Seminyak’s happening social scene. To help celebrate the unveiling, more than 670 VIP guests attended this memorable party, including top Indonesian celebrity Farah Quinn.

On the Seminyak beachfront and up on the five-star resort’s completely revamped rooftop level, guests were generously treated to free-flowing champagne and delicious canapés, as well as to a night

of amazing entertainment, including a fashion show by ARTURRO, acrobats, body-painted dancers and fire-dance performances by the UV Dancers.

Guests then got to dance the night away courtesy of DJ Niano, DJ Laura and the Massive Soul Band. Judging by the large number of attendees – each looking the epitome of sophistication attired according to the black dress code – and the celebratory ambiance, a great time was had by all.

Villa Tirta Nila is a gorgeous, modern, fully staffed two-storey beach house located on the southern outskirts of Candidasa, a delightful resort town on the east coast of Bali and just a 90-minute drive from the island’s international airport.

Built about a year ago, this splendid and beautifully decorated seafront property includes a large infinity pool, four en-suite bedrooms, a substantial lounge with kitchenette, two dining spaces, a multimedia room, extensive gardens with a manmade beach and, in the basement, the main kitchen and staff quarters.

The interior is wonderfully welcoming and open in its design, with three very comfortable and beautifully appointed double bedrooms and one twin bedroom, which, with the additional beds available, can sleep up to 10. All the bedrooms have large walk-in wardrobes and delightful en-suite facilities.

The vast master bedroom en-suite also features an oversized bath, whilst the downstairs bedrooms have private outdoor rain showers.

Like the lounge, all the bedrooms have large glass doors that open onto balconies or directly into the garden. The rooms are not only air-conditioned, they also include a large ceiling fan.

The villa benefits from a family media and games room, which, like the rest of the villa, is comfortable and a perfect place to kick back and relax, perhaps taking in a TV show from the cable channels available.

The overall design is ideal for a beachfront villa, with high, Balinese-style ceilings ensuring good air flow, stone patios, paths and natural wooden decking. The light-coloured interior walls and flooring are lifted by a mix of antique wood and stone artefacts, framed jewellery and colourful contemporary art.

Favourite Feature: It’s easy to be blown away by all the outstanding villas at Semara, but my personal favourite is Villa Tamarama. Built in a neo-colonial style more usually found in the Caribbean, Villa Tamarama is capacious, bright and extremely comfortable. With two swimming pools, an oversized bar and enclosed poolside entertainment area, this villa is ideal for parties or special celebrations.

With 7.5 acres of cliff-front gardens, its own helipad and only seven unique and lavish five-bedroom villas, Semara is an exclusive and impressive resort.

Q: First of all, congratulations on your wonderful success over the years with your charter business in Bali. Thank you for adorning the seas of Bali with wonderful luxury vessels such as the Burjuman! Can you please tell us in brief how you first started this business?

A: Thank you, although we’re still a very young company with a lot more to do as we grow and hopefully bring more beautiful boats to Indonesia.

My family and I relocated to Indonesia some five years ago, after spending 13 years in Dubai. We are from Perth, Australia, 94 ASIADREAMS

originally, so have always had a love of boats and the water. When we relocated to Bali, we bought one of our boats, Burjuman, with us from the Middle East, for our private use.

We had some long-time Balinese friends help us with the Burjuman when we brought her to the island. They worked for us while we cruised around the spectacular waters of Bali and Lombok and other parts of the archipelago. These friends, who now run the operational and on-water side of our Luxury Charter division, discussed the idea of starting this business together and targeting a particular area of the market. As they have been on boats throughout Indonesia all their lives and are some of the most safety

conscious people I have met here, I knew from the outset that we could provide a level of safety, quality and service from the start.

We didn’t want to start another company that simply competed in the same field and level as the existing players, but one that would strive to ensure success by delivering a service that we are proud of, in every aspect.

We then commenced construction of a custom-made new 42 ft sports cruiser, Rhino, to add to the fleet.

Q: Could you share a little bit about some of the most memorable experiences for you in the business so far?

Q: We’ve had the pleasure of working intimately with the Burjuman. Could you tell us the background story on how you came to acquire such a fine vessel?

A: We host many celebrities, dignitaries and VIPs on our charters and have provided many memorable moments, however we pride ourselves on discretion for our guests, so unfortunately can’t share these with you! There have been many memorable experiences, from arranging surprise sunset marriage proposals, being part of the set for television commercials, to arranging a convoy of private jet skis for a member of the royal family. Every day I get to spend on a boat is a unique experience. The last time we had a staff party, when I looked at so many happy smiling faces, although simple, it was one of my proudest moments.

Q: What are some of the most challenging and the most rewarding aspects of running your own successful luxury charter business?

on our goal; to provide guests and visitors to the island with unique customized experiences for the best day out on their holiday, or the best holiday of their year. We strive for this with every charter we do, in the service and experiences we provide, whether it’s for guests on a charter, the other owners of the vessels we manage, or within our own business, staff and crew.

Q: How did you come to discover this unique niche and what were the early steps you took to ensure this endeavour would thrive?

A: Our business is based around what our guests’ desires are for a customized charter experience. Our main point of difference is that we are a private charter company, where the vessel and crew are totally dedicated to our guests for their time on board. We don’t operate joint or shared group tours, so our guests are not bound to follow a set itinerary

A:The two most challenging things are probably maintaining everything with our vessels in a difficult environment to ensure we have the safest, cleanest vessels with topnotch equipment, and competing in such a dynamic environment. Most rewarding is seeing peoples’ beaming faces and receiving positive feedback when we have given someone the best day of their holiday and a memory that will last them a lifetime.

Q: It is obvious that people expect premium luxury products and services when they come to you for their luxury cruise needs.

How do you make sure that you constantly deliver what is best amidst a growing market such as this?

A: I guess we just try and remember that our primary aim is to be proud of the service, the quality of our product and facilities we offer. Our response procedures with guests are almost immediate and always timely – 24/7. We are known for our onthe-ground relationships and ability to pull strings for exclusive experiences. We partner with suppliers and agencies that we have

Q: What’s your take on the current state of your niche in terms of demand and competition? How are you weighing these two factors and what are your future plans to stay ahead?

A: Indonesia is a very dynamic country and any industry here is always growing at a pace, as is the competition in that industry.

The maritime industry here, particularly in the pleasure cruise market, has an enormous amount of untapped potential with thousands and thousands of untouched parts of the country to explore. It’s going to boom as regulations and restrictions are relaxed and modernized. Competition will boom as well, which is good for the guests, and service will improve. I think there are great times ahead for everyone. In so far as how to keep ahead of all of this, we’ll be innovative, we’ll understand what people really want, we anticipate luxury trends and seek out novel experiences and unique destinations, we’ll provide service and value above and beyond, and we’ll keep being proud of what we do every day.

Q: What do think makes the perfect luxury cruise experience?

A: The perfect experience is whatever suits you!

Q: You work hard in a leisure and luxury business to accommodate the demands of your clients for a unique and premium experience on a daily basis, but what do you personally like to do to unwind?

A: Doing this is pretty enjoyable; it’s not like reporting in to a 9-5 job with a horrible boss, so it may sound a little corny but I sort of go to work to unwind!

ith more than 30 years’ experience, Patrick Beck has worked in international luxury hotels, on cruise ships and in F&B across Europe, America and the Middle East. His diverse background, passion and dedication has him taking a vital role in developing the property, guest satisfaction, quality F&B service and numerous other aspects of Hotel Borobudur Jakarta.

Q: Firstly, sincerest congratulations on your new role as General Manager of Hotel Borobudur Jakarta. With your previous position as General Manager of Discovery Kartika Plaza Hotel in Bali, can you share the story of your career and experiences so far?

A: Thank you. My appointment in Bali was my first time in Indonesia and I am very happy that within two years, the company trusted me to lead their bigger property in Jakarta. I have been working with Four Seasons, Accor and RCCL in different parts of the world and after more than 35 years in the industry, I’m still very energized and have no plans to stop anytime soon.

Q: You’ve worked with quite a number of luxury hotels and cruise lines over a variety of brands and target markets. What prompted you to work for Hotel Borobudur Jakarta?

A: After managing our five-star sister hotel in Bali, the Discovery Kartika Plaza Hotel, after two years I was asked to manage our flagship hotel, the iconic Hotel Borobudur in Jakarta. How could I refuse the opportunity to manage one of the best hotels in Indonesia?

The transition has been very smooth, even if my new role is very challenging.

Q: Have you always known that you would make it big in the hospitality industry or was there a specific point in life when you realized that this was what you were meant to do?

A: I grew up in the hospitality business in France. My dad was a chef and I always enjoyed working with him. He was definitely very instrumental in my career choice. I attended the hotel management university in Bordeaux, France. After I graduated, I moved to the US and worked for the Four Seasons Hotels in Los Angeles and San Francisco. I always wanted to work for the best hotels and the Four Seasons was definitely the right place to be.

Q: Throughout your vast experience, what is the most challenging, as well the most rewarding, aspect for someone in your position?

A: The biggest drivers for me have always been the lust for adventure and challenge. There is no greater way to learn than to throw yourself into new situations with new cultures, people and tasks. This is why I decided to commence on a career in hospitality. There is a lot more

work to be done, but I cannot forget my function as a GM: to be involved with the guests and the operation on a day-to-day basis.

To do that, you have to be out there, to forge and maintain guest relationships, provide support to the employees and ensure the entire hotel team is continuing to provide the best service possible.

Q: With its long-standing prominence as a luxury hotel in Jakarta, Hotel Borobudur is well known for its high-quality services. How has this influenced your leadership approach and what further improvements can we expect now that you’re at the helm?

A: The foundation for success is to love what you do, no matter what business you’re in, and to be truly focused and dedicated to achieving high goals. It is also important to have well-trained and educated employees, who are equally determined to provide the best service.

This combination has led to Hotel Borobudur Jakarta garnering several awards and accolades, as well as a very high guest return rate over the past 41 years. At the present time, it is a competitive market in the hotel industry, so it is very important to exceed guest expectations through personalized service and new innovations, especially with technology.

Q: What is the future like for Hotel Borobudur in, let’s say, 10 years?

What big plans or major changes are you planning for the hotel?

A: The future looks very promising for Hotel Borobudur Jakarta; it is still going very strong after 41 years of dedicated service in the luxury hotel industry. We always have to focus on improving our guest services and facilities. Several projects are in the pipeline, including

a full renovation of our master ballroom and the opening our brand new spa facilities by the end of 2015.

Q: Would you kindly share your take on the state of the hospitality industry in this region and Indonesia’s role in its growth over the last few decades?

A: I have only been here for almost two years, so this is not an easy one to answer. But looking at how new properties come or open in Bali, it looks like the hospitality industry is really flourishing, especially in Indonesia. Big brands are also opening their doors in Jakarta. With a population of nearly 250 million, Indonesia is definitely a huge market.

But at the same time, we have to be careful to be able to maintain the ratio between rooms and demand, to make sure the market is not saturated and we do not overbuild.

Q: What are some of the key elements of success that will help Hotel Borobudur stay on top of its game in the high-end luxury hospitality industry?

A: Like in all high-end luxury hotels, some of the key elements of success are to maintain standards, to focus on details and to always try to innovate. Hotel Borobudur Jakarta has continued to raise its standards and we have developed the property as the years go by.

But we have kept a lot of the culture and service levels, and everything about what makes Hotel Borobudur truly special. Many hotels lose the old-school attention to detail. My management style is to focus on luxury service standards. I like good old inn-keeping quality standards.

Q: What are the most underappreciated selling points of Hotel Borobudur that you think people should know more about?

A: Our safety measures are sometimes deemed too high for guests.

We are located in the first ring for all vital installations in Jakarta, including the Presidential palace. Naturally, the safety of guests is our top priority. Some guests fail to understand this point.

Q: With your enviable track record in F&B, including as an executive chef, how involved are you in the day-to-day operations and quality control in the F&B department of Hotel Borobudur?

A: Too much, according to my F&B Director and my Executive Chef! I don’t forget that I started my career as a chef, in the back of the house, and I will always have a special bond with the F&B department. At Hotel Borobudur I mostly focus on kitchen best practices and monitor that everyone works with a clear understanding of guest satisfaction and respect.

Q: Can you tell us some of the most surprising or difficult complaints/feedback/requests you’ve heard and how did you manage them?

A: You can’t get away from complaints and requests. It doesn’t matter if you work in the best hotel in the world, you will still have some guests who find something they don’t like. The standards haven’t changed: hotel room maintenance, noise, room cleanliness, ventilation/AC, blocked toilets, etc. Today we are facing some additional ones: Internet, poor TV channel selection, credit card payment issues. One of the most surprising complaints I received from a guest happened not too long ago. I was called, during breakfast time, to one of our outlets, where a foreign guest complained openly that we had too many locals at the restaurant. What did I do? Walked away with a smile. There is no time for stupidity.

Q: What is your personal standard when choosing a hotel for your accommodation needs abroad? Would you care to share one or two delightful experiences that inspired you?

A: A boutique hotel that offers personalized service touches to their clients, in a strategic location. Cleanliness, of course, is top on my list. But also how helpful their employees can be with their client inquiries. Working in the industry myself, I do sometimes have certain expectations. I’m not really into big brand hotels. I’d rather explore some unique properties the area has to offer.

Q: What do you do when you have some time to unwind?

A: Relax by the pool, read and stroll around to get to know the area I live in.

From the talents of chef-restaurateur Will Meyrick, the Mama San restaurants have already wowed diners in Bali and Hong Kong and will surely do the same in Malaysia, with the all-new Mama San Kuala Lumpur launching soon.

T

he highly original Mama San restaurants appear to be starting a takeover of Southeast Asia: quite the mouth-watering prospect on the regional culinary scene, if the original Mama San Bali – one of my favourite restaurants on the island – is anything to go by.

Mama San is the organic creation of Will Meyrick: author, restaurateur, TV chef and celebrity (amongst others, a judge on Top Chef Indonesia) and without doubt, one of the most respected maestros on the Southeast Asian scene – in short, a unique culinary talent. From his native UK, to successful chef stints in Asia and in two of Sydney’s premier restaurants, it is, however, Meyrick’s passion for Asia’s cuisine, culture and heritage, plus a long-running fascination with the region’s vibrant street food culture and exotic spices, flavours and aromas, that has been this intrepid chef’s culinary inspiration. And it is Meyrick’s “street food chef” moniker that perhaps really defines him, setting him apart as a chef and restaurateur.

A self-confessed street food addict, Meyrick has repeatedly undertaken in-depth research of traditional recipes and culinary heritage during countless travels across Asia, garnering local cooking techniques and authentic recipes handed down the generations.

Cooking persuasions absorbed and admired

by Meyrick include Chinese, Indonesian, Indian, Malay, Singaporean, Thai, Cambodian and Vietnamese. He then melds them in a style that is now synonymous with his international reputation as the street food chef and his expanding restaurant empire.

Pellegrino Best Restaurant in Indonesia Award and ranked in Asia’s 50 Best Restaurants Awards 2014). With Sarong’s refined Euro-Asian elegance, Meyrick and team masterfully balance modern Asian signature dishes inspired by traditional, home-style recipes: an innovative concept of sublime Asian street food – without the street. Following on from the successes of Sarong, the Mama San concept evolved.

“The dream has always been to open a place that is more than just a restaurant,” explains Meyrick. “An environment where people can feel comfortable to eat, try their hand at cooking, or just lounge in the bar, only leaving for home when they feel like it. Mama San is for anyone who appreciates lounging in style and eating quality food, without it being too expensive.”

Meyrick emphasized, however, that he and his team wanted to create a unique space to complement Sarong, rather than compete with it. He then explained the choice of the name.

“Mama San illustrates the story of a madam of authority in an Asian gentlemen’s club, who takes care of her girls with affection. That’s pretty much how I see myself in keeping the authenticity of the cuisine culture in the restaurants I manage, by learning from all the sage old ladies and matriarchs across the region, who are willing to pass on their knowledge! The Mama San name is also apt because of the old and new world influences carried in the interiors and the Asian cuisine. “

Experimenting and developing Asian streetfood-style recipes fuelled the inspiration

Mama San hits Bali Supported by long-term “chef in crime”, Thai Palm Amatawet, Mama San Bali opened its doors in October 2011, in the trendy Seminyak-Kerobokan area.

A different, "Asian culinary odyssey gone posh” hybrid to Sarong, Mama San instantly became the island’s new hotspot for dining.

Equally glam, but with more attitude, the three-in-one kitchen-bar-lounge concept comes housed within a converted, doublestorey warehouse and offers diners a rarity in Bali – full air-conditioned bliss.

Diners have been continually captivated by the retro-vintage ambience evoking 1920s Shanghai and colonial decadence, blending with modern urban chic – vintage mahjong tables, oversized leather chesterfields, but most striking of all, a vast, retro-inspired mural wallpaper of Mama San herself, created by textile designer Justine Missen, which totally dominates the back wall.

Up a couple of wrought-iron staircases and paying homage to the Mama San name, the classy lounge and bar – a destination in its own right – resembles a refined gentleman’s club, complete with chandeliers and leather club chairs. A fine spot to enjoy the evening grazing menu of dim sum dumplings and near-legendary classic cocktails with a twist (such as Coconut Mojitos), created by a Singaporean mixologist and served in whacky vessels that include terracotta pots and copper buckets.

“The interiors are a feast for the eyes, while the food is a feast for the soul,” states Meyrick. Thus, Mama San is popular to almost cult proportions for authentic street-inspired Asian dishes, with an all-day menu and special lunch menu, showcasing sublime Chinese, Indonesian, Indian, Malay, Singaporean, Thai, Cambodian and Vietnamese offerings. Dishes come imaginatively served, reflecting local culinary styles, anything from banana leaves to layered tiffins and thali trays.

An array of Asian food treats await, served as a la carte one-offs or in set menus, including an Indian thali and Singaporean chicken, rice and soup set. A selection of salads from Thailand, Vietnam and Cambodia, such as a chicken and pomelo salad with lime leaf, are available for lunch and dinner, with piquant curries, slow-cooked braises and hearty soups good for lunch. Braised and roasted meats, along with local and Pacific-rim seafood,

are incorporated into much of the lunch and dinner menus and there’s an equally delicious vegetarian section. Other dishes include favourites like crispy pork hock on the bone with nahm jihm jaew and nam pla prik, street-style noodle soups and wok stir-fries, such as chow ming noodles with duck. The Dim Sum Sunday Lunches are a weekend treat for authentic, fresh dim sum, some with a twist, like the Lamb and Pumpkin Pot Stickers with chilli oil and black vinegar.

Adding to the mix, fresh, crunchy flavours and textures derive from the kitchen’s strong commitment to using local, fresh produce and ingredients sourced from across Indonesia, which seamlessly blend into these Asian recipes.

Spicing things up in Hong Kong Post-Mama San Bali and Sarong, Meyrick and his Sarong Group started to spread their culinary wings further afield, launching the regional Thai-styled E&O Restaurant in Jakarta.

A few years ago, in an interview, Meyrick was asked, “Is Mama San going to multiply?”

To which he ominously replied, “Yes most definitely. It's a unique concept and has all of the five elements for a successful business.”

Hong Kong’s dynamic culinary scene is world-renowned; it is, however, also viewed by restaurateurs as an ambitious start-up destination. Previously working as a chef in an upscale property here, Meyrick knew Hong Kong well and instinctively felt this was the right launch pad for the second Mama San. With its evident success, Meyrick's instincts paid off.

Mama San Hong Kong launched May 2014 on Wyndham Street, Central, fittingly located in the heart of Hong Kong’s bustling dining and wining precinct, frequented by both expats and locals.

Revealing a similar style and concept to Mama San Bali, like all Mama Sans, however, Hong Kong’s kitchen and bar comes infused with local characteristics and flavours reflecting the nuances of this “fragrant harbour”.

This Mama San effortlessly adapts its elder sister's ambiance of edgy colonial times in 1920s Shanghai to Hong Kong, in a purposefully designed industrial-style warehouse setting. Again, there is the trademark “Mama San” wall mural, but this time with her demure downcast glance set on the Hong Kong diners. Like Bali, Mama San has a real buzz to it, especially for dinner,

but alternative touches include long wooden bench-style tables encouraging a more communal dining approach.

Celebrating its one-year anniversary this May, Mama San continues to charm Hong Kong’s discerning patrons with an amazing collection of street-food inspired dishes from Southeast Asia, with Malay, Singaporean, Thai, Cambodian, Indonesian and Vietnamese cuisine, as well as Chinese and Indian, and mouth-watering iconic Southeast Asian flavours that include coconut, Thai basil, chillies and kaffir lime. From all-day and lunch menus, here with express-style set lunch selections, favourites include Pad Thai, with generous helpings of big, juicy shrimps and authentic Thai rice noodles, and robust Cambodian duck curry with sweet potatoes.

Bali exports not only include the Ubud-style BBQ pork ribs with homemade chilli sauce, but also Chef Budiana, who has headed up the kitchen team and been part of the Sarong Group since the start.

Next stop, Kuala Lumpur Will Meyrick is now taking his acclaimed Mama San brand to the Malaysian capital, Kuala Lumpur, completing a hat-trick of Mama Sans in Asia.

“I’ve been eyeing-up Kuala Lumpur for a long time,” confesses Meyrick. “Kuala Lumpur is an emerging market. Its growth is amazingly significant and, compared to Singapore, the capital has a lot more space to nurture a business, while Singapore has become a tad saturated. Additionally, Kuala Lumpur is a melting pot of many cultures and diverse cuisines, which makes it perfect to house another Mama San!” Scheduled to open in June 2015 in Kuala Lumpur’s city centre, once again Mama San Kuala Lumpur will carry the brand blueprint, but deliciously soak up local character. As well as offering some inspiring new dishes on the menu, Mama San Kuala Lumpur will only serve halal food and there will be more of a

This dish really needs no introduction, as it is one of Thailand’s national signatures, although truth be told, this is mostly through its popularity with Westerners.

What makes a good pad Thai is all about personal taste, but it does need to be well balanced, with both sweet and sour flavours. My first taste of pad Thai was from a street cart on Khao San Road and it made me fall in love with Thailand. It’s still one of the go-to dishes I seek out every time I return to Thailand.

Ingredients Pad Thai Sauce 2 cups palm sugar 1 3/4 cups fish sauce 1/2 cup tamarind 3 large dry red chillies

Main Ingredients 1/2 packet pad Thai noodles, pre-soaked 5 medium-size prawns 3 cups mung bean sprouts 5 garlic chive flowers 3 tbsp peanuts 3 tbsp small dried shrimps 2 tbsp pickled radish 1/2 banana blossom, white part only, julienned 2 shallots, sliced 1 egg 1 tbsp fish sauce

1 tbsp oyster sauce sugar to taste 1/4 cup vegetable oil 1/4 fresh lime

METHOD • Pre-soak the noodles for approximately three hours before cooking.

• To prepare the pad Thai sauce, combine the ingredients together in a saucepan. Boil for 15 minutes, then take off the heat and set aside to cool.

• Once cooled, place in a blender and pulse until the sauce reaches a smooth consistency.

• Combine the dried shrimp, prawns, pickled radish, julienned banana blossom and sliced shallots in a bowl and then place to one side.

• In a separate bowl, combine one kitchen spoon of the pad Thai sauce with the fish sauce and oyster sauce. Mix well and set aside.

• Heat the oil in a wok, bringing it to a high temperature. Crack in the egg and scramble, then add the bowl of vegetables and prawns. Mix well.

• Strain the noodles and add a generous handful to the wok. Continue to stir whilst adding seasoning sauces to taste.

• Finish with fresh mung bean sprouts and garlic chive flowers. The noodles should not be wet and should be a light golden colour in appearance.

• Transfer to a plate and serve with more mung bean sprouts, sliced cucumber, fresh lime and crushed peanuts sprinkled over the top, with a small bowl of extra chilli powder on the side.

TWIST Try using chicken instead of seafood, or for a luxurious twist, experiment with fresh oysters. For vegetarians, simply replace the fish sauce with soy sauce and use tofu instead of seafood.

Within a laid-back brasserie setting, formalities are left at the door: the starchy white tablecloths are now whipped off to expose rustic wood dining tables, this mirroring the earthy,

yet elegant semi-rustic tones and natural archipelago stones, woods and textiles. Also part of the change, The Private Dining Room has been beautifully revamped and an ultrachic Wine Room replaces the former boutique. Glass-encased and exposed to the brasserie floor, the Wine Room has been created for wine-related events and for patrons to sample the extensive range of wines – bestowed with Wine Spectator’s “Award of Excellence”. A sommelier is on hand to assist.

The esteemed Mozaic chef duo, UK chef and co-owner James Ephraim and Ashley Garvey, demonstrate their celebrated culinary creativity with the creation of this new dinner menu: classic French brasserie dishes combined with distinctive Indonesian and Southeast Asian flavours and locally sourced ingredients and, of course, with Mozaic’s trademark stamp of bold and innovative cooking styles and cutting-edge culinary techniques.

Menu highlights include sharing menus with a Charcuterie selection and ocean-fresh Fruits de Mer platters – generous enough for the table to share. The Mains section caters for all tastes, but signature is the grill section and its crown jewel, the Cote de Boeuf: Australian grain-fed, on-thebone beef rib carved at the table,

weighing 1.4 kilograms and feeding two to three diners.

Die-hard foodies hungry for an unrivalled gastronomic experience are indulged with six- or 12-course set menus (from IDR495,000++), which truly showcase Mozaic’s culinary heritage.

Other signature dishes we sampled are fine representatives of Mozaic’s innovative brasserie style. Among the appetizers, from two options of Beef Sirloin Steak Tartare I chose the “not-so-classic” option: classic Frenchstyle tartare, which is less robust here, delicately imbued with Indonesian flavours of rendang oil (coconut milk with Sumatran spices). Scoop up the dreamily light, Australian grain-fed beef, mushrooms and shallot tartare with parmesan crackers.

Rendang, in which the sous-vide-cooked shank is fall-apart tender and flavoursome, braised Sumatran-style with a covering of turmeric and candlenut spices.

The grand finale, Textures of Chocolate, is a showstopper, a virtual dessert assembled at the table by the chefs, placing a series of ingredients – including turmeric lemon sorbet, chocolate jelly and white chocolate sticks, edible flowers and basil leaves – to create a dazzling work of art on a giant acrylic platter. The star component is chocolate mousse scoops dipped in liquid nitrogen, resulting in steaming hard shells, which when cracked open reveal gooey chocolate.

It is difficult to decide what is more impressive: these delicious world-class dishes, or their fantastic value for money; the lofty quality of food you’d expect from Mozaic Restaurant Gastronomique, but affordable in a beach club setting. Parfait.

The Mains also showcase less traditional dishes, cleverly infused with Indonesian spices and herbs; this includes Mozaic’s signature dish, Slipper Lobster Bouillabaisse, a deconstructed take on a beloved French classic, with market fresh seafood piled in a thick jus infused with brandy and kaffir limes. Comfortably settled on Soleil’s plush sofas and armchairs, diners can linger for as long – or as short – as desired over the four courses. Multiple dish servings are geared to the group size and can be adjusted to suit specific tastes, from gluten-free and kid’s choices, to a mix of both Mediterranean and Asian dishes.

With all Soleil menus, wherever possible, the kitchen team uses locally sourced, sustainable and natural produce – of the highest quality, naturally – from local farmers and suppliers across Indonesia. From the Mediterranean Menu, you may enjoy the Piovra alla Brace, a wonderfully tender, charcoal-grilled squid, drizzled with lemon juice and enhanced with capers and red chilli, while the Ravioli di Manzo, a regional ravioli pasta stuffed with slow-

cooked beef cheeks, showcases Soleil’s recently expanded repertoire of eight home-made pasta varieties made in-house daily, including three ravioli varieties. These pastas also incorporate an innovative use of local alternatives, rather than imports, like Indonesian-made cheeses; the divine fresh spinach and ricotta pasta features ricotta from Java. The mouth-watering Grigliato Misto di Mare, with whole grilled snapper, squid and prawn, is a magnifico example of premium local seafood, sourced daily from top suppliers, then prepared from scratch by the kitchen team; this freshest ocean bounty ends up not only in the Seafood Platter, but also in other Pesce de Mare dishes from both menus, including as tasty Javanese Soft Shell Crabs. Reflecting the resident Asian chefs – including Thai and Vietnamese: the latter rare in Bali – the pan-Asian dishes cover Vietnam’s iconic Goi Cuon Bo Nuong, deliciously fresh rice-paper rolls, but here, filled unusually with grilled beef strips, and the Thai Pla Kapong Thord Rard Prig, where

wok-fried whole snapper gets spiced-up with piquant chilli sauce. Portions err on the super-sized (although beautifully presented), so you might need a break before continuing on with dessert – fortunately, these are light, balanced and typical of the region. Usually they are an unlisted daily surprise, from the Mediterranean assortment of Chef’s Favourite Sweet Offerings, decadence abounds with the Molten-centre Valhrona Chocolate Fondant and pistachio ice-cream.

Whether with family or friends, with these diverse and ample choices, everyone should be fully satisfied with Soleil’s inspired new dining concept.

All that is good WITH FRENCH CUISINE Ooh la la! Sofitel Bali Nusa Dua Beach Resort represents Bali in a global celebration of French gastronomy – with one magnifique dinner held across five continents in March, part of the “Goût De France” culinary event.

rance’s Minister of Foreign Affairs and International Development, Laurent Fabius, announced the launch of a unique event gastronomique, the “Goût de France” – or “Good France” – during a press conference on 22nd October, 2014 at the historic Quai d’Orsay, in Paris. A global celebration of magnifique French gastronomy, the Goût de France joined together 1,000 chefs, 1,000 menus and one grand dinner hosted on 19th March, 2015 in various locations across five continents.

A committee of international chefs, led by acclaimed French chef-restaurateur, Alain Ducasse, selected an elite band of restaurants to participate in this one-off event. Dinners served simultaneously in participating restaurants around the globe paid homage to the merits of French cuisine and traditions, France’s capacity for innovation and values: sharing, enjoying and respecting the principles of high-quality, environmentally responsible cuisine.

The signature restaurant of the Sofitel Bali Nusa Dua Beach Resort, Cut Catch Cucina, was the sole representative from Bali selected to participate in the Goût de France’s prestigious gourmet event.

Not a surprising choice, given that this premium international beachfront resort on Nusa Dua shores is Bali’s only luxury French hotel, under French hospitality group ACCOR and under the Sofitel umbrella – ACCOR’s premier hotel brand – and comes instilled with French elegance, heritage and an “art de vivre.” Offering a stylishly contemporary dining experience, Cut Catch Cucina seamlessly combines the thematic culinary concepts of a premium steakhouse, a modern Italian Osteria and a Sea Grill. However, on 19th March a distinctly French flavour pervaded the kitchens. Prior preparations for and during this prestigious Goût de France dinner event were helmed by Chef Maxie Millian, who brought a

decade of culinary expertise, predominately from the United Arab Emirates and international cruise liners. Among the lucky patrons, we were also privileged to attend this grand one-night-only affair, greeted with pre-dinner cocktails out on the restaurant’s poolside terrace on a balmy Bali evening.

Chef Maxie and team pulled out all the stops for a full-blown, six-course Degustation Menu with matching French wine – yet at a very reasonable price. Each of the sublime six courses came clearly defined – Poisson, Poulet, Fromage and so on – and were perfectly accompanied by a premium selection of wines, which subtly enhanced the food even further.

Dinner commenced with a cold entrée and a divine bowl of Yellow Fin Tuna Tartare, with oyster mayonnaise and a deliciously zesty lemon juice and ginger citrus dressing,

followed by a hot entrée featuring a sweetmeets-savoury treat of Pan-seared Foie Gras, joined with spiced brioche and raisin crumble, foie gras dust, caramel walnuts, apple purée, star anise and orange jus – beautifully paired with a wine that had a hint of sweetness.

The seafood course featured Pan-seared Sea Bass, with vegetables a la Provencale, smoked potato espuma and pea velouté sauce, while the appointed meat selection was an intriguing sous-vide chicken cooked coq au vin-style, accompanied by carrots, creamy fondant potato, glazed baby onions and chicken jus – this, a clever deconstructed interpretation of a classic French dish.

The dishes were perfectly degustation-sized, so fortunately there was enough room left for the grand finale of Chocolat. Strikingly presented on a granite plate, this thinkoutside-the-box dessert consisting of Milk Chocolate and Praline Cake, with an unusual white truffle dust and more-ish chocolate balls filled with vodka-infused liquid passion fruit, paired with a smooth dessert wine.

Suffice it to say all plates were exquisitely presented, the innovative creations showing remarkable artistry – a feast for the eyes

and taste buds. Et viola! A truly memorable gourmet treat, with Bali’s Goût de France Degustation Menu successfully showcasing all that is good in French cuisine.

As you would expect at the Eastern Garden Martha Tilaar Spa, an underlying “garden of serenity” theme permeates everywhere.

The two-storey building resembles an urban oasis in downtown Seminyak, with a Victoriana-like conservatory setting, complete with glass roof, leafy potted plants, white wicker furniture and seven individually themed treatment suites wrapped around a centrepiece hydrotherapy pool – the focus of several water-based therapies.

Next, I am gently exfoliated with a ricebased scrub infused with camphor, lemon and aromatic frangipani, custom-made to brighten the skin and slough-off dead skin cells for instant skin renewal. Still smothered in the scrub concoction, I am then led to a generously sized stone tub for a decadent Aromatherapy Flower and Milk Bath, topped with fresh red rose petals. Soaking alone for 20 minutes not only helps me totally diffuse, but allows the milk formula and fragrant essential oils to sink in and work their magic

on my skin. This bath-time pays homage to the daily Indonesian practice of bathing in natural spring water and rivers – known for its beautifying and therapeutic effects.

Post-treatment, sitting in the relaxation lounge (subtly reflecting the brand’s Betawi origins, with its distinctive Javanese design), drinking a chlorophyll-infused green elixir and nibbling on healthy snacks, I feel deeply calmed and relaxed, enjoying glowing and fragrantly softened skin. No wonder I sleep soundly that night.

My stay, however, coincided with Nyepi, the “Day of Silence” and the first day of the Balinese New Year, when from 6AM for 24 hours, Bali’s Hindus stay silent in meditation, fasting and self-reflection on the past year.

No one on the island is allowed out on the streets as travel anywhere is strictly prohibited – even the international airport is closed – with activities, noise and lighting kept to minimum. Tourists are not exempt and must remain on their hotel grounds the entire 24 hours, so what better place than the beachfront Conrad to make the most of a special Nyepi Hotel Package and a perfect opportunity to relax, diffuse and reflect?

Although guests must all stay on-resort, the property’s 6.8 hectares of landscaped tropical gardens affords a sense of spaciousness and

privacy, even during Nyepi. Like at other resorts, most facilities operate as usual, leaving little chance of guests being bored.

Throughout the year, Conrad Bali provides a broad range of daily activities (many, complimentary) from beach volleyball to Nusa Dua bicycle tours. On this holy day, however, activities focus on a cultural angle – even in the Kids Club – such as traditional Balinese dress-up and dancing.

I opted, however, to participate in a twoday batik workshop, learning how to create traditional hand-made batik in a “Master of Arts” class in partnership with iconic Indonesian Batik designer and producer, Iwan Tirta Private Collection. As part of Conrad’s the first series of Living Lobby Art Exhibition, four quarterly exhibitions are being displayed throughout the year in the East Lobby Lounge, with related workshops taking place; a series highlighting masterful works that represent Indonesia’s indigenous art and cultural heritage, presenting guests with unique interactive opportunities.

Alternatively, the beach may have been off-limits, but I still managed to enjoy the 33-metre pool and lagoon, being greeted by staff with icy cold face towels and bottled water. Across the island, lights go dim postdusk on Nyepi Day; although beach side and glass-encased, we were still able to dine at the signature restaurant, Eight Degrees South, as at other F&B venues, by romantic candlelight. That night, lacking a day’s worth of pollution, the inky night sky was stupendous, studded with twinkling stars, while on the post-Nyepi morning, distant volcanoes were visible through the coconut palms. Yes, this “Day of Silence” made me appreciate Conrad Bali even more – it speaks my kind of language.
