Superior Pâtisserie Afternoon Tea 1 ST A U G U S T | 2 : 3 0 P M - 5 P M | C O R D As part of the Superior certificate of the Diplôme de Pâtisserie, students will host a formal 5 course Afternoon Tea party event at CORD. This event provides Superior students the opportunity to gain insight into working in the industry, applying what they have learned on the programme in a professional setting.

Please note: Superior Pâtisserie students hosting the event are only allowed to invite up to 4 external guests. The event is open to attendees aged 16 and over. Other terms apply.

Don’t forget to bring along your CV. If you plan to use the library student printer, please ensure your printer access is set up in advance.

Taste of Le Cordon Bleu Cuisine 1 5 TH A U G U S T Gain essential culinary knowledge, whilst obtaining an insight into the experiences encountered by our students during their time at the world’s premier culinary arts school in London.

Fish and Shellfish 2 0 TH A U G U S T Learn the essential cooking skills required to expertly fillet and prepare a variety of fish and shellfish. Alongside these techniques you will be taught how to prepare a range of exquisite recipes, all of which can easily be replicated at home.

Learn the French Classics: Macarons 2 1 ST A U G U S T Learn the techniques on how to make French meringue, prepare macaronage and colour application, as well as produce a variety of emulsified ganache. Additionally you will be taught a range of piped decorations to finish your beautiful macarons.

Guest Chef: Helen Graham On 15th July, we held a guest demonstration with Helen Graham, covering vegetarian and vegan cuisine.

Showcasing the kind of recipes which she developed in her career as Executive Chef at Bubala, Helen focussed on two fantastic dishes (one vegetarian and one vegan): wild mushroom chilli crisp, lime ricotta toasts and cumin aubergine, coriander chutney & star anise caramel.

Superior Cuisine Degustation Menu On 25th July, as part of the Superior certificate of the Diplôme de Cuisine, students hosted a 5-course tasting menu event at CORD. FROM OUR LIBRARY Our library is situated on the first floor next to room 101 and offers a fantastic array of books.

It is open from Monday to Saturday 7:10am – 9:30pm (5:30pm on Saturday) for self-study, and open Monday to Friday 9:00am – 5:00pm (closing for 1 hour during lunch) for borrowing services.
