Dear Readers, Shavuos has nearly arrived and we are still not able to share our yom tov together. Who would have thought that before Pesach? However, by everyone sharing their pictures and articles it helps us feel less isolated.. Wishing everyone in the UK, Eretz Yisroel and the USA a gut yom tov and happy reading. This week, we have had to give the shochet article a miss but hope it will be back next time with a fascinating story. Best wishes, Aunty Cha

SUNDAY’S OUTING The Lewis outing on Sunday was... we went on a walk,
{OF COURSE WE WALKED THERE} It took us about five minutes to get there. Some went there on our bikes & some walked. It was so nice that we went again on Monday. There was a very steep mountain that we zoomed down on our bikes and there were little pools of water. Whoever didn’t bring their bike on Sunday brought it on Monday.

On Shavuos there is a minhag to eat Milchig food. Here we find out how cheese is made:

Get the milk
Start with fresh warm, milk; the fresher the milk you use, the better the cheese will be. It’s a good idea to buy milk on the same day as you make the cheese – then you can make one big batch for the next few weeks or months. You can either get the milk still warm from the cow or you can take it from the fridge and heat it up in a pot a tiny bit.

Acidify the milk
There are 2 ways to make cheese. One way is just to dump the acid directly into the milk to get the correct acidity. The other way, which is done with most cheeses, is to put in live bacteria, called cultures. However, this needs time, warmth and no other bacteria. The cultures then eat the lactose in the milk and it becomes lactic acid.

Add a coagulant
A coagulant makes the milk become thicker and gel – like. Usually the coagulant used in cheese is called rennet. There are many types of rennet: some are taken from animals which could be a problem with kashrus. Kosher cheese can use a man-made rennet or plant coagulant instead. Mix the coagulant into the liquid milk and wait till it becomes a gel.

Test for gel firmness
Press the gel by gently pressing onto the surface with a clean hand. In factories they have special equipment to check when the gel has reached the right level of firmness. This is now called curd.

Cut the curd
The next step is to cut the curd from one big piece into small chunks. You can do this with a special cheese knife called a ‘cheese harp’ or just a regular knife or whisk. The size you cut the curds will affect how moist the cheese will be; the bigger the pieces the more moist the cheese will be. (Drier cheeses are usually stronger cheeses and then aged.)

Stir, cook and wash the curd
Now it’s time to cook the curd. Different cheeses need cooking for different amounts of time; between several minutes and an hour. Sometimes you just stir the curds in the vat (-a big pot) and sometimes you need to add heat while you stir. In this way, acid develops inside the curd and the stirring makes the cheese dry out. The more you stir, the drier the cheese. Washing: while stirring the curd, some liquid, called whey, comes out. By taking out some whey and putting in water instead, the cheese becomes more mild, sweet and elastic.

Separate the curds and whey
At this step it’s important to work quickly so the curds stay warm and will mush back together into a nice, smooth cheese. You can separate the curds from the whey just by using a sieve or by waiting 10 minutes to let the curds settle at the bottom of the vat and then pressing them together and then bringing them up, out of the vat.

Salt and age the cheese
This is sometimes done before the cheese is made into a ‘wheel’ – big round cheese block – and sometimes afterwards. Your cheese is now ready to eat!!! You can also leave it to age and become a more ‘complex’ cheese – a cheese with deeper and stronger flavours.

The collector’s collectables “You have reached your destination on your right,” the nasal voice from the navigator called out. I scanned the park to my right; the trees, sculpted bushes and carefully manicured lawn – but i could see no house. After several moments I was able to discern that beyond this park/ front garden there actually was a house – no, a mansion. So this was where Mr P lived! I was told that he was a wealthy man who often gave Tzedaka –but this was a new level of ‘wealthy’. I walked upto the tall black gates – and they opened in my honour! I enjoyed my stroll up his brown cobbled path and noted the 3 inch Mezuza on his doorpost. Within moments of me ringing on the bell a man came to the door; as though he had been waiting for me. ‘Oh. The butler’, I realised. But no, after a short chat it was clear that this was Mr P himself, and yes, he was waiting for me, with a L’chaim and some biscuits. As I would soon find out Mr P loved giving Tzedaka. He also loved dogs and his pet spaniel came running upto me, licking my feet. I stroked it and told him how beautiful his dog was. Mr P was quite shocked. “Most of you people are scared of my dog,” he said. I was about to take him out the room. Well, I had to manage with the dog in the room until the end of my visit. Oh, I didn’t tell you why I had come to visit Mr P. It was to collect Tzedaka, of course. I explained to Mr P all about the Pesach Program I run to help support some Avreichim in my kollel. Mr P was really attentive throughout my talk and looked at all my pictures. He wrote out a cheque, and as I stood up to leave I looked at the cheque. It was VERY generous! About double the (large) amount I had requested. I thanked Mr P for his generosity and warmly shook his hand. “Well, for someone who’s been so kind to my dog...” Wow! It was worth having that spaniel around, after all! On my way home, I even received a text from him just to wish me a safe trip home and Hatzlacha. I was really impressed! I thought that was the end of the story...but of course it wasn’t. Only 5 months later I received another text from Mr P. This time he was asking to send me a donation! Now this was something new – asking to give a donation; I’d never heard of that before! But sure enough only a few days later there was a sizeable voucher in the post for me! I wondered what made him do that. Can you guess? It was because... his spaniel had died and he wanted to do a good deed in his memory! To be continued......
One of the Mitzvos in the Aseres Hadibros is the Mitzva of Shabbos. Here is a beautiful Shabbos story for you to read, as told to Boruch Prijs by his Rebbe on phone school (all names are changed): About 100 years ago, Family Reisner moved from Europe to America. Mr Reisner found a job in a factory and worked very hard all week. On Friday, he went to his boss and told him that he can’t come to work on Saturday, because it is Shabbos. His boss said, “What?? You can’t just not come into work on Saturday! If you don’t come to work tomorrow, don’t come back on Monday, and don’t come back ever again!” So, on Monday he looked for a new job, and when he told his new boss that he can’t come to work on Shabbos, the boss said, “If you don’t come on Saturday, don’t bother coming back on Monday!” This went on for a few weeks. Mr Reisner did not have enough money to pay his rent and his landlord evicted him. There he was, standing on the street with his family with no place to sleep that night. The caretaker of the building where he’d lived felt sorry for the poor family. He told them, “In the basement of the building, there is a coal room, where the coal is kept to warm all the apartments in this building. You can stay there if you’d like. At least you will have a roof over your heads.” And so, Family Reisner moved into the coal room. You can imagine that it was probably not the cleanest of places to live! One day, a wealthy man, Mr Golding, was walking down the street and saw two boys with black faces playing. When he came nearer, he heard them speaking Yiddish! He went over to them and asked them why they were so dirty. The children explained to him their whole story. He was astounded, and he asked them if they could bring him to their parents. The children brought Mr Golding into their coal room dwelling.
After speaking with Mr and Mrs Reisner, Mr Golding pulled out his checkbook and wrote a check for enough money to rent a decent apartment. Mrs Reisner said, “Before we take your money, we need to ask you a question. Do you keep the Mitzvos? Do you keep Shabbos?” Mr Golding said, “We used to keep Shabbos and the Mitzvos, but since we came to America it has been too hard for us and we don’t anymore.”The Reisners told him, “Well then, I’m really sorry but we cannot take your money. We cannot take money from someone who earned it on Shabbos. That’s why we live down here, because we do not work on Shabbos.” Mr Golding was flabbergasted. He took his check back and returned home. When he got home, he related to his wife the whole story that had happened. His wife became very upset. She said, “Remember when we were younger we used to keep Shabbos and all the Mitzvos. Then we came to America and we became rich and we forgot about what HaShem wants. I want to start keeping Shabbos and all the Mitzvos again.” Mr Golding agreed with his wife and from that very week, they decided to start keeping Shabbos once more. Mr Golding went back to the coal room home. He told Family Reisner,"From this week, we are going to start keeping Shabbos again. Not only do I want to give you a check for all the money that you need, but I also want to hire you to work in my business so that you never have to work on Shabbos again!” Many years later, the grandchildren of the Reisner and Golding families married each other. What a wonderful story! What a zechus it is to look after Shabbos! If you look after Shabbos, then HaShem and Shabbos will look after you! From Family Prijs
