A Community Built Together

by Meryl Kelly For the past few years, Romero’s Food Truck has quietly built a loyal following in the West Paris area, serving top-notch Mexican fare from an unassuming corner of the Cooper Farms parking lot on Route 26. Now, the beloved mobile kitchen is preparing for a bigger stage — a new downtown Bethel location.

Romero’s opened in late 2022, launched by husband-and-wife team Yvette and Gulmaro Romero with the enthusiastic backing of Cooper Farms owner, Sue Cooper. She went so far as to install electrical and water hookups to accommodate the truck — a gesture Yvette still speaks of with immense gratitude. (Quick aside: Sue would love to host another food truck, should any enterprising chef be seeking a home.)

While Yvette is the warm and welcoming face customers see at the window, that role is just one facet of her busy life. She’s also the mother of two and a dedicated nurse. Though she’s scaled back to per diem shifts — mainly in winter — nursing remains a passion. Skills she honed in healthcare flow seamlessly into hospitality: reading people, meeting needs quickly and staying calm under pressure.

For Gulmaro, this venture is a step toward a long-held dream of owning a brick-and-mortar restaurant. After years of working in kitchens specializing in Italian and Mexican cuisine, he was ready to build something of his own. With a shared vision and a “family-first” mindset, the couple bought a trailer, created a focused menu and handled every aspect of the operation themselves — from prep to service to cleanup.

Their children are just beginning to show interest in the business, hinting that Romero’s could be a true family affair for years to come.

So, what’s on the menu? Romero’s keeps it simple and satisfying, with a focused lineup of Quesabirria Tacos, Street Tacos, Fajitas, Quesadillas, Burritos and Rice Bowls.

Everything is made from scratch, with a priority on fresh, local ingredients. The care and pride poured into each dish are evident in every bite.

Rather than rush into expansion, the Romeros took a thoughtful, deliberate approach — refining their systems, learning from the flow of business, and prioritizing sustainability over speed. The opportunity to move to Bethel came by way of Wade Kavanaugh, owner of The Gem Theater, who reached out with one of those simple-but-loaded “I have an idea” texts. After a few creative conversations, a plan took shape: Romero’s would relocate to a central downtown spot, nestled between The Gem Theater and the Chamber of Commerce.

visitors heading to enjoy the area. As with Sue at Cooper’s, the Romeros say they’ve felt deeply supported by Wade and his wife Beth.

While some longtime fans in West Paris have expressed sadness at the move, the couple is encouraged by the overwhelmingly warm welcome in Bethel. They're already beginning to build new regulars — and they hope some of their West Paris faithful will make the drive now and then for a taste of something familiar.

The Romeros' story is part of a growing movement across the region: local food trucks making the leap to permanent locations. From tacos to Thai and barbecue to breakfast, our area has seen a rise in mobile kitchens turning into mainstays. Romero’s is the latest to join this trend — a sign that the community’s appetite for diverse, homegrown cuisine is stronger than ever.

It’s also a reminder of what’s possible when

small business owners support one another. From Sue at Cooper’s to Wade and Beth at The Gem, that spirit of generosity helped the Romeros grow — and in turn, added something new and meaningful to the town. As Yvette and Gulmaro settle into their new space, they’re eager to share their food and their story with a wider audience.

If all goes well, this move could pave the way for the grand vision: a full-service brick-and-mortar restaurant in Bethel, bringing authentic, lovingly prepared Mexican cuisine to the community for the first time in years.

Their willingness to embrace opportunity is a testament to how vibrant communities are built — not by chance, but by people who take risks, lift each other up and follow their passions. With a little gumption and a lot of heart, the Romeros are helping shape the kind of place we all want to live in — one full of flavor, connection, and possibility.

Small Town, Big Voice:12-Year-Old Nora Haynes Is Already Taking the Stage by Storm

While most 12-year-olds are glued to their phones or learning TikTok dances, Nora Haynes is busy booking gigs, writing original songs and commanding the stage with a confidence well beyond her years.

By the time most kids enter middle school they may have perfor med in a talent show. Nora? She has over 30 live perfor mances under her belt — playing venues from Portland to Bethel, including gigs at the Sunday River Brewing Co., Smoked in Portland and Windham, Black Mountain in Rumford, and the Bangor Waterfront Pavilion, where she’s slated for a two-hour solo set at the American Nur ses Association convention this fall.

A seventh g rader from Poland ME, Nora has a knack for adult-themed ballads and genrebending cover s that span countr y, rock and soul.

She’s the eldest daughter of Chad and Erin Haynes — two proud parents with musical blood in their family and a home that feels a bit like a Nor man Rockwell painting with a moder n soundtrack.

A Family Rooted in Music — and Grit

T he Haynes family eng ages life a little dif ferently than most moder n households.

While today’s kids spend an average of 5 to 8 hour s a day on screens, Nora and her younger sister Isla, 10, are more likely to be found riding bikes, swimming in Worthley Pond or jamming in the living room while their dad plays guitar.

Dad Chad, who works for Unum by day and has played in the H all Pass Blueg rass band by night, introduced Nora to music early on. By age 5, she was plucking chords on a child-sized guitar.

Next came the ukulele. And by age 10 she was perfor ming paid gigs across the state. Sister Isla, a budding roadie, helps set up the soundboard and equipment before each perfor mance.

Evenings at the Haynes home often involve music. Guitar s get tuned up, voices rise — and the tug of inf luencer s on screens — well, they can’t hold a candle to the lyrics.

— it’s her dedication. She has a catalog of four hour s of live music, using her iPad to follow lyrics and chords. Some songs in her re pertoire are originals that tackle mature emotional themes, resonating with audiences far beyond her age.

She’s been inspired and mentored by local musicians like Kelly Towle (owner of Smoked), Ben Kilcollins and Toby McAllister, who asked her to open for their band at Lost Valley in Aubur n.

And the buzz is building. Some have sug gested she tr y out for T he Voice or American Idol, but Nora’s more focused on the work. She wants more gigs.

She wants to go to Nashville. She wants to sing at venues for people that come to see a g reat show. And Chad? He’ ll “drive the bus and make the dinner s”.

A Rare Talent in a Digital Age

In an era when fewer kids are picking up instruments (only 24% of Gen Z teens play music regularly, according to a 2024 Spotify survey), Nora is a throwback — and a standout. Her voice, her g rit and her family-fir st foundation are setting her apart in a crowded, hyper-digital world.

She may be young, but Nora Haynes already knows exactly who she is — and where she’s headed.

Renovation Spotlight: Turning a Spare Bedroom into a Dream Bathroom & Laundry Space

When a homeowner dreams of transfor ming a seldom-used bedroom into a spacious, functional bathroom and laundr y area, the key to success lies in having a trusted contractor by your side. T hat was exactly the case when Grif fin Couture and his skilled team at Maine Custom Interior Accents were brought in to take on this unique renovation.

T he home—a char ming family residence built in Greenwood in 1980—originally had only one small bathroom that barely met the needs of the household. T he g oal was to expand and mo der nize the space while maintaining the integ rity and style of the original home. Grif fin saw the opportunity not just to renovate, but to completely reimagine how this part of the house could function.

With careful planning and an eye for detail, the project beg an with demolition. Walls were removed, and the outdated bathroom was dismantled—all while kee ping the existing shower temporarily intact so the family could continue with daily routines without disruption. T his thoughtful approach is just one example of the way a seasoned contractor can bring both ef ficiency and empathy to a complex home upg rade.

INGREDIENTS TREASURE HUNT:

Swain's Farm and Middle Intervale Farm: sweet corn and maple syrup Gneiss Spice: Fleur de Sel or other flaky sea salt Rumford White Cap Mountain: wild blueberries Bethel Farmer's Market Farmers: kale, tomatoes, cabbage, microgreens, herbs, garlic Gemini Cafe & Bakery and The Local Hub: Sourdough Country Bread or sourdough boule

Farmer’s Market Raw Salad with tomato, basil & lemon INGREDIENTS | SALAD: • 1 large bunch of kale, stripped and roughly chopped • Kernels from 2-3 ears fresh sweet corn • ¼ head cabbage, very thinly shredded • 2 small cucumbers, chopped • Microgreens INGREDIENTS | DRESSING: • 2 juicy tomatoes • 1 lemon, zested and juiced • 1 small bunch basil • A sprig or two fresh oregano • ¼ cup EVOO • Fleur de Sel or other flaky sea salt DIRECTIONS

1. Put the kale in a bowl of cold water with about ¼ cup of salt and massage the kale until it softens a bit and it starts to

darken in color. Drain in a colander and rinse, squeeze and spin the kale dry and put in a salad bowl.

2. Add the shredded cabbage, corn and cucumbers 3. Put all dressing ingredients except olive oil into a blender

and process until smooth. With the blender running on low, add the olive oil slowly and run until thoroughly incorporated. Season with salt and pepper.

4. When ready to serve the salad, pour dressing over salad ingredients and toss together

Pan con Tomate INGREDIENTS: • 4-6 slices Country bread, or sourdough • 1-2 very juicy, very ripe, heirloom tomatoes • 2-3 Fresh garlic cloves, peeled and cut in half • Drizzle EVOO • Fleur de Sel or other flaky sea salt • A few cranks of freshly ground pepper DIRECTIONS

1. Toast bread slices under a broiler or on a grill (for enhanced smokey flavor!) until the tops are crispy and golden, and maybe a little bit burned in streaks.

2. Immediately scrape garlic over the bread 3. Cut a tomato in half and scrape across the bread slices. If

the breads surface is not rough enough, you can use a box grater.

4. Put slices on plates, drizzle with olive oil and dress with salt and pepper

White Cap Blueberry Mint Lime Spritzer INGREDIENTS: • 1 pint wild blueberries, fresh or frozen • 1 cup maple syrup • 2 cups water • 1 sm bunch fresh mint, chopped • 2 limes, zested and juiced • Sparkling water to taste • Frozen blueberries, mint sprigs and lime slices for garnish DIRECTIONS

1. Bring to a simmer the maple syrup and water 2. Add the berries, mint, and lime zest and simmer 5 min 3. Strain the mixture in a fine mesh colander and let cool 4. Add the lime juice, put in a quart jar and shake to combine, and chill until ready to use

5. Pour seltzer in glasses, with ice, and add blueberry syrup to taste, and garnish!
