While we participated in quite a few charity events this past season one notable event really stood out and that was the 3rd Annual Bentley Celebrity Golf Tournament. With a resounding success, the tournament not only brought together avid golfers but also served as a beacon of hope, raising substantial funds for Barks of Love Animal Rescue.

This heartwarming event, held at Monarch Beach Golf Links, saw an outpouring of support, raising over $35,000 to aid the noble cause.

The contributions garnered will play a crucial role in rescuing and caring for abandoned and mistreated animals, significantly reducing the rates of euthanasia in shelters across Southern California. The union of sportsmanship and charity at this tournament truly exemplifies the festive spirit of giving during this holiday season. A big shout out to Bentley Newport Beach as we could not have raised this crucial funding without them!

The Bentley Celebrity golf tournament Presented by Bentley Newport Beach Photos By: Michael Pascual @_michaelpascual The Bentley Newport Beach Celebrity Golf Tournament proved to be a remarkable success, as over $35,000 was raised during the event hosted at Monarch Beach Golf Links in Dana Point, CA. The tournament, held on October 20th, was a collaborative effort to support Barks of Love, an esteemed organization dedicated to safeguarding the welfare of abandoned and mistreated animals across Southern California. The funds raised play a vital role in rescuing and caring for numerous animals, significantly reducing the rates of euthanasia in local shelters.

Bentley Newport Beach served as the title sponsor for the third consecutive year, and stands as a beacon of honor for their unwavering commitment to charitable causes. Their involvement extends beyond mere sponsorship; it reflects a deep dedication to ensuring every animal has the opportunity for a loving home. Tim Tauber, General Manager, expressed his joy at the event's success, stating, "As a fervent dog lover, witnessing the fantastic turnout and the dedication of Barks of Love warms my heart. Our Bentley division's sponsorship marks our commitment to supporting the tremendous work of this non-profit. The event aims to make a substantial difference for this incredible cause."

The day commenced with registration and a delectable brunch from Chef Kelvin Bellamy, accompanied by refreshing sips from Suntory All-Free, OTR Cocktails, and Tito’s Handmade Vodka. Chris Schauble, the KTLA 5 Morning News co-anchor, hosted the event and served as the evenings auctioneer. Notable celebrities and VIPs, including Ron Brown, Pete Shaw, Donovan Carter, Jeff DaVanon, Andrew Walker and more, added glitz to the event with photo ops and interviews.

Throughout the tournament, players engaged in various competitions like the Women’s Longest Drive, Men’s Longest Drive, and Straightest Drive, earning an array of prizes from wine dinners, gift certificates to golf equipment. An exciting opportunity awaited at hole five—a chance to win a year's lease of a 2023 Bentley Bentayga Azure Hybrid for a hole-in-one.

The relaxation station at hole 4, sponsored by High Seas, offered golfers quick massages, lavenderscented towels, and refreshments while Wiens Cellars, the sponsor for the Wine & Putt challenge, provided guests with an opportunity to win bottles of wine. Amidst the game, Good Choice Catering delighted golfers with tacos, paired with Jalapeno Margaritas by OTR Cocktails and Peroni Nastro Azzurro Italian beer.

Following the tournament, an after-party on the grass at Monarch Beach Golf Links included a live auction and pre-dinner cocktails by The Charcuterie Spot. The evening concluded with a gourmet dinner, including a diverse menu from renowned chefs including: Chef Kenneth Anderson, Chef Kryssie Tinsay, Chef Kelvin Bellamy, Chef Stevan Novoa and Savory Roads. It’s all about the Cake concluded the evening with a delightful assortment of themed desserts, providing a fitting end to an exceptional event.

The Power of Pink event, presented by BMW of Buena Park, lit up the glamorous space at Hotel Fera in Orange this past October, drawing in a highprofile crowd and delivering an evening of sophistication and goodwill. Live performances by Heart of Samba filled the air with lively rhythms, setting the tone for an extraordinary event. However, it was DJ MOJOE who truly stole the spotlight, mesmerizing guests with beats from around the world, creating an ambiance that blended seamlessly with the evening's energy. Culinary delights were on offer as Good Choice Catering and Savory Roads tantalized taste buds with a medley of delicious small bites that were savored by all attendees.

Complementing the scene was an Instagram-worthy backdrop crafted by Finest Balloons, adding a picture-perfect touch to the evening. The décor was adorned with pink-themed details, from exquisite floral centerpieces to specialty cocktails that added an elegant flair. Indulgence took center stage with an array of sweet treats and coffee from Moonwood Coffee Co., providing a delightful respite during the lively event. The guests were also treated to mini hand massages courtesy of CA Mobile Acupuncture, a soothing touch that added an extra layer of relaxation and pampering.

The event took an enlightening turn as speakers from Providence St. Jude Medical stepped onto the stage, providing an invaluable opportunity for guests to delve into the depths of understanding breast cancer treatment and recovery.

The culmination of the evening's efforts was the pivotal moment when BMW of Buena Park's General Manager, Kevin Oliff, took the stage. Amidst the anticipation, he presented a check of $30,000 to Providence St. Jude Medical for breast cancer research, elevating the evening's success to an immensely gratifying and impactful conclusion. CULINARY PIONEERS:

Embarking on a culinary journey steeped in the nostalgia of their childhood eras, the renowned Voltaggio brothers, Michael and Bryan, sought to bring to life the dishes that shaped their early experiences in the world of gastronomy. As they delved into the intricate world of culinary arts at a young age, the brothers had a long-cherished vision to create a concept that echoed the flavors and memories of their upbringing. The opportunity to collaborate with MGM presented an ideal platform to manifest their culinary dreams. Known for their unwavering support and abundant resources, MGM had previously partnered with the brothers on their successful steakhouse venture at National Harbor. Transitioning to the iconic space at Mandalay Bay posed both a challenge and a remarkable opportunity. Their goal was to introduce a dining concept that was not only refreshing but also distinct from the current array of offerings along the strip.

The concept curated by the Voltaggio brothers not only reflects their personal culinary evolution but also resonates with diverse demographics, capturing the essence of the vibrant 80s and 90s eras. The fusion of nostalgia and diversity is central to their vision. Mandalay Bay, emblematic of the Vegas spirit, inspired the brothers to create 'Retro,' a dining experience set to bring a unique and vibrant addition to the city's bustling dining scene.

Q&A WHY RETRO? WHAT WAS THE INSPIRATION BEHIND OPENING THIS CONCEPT AND THE MENU CREATION? MV: Retro embodies the sheer fun we wanted to infuse into our culinary venture. The opportunity presented itself, and it aligned perfectly with our desire to recreate childhood favorites and the meals that shaped our early experiences in the kitchen.

Our vision was to craft a menu that didn't require us to reinvent the wheel each time. Similar to a musician covering a song, we aimed to create our own renditions of classic dishes. For instance, take the VoltaggiO's - a playful take on SpaghettiOs. We didn't just replicate; we elevated it by handmaking the pasta, infusing our Arrabbiata sauce with a unique blend of flavors, and even serving it from stainless steel cans to retain that nostalgic touch.

Collaboration is at the core of our process. Brian and I bounce ideas back and forth until they materialize into a dish that resonates with us. The beauty of Retro lies in the freedom it provides. Each time we step into the kitchen, it's an opportunity to experiment, introduce, or refine dishes that we've longed to bring to life.

The notes on our phones are filled with whimsical ideas, like making multicolored Rocket Pops. Adapting to our guests' preferences, introducing nostalgic elements, or simply sparking a smile - that's what drives us. Seeing children in the restaurant has inspired us to adapt and provide not just shock value but a touch of nostalgia that brings joy to our guests' faces.

-Michael Voltaggio BV: Michael and I have longed to create a concept rooted in the nostalgia of our childhood eras, showcasing the dishes that we grew up with as we embarked on our culinary journey at such young ages. The partnership with MGM presented an opportunity to breathe life into our vision. MGM has consistently provided us with abundant resources and unwavering support, as evidenced by our successful steakhouse venture at National Harbor.

Taking over this iconic space at Mandalay Bay, with its rich history spanning over 20 years, was both a challenge and an incredible opportunity. We aimed to introduce something truly exciting and fresh, a concept distinct from the existing offerings on the strip.

Our concept not only encapsulates our personal culinary journey but also resonates across various demographics, appealing to those who, like us, experienced the charm of the 80s and 90s. It's a fusion that celebrates nostalgia and diversity. Mandalay Bay is a symbol of Vegas, and through Retro, we're excited to contribute a unique and vibrant addition to its dining landscape.

HOW DID THE COLLABORATION WITH MGM START? WHO APPROACHED WHO? MV: There's a bigger plan to update the food and beverage outlets on the dining corridor in Mandalay Bay. To satisfy some immediate needs, MGM presented us with an opportunity to introduce a concept into this space and pilot the idea. The idea was to implement a culinary residency, which, I'm shocked, hasn't really become a huge thing in Vegas. Vegas is the place for residencies, when it comes to music and art. For us, it made a lot of sense. Then Brian and I collaborated with each other and put our ideas on paper, put together a mood board and presented that to the president of the hotel, who really wanted to see something fun happening in the space, but also a concept that could satisfy any dining need in the hotel as they start to transition some of the other spaces.

WILL THE MENU CHANGE SEASONALLY OR STAY SET THROUGHOUT THE DURATION OF THE RESIDENCY? BV: Our first menu change took place in July. Something unique about the concept is that there's so much for us to look back on for inspiration. We came in here with two weeks to turn the restaurant over. We brought in an incredible team, but we had to implement an entirely new menu in a short period of time. We are excited about what we've already accomplished, but once we got that first menu launched, we were already starting to think about new ideas. Working with MGM has been fantastic, they're great partners. They're going to allow us to continue to evolve the menu and they are excited about what is to come.

Restaurants can stay stagnant with their menus and with this concept, that is not going to be the case.

MV: I think there'll be hits that will stay, and I compare it to a mixtape with an A-side and B-side, like the hits in music we don't know what those hits will be until we look at the data collected. Brian and I look at everything, we read every review, every comment, and we look for threads and consistencies, then react to them. Many times chefs get stuck in their own head or with an idea and disagree with what everyone else feels about it, but if everyone's reacting to it negatively, then we feel the responsibility to make a change. We have so many things that we want to try because of the concept and we want to show and do as much as we can with the space, because otherwise, why are we here? We have been given an incredible opportunity to come to Las Vegas and be creative and do big things.

WHAT IS YOUR FAVORITE ITEM ON THE MENU? WHAT DO GUESTS LOVE THE MOST AFTER REVIEWING THE DATA? MV: Sometimes a dish will be crazy, selling, selling, selling, and then it'll go quiet for a few days, and we wonder, what happened? We have learned that a lot of it depends on the groups that are in-house. There is a lot of international conventions that come through here, so it's kind of fun to watch the sales mix because it changes so much. The VoltaggiO’s will probably live here as long as we do. The pot roast is one that has a great following. The item that I love the most right now, is the escargot. We made it into a version of General Tso's chicken but out of snails, it was for us a way to, get more people to try snails. That's my favorite dish on the menu right now, but again, you have to build trust from your guests in order for them to order something new.

BV: I really like the deviled eggs. It was inspired by travels Michael had, and the light and airy aerated deviled egg mixture we put together, coupled with delicious rich caviar that's in the bottom of the egg, its unexpected. We love that we can implement something that's seemingly simple like a deviled egg, but by doing it in a way where you get the surprise of the caviar, the rich egg yolk, mixture, and tender egg. It's really a great bite.

HOW DO YOU FEEL ABOUT WORKING ON THIS PROJECT TOGETHER? MV: We're doing most of our concepts together now. We opened Vulcania together in Mammoth. The idea behind all of that is so we can be more present and expand our own company, because there's two of us. It's rare to have two brothers in a culinary partnership, and two brothers that can be honest with each other, support each other, respect each other, fight with each other, and still be great partners in the end. It's not just this project, but a lot of our projects moving forward we will do together. Volt Burger with Live Nation, we're in 37 venues this year. For us, it's a lot easier to commit to projects when there's two of us that can finish each other's sentences. We don't need to be together to be at a restaurant.

We can split up, divide, and conquer, and that's ultimately the goal. We can have these conversations easily. I can develop a recipe at my house then FaceTime Bryan and vice versa.

Then whichever one of us wants to go and implement it into the restaurant, we can do that. For us, we're trying to do it across the board at this point, There is peace of mind knowing you have a partner you can trust to show up and care about quality as much as you do. Bryan and I are very fortunate to have that relationship and not hate each other at this point.

DO YOU HAVE ANY NEW PLANS FOR CONCEPTS COMING INTO SOUTHERN CALIFORNIA? BV: I live on the East Coast, in Washington, D.C. so that is Michael’s territory but our first project together was in Mammoth, California.

MV: I'm not sure, the short answer would be I would love that, someday. I'm not spending a lot of time at home right now so its a bit of a challenge. I'm on the road with these projects and I think until we see these through, I don't see us doing a whole lot more in the immediate future. We are busy. Busy going to the restaurants we currently have and cooking in the various kitchens. I feel like if we were to take on anything immediately, it wouldn't be done well execution-wise.

I miss that restaurant on Melrose. That, that was my first restaurant. I loved being the chef of Bazaar and I love the LA food scene. I think LA is a super important culinary city. That's the same reason why we don't have a restaurant in New York City and for the same reason we wouldn’t open one in LA right now. The responsibility of being present and doing it the right way is so important, you can't expand too fast and expect to have the result that you're looking for. We did so much this year already that we're now focused on maintaining that quality and consistency. Getting these projects to a point of us feeling satisfied, which doesn't ever seem to be the case and then, who knows? I love LA. I, it is my home. but currently I am just not there very much.

The Equestrian Hotel A luxe property in the middle of Florida horse country is a surprising find for equine enthusiasts.

When you picture a sojourn in horse country, your thoughts probably turn to Kentucky—or maybe Virginia. But Ocala, home to more than 400 thoroughbred farms and training centers, is actually considered the “Horse Capital of the World.” A new hotel right in the heart of it is bringing equine-inspired luxury to northern Florida, and it’s a must-stay if you’re a rider, trainer, or even just an aficionado of these majestic creatures.

Opened in 2021, The Equestrian Hotel is a site to behold. The property is situated on the grounds of the World Equestrian Center (WEC), the largest equestrian complex in the U.S. (The center is owned by the Roberts family, who maintain a similar facility in Ohio.) Currently spread out over 378 acres, with 16 outdoor competition rings, indoor arenas, 25 stables and stalls for up to 3,000 horses, WEC’s future expansion plans include more training facilities and another hotel.

Stepping into the hotel’s grand lobby is the first sign of the opulence you’ll encounter during your stay. Twenty-foot ceilings, stately columns, and crown molding are joined by mahogany leather and zebra skin wingback chairs and sofas, Swarovski crystal chandeliers, Italian marble floors, and a floor-to-ceiling stone fireplace; gilded-framed portraits of dogs hang on all four walls.

There are clever equestrian touches throughout, including in the 248 accommodations, which are awash in stark white and neutral tones and feature original equine artwork, pillows with leather bridle buckles, and do not disturb signs announcing “riders at rest.”

Many rooms face the Grand Arena, giving guests a front-row seat daily for riders tackling the jumping course. Luxe touches include European linens, marble bathrooms with frameless showers, and a separate living and dining area.

Dining concepts also give a nod to the hotel’s location. Stirrups is the hotel’s fine dining restaurant, where columns, high ceilings, and canine artwork reflect that of the grand lobby, and tables and white leather wingback chairs face the Grand Arena. The menu is a mélange of prime steaks, Floridian seafood, and Southern specialties. Sip a High Horse, which shakes gin with lemon, cherry liqueur, and Crème de Violette, while slurping a platter of chilled oysters with pineapple-ginger mignonette and roe-topped smoked trout dip spread on Appalachian fry bread.

Sharing pan-seared snapper with duck fat potato pavé and chow-chow along with a bone-in ribeye is the perfect way to sample the kitchen’s surf and turf; creative sauce options including black garlic Bourbon butter and whiskey peppercorn will make you want to spoon all of them onto your plate. Sommelier Roland Micu deftly helps navigate the wine list, a deep dive of global favorites, coveted cult bottles, and rare finds, including 26 options by the glass. Ending the night with caramel-drizzled warm bread pudding with vanilla ice cream is a non-negotiable, especially since it arrives with an unexpected dollop of sour cream to lend a pleasing tanginess; pairing it with a flight of tawny Port or Madeira is perfection.

The Yellow Pony Pub has a more casual vibe, with a spacious outdoor patio and horseshoe-shaped bar complete with saddle seat barstools, mahogany trim, and riding crops hanging on the walls; you may see guests jodhpur-clad riders on break lunching on the gastropub fare. Though the atmosphere may be more casual, the menu is pretty serious, starting with crafty libations like a clarified milk punch that takes two days to prepare, a strawberry julep, and the Palomino, an apple-spiced whiskey sour with Maker’s Mark Bourbon specifically produced for the WEC. Ahi tuna bao buns with kimchi and togarashi are a fun shareable starter, and the succulent lobster roll eschews mayo for brown butter, served on homemade bread with cucumber-fennel slaw. Honey-dipped fried chicken is a perennial favorite, and tart kumquats are a surprising addition to citrus and berry crumble.

Adjacent to the lobby, Emma’s Patisserie is overseen by executive pastry chef (and Food Network star) Yohann Le Bescond.

Ridiculously flaky croissants, yeast donuts and muffins are the perfect start to the day, the delicate macarons and intricate petits gateaux precious take-home treats.

Though guests can’t partake in any riding lessons or trail rides on the property since it’s a training facility designed for athletes, there are plenty of other diversions to pass the time, like a 1,900-square-foot twenty-four-hour fitness center and 7,000-square-foot Calluna Spa. The bar at the zero-entry pool is fittingly called Horse to Water and serves refreshing tipples like the Rosemary Lavender Smash.

Q &A LATM Having lived most of your life in the spotlight, where is your favorite place to unwind and be alone?

JM

I love horseback riding. So in Los Angeles I love to ride in Malibu Creek State Park with my wife and kids. It’s so great to be in nature with family and animals - it’s the ideal way for me to recharge.

LATM You were born and raised in LA, where are a few of your favorite SoCal destinations to visit over a weekend staycation?

JM

I love weekends at Shutters or Casa Del Mar where you can walk on the beach, have a fun dinner in Venice, go to the arcade at the Santa Monica Pier and ride the Ferris Wheel… it’s quintessential LA. You can also go to The Four Seasons Westlake Village for a spa stay is also excellent for a recharge.

LATM Over your career you have achieved so many accomplishments, what are you focusing your energy on right now and what future career goals are you hoping to achieve?

JM

There are two aspects to my business - the work I do as Jillian Michaels, which pertains to helping people improve their overall heath via fitness, nutrition, and lifestyle choices. Then there is the work I do as an entrepreneur-investing in better for you brands across the wellness category from supplements, snack companies and fitness brands. With regard to the other brands I’ve invested in, we have had great success with Shauna Reiter’s organic supplement company Alaya Naturals as well as brands like Thrive Market. I’m excited to help the continued growth of these companies.

Personally, I am focused on my next book which pertains to the emotional fitness and mindset required to keep weight off permanently, expanding the horizons of my podcast, Keeping It Real, into video. Producing the TV shows that center around health and transformation and continuing to evolve our Fitness App with new trainers and new workouts.

LATM You have always been known as a fitness guru. How do you maintain staying in shape while on the road and are there any workout trends you are loving right now?

JM

I tackle my wellness on a myriad of fronts, so when I can’t get the optimal amount of time in the gym I offset it with proper sleep, excellent nutrition, and supplementation. That said, I will make sure that I at least get my steps in, jump rope in my hotel room, use the hotel gym if there is one, explore the outdoors of where I’m staying if I have the time, utilize body weight training for quick anytime anywhere workouts, or take a class at a local yoga studio or spin gym.

LATM What is your fondest travel memory with your family?

JM

I have so many. Probably seeing the gorillas with my wife in Uganda. Reindeer safaris with my son in Finland or swimming through caves in the Mediterranean with my daughter.

LATM You are an author, businesswoman and media personality, out of all your achievements what is one career high you are most proud of?

JM

I prefer to think of the things yet to come. I have grown businesses, but not sold one yet. I look forward to that day. I have been nominated for awards and never won…yet. An Emmy being a perfect example. I continue to work on empowering people so they feel able to be proactive in their own healthcare as opposed to a victim of big food and big pharma. And I hope to make it common knowledge that our genetics are a library of potentials we can dramatically impact. No disease is a forgone conclusion and a little effort goes a long way in preventing cancer, heart disease, and cognitive decline.

We had always dreamt of escaping our busy city lives for a peaceful getaway, surrounded by the beauty of nature. So, when we found out about 1 Hotel Hanalei Bay on the picturesque island of Kaua'i, we knew it was the perfect destination for our long-overdue vacation.

As we arrived at the resort, we were immediately taken in by the breathtaking architecture and serene surroundings. 1 Hotel Hanalei Bay offered 252 rooms and suites that range from 547 to 2,700 square feet. We were shown to our spacious suite, adorned with sustainable materials and décor that perfectly complemented the natural beauty of Kaua'i. The room featured a Nespresso coffee machine, Bamford bath products, yoga mats, and a minibar filled with local artisanal products, providing a luxurious and eco-conscious experience.

What truly set 1 Hotel Hanalei Bay apart was its commitment to providing a luxurious experience without hidden fees. We were greeted by friendly staff and a refreshing drink upon arrival. The resort was a picture-perfect blend of luxury and nature, with traditional bungalows and lush greens at every turn.

The farm is open daily from 7 AM to 6 PM, inviting you to connect with nature and savor the island's bounty.

Located within The Lodge's Clubhouse, Umeke Kitchen + Bar offers a stunning panorama of the Great Lawn, which extends to the breathtaking Kukui'ula Harbor and the famous Spouting Horn.
