E

n los Andes, solemos equiparar a la madre con alimentación. Tal vez porque nuestras madres son las que nos dan el primer alimento, y tal vez porque la tierra que nos alimenta es pensada como la gran madre de todos. Lo cierto es que el rol de preparar y entregar alimento –y con él, cariño, cuidado, identidad y tantas cosas más-, suele ser de control, propiedad y orgullo de las mujeres andinas, y percibido como fundamental. Esto no impide que nuevos tiempos vean la incursión de los padres, en estas tareas, en el marco de relaciones de género cada vez más paritarias y equilibradas.

entre la mayor parte de nosotros que ciertas preparaciones, ingredientes y sabores, nos recuerden a nuestras madres, incluso a nuestras abuelas. El sabor a madre va adquiriendo nuevos significados a medida que uno crece y se aleja, y pasa a recordar la niñez, la familia, la región e incluso el país. Es interesante que, siendo tan básica para la existencia humana, la acción de alimentarnos pueda disparar en nosotros,

mediante el sabor, aroma, textura o la sola presentación, recuerdos y afectos, que a veces son capaces incluso de arrancarnos lágrimas.

“Eres lo que comes” es más que una máxima dirigida a nutrirnos con cuidado y sabiduría. Es una verdad, en el sentido que los nutrientes de la comida pasan a integrar nuestros cuerpos, y sus sensaciones se almacenan en nuestras almas. En nuestra cocina, ingredientes y técnicas de diversos orígenes se mezclan en las recetas de nuestras madres, en tradiciones y creaciones sabrosas y fascinantes, que se pueden leer como el aporte de cientos, miles de madres. Encontraremos la deshidratación del charque de llama, el chuño y la tunta, el mote de maíz, el ají y el maní, las papas, la yuca y la racacha, la khoa y la quirquiña, y tantos otros como herencia de nuestras más viejas madres prehispánicas. Mezclados con las habas, el trigo, los escabeches y ahogados, zanahorias y cebollas, las manzanas, uvas e higos, o las carnes de res, cerdo, cordero o pollo, como legado de la cocina española.

Nuestras tatarabuelas del siglo XIX nos aportaron las pastas y el arroz, los fricasés y guisos, la repostería, en consonancia con las modas francesas e inglesas. Conforme cambiamos de siglo llegaron las conservas, los refrigeradores, las ollas a presión, los microondas.

En un mundo cada vez más pequeño nuestras abuelas, nuestras madres aprendieron a usar nuevas técnicas, ingredientes a veces preparados para ahorrar tiempo en rutinas cada vez más frenéticas.

Pero a lo largo de toda esta secuencia, el cuidado y cariño son los ingredientes infaltables.

“Durante la última temporada, se han visto varios emprendimientos de food trucks por la ciudad de La Paz, y aunque se notó más la presencia en la zona sur, ahora también están presentes en Sopocachi”.

E

s hace un par de años que la comida de carritos callejeros conocidos como “food trucks” empieza a marcar una nueva tendencia de negocio en la urbe paceña, diferentes festivales se llevaron a cabo exponiendo y dando a conocer cada pequeño negocio cargado de potencial.

Los foodtrucks siguen conquistando al paladar paceño, siendo así que durante la “Larga noche de museos” se inauguró en Sopocachi el TruckStop Food Park, presentando alrededor de 10 trucks con diferentes ofertas gastronómicas, entre ellas pizzas, hamburguesas, comida vegana, alitas, salchipapas, sandwiches, etc.

“During the last season, several food truck ventures have been seen in the city of La Paz, and although the presence in the southern zone was more noticeable, they are now also present in Sopocachi”.

Although this is a very common trend in other countries, in ours we only knew the typical carts of hamburgers and salchipapas in the corners, which set the nights with a peculiar smell in each area. From the results of the first phase there will be 2 finalists for each video game that will play for the first place in the second phase.

The prizes will be in cash, from 500 to 5000 US$, for the first and second places for each video game.
