Top African chefs team up at Sofitel Cotonou Marina The 5-star Sofitel Cotonou Marina Hotel & Spa opened last December in the Benin capital. Among the beach front resort’s wealth of elite facilities are its concept restaurants. One of them, L’Ami, showcases the talents of two of the world’s most highly regarded French-schooled African chefs. Inzozi speaks to Georgiana Viou, the Cotonou-born Michelin-starred chef who designed the L’Ami menu, and Maître Cuisinier de France Raphael Kinimo, who will bring those dishes to life as culinary director.

Your mother ran a small restaurant in Cotonou. Did you help out? I occasionally helped my mother in her restaurant, but it wasn’t something I did regularly. I call myself self-taught because I didn’t follow the traditional path of culinary school or a formal apprenticeship. At 33, I made a career switch, earning my CAP (Professional Cooking Certificate) as a free candidate, supported by a chef and teacher. Afterwards, I completed several months of internships in three excellent establishments to build my foundation. Q : What local dishes and ingredients take you back to that time in Cotonou?
Dishes like okra sauce, amiwo chicken, blokoto, grilled pork, kpètè, yovo-doko, and my mother’s grilled fish instantly transport me back. There are too many to name, but I invite you to explore my book Le Goût de Cotonou, Ma Cuisine du Bénin (published by Ducasse Editions). Q : Among your successes in France was becoming a finalist on the French TV show MasterChef in 2010. What was that experience like? A former colleague actually signed me up for MasterChef without my full consent! I attended the early rounds with a friend, who, unfortunately, didn’t make it through, but I decided to continue.
