A couple of weeks ago I delivered a pontoon boat by water from The Resort over to a home on North Shoreland. As I drove around I was amazed at the amount of construction that is taking place on our lake.

It reminded me of a time about 10 years ago, I had purchased a three wheel water tricycle from Hank and Carol who lived on Lake Norman in North Carolina. After loading the tricycle into the trailer Carol invited me to have lunch with them on their lakeside patio where they began to ask questions about our lake. I told them how beautiful it was, that it has older and smaller homes and trailers on it and was an undiscovered gem.

Hank told me, “that is exactly how our lake was 10 years ago, and in the last 10 years it has exploded” Lake Norman is a huge lake and is something that Lake of Egypt will never be, but as I drove around our lake I thought of Hank's words, “Our lake changed almost overnight.” I believe we are seeing the beginning of explosive growth on the Lake of Egypt. With this growth there will be growing pains, the lake will be more crowded on the weekends, fishermen will be fishing around our docks, kids will be buzzing around on jet skis, music will be blaring from boats, and renters will be throwing parties from their rental homes.

We will have to work together as a lake community to solve some of these issues as they arise. However, I will tell you what I tell everyone that stops in at The Resort. The people on the lake are some of the kindest people I have ever met. I hope that as we face the challenges that come with growth, we will maintain our small lake community feeling.

I would also like to congratulate the Lake of Egypt Water District for winning “The best tasting water in the US”. Awarded by the National Rural Water Association! Just another reason why our lake is becoming so popular.

“The golf course has been here since

1969 and we have several members who have been here since the early

‘70’s,” Faulkner says. There are a number of members who have been members for 15 to 20 years, he says.

“About 50 percent of the membership

are from around the lake area. Some live in Goreville and some in Marion, but that is about it.

“We have a lot of get-togethers and

everybody seems to know each other,” Faulkner says.

He notes there are seven to 10 mem-

bers who arrive for coffee at 10 a.m. every day. Some of them are not there to

play golf. In fact, Faulkner says, some of them haven’t played golf for five years.

They are there because their friends are there, too.

For those on the course, Faulkner says

it is good exercise in the fresh air and

has been a good way to socialize during Covid.

“By definition, it is social distancing,

so Covid hasn’t hurt it very much,” he

says.

And there is another factor at play.

“We see our membership growing every year through some of the programs we have initiated,” he says.

The Country Club has adopted a flexible plan of membership options. A junior or senior individual membership has an annual fee of $625; a junior or senior family membership is $750; a regular individual membership is $750; a social/pool individual membership is $200; a non-resident individual membership is $375; a non-resident family membership is $450; regular family membership is $850; and social/pool family membership is $250.

Should a member wish to be included in the SIGA/SILGA

handicap system, the charge is $20 per person.

According to the application form, the junior membership

plan is for golfers age 35 and younger. Faulkner says age 62 and above qualifies a member as a senior.

Popularity of the club and course currently is so great, mem-

bership has nearly reached the point of having a waiting list.

“For over 25 years we had a waiting list to join. When you

were Number 75 on the wait list and only six people are

getting in each year, it seems like forever,” Faulkner says. “And

when you are in, you want to stick around, knowing if you drop out, you won’t get back in for a while. If the trend continues,

volunteer help. The people have been great over the years to do that.”

Other tasks also are performed when a full work crew is not needed, Faulkner says.

“We are continuing to make the course more “golfer friendly”. Our course has challenging shots that you don’t have at many other courses, whether it is uphill, downhill, side hill, tight fairways and small elevated greens” he says.

Many people have recently seen liquor

storeowners breaking bottles of Russian vodka bottles on social media. Is that

Russian is quickly becoming one of the most frequent questions asked about vodka? This question still falls way

short of—do you have any Blanton’s or

Pappy? We are constantly showing and explaining to customers what is Russian vodkas and what are not. Clientele, as well as individuals in general, want to

stand behind Ukraine and to show their support anyway they can. The recent

boycott of Russian Vodka seems to be

the trend. To shed light on the amount of vodka at stake, the United States is

the second largest consumer of vodka in the world. Although the second

largest is a big number, only 1% of that is from Russia. Russians consume most of the vodka produced in Russia. On

the other hand, domestically produced vodka makes up 50% of all vodka

consumed in the United States. A brief clarification follows to explain what is

First, and foremost, the most popular brand, Stolichnaya has recently rebranded to Stoli due to the invasion of Ukraine.

Russian-born Yura Shefler founded Stoli. However, when

Vladimir Putin came to power in Russia, Shefler relocated

to Luxembourg. The founder said he is changing the name

because he wants Stoli to stand for peace in Europe and for

solidarity with Ukraine. For more than 20 years, Shefler lived in exile from Russia due to his opposition to Putin. During

that time, he moved his facility to Latvia, where all blending, bottling, packaging and distribution processes occur.

Stolichnaya was once the powerhouse Russian vodka . . . now; Stoli is a powerhouse in the stand against the invasion of Ukraine by Russia.

SMIRNOFF

Smirnoff vodka another strong selling brand, states that they had their beginnings in Russia; however, now the company proudly makes it in America. Vladimir Smirnoff fled Russia more than a century ago and re-established his brand in

Europe. Smirnoff, owned by a British company, has been in

the United States since 1934. If you are drinking Smirnoff, you are almost supporting a local brand. This vodka company has

product produced in Plainfield, Illinois. The Smirnoff Company is also taking a strong stand against the Ukraine invasion.

So much for vodka brands you perhaps assumed were

Russian. What about the ones that really are? The next brands listed are Russian. Chances are, unless you are an enthusiast, you probably have not tried them. I will list a few Russian vodkas and if you choose to boycott Russia what I would

ZYR

The last Russian vodka I will talk about is ZYR. If you have ever asked me for recommended vodka, you have heard of ZYR. I believe it is one of the best vodkas produced. I must say that if you are drinking ZYR neat, it is going to be hard to beat. Some people are going to say I am crazy for making this recommendation; nevertheless, for the neat drinker I would suggest Ciroc. Distilled from French grapes, Ciroc vodka is extremely smooth. Ciroc vodka, distilled five times, completes the fifth distillation at Distillerie de Maison Villevert – Chevanceaux in the South of France. This product tastes extremely smooth with a creamy mouth feel finishing with a faint hint of sweetness. That is as good as I can describe and sell it.

If you are boycotting Russia, I hope this helps with your vodka purchases. If you are trying to stay away from Russian vodkas, I have listed several substitutes that I think you will find enjoyable. I hope I have cleared up some questions on a couple of brands that used to be Russian owned. Thanks for sharing your valuable time with me. n

BELUGA NOBLE RUSSIAN

Beluga Noble Russian vodka is an ultra-premium product,

which the company claims, they make from natural products.

Mayo is just around the corner…

May 5! Here is an appetizer and a dessert recipe that just scream “Fiesta”.

Nacho Average Chicken Taco Cheesecake* Yield: 1 (10-inch) cheesecake INGREDIENTS

1 2/3 cups finely crushed tortilla chips

¼ cup butter or margarine, melted

3 (8-oz) packages of cream cheese, softened

4 large eggs

½ cup mayonnaise

1 (1.25-oz.) package taco seasoning mix

2 Tablespoons all-purpose flour 1 ½ cups drained and finely

chopped canned premium chunk white chicken

1 ½ cups (6 oz.) shredded col-

by-Monterey Jack cheese blend 1 (8-oz.) carton sour cream

Toppings: sliced ripe olives, cooked whole kernel corn,

chopped green onions, chopped fresh tomato

Picante sauce or salsa

DIRECTIONS

1. Combine tortilla chips and butter: stir well. Firmly press into bottom of a 10inch springform pan: set aside.

2. Beat cream cheese at high speed with an electric mixer until creamy. Add eggs, 1 at a time, beating well after each addition. Add mayonnaise, taco seasoning mix, and flour: beat at low speed until smooth. Stir in chicken and cheese. Pour batter into prepared pan.

3. Bake, uncovered at 325 degrees for 55 minutes. Spread sour cream on top of cheesecake; bake 10 more minutes.

Cool to room temperature in pan on a wire rack. Cover and chill at least 8 hours.

4. To serve, carefully remove sides of

pan. Arrange toppings on cheesecake.

Serve with picante sauce.

Note: One 10-inch cheesecake is a big portion to serve at one time. People start to dig in and it quickly looks a hot mess. I suggest dividing this recipe into two cheesecakes using two smaller springform pans. Serve one and when it’s gone or begins to look less than appetizing pull out the second, beautiful cheesecake. I have even made these in mini sizes which make an impressive single serving appetizer. *I am not exactly sure where this recipe originated from but pretty sure it was from a very old Southern Living magazine.

Chocolate Flan Cake Seriously, this cake is so easy but looks so impressive…everyone will want to “taco” ‘bout it!

INGREDIENTS

Softened butter, to coat the pan ¼ cup cajeta or caramel sauce 10 tablespoons butter, room temperature 1 cup sugar 1 egg, room temperature 1 ¾ cups all-purpose flour ¾ teaspoon baking powder ¾ teaspoon baking soda 1/3 cup cocoa powder 1 ¼ cups buttermilk (measure on the heavy side) FLAN

1 (12-oz) can evaporated milk 1 (14-oz) can sweetened condensed milk 4 ounces cream cheese, room temperature 3 eggs 1 tablespoon vanilla extract GARNISH DIRECTIONS

1. Put an oven rack in the middle of the oven and preheat to 350 degrees F. Coat a 12-cup Bundt pan with a small amount of butter, then coat the bottom with ¼ cajeta and put it in a large roasting pan which will be used as a water bath during baking.

2. For the cake: Add the butter and sugar to a bowl and beat with a mixer until light and fluffy. Beat in the egg. Sift together the flour, baking powder, baking soda and cocoa in a medium bowl.

Beat 1/3 of the flour mixture, and ½ of the buttermilk into the egg mixture.

Repeat, ending with the flour mixture.

Blend only until incorporated.

3. For the flan: In a blender, combine the evaporated milk, condensed milk,

cream cheese, eggs and vanilla. Blend on high for 30-45 seconds.

4. Scoop the cake batter into the prepared Bundt pan and spread it evenly.

Slowly pour the flan mixture over the cake batter. (If the batter appears to mix when you pour the flan mixture on top that is totally ok as the cake and flan will separate during the baking process.) Spray a piece of aluminum foil with cooking spray and cover the pan, leaving loose over the batter but sealing the edges. Add about one inch of hot water to the roasting pan. Slide the pan into the oven and bake for 1 hour to 1 hour and 15 minutes. The surface of the cake should be firm to touch or an inserted toothpick should come out clean when done. Do not overbake. When

GETTING STARTED

Beginning birders frequently get
