Named after the Italian word for “flowers,” flower-shaped fiori is fittingly the signature noodle at Katie’s Pizza & Pasta Osteria in Rock Hill. Having lived in Italy for some time, chef-owner Katie Lee Collier learned how to make fresh pasta and its many forms during her time abroad. Her Fiori Arrabiatta is a wonderfully flavorful and hearty dish featuring a thick sauce that effortlessly clings to the grooves in the unique noodles. How unique? “We are the only restaurant in the U.S. that makes this noodle,” Collier explains. Made in-house like all of the pastas at Katie’s, the fiori is created from locally sourced, four-day milled semolina flour. The dish is paired with Katie’s arrabiatta sauce, which also is prepared in-house with San Marzano tomatoes, mascarpone cheese, chile flakes and fresh arugula. The Fiori Arrabiatta is available at Katie’s Pizza & Pasta Osteria for dinner and lunch, and is included on the restaurant’s lunch special menu.
