a lighter alternative to traditional bar food. Guests can enjoy freshly prepared nigiri and maki rolls, gyoza, and small plates like vegetable or prawn tempura, paired with an ice-cold drink or a shareable beer tower as they catch every moment of the action – whether it’s football, tennis, cricket or F1. Recent global research1 including UK consumers reveals that nearly one third of sports viewers watch games at a bar or restaurant, with Gen Z particularly likely to watch sports outside the home. While another study2 highlights that 77% of Gen Z are more attracted to adventurous, global cuisine. After the final whistle, the afterparty kicks off until the early hours with beer towers, cocktails and free karaoke powered by Lucky Voice. With licence to screen3 all major sports matches, the venue will also accommodate some of the late

international football games taking place over the next few weeks, extending opening hours to 2am. Mohammad Labban, General Manager Hyatt Regency London Blackfriars, says: “We’re very excited to host a food pop-up in collaboration with Miyako. The menu has been designed to be paired with beer and sport viewing and is perfect for groups looking to socialise in a relaxed environment. “This summer, we’re keen to prove that live sport, free karaoke and sushi can be a winning combination. We look forward to seeing our guests come together for exciting games, sushi, premium beer and even sing some of their favourite tunes before the night is over.” Miriam Varoli, General Manager Andaz London Liverpool Street, says: “At Andaz London, we are passionate about creating experiences that connect people through culture, creativity and exceptional food. Miyako has long been an important part of our culinary offering, and we’re excited to see the restaurant step beyond our walls through this partnership with Leaf & Cane. “The pop-up is a fantastic opportunity to introduce more guests to Miyako’s distinctive approach to Japanese dining, while celebrating the energy and social atmosphere that make London’s hospitality scene so special.” The Miyako pop-up menu is now available at Leaf & Cane, located at Hyatt Regency London Blackfriars, until the end of September. CAPE VERDE FOOTBALL CHAMPIONS’ PARADISE! Double champs toast glory at Cape Verde’s home away from home for footballers on Sal

G

rupo Desportivo da Palmeira - back-to-back Cape Verde national football champions, and now the club’s THIRD title winners in history - just chose one place to bed down during their triumphant campaign: The Lagoon Resort’s Meliá Laguna Beach Resort on Sal, the nation’s undisputed home away from home for footballers.

THIS is where champions come to celebrate.

And when the double champions touched back down on home turf, Sal turned into one giant party. Hundreds of fans also mobbed Amílcar Cabral International Airport to welcome the heroes, before sweeping them through the streets in a wild celebratory parade. Palmeira’s stay at Meliá Laguna on Sal wasn’t just a pit stop - it was part of a memorable journey that’s now etched into the island’s sporting folklore. “It is a fantastic achievement for both the club and the island of Sal, and we are delighted that The Lagoon Resort had the opportunity to host the team during this memorable journey,” a resort spokesperson said.

NATIONAL SURGE But the football fever gripping Sal isn’t just local. It’s tapping straight into the same electric current sweeping the whole nation. Cape Verde - 525,000 people on ten volcanic islands - stunned the planet at the 2026 World Cup, becoming the smallest country in the tournament’s 96-year history to reach the knockout stages. The Blue Sharks held Spain, Uruguay and Saudi Arabia to draws before bowing out in extra time to reigning champions Argentina - a heartbreaker, but a triumph that’s changed how Cape Verde sees itself forever.

HOTEL RESTAURANT M A G A Z I N E RESORT RIDING THE WAVE

That giant-killing run has landed in a nation still buzzing from marking 50 years of independence from Portugal, giving Cape Verde - 50 years young - a fresh sense of passion and purpose that’s rippling from the pitch straight onto the sand.

New figures show an astonishing 40% year-on-year surge in 18-35s booking the resort - young holidaymakers no longer satisfied with sunbeds alone, but hungry for real outdoor adventure and authentic culture to go with their all-inclusive luxury. The timing couldn’t be sweeter. The Lagoon Resort is gearing up to celebrate its own landmark 20th anniversary next year, just as Cape Verde’s football-fuelled national pride shows no sign of slowing down. From World Cup giant-killers to doublechampion local heroes celebrating in style - Sal is having the year of its life. And Meliá Laguna is right at the heart of the story.

INTRODUCING THE ELYSIUM COLLECTION A new collection of British hotels, spas and health clubs bringing together restored heritage buildings, restorative wellness and relaxed luxury

L

aunching today, The Elysium Collection is a family of new British hotels, spas and health clubs, providing informal luxury wellness staycations in some of the most beautiful locations in the UK. Rooted in heritage buildings and shaped by their surroundings, the collection is designed to offer a more accessible expression of luxury, with beautifully restored places to switch off, settle in and spend time well. The collection will debut with openings across Cornwall, Surrey and the Lake District from autumn 2026 and into 2027. The first, 56-bedroom Elysium St Mawes, will open this autumn following the transformation of the historic Ship and Castle Hotel on Cornwall’s harbourfront, led in collaboration with 3DReid, the studio behind Gleneagles.

Each hotel within the collection is shaped to feel relaxed, restorative and a home from home, with interiors that balance character and comfort. Drawing on The Elysium Collection’s philosophy of informal luxury, the experience is designed to feel thoughtful rather than formal, with service that is attentive, warm and instinctive, built around the small details that make a stay feel effortless. Guests can expect intuitive touches such as seamless arrivals, rooms prepared for the time of day, locally tailored guides with the best walks, swims and sunset spots, and seasonal details that reflect each destination, from muddy boots cleaned overnight to warming comforts after a day outdoors. The aim is to help guests switch off quickly, settle in naturally and

HOTEL RESTAURANT M A G A Z I N E

feel immersed in their surroundings from the moment they arrive. Dining across the collection is headed up by Executive Chef Stephane Delourme, formerly Head Chef at Rick Stein’s The Seafood Restaurant for over two decades and later Group Chef for the wider restaurant group. Menus will celebrate the best of what’s grown, reared and sourced nearby, with dishes shaped by the season, surrounding landscape and community. Dining will be relaxed, generous and rooted in each hotel’s surroundings. In Cornwall, this will mean a strong focus on day-boat fish, shellfish and coastal ingredients, alongside produce from nearby farms and growers. Across the wider collection, Delourme will work closely with trusted local suppliers to create menus that feel connected to place, simple in spirit and ingredient-led, with an emphasis on flavour, provenance and the pleasure of eating well after a day outdoors. Wellness sits at the heart of The Elysium Collection experience, with each hotel designed to offer space to slow down, recharge and reset. Each hotel will offer a considered spa and wellbeing experience tailored to its location. Elysium St Mawes will launch with TEMPLESPA as its spa partner, offering treatments designed to restore, relax

and reset. A second spa partner will be appointed for selected future properties, creating a collection-wide wellness offer that feels distinctive by destination while remaining rooted in restoration, comfort and calm. The experience is designed to leave guests feeling calmer, restored and grounded. CEO James Houlston, an experienced hotelier, who was responsible for transforming The Swan Hotel in the Lake District, and St Michaels Resort in Falmouth into two of the leading staycation resorts in the UK, comments: “When developing The Elysium Collection, we wanted to reflect how people travel today. Guests are more time-conscious than ever, and they’re seeking value not just for their money, but for their time. That became our guiding principle, to deeply understand our guests, ensuring that from the moment they arrive, everything has been thoughtfully curated, allowing them to immediately switch off, settle in, and feel they are exactly where they want to be.” Many of the hotels within the collection are historic properties, undergoing thoughtful restorations to reflect the heritage and character of their surroundings. Working with leading architects and designers 3DReid, each space is shaped by its location, from materials and interiors to the overall atmosphere. Design details will draw on a carefully curated mix of British makers, natural materials and locally inspired finishes, with each property developed to feel individual rather than formulaic. Across the collection, interiors will combine restored architectural features with layered textiles, considered lighting, characterful bathrooms and bespoke pieces chosen to reflect the setting of each hotel. Specific hotel names, locations, facilities, design partners, makers and suppliers will be announced as each property approaches launch.

RESTAURANT RELAUNCH AND NEW LEADERSHIP A fresh chapter for iconic seafront hotel - The Imperial Hotel in Llandudno

O

NE of Wales’ best-known hotels is blending more than 150 years of heritage with a fresh culinary direction as it invites locals and visitors alike to rediscover one of Llandudno’s most iconic destinations. The Imperial Hotel - which has welcomed generations of families, holidaymakers and returning guests to the promenade in the ‘Queen of the Welsh Resorts’ - has unveiled a contemporary new food offering designed to establish its acclaimed Chantrey’s Restaurant as a dining destination in its own right – open to all.

The relaunch comes as the four-star hotel enjoys a strong start to the summer season and marks the beginning of a new era under General Manager Ronald George, who brings more than 25 years’ international hospitality experience to the historic seafront landmark.

Ronald, who lives in Chester, began his career with Sheraton and Marriott after training in Hotel Management in his native India. After relocating to the UK, he went on to hold senior roles with Hilton - including DoubleTree by Hilton Liverpool - and Holiday Inn by IHG, before joining The Imperial. “I am enjoying my time here immensely,” he said. “It was a fantastic proposition to join this amazing team and follow in the footsteps of Geoff Lofthouse, who devoted more than 40 years to The Imperial and did such a wonderful job. “My aim is to put my own stamp on the hotel while retaining its identity as a much-loved venue on Llandudno’s seafront. There is an expectation and a

HOTEL RESTAURANT M A G A Z I N E very high standard here, and the team and I will endeavour to deliver it. “We are simply building on the reputation of this great landmark and making it even more sustainable for years to come.” At the heart of the relaunch is Chantrey’s new, standalone identity, complete with its own entrance, making clear that anyone can enjoy the restaurant, whether staying overnight or simply visiting for lunch, dinner or a special occasion.

The new menus celebrate seasonal Welsh produce alongside comforting favourites given a contemporary twist, while the venue’s popular terrace offers breathtaking views of the Llandudno shoreline. Leading the kitchen is Head Chef James Williams, whose journey from pot washer to his current position reflects a drive and ambition to succeed. Ronald added: “We want people across Llandudno, North Wales and beyond to know they don’t have to stay with us to dine with us. “We have some incredible dishes celebrating Welsh produce, alongside hearty seasonal food that people know and love.” The Imperial employs more than 85 people, with additional seasonal staff taken on through the summer months,

and welcomes more than 20,000 guests each year, with around half of those returning time after time, in part due to the “incredible team” of dedicated staff. Demand continues to grow, with almost half of this year’s Christmas packages already sold. Alongside enhancements in technology, its website and social media, the hotel is also expanding its events offering, hosting everything from weddings, banquets and conferences to birthdays, baby showers and family celebrations in its function spaces. There is also a swimming pool and gym available to guests, members and visitors using a day pass. “We have a responsibility to our staff, our guests and the many local businesses we work with. Supporting local suppliers has always been important here and adds so much value to our offering,” said Ronald. “This is my first summer at The Imperial and it has been fantastic. July is almost fully booked, and August is looking very encouraging. “People often arrive for the day, fall in love with Llandudno and decide they don’t want to leave, and that’s exactly the feeling we want people to have when they visit The Imperial.” To explore the new menus, book a table or find out more about celebrations, events and overnight stays, visit The Imperial Hotel or Chantrey’s Restaurant.

SET-JETTING IN SICILY _ Rocco Forte Hotels Launches a Mediterranean Odyssey Inspired by Christopher Nolan’s New Film

To celebrate the return of history’s most legendary traveller to the big screen, Rocco Forte Hotels launches The Sicilian Odyssey, a new itinerary through dramatic nature reserves, ancient archaeological sites and sweeping coastal landscapes connected to Homer’s epic and Sicily’s cinematic appeal. Created exclusively for guests of Villa Igiea and Verdura Resort, The Sicilian Odyssey draws inspiration from Homer’s epic tale and the Sicilian landscapes associated with Christopher Nolan’s forthcoming film, arriving in cinemas this July. The itinerary offers three distinctive ways to discover Sicily’s mythology, cinematic scenery and extraordinary natural beauty: • The first stop is the island of Mothia, set within the Stagnone Nature Reserve and long associated with Sicily’s ancient Mediterranean history. Following a leisurely walk through surrounding Grillo vineyards, guests visit the Whitaker Museum, home to the celebrated Ephebe of Mothia, a remarkable 5th century BC sculpture, before savouring Sicilian specialities such as couscous and caponata in a secluded garden setting. • The second chapter of the journey is the Zingaro Nature Reserve, reached via a two-hour yacht cruise from either Villa Igiea or Verdura Resort. Sailing along Sicily’s dramatic coastline, guests pass towering sea

stacks, rugged cliffs and legendary sea caves before dropping anchor in secluded bays for a swim in crystalclear waters. • The final stop is the island of Favignana, whose rugged coastline and turquoise coves have made it a compelling setting for cinematic interpretations of the Mediterranean. Highlights include Cala Rossa, Cala Rotonda, Cala Azzurra and Cala del Bue Marino, alongside the town’s charming harbour and the historic Tonnara Florio, a powerful testament to the island’s centuries-old tuna fishing traditions and the legacy of Vincenzo Florio, who established Favignana as a leading centre of tuna production in the 19th century. Offering an immersive exploration of Sicily’s mythology, landscapes and cultural heritage, the three stops invite guests to experience the Mediterranean through the lens of Rocco Forte Hotels and the warmth of Sicilian hospitality. The journey continues at Villa Igiea and Verdura Resort, where a photographic exhibition featuring a selection of striking images from the film set, courtesy of Universal Pictures, provides a captivating finale to the experience. SICILIAN ODYSSEY is available exclusively to guests of Villa Igiea and Verdura Resort and can be tailored to include one, two or all three experiences. unta Beer, the UK’s first non-alcoholic Indian craft beer brewed specifically to pair with Indian cuisine, has secured a new distribution partnership with Champers Drinks, marking a major step in the brand’s rapid expansion across the UK hospitality sector. The agreement will see Champers Drinks distribute Bunta Beer across London and the South East, increasing availability in pubs, restaurants, hotels and specialist retailers as demand accelerates for premium alcohol-free beers designed for flavour-led dining occasions.

Occasion-led drinking - a gap in the market that needed filling At its core, Bunta Beer was created to solve a simple but overlooked problem: how beer pairs with modern Indian food. The brand exists to elevate the long-standing “curry and a pint” ritual by offering a beer designed specifically for spice-led cuisine rather than traditional lager styles that often overpower it. Since launching in 2025, Bunta Beer has secured more than 100 UK listings across leading venues including Kricket, Oudh 1722, Pahli Hill Bandra Bhai, Aspen & Meursault, East West Pizza, DELLI, Wise Bartender, The Alcohol Free Company, Vintopia Wine, Londis N16 and the Royal Albert Hall.

The brand was also awarded Gold at the 2026 London Beer Competition. Commenting on the partnership, Kilesh Patel, Managing Director at Champers Drinks, could we get someone quite senior said: “Bunta fills a genuine gap in the market. We are seeing increasing demand from restaurants and premium hospitality venues for alcohol-free beers that have a clear point of difference. Rather than simply being another lager, Bunta has been developed specifically to pair with Indian food and complement spice and heat, which makes it a compelling proposition for our customers. Gunikka has built a brand with a fantastic story, outstanding product quality and strong consumer appeal, and we’re excited to help accelerate its growth across the UK.” Champers Drinks is a leading independent drinks wholesaler with strong reach across London and the South of England, offering a broad portfolio designed to support hospitality operators with a wide range of premium beverage solutions. HOTEL RESTAURANT M A G A Z I N E From a $100k Adidas role to the brewing industry BUNTA BEER was founded by Gunikka Ahuja, who left a six-figure career as a Textile Innovation Manager at Adidas in Los Angeles to build a beer brand inspired by the UK’s “curry and a pint” culture. Born and raised in New Delhi, Ahuja moved to Los Angeles at 17 to study Textile Technology before building a career in innovation. Regular visits to London revealed a disconnect between the evolution of Indian cuisine and the beers typically served alongside it. “The food had evolved, but the beer hadn’t,” says Ahuja. “Whether I was eating at Brick Lane curry houses or modern Indian restaurants pushing the cuisine forward, I kept finding the same experience. The beers were harsh, overly bitter, heavy and gassy. Before I’d even started eating, I’d switched to a soft drink.” The turning point came during a conversation with her brother, who said simply: “Our food deserves better.”

Brewed for Indian food Bunta’s flagship 0.5% Citrus Lager has been developed through more than 50 iterations specifically for pairing with Indian cuisine. The beer delivers a light, crisp profile with subtle citrus notes from orange peel and a hint of coriander seed ingredients chosen to reflect flavour compounds found in Indian cooking. Lower carbonation helps reduce heaviness and bloating, while the flavour profile is designed to cut through spice, cleanse the palate, and complement dishes ranging from creamy kormas to fiery vindaloos. The beer is vegan, gluten-free (less than 20ppm), and contains just 60 calories per 330ml can.

A new expression of modern Indian identity Bunta’s identity reflects a broader cultural shift in how Indian heritage is expressed globally. The brand name references “Bunta,” inspired by traditional codd-neck bottles used for India’s Banta Soda, while its distinctive pink can features a stylised character based on Ahuja’s brother. “The character represents a new generation of drinkers who don’t feel the need to drink alcohol to be part of the moment,” Ahuja explains. “It could be anyone you see in Shoreditch or Brixton — culturally rooted, making different choices.”

Strong early growth across the UK Since launch in August 2025, Bunta Beer has built strong early traction and is now available in more than 40 restaurants across the UK, on draught in selected venues, and through a growing direct-to-consumer platform. The brand has also gained significant organic momentum via social media, where hospitality buyers increasingly discover and engage with the product directly. With Champers Drinks now onboard, Bunta Beer is positioned to accelerate distribution across the UK on-trade and specialist retail channels even further - Gunikka Ahuja plans to have XXX listings in the on-trade by the end of the year. Women on Tap recently reported that over a third of women make beer, but only 7% of brewers are women.

ORIGINAL TRAVEL LAUNCHES NEW ART ITINERARY ALONG THE CÔTE D’AZUR Inspired by the Royal Academy Of Arts’ Forthcoming French Riviera Exhibition

T

oday’s travellers are looking beyond sightseeing, seeking trips that immerse them in culture, history, and artistic inspiration. In light of this, Original Travel, the British tailor-made travel specialist, has created Art and the Côte d’Azur, a seven-day road-trip itinerary through the French Riviera and Provence, celebrating the region’s enduring influence on art, architecture and culture. Following in the footsteps of some of history’s greatest artists, the itinerary explores the landscapes, creative communities and cultural institutions that have made the Côte d’Azur one of

Europe’s most inspiring destinations for generations. As the region continues to enjoy renewed cultural attention, including the Royal Academy of Arts’ forthcoming exhibition Painting the French Riviera, opening at Burlington House, London, on 2nd October 2026, for which Original Travel is a Cultural Partner, the itinerary offers travellers the opportunity to experience first-hand the places that inspired artists including Monet, Picasso, Matisse, Cézanne, Renoir, Braque and Yves Klein, while discovering how the Riviera continues to shape contemporary creativity today.

HOTEL RESTAURANT M A G A Z I N E Tom Barber, Co-Founder and Brand Director of Original Travel, says, “We’re seeing a shift from people wanting to simply ‘go somewhere nice’ to wanting to feel something: intellectual stimulation, emotional connection, a sense of belonging. The likes of art, literature, and music are shortcuts to that depth, and the French Riviera has no shortage of them. This journey through the Côte d’Azur allows travellers to experience these landscapes just as some of the world’s most famous artists have, bringing their work to life and connecting art, history and culture in a way that only travel can achieve”.

The Itinerary: From Nice to Arles Tracing the landscapes and creative communities that inspired some of modern art’s greatest innovators, the journey begins in Èze, the hilltop village above Nice that captivated artists including Matisse, Renoir, Picasso and Chagall. A private tour reveals the landscapes and viewpoints that helped shape their artistic visions. The route continues to Saint-Paul de Vence, one of the Côte d’Azur’s most enduring artistic enclaves, where travellers visit the Fondation Maeght, home to one of Europe’s most significant collections of twentiethcentury art. Alternatively, guests can explore La Colombe d’Or, the legendary hotel and restaurant whose walls form a living museum, with works by artists including Picasso, Matisse and Braque collected through its

long-standing relationship with the creative community. From here, the journey continues to Vence, where Matisse lived from 1943 to 1948. Guests visit the Chapelle du Rosaire, a masterpiece conceived and designed entirely by Matisse, from the architecture and stained-glass windows to the murals and priestly vestments, representing one of the artist’s most personal creative achievements. The journey then heads towards Saint-Tropez and the Musée de l’Annonciade, a jewel of modern art history housed in a former chapel. The museum showcases works by the Fauves, Pointillists and Impressionists who were drawn to the Côte d’Azur, including artists such as Paul Signac, Henri-Edmond Cross, André Derain, Matisse, Braque and Raoul Dufy. After exploring Porquerolles and Provence, the journey concludes in Arles and the surrounding region, including a visit to Carrières des Lumières in Les Baux-de-Provence. Set within a former stone quarry, this immersive cultural venue hosts Picasso, The Art in Motion until January 2027, celebrating the breadth of Picasso’s creative output beyond painting and drawing. Throughout the journey, Original Travel can arrange for private guides and specialist-led visits to provide deeper insight into the artistic movements, personalities and places that shaped the Côte d’Azur’s cultural identity, allowing travellers to experience the landscapes behind some of modern art’s most celebrated works.

CAN YOU TASTE MUSIC? Andaz London’s music curator launches new soundtracked cocktail experience

W

hat if your cocktail came with its own soundtrack? Rake’s Café Bar at Andaz London Liverpool Street has launched The Sound of Cocktails, a new menu pairing ten original cocktails with bespoke playlists inspired by each drink’s ingredients, flavour profile and character. From Japanese city pop accompanying a delicate blend of gin, umeshu, grapefruit and chamomile, to neo-soul paired with rich bourbon, butterscotch and absinthe serve, the menu invites guests to explore how different drinks might translate into sound. The concept was created by Rake’s Beverage Manager, Guilherme Vieira, and Andaz London Liverpool Street’s music curator and resident DJ, Michelle Lynn. The two have combined their respective areas of expertise to come up with ten innovative new serves with curated playlists featuring genres ranging from commercial crowdpleasers to leftfield, obscure cuts. The concept is designed to encourage visceral and multisensory engagement with new music – asking guests to taste the beats they’re hearing and feeling and listen to the flavours they’re drinking. Exposing guests to

selected recommendations from the hotel’s in-house music curator is also an intentional move away from the rise in algorithm-led playlists. Each drink is served with a garnish tag and collectible coaster featuring a QR code, allowing guests to listen to its corresponding playlist during their visit or stream it at home. Michelle’s selections are also woven into the soundtrack at Rake’s throughout the evening.

HOTEL RESTAURANT M A G A Z I N E On the sonic inspiration behind The Sound of Cocktails, DJ Michelle Lynn said: “Guilherme and I have wanted to bring this idea to life for a while. We sat down together to taste every cocktail and talk about the flavours, textures and emotions each one evoked, before translating those into music. “My favourite pairing is The Aftermath. Its rich herbal notes and buttery finish immediately lend themselves to neo-soul and quiet storm, with artists like Hiatus Kaiyote, Cleo Sol, Sade, and Charlotte Dos Santos creating exactly the atmosphere we wanted.” Beyond the new concept, Michelle also curates Rake’s popular Brunch Paradiso every Saturday, where a rotating femme-focused line-up of London-based DJs provides the soundtrack to brunch alongside unlimited cocktails or prosecco. Later this year, Michelle will also start hosting DJ masterclasses at Rake’s, giving guests the chance to learn the art of mixing in one of East London’s most vibrant late-night destinations.

WHO’S COOKING DINNER?’ RETURNS WITH A CONSTELLATION OF CULINARY STARS Leukaemia UK’s flagship culinary event ‘Who’s Cooking Dinner?’ is back

W

ith another star-studded line-up – and this year, it’s a constellation of Michelin stars from around the UK. Returning to the Dorchester in London on Monday 14th September, the event will bring together the UK’s most exciting and sought after chefs, ready to raise money for leukaemia research. Now in its 27th year, ‘Who’s Cooking Dinner?’ is a one-of-a-kind fine dining experience that sees the toast of the UK’s restaurant scene come together in one kitchen, each creating, cooking and serving up a bespoke menu for their own table of 10 guests. But this is not just any fine dining experience. The twist? Nobody knows who’s cooking their dinner until the night itself. For one night only, guests will be treated to a unique menu from one of 20 of the UK’s most celebrated chefs. With 20 Michelin stars between them, this year’s line-up of incredible chefs reads like a menu of Britain’s most talked-about culinary talent. Names that food-lovers and hospitality insiders have been watching closely. The 2026 line-up includes: Mark Birchall (Moor Hall), Elliott Grover (The CUT at 45 Park Lane), Matt

Abé (Bonheur), Deepak Mallya (The Ritz), Roberta Hall-McCarron (The Little Chartroom) and Andy Beynon (BEHIND), with more to be announced. Co-founded by restaurant luminaries Chris Corbin OBE and Peter Gordon ONZM in 1999, the event has built a legacy not just as a fundraiser, but as a stage for Britain’s best chefs. Over the years, many of the chefs who first appeared at the event as rising stars have since gone on to earn Michelin stars, open acclaimed restaurants and become sought-after names on British menus, including Matt Abé, Sam White, Elliott Grover, Tom Barnes, Tom Booton and many more talented chefs.

Andy Beynon, chef and founder of BEHIND, said: “‘Who’s Cooking Dinner?’ is genuinely one of the best services of the year. I’m thrilled to be returning.” Yavuz Pehlivanlar, Chief Executive Officer of Hakkasan Group, said: “Hakkasan are proud to support ‘Who’s Cooking Dinner?’ again this year and we are looking forward to what promises to be a great evening.” ‘Who’s Cooking Dinner?’ doesn’t just champion rising stars in the culinary space, it also supports the brightest early career researchers to help stop leukaemia devastating lives. Every hour, someone in the UK is diagnosed with leukaemia, with 60,000 people currently living with the disease. And despite medical advances, just half of those will survive for longer than five years. Funds raised at the event go directly to Leukaemia UK to help fund research into better, kinder treatments for

leukaemia. Since they began in 2015, the charity’s prestigious John Goldman Fellowships have funded some of the brightest rising stars of science, many of who have gone on to discover important breakthroughs in leukaemia treatment. Fiona Hazell, Chief Executive of Leukaemia UK, said: “‘Who’s Cooking Dinner?’ is more than an evening of gastronomic delight – it’s about coming together to help save lives. For those who receive a leukaemia diagnosis, it can have a devastating impact on them and their families. At Leukaemia UK, we believe that research has the power to change this. Every dish served and every pound raised at ‘Who’s Cooking Dinner?’ will help us fund groundbreaking research into kinder, more effective treatments for leukaemia. Together we can stop leukaemia from devastating lives.” For more information and to enquire about tickets, visit www.leukaemiauk.org.uk/whoscooking-dinner/ or contact specialevents@leukaemiauk.org.uk.

BUSINESSES ARE SWAPPING BOARDROOMS FOR THE PEAK DISTRICT AND PEAK EDGE Hotel has just been recognised for doing it sustainably

reen Meetings Bronze Award recognises the Derbyshire hotel’s commitment to more sustainable corporate retreats, leadership away days and business events More businesses are choosing countryside retreats over city boardrooms as organisations look to bring teams together in more inspiring surroundings while reducing the environmental impact of meetings and events. From leadership retreats and strategy days to overnight planning sessions and client entertaining, companies are increasingly seeking venues that combine high-quality hospitality with meaningful experiences that support creativity, wellbeing and stronger team connections. Peak Edge Hotel, on the edge of the Peak District National Park, has now been recognised for exactly that after achieving the Green Meetings Bronze Award from Green Tourism following an independent assessment of its sustainability practices across meetings, conferences and business events. The accreditation caps a remarkable year for the family-owned hotel, which

has already been recognised as one of England’s leading independent hotels after winning Silver in the VisitEngland Awards for Excellence and Gold in the Gastropub and Boutique Hotel categories at the Midlands Food, Drink & Hospitality Awards. That’s on top of securing entry into the Michelin Guide and achieving an AA Quality Score of 85%.

Sunset at Peak Edge

Unlike traditional conference venues, Peak Edge combines flexible meeting spaces with 27 luxury bedrooms, award-winning dining and immediate access to some of the country’s most spectacular countryside. Businesses can move from strategy sessions to walks and bike rides across the Peak District, enjoy dining in the hotel’s

HOTEL RESTAURANT M A G A Z I N E two AA Rosette Red Lion Restaurant or extend meetings into overnight stays, creating a more memorable and productive experience for delegates. Sustainability is woven throughout that experience. Much of the produce served in the Red Lion Restaurant comes directly from Walton Lodge Farm Estate, owner Steve Perez’s nearby 360-acre family farm, where native breed Belted Galloway cattle, Berkshire pigs, Dorset sheep, freerange hens, fruit, vegetables, herbs and honey are all produced just minutes from the hotel. The hotel also provides complimentary electric vehicle charging, works closely with local suppliers and continues to invest in initiatives that reduce waste, enhance biodiversity and support responsible tourism across the Peak District. Mark Thurman, Managing Director of Peak Edge Hotel, said: “The way businesses meet is changing. More organisations are looking for venues that offer something beyond four walls and a projector. They want environments that encourage fresh thinking, collaboration and connection, while also reflecting their own values around sustainability. “One of the things that makes Peak Edge different is that people can step away from the meeting room and experience everything the Peak District has to offer. Whether that’s sharing dinner in our two AA Rosette restaurant, enjoying the views across the Derbyshire countryside or staying overnight rather than rushing home, it creates a much more rewarding experience for delegates. “Achieving the Green Meetings Bronze Award is particularly meaningful because it recognises that we’re delivering those experiences while continually improving our environmental performance and supporting the local communities around us.”

Steve Perez, owner of Peak Edge Hotel, added: “Hospitality and sustainability should go hand in hand. Having Walton Lodge Farm Estate just a few minutes from the hotel gives us a unique opportunity to produce much of what we serve ourselves, significantly reduce food miles and support local employment, while giving guests complete confidence in where their food has come from.

“Whether someone is visiting us for a weekend break, a wedding, a celebration or a business retreat, our aim is always the same - to create memorable experiences that celebrate everything that’s special about Derbyshire while protecting it for future generations. This award is wonderful recognition of the commitment shown by our entire team.” Green Tourism has spent almost 30 years helping tourism and hospitality businesses improve their sustainability credentials through independently verified assessments. The Green Meetings Award recognises venues that demonstrate responsible environmental management, sustainable procurement, community engagement and resource efficiency, helping organisations identify venues capable of supporting more sustainable business events. The latest accreditation continues an exceptional period for Peak Edge Hotel, which has established itself as one of the country’s leading independent countryside hotels through continued investment in guest experience, award-winning food and warm, family-owned hospitality.

DOUBLE DUTCH SECURES NATIONWIDE MAJESTIC LISTING Raissa and Joyce De Haas’s Double Dutch range has secured a nationwide retail listing with the UK’s largest specialist drinks retailer, Majestic Wine.

P

remium mixer brand Double Dutch has expanded its range of 150ml cans and introduced a bold new packaging design as demand for the format continues to grow across the on-trade sector, with Majestic being one of the first consumer retailers to list the full range. The selected SKUs will also be available via Majestic’s specialist on-trade division, Majestic Commercial, providing products to more than 4,200 independent pubs, fine-dining restaurants, bars, hotels and event venues across the UK.

As well as the cans, Majestic has listed Tonic Water and Skinny Tonic Water in the glass bottle format. Now available in more than 200 Majestic stores, the range includes: • Double Dutch Soda Water 6x150ml Can • Double Dutch Pink Grapefruit Soda 6x150ml Can • Double Dutch Cucumber & Watermelon Soda 6x150ml Can • Double Dutch Ginger Ale 6x150ml Can • Double Dutch Ginger Beer 6x150ml Can • Double Dutch Indian Tonic Water 6x150ml Can • Double Dutch Skinny Tonic Water 6x150ml Can • Double Dutch Sun & Sea Tonic Water 6x150ml Can • Double Dutch Elderflower Tonic Water 6x150ml Can • Double Dutch Skinny Tonic 8x500ml Bottle • Double Dutch Tonic Water 8x500ml Bottle The can range features a bold design refresh: a natural extension of Double Dutch’s wider brand refresh, aligning with the elevated look and feel

HOTEL RESTAURANT M A G A Z I N E introduced in its 200ml glass bottles last year. The updated aesthetic is bold, vibrant and flavour-led, with a more refined, premium finish that Double Dutch says better reflects the quality of the liquid inside. Designed to invite discovery, the artwork features intricate details and subtle storytelling elements. Hidden within the designs are visual cues that reflect each flavour’s origin and composition - from botanicals and citrus fruits to distillation references. A recurring elephant motif nods to the Indian origins of tonic water, adding a layer of heritage to the modern visual identity. Double Dutch refreshed their glass bottle design in August 2025, with the ‘swirl’ design contributing to a 15% increase in carbonation of the liquid inside. Raissa de Haas, co-founder of Double Dutch, said:

“The expansion of our can range is being driven by increasing demand across both the on-trade and retail sectors. Our nationwide availability through Majestic Wine represents an important milestone for the brand and reflects growing demand for delicious, flavour-led premium mixers in convenient, single-serve formats.” James Cox, Buyer for Majestic says: “Our customers are always looking for quality products with a story they can connect to, and Double Dutch ticks both boxes. First and foremost they are excellent flavour-first drinks that can be enjoyed with or without alcohol, but they are also a brilliant female-owned brand, whose B-Corp status and carbon-negative credentials make them exactly the kind of forwardthinking partner we want on our shelves.”

THE TASTE OF SAUDI HOW LONDON’S FOOD SCENE IS EMBRACING SAUDI CULTURE For years, Saudi cuisine remained one of the Middle East’s best-kept culinary secrets in the UK.

W

hile London diners became familiar with Lebanese mezze, Turkish grills and Persian cooking, Saudi food largely remained absent from the capital’s restaurant scene. From the arrival of Saudi-owned cafés and restaurants to a new generation of chefs, cookbook authors and food

entrepreneurs championing the Kingdom’s culinary heritage, Saudi culture is finding a place at London’s table. In the last few years up and coming chefs have hit the forefront of this emerging foodie scene including: • Ayman Al-Zubaidi, founder of Hijazi Corner, widely recognised as London’s first Saudi Arabian restaurant. • Marwa Alkhalaf, one of the UK’s most respected Middle Eastern chefs. • British Saudi chef and spice expert Halle Faraj who founded Camelēr Spice Co. • MasterChef UK finalist Madeeha Qureshi and author ‘The Red Sea Cookbook’ Saudi cuisine is arriving at a moment when British diners are increasingly seeking authentic, region-specific food experiences and moving beyond broad labels such as “Middle Eastern cuisine”. As London’s appetite for discovery grows, a new generation of chefs, restaurateurs and authors are introducing Saudi Arabia’s diverse culinary traditions to UK audiences.

POB HOTELS’ NEW SUMMER LAUNCHES

The White Hart Hotel & Jimmy Doherty

P

oB Hotels, the collection of Britain’s finest independent hotels, is giving guests plenty of reasons to pack a bag this summer. Ambassador Jimmy Doherty and the White Hart Hotel in Lincoln both join the fold, while thoughtful refurbishments, food-led adventures and milestone moments all help shape the months ahead. The season begins with PoB Hotels’ latest ambassador, Jimmy Doherty, farmer, conservationist and presenter. Best known for programmes such as Jimmy’s Farm, Jamie and Jimmy’s Friday Night Feast and Jimmy Doherty’s Big Bear Rescue, he knows a thing or two about kitchen gardens, great food and the great British outdoors. All of which makes him a natural fit for a collection shaped by character, landscape and a strong sense of place. Guests can follow in his impressive footsteps with Jimmy’s Farm to Fork Scottish Adventure, a curated PoB break taking in Prestonfield House in Edinburgh, Mar Hall near Glasgow and Ayrshire’s Glenapp Castle. The itinerary moves through Scotland by way of estate-to-plate dining, whisky, kitchen gardens, wildflower planting and coastal produce. Good boots and an even better appetite recommended. Also worth seeking out this summer is the White Hart Hotel, one of the newest additions to the PoB Hotels portfolio. Set on Bailgate in the heart of historic Uphill Lincoln, just steps from the cathedral and castle, this newly

refurbished hotel places guests in one of the city’s most storied corners. Perfect for history lovers who also appreciate a fine dinner, it offers elegant accommodation across rooms, suites and townhouses, dining at 2 AA Rosette Antlers Restaurant and treatments at The Aquitaine Spa. Elsewhere, several member hotels are unveiling new ways to stay. Over in Ayrshire, Glenapp Castle’s The Nest, a nature-immersed, one-bedroom garden cottage suite with its own private outdoor wellness sanctuary, opens on 1 July for those who like their luxury with a little birdsong. And in London, The Athenaeum Hotel & Residences is taking the high road quite literally, with two new tenth-floor suites looking out across Buckingham Palace and Green Park. At Gravetye Manor in West Sussex the gardens are not the only things in bloom. Celebrated local designer Molly Mahon is bringing her joyful world of colour and pattern to the hotel, marking her first interior partnership with a Sussex property. Of course, summer escapes are not only about where you stay, but how you feel when you return home. Happily, the season brings a fresh

HOTEL RESTAURANT M A G A Z I N E crop of wellness openings too. The Lake District’s Armathwaite Hall is making a strong case for checking in and staying put, with a new Japaneseinspired Head Spa, the launch of Zaika restaurant and no less than three individually designed Estate Suites. In the Cotswolds, Calcot & Spa has added its new Recovery Garden, an outdoor space featuring infrared saunas and invigorating cold plunges for the brave. And for anyone who likes their fresh air with a little more altitude, the hotel has just opened two stunning, two-bedroom treehouses complete with their own sauna. The Yorkshire Dales offer another reason to slow the pace, as Yorebridge House launches the Meadow Suite, a converted barn with a private courtyard, log burner and Japanese spa bath made for long, lazy stays. Its new River Retreat adds a further excuse not to rush, with riverside treatments, a sauna, hot tub and glacial shower. Food, gardens and excuses to linger are threaded through the season too. The Montagu Arms embraces a New Forest summer with its Grow with the Flow breaks, Sip and Graze lunches and the promise of an evening in the company of Saturday Kitchen’s wine expert, Helen McGinn. Several member hotels have reason to pop a cork or two this year. The Priory in Wareham turns 50 with a series of seasonal experiences, proving that half a century deserves rather more than a card. Ellenborough Park raises a glass to 15 years on 19th July with a garden party on the South Lawn complete with live entertainment, traditional games, garden cocktails and family-friendly activities.

On the Durham Heritage Coast, Seaham Hall is honouring its 25th anniversary with 25 Acts of Kindness, swapping silver balloons for beach clean-ups, local charities and people making a difference across the North East. Thurlestone Hotel reaches 130 years under the ownership of the Grose family, a milestone that feels less like an anniversary and more like a very well-kept British institution. A special stay will be available later this year. And Sopwell House is leaning happily into its 40th with a 1980s-themed treat, Ruby Escapes, a Through the Decades dining menu and a retro cocktail collection. Shoulder pads and leg warmers optional but encouraged. Finally, for those whose idea of a summer escape is less about unpacking and more about improving their swing, Hebridean Princess offers a September sporting escape with a difference. Its seven-night Golf in Argyll and Ayrshire sailing explores Scotland’s west coast courses, with eight-time Ryder Cup player Colin Montgomerie OBE on board for four nights. With ever-changing vistas from the deck, it makes a strong case for taking the game beyond the clubhouse. Kalindi Juneja, Chief Executive of PoB Hotels, comments: “Summer is always a wonderful time to explore the PoB Hotels collection, but this year feels especially full of character. From Jimmy Doherty joining us as ambassador and The White Hart Hotel becoming part of the portfolio, to new suites, restaurants, wellness spaces, countryside escapes and milestone celebrations, our member hotels are bringing real energy to the season. It is a joyful reminder of what makes PoB Hotels so special: independent places with personality, a strong sense of place and plenty of reasons to stay a little longer.”

CAPELLA RESIDENCES BRISBANE TO DEFINE A NEW ERA OF RESIDENTIAL LIVING IN AUSTRALIA In partnership with Verso Projects, a riverside renaissance at Shafston House will introduce Capella’s private residential expression to Brisbane in 2029.

Capella Hotel Group and Verso Projects announce a landmark partnership to debut Capella Residences Brisbane in 2029. Marking the third Capella Residences globally after Seoul and Bangkok – and the first branded residence of any kind in Brisbane – this extraordinary collaboration will see the restoration and transformation of the historic Shafston House estate into an exclusive riverfront address. The result will be a rare offering where heritage meets contemporary architecture, and where Capella’s signature service defines a new era of residential living in Australia. Set along the Brisbane River at Kangaroo Point, Capella Residences Brisbane will reimagine Shafston House, one of the city’s most treasured estates that has stood as a defining presence for more than 174 years,

through a lens uniquely aligned with Capella’s heritage-led philosophy. Renowned for curating culturally rich and historically significant destinations, Capella is a natural custodian for this landmark site – once one of Brisbane’s most prominent private residences and a defining symbol of prestige in its era.

HOTEL RESTAURANT M A G A Z I N E The project aims to set a new benchmark for integrated residential living in Queensland, combining world-class design, bespoke interiors, and hotel-inspired services. The lifestyle precinct will offer residents communal recreation, restorative, and residential facilities, integrating the luxuries of exceptional hotel amenities with the intimacy and comfort of a private home. Central to this offering will be the Capella Living Room – a signature expression of the Capella promise – providing a welcoming, residential-style space that fosters connection, cultural immersion, and personalised service, seamlessly extending the brand’s hospitality ethos into everyday living. Additionally, two River Homes will be constructed along the embankment, complemented by a private marina, porte cochère with drop-off and pickup facilities, and private basement garage parking. Expansive gardens and six pools (three of which are for all residents), designed by award-winning landscape architects, will further enhance the estate’s luxury and appeal. Capella Residences Brisbane will build on Capella Hotel Group’s presence in Australia, including the awardwinning Capella Sydney – and The Lands by Capella precinct. Bringing this project to life will be Brisbanebased developer, Verso Projects, who currently holds an impressive $8.5bn portfolio with over 6,000 dwellings in their pipeline, and a diverse asset class spanning apartments, townhouses, retail and commercial. With a profound belief in Brisbane’s future, Verso approaches each project with a long-term vision - one that balances innovation with heritage sensitivity, and global inspiration with local authenticity. Verso’s partnership with Capella Residences reflects a shared philosophy: that exceptional places are born from thoughtful design, cultural respect and uncompromising standards.

The partnership between Capella Hotel Group and Verso Projects signals a new level of international engagement in the city’s future and is expected to further elevate Brisbane’s standing within the global prestige property landscape. With strong population growth, transformative infrastructure investment and increasing global visibility – particularly in the lead-up to the 2032 Olympic Games – Brisbane has emerged as one of Australia’s most compelling luxury markets. Roland Fasel, President, Capella Hotel Group, says, “Brisbane is a city on the cusp of something remarkable – and Capella Residences is our commitment to being part of that story. The Capella residential experience is more than luxury – it is about a sense of belonging to a place with deep meaning. Verso Projects is the ideal partner to bring this vision to life, and together we look forward to introducing our brand of bespoke, culture-led living to the Australian market for the first time.” “This partnership represents a shared commitment to delivering something truly exceptional for Brisbane. We feel honoured to be restoring Shafston Estate to its former glory, elevating it to new heights of luxury and excellence underpinned by Capella’s distinctive service ethos and design philosophy, and making it a standout landmark in Brisbane,” said Steve Laffey, CEO of Verso Projects. “By partnering with Capella – globally recognised for its refined approach to luxury hospitality and deep respect for cultural and historical context – we will elevate this project beyond a residential offering into a world-class destination.” Private appointments open now, contact carly@shafstonestate.com.au. T

he Balmoral has announced the appointment of John Munro as Head Chef, marking a new chapter for the iconic Edinburgh restaurant.

Having served as Senior Sous Chef since 2022, John steps into the role after three years of shaping the restaurant’s culinary direction alongside Executive Chef Paul Hart. His leadership will continue to build on Number One’s identity while evolving its expression through a refined, ingredient-led approach rooted in nature, locality and seasonality. John’s career includes time at Timberyard, The Black Swan at Oldstead, The Gannet East and The Little Chartroom, where he developed a reputation for thoughtful sourcing, sustainability and close relationships with producers. His cooking is shaped by a deep respect for ingredients and a fascination with the environments they come from, drawing inspiration from Scotland’s landscapes, coastlines and natural larder. His connection to nature extends beyond the kitchen. As Number One’s Head Beekeeper, John introduced the restaurant’s first beehive in 2024, strengthening the link between the restaurant and its surroundings while

HOTEL RESTAURANT M A G A Z I N E providing honey used across within Number One. Foraging also plays a key role in his approach, with ingredients sourced from locations across Edinburgh and the East Lothian coastline, including seaweeds, sea buckthorn and elderflower. Under his leadership, guests can expect menus that celebrate Scotland’s finest seasonal produce and the stories behind it, with suppliers and provenance highlighted throughout. Signature dishes include pork with wild garlic and hen of the woods, alongside summer dishes such as North Sea halibut from David Lowrie paired with foraged elderflower and British peas. The style remains elegant and restrained, allowing provenance, flavour and seasonality to lead. John Munro, Head Chef, said: “It is a huge honour to lead the kitchen at Number One. My focus is on showcasing Scotland’s exceptional ingredients while respecting the standards and identity that define the restaurant. I look forward to evolving the menu with the team and continuing to build on its legacy.” Paul Hart, Executive Chef of The Balmoral, said: “John’s promotion is a natural next step. He has been instrumental in shaping Number One over recent years, and his approach to food, produce and sustainability reflects exactly where we want to go as a restaurant. His understanding of ingredients, suppliers and the natural environment around us will continue to shape an exciting future for Number One.” John’s appointment follows a period of continued progression, including his selection for the Scottish Culinary Team ahead of the 2026 Culinary World Cup and his ongoing contribution to the wider Scottish culinary community through mentoring, competitions and collaboration.

THE WORLD OF ICE CREAM PRODUCTION

Discovering the world of professional ice cream production

I

ce cream is enjoyed across the globe, with almost everyone having a favourite flavour and many households keeping a tub or two in the freezer. However, beyond the simple scoop lies a fascinating world of ingredients, recipes, technology and production techniques that transform basic components into exceptional frozen desserts. Within hospitality, ice cream is no longer simply a supporting element alongside a traditional dessert. Increasingly, businesses are creating signature frozen desserts inspired by the creativity and craftsmanship found within artisan gelato shops. Modern ice cream has developed far beyond a single flavour. Today, producers and chefs are creating innovative products designed to stand out, from sticky toffee pudding ice cream featuring caramel ripples and carefully balanced inclusions, to completely new flavour combinations that create memorable customer experiences. However, creating these products requires much more than a creative idea. Behind every successful ice cream is a careful balance of ingredients, technical understanding and the right production process. This is where specialist equipment and expertise are essential. Machinery World supports businesses all around the world across the ice cream, dairy and food processing industries.

As the UK partner for Iceteam machinery, with years of experience supplying artisan gelato equipment, Machinery World helps customers find the right production solutions for their needs. The Iceteam Cattabriga & Promag range, including batch freezers, pasteurisers and countertop machinery, provides the technology used by many artisan gelato producers to achieve consistency, quality and creativity. Alongside the machinery, Iceteam’s gelato chefs continue to develop recipes and techniques, combining traditional Italian expertise with modern production methods. This October, Machinery World will host its Ice Cream Innovation Experience, bringing together ice cream & gelato producers, food businesses and those looking to enter the frozen dessert industry. The two day event will offer visitors the opportunity to step behind the scenes of professional ice cream production through live demonstrations, recipe development, machinery showcases and an exclusive look at robotic ice cream automation. Whether you are taking your first steps into ice cream production, expanding an existing operation, or simply interested in discovering more about the industry, the Innovation Experience provides a unique opportunity to learn from specialists and explore the future of frozen desserts. BIRLEY BAKERY CELEBRATES SUCCESS OF TARTE TROPEZIENNE New Tiered Creations for Weddings and Celebrations

S

ince opening its doors in late 2022, Birley Bakery has become synonymous with the Tarte Tropézienne, a light brioche cake, gently scented with orange blossom and filled with cream and finished with pearl sugar. Establishing itself as the home of the beloved Saint-Tropez staple, the Chelsea Green-based bakery has sold approximately 35,000 individual slices, 6,600 whole Classic Tropéziennes and 5,500 whole Raspberry Tropéziennes since its opening in late 2022. The popularity of the Tarte Tropézienne continues to grow, with sales increasing by 25% year on year, making it one of Birley Bakery’s most sought-after creations.

A slice of the south of France in the heart of Chelsea At Birley Bakery, the Tarte Tropézienne is prepared under the direction of Vincent Zanardi, Executive Head of Bakery and Pastry. Born near Paris and trained in classic French pâtisserie, Vincent has developed his own interpretation of the Saint‐ Tropez original. “The brioche is a hybrid between a classic brioche and a baba, as the soaking in our recipe is significantly higher than in a traditional version,” says Zanardi. “We have

adapted the original recipe over time, and it has evolved quite significantly since the early stages.” Rather than baking orange blossom directly into the brioche dough, as is tradition, Zanardi bakes the brioche first and then generously brushes it with orange blossom syrup, preserving its delicate fragrance. The cake is finished with diplomat cream, a lighter and more fragrant alternative, resulting in a dessert that is aromatic and beautifully light.

MADRID’S ICONIC METRÓPOLIS BUILDING REOPENS AS CLUB METRÓPOLIS a Private Members’ Club and Boutique Hotel

F

ew buildings are as synonymous with Madrid as the Metrópolis. Crowned by the Winged Victory that has watched over the city for generations, its dome dominates the celebrated intersection of Gran Vía and Calle de Alcalá and has secured its status as one of Spain’s most important architectural landmarks since 1911. For more than a century, Metrópolis has defined the Madrid skyline, its Beaux-Arts façade emblazoned on postcards and etched into the city’s collective imagination, yet behind that iconic silhouette the building itself has stood largely empty. Today that changes with the opening of Club Metrópolis: a private members’ club and boutique hotel, conceived by acclaimed Spanish restaurateurs

Marta Seco and Sandro Silva of Grupo Paraguas.

Reimagining the Metrópolis: The Return of a Landmark The opening of Metrópolis represents one of Spain’s most ambitious hospitality projects in recent years. the project began in 2019, when the building’s owner invited Seco and Silva to open a stand-alone restaurant on the ground floor. Recognising the architectural significance of the Metrópolis and its place in Madrid’s collective identity, Seco and Silva made a different proposal: to revive the whole building.

HOTEL RESTAURANT M A G A Z I N E

What followed was several years of restoration led by Rubio Arquitectura under strict heritage protection, returning all seven floors of the Metrópolis to the social and cultural pinnacle of the city it has long defined. Interiors are led by renowned Spanish designer Lázaro Rosa-Violán, who has approached Metrópolis less as a hospitality space than as a grand Madrid house. Drawing on the building’s Beaux-Arts grandeur, RosaViolán introduces a layered residential sensibility defined by warmth, texture and narrative detail. Original architectural features are paired with curated artworks, bespoke furnishings and contemporary interventions to restore intimacy to the building’s monumental scale, creating spaces that feel both atmospheric and lived-in. The grand staircase, ornate cornicing and parquet floors have been thoughtfully preserved, while layered carpets and textiles introduce warmth and tactility throughout.

Metrópolis Club: A House for Contemporary Madrid Spanning more than 6,000 square metres, Club Metropolis is a single address that brings together a private members’ club, seven dining rooms, wellness facilities and an intimate 19-room hotel, each unfolding with its own rhythm from morning through to late evening.

65

Designed to be experienced throughout the day and into the night, the Club moves effortlessly between work, leisure and social life. Members can begin their mornings with coffee overlooking the city skyline, host meetings and informal gatherings throughout the day, enjoy long lunches with friends, attend cultural events or retreat into the privacy of its thoughtfully designed spaces. As the city transitions into evening, the Club becomes a setting for dinners, performances, celebrations and conversation. A year-round programme of more than 200 experiences, ranging from talks and artistic collaborations to musical encounters, wine tastings, private dinners and seasonal activations ensures it remains a living platform for ideas, creativity and community.

Gastronomy: Seven Restaurants, One Address Gastronomy at Club Metrópolis is, without apology, Spanish. Across all seven dining rooms, not a single name is in English, a deliberate counterpoint to Madrid’s increasingly global identity. Three are open to the public by reservation. Spa de Langostas, on the lower level, is devoted almost entirely to lobster. Tasca Fina reinterprets the Spanish tavern with greater refinement and precision, while Barra Continued page 66

de Oricios gathers guests around a circular counter for seafood served simply, based on what has arrived that morning. The remaining four experiences are reserved for members and hotel guests, forming the most considered expression of the building’s culinary identity. Victoria is the Club’s intimate fine-dining room, defined by restraint rather than range, where the tasting menu follows the market rather than the calendar. La Galería is the Club’s social heart: an all-day space where gastronomy, music and atmosphere coexist naturally, equally suited to a working lunch or a dinner that stretches late into the night. El Jardín moves the kitchen outdoors, focused on open-fire cooking beneath the sky. Above it all, beneath the dome, La Cúpula is dedicated entirely to cocktails, designed for the hours between dinner and the rest of the night.

Metrópolis Hotel: Rooms Above Gran Vía Complementing the Club is Metrópolis Hotel, an intimate boutique hotel of just nineteen keys, comprising three signature suites and sixteen rooms. Conceived as an extension of the members’ experience, it offers a residential sense of privacy and calm within the same landmark setting, where historic architecture meets contemporary design through natural light, refined materials and sweeping views across Gran Vía and Calle Alcalá. Interiors are defined by quiet precision and tactile detail. Bed linen is by Bassols, paired with Ezcaray blankets, and a choice of high-thread-count Egyptian cotton and silk. In-room touches include sweets from Madrid confectioner La Pajarita during evening turndown. The hotel’s most distinctive spaces are its Circular Suites, located on the

third and fourth floors: sculptural, drum-shaped rooms wrapped in uninterrupted 360-degree views across Madrid’s rooftops, offering a perspective of the city found nowhere else in the building. Guests are not required to be Club members to stay. For the duration of their visit, they are granted full access to the Club’s restaurants, cultural programming and amenities, seamlessly integrated into the rhythm of the building. A dedicated concierge service runs throughout, offering chauffeur transfers, private dining, tailoring, personal shopping and bespoke itineraries, ensuring each stay is shaped entirely around the guest.

Wellbeing and Fitness Wellbeing at Club Metrópolis is approached in its broadest sense. Beauty treatments and tailored wellness programmes are designed around the individual rather than a fixed menu, while a Technogymequipped fitness floor offers personal training and classes including yoga, pilates and functional movement.

A New Chapter for Madrid With the opening of Club Metrópolis, Madrid welcomes more than a private members’ club or boutique hotel. It welcomes a new social and cultural destination that brings together gastronomy, creativity, wellbeing and community within one of the most extraordinary buildings in Spain. At once historic and contemporary, local and international, Club Metrópolis is poised to become a new centre of gravity for Madrid life—an address where the city’s most interesting conversations, experiences and connections naturally come together.

SHANDY’S BACK! SHANDY SHACK PUTS ‘SHANDY’ FRONT AND CENTRE Nostalgic favourite enters a modern era

S

handy Shack has unveiled a comprehensive brand refresh following its acquisition by SHS Drinks, as the brand looks to strengthen its position in the fastgrowing fruit beer category and accelerate its next phase of growth. The new-look cans will be available on DTC channels and through Sainsbury’s stores nationwide. Founded in 2018 by three friends, Shandy Shack has built a loyal following for its flavour-led, lower-ABV shandies, combining craft beer with natural fruit to create a lighter, more refreshing alternative for modern drinking occasions. Since joining the SHS Drinks portfolio in 2024, the brand has undergone a strategic review to ensure it is positioned for future

growth, with the refreshed identity launching alongside increased retail momentum in Sainsbury’s, across DTC channels and a successful co-branded collaboration with M&S. The partnership with M&S has helped showcase the growing consumer appetite for flavour-led, sessionable beer, with Shandy Shack’s shandies supporting the retailer’s focus on innovative products that meet evolving consumer needs around moderation, taste and occasion. The partnership with M&S has proved a significant success, with one can of the cobranded Shandy Shack x M&S shandy sold every minute since launch. The refresh reflects how the beer and moderation markets have evolved since Shandy Shack launched.

HOTEL RESTAURANT M A G A Z I N E With fruit beer now firmly established as a category in its own right and attracting increased attention from both specialist brands and major brewers, the rebrand is designed to make Shandy Shack’s proposition clearer on shelf while retaining the brand equity built with loyal drinkers. The updated identity introduces a more consistent pack architecture, with every SKU now leading with its fruit flavour and clearly identifying itself as a shandy. The full range has also been aligned to 2.5% ABV. As part of the refresh: • IPA becomes Lemon Shandy with IPA • Elderflower Lager becomes Elderflower Shandy with Lager • Raspberry Lager becomes Raspberry Shandy with Lager • Ginger Beer Shandy becomes Ginger Beer Shandy with Pale Ale The much-loved recipes remain unchanged ensuring existing fans continue to enjoy the same taste they know and love. Alongside the updated naming hierarchy, the packs feature a new hand-painted texture that nods to the brand’s craft heritage while modernising its appearance for today’s market. The Shandy Shack logo and core colour palette have been retained to preserve existing brand recognition. Developed in partnership with awardwinning branding agency Continuous, the new identity was created to help Shandy Shack compete in the emerging fruit beer category while retaining the craft cues and personality that have defined the brand since launch. The refreshed range is rolling out now through a phased launch across grocery, direct-to-consumer and foodservice channels, supported by influencer activity, social media campaigns, point-of-sale materials and consumer events including Lakefest

and Bourton-on-the-Water River Football. Tom Stevens, Founder, Shandy Shack, says “The shandy category has evolved significantly since Shandy Shack launched in 2018. This refresh - with ‘shandy’ emblazoned clearly and proudly on the can - ensures we are clearer about what we stand for and the occasions we are made for, while staying true to the quality, flavour and craft DNA that has built our loyal following. With the backing of SHS Drinks, our collaboration with M&S and continued listing with Sainsbury’s - it’s time for the summer of shandy.” Leading the lineup is the Elderflower Shandy with Lager, a crisp pilsner lifted with fragrant elderflower cordial. Made in collaboration with Bottle Green®. Floral, bright and reminiscent and made for long days in the sunshine. 2.5% ABV | Sainsbury’s sell a larger can at 440ml | RRP from £2.50 The Lemon Shandy with IPA blends a Citra and Mosaic-hopped session IPA with natural lemonade for a citrus-led, seaside-inspired take on the classic. Zesty, refreshing and easy-drinking. Made for afternoons by the sea. 2.5% ABV | shandyshack.co.uk | RRP £25.99 for 12 The Raspberry Shandy with Lager combines smooth pilsner with a burst of ripe raspberry for a crisp, lightly fruity finish. It’s bright, sessionable and built for shared screens, shared snacks and also perfect for evenings around the BBQ. Made in collaboration with Bottle Green®. 2.5% ABV | Sainsbury’s sell a larger 440ml can | RRP from £2.50 | Made in collaboration with Bottle Green® Rounding out the range is the Ginger Beer Shandy with Pale Ale, a malty pale ale with a fiery ginger beer kick.
