Dio-Chemistry of Chometz
by Felix B. Munk Dipi. Eng.As is well known, the Torah pro hibits the consumption, use and ownership by Jews of “leaven” and “leavened bread” during the festival .of Passover. What is meant by “leavened bread” in this context?
Leaven, as every housewife knowns, is the fermentation process by which bread and cakes “rise” and acquire their specific “aerated” texture.
The Halacha is more precise. It lays down very definite criteria for the oc currence ofleavening, or chimutz, as the process is called.
(1) Chimutz can occur only in the five species of grain called in the Torah dagan; i.e., wheat, barley, rye, oats and spelt. (For practical purposes we need consider only wheat and barley, since the others are considered var ieties of either wheat or barley.) Rice and corn (maize) also undergo a form offermentation, but this is not called chimutz, but sirchon, i.e., decom position accompanied by an offen sive odor.
(2) Chimutz occurs only in the pre sence of water. Fruit juice will not have this effect.
(3) If dough is left without kneading or pummeling for 18 minutes, chimutz is assumed to have oc curred.
(4) The onset of chimutz is marked by whitening of the dough (“like a person who has had a shock”), and the appearance of hair-cracks (“like the antennae of insects”) on the sur face. (Mishna Pesachtm 3:5).
(5) Matza is made when the dough is rolled out flat and quickly baked in a very hot oven. Once this has been done chimutz can never occur again.
HALACHA AND SCIENCE
For many centuries no rational ex planation could be given for many of the requirements and regulations of the Halacha. With the insights of modem bio-chemical science, how ever, it has become clear that the Halacha, laid down so many thousands ofyears ago, is completely

consistent with and explicable in terms of modem scientific dis coveries.
The cereal grain is comprised of the following three main con stituents (besides fats, salts and water):
(1) Starch. This consists of long chains of sugar-like organic molecules, called polysaccharides. (About 60% by volume.)
(2) Protein. This consists of aminoacids. The complex of amino-acids present in wheat is called gluten, which sticks the ingredients to gether. (About 10%.)
(3) Enzymes. Although taking up only a very small part ofthe volume of the grain, these are active ingre dients, and have the ability to break down long molecules and reduce them to their component parts, which can then re-combine in new ways to form different compounds.
The wheat grain contains four en zymes, whose function is as follows:
f3-amylase: Breaks down poly-sac charides into duo-saccharides (dou ble molecules, called haltose).
â-amylase: Breaks down duo-sac charides into monosaccharides (single molecules, called glucose).
Oxydase: Reduces the mono-sac charides to alcohol + carbon dioxide. It is this carbon dioxide gas which causes the “rising” of the dough.
Proteirjase: Breaks down protein molecules, emitting the characteris tic foul odor associated with organic decomposition.
While the proportions of starch and protein are relatively constant in wheat, barley, corn and rice, there is a considerable variation in the distri bution of the amylase in the different cereal grains.
WHYRICE IS DIFFERENT
It is seen that 13-amylase is com pletely missing in maize (corn) and rice, which therefore lack the ability to break down the poly-saccharides. The leavening process cannot there fore take place, since no carbondioxide gas is released.
In the case ofwheat and barley, as soon as water is added the enzyme action commences immediately, with the formation of alcohol and carbon dioxide, giving rise to the typ ical “leaven” smell. The proteinase
also commences its action on the proteins, but the fermentation, which is much stronger, masks this, and the offensive odor usually as sociated with decomposition of pro teins is not noticeable. In the rice and maize, however, since the fer mentation cannot get started, the proteinase has had a free hand and decomposition becomes evident in stead of fermentation. This explains why in the case of wheat and barley the Halacha refers to ‘chimutz’. while in the case ofrice the process is called sirchori’.
LEAVENING OF THE DOUGH
As we noted above, it is the release of the carbon dioxide gas which causes the dough to rise. The moment water is mixed with the flour the enzyme action begins, the carbon dioxide be gins to be released.
The gluten which sticks the parti cles together prevents its immediate escape, and pockets of gas are trap ped within the dough. This accounts for the “hollow” sound when the dough is slapped. As the process builds up, the gas begins to accumu late just below the surface of the dough, which is consequently ex tended, giving rise first to the “whi tening” and then to the hair-cracks” spoken of in the Mishna. This is the moment when the fermentation has built up to the level at which the dough is considered by the Halacha to be chametz. At normal tempera tures this takes place at 20 (plus or minus 2) minutes from the time the water is introduced into the flour. This explains the extreme urgency demanded by Halacha to get the dough into the oven within 18 mi nutes of this time.
The tradition tells us however that this takes place onlywhen the dough is at rest. As long as it is being pum meled and kneaded, it will never be come chametz. This is because such manipulation of the dough exposes different parts ofthe dough to the air and thus enables the carbon dioxide to escape.
The Torah refers to two kinds of chametz: chametz proper, and s’or, or leaven. The latter is formed when a piece of dough is allowed to stand for a lengthy period, giving time for the enzymes to multiply in the dough and accelerate the fermentation. This leaven is not edible, but is used (Continued on page 14)

Rabbi Menachem Mendel Schneer son, the seventh Lubavitcher Rebbe, has been described as the most phenomenal Jewish personality of our time. To his tens ofthousands of Chassidim and hundreds of thousands of sympathizers and ad mirers around the world, he is “the Rebbe,” today’s most dominant fig ure in Judaism and, undoubtedly, the one individual more than any other singularly responsible for stir ring the conscience and spiritual awakening ofworld Jewry.
In his years as world leader of the Chabad-Lubavitch movement, he has set into motion massive educa tional, social and rehabilitative pro grams that have kindled in masses of Jews an awareness ofand a rededica tion to Torah-true Judaism.
From Melbourne to London, Casablanca to Los Angeles, through the many Lubavitch schools, youth centers, variegated institutions and activities—established and main tained through the Rebbe’s efforts— countless “lost” Jews have ‘found their way home.’
His sphere of influence has long transcended the Chassidic commu nity, and deeply penetrates the mainstream of Jewish life. Few knowledgeable Jews in the world today are unfamiliar with his ideas
and pronouncements which he com municates through private audi ences, correspondence, published writings or public addresses which he periodically delivers at Lubavitch World Headquarters in New York.
The Rebbe often designates two nights a week for private audiences, known as ‘yechidus’. On Sunday and Thursday evenings, Jewish leaders, rabbis, businessmen, housewives, government officials, students and persons from all walks of life from all over the world, report to him on vital matters or come to receive his coun sel or blessing.

“Farbrengens,” gatherings at which the Rebbe delivers a public ad dress, are held on festivals and spe cial occasions. Here again, amidst the thousands of Chassidim attend ing a farbrengen one can find profes sors, authors, men of the arts, offi cials from various levels of govern ment, professionals and plain folk, businessmen and long-haired hip pies.
When the Rebbe speaks on week days, his talk is transmitted live to Lubavitch Centers around the world via a special communications hookup, so that he instantaneously reaches thousands of listeners lo cated virtually in all parts of the world.
The contents of his discourses range from observations and in sights on the many facets ofthe wide Torah spectrum to current events af fecting the quality and continuity of Judaism; on the need for each indi vidual to observe the Mitzvot, on the need for every Jew to set aside time each day forTorah study. He has con sistently called for an intensification of the outreach work in stimulating Jewish consciousness among alien ated and assimilated families in all parts of the world. Love for a fellow Jew and the genuine concern for their material and spiritual well being, regardless of station or back ground, are basic concepts of Chabad-Lubavitch philosophy.
15 volumes of selections from the Rebbe’s public addresses have been published to date, and material for more volumes is now being prepared for publication.
Rabbi Menachem Mendel Schneer son is seventh in the dynastic lineage of Lubavitcher leaders. The Chabad Lubavitch movementwas founded in the 18th century by Rabbi Schneur Zalman of Liadi (5505-5573/17451812), author of the basic work of Chabad philosophy—Tanya,’ and the ‘Shulchan Aruch, ‘—the Code of Jewish Law.
Born in 1902, on the 11th day of
Nissan, 5652, in Nikolaev, Russia, the Rebbe is the son of the renowned Kabbalist and Talmudic scholar, the late Rabbi LeviYitzchak Schneerson, as well as the great-grandson of the third Lubavitcher Rebbe, and his namesake, Rabbi Menachem Mendel of Lubavitch. At the age of 5 he moved with his parents to the Ukra nian city of Yekatrinslav, now Dnep ropetrovsk, where his father was ap pointed Chief Rabbi.
From early childhood he displayed a prodigious mental acuity and soon had to leave the ‘cheder’ because he was far ahead of his classmates. His father had to engage private tutors for him. By the time of his BarMitzvah, the Rebbe was considered an ‘illuy,’ a Torah prodigy.
Persons attending the Rebbe’s far brengens today walk away amazed at the sheer quantity and quality of erudition he pours forth hour after hour—without benefit ofany texts or notes. It is recounted that agood part of his vast knowledge was acquired in his youth studying solitarily in his room in Yekatrinislav.
His mother once recalled that, while a young lad of 9, he dove into the Black Sea to save the life of another boy who had fallen from the deck of a moored ship.
The Rebbe met the previous Lubavitcher Rebbe, Rabbi Yosef Yitzchak Schneersohn, in Rostov, Russia, in 1923. Four years later, Rabbi Yosef Yitzchak Schneersohn was sentenced to death by the Bol sheviks for his work in spreading Yiddishkeit throughout Russia, but was miraculously liberated after the intervention of leading foreign statesmen, including that of United States President Herbert Hoover. He then settled with his family in Riga and Warsaw. In 1929 Rabbi Menachem Mendel Schneerson mar ried Rabbi Yosef Yitzchak Schneer sohn’s second daughter, Rebetzin Chaya Moussia, in Warsaw.
He then went on to study at the University of Berlin and later in Paris.
In 1941 he emigrated to the United States. His father-in-law, who came to the United States ayear earlier, ap pointed him Chairman of the Execu tive Committee of his newly founded
organizations that included “Mer kos-L’Inyonei Chinuch,” the educa tional arm of the Lubavitch move ment, “Machne Israel,” the move ment’s service organization dedi cated to Jewish social welfare, and “Kehot Publication Society,” the Lubavitcher publishing house.
Soon thereafter the Rebbe began writing his notations to various Chassidic and Kabbalistic treatises, as well as a wide range ofresponsa on Torah subjects.
In the summer of 1944 he received word ofhis father’s passing away in a remote city in Kazakhstan, Central Russia. Rabbi Levi Yitzchak’s incarc eration began in 1939 when he was arrested in Yekatrinislav by the N.K.V.D. for spreading Yiddishkeit among his people. This unique scholar and Kabbalist was taken from his home and imprisoned, and then exiled for five years to a small townlet, Chili, where he died at the age of 66. A biography of the Rebbe’s father has just been published in Is rael by Kehot Publications.
The Rebbe’s mother, Rebetzin Chana Schneerson, who had fol lowed her husband, managed to manufacture ink from herbs gathered in the fields so that her hus band could continue his writings even while in detention. Providen tially, these manuscripts eventually found their way to the Rebbe, and five volumes of these writings have been published.
After World War II Rebetzin Chana left for France where, in 1947, she was met by her son and brought to the United States. (This was the last time the Rebbe left New York.) She lived near him, in Brooklyn, until her passing in 1964.

After the passing of Rabbi Yosef Yitzchak Schneersohn, in 1950, on the 10th of Shevat, 5710, his son-inlaw, Rabbi Menachem M. Schneer son, reluctantly ascended to the leadership of the flourishing move ment, and soon Lubavitcher institu tions and activities took on new di mensions. The outreaching philoso phy of Chabad, the spreading of G d’s word under the motto: “and you shall spread forth to the west and to the east and to the north and to the

south” (Genesis 28:14), was trans lated into action, as Lubavitch Cen ters and Chabad-Lubavitch Houses were opened in dozens of cities across the United States.
Abroad, Lubavitch Centers were set up, or expanded, in Argentina, Australia, Belgium, Brazil, Ven ezuela, England, Scotland, France, Holland, Italy, West Germany, North and South Africa, as well as in Canada and other areas.
Thousands of young people have the Rebbe to thank for what may have been their first encounter with Judaism which offered them sincer ity, intellectual challenge and emo tional gratification in the traditions of our forefathers. It was the Rebbe’s concern that led Chabad to the col lege campuses where the real chal lenge lay. Today, there are 48 Chabad Houses campus communitiies with ‘a home away from home,’ adult edu cation classes, counseling, crisis in tervention and Shabbos and Holiday services and programs. It is Chabad that has taken the frontline position ofsaving ouryouth from the threat of missionary and cult forces on our campuses today.
These institutions monitor the pulsebeat of Jewish life around the globe and contribute to its spiritual health and stability. They report to the Lubavitch World Headquarters in NewYork, so that the Rebbe is con stantly aware of what is happening in Jewish life around the world.
It was the Rebbe who took the leadership role in dealing with the wave of Soviet emigration, ensuring the material and spiritual future of the Russian emigres. Chabad is there when they arrive, greeting them in their own language and helping them adjust to a new life as Jews in a free country.
Millions of copies of books and publications of Jewish interest, printed in many languages such as Hebrew, Yiddish, English, Spanish, French, Italian and more, continu ally roll off the presses of the Lubavitcher publishing houses. A large libraryofJewish literature pub lished in Russian by the Lubavitcher publishing houses in New York and Israel has become an indispensable aid for thousands of recent Russian
emigres who are not fluent in any other tongue.
The Rebbe established a “Jewish Peace Corps.” Part of this program involves hundreds of senior Lubavitcher students who spend their summer vacation time visiting hundreds of communities to make contact with the Jewish masses, bringing them Tefillin, books and re ligious inspiration.
In 1953 the Rebbe founded the Lubavitch Women’s Organization, and in 1955, the Lubavitch Youth Organization. The result is a con stant convergence at Lubavitch Cen ters of young people from all over. These activities have prompted thousands ofJewish youth to return to Yiddishkeit.
Special Lubavitch institutions have been established throughout the world to cater to the Jewish edu cational needs of the alienated and late beginners who would otherwise be unable to attend the conventional yeshiva or girls’ school.
Whenever there has arisen an unmet need ofthe Jewish people, the Rebbe has moved to close the gap. Under his guidance the only drug program in the United States relat ing to Jewish youth was founded with a dynamic approach to drug re habilitation.
The Rebbe has often been heard saying that “we must not rest until every Jewish child is assured of a proper Jewish education.”
Lubavitch in The Holy Land
The Rebbe’s dynamic approach to the problems of Jewry in its various environments has left its hallmark upon the face ofworld Jewry. He has been very sensitive to the problems of Israel and the need of a warm and sincere approach to bringing Judaism to the valiant defenders of the Jewish homeland. Through Chabad’s major center in Israel, Kfar Chabad, and through the network of Chabad settlements and institutions in Israel, the Rebbe has brought comfort and meaning to thousands of Israelis who smile affectionately upon hearing the term “Chabad.” To them, Chabad means mass Bar mitzvahs for war orphans, Purim and Chanukah gifts in a foxhole in the Golan Heights, schools for chil
dren of all backgrounds or a trade learned in a Chabad vocational school that provides dignity as pro ductive citizens of Israel.
Kfar Chabad, the Lubavitcher set tlement near Tel Aviv, has become a unique educational cente for thousands of Jewish youth. Aside from its Yeshivos for students of all ages, it offers several types of voca tional training such as printing, woodworking, machinery, sheet metal and agriculture. Separate in stitutions exist for boys and for girls. It also now has a large absorption center which services thousands of new immigrants.
Under construction now adjacent to Kfar Chabad is an $18,000,000 complex, a ‘Girls’ Town,’ which will be home for some 1,500 girls. Parts of the complex have already been completed and are functioning. Here, girls receive a total religious and vocational training from elemen tary through high school and semi nary.
Several years ago the Rebbe founded a new Lubavitcher settle ment, Nachalat Har Chabad, about 10 miles south of Rechovot. More than 300 Russian families are now housed there. The schools are staffed with Russian-speaking Lubavitcher instructors.
A new Lubavitcher community is now being built by the Rebbe in ~Safad, the ancient city in Northern Galilee. Several Lubavitcher edua tional institutions are now function ing there and new housing is under construction for hundreds of new families. The Rebbe has sent Lubavitcher families from the United States to take up residence there.
A large network of diversified edu cational institutions dots the entire country.
After the Six-Day War, when the Old City of Jerusalem was liberated, the only synagogue found intact with four walls and roof was the Lubavitcher synagogue, known as the “Tzemach Tzedek Shul,” founded there by Rabbi Menachem Mendel of Lubavitch, the Rebbe’s ancestor, nearly a century and a half ago. The Rebbe had this landmark restored and its is now used daily for study ‘and prayer.
Two large volumes, entitled “Chal lenge,” which describe Lubavitcher institutions and activities in various parts ofthe world, have recently been published by the Lubavitch Founda tion in London. The second volume deals in its entirety with Lubavitch activities in Israel, beginning as far back as the Alter Rebbe, Rabbi Schneur Zalman ofLiadi, and his ac tivities in support of the Jews in the Holy Land in the late 1700’s.
Among his recent recurrent topics has been the issue of “who is a Jew.”
The Rebbe has spoken out loud and clear for the proper amending of an Israeli law that has been the cause of non-Jews being registered as Jews in their Israeli immigration papers. The existing law fails to specify that conversions to Judaism must com ply with Halacha (Jewish Law). The Rebbe sees in the existing law a danger of unwitting assimilation of Jews in Israel and in the diaspora, and an ominous situation looming where it could become impossible to discern who is—and who is not— Jewish. He has emphatically urged that the law be amended to clearly state that only conversions “in accor dance with Halacha’ are valid.

The Rebbe’s world-wide Tefillin campaign, inaugurated during the Six-DayWar, has brought thousands ofJews back to the observance ofthe important Mitzvah ofTefillin.
After the Six-Day War and again after the Yom Kippur War when Is rael and the Jews all over the world counted their losses, the Rebbe is sued orders to his followers to help the widows and orphans of the fallen heroes. Thus was formed a national club of these widows and orphans who now gather regularly at Kfar Chabad and other locations on festi vals and special occasions. Every year a communal Bar-Mitzvah cele bration for the orphans is held in Kfar Chabad and attended by thousands ofguests, dignitaries rep resenting religious, government and military authorities. Each boy re ceives a pair of Tefillin as a personal gift from the Rebbe. These celebra tions have become national events in Israel.

The Laws ofPesach

Bedikat Chametz
1. Getting the home ready for Pesach is a process that starts long before the holiday. It includes removing chometz products and dishes, and a thorough cleaning of the house. This is climaxed on the evening before Erev Pesach, April 6, when we conduct the final Search for Chometz. The Search must be conducted right after night falls, and there should be no eating or working that might distract us, for a half hour before dark.
2. We take a single paraffin candle, a wooden spoon, and a feather, and some receptacle to hold the chometz that we may find in our search; it may be a bag, box, or a piece of cloth. Ten pieces of bread are placed throughout the house, and we recite the b’racha:
Blessed art Thou, 0 Lord, our G-d, King ofthe Uni verse, Who has sanctified us by His command ments and commanded us to remove the chometz.
With the candle lit, we carefully search every room, and whatever area of the house that may have in it any chometz, such as the basement, attic, the family car, and the garage. Pockets in clothing should also be checked— especially the children’s. There must be no talking to dis tract us during the search. Whatever chometz we find should be pushed with the feather into the receptacle, and when the Search is over, we renounce ownership of any chometz we may have overlooked, by reciting the Kol Chamira formula from a Siddur, or saying the following: Whatever manne’r of chometz that is still in my possession, which I have notfound or removed from my domain, is hereby declared to be as dust and ownerless.
Everything used in the Search, plus the chometz found, should then be securely bound up, and put aside for burning in the morning. Food intended to be eaten in the morning, should also be carefully put aside. The Search should also be conducted in a place ofbusiness to be cer tain no chometz remains.
On Erev Pesach morning we burn the chometz which has not been sold no later than 10:30 a.m. and we repeat the Kol Chamira. The Kol Chamira—whatever language is used—must be a conscious declaration in order to be valid. If you are not going to be home on erev Pesach, make the Search for Chometz, the evening before you leave without reciting the blessing.
What May and May Not Remain in the Home
No actual chometz, or food containing chometz, may be
in the home from Erev Pesach until the end of the Yom Toy. Vessels which have not been kashered (see the laws of kashering, below) should be thoroughly cleansed of any trace of chometz, and put aside in an inaccessible place. If possible, all chometz utensils, and other items which are included in the Sale of Chometz, should be stored in a locked room, and the key put out of reach.
The prohibition againstchometz on Pesach is two-fold: we are forbidden to eat chometz; we are forbidden to have chometz in our possession.
Since there would be hardship involved in disposing of our chometz, the law permits us to sell it to a non-Jewfor the entire period of Pesach. Since this is an actual legal transfer ofownership, it must be arranged with meticul ous care, and It is best to delegate your local Orthodox Rabbi to do this on your behalf. If this sale is not ar ranged, or if it is not understood to be an actual legal transaction binding on both parties, the chometz re mains in your possession and you stand in violation of the prohibition. Because of the severity of this prohibi tion, the Sages have ruled that any chometz which re mains in the possession ofa Jew during Pesach, may not be used at all, nor may any Jew derive benefit from it at all.
No Chametz May Be Eaten After 9:23 a.m. on the Morning Before Passover in the N.Y. area
Following the early breakfast meal, the prohibition against eating chometz is in full force throughout the day before Pesach, even for children. Since the Seder takes place that evening we may not eat matzoh during the day, but we may eat foods prepared with matzoh meal until the last quarter of the day. From then on, we may eat no foods, until the Seder; but in cases of need, meat, fish, poultry, or fruits may be eaten. We should bear in mind the need for coming to the Seder table in such a state that we will take special delight in the eating of the matzoh, which is one of the basic mitzvohs of the Seder.
The Laws ofKashering
Wherever possible, special dishes and utensils should be used exclusively for Pesach. Nevertheless, some uten sils used round the year may be kashered and then used for Pesach. Use the following procedures: Metal utensils, used directly on the fire for broiling and baking, without liquid added, can only be kashered through “glowing,” that is, placing the utensil on a fire until It glows red hot.
If metal, or wooden utensils, are not used directly on the fire, or if they have been used only for cooking or boiling food, they may be kashered by ha’golah, as fol lows:
The utensils should not be used for twenty-four hours prior to kashering.
* Kashering should be completed by noon, Erev Pesach.
* The utensils should first be thoroughly scoured and scraped and then completely Immersed in a vessel filled with boiling water, and the boiling must con-
tinue as long as the utensil is in the water.
* If a section of the utensil protrudes so that it is not reached by the boiling water, remove it, and reim merse it so that the part previously not reached by the water is thoroughly immersed.
* You may kasher any number of utensils at the same time, by this process, so long as each one is com pletely surrounded by the boiling water, and not touching the others.
* After removal from the boiling water, the utensils should be washed in cold water.
* If a utensil to be kashered has dents, making that part inaccessible to the boiling water, the dents should first be thoroughly scoured, and If this does not get it perfectly clean, the area with the dents should be placed over a flame until they glow red hot.
* Any vessel may be used for the kashering procedure.
Kashering Glassware
Dishes or utensils made of glass, should first be thoroughly scoured, and may then be kashered by filling and immersing them in water for three days. The water should be changed every twenty-four hours for two suc cessive times. Kashering Pyrex is a complicated prob lem, and It Is best to consult your Rabbi.
Kashering Dentures
Clean your dentures, put them aside for twenty-four hours, and then thoroughly cleanse them with hot water.
Tablecloths
If you use a plastic tablecloth, it mus be brand new, since it cannot be boiled as you would ordinary cloths.
Kashering Your Oven
Before Kashering your stove, scrub and scrape clean every part of the oven where food can possibly have reached. Then take a blowtorch (you can rent one for the day) and go over the entire oven with the flame. It is recommended that a specially-fitted metal liner be used in the oven, if you plan to bake for Pesach. The rings around the burners on the gas range should be thoroughly scoured and then glowed on the flame until red hot. If your are unable to make them glow, then the metal sheet used for your range should also cover the rings.
Kitchen Appliances
Kashering such appliances as broilers, food mixers and blenders, dishwashers, and others, entails dismantling of motors and other parts and is therefore not recom mended.
Utensils That Cannot Be Kashered
* Anything that would be damaged by hot water; uten sils with handles that are glued on. Earthenware, pottery, or china.
* Any vessel or utensil that cannot be thoroughly cleansed or scoured, such as grinders, sieves, graters,
or long-necked utensils the inside of which cannot be reached with a brush.
* Receptacles used to hold bread or flour.
NONE OF THESE MAYBE KASHERED.
Feeding Children, the Sick, and the Aged
Children should observe all of the laws of Pesach. If a doctor urges the use of chometz for your child,.thls must be approved by your local Rabbi. If the Rabbi sup ports the doctor’s opinion, he (the Rabbi) will explain to your how the feeding should be handled. If there is, G-d forbid, danger to the child, then all is permissible. All cereals, dry and cooked, are prohibited on Pesach. If the cereal is especially prepared for Pesach, and bears a hechsher from a well-known Rabbi, then your local Rabbi may sanction its use under special cir cumstances. Egg matzoh, which is prepared with liq uids other than water, should not be used during Pesach, except for the sick or aged, who cannot take regular matzoh. Under no circumstances can anyone fulfill the mitzvoh of eating matzoh at the First and Sec ond Seder, by the use of egg matzoh.
Using Milk on Pesach
Since Cholov Yisroel Is more widely available today, it should be used round the year, and for Pesach. Where it is not available, Gedolei Yisroel permit the use of regu lar milk, and therefore, under the guidance of Gedolim, we have arranged to supervise and approve a limited amount of such milk for Pesach. Follow these guidelines:

* Use Cholov Yisroel for Pesach and the year round.
* If, for some reason, you do not use Cholov Ylsroel, it is best to buy your week’s supply of milk with a hechsheron Erev Pesach.
* Buy your milk from one of the companies listed in our KosherFood Guide.
General Rules
Do not allow any food into your home for use on Pesach unless it bears a hechsher from a well-known Rabbi. If in doubt check with your local Orthodox Rabbi. If you have any doubts or questions, your local Orthodox Rabbi is eager to advise you. It’s better to ask, and to be certain.
If you are not making Pesach at home, and plan to spend the Yom Toy in a hotel, do NOT rely on such slogans as “Kosher for Passover,” or “Dietary Laws Ob served”. There are so many pitfalls in the preparation of food for Pesach, that most hotels must be assumed to be NOT kosher for Pesach, UNLESS you have the as surance of your local Rabbi who knows the owners of the hotel, and can testity to their reliability. Don’t take any risks of unwittingly violating the laws against eat ing chometz on Pesach. Before eating anything outside your own home, take the same stringent precautions that you do in your own home. Make It a KOSHER Pesach, and it will be a HAPPYYom Toy.

Because many people are concerned with cholesterol, saturated fat, milk allergy and lactose intolerance, non dairy creamers and toppings have become very popular. Two companies in the Mid West and FarWest have been pioneers in this business. Presto Food Products Inc., in Los Angeles and Kansas City, were founded in 1937 and are privately owned manufacturers of food products for retail and for the food service industry in the western states. One of their famous products now under the ® supervision is Mocha Mix which is a pareve non-dairy creamer. One may enjoy Mocha mix in coffee or tea, on cereal or fresh fruit, and in most any recipe calling for milk or cream. They also manufacture pareve toppings for desserts.
Presto Food Products Inc. of Los Angeles is now happy to announce that in the last few months they have de veloped a new pareve product called Mocha Mix NonDairy FrozenDessert. This is a new frozen dessert that of fers the taste ofdelicious ice cream without cholestorol or milk.
This product has proven to be very satisfying to even those who do not have a problem with dairy products— the flavor is that good. We repeatedly receive calls asking if this or the other cough medicine is kosher. All cough medicines use glycerine and other non kosher ingredients. For Pesach 5742 we are supervising and endorsing only these hotels: The Granit Hotel in Kerhonkson, The Stevensville Hotel in Swan Lake and The Jackson Hotel in Long Beach. Indeed, it is a very serious, complicated and difficult matter to supervise a hotel properly. Unfortunately supervision of hotels for some reason or other is taken very lightly. One is particular about which aluminum foil He uses yet will go to any hotel that has any kind ofsuper vision. We admonish our friends and readers-everyone who is sincere in his desire to observe kashruth-to be ex ceedingly careful about choosing a hotel. This is particu larly true for Pesach, when the minutest particle of Chometz is prohibited.
For the last several years, Hunt Wesson Oil Company had produced special cottonseed oil, Kosher for Pesach. This made Kosher for Pesach cottonseed oil available in the market at a reasonable price. This year, for some reason unknown to me, they are not producing it. May I suggest to our readers that they write to the company in dicating that they are disappointed that the product is not available this year. We do, however, have peanut oil under our supervi sion—that is, Planter’s Peanut Oil. For this, I am again printing a Tshuva-Responsum, written by Rabbi Moshe Feinstein, Shlita, concerning the use of peanuts and peanut oil on Pesach. I wish to state that it isa known fact that the Ray Chaim Ozere Grozinsky, zol, the Vilna Ray, ate peanuts on Pesach.

Translation:
“Concerning peanuts, which were called stashkes in Europe—they have been accepted as being permitted on Pesach and are not considered kttniyos (legumes that are forbidden on Pesach because all the reasons for the pro hibition of kitniyos do not apply topeanuts. Peanuts are not sown in fields (with grain), and even iftheywere there is no fear that grain would be mixed together with the peanuts; bread is not baked from peanuts; and generally speaking though they are vegetables they have the ap pearance ofnuts rather than kitniyos.And even though I have heard that in some places they were considered kit rliyos, peanuts should not be forbidden in places where it is not known for certain what the custom had been in their city, because, with reference to kitn.iyos, when in doubt one should be lenient.
Therefore you may give certification for peanuts and the oil derived from them, and they will be permissible to the majority ofpersons. Those who know for certain that the custom of their city was not to eat peanuts on Pas sover should not eat them; others are permitted to eat them.” Chag Kosher V’sameach to our readers

MATZA
Matza is produced by rolling the dough out very thin and then baking it quickly in a very hot oven. The ex planation is that the heat im mediately expells all the water from the dough, and in the absence of water the enzymes are inhibited from operating. In addition 13amylase is destroyed by heat at 80°C. The Halacha also states that fruit juices instead of water in the dough cannot produce chametz. This is be cause fruit juices are acid, and a amylase cannot work in the presence ofacid.
CONCLUSION
Such is the bio-chemical back ground to the basic Torah laws of chimutz. And so yet another set of ancient Halachic traditions is found to be fully explicable in terms ofmod em science.

At every possible occasion the Rebbe urges us to increasingly spread amongst all Jews the Mitzvah campaign begun in recent years. This massive campaign calls for: Every Jewish boy and girl to be af forded a proper Torah-true educa tion ; that everyone set aside time every day for Torah study; that all men and b oys over 13 put on Tefillin every weekday; that a Mezuzah be properly affixed to every right door post; that charity be given every weekday and that eyery home have sacred books, at least a Bible,Prayer Book and a Book of Psalms.
And the three Mitzvot related to the Jewish woman, which are: for all women and girls from the age of 3 to
light the candles at the proper time before Shabbos and Holidays; Kas hrut of the food in the home and its observance at home and away; and the observance ofthe laws pertaining to Family Purity.
The tenth Mitzvah—a very basic one which imbues the individual with the desire to reach-out and share the beauty of the Torah-true life with others—Ahavas Yisroel, the love and devotion to one’s fellow Jew.
Motivated by his deep love for his people, the Rebbe has not hesitated to utilize modern technology and in stant-globe-spanning media to bring the ancient yet eternal Torah-true ways of life to Jews every where they can be reached.
