CLIMATE With the reverse seasons of the northern hemisphere, Australia enjoys a largely temperate climate. most of Australia receives more than 3,000 hours of sunshine a year or a wonderful 70 per cent of the total possible hours. NATIVE ANIMALS Australia’s landmass separated from the other continents over 50 million years ago. The resulting wealth of wildlife including the kangaroo, echidna, platypus, emu and wombat are not found anywhere else in the world.

– A CuSToM ITINeRARy IN exploRINg AuSTRAlIA Day 1 ARRIVE INTO SyDNEy. On arrival, you will be welcomed to Australia by an ATS Pacific representative who will assist with your private transfer to the Park hyatt Sydney (four nights), which is set on the water’s edge overlooking Sydney Opera house. included in your stay is a gourmet daily buffet breakfast. Day 2 enjoy a full day at your leisure. Take in the surreal white pinnacles of its famous Opera house and explore the historic rocks district, the heart of the old city. Climb the famous bridge and take in the harbour and city landmarks from an altogether more original vantage point. browse some of the many stores that line Sydney’s bustling streets, head for one of the nearby beaches. Tonight you’ll enjoy a seafood dinner at jordons Seafood restaurant. Day 3 board your Sea Sydney Cruises vessel to commence an afternoon cruise. be engulfed by the beauty of Sydney as you “cruise like a local” aboard Calypso, a 52-foot motor yacht. Cruise the foreshores of Sydney harbour past world famous, iconic landmarks including the Sydney harbour bridge and the Opera house before dropping anchor in a secluded cove where you’ll enjoy lunch. you will then have the opportunity to go for a swim, kayak into the beach, try your luck at fishing or just relax. Day 4 This morning you will be transferred by private car to rose bay, the departure point of your seaplane tour to Palm beach. join Sydney Seaplanes for your four-hour tour to Palm beach and enjoy lunch at jonah’s. Perched high on the edge of a cliff, enjoying dramatic views of Whale beach and the sprawling Pacific Ocean, jonah’s at Palm beach is one of Australia’s most prestigious ocean retreats – something of a Sydney institution. return to Sydney on a glorious afternoon seaplane flight back to rose bay, encompassing a Sydney harbour circuit in front of the harbour bridge and Opera house does it for most!

Day 5 DEPART SyDNEy fOR yOUR fLIGHT TO ULURU (AyRES ROCk). you will be met on arrival and transferred to the voyages longitude 131º (two nights) in a luxury tent. longitude 131º offers luxurious, eco-sensitive and romantic accommodation, complete with 5-star luxury and private views of the sun rising and setting over uluru (Ayers rock). venture to uluru and Kata Tjuta and you are exposed to an expansive living cultural landscape, which very few are able to experience. Tonight, dine out under the spectacular desert night sky at Table 131°. An intimate threecourse dinner is served with the finest wines under a glittering canopy of stars. Day 6 enjoy a full day at Ayers rock today with luxury touring to the world’s largest monolith. rising 318 metres above the desert floor with a circumference of 8km, uluru is considered one of the great wonders of the world. it is located in the uluru and Kata Tjuta National Park, which is owned and run by the local Aboriginals. 50kms west of uluru is Kata Tjuta/The Olgas, which are a series of giant majestic domes, once part of a single rock that was even larger than uluru itself. The area is not only geologically impressive, but also a highly spiritual, cultural centre for the Aboriginals. Day 7 DEPART ON yOUR fLIGHT fROM ULURU (AyERS ROCk) TO CAIRNS. you will be met on arrival at Cairns and transferred to the daintree rainforest for a two-night stay at Silky Oaks lodge and healing Waters Spa in a treehouse. lying on the edge of the World heritage listed daintree rainforest, Silky Oaks lodge is an elegant oasis presenting a captivating blend of natural tranquillity and modern sophistication with 50 superb treehouses and riverhouses just 20 minutes from Port douglas. Day 8 enjoy a full day at your leisure. join an indigenous guided rainforest walk to learn something of the flora and fauna of the region, explore the mossman gorge, or take a dawn or dusk river cruise. Day 9 TRANSfERRED TO CAIRNS fOR yOUR fLIGHT TO HAMILTON ISLAND. On arrival you’ll be transfer from the airport to qualia for a three-night stay in a leeward Pavilion on the secluded northern tip of the island. qualia, Australia’s newest premium resort on the great barrier reef is set in 30 acres of tropical garden landscape on the northern most tip of hamilton island. guests are offered beautifully appointed individual Windward and leeward Pavilions; each of which present ocean views with either a private plunge pool or stunning sun deck. There are just so many wonderful wine and golf regions in Australia, but two of our favourites are the Mornington Peninsula in Victoria and the Hunter Valley in New South Wales. Both areas present a seductive lifestyle confluence of food, wine and spas with the added benefit of some of the finest golf in a country that has over 1,500 courses. morninGton PeninsulA Mornington Peninsula is about an hours drive from Melbourne and this compact area is much appreciated and visited by discerning local and international travellers. it is renowned for its cool-climate wines and fantastic winery restaurants. Almost half of the some 200 vineyards are in pinot noir but because of the wide variety of terroir, the area is also home to pinot gris, chardonnay, shiraz, riesling, tempranillo and barbera. Wine the small area of redhill has some of the best wineries, many with their own restaurants; Paringa estate (producing perhaps the best Pinot noir in Australia), red Hill estate, ten Minutes by tractor and Port Phillip estate – all open daily. Most winery cellar doors are open weekends and those open daily include Crittenden, Main ridge, eldridge, Merrick, Montalto, stonier, the Cups, Darling Park and Willow Creek. there are a number of showcase weekends and festivals held throughout the year. Golf the rugged coastal area of the peninsula provides perfect conditions for the 13 golf courses located here. Moonah links – Consists of two world class layouts; the Open (rated #26) and the legends (rated #13). Moonah hosts the Australian Open every third year and includes an integrated Peppers resort hotel complex. the Dunes Golf links – set on 300 acres of gently rolling hills and dunes, this 27-hole course is Australia’s premier public access course and rated at #27. Portsea Golf Club – A superb course rated at #38 in Australia.


hunter vAlleY Hunter Valley is about two hours drive north west of sydney and is the weekend playground for sydneysiders (much as the napa Valley is to san franciscans). the 120 wineries produce a wide variety of grapes but are most well known for semillon and shiraz. international stars feature in vineyard concerts throughout the summer and tyrrells host the popular Jazz in the Vines every October. Wine the Pokolbin area has many of the wineries that have been around for generations – tulloch, Drayton, tyrrells, McGuigan and lindemans. We also like the smaller personable wineries such as Margan, Petersons family Wines, tamburlaine and saddlers Creek. Most are open daily and many have restaurants or cafés serving meals using local produce. Dine Margan restaurant at Broke – the impressive sandstone building complements the Mediterranean inspired cuisine. A bonus while dining is the cellar door prices for wine – $18 a bottle for their impressive estate semillon. lazzarini’s – A great atmosphere and tuscan food make this an outstanding fine dining experience. Mojo’s on Wilderness – located in the lovedale area, this friendly secluded restaurant serves generous portions of very good food.

rock restaurant – Very contemporary and probably the trendiest place to dine in the Hunter Valley. the degustation menu is memorable.

Hot tip: Do not miss the Hunter Olive Centre on McDonald road! A showcase of 400 locally made gourmet food products including jams, preserves, olives, oils, chutneys and dukkah – most available to taste. And for food with a difference try Oishi at tempus two – authentic and delicious Japanese and thai cuisine. the best coffee in the valley can be had at Bliss Coffee roasters, Hunter Valley Gardens Village. The 60-foot oolala is the newest cruise boat in Fiji, travelling daily to a secluded sand cay called Savala. This soft white sand sanctuary sits in clear azure waters that are teeming with marine life. The island is home to nesting terns, nodies, reef egrets and frigate birds. This day trip caters to smaller numbers for a more personal cruise with guided snorkel tours, glass bottom boat tours and sand cay tours with trained guides. The cruise departs daily at 10.00am from Port denarau and returns at 4.30pm. This allows for a more leisurely start to your day and the chance to browse the stores at the marina at the culmination of the tour before taking your complimentary transport back to your resort.
