The Leukemia & Lymphoma Society (LLS) is the world’s largest voluntary health agency dedicated to blood cancer. The LLS mission is to: cure Leukimia, lymphoma, Hodgkin’s disease and myeloma, plus improve the quality of life for patients and their families. Each year LLS conducts a Man & Woman of the Year fundraising campaign. We take a moment with this year’s Man of the Year candidate Alan Cottrell to learn how he came to support LLS and why he continues to raise awareness for their cause. Hushh: How did you become involved with the LLS/MWOY Campaign? Alan: One of my fellow realtors, Lynn Liu, was the LLS Woman of the year in a recent campaign. She nominated me after we discussed the process. My daughter, Delena Webster, immediately agreed on my behalf. So, she “immediately” became my campaign chair person. Hushh : Do you have a direct connection to LLS? Alan : We all know folks that have been diagnosed. After agreeing to be a part of this, I became aware of so many folks in my life that have suffered from these blood cancers, lymphomas, leukemia, and so much more.

the hallway. I asked mom on the way home what was wrong with Marquanne? She told me that she had a rare disease, and it was attacking her body from the inside. A few weeks later she was gone. I had never lost anyone that close to my age. You expect for older people to pass, but not anyone your age. I will never forget that brief conversation with a young, beautiful girl in the hospital that seemed completely normal and healthy, then she was gone. Hushh : What have you learned about the LLS organization?

Alan : This is considered to be primarily a childhood disease. When I was 15, I had a cousin that was diagnosed with leukemia. I had no idea what that meant other than this cheerleading, tomboy young lady suddenly disappeared from my life. I remember visiting her at the hospital. She seemed completely healthy and normal to me. We talked and laughed while our moms talked in

Alan : There are many cancer assistance organizations. LLS has had tremendous success in research and drug trials that benefit so many cancers and diseases. To have even one successful trial approved by the FDA is big deal. LLS has been a part of 14 successful trials in the last year or so—an amazing feat! This has resulted in help and funding for many cancers across the board. The money raised here helps with that research funding as well as assisting local families and patients with care, transportation, and comfort care. The organization is volunteer staffed, so all of the monies raised for this

Josie was diagnosed with AML in April 15, 2020, just a month before her high school graduation. She had been accepted into the College of Communications at the University of Tennessee for the fall of 2020, and she was half way through the tryout process for the UT Dance Team, a lifelong dream that she had worked very hard toward achieving. In an instant, everything changed and life was put on hold as she was immediately admitted to East TN Children’s Hospital to begin four rounds of intense chemotherapy over the next five months. In total, Josie spent more than 80 nights in the hospital and required numerous blood and platelet transfusions. Josie went into remission after round 1 of chemotherapy. She is now working toward regaining her physical strength and just began classes at UT last month. She still hopes to tryout for UT Dance Team this spring. Josie and her family are excited to share her story and be the 2021 Girl of the Year.

Dalton was diagnosed with High Risk B-Cell ALL, a type of leukemia, May 1, 2020. He is 15yrs old and in the 10th grade at J. Frank White Academy in Harrogate, TN. Dalton has had some struggles with treatment at times but continues to smile and light the good light. He loves playing basketball as a point guard or on the wing. He enjoys Math and his dog Daisy. He loves pizza and Cool Ranch Doritos and playing video games. Dalton and his family are happy he is the Boy of the Year and to share their story for the campaign and LLS.

Lately my life has been far too busy. I have been juggling work, meal prep, preparing for my first figure competition and home. Even though part of my job is being out and about seeing clients it is still not really being able to enjoy the outdoors. Other days I sit in my office or at home doing house work looking outside but not able to connect with nature.

hen life seems overwhelming with its tasks and responsibilities, sometimes the best antidote is time spent outdoors in nature.

Scott and Becca, both West Texas transplants, moved to East Tennessee after visiting friends in Knoxville and falling in love with the area. Scott grew up boating with his family and later introduced Becca to boating and water sports when they met in high school over 20 years ago. When their children, Cutler and Charley, were born, they continued the family tradition of raising them on the water. Boating has played a major role in the relationships and friendships they have built over time. Once they moved to Knoxville and had the opportunity to start a new business, they quickly decided to combine their love of people and boating and share that with local Knoxville families. Seeing their members enjoying the water as much as they do is a dream turned reality for the Payne Family!

According to Centre for Disease Control and Prevention one should do at least two hours and 30 minutes of swimming every week. Not only losing weight but swimming can also help you maintain your weight once you have lost the required amount. 3,500 calories are equal to a half kilo of weight. So, you need to burn 3,500 calories more apart from what you are taking in, to lose that half kilo. DIFFERENT STROKES As we have already mentioned above, different swimming strokes burn different number of calories. Not only strokes but also the

duration for which you perform these strokes matters. BUTTERFLY STROKE This difficult stroke burns the maximum number of calories with its dolphin like kick and windmill arm motion. The stroke burns around 150 calories in 10 minutes for a person weighing around 72 kilos. FREESTYLE STROKE Freestyle stroke is also called as front crawl and burns a huge number of calories. The best part is, it is easiest to perform and that is why, it is the most popular. A person weighing 58 kilos will burn around 590 calories if they perform freestyle swimming for an hour. BREASTSTROKE AND BACKSTROKE Both these styles are no less when it comes to burning calories. The number of calories both these styles burn are equal to the number of calories that you burn while slow jog or fast walk. The best idea would be picking up a single form and performing it every day. to 200 members. And they are still growing! This summer they opened a new club location at Tellico Marina. But like most businesses it was not all that easy to open. Scott and Becca had their fair share of obstacles to overcome. They made a tough decision coming to Knoxville, and the move was hard. For one, Texas was the only home Scott and Becca had ever known. Leaving behind the lake, the cabin, friends, and especially other family must have felt strange. It must have been scary, and maybe even overwhelming. When they arrived in Knoxville, they realized they suddenly had no history. They had no relationships. Becca says, “Most people don’t realize how valuable business relationships are until you don’t have them anymore.” She is right about that too. Thankfully, they had Chris and Brandie to make it a little easier. Even though they had the support of their friends, there was one more obstacle they had to face. And it was a big one - something most people would not even think to consider. The franchise provided

just about everything they needed to open and become successful. Systems, software, marketing... those were all in place. But the boats? Scott and Becca had to buy the boats! And that meant they needed a bank. Well, they were new in town, they had no business relationships, and they had a tough job ahead of them. In the end they got through it, and Scott says the move to Knoxville was so good for his family, and it continues to be good. Why is it so good? Becca says it is the outdoors and all there is to do. She is excited about the mountains and the lakes. She notes there are 8 lakes within 50 miles of Knoxville, and that is a lot of water sports. For her, Knoxville is home. It is Paradise. She says, “Living here I always feel like I’m on vacation.”

For Scott it is the same, but he adds that his favorite part of being in Knoxville and owning the club is the members. He gets to go out on the boats and spend time with them. Through training and coaching he gets to help them experience and enjoy life on the water. Whether it’s teaching you to wake board, pull a tube or just learn to drive the boat, the fun and memories his members are creating is what makes it all worth it. Mostly, though, it is the relationships. They are strong and deep. Especially with their crew that works hard along side them every day. They also feel blessed to raise their two children, Cutler and Charley, here in Knoxville where people are friendly, and the culture is rich. What is next for these two? They have got some surprises in the works. Maybe a new line of lake wear or…we will just have to wait and see. For now, they are working hard to get people on the water, having fun, making new friends and creating lasting memories. Like the slogan says, “Cultivating relationships through life on the water.”

Lover’s Leap Loop Trail Hot Springs NC The Lover’s Leap Trail offers a dramatic view of the French Broad River and the town of Hot Springs. It ascends onto a rocky bluff overlooking the French Broad directly across from town. That’s where Danielle Rowland and Roland Mott; Subaru’s Leave No Trace Traveling Trainers, come in. They teach minimum-impact outdoors skills across the country. They have a lot of useful tips (see above). But their first advice is a little surprising: to pick up your campsite. It seems obsessive, cleaning up before you even start putting up tents. But the practice helps maintain a clean campsite for the rest of the trip. And that’s especially important in ecologically sensitive campsites like Big Basin. “Microtrash is all the tiny flyaways that people sometimes miss; crumbs, bits of wrapper, twist ties from bread,” Mott says. “It’s little, but over time, it builds up- and could hurt a raccoon or bird if they tried to eat it.”

PITCH YOUR TENT ON LEVEL GROUND Anybody who has ever spent a restless night slowly sliding headfirst out of a sleeping bag or rolling from one side to the other knows why this is important. SEPARATE EATING AND SLEEPING AREAS Picnic tables and campfire circles inevitably morph into party central. Even in a small campsite, create psychological space by grouping tents a few yards away from the action. ACCESSORIZE Car camping lets you bring more gear than if you were hiking the Pacific Crest Trail. Camp chairs make a convivial campsite; lanterns make it cheery at night (and help you not trip on your way to the bathroom). TOP CAMPING SITES IN OUR AREA reserve.tnstateparks.com BIG HILL POND STATE PARK Big Hill Pond State Park is located just north of the Tennessee/Mississippi border along TN-57 between Ramer and Pocahontas. BLEDSOE CREEK STATE PARK Bledsoe Creek State Park features 57 standard campsites with hookups and recently upgraded amenities, including grills and picnic tables. Eight primitive campsites are situated along the waterfront and offer scenic views of the lake. BOOKER T. WASHINGTON STATE PARK Situated on the shores of scenic Chickamauga Lake, not far from the city of Chattanooga, is the 353-acre Booker T. Washington State Park. Many visitors enjoy the phenomenal scenery through the challenging, yet rewarding, six-mile mountain biking trail. CHICKASAW STATE PARK The park is situated on some of the highest terrain in west Tennessee. Three campgrounds are located within Chickasaw State Park (RV, Tent, Wrangler) each with picnic tables, grills and playground for the little ones, including more than four miles of easy to moderate hiking trails and bicycle friendly roads. DAVID CROCKETT BIRTHPLACE STATE PARK This historic park includes a limestone marker and replica cabin, as well as visitor center exhibits. Nearby is the Cherokee National Forest and his father’s Crockett Tavern Museum in Morristown. In addition, it offers a paved bike trail, with more than six miles of hiking trails of Shoal Creek and Crockett Falls, limestone bluffs, abundant wildlife and serene forest.

FALL CREEK FALLS STATE PARK 200 campsites located throughout five different areas. The park also offers 16 backcountry sites for the more adventurous campers. The park also manages Virgin Falls State Natural Area which has 14 campsites divided into four areas. INDIAN MOUNTAIN STATE PARK Indian Mountain State Park offers 47 campsites with paved pads to serve both RV and tent campers. With picnic tables and grills provided for each site, a night stay within the park is sure to be a memorable one. It serves as a living demonstration of how good environmental practices can reclaim wasteland and convert it to beneficial use. NORRIS DAM STATE PARK Located on the shores of Norris Lake, with more than 800 miles of shoreline, Norris Dam State Park offers recreational boating, skiing and fishing. The park offers a fully equipped marina with boat ramp available to the general public. REELFOOT LAKE STATE PARK Reelfoot Lake State Park is located in the northwest corner of Tennessee and is noted for its fishing, boating and wildlife viewing. The 15,000-acre lake was created by a series of violent earthquakes in 18111812 that caused the Mississippi River to flow backwards for a short period of time, creating Reelfoot Lake. WARRIORS PATH STATE PARK The park is home to premier boating and fishing activity, hiking trails, an internationally-renowned mountain bike trail system (which is a designated National Recreational Trail), an award-winning nature and education program and a nationally recognized golf course.

Do not leave food out in your campsite, then walk away“for just a minute”, thinking that they won’t get it. (See lesson 1) 3

Do not leave food in the backseat of your car and then forget to roll up the windows. Do not leave food in your tent either. They will get it. 4

Bear-resistant food boxes are also all wildlife-resistant food boxes and are your friend. Use them.

This is the key to a good campfire. Apply the laws of fire physics, stacking the wood to provide good airflow and ensuring the smaller pieces of kindling, once lit, would warm the bigger logs. Don’t worry if it’s not perfect- you’re not building a pyre at Burning Man or anything. See tips to the right.

START THE PERFECT FIRE

PACK From home, bring a butane lighter or matches, kindling and logs of different sizes, grilling tongs and thick grilling gloves. BUILD Our favorite design combines a log cabinstyle arrangement on the outside (4 large logs set in a box shape) with a Tipi of smaller wood in the middle to help it catch. Use enough fuel to cover the grill area. BURN It takes 30 to 45 minutes for a fire to burn down to low flames plus embers, the ideal stage for cooking. This is your golden time for happy hour and dinner prep.

DO YOU COFFEE?

For camping trips, s’mores are essential. We advise a Do-It-Yourself s’mores tray that makes it easy to customize the treats. Put the kids s’mores on one side and the adult s’mores will be on the other side. -So an adult side? Like with whiskey? Sadly no whiskey. Still, it’s easy to offer adults more sophisticated ingredients, like coffee flavored marshmallows and bittersweet chocolate. (The kids? They’ll be fine with classic chocolate bars and puffy, white supermarket marshmallows.) The biggest s’mores innovation is a technical one: s’more roasting sticks, telescoping forks that let you roast your gooey creation from your camp chair and keep the hair on your face and arms.

Is there camping without coffee? No. Although you may remember with dread the days when camp coffee was powdery instant mixed with cakey creamer, it’s now entirely possible to brew a cupeven a wilderness latte- that would do credit to Honeybee or Awaken in Knoxville.

BEGIN WITH THE BASICS Heat water in a pot and pour into a #4 plastic filter cone (and #6 coffee filters to avoid spilling) atop a GSI Outdoor Enamelware Coffee Pot (REI; $25) MEMORIZE THIS FORMULA 1 cup of coffee grounds + 6 cups of water = 5 potently strong cups of Joe. BE GENTLE Don’t bring the water to a full, rolling boilbubbling is all you’re after. Any hotter, and it’ll bring out the bitter acidity in the coffee when you pour it over the grounds. INVEST IN A MILK FROTHER (Produkt, $2.50; ikea.com). They’re small, lightweight and create great foam. Heat milk in a separate pan, stirring often. You don’t want it to scorch. HAWAII not in the cards this summer? Bring a taste of Hawaii straight to your home with this recipe that will become your go-to for any cook out or to just liven up the work week. What is Huli Huli Chicken? Authentic huli huli chicken is usually made with a whole chicken or larger chicken portions and is cooked on a grill filled with mesquite wood, and it is cooked on splits. It’s rotated while cooking and basted in a sweet, teriyaki-like, huli huli sauce. It was first created over 70 years ago and has been a popular Hawaiian favorite ever since! Did you know the word “huli” means “turn” in Hawaiian?

INGREDIENTS 1/3 cup ketchup (preferably use one without corn syrup 1/3 cup low-sodium soy sauce 1/3 cup packed light brown sugar (or use a half brown sugar, half honey blend) 2 Tbsp rice vinegar (you can sub with apple cider vinegar) 1 Tbsp sriracha (optional) 1 Tbsp Worcestershire sauce

1 tsp sesame oil, or more to taste (try Toasted Sesame from Abingdon Olive Oil Company) 1 1/2 Tbsp minced garlic 1 1/2 Tbsp peeled and minced fresh ginger 3 lbs boneless skinless chicken thighs, trimmed of visible fat (about 9 pieces) Vegetable oil (or olive oil) for brushing grill grates


HOW TO MAKE HULI HULI CHICKEN AND MARINADE Mix marinade ingredients: In a medium mixing bowl whisk together ketchup, soy sauce, brown sugar, rice vinegar, sriracha, Worcestershire, sesame oil, garlic and ginger. Remove 1/4 cup of the marinade to a bowl and refrigerate. Pour marinade over chicken: Place chicken in a medium bowl or gallon size resealable bag. Pour remaining marinade over chicken then toss to coat then press down into marinade. Seal bag if using a bag. Rest in refrigerator and let marinate at least 2 hours and up to 8 hours. When it’s time to prepare your grill, here is a tip. For grill grates it’s actually not safe to just grease with cooking spray or drizzle with oil, instead: Preheat a gas grill over medium heat. Soak a ball of paper towels with some vegetable oil (just enough to saturate lightly). Hold the balled up paper towel using long tongs and rub over cleaned grill grates. Once that is done, place chicken pieces on grill leaving space around each. Cover with lid. Cook through, basting occasionally: Turning and basting with reserved 1/4 cup marinade occasionally, until it reaches 165 degrees in center, approximately 15 minutes. Note: If chicken isn’t browning enough you can increase heat near the end of grilling. Serve warm garnished with green onions, or for extra kick, some fresh jalapenos if desired. Optionally serve with coconut rice, fresh pineapple and grilled mini peppers. Don’t want the hassle of grilling? Here are the instructions to use for your oven. Preheat oven to 350 degrees. Place marinated chicken on an oven

safe, greased cooling rack set over a foil lined 18 by 13-inch baking sheet. Cook chicken thighs until they reach 165 degrees in center (about 30 – 35 minutes), basting with the reserved 1/4 cup marinade during last 10 minutes. Note: If needed tent chicken with foil to reduce excess browning or prevent from drying out. If not browned to your liking you can broil briefly near the end of cook time. Notes 2 1/2 Tbsp brown sugar and 2 1/2 Tbsp honey can be used if preferred. This same recipe will work great for 2 lbs of chicken thighs (6 thighs) if you only need 6 servings. Smaller chicken breasts will work great here too. Just be sure to monitor the temp for doneness (they cook a bit faster). You want to cook just right to 165 degrees in center, otherwise they’ll start to dry out.

Now I don’t know about you but I love, love, love- a good margarita…..hence the name of my site. I love them on the rocks, frozen, with salt or sugar! And I’m always trying to create new recipes to cure my margarita cravings. Another thing I love is incorporating fresh fruit into my drinks as much as possible. On my blog I created a fresh fruit cocktail series and made cocktails that featured fresh fruit instead of the heavy sugary mixes you buy at the grocery store if you would like to check them out. A few years ago I was brunching in D.C. and I had a drink that was infused with thyme…..I took one sip and thought this is absolutely delicious! I have never been able to forget that experience and so I started infusing herbs into my drinks a couple years ago and never looked back. So in case you are thinking this drink may not be as good as it sounds trust me IT IS! Try it and I think you will love it. The recipe is super easy and takes no time at all. If you have a juicer that is great but for those who don’t- feel free to use my blender and strainer method; it works just as good. Also I like to serve my cocktails in short “rocks” glasses so if you need to double the recipe for a larger Margarita glass go ahead and do so. This recipe is fun, trendy, and fabulous! If you make this drink your friends will be impressed and totally pleased!

Rosemary Pineapple Margarita 2 Oz Silver Tequila 1 Oz Grand Marnier (or Cointreau, triple sec) 2 Oz Pineapple Juice 1 Oz Rosemary Simple Syrup Sugar for rimming Rosemary Simple Syrup 1/2 Cup Water 1/2 Cup Sugar 1 Rosemary Sprig Instructions

INSTRUCTIONS

In a small saucepan add water and sugar; bring to a boil and reduce heat. Stir occasionally until the sugar dissolves. Remove saucepan from heat and set aside for 1-2 minutes before adding the rosemary sprig. Add the rosemary sprig and allow to steep for 15-20 minutes to assist with the infusing process. Allow simple syrup to completely cool before adding it to your drink. Blend or juice pineapple until smooth or juiced. If you choose the blender method, make sure to strain the juice to separate the pulp. (You have the option of using store bought pineapple juice if your not in the mood to juice). Use the pineapple rind to rim the glasses and add salt or sugar. In a cocktail shake, add ice, tequila, pineapple juice, Grand Marnier, and simple syrup; shake vigorously for about 10 seconds. Pour over ice. Add some finely chopped rosemary to the top of the drink for garnish; along with a perfectly cut pineapple rind.

Students will learn the basics of character acting and how to build mythical and non-human characters. Ages 10 & 11 | June 14-18 | 1PM-4PM One of the great cradles of theatre was ancient Greece-it’s also the birthplace of an epic mythology that continues to capture both the heart and imagination of people everywhere. In this class, actors will work from the graphic novel I am Hermes! Mischief-making Messenger of the Gods to study the magical art of acting and dive into the world of re-creating the characters that instilled awe and wonder in the hearts of the ancients. Intro to Acting | Ages 10 & 11 | June 21-25 | 1PM-4PM Each class will begin with an introductory concept or skill of the theatre and acting for the stage. Lighting for the Stage | June 28-30 | 9AM-2PM Lighting designer Jordan Vera (Clarence Brown Theatre, North Carolina Stage Company) introduces students to practical lighting design from its very beginnings in script analysis and research to the creation of specific looks for individual scenes. Students will work with both fundamental ideas of lighting while working with the very real work of turning theory, mood, and theme into light. Beyond Tie-Dye | July 7- 9 | 1PM to 4PM Get your design and craft groove on in this intensive experience students explore the world of dye techniques! Jake Shimabukuro “The Jimi Hendrix of the Ukulele”

“I just wanted to play the ukulele my way,

which turns out to be very different from what everybody else has done,” says Shimabukuro, who started playing the instrument at the age of four and learned the basics from his mother, Carol. “Most people just strummed the ukulele, but I started playing melodies, and a new world opened up – I was singing through the ukulele.” As soon as music fans got a listen to Shimabukuro’s virtuosic approach to the ukulele, they were hooked. Albums such as Gently Weeps, Peace Love Ukulele and Grand Ukulele topped the Billboard World Music Charts, and as a live performer he became one of the hottest tickets around, headlining the Hollywood Bowl, Lincoln Center and the Sydney Opera House (he even performed for Her Majesty Queen Elizabeth II) while making frequent appearances on media outlets like The Today Show, Good Morning America, Jimmy Kimmel Live! and Late Night with

Conan O’Brien. In 2016, Shimabukuro recorded the all-original Nashville Sessions at Music City’s famed Ronnie’s Place studio with producer R.S. Field (Steve Earle, Webb Wilder) and the ace rhythm section of bassist Nolan Verner and drummer Evan Hutchings. And now he’s returned to the same city and studio – and with the same gang, too (augmented by guitarist Dave Preston) – for his newest record, The Greatest Day, which will be released on August 31, 2018.

In mid-July, he embarks on an extensive tour of the U.S. and a fall tour of Japan. “I’m really excited to play the new songs in my shows,” he says. “Making this record was one of the highlights I’ve had in the studio. I couldn’t be happier with the sounds and arrangements. But most of all, we had a ton of fun making it.”

“On the last record, it was pretty much the sound of a live trio, which sounded fresh, raw and organic,” says Shimabukuro. “Now we’ve expanded to a quartet, which has added more colors and variety to the overall production. Once we recorded the live takes, we experimented with overdubs, and added horns, strings and keys, and other funky sounds. There are even some vocals on a few cuts.” The 12 studio tracks that comprise The Greatest Day feature some of Shimabukuro’s most imaginative and adventuresome playing yet. Half of the album is devoted to originals, on which the instrumentalist reaches new heights of compositional distinction. And on the covers, Shimabukuro’s prodigious skills allow him to transcend his material – no mean feat considering some of the classics and standards he’s tackling. T he B rittany J ohnson G olf C hallenge Brittany was a graduate of William Blount High School and was a senior in the Maryville College class of 2018. She was also fortunate to be a part of their successful basketball team. Her endless perseverance, desire to encourage teammates, and bountiful efforts, helped to set her apart. She was loved by family and friends for her contagious laugh, heartfelt smiles, and genuine desire to encourage others. Brittany courageously used the gifts God gave her to share the joy of Jesus Christ and passionately believed in a Relentless Pursuit of a stronger relationship with Jesus. She explained that passion this way “God let every day be an adventure to relentlessly pursue your perfect image, being, love & compassion; to never be content or comfortable. I want to be radical for Your kingdom. I never want to stop pushing on, pressing on, or pursuing who You are.” She enjoyed working with children, sharing that vivacious smile, giving both empathetic & energetic love, and was always quick to add her heartfelt laughter to make them feel comfortable. She was truly special because she wanted to make every stranger into a friend and she left an imprint on the hearts of everyone who got to spend time with her.
