Spring is in the air

Tulips are blooming, birds are singing and K&L Media celebrated with our first Spring Makeover Contest. The contest was open to all readers and the response was great; readers wrote in with inspirational stories about themselves, a loved one or a friend. Our editorial staff then had the pleasure of sifting through the entries and choosing the five winners. Some lost weight, others were single parents and some had never seen the inside of a salon more than three times in their life. It was a wonderful process that brought a lot of smiles and laughter to the contest winners and our staff.

The generosity from local businesses was amazing when they heard about our contest. Our winners received a complete makeover including outfits, manicure, pedicure, new haircut, style and color as well as a makeup session for the ladies. It was a great day that was topped off with a photo shoot in the studio of Bellingham photographer Ryan Duclos. Some were comfortable in front of the camera, others brought a shyness that was refreshing and heartwarming as we watched them warm up to the camera and the process. A warm thanks as well to our makeover sponsors who donated services and clothing for the contest. Turn to page 42 to see our winners transform with before and after photos. In keeping with spring, we have included the first insertion of the Couture Weddings publication into the magazine. Total Recipe Time: 25 to 30 minutes Makes 4 Servings pound round tip steaks, cut ¹⁄8 to ¼ inch thick 1 Pico de Gallo (recipe follows) teaspoons vegetable oil, divided 3 1-½ cups thinly sliced bell pepper, any color s medium white onion, cut into ½-inch wedge ½ sliced thinly r, peppe ño jalape m mediu 1 Salt small whole wheat tortillas (about 6-inch 8 diameter), warmed Rub: cloves garlic, minced 3 teaspoon ground cumin 1 r 1-½ teaspoons ground chipotle chile peppe rate until 1. Prepare Pico de Gallo. Cover and refrige ready to use. then 2. Stack beef steaks; cut lengthwise in half and and crosswise into 1-inch wide strips. Combine beef . evenly coat to toss bowl; large in ients rub ingred over 3. Heat 1 teaspoon oil in large nonstick skillet medium-high heat until hot. Add bell pepper, until onion and jalapeño; stir-fry 5 to 8 minutes or ; vegetables are crisp-tender. Remove from skillet keep warm. hot. 4. Heat 1 teaspoon oil in same skillet until Add half of beef; stir-fry 1 to 2 minutes or until outside surface is no longer pink. (Do not overcook.) Remove from skillet; keep warm. Repeat with remaining 1 teaspoon oil and beef. . Season 5. Return all beef and vegetables to skillet with salt, as desired. Serve beef mixture in tortillas; top with Pico de Gallo.

Zacchoreli Frescobaldi-Grimaldi Zacchoreli grew up in the Pacific Northwest, and lives in Bellingham with his partner of 15 years and their three zany dogs. He has a master’s degree in English Studies from Western Washington University, and is an English professor at Northwest Indian College.
