By Sara Matthis A t first glance, Caleb Goins, 31, is like any other local — he loves fishing and spearfishing, has a young son, a laid-back attitude and a mop of unruly hair. But to see him in action, creating his pierced metal art, is to watch a very experienced artist at home with his craft. A visitor to the Keys since he as seven years old, Goins has split his time between the Keys and Asheville, North Carolina. “I’ve get the pirate blood from my dad,” Caleb said of his love affair with the islands. He also credits his father getting him started in the arts in 2000 when they conceived of the brand and interior finishes for Bonefish Grill in St. Petersburg, which has since gone national.

But the art is all his own — no computer images and nothing cut by an automated machine — which sets his work apart from the imitators. “I start with soap stone,” he said, gracefully sketching with something that looks like a stubby piece of chalk. Then he retraces the line again, with a thick blue marker. Then it’s all about a steady hand. “The plasma cutter has a 40,000 degree Farenheit flame, cutting as fine as 1/16 of an inch,” Caleb said. “It’s basically like having a laser on your finger.” His canvas? Usually it’s 1/8-inch gauge aircraft-grade aluminum — perfect for the Keys climate — but he also works in other metals. After the work is cut, Caleb uses a variety of methods to buff the piece and add texture. His clients are mostly fishing enthusiasts such as charter captains, like Capt. Dave Schunke of the fishing television show “Mavericks.” One of his earliest fans was “The Spanish Fly” — Capt. Jose Wejebe who passed away in 2012 at the top of his television popularity. His daughter, Krissy, inherited about a dozen pieces. “My favorite piece depicts my dad and the show,” she said, “but I really like the one of the wahoo, too.”
On Jan. 11, Caleb’s work will be auctioned off as part of the event surrounding the Fish For Jose fishing tournament. He donates the work, and the proceeds support the Make a Wish Foundation. Recent work includes pen-andink drawings. Caleb said that while exploring the graphite side of art is new, it’s not a total stretch. (“My parents told me that when I was little all I wanted was a crayon and a piece of paper,” he said.) He’s also developing another metal technique — where the image is graven rather than cut. “I use a grinder on sheet metal,” he said. “It has a threedimensional, illuminated quality that is very interesting. There’s a client out in California that has also commissioned some engraved Yeti cups picturing sea kelp and other Pacific creatues.” Caleb has an adorable 2-yearold son, Oliver. “He just goes nuts when he sees fish,” said Caleb.
Of course, so does Caleb. He’s a lifelong angler and spearfisherman, relying mostly on memory and impression when sketching. That personal saltwater experience explains not only the physicality of the art — broad strokes and manly materials — but also the natural grace of the flowing lines, translated by a seasoned athlete, which depicts the age-old contest between man and fish. His pieces range from friendly little 12-inch “Zany Fish” to panels as long as 6 feet; a vignette he calls them. (The most recent mural was installed at Brutus Seafood in Marathon; it shows Sombrero Light and many Keys species of marine life.) Many are custom pieces that tell a story: about the angler and the species he loves to fish, friends, family and even the client’s boat. Business owners all along the Eastern Seaboard have commissioned Caleb to create signage, too. One local example is the sign plate on The Art Studio in Marathon. “Caleb is truly gifted and talented. It was like he was inside my head and could see exactly what I wanted,” said owner Sheila Cook. “But I think I was equally impressed with his kindly manner and work ethic.” “He’s just a good guy,” said Krissy. “Those kind of guys are few and far between. he story of the Rodriguez Cigar Factory begins in 1947 on La Finca de Carmencita tobacco plantation, where Angel and Daniella Rodriguez started their empire. That plantation, located in the central Cuban town of Siguaney, was primarily used for growing, cultivating, and fermenting Cuban filler tobacco, and was producing 120,000 pounds of tobacco annually. The central region of Cuba was known at the time for growing tobacco with strong leaves and higher nicotine and oil contents. In 1960, however, the Cuban government nationalized the plantation and consequently forced the Rodriguez family to immigrate to the United States. They landed in Key West.
Founded in 1984, Rodriguez Cigar is doing a fine job of perpetuating Key West’s reputation for excellent cigar making that dates back to the early 1800s. Sticking to what they know has been the key to their success, but a dedication to creating premium products has elevated the quality of their cigar collections said Danny DiFabio, grandson of Angel and Daniella Rodriguez. DiFabio began operating the family business in 2009, and has sought out the highest quality tobacco ingredients from Ecuador and Nicaragua. “I’m proud to say that a lot of connoisseur and cigar aficionados have sought us out,” said DiFabio. But what makes a premium cigar? DiFabio says it boils down to a few things — quality ingredients, how its constructed, and how its aged. “How you blend the raw materials creates the refinement in taste that’s balanced, and rich,” said DiFabio. The cigars feature a family secret — Daniella’s secret “goma tragacanto,” with hints of vanilla and a little sugar — used to seal the hand-rolled smokes. Rodriguez Cigar Factory cures cigars at least a year, some longer, before they become available for sale. Almost 100,000 cigars are “at rest” in the Key West humidors, sitting at an ideal 68-70 degrees. DiFabio said the curing period allows oils in the wrapper and binder to fuse. “We have a lot more control than other companies in the industry, and quality control is the most important thing we go after,” said DiFabio. “To create a cigar that speaks for itself is the ultimate challenge. And I feel very comfortable that our cigar is now on that level.”

By Theresa Java Captain Doug Berry works all day with his hands carving fine art in the Upper Keys. His work takes many functional forms from carving boards to furnishings to jewelry boxes. “I do a lot of carving and a lot of inlay work,” said Berry, a 30-year resident of the Florida Keys.

His inlay work is embellished with fine stones like turquoise, amethyst or red coral. First, he etches out an intricate image or design, pours in the semiprecious stones and then epoxy coats it. It’s this fine-detail work that he’s most proud of, he said. Currently, Berry is finishing his “River Runs Through it” table masterpiece. It’s a table with turquoise inlay and said he believes it to be his finest accomplishment to date. But just last week, he delivered a commissioned “rocket launcher” (fishing rod holder for the boat) with mother of pearl and turquoise inlays. And last year, he made a very special jewelry box detailed with porpoises. “The client loved it so much, they keep it on the coffee table as art, rather than use it to store jewelry,” he said. Berry prefers black walnut burl for carving. For other things, he uses a wide variety of woods like zebra wood, padauk lumber, of course mahogany, sepele and purple heart. Berry estimates he puts in about 60 hours per week in his workshop. It’s a newish career — resurrected after 22 years as general manager at Worldwide Sportsman. But he’s been working with wood his whole life; his grandfather was a wooden sailboat builder in New England.

In addition to the items mentioned above, the inventory is wide and varied: custom shadowbox frames and serving trays. He also builds tournament trophies and plaques for just about every competition including the Redbone Celebrity Tournament Series and is the go-to man for sculpture bases for local artist Pasta Pantaleo. Ninety-nine percent of the work, he said, is a commission for a specific piece. “They’re hand-me-downs or heirlooms; I build things to last forever,” Berry said. HOLIDAY HACKS Living gluten-free and happy through the holidays By Kim Bassett There’s a lot of hubbub about gluten these days. The most frequent questions I hear are, “What is gluten?” and “Why is it put into food in the first place?” Gluten is the name for proteins found in wheat, rye, barley and triticale, which is a cross between wheat and rye. It’s put into foods to help them keep shape, almost acting as a glue holding food together. Who has problems with gluten? Individuals with: • Crohn’s Disease • Celiac Disease • Non-Celiac Gluten Sensitivity • Gluten Intolerant
Researchers estimate that 6 to 7 percent of the population may fall into one of these categories, which amounts to about 20 million people in the United States alone. Knowing that, how in the world can you enjoy eating throughout the holidays if you happen to be one of those “lucky” 20 million people? Here is a handy list of popular holiday foods that don’t typically contain gluten.

• Plain turkey. Skip the gravy and traditional stuffing. Bonus: Turkey contains a lot of yummy protein too. • Plain ham. Meats are often gluten-free. • Regular mashed and sweet potatoes. Skip the butter and check with the chef to be sure no flour was added to the potatoes. • Vegetables and fruit are often healthy gluten-free options. If the veggie is covered in a cream based sauce, skip it, as most cream sauces have flour. • For dessert, choose a gluten-free cookie or brownie mix available now at most grocery stores. And my personal favorite:
Pineapple Fluff Pie (Makes two pies) INGREDIENTS 1 can crushed pineapple, well drained 1/4 cup lemon juice 1 can sweetened condensed milk 9 ounces Cool Whip 2 ready-made gluten free graham cracker pie crusts DIRECTIONS Mix all ingredients together and pour into pie crusts (split mixture). Refrigerate overnight or until firm (4-6 hours). Homemade gift tags add personalized touch
I admit to being a total gift-wrapping freak. One year, God bless me, I made all my own Christmas wrapping paper. For my troubles, Santa brought me a teensy bit of back pain that wore off about the start of the New Year. Now, I try to keep my creative endeavors to a more manageable size: gift tags.
First, a couple of words on “sourcing,” or where to procure your supplies. While die-cut gift tags are available at craft stores on the mainland, crafty locals can also make them out of cereal boxes. Then, start thinking outside the gift box — tiny shells in place of buttons, homemade potato stamps, etc.
• Elegant. Dip a wreath stamp in glue and then dust with glitter. Make the berries with a dab of red paint. Finish with a fancy velvet ribbon. • Youthful. Bends some pipe cleaners into a zigzag Christmas tree shape and finish with a gold star. Easy enough for kids to make and it keeps them busy! • Santa Belt. Okay, more difficult on the elf scale, but the tab off a soda can makes a perfect Santa buckle. Use felt or black paper for the belt and glitter glue for buttons.
