ew guidance in Florida is advising against masking requirements from corporate headquarters and recommending less isolation for those who are positive with COVID-19.

Gov. Ron DeSantis and state Surgeon General Joseph Ladapo announced the measures in a 10-minute video titled “Buck the CDC” on Feb. 24.

Within the video, DeSantis said guidance by the U.S. Centers for Disease Control and Prevention isn’t “the best guidance.” A day after the release of the video, the CDC released a new tool that outlines a county’s COVID-19 transmission level of “low,” “medium” or “high” and provides recommendations based on that designation.

For instance, Monroe County’s COVID-19 transmission level is deemed “medium,” per the CDC. Recommendations under the medium designation include staying up to date on COVID-19 vaccines, getting tested if people have symptoms and consulting a health care provider on whether to wear a mask.

Transmission levels are determined based on the number of hospital beds used, hospital admissions and the total number of new COVID-19 cases.

As of March 1, Lower Keys Medical Center had one COVID-19-positive patient. Mariners Hospital, too, had one patient in-house with COVID-19.

The Baptist Health South Florida system had 52 COVID-19 patients receiving treatment.

“We continue to see a steady and significant decline in cases.

As always, we encourage eligible members of the community to get vaccinated and remain vigilant,” said Gina Halley-Wright, spokeswoman.

“These things will help protect you as much from cold and flu as well,” he said.

Counties in the high categories are recommended to wear masks indoors while in the public. But new recommendations by the Florida Department of Health state there’s no strong evidence that facial coverings reduce the transmission of respiratory viruses. As a result, the governor and the state’s top health official are advising businesses to no longer require facial coverings for their employees.

“I think so many of us are happy to see the end of employees having to walk around with masks in hot restaurants when everyone else is sitting comfortably,” Ladapo said. “There’s never been evidence that this has benefitted employees or patrons. We’re not recommending it in Florida.”

Per the CDC, people may choose to mask at any time, but those with symptoms, a positive test, or exposure to someone with COVID-19 should wear a mask.

New state guidance updates the school isolation rule to five days and maintains the parents’ right in determining whether their children should wear a mask. The Monroe County School District’s dashboard showed three students and two staff members with COVID-19 as of March 1. Two cases came out of Coral Shores High School and one from Key West High School, while one staff member from Plantation Key School and another from Horace O’Bryant School were out with COVID-19. That’s down from seven weeks ago, when 183 students, 40 teachers and 26 staff members were confirmed positive with COVID-19.

New state guidance also gives practitioners the flexibility to make the decision to treat patients with off-label prescriptions if they determine it to be in the patient’s best interest. Ladapo said doctors who receive pushback from hospitals have an avenue to file a complaint through the state Agency for Healthcare Administration if they interfere in their ability to treat their patient.

“We want people to be able to have a right to access these medications, especially if they’re in a situation if nothing else has worked,” DeSantis said.

Monroe County is second in the state in the percentage of people vaccinated, 84%. Miami-Dade County is No. 1 in percentage of the population inoculated, 97%

In the Florida Keys, land surveys began in 1872. The accompanying image is a copy of the original survey conducted by M.A. Williams, whom the government contracted on Jan. 2, 1872, to do survey work.

This land survey on North Key Largo and Pumpkin Key, part of Township 59 South of Range 40 East, was conducted between April 22 and April 30, 1872.

The following steps were taken to make a homestead claim. First, a claimant went to the nearest Land Office and filed a claim. The agent then checked the records for any prior claims of ownership.

Providing no claims existed, a $10 filing

The act allowed any U.S. citizen, or potential citizen, who was either over 21 years of age or who was the head of a household, be it man, woman, immigrant, or freed enslaved person, the ability to claim a parcel of undeveloped and unclaimed land from the public domain.

From that point forward, it was up to the homesteader to chip in with the sweat equity end of the deal. The homesteader’s job was to improve the property by clearing the land, producing some kind of crop through farming, and building a home or other dwelling that measured at least 12 feet by 14 feet. Time also had to be spent living on the property. After clearing the land, building a home and spending five years living on the property, the homesteader could file a claim for the land’s title.

In order to receive clear title to the land, an affidavit was filed stating that the homesteader had spent five years living on the property. The document was a standardized, fill-in-the-blank, piece of paper that read, in part: “That the said __ entered upon and made settlement on said land on the __ day of __, 18__ and has built a house thereon __ and has lived in the said house and made it his exclusive home from the __ day of __, 18__ to the present time, and that he has since said settlement ploughed, fenced, and cultivated about __ acres of said land, and has made the following improvements thereon to wit.”

The affidavit was then signed by two neighbors or friends willing to vouch that the homesteader had fulfilled the obligations. Once both witnesses had signed and dated the document, there was one last piece of business. A final $6 payment to the land agent had to be made.

However, this was not the only way to make a homestead claim.

For those individuals that did not want to live on the land for the full five years, the acquisition process could be expedited by paying a fee of $1.25 per acre. A clear title could be procured by living on the land for only six months for those choosing to go this route. The affidavit, signed by two neighbors willing to vouch for the homesteader’s residency, still had to be filled out and filed.

In either case, for the homesteader’s effort, he received a clear deed, or land patent, to his property that the president of the United States signed. While it is sometimes hard to imagine the island chain’s early pioneers as farmers, many Florida Keys homesteaders produced crops to help feed their families and neighbors. They also produced cash crops.

The Key West column of the Dec. 27, 1884 Fort Myers Press stated: “Many of the leading merchants own tracts of land on the Keys which are entirely devoted to the culture of pineapples, tomatoes, Irish potatoes, sweet potatoes, cabbage, cassava, tapias, beets, carrots, turnips and various tropical fruits which flourish in abundance. The average shipments of pineapples alone will reach more than $200,000 per annum.”

On June 20, 1885, the newspaper again stated: “The best melons for this season come from Key Largo.”

reimagined Rowell’s Park is underway with construction of a restroom and a small parking lot. Realignment of the entrance and a deceleration lane into the park are also phase one enhancements, which is creating some traffic backups near the park at MM 104.

Adding to a revamped Rowell’s is a nearly $3-million grant county officials received on Feb. 28 during Gov. Ron DeSantis’ press conference in Vero Beach. The governor awarded more than $4.4 million to communities in southeast Florida through the Rural Infrastructure Fund and Community Development Block Grant program.

Monroe County received the most money, $2.9 million, out of the four municipalities awarded.

“By connecting Floridians with the resources they need to create jobs, support new talent and help businesses to stay open and grow, we are supporting Florida’s economic resiliency,” DeSantis said. “I will continue seeking strategic approaches to long-term opportunity for all Floridians.”

Accepting the grant award were Monroe County Commissioner Michelle Coldiron and Administrator Roman Gastesi. According to a county press release, the award will bring more amenities to Rowell’s Waterfront Park in the project’s second phase.

That includes more parking, restrooms, shared-use paths, lighting and electricity and Wi-Fi. “While we are the southernmost county in the state of Florida, we are thankful Governor DeSantis always

remembers us,” Coldiron said during the press conference.

An 8-acre waterfront park located at MM 104.5 bayside, Rowell’s Park entered phase one of upgrades last summer. The Board of County Commissioners bought Rowell’s Marina in December 2013 with the intention of making it into a public park. Littlejohn Engineering Associates began the design phase in December 2016.

In April 2019, conceptual plans unveiled to the public brought favorable response to the amenities proposed for the park. Key West’s Charley Toppino & Sons, who also worked on the Truman Waterfront Park in Key West, is handling the project. Phase one costs are around $1.4 million. It’s funded by the Tourist Development Council, $500,000, and the county, $900,000.

“The project management team worked very hard with the support of numerous county departments to receive this funding for Rowell’s Park,” said Cary Knight, county project management director. “This grant allows us to move our community’s vision of Rowell’s Park forward.”

A master plan shows a park pay station/pay booth to charge nonresidents, but it’s not a part of any upcoming project construction phases.

County officials maintain, however, that the park will remain free to locals.

Rowell’s Park is home to a number of community events, including the annual Buccaneer Blast Regatta, Fourth of July festivities, Key Largo Bridge Run and the upcoming Carnival celebration for Key Largo School’s 50th year.

oug Peel was larger than life.

A tall man, he would fill up a whole room, his family said.

Also, he would never miss an opportunity to bust your chops — or to help you out. The boat captain, angler, contractor and community volunteer just couldn’t sit still. Despite all his responsibilities, he still found time to run the fish fry benefit for Key Largo school every year.

“He will be severely missed,” his wife, Tina, emotionally told Keys Weekly. He passed away from a massive heart attack on Feb. 17 at the age of 56.

“It’s like losing a member of our family,” said Darren Pais, the principal of Key Largo School. “He has been frying fish for KLS for at least 25 years. He was a great volunteer and wonderful father.”

“We didn’t expect this,” Tina said with disbelief. “He was getting better every day.”

Doug beat COVID in September.

The family was scared for him, as he was in the hospital for 14 days. The Peels all came down with the illness at the same time in August — Doug, Tina, age 54, and their sons, Doug Jr., 26, and Kyle, 24. But Doug suffered the worst. It was so bad that he damaged his heart and didn’t know it. Doctors had told him that this was a possibility.

To the family’s concern, he threw himself into work and volunteer commitments and play just three weeks after getting out of the hospital, with only 55 percent lung capacity. He would hit the water on the weekends; work full-time during the week as a contractor in Miami for his company,

Red Dot Construction, with his brother, Dennis; and enjoy projects like volunteering for the community or taking road trips in his Slingshot with Tina.

“You couldn’t get that guy to sit down and watch a movie,” said Doug Jr., with a laugh.

That was just Doug’s way. He was born in Coral Gables’ Doctors Hospital and worked at his father’s construction company after high school. He and Dennis eventually started their own contracting business, Red Dot. Twenty-three years ago, with Tina, he moved to Key Largo, where they raised their sons. He also regularly attended fishing tournaments. In 1995, Doug entered the Pompano Beach Fishing Rodeo. Doug kept pointing out to his family that the number 30 was a harbinger of good fortune, as he had slip 30 in the 30th year of the event. He was right: He caught the most pounds of mahi mahi — and won $30,000 in cash and prizes.

But Key Largo was everything to Doug. “There’s no other place in the world he’d rather be in than Key Largo,” said son Kyle.

“He was truly a true example of what Key Largo is all about, and he loved the Keys with all his heart,” said his sister-in-law, Jeanette Peel.

If the community needed something, he was there. When son Doug Jr. was in sixth grade and got into the safety patrol for Key Largo School, Doug was asked to help organize the annual fish fry that is a benefit to raise money for the safety patrol’s trips to Washington, D.C. And he did it ever since. Known as the “Fish Fry King,” his last fish fry was Jan. 28.

“He’s still at work with me every day,” said his brother, Dennis. “He’s watching over me, making sure I’m doing things right.”

A celebration of life for Doug Peel will be celebrated on Saturday, March 19, for close family and friends. He has been cremated and his remains will be placed in the ocean he loved so much.

Housing is the largest single challenge facing Florida Keys residents and has been for decades. With scarce buildable land, strict height restrictions, sky-high property values, second homes that sit empty most of the year and a proliferation of vacation rentals, many full-time workers no longer can afford to live or rent in the island chain, much less buy a home.

Over the next three weeks, Keys Weekly tackles the housing crisis by identifying the problem, examining its causes and seeking solutions.

hat happens to a tourist town when local workers can’t afford to live there? The Florida Keys are learning the answer the hard way. It’s not the only U.S. community facing a housing crisis, but the Keys have been dealing with it for longer than most other communities, given the scarcity of available land here. Suburban sprawl can’t happen, because there’s nowhere to spread to.

The sky-high housing market makes home ownership impossible for most workers and the proliferation of vacation rentals has eliminated thousands of longterm leases. Landlords realize they can get $2,400 a month renting their apartment to a working resident, or triple that by renting it for a month to a tourist. They do the math, then take some photos and post their Keys home on a vacation rental website like AirBnB or VRBO.

Add to that the state legislature’s refusal to allow cities and counties to regulate their own vacation rentals, and the municipalities’ refusal to consistently punish rental law violators with penalties harsh enough to be a deterrent.

“Personally, I believe in draconian enforcement,” Marathon Realtor Josh Mothner said. “Enforcement of (vacation rental) rules with real impact. And that’s something that we seem to refuse to do, for whatever reason. The point is that you have to make it painful to break the rules.

Right now, it’s not.”

Sam Holland, a Key West native who owns a popular guesthouse and several other businesses, agreed with Mothner.

“Right now, the fines being levied against rental violators aren’t a deterrent; they’re just a cost of doing business.

“I really don’t know where this all ends up. It’s just going to get tougher and tougher for people to live here,” Holland said.

“My roommate secretly put the downstairs of the home we co-rented on AirBnB. At the time, she told me she had friends staying for a few days and asked me not to disturb them or go downstairs to do laundry while they stayed.” — former FWC biologist Brian Reckenbeil

And tougher and tougher for employers to find workers.

“I’m very, very, very concerned. I’m also disappointed that we, collectively, didn’t do more sooner to alleviate the situation we’re facing. Now the problem seems almost insurmountable,” said Key West vice mayor Sam Kaufman.

His statements summarize what many workers, employers and elected officials are now feeling.

For thousands of permanent, working Keys residents, an annual lease is a lifeline, a one-year stay of execution. It’s often all that stands between a continued life in the Keys community they love and a reluctant departure to places unknown.

Renters live in fear of getting “the call”: a 50% rent hike; the property’s being sold; or, as is increasingly common, the property’s becoming a vacation rental through AirBnB, VRBO or any other rental platform.

“When that phone call came from the landlord saying they were selling the house, I could feel the community being ripped away from me. We were Keys residents through and through. I was invested. HOUSING CRISIS W H AT ’ S T H E P R O B L E M ?

Not all landlords are trying to suck every dollar out of their properties. Increases in maintenance repairs, property taxes, interest and income taxes have some well-meaning landlords in a tough position, too. And that leaves them no option but to increase rent.

The mass exodus of year-round working residents, most of whom rent a house, apartment, mobile home or even a boat, has serious implications for local businesses, because no one is replacing the workers who leave the Keys.

Once an out-of-town applicant is offered a job in the Keys, they search online to find a place to live and quickly realize the salary they’ve been offered isn’t sufficient to pay rent, much less a mortgage.

“We’ve had employees who are very interested in coming to work for us, but then they realize they can’t find a place to live,” said Rita Irwin, CEO of Dolphin Research Center and chair of the Tourist Development Council board.

Jason and Dawn Basler owned Island Time Day Spa in Tavernier. They said they’d get roughly 30 calls a day from clients wanting to book a massage. The problem? They couldn’t find a massage therapist. “We had been looking for a massage therapist for eight weeks and (had) zero applications,” the Baslers said.

Island Time Day Spa ended up closing. The Baslers put their Key Largo home up for sale, bought 60 acres of property in east Tennessee,

built a new house and started a food truck business. “We’re crushing it up here,” Jason Basler said.

In Key West, a Circle K gas station and convenience store that’s typically open 24 hours a day was recently closed before 7 p.m. A sign on the door read, “Closed because we have no staff.”

Several Florida Keys restaurants are no longer serving breakfast due to the staffing issues, and many businesses are closing early or altogether.

At the Monroe County Sheriff’s Office, Sheriff Rick Ramsay has taken staffing matters into his own hands by installing a bunkhouse on sheriff’s office property on Stock Island in the Lower Keys. Several patrol deputies and jail deputies live in more affordable housing on the mainland in Homestead or Florida City. They’ll commute to the Lower Keys, work for three or four days while sleeping in the bunkhouse, then return home for their days off, Ramsay has said.

Clearly, the Florida Keys are facing a daunting problem.

Next week, the Keys Weekly will take an in-depth look at the causes of our housing crisis: empty second homes, the profitability and proliferation of vacation rentals, ineffective enforcement of rental law violators and state preemption of local regulations. Is there a light at the end of the tunnel, or is it an oncoming train? That’ll be examined in week 3.

housands of people visited more than 250 vendors who were spread across Founders Park for the 27th annual Gigantic Nautical Flea Market. Organized by the Upper Keys Rotary Club, the two-day shopping event and boat show by the beach returned with some new additions, which included 13 food trucks to the festivities. Vendors were positioned as far back as the ICE amphitheater and up near the baseball field. A new layout gave shoppers wider aisles and more area to cover as they searched for fishing poles, sun shirts, arts and crafts, Bloody Marys and beer.

Rotarians and high school students welcomed guests at the two entrances. Others directed cars to handicap positions, while some hand out fliers. Proceeds from the Gigantic Nautical Flea Market go to assist student scholarships.

CARNIVAL TO CELEBRATE 50 YEARS KLS PTA organizes community event JIM McCARTHY

arnival sounds, smells and scenes will grace the grounds of Rowell’s Park this weekend in celebration of Key Largo School’s 50th year.

Former and current administrators, teachers and students gathered outside KLS in January to recognize the school’s growth since it opened on Jan. 19, 1972. Students from various grades read poems in recognition of the school’s 50th anniversary. Former administrators spoke on how the school helped shape the community, and students gave Principal Darren Pais envelopes containing items for their school’s time capsule.

Now, families and school staff will come together on Saturday, March 5 for a day of rides, food booths, games and more. Originally planned for January, the carnival was pushed back a few months due to rising COVID-19 cases. Organized by the Key Largo School Parent Teacher Association, the carnival invites the community to partake in the fun.

“This carnival would not be possible without our amazing sponsors and the always reliable Key Largo School families, teachers and staff. We hope to have a large turn out from the community,” said Allison Conover, KLS PTA treasurer.

Admission is $5 per person.

Children 3 and under are free. Ride bracelets may be purchased at the gate for $20 (that includes admission).

Ride bracelets will be good for unlimited rides, which include the mega fun zone, swings, super sonic, crocodile slide, tubs of fun, meltdown and a toddler zone.

Tickets will be sold for the Rock Wall, 4-way bungee station, ponies, Zorbs race track and games. Information booths, vendor booths and food booths will be on site. Thunder Country 100.3 will be live onsite from 1-3 p.m. and a DJ from 1-5 p.m.

The carnival is a cash-only event; automated teller machines will be onsite.

THIS WEEK’S DIVE REPORT Conditions this week were a bit bumpy – but doable. We like to call it “sporty.” Despite this, it didn’t churn up the water, and the visibility remained amazing.

Over the weekend, we were honored to certify a group of local firefighters. It’s always a privilege to help first responders get onto the water to enjoy what we have to offer here in the Florida Keys.

CONSERVATION UPDATE Coral restoration efforts are going strong. I.CARE recently hit over 3,000 coral fragments planted. This is all within the first year of active restoration work. That’s truly a feat we’re so proud of, and something that could not have happened without the entire community’s support and help.

All of these corals are grown with help from Mote Marine Laboratory.

Their science-based methodology ensures that any corals put back out on the reef will have the highest chances of survival. Their corals have been stress-tested for future conditions that may exist in the ocean, such as high temperatures or acidity levels.

This approach has allowed for a very high survivorship of corals planted by I.CARE, which is something else we are all extremely proud of.

This coral restoration effort is taking the entire reef into account.

I.CARE’s scientists are working with coral crabs, special snails and stabilizing sponges to attempt ecosystemlevel restoration of all species. This is because I.CARE recognizes that the ocean is a living environment, where each piece plays a critical role. You can’t expect to bring one thing back without everything else that keeps it alive and functioning within the reef ecosystem. It’s pretty amazing to be a part of such groundbreaking research.

CONSERVATION TIP When you go out on windy days, make sure to secure all loose items on your boat. This ensures that they won’t go overboard and add to the marine debris problem our oceans already have.

i friends! Reef the fox here with this week’s “Reef’s Report.” On Feb. 25, I had my annual exam with our favorite veterinarian, Dr. Claudio at Mobile Pet Doctors.

Annual exams are very important for all of the foxes here. We get our blood drawn, eyes, ears and teeth checked. I got a special blood test run to see if we can figure out what is causing me to have allergies. Speaking of growing up: My birthday is on March 28. Like, my real birthday. Sometimes mom doesn’t know the actual birthday of my other fox friends because they spent a long time on fur farms, but because I was a baby when I was rescued, we know my actual birthday. So there better be a big party for me. I’m expecting toys and treats and more toys and maybe a parade down U.S. 1 in my honor.

Alex is a beautiful and sweet female long-haired cat. She is 5 years old and loves to be petted. Alex gets along with other cats. She was surrendered by her family because they said she started peeing on everything. We took Alex in and saw she had blood in her urine and needed medical attention.

After Alex’s vet visit we learned she has a urinary problem and a UTI. We gave her the medication she needed and switched her to a new diet and it has helped her. She is looking for a forever home with someone that is willing to help her with her condition and continue to keep her on a prescription diet.

lorida Keys Concert Association (FLKCA) continued its series with Jupiter String Quartet on Feb. 22. The concert was dedicated to the memory of Mike Forster, former Mayor of Islamorada, councilman, and most recently Monroe County commissioner. The concert was sponsored by Mangrove Mike’s Endeavors Paying Forward and The Rain Barrel Village.

The Jupiter String Quartet consists of two violins, viola and cello. It is a very intimate quartet by both the manner they play and their relationships to each other. Meg Freivogel plays violin and her elder sister, Liz Freivogel, plays viola. Daniel McDonough plays cello and is Meg’s husband. Nelson Lee plays first violin.

The Jupiter has received many honors, awards and grants during its 20-year career. The quartet’s name Jupiter was chosen because Jupiter was the most prominent planet in the night sky at the time of its formation, and because the astrological symbol for Jupiter resembles the number four as is the number of musicians.

Symbolically, the Jupiter started its concert with Haydn’s String Quartet No. 4. “Haydn is the ‘grandfather’ for quartet music,” McDonough said.

Haydn wrote 68 string quartets, unmatched by any other composer.

The second piece, Shostakovich’s String Quartet No. 3, was written right

after World War II in 1946. Historically, the piece was presented as a “war quartet.” Shostakovich initially supported the idea of giving subtitles to each of the five movements: “Calm unawareness of the future cataclysm,” “Rumbling of unrest and anticipation,” “The forces of war are unleashed,” “Homage to the dead” and “The eternal question: why and to what purpose..”

“This piece was very personal to the composer,” McDonough said. “Nobody is truer to capture the spirituality of totalitarianism than Shostakovich.

He slept with his toothbrush in his pocket, in case the composer had to flee. Shostakovich and his music were under Stalin’s surveillance.”

Not anticipating world events, but in timely fashion, the Jupiter played the piece when Russia invaded Ukraine.

“You could feel them breathe in one sync,” said Liz Shephard, a visitor and a retired music teacher.

“The music is exquisite. You feel the music with your own heartbeat.

You could feel the battle, (as) if I would be in the battle myself,” said Marie DeLuca of Islamorada, a season ticket holder. “I’m glad that they (FLKCA) will have jazz next year. It is good to include other genres, mix it up, to attract more people.”

The Jupiter concluded its concert with Mendelssohn’s String Quartet No. 6. The piece was composed in 1847, two months before the composer’s death. Mendelssohn wrote the piece as an homage to his sister Fanny, who died that year.

f eating is a joy of your day, you want it to be good,” said chef Clark Huff, of Ocean Bay Dining.

Huff is founder and owner of Ocean Bay Dining who moved from Little Rock, Arkansas to the Florida Keys in 2015 to take a position as a regional manager for a food service company. After three years, they parted ways.

"I decided I don't want to be a road warrior any more. I wanted to do my own thing and give the community another option for food,” he said.

Huff's background and training are vast and impressive, including serving four past presidents, two Arkansas governors and various amazing events. He is also known for his awardwinning smoked beef tenderloin.

Except for delivery, Huff works solely with his right-hand cook, Maggie McKeehan.

McKeehan, a retired paralegal turned cook and botanical driftwood artist, is a delight. The dynamics between the two of them made this interview fun — not to mention, McKeehan gave me a big piece of delicious pound cake to munch on.

"I wanted to provide something quick, affordable and it's delivered to your house.

The church, St. James the Fisherman Episcopal Church, was gracious enough to allow us to utilize the kitchen. In addition to the meal planning business, we do a lot of catering, kid's birthday parties, weddings and celebrations," Huff said.

"When we have leftovers, we donate it, so I don't eat it," McKeehan jokes, adding seriously, "We do try to give back as much as possible."

Each week, Ocean Bay Dining offers 18 to 20 meal options. Some of the most popular are chicken salad, chicken marsala, crustless quiche, lasagna, meatloaf and McKeehan’s famous picadillo. They also noted that people love the desserts, especially the rum cake.

"We like to keep it fresh, fun and interesting." Huff said.

Many customers would also add in their favorites, easily multiplying this list.

"Prime rib is also very popular,” Huff said.

“People love things that you normally go to a restaurant and order. A lot of my inspiration comes from a love of Asian and Italian food along with an eclectic mix of Southern food. I like to keep it versatile."

Is there anything that hasn't been wellreceived? Huff had to think for a moment, and you could tell McKeehan's wheels were turning too. His response: "Meals that have been more vegan-related."

"I can plan a menu and try to make it perfect, but the thing I think may be the best seller doesn't end up that way, i.e., there is no predictability." Huff buys from four suppliers — fresh vegetables and top choice meats. Overall, it's a clean meal system and almost every meal just needs to be microwaved, taking about two to three minutes.

It's fun to receive the menu which comes out on Sundays. You have until Wednesday at 5 p.m. to send in your order and pay. His texting process is easy and convenient.

"Using the text messaging makes it especially easy for snowbirds to start again when they are back in town. They just key in ‘start,’ and they will get back on the menu messages," Huff said.

Huff and McKeehan do the meal prep Thursdays and Fridays, and then the food is delivered on Saturdays. DJ Dougie Hitchcock and Tony Taylor help with this final important step as they help deliver from Ocean Reef down to Lower Matecumbe.

Besides all that, what else did we talk about? Chef Clark, and his wife Martha, an interior designer with L. Lynn Interiors, have also created dog food, as a solution several years ago after their dogs got sick from spoiled storebought food. Currently, there are two options— a beef and sweet potato option and a chicken and rice option.

EMILY PACENTA Bongos Botanical Beer Garden, Marathon This four-year Marathon resident is a dolphin trainer by day before spending her nights slinging drinks at Bongos, one of the fastest-growing local hangouts in the Middle Keys. Hailing from Kettering, Ohio, Emily says the best part of her second job is listening to sage life advice from her many patrons.

Naturally, we had some completely nonwork-related questions for her: What’s the dumbest thing you’ve ever done? I once had to Google what the date was. It was my birthday.

What’s the best (or worst) prank you’ve ever played? Santa came to my house to drop off presents for my siblings and I. There was a train track nearby, so I went to grab coal and put it in the top of my siblings’ stockings to hide their gifts. They started sobbing. I wasn’t allowed to open a few of my presents on Christmas Day because of that one.

How many people try to slide you their phone number on a receipt? An unfortunate number.

Favorite and least favorite drinks to make? Beer is nice and easy, because all I have to do is open the tap. But when I make a mojito, there are so many things to muddle, and once you start making it, everyone wants one.
